Amazonico, Madrid’s Celebrity Hotspot Set To Open In Dubai
This November prepare to be transported to an enchanting Amazonian forest as Madrid’s much-anticipated celebrity hotspot arrives in Dubai. Opened in 2016 in Madrid, Amazonico is widely acclaimed in Madrid for its cuisine and atmosphere, it serves colourful and vibrant cuisine in a captivating, warm and inviting space, filled with details and charm. Amazonico Dubai will be the restaurant’s second outpost, after London Mayfair which is set to open this October. A rich culinary experience is complemented by the venue’s stellar interiors, courtesy of award-winning interior designer, Lázaro Rosa-Violán, who takes cues from Latin American heritage. Spanning the globe with projects in over 40 countries, Lazaro Rosa Violan studio has worked with top hotel, restaurant and retail groups; including Inditex brands Oysho, Pull & Bear, and Lefties, Suarez Jewelers, Aristocrazy, Soho House, Mondrian Hotels, Berns Group Stockholm, Iberica Restaurants London , H‐10 Hotels, NH Hotels, Sandy Lane Canouan and Marriott. Nestled in the heart of DIFC in Dubai, the three-storey space is transformed into a wilderness paradise to take each guest on a journey along the Amazon river. As you enter, you are welcomed into a striking bar and lounge with an impressive mural of fish, moving upward to a markable restaurant area, completed with a story telling rooftop terrace. Designed with keeping every small detail in mind, Amazonico, a space filled with details and charm, welcomes guests for an immersive experience that takes them back to the sprawling rainforest, Andean peaks and golden shores of the northern coast. Ceilings are draped with lush rainforest-inspired foliage and suspended palms. The rooftop features a space in which the drawing of the pavement with pieces of “Portuguese road” plays a fundamental role, this co-exists with awnings full of colour on its perimeter, reminiscent of a walk along a Brazilian beach. A spiral stairway and larger-than-life palm tree sculpture forms the central core of the venue and continues across all three floors. Always seeking continuity between spaces and inspired by the flow of the river, the terraces are filled with roof vegetation giving rise to an extension between the interior and exterior.Tropical inspired elements such as the tones of the furniture, ceiling, the water sculpture and chimney are seen acquiring their own character, here in Dubai and amalgamate the final design. A painter, traveller and designer, Lázaro takes inspiration from his roots and surroundings; his cultural background allows him to mix, modify and reinterpret past and present trends for each new project. With Chef Sandro Silva and Marta Seco heading the kitchen, Amazonico promises an unparalleled gastronomic venture, complete with its exquisite ambience and hospitable team - the perfect balance between professionalism, warmth and genuine care. Part of the Dogus Group, owners of Zuma, Nusr Et and COYA to name a few, we already have high expectations of what Amazonico will bring to Dubai’s dining scene. Amazonico will be located in Gate Village, Pavillon DIFC and is set to open in November 2019. 8 | Dining and Nightlife Middle East

Akira Back, A Rising Star
18 | Dining and Nightlife Middle East
Chef Akira Back is famed for his sense of adventure, culinary creativity and eponymous blend of Japanese fare with Korean essence. Today we are meeting Chef Akira Back at his restaurant, Akira Back located at W Dubai – The Palm. Leanne: You started life as a professional snowboarder, at what moment did you realized you wanted to be a chef? Akira: I was born and raised in Korea, so my original dream was to be a professional baseball player, that’s how I got my nickname Akira. Then one day my father told us we were moving to Aspen, Colorado. I was about 13 years old and couldn’t speak a word of English. It was a bit of a culture shock. I started getting into snowboarding to help me make friends and learn English. By the time I had turned professional I was already hungry for my next challenge. All the snowboarders would hang out at this restaurant and the guy there was so cool, I wanted to be like him. It was funny because it was a Japanese restaurant and at the time I couldn’t eat raw fish. I was the worst student ever, if I had someone like me in the kitchen I don’t know if I’d have the patience to teach them. My parents didn’t take me seriously, I was spoiled by my mum and I never cooked at home, I can’t even do the laundry now. I never planned to be a chef, I wanted another option apart from school. People don’t like to hear this but it’s the truth, I didn’t want to go to school I wanted to be creative and express myself, being a chef gave me that opportunity.
