MasterChef, The TV Experience

MasterChef, the TV Experience - the world’s first TV-to-plate dining concept in the all-new Millennium Place Marina hotel in Dubai Marina has officially opened its doors, Head Chef Margarita Vaamonde-Beggs shares with us the launch menu guests can enjoy. Curated from a selection of over 120 recipes created by past show champions and finalists from various productions of the hit global series, the 36-dish launch menu is a truly global culinary celebration. With every dish a highlight, select starters include a Beetroot Cured Salmon with puffed rice, the brainchild of MasterChef Australia 2017 finalist Tamara Graffen and a Mauritian Warm Octopus Salad served with a fennel, onion and tomato salad, mango fluid gel and shrimp jelly created by MasterChef UK 2012 champion Shelina Permalloo. To cater for all palates, main courses are divided into three separate sections - Meat and Poultry, Seafood and Vegetarian. Select Meat and Poultry mains include a Venison Loin Rubbed with Chili and Coffee created MasterChef US 2016 Champion Shaun O’Neale, as well as Fried Chicken Waffles with Southeast Asian Salad and Australian Beef Wagyu Tenderloin with Carrot Purée. Seafood options include MasterChef UK 2017 champion Salina Mahmood Ahmed’s Seabass Fillet Baked in Lavash Bread, as well as O’Neale’s Seared Scallops with Kohlrabi Purée. For those who prefer greens to meat, select Vegetarian dishes include Rolled Mushroom Gnocchi by MasterChef Australia 2014 finalist Laura Cassai, or MasterChef UK 2016 winner Jane Devonshire’s Roasted Curried Cauliflower and Warm Quinoa Salad. For dining groups with similar tastes, a selection of sharing dishes are available including the Smoked Aubergine Vol Au Vent, again from Saliha Mahmood and Duck Leg Confit Tacos created by O’Neale, the most-represented series winner on the menu. Dessert lovers are well looked after with an indulgent spread of sweet and savory options, including Elena Duggan, MasterChef Australia 2016 champion’s Apple Bickies and Cheese, a green apple sorbet with apple and fennel gel, pickled apple and goat’s cheese mousse and MasterChef UK 2008 winner James Nathan’s Deconstructed Eton Mess, while MasterChef Australia 2016 finalist Mimi Baines’ Kentucky spirit-inspired Honey Chocolate Mousse is an inevitable best-seller. An all-new MasterChef, the TV Experience exclusive comes via its own resident kitchen team, which has created a Chai Crème Brûleé made using Darjeeling tea, orange skin, cardamom and homemade seaweed-puffed rice. As the cornerstone challenge of the world-renowned TV franchise, the much-loved Mystery Box concept is an integral addition to MasterChef, the TV Experience. Adventurous diners can pick their choice of up to five ingredients from 10 options consisting of proteins, vegetables and condiments, before challenging Vaamonde-Beggs and her team to bring the selections to life within a strict 35-minute time frame. Guests who opt for the signature Mystery Box option which is priced at AED 300 for two people or AED 600 for four can enjoy a shared starter while waiting for their personalized meal. With each dish artfully plated in a Picasso-like form, the menu highlights the most elegant cuisine including signatures like the: Hamour Lemon Ginger, light foie gras and Oscietra caviar; Local Bahraini Vegetables with confit lobster and mango emulsion; and the Elbow Pasta cooked in a risotto style with unctuous coriander, truffle and quail. Singapore, Taste and Explore Chef Mohammad Orfali, star of the Middle East’s leading food channel, Fatafeat, has extolled the virtues of Singapore as the destination for those who have a passion for food. Chef Mohammad believes that Singapore’s melting pot of flavors, combining Chinese, Indian, Malay and Peranakan influences, make it a must-visit destination for any foodie. It is a city that those travelling from the Middle East will enjoy, in particular for its history and authenticity of cuisine. It is typically served in a claypot with the head of a red snapper stewed in Kerala-style curry with vegetables such as okra and eggplant. Abdul Rahman Mohideen, Area Director MEA for the Singapore Tourism Board, said: “Singapore, well known as a popular and exciting city destination, is actively shaping a landscape of epicurean inventiveness and has established itself as a hotspot for culinary talents who push new boundaries in dining experiences.