Leanne: I understand you were born in Korea and raised in America how has each culture influenced your cuisine? Akira: I think it is important that I grew up in Korea as it allowed me to understand the foundations of the cuisine. As for America, well that’s the melting pot of cultures, it allowed me to develop a more universal palate, that’s why my food is unique. I’m not fusion, we don’t do fusion, my cuisine is a reflection of me, and my restaurants understand the tradition of the food. Leanne: You have a variety of concepts. How do you think of these concepts? Akira: Well, I wish I could tell you it comes to me in a dream, it would sound very exciting but that’s not the case. I take what I love, say a lounge, but then I look at what I don’t like about lounges, for example lounges offer great beverage menus but normally disappoint when it comes to the food menu. So, I ensure our lounges have good menus, both food and drink. Plus, I always like to make my concepts a little bit different. Recently I opened a Chinese restaurant and I put a karaoke room in the restaurant because I always felt Chinese restaurants where so stiff, I wanted to bring some fun to mine. Leanne: That sounds like fun!
November | 19
At this point Akira is focused on the private dining room in the restaurant. Akira: You know what, perhaps we’ll take that private dining room and make that a karaoke room. I think the crowd at W Dubai – The Palm would like that. Today people want to have fun, they like to experience something memorable. The fact that I travel so much also helps me develop my ideas, that’s why one day I want to have my own hotel.
Leanne: What do you think of the culinary scene here in Dubai? Akira: Dubai is unbelievable, everybody is here. I feel very lucky our restaurants are well known, have been getting great reviews and becoming busier by the day. I think Dubai has one of the best culinary scenes in the world. Dubai is an important market for me we waited eight years to get a great restaurant location. I come to Dubai often, this is my fifth visit this year, next year I’m going to take a few recreational days to see what’s new on the culinary scene.
Leanne: Where would you want to open your first hotel? Akira: The first opportunity I get to do a hotel I’m taking it, I’m not to fussed about the location, I know I could do something really cool and funky. Leanne: Your first restaurant was in Las Vegas, that’s a bold location for a first restaurant, how did that opportunity present itself? Akira: One day I got a call, I didn’t know the people, but they called and ask me to do a tasting. They wouldn’t give me any details about the restaurant location or concept and at the time I was working at Nobu, so I declined and told them I was happy where I was. Four months later they came back but by then I found out the location. They told me they hadn’t found the right guy and still want to meet me. So, I went there and was asked to make six dishes, I said no, I didn’t like the dishes they asked me to make, they loved my reply. I made them a few of my own dishes and they loved it. Then this English guy showed up, big personality, proper old school geezer, that was an interesting conversation, we signed that day.
20 | Dining and Nightlife Middle East
Leanne: You have twelve restaurants in the pipeline, that’s an impressive amount, tell us a bit about them. Akira: We got San Diego, San Francisco, two in Dallas and three restaurants in Boston. 2020 is a big focus on the USA, then next year we open our restaurant in Europe, I’m so excited for this location, it will be in Paris, it is a dream come true, the location is unbelievable, honestly the location is crazy. Leanne: Can you give us more details? Akira: Lol. No. I can’t its not been announced yet but trust me when I say it is one of the best locations. The design is almost finished and we should be open by June, so watch this space! Leanne: You were awarded your first Michelin star for your restaurant in Seoul how important was that for you? And are you striving for more stars? Akira: I heard a rumour that Michelin was coming to Seoul, so I thought that’s it, I’m going home to get a star. I wanted to prove to people that we could get a star. I went and found a space one block from where I grew up, I didn’t do any research and paid
triple for the space. Later I found out if you wanted to open a restaurant to needed to have a Korean partner, I didn’t want a partner I wanted to do it my way, so I had to apply to get a green card. The restaurant was four months behind schedule, rent was sky high and pretty much everything I did was wrong. It was the stupidest but the best thing I did in my life. But we got the star. Dosa’s concept lends itself to Michelin, a small seater restaurant with a focus on great produce. As for more stars I’d actually like to close Dosa and open it again in another country and get another Michelin star, that would be really cool. Proving that we can move Dosa and the same team anywhere in the world and still get a Michelin star. London would be a cool place to try it. Leanne: What inspires you when creating a new dish? Akira: I like to make food that’s very easy to eat but visually stimulating at the same time, then I work on the flavour, sometimes it’s a quick process and sometimes its slow. The pizza we serve here took a long time to perfect; the whole process took six to seven years but then there is one dish that only took me three minutes to make. I find inspiration everywhere, for example Las Vegas, to me Vegas is pure sound, from coins to slots, I wanted to capture that in a dish, so I created a dish with popping candy. Dietary trends also play a role, our menus are inclusive, we look to cater for all so that people can just come here and relax, if you are for example, vegan or gluten free, we can cater for you. Leanne: You’ve done lots of TV shows, what is your most memorable TV experience?