Sushi Shin By Miyakawa

Sushi Shin by Miyakawa is now open at the Mandarin Oriental, Tokyo. Located on the hotel’s 38th floor, the Edomae-style sushi restaurant is the first launched in the Japanese capital by Hokkaido’s three-Michelin-Starred Chef Miyakawa. The new restaurant is set to complement the hotel’s existing excellent culinary offerings, which include Michelin-Starred dining at Signature, Sense and Tapas Molecular Bar. Diners at Mandarin Oriental, Tokyo’s Sushi Shin by Miyakawa are in for a visual treat, as well as a world-class gastronomic experience. In addition to enjoying stunning views of the Tokyo skyline and seeing close-up the restaurant’s artisan-made furnishings commissioned by Chef Miyakawa himself, they can observe and interact with the restaurant’s master chefs crafting sushi dishes on the other side of a 350-year-old Hinoki cypress counter.

MONSOON

Monsoon serves a selection of Thai, Japanese and Vietnamese dishes. Selecting the best the Far East has to offer, guests can be sure to find all their favorites on the menu. We walk through the streets of block 338, home to a variety of innovative independent dining venues. Hidden in the side street we find this Asian gem, Monsoon. Inspired by a Balinese Palace its red exterior and large thatched roof are hard to miss. We walk through the entrance into an authentic oasis of Asian culture. High ceilings and a thatched roof have us feeling like we’ve been transported to Asia, we embrace the ambiance and authentic interiors. A private dining area is available for guests wanting more privacy but for those who want to be around the hustle and bustle the sushi counter is the place to sit. The outdoor seating area has been designed to represent a Zen garden; the large pond is dimly lit setting a relaxing environment for guests to enjoy. We decide to sit indoors but as the elevated platform is surrounded by water, we still get to enjoy a sense of relaxation. We begin with the Poh Pia Tod, vegetable spring rolls and the Edamame. Piping hot, we are off to a good start. Next up are the Ebi Tempura, fresh prawns lightly battered served with both sweet and

spicy dipping sauces. The portion is extremely generous, and the large battered prawns offer bite after bite of flavorful goodness. New on the menu and a must try are the Nela Buns, these fluffy steamed buns are filled with ebi tempura, crabstick salad, chili paste and wasabi mayo. These buns are sensational from the crisp of the tempura to the warm fluffiness of the bun, to the burst of the wasabi, delicious. For mains we enjoy the Shake Saikyo Yaki a grilled caramelized salmon marinated in white miso along side a classic Pad Thai, wok-tossed rice noodles with tofu, bean sprouts, red onion, crushed peanut and tangy tamarind sauce. Again, both dishes are delightful. I personally haven’t enjoyed a Pad Thai as authentic as this since my last visit to Asia. Our only criticism is the that at some points of the night the service was sadly lacking. After we had been given the menu it took a further 25 minutes for the waiting team to take our order. Given that the restaurant only had a few covers that night, as it was a weekday, we did expect a higher standard of consistent service. The menu is expansive, but the culinary team do well to ensure that dishes are executed to a high standard. Monsoon also offers a great authentic ambiance, so, overall, we would give this restaurant all considered a 7/10. Judged on food quality, service, ambience, price point and attention to detail. Located in the opulent St. Regis Abu Dhabi, guests will find the award-winning Italian restaurant Villa Toscana. The restaurant boasts cozy indoor seating and a large outdoor terrace which offers spanning views of the Abu Dhabi Corniche. Villa Toscana’s décor will have you feeling like you’ve just stepped into Tuscany, inspired by a Tuscan villa, the restaurant creates the feeling of visiting the home of an Italian noble. The hospitality is also typically Italian, warm, friendly and inviting. The food complements the design, bridging tradition and elegance. Serving hand-crafted, regional Italian specialties from Tuscany, Umbria, and Emilia-Romagna, the menu is composed to orchestrate specialties of these areas. Special Italian imports emphasize the quality and attention to detail of the culinary team. All pasta is made in-house with raw ingredients sourced from Italy. We decide to sit in the small corridor just between the main dining room and the large outdoor terrace. It feels beautifully authentic. To start we enjoy the Mixed Fried Calamari, Prawns and Seasonal Vegetables with Tartare Sauce. Designed for two to share the dish is served in a playful manner. Lightly dusted the calamari, prawns and vegetables are never greasy or over battered.