Leanne: Would you look at doing your own TV show? Akira: Yes! 100%, I’d love to do a show about me travelling the globe and opening new restaurants. People could see how you open a restaurant in France in comparison to Dubai. They could see the drama of the restaurant and how to build a successful restaurant brand. I’d love to be able to educate people and show them the A to Z on how to open a restaurant, from finding suppliers in different markets to finding locations, I think that would be really cool. Akira Back is a true rising star, a driving force in the culinary world his effort and determination to succeed are nothing short of infectious. We can’t wait to learn more about his new restaurant in Paris and be sure to watch this space, Akira Back isn’t slowing down anytime soon. Dine at his restaurant Akira Back at W Dubai – The Palm and enjoy an adventure for the soul, with the energy behind-thescenes fueling the flavors. Diners can expect modern Japanese cuisine with a Korean and international essence prepared with seasonal produce and artisanal sourced ingredients. Japanese cuisine aficionados can indulge in mouth-watering and eclectic fusion dishes from Duck Prosciutto and Filet Tobanyaki to Lamb Chops and Gambero Prawns. Akira: Iron Chef, I grew up watching the show and I lost when I was on the program, that fuelled me to do better. That show made me grow up, I went there a very long time ago when I had no name, it was a big learning curve.

MAZI, Greek Cuisine Reimagined
22 | Dining and Nightlife Middle East
The St. Regis Saadiyat Island Resort, Abu Dhabi cements its mission as ‘the’ best dining destination in Abu Dhabi with the latest addition of renowned London restaurant MAZI. Adding to its already impressive line-up of food and beverage offerings, spread across the expansive resort, which include the worldrenowned Buddha-Bar Beach Abu Dhabi, offering a day-tonight destination, the first one of its kind in the world and the Mediterranean-inspired Olea. For a taste of Southeast Asia, Sontaya unites an array of exotic dishes with a mystical atmosphere featuring captivating floating pavilions and exotic nuances. The Drawing Room offers both handmade sweets from the onsite pastry shop and the St. Regis’s legendary Afternoon Tea. MAZI has created an exciting new menu for its Abu Dhabi restaurant, breathing new life, colour and flavour into the worn stereotypes of Greek cuisine. It is the concept of sharing fun moments together with friends and family in a casual and contemporary setting that will make each visit even more memorable. We caught up with Christina Mouratoglou and Adrien Carré, dynamic husband and wife team behind the MAZI brand.
‘The St. Regis Saadiyat Island Resort, Abu Dhabi is the perfect location for us, the hotel already has a wide range of exceptional dining options so for MAZI to be amongst them for its first branch outside of London is very exciting’ said Adrien Carré. ‘We are true perfectionists; we have been in Abu Dhabi ourselves ensuring that the service and cuisine are true to the MAZI brand. Our chefs from London have even moved to Abu Dhabi permanently’ said Christina Mouratoglou. For the full interview visit www.diningandnightlife.com Later that evening we head to MAZI for dinner. The design of the restaurant takes a modern approach to the rustic architecture and décor of Greek towns with splashes of playful bright blue and mustard furniture. It is home to a beautiful interior replete with carefully chosen elements like a traditional fishing boat at the entrance and door handles made of olive branches. The 120seater venue also offers a cosy bar area as well as a terrace that features tables spaciously distributed within a garden of olive trees. The one page menu is broken down into five sections, Jars, Salads and Raw, Hot Plates, Signature Dishes, and Desserts the menu is designed for sharing and each dish arrives to the table when ready. November | 23
From the Jars we select the Grilled Aubergine with soy and thyme honey, this is enjoyed with our complimentary bread. From the Hot Plates we order a portion of the Courgette Cakes with cucumber and mint dip, Fresh Calamari, lightly battered with citrus mayo and the famed Feta Tempura with lemon marmalade and caper meringue. The Courgette Cakes are the first to arrive, upon our first bite our taste buds tingle with the multitude of flavours, be sure to dip them in the cucumber and mint dip it will add emphasises to the flavours. Next to arrive is the Feta Tempura, beautifully presented the crisp tempura batter lightly encases the warm feta, paired with the zesty lemon marmalade and rich caper meringue this dish is exceptional, simple in appearance but packed full of flavour. The Fresh Calamari follows shortly after, again another great dish.
Ending on a sweet note we enjoy the Loukoumades, lavender honey, crushed walnuts, and chocolate sorbet. Loukoumades, are small warm dough balls, deep fried to golden, soaked in warm honey they are a must when visiting MAZI. The sharing concepts works well as we are able to try lots of different plates and explore an array of flavours. We thoroughly enjoyed our time at MAZI, so much so we must admit we have returned several times since its opening. MAZI makes for a great lunch destination but it really comes to life in the evening, with the cooler months upon us take a seat amongst the olive trees on the MAZI terrace and let the culinary team transport you to Greece.
Grilled Aubergine, AED 35 Courgette Cakes, AED 50 Moving onto the Signature Dishes, we decide to share the Grilled Fresh Calamari, AED 55 Octopus with garden herb potato salad and olive tapenade. This Feta Tempura, AED 50 is our favourite dish of the evening, thick meaty octopus, lightly Grilled Octopus, AED 175 seasoned with a rustic grill aroma, perfection on a plate. 3BK, Armani’s Latest Luxury Offering
26 | Dining and Nightlife Middle East
The Armani Hotel is synonymous with luxury, and with one of the most coveted addresses in the city (yes, inside the Burj Khalifa), the newly opened restaurant 3BK offers some of the best views of the renowned dancing fountains. Although sometimes the hotel is a bit too cool (we can’t locate any signage directing us towards the restaurant in the lobby), after checking with the staff, and stepping into the lift, we arrive to the third floor. While the spa beckons on the same level, we turn left and are warmly greeted at the front of the restaurant, then shown to a table near the soaring windows. These tables are definitely worth requesting and ensure better views, looking back onto the fountains and the lights of The Dubai Mall and Souk Al Bahar. We are told the expansive outdoor terrace will be opening soon and we can only imagine its popularity in months with pleasant weather. We are sure it will become a destination for those in search of an upscale, but relaxed vibe. The dining room is substantive, with room for 150 diners, as well as a private dining room. 3BK is the first independent dining outlet at the luxury hotel, in line with the design of the property, the interior of the restaurant aligns with the brand and focuses on a minimalist and modern approach. The decor is muted and subtle and a seamless match to the rest of the property. Although we opt to go directly to our table, there’s an upscale bar area, with an inventive range of beverages.
A brief look at the menu showcases a wide range of food, including sushi and nigiri, although overall ‘global’ in design. Led by Head Chef Esteban Torregrosa, the menu is intended to be sharing-style and will change seasonally. Vegetarians should feel comfortable with plenty of options for them to choose from. After a brief consultation with the team, we decide to start with both a vegetarian and protein-based tartare. The Tomato Tartare is our favorite. Served with crunchy breadsticks, there is plenty of depth, and we don’t miss the meat at all. At the table, our Beef Tartare is literally covered in pecorino cheese, which is a nice touch but perhaps a bit overwhelming. If we’re being honest, we’d also love to see some coarse salt on both dishes. Is it even a restaurant in the UAE if there isn’t an order of Burrata on the table? While the promise is ‘something different,’ it’s still very much a Burrata dish we would recognize anywhere. The addition of granitas is a refreshing touch, and the price point of AED 80 is quite fair in the market. The chef also decides to send us Croquettes, which are delightfully smoky and cheesy. The six pieces disappear quite quickly.