Looking for something lighter my dining companion orders the Burrata served with Tomato, Focaccia Bread and Emulsion of Basil Pesto. The burrata is exceptionally light and flavorful, its creamy center oozes over our plate as we cut into it with our knife. The toasted pine nuts offer an exciting and contradicting taste to the creamy burrata, the tomatoes add a lushness whilst the pesto offers flavor and grit. Whilst both our dishes are delightful its evident that the burrata is our favorite dish. As we enjoy a small break before our mains arrive, we take note of the service at Villa Toscana. The team are remarkably efficient, from memorizing orders, noticing when water glasses are empty to the general ambience between the team themselves, everything is executed perfectly. It’s clear to see why this restaurant has become a leader in the market. For the mains we order the Chitarrucci Fresh Pasta with Light Tomato, King Prawns, Lobster Sauce, Fresh Basil and Cherry Tomatoes and the Homemade Lobster and Prawn Ravioli, Bisque Foam. Both dishes arrive piping hot and bursting with aromatic delight. Considering both of our dishes look so good we decide to share. Let’s begin with the Chitarrucci Fresh Pasta, the pasta is perfectly cooked, the portion of prawns is generous, and the lobster sauce is rich yet not overbearing. The tasty fresh ingredients and chunky flavorful prawns makes this dish hard to beat.

But‌..then we taste the Homemade Lobster and Prawn Ravioli. We gently cut into the large plump ravioli, unleashing a cloud of warm aromatic seafood glee, we take our fork, sliding it gracefully across our plate and into the bisque before taking a bite. The flavors fill our mouth, first the lobster then prawn, followed by the pasta and finally the bisque. Impressive, this is by far the best dish I have ever tasted in an Italian restaurant, period.

The menu also offers a wide variety of vegan, dairy free and gluten free options for guests with dietary requirements making it an ideal choice for a quick lunch or tranquil evening meal.

While dining at Villa Toscana, the ambiance, the Italian culinary team and the freshness of the ingredients all take me back to happy memories in Tuscany where I last had a dish truly this wonderful.

Wanting to finish on a sweet note we opt for the Chocolate Fondant, Vanilla Ice Cream and Strawberries and the Sweet Raviolo Pitigliano Style Stuffed with Sweet Ricotta Cheese. The Chocolate Fondant is enjoyable but the authentic Sweet Raviolo Pitigliano are a must when visiting Villa Toscana.

If I was to summarize Buddha-Bar Beach Abu Dhabi in a few words it would be, where elegance meets exclusivity. Located at The St. Regis Saadiyat Island Resort, Buddha-Bar Beach Abu Dhabi recently celebrated its one-year anniversary. Over such a short period of time Buddha-Bar Beach Abu Dhabi has created a fascinating experience of taste, music and style, creating an unmet adventure where time stands still. Utter bliss in the chic cultural district of Saadiyat Island, titillating tastes from around the world and the reverent awe awoken by the mystifying sunsets, guest have come to expect nothing less than the best from the Buddha-Bar Beach Abu Dhabi. As the sun begins to set, we make our way to Buddha-Bar Beach. Located on the shores of the pristine Saadiyat beach, Buddha-Bar Beach has a large outdoor seating area separated into two parts, one an outdoor dining area and the other a lounge area. Inside guests can choose to dine in the spacious dining area, watch as the chefs carefully craft each dish at the sushi counter, relax in the lounge or enjoy a stylish beverage in the bar area. Before we place our order, we enjoy our favorite mocktail. The Care Bear mocktail (and our latest obsession) is absolutely divine. This mocktail oozes flavor and finesse, a refreshing strawberry beverages topped with a thick cream, offers sip after sip of yumminess. The Buddha-Bar Beach menu offers a selection of Pacific Rim cuisine dishes, a masterful blend of fine ingredients and spices, where East Chinese, Japanese, Thai and other Asian flavors combine subtly with a zest of the West.

To start we try the Mediterranean Style Tom Yum Soup with red snapper, king prawns, shimeji mushrooms, asparagus and wakame seaweed. A great start to our dining experience, the soup is rich, full of flavor, generously topped with seafood and ever so slightly creamier than normal Tom Yum Soup, which we prefer. Next, we opt for the Buddha-Bar Beach Tacos from the cold starters menu and the Steamed Edamame with Sea Salt from the hot starters menu. The four crispy tacos consist of sashimi salmon, tuna, seabass and vegetables. The sashimi salmon is our favorite, although it is great to see that there is a vegetable option on the menu for guests to enjoy. We then move onto the Deep-Fried Lobster Dumplings with Papaya Salad and Chili Oil. These are superb, as you bite into the Lobster Dumpling you first experience the crunch of the fried dumpling, followed by the aromatic lobster, then the rich spicy chili oil and finally cooled by the refreshing papaya salad.

Wanting to sample the sushi we order the Spicy and Crunchy Tuna Roll with tuna, toro tartare, cucumber, avocado, jalapeno, aioli, pickled wasabi stalk, momiji oroshi, chives and crunch red quinoa. This sushi roll offers a multitude of tastes and textures, one we would highly recommend. We also try the Spicy Soft-Shell Crab Roll and the Tempura Prawn Rolls. As enjoyable as they are the Spicy and Crunchy Tuna Roll would still be our sushi roll of choice. All the sushi is served in eight pieces. For the mains we enjoy the Robata Salmon with yaki-onigiri, kaffir lime, galangal teriyaki sauce which comes with small rice portion. The Robata Salmon is bursting with flavor. The yaki-onigiri and teriyaki sauce add a rich underlining tone to the dish, giving it a melt in the mouth moment for guests to enjoy. Had we known the portion would be so generous we would probably have ordered a little less sushi.

Unfortunately, we leave no room for dessert. Although those with a sweet tooth will be spoilt for choice as the menu boasts nine scrumptious desserts from Chocolate Fondant, Buddha-Bar Warm Cheesecake, Green Tea Tart to the show stopping Platter of BBB Gorgeous Desserts and Fruits. One year on and Buddha-Bar Beach Abu Dhabi located at The St. Regis Saadiyat Island Resort is still exceeding our expectations, from service, taste to presentation, this restaurant not only seems to be standing the test of time but pushing the boundaries. We would highly recommend Buddha-Bar Beach Abu Dhabi for lunch, dinner or just a few social beverages.