My dining partner and I decided to split our main dishes and order two vegetarian plates, the All About Corn, as well as the Roasted Cauliflower. Of the two, I find the cauliflower far superior and would happily order it again. We’re split in opinion on the signature cheesy corn dish. Personally, there’s nothing in particular I like about it (which is strange considering I enjoy all of the ingredients on a separate level) however, my partner enjoys the combination. I think it needs a bit more refinement to find its full potential. Fortunately, we’re in complete agreement about the Salmon. The Salmon dish is very reasonably priced at AED 105, the fish is perfectly cooked and served with appropriate greens. We haven’t ordered any of the side dishes and are both full enough from the starters that this doesn’t seem like an oversight. After a bit of conversation with our server, we decide to choose just one dessert, and the presentation of the Cheesecake is one of a kind. Not overly sweet, the tartness of the passion fruit helps make this dish dynamic. As a final added element, we receive both a palate cleanser (wonderfully fresh) and petit fours, both of which don’t go amiss. Overall, I would order most of our dishes again, and I can’t fault the service staff for their attentive and friendly nature.
Although we decide to dine a la carte, 3BK offers a six-course tasting menu for AED 350 and an eight-course menu for AED 450 (both of which I’m told are very filling). Would we go back? While we might not rush back for the food, the views are sure to continually wow any out of town guests who visits during the cooler months of the year. Staff are exceptionally friendly and professional, and clearly very proud of the menu. 3BK is open Saturday to Wednesday 6.00pm to 1.30am and Thursday to Friday 6.00pm to 3.00am. The Abu Dhabi EDITION

November | 31
This month we venture to a world of luxury at The Abu Dhabi EDITION. Strategically situated along the Al Bateen Marina, the view on arrival is distinctive and memorable. Illuminated, the exterior is reminiscent of the lateen sails of the traditional Dhow boats once famous in the region. The Abu Dhabi EDITION is the first EDITION to open in the Middle East, a ground-breaking hotel concept brought to life by Ian Schrager, the visionary behind contemporary luxury as we know it, in collaboration with Marriott International. Good food is centric to any EDITION and The Abu Dhabi EDITION is no exception, boasting three signature restaurants created by world renowned chef Tom Aikens, the youngest chef ever to be awarded two Michelin stars. With 198 guest rooms and suites as well as 57 exclusive residences, this jewel of Abu Dhabi delivers the best of both worlds: polish with personality, perfectionism with individualism and comfort with charisma and charm. This balancing act encompasses not only exceptional design, but also personal, 32 | Dining and Nightlife Middle East
friendly, modern service as well as outstanding, one-of-a-kind food, beverage and entertainment offerings ‘all under one roof’. Inspiring views reveal the Abu Dhabi skyline and marina, many guests can experience them from their balconies. For our stay we are residing in The Abu Dhabi EDITION Superior Suite. Upon entering the Superior Suite, we are taken back by its spacious and elegant design. To the right is a restroom and ahead of us is a large living room boasting comfortable sofas and a large working desk. The wooden flooring is a refreshing change. The bathroom set-in off-white marble features a restroom, large walk-in shower and a standalone bathtub. In the bedroom the walls feature beautiful wooden panelling, light neutral tones echo throughout the room, making us feel like we have escaped to a country retreat. As appeasing as all the décor is, what is most important is that it also creates a comfortable atmosphere in which to relax. Be sure to use the gowns, which are also available for purchase, you’ll feel as if you have just wrapped yourself in a cloud. After a swift check-in and having enjoyed some relaxation time in our room we make our way to Alba Terrace for lunch.