Located in The Avenues Mall you will find 400 Gradi. I know what you are thinking… in mall dining… really?…yes, really. After getting off our flight half asleep and hungry we went looking for something warm and homemade to enjoy. We stumble across 400 Gradi at The Avenues Mall, the latest shopping and lifestyle destination to open in Manama and home to many big-name dining outlets and smaller boutique cafes. As we pass by 400 Gradi the waitress hands us the menu to review, had she not we possibly would have walked past. First impressions, the restaurant is immaculately clean, the staff are friendly, the menu is appealing, and the open style kitchen is engaging. The interior is authentic with Italian images dotted across the walls and plush upholsteries add a sense of luxury. We begin with the Bruschetta Al Pomodoro, bruschetta with tomato, basil and buffalo mozzarella. The base is warm with just the right amount of crisp to the bite, whilst the mozzarella offers a rich creamy taste. The tomatoes do disappoint slightly, they seem to lack juice and flavor. We share two mains, the Margherita Verace pizza, with San Marzano tomato, fior di latte cheese and basil alongside the Penne Pasta, which we ask the team to make as a vegetarian option for us, they do so without making the slightest bit of fuss. 400 Gradi boasts two large pizza ovens, allowing us to enjoy watching as our pizza is being made. The pizza is served, the fresh ingredients are evident to taste. The pasta arrives a few seconds later, piping hot and elegantly presented. Both dishes are great, but the pasta really does surprise us, its tastes extremely fresh and would rival that of a few Italian restaurants I care not to name. Overall 400 Gradi impressed, we would never have though that we would find such a good Italian nestled in a mall. The food was of good quality, the service very efficient and the cleanliness was of a good standard. This exceeded our expectations. We would recommend visiting 400 Gradi if you are looking for authentic Italian cuisine without a heavy price tag. My partner opts for the Swedish Massage. Dining For tonight’s dining experience we visit BiCE, Jumeirah at Etihad Towers much acclaimed Italian restaurant. BiCE offers the option for guests to dine indoors or outdoors on the spanning terrace. We are guided to our table and handed the menu. The menu features an array of beautiful classic Italian dishes, a dream come true for those who seek to experience the true flavors of Italy. We begin with a selection of breads, olives and cheeses, although we could pick at these all night, we decide to make our selections and place our order. We start with the Smoked Burrata, which comes with fresh tomatoes and grilled piadina bread. The Smoked Burrata is sensational, its hard-outer shell perfectly captures the warm smoked flavour, whilst inside diners are treated to the smooth rich cheese. Our second starter the Fried Calamari, Shrimps and Zucchini are equally as enjoyable with plump shrimps, fresh calamari and thick cuts of zucchini coated in a crisp piping hot batter. The portion is made for two to share and even though we knew that before ordering we still underestimated the generosity of the portion. For the main course we order Pizza Bufalina, with buffalo mozzarella, cherry tomato and basil and the Crab Risotto, with rocket leaves and lemon. Although normally we would both opt for a pasta dish, upon learning that the pizza is cooked outside in the dedicated wood fire pizza oven we cannot resist. The pizza is flavourful and the slight oak smell fresh from the oven is enduring. However, the Crab Risotto is our favourite dish, light, fluffy and full of rich crab meat, this dish would be perfect in the winter or summer months.

For dessert we share the Chocolate Lava Cake, with vanilla ice cream. This dessert is divine, rich and moist it offers a sweet ending to our culinary journey. Those wanting to end on a savoury note will be happy to know that BiCE offers a wonderful selection of Italian cheeses, one for our next visit. The Verdict If I could sum up our experience in one word it would be ‘impressive’. Five dramatically sculpted towers set a standard for luxury hotels in Abu Dhabi. Located in Bab Al Qasr Hotel you will find Limo, the hotels Peruvian restaurant. As we enter the restaurant we are slightly underwhelmed by the décor, beige and browns give the impression that we have walked into a steakhouse not a Peruvian restaurant. Although the music and the energetic team quickly elevate the atmosphere. We are seated in front of the open kitchen, adding a bit of theatre to our dining experience. We browse through the menu and decide to start with a medley of ceviches, The Degustation offers samples of the Chalaco, Nikkei and Tano ceviches. The Nikkei ceviche is salmon based ceviche with Japanese flavours, leche de tigre, cucumber and wakame tempura. This is my personal favourite, when eating ceviche, I always opt for a zesty dish as I feel it better highlights the fish. The Chalaco, a boiled seafood ceviche comprising of crispy calamari, Peruvian dry corn and aji rocoto leche de tigre is my dining companions’ dish of choice and the more authentic Peruvian dish. Not to go unmentioned, the Tano leaves us both pleasantly surprised. Another boiled seafood ceviche, this dish features parmesan cheese and coriander leche de tigre and Peruvian dry corn. I had thought that parmesan may be too heavy to be enjoyed with ceviche however chef and the team have perfectly balanced the flavours. Next, we sample the Tiradito, a Japanese sashimi made Peruvian style. Again, we opt for the Nikkei, salmon tataki, passion fruit leche de tigre, wasabi emulsion, tomatoes, onions and cucumber. The passion fruit works perfectly with the wasabi to highlight flavours of the salmon. Moving onto the mains we order the Arroz Con Mariscos, seafood rice with aji panca and aji Amarillo peppers, onion salad and crispy fish chicharron, a type of Peruvian paella alongside the Fresh Fish A La Chorrillana, grilled fish, Peruvian aji pepper sauce, mashed green plantain mixed with beef bites, onion and tomatoes. The Arroz Con Mariscos is our favourite, the dish offers a range of flavours and textures to delight our taste buds. Although we are too full to order dessert chef and the team kindly put together a sample of the desserts on the menu for us to enjoy, these consist of, Vanilla Cake, Caramel Panna Cotta, Corn Cookie Alfajor and Chocolate Mousse. The desserts are thoroughly enjoyable and a great way to conclude our dining experience. Overall, we really enjoyed the food at Limo, the culinary team are extremely talented, and the food emphasises the depth of their understanding of Peruvian cuisine. However, the only aspect that disappoints is the décor. Limo is desperate for a splash of colour, when you think of Peru you think bold colours and a vibrant culture if this was echoed through the décor Limo would certainly make its mark on Abu Dhabi’s dining scene. If you are looking for authentic Peruvian cuisine in a relaxed environment with warm and friendly service, Limo is worth a visit. Hells’ Kitchen should require little introduction. Based upon the popular television show of the same name and fronted by celebrity chef Gordon Ramsay the concept has spawned restaurants in both Las Vegas which opened in January 2018 and now Dubai. Taking up residence in the new Caesars Palace Bluewaters Dubai hotel. The second global outpost and first Middle Eastern foray for the brand provides an exciting dining experience in a spacious dining room within the heart of the hotel. Large double doors mark the entrance to the restaurant and are emblazoned with the signature ‘HK’ logo and the eponymous pitchfork which eagle-eyed diners may recognize from the television show where budding-chefs compete head to head in a bid to impress Ramsay. The restaurant itself is delightfully refreshing, with its open plan layout and central show kitchen, visible from every seat in the house. In a nod to the show, staff are dressed in blue or red uniforms and bandanas, indicating which dishes these members of the kitchen team prepare - blue for cold starters and desserts and red for hot starters and mains. It’s a fun and interactive concept which also boasts a pleasant outdoor terrace offering views of the hotel pool, making for a perfect spot to enjoy the sunset. Attention to detail is key in the world of Hell’s Kitchen and several devices are used to recreate the feeling of being on the Emmy award-winning television set. From the napkins and stamped cutlery which are sourced directly from Las Vegas through to the intricate plating and the menu, which incorporates both regional specialties created specifically for the UAE market alongside signature dishes such as the Pan Seared Scallops and Lobster Risotto. Multi-Michelin-star chef Gordon Ramsay may not be present on the evening we dine, although his portrait hangs proudly on the wall, as if keeping a watchful eye over the restaurant. Instead we’re in the capable hands of Head Chef Craig Best who after a brief stint in Vegas now heads up the kitchen and ensures the perfect execution of the British classics and elevated pub grub. We begin with the Heritage Tomato Burrata Salad which is a generous portion of the creamy Italian cheese topped with chunky heirloom tomatoes, crystallized basil and a 20-year aged balsamic. It may not be as popular as the grand Shellfish Tower, a towering mix of lobster, shrimp, crab, oysters and clams, or the Scallops with an English Pea Puree that appears

to be the order of choice for the majority of tables. Instead we are met with a dish of harmonizing flavors, mixing sweetness with a slight acidity from the tomatoes, this is a dish where each individual element helps to complement the focal burrata. For mains we can’t resist the signature Beef Wellington and though a touch pricey at AED 250 the restaurants signature dish is executed well. The medium rare beef is cooked beautifully, resulting in a thick but tender piece of meat, surrounded by a layer of crisp and flaky pastry, without any sign of moisture. Lined with mushrooms and herbs the culmination of flavors impresses as does the potato puree and glazed root vegetables that the Wellington is served with. We also order the Crispy Skin Salmon which offers another large portion with the delicate fish sat upon a mixture of puy lentils, shaved fennel and a citrus herb beurre blanc. Braised Short Rib, Slow Cooked Chicken and the Hell’s Kitchen Burger are also strong hearty choices.