Alba Terrace offers locally sourced coffee, light lunches and Mediterranean style sharing plates. The restaurant has a spanning outdoor terrace for those wishing to dine al-fresco or a delightful indoor dining room. For starters we enjoy the Burrata and the Fried Calamari. The Burrata served with confit tomato, basil and tomato oil is a great light and fresh starter. The Fried Calamari in black ink and garlic aioli is a stark contrast to the subtle flavours of the burrata, this dish has a distinct salty taste and a crisp texture to the bite. For mains we both opt for the Tagliatelle with cherry tomatoes, rocket and basil. Simplicity is key, a few ingredients brought together to create a light and wonderful lunch dish. Wanting something sweet we share the Apple Tart ingeniously paired with cinnamon ice cream. With sometime between lunch and dinner we decide to visit The EDITION Spa. As we enter the spa we are warmly greeted by the team and taken to the relaxation area. The spa features separate
zones for men and women, consisting of seven treatment rooms, including two Hammams, a facial room and couple’s treatment suite. The women’s area also houses a beauty salon and a relaxation lounge. The men’s area features a barber shop by Chaps & Co. Feeling slightly tense from the working week we opt for a message. We ask our therapist to focus on our shoulders, where we carry the most tension. The dimly lit treatment room offers a sense of calm from our busy day. The massage is performed well, and the therapist uses a selection of massage techniques from rubbing, kneading to stretching. The combination of these techniques ensures that any muscle tension is relieved. After a relaxing afternoon its back to the room to get ready for dinner. Tonight, we will be dining at the Oak Room, the hotels popular steakhouse that promises a bit of British rock ‘n’ roll flair. As we enter the restaurant the British rock ‘n’ roll flair becomes evident, subtly done, Oak Room offers a touch of class with a slightly naught edgy. Chef sends us a delightful amuse bouche of November | 33
mini tuna tartar tacos with caviar, the tone is set. From our appetizers we both select the English Crab with basil mayonnaise, pickled cucumber and yoghurt. The dish arrives and the presentation is very interesting, as we slice through the pickled cucumber layers of fresh crab fill our plate the sharpness of the pickle in contrast with the slightly sweet yoghurt is sublime. If you know me, you’ll know I have a distinct weakness for ricotta so when I see that Oak Room offers Housemade Ricotta with aged balsamic, heritage tomato and basil, it only seems right to order a dish. Served with aged balsamic, the balsamic vinegar is meticulously extracted from the barrel, aged to perfection it is then carefully placed in the centre of the fresh and creamy ricotta. Another incredible dish. For mains, I order the Fish and Chips, a plump cod fillet, tartar sauce, crushed peas and triple cooked chips. From the speciality steaks my companion selects the Westholme Wagyu Striploin grade 6+, 250g with bearnaise sauce. 34 | Dining and Nightlife Middle East
The Fish and Chips are superb, thick cut chips and an enormous piece of cod perfectly battered; I almost feel like I’m back in the U.K. My dining companion is enjoying his steak, succulent and juicy, the cut is impressive. Oak Room has a few cuts not found in other steakhouses, so for meat eaters amongst us Oak Room should most definitely be on your radar. Overall our stay at The Abu Dhabi EDITION was fantastic. It is very rare that you can find a hotel with this much style to be this comfortable. Whilst many hotels claim to be a home away from home solemnly do they deliver. However, this is where The Abu Dhabi EDITION excels. Its soft furnishings, candle lit lobby, distinct scent, fabulous dining options and warm and welcoming team are what make The Abu Dhabi EDITION one of the best hotels we have ever experienced. Ray’s Grill
Located on the 63rd floor of Jumeirah at Etihad Towers, Abu Dhabi, Ray’s Grill offers an unapparelled dining experience. The interior is as one would expect for a steakhouse, stylish and sophisticated, dark wooden flooring, black marble walls and plush leather seats. The open kitchen takes centre stage, ensuring every guest enjoys the culinary teams flamboyant show. Be sure to sit near the window, the dimly lit restaurant allows the twinkling city lights to shine through, offering perhaps one of the best views of Abu Dhabi’s skyline. As we enter, the restaurant is already busy with guests enjoying their evening. We take a seat by the window and begin to select our dishes. Ray’s Grill has just launched a new menu, the new menu offers a wider range of cuts and sees the addition of more seafood dishes. As we look through the menu the team offer us complimentary breads and a candle (with a twist). The candle is made from beef fat and when it melts guests can dip the bread into the fat. A unique and memorable gimmick. Everything sounds tempting, from the Grilled Oysters, Steak and Eggs (yes it comes as an appetizer) to the Prawn Cocktail, we debate whether to start with a seafood or meat dish. Eventually I sway towards the Tuna Tartare. The Tuna Tartare is made tableside allowing us to specify exactly how we would like our dish prepared. This is a welcomed change, as we are partial to an extra dash