Hell’s Kitchen offers six indulgent desserts including Peanut Butter Fudge Cheesecake, Jaffa Cake Sundae, Banana Toffee Cake and another signature in the form of Sticky Toffee Pudding. This dessert could well be the must order dish at the restaurant, with the British pub classic taken up a notch thanks to a soft sponge, lashings of warm toffee sauce and a scoop of Speculoos ice cream. Hell’s Kitchen is already proving a popular choice (so make sure you book ahead) when compared to his other Dubai endeavor the gargantuan Bread Street Kitchen at Atlantis. Hell’s Kitchen looks set to replicate the success of that restaurant thanks to an exciting theme, strong service and a concise menu with a stance on quality over quantity. With the Hellicious Brunch having just launched and a special Iftar menu for Ramadan set to feature the same combination of show-stopping theatre and world-class cooking but with an Emirati twist. Recognized as the world’s tallest five-star hotel, the JW Marriott Marquis in Dubai’s Business Bay has become a beacon for all things dining and nightlife in the city. Two soaring towers punctuate the Dubai skyline, within which lie multiple food and beverage outlets which range from premium steakhouse Prime68, to specialty sushi spot Izakaya, trendy nightclub 1Oak and the newly opened Masala Library by Jiggs Kalra. Headed by Jiggs Kalra the “Czar of Indian Cuisine” the contemporary Indian restaurant marks the first international outpost of Masala Library, following the success of the concept in both Mumbai and New Delhi. With Dubai having seen a resurgence in modern Indian cuisine and a focus on molecular gastronomy in recent years, Masala Library successfully plays into the trend while still managing to offer something new for diners. Situated on the fourth floor of the hotel in a space previously occupied by another Indian concept (Rang Mahal), the interiors remain vastly unchanged. Diners enter the restaurant space via a long corridor atmospherically lit in orange hues, providing an alluring ambience as we pass private dining areas laden with cushions and elaborate curtains, before reaching a charming bar area, ideal for a pre or post dinner drink. The pièce de résistance however lies in the main dining room which is decorated with vibrant murals and set around a number of ornately carved wooden columns that impress in both stature and girth, giving the impression of dining within the confines of an ancient temple. The majority of the tables are positioned around the circumference of the room, providing diners with views of the Dubai water canal, as illuminated boats zip up and down the newly opened waterway adding additional vibrancy to an already colorful dining experience. Combined with strong service from a friendly and knowledgeable team, we’re encouraged to partake in a culinary journey courtesy of the restaurants 12 course tasting menu which is priced at a very reasonable AED 245 per person (a vegetarian version is also available). Having brought the menu and some of the chefs directly from the Masala Library’s restaurants in India, first impressions are strong as dish after dish is presented to the table with near-flawless execution. We begin with an amuse bouche, playfully referred to as Fake Eggs. A mix of coconut water and a mango sphere that gives the impression of egg white and yolk and is presented

inside a nest. It’s an interesting start and a rush of sweet flavors that gives way to a number of small plates that soon fill our table. We enjoy a Deconstructed Samosa of Pastry, tamarind chutney and crispy peas presented upon a banana leaf, before turning our attention to a Jhal Moori Cookie made from puffed rice and topped with ghugni chaat and the Farmer’s Staple 3.0. a balsamic paratha with a unique black color which belies its simplicity. While the confluence of traditional dishes from key Indian provinces combined with modern cookery techniques and audacious presentation is to be applauded, we do find the pacing at the beginning of the meal to be slightly off and we are soon overwhelmed by the sheer a number of plates that fill the table. The meal begins to settle with the arrival of the Mushroom Chai. A dish made just like a cup of tea with white truffle and dehydrated mushrooms enlivened by a warm mushroom consommé. It’s a dish we have seen in other Indian restaurants in Dubai but one that remains heartwarming nonetheless. From the appetizers we enjoy Prawn Malai with pink peppercorns and organic caviar, a re-interpretation of the Bengali Malai curry that offers a single prawn beautifully prepared and bursting with flavor. Similarly, the Rajasthani Mutton Curry is a robust dish with a slight heat that presents tender lamb in a thick gravy, topped with a kachori shell which is smashed into the dish to provide an exciting textural element. Sides of Nizami Haleem (a porridge like lentil dish) and Multan Moth Dal make for addictive accompaniments. Desserts are probably the most inventive and memorable dishes of the dégustation with the traditional Indian desert of jalebi recreated as a caviar and showcased within a translucent shell. There’s also a glorious Makhan Malai. A milkbased dessert popular in the North of India and here at Masala Library served with ashen kulfi, the traditional Indian ice cream which here is made with charcoal. Providing the plate with an attractive color palette and a memorable end to our dining experience. While Masala Library has only been open for a few short weeks it makes quite the impression judging from the near-full dining room on the Monday night we visit, a notoriously quite night for restaurants in the city. Capturing the grandeur of centuries-old traditions and combining them with contemporary cookery techniques and innovative presentation, Masala Library by Jiggs Kalra offers an exciting gastronomic voyage. Originally built in the 1960s, as a focal access point for commuters coming from Abu Dhabi, Dubai and the other emirates, Al Faya Lodge comprises of three stone buildings, one of these buildings was used during this period as a medical clinic, which was the oldest medical centre in the area; and a fuel station, which was also one of the oldest and most important fueling stations in Sharjah and the UAE for local commuters. One of the buildings was restored and transformed into a boutique, while the other into a restaurant. A Day of Wellness at Jumeirah at Saadiyat Island Resort This evening we are excited to be visiting Jumeirah at Saadiyat Island Resort to experience the hotels newly opened spa. Our treatment will later be followed by a wellness meal from the signature Bodyism menu. Jumeirah Saadiyat Island Resort boasts a luxurious 2,700 square meter spa. Guests are invited to enrich their body and mind in 15 spacious treatment rooms or experience a cleansing ritual that has been celebrated for centuries at the spa’s grand Moroccan bath and hammam. For the conscious traveler a choice of organic spa rituals as well as innovative spa therapies from the holistic spa menu awaits. Offering its own entrance and parking, getting to the spa couldn’t be easier. As we arrive, we are warmly greeted by the spa team. We are asked to fill in a questionnaire listing our requirements, from the pressure to the oils, every element is designed to cater for your individual needs. Once complete we are guided to our separate changing facilities. Our journey begins in the relaxation area, here guests can enjoy a warm tea before being taken into the treatment room. The spa team are very professional and informative. As I enter the treatment room, my therapists talks me through the treatment and takes the time to understand my areas of concern. The therapist then begins by washing my feet with rose petals and a Himalayan salt scrub, helping soothe aching feet. I am then asked to take my place on the massage bed. The music, temperature and ambiance of the treatment room are perfect, and the massage is performed to perfection. I opt for the Deep Tissue Massage. This massage releases stress, eases muscle tension, boosts circulation and improves mobility. My companion opts for the Serenity Aroma Massage. This is a nurturing massage with gentle, long-stroke movements, performed with a choice of aromatic essential oil blends. Our stress is alleviated, sore muscles are soothed, and circulation is increased. We leave the spa feeling energized. Those wanting to continue their relaxation journey can make the most of the spa facilities, these include a salt room, steam room and rhassoul to name a few. Continuing our wellness journey, we make our way to Majlis located in the lobby area of the hotel. Majlis serves a selection of tasty desserts and light refreshments. However, wanting to eat well we are here to enjoy the signature Bodyism dishes. After browsing the menu, I order the Eggs and Avocado, soft boiled eggs, avocado, pine nuts, rye bread and organic olive oil and grains and my dining partner decides to try the Bodyism Gluten Free Protein Pancakes with banana, almond milk, agave yoghurt and raspberries. Both dishes are extremely appetizing and although healthy neither dish compromises on taste. We thoroughly enjoyed our wellness journey at Jumeirah at Saadiyat Island Resort.