of chili. Light and fragrant the subtle hint of smoked oyster mayonnaise adds a defined richness to the dish. My dining partner opts for the Lobster and Crab Cakes. Fresh lobster and crab meat, shaved apple and fennel salad, mango salsa, ginger and lemongrass jam make for an exciting starter. The contrast of sweet mango salsa verses the sharp ginger is genius. The menu offers a wide variety of Steaks as well as Sea Bass, Canadian Lobster, Seafood Mixed Grill and Meat Boards. The Meat Board looks very interesting, it offers a generous selection of Flat Iron Steak, Wagyu Rump MBS 6-7, Smoked Angus Short Rib, BBQ Chicken, Homemade Beef Sausages, Lamb Kebab along with two sides and sauces all for AED 545. As we have already enjoyed a substantially generous starter we decide to go with individual mains, although we would return to try The Meat Board. My dining partner opts for the Kagoshima Tenderloin 200g from Japan. With a superior marbling pattern, the snow beef steak flavours are so intense, they are unparalleled to any other. The Kagoshima Tenderloin is exceptional, cooked medium well, intensely marbled, the fats give it a rich buttery texture and makes each bite as satisfying as the next. I decide to try the Lobster Gratin from Ray’s Signature Dishes. This consists of large plump lobster in chopped spinach, garlic mushrooms, lemon butter sauce and manchego cheese. Initially I had worried that the dish would be too overwhelming however chef has perfectly balanced the ingredients. Not only was this one of my favourite dishes this evening but I would say one of the best dishes of 2019. November | 37
For our side dishes we order the Baked Potato and Garlic Mushrooms. The portions are much larger than expected considering they are priced at AED 35. We had imagined them to be much smaller, not that we are complaining, it’s a refreshing change. The attention to detail is second to none, before the steak is served, we are able to select our steak knife, shortly after a trolley arrives offering a wide variety of pepper from around the globe. Our waiter is extremely knowledgeable and recommends the ideal accompaniments to enhance the flavour of the steak and lobster. To conclude our dining experience, the team insists we try the new dessert. We are presented with a beautifully crafted mirror glazed apple (it is not a real apple, it’s a dessert that is made in the shape of an apple). As soon as the fork touches the apples

exterior, chocolate appears, as it pours onto the plate, we are left with a fork full of gooey goodness. Overall, we had a wonderful dining experience at Ray’s Grill and one we would highly recommend. The menu is versatile and offers a range of dishes and a variety of cuts. From the service, food quality to the views of Abu Dhabi’s skyline this is one of the best steakhouses in Abu Dhabi we have had the pleasure of visiting. Amalfi Vibes At Newly Launched La Piscina
40 | Dining and Nightlife Middle East
Discerning residents of Dubai already know about the ultra-luxe Palazzo Versace Hotel. Although the property is home to several unique restaurants and outlets, today we turn our attention to the recently opened La Piscina (that’s ‘pool’ to you non-Italian speakers). Per the related press, the venue promises to help guests “feel a world away, and immerse themselves into the crystal blue waters, overlooking the Dubai Creek.” Well then, let’s see if La Piscina delivers. We arrive via ride-sharing app, and find it is easiest to access the outdoor pool area by walking along the colonnade outside of the hotel on the right and following the path to where La Piscina is located. Could the signage be better? Yes, probably. The new concept is located by the east lagoon pool. There is planting (in the formof large palm trees) and some additional green space on the far end where more cabanas are located. It features not only a poolside swim-up bar but offers visitors a chance to dine al fresco, in private cabanas, or directly by the pool. Overseeing the menu is Mansour Memarian the Director of Food and Beverage at Palazzo Versace Hotel, Dubai.
Overall, the menu reads as one would expect for a poolside venue. We feel a relaxing day deserves refreshing food, and there are a variety of cold selections available at La Piscina. After some review, we choose the La Piscina Salad, featuring baby gem lettuce, garden leaves, roasted walnut, feta, watermelon, and lemon dressing. It’s a nice treat on a hot day, and we feel good about ordering something that qualifies as healthy. Also, let’s face it, we’re usually always going to order anything with sushi in the title and the Royal Sushi Box catches our eye. It has plenty to share and a decent selection. We especially enjoy the presentation, in a charming (and quite literal) box.
From the hot starters, we’re curious about quite a few of the dishes, including the Garlic Prawn in Buckets, Crispy Calamari and (have you noticed a theme?) the Sushi Burger! Made of a rice bun, Wagyu ground beef, omelette, cheddar, spring onion, and spicy mayo, it’s certainly interesting. While nothing is being reinvented with the seafood dishes, we’re happy with our order. Although we see pizza on offer, we decide not to order and instead move forward to something sweet. The cannoli are in line with the Italian theme of La Piscina but it’s the Churros, served with vanilla and caramel sauce, that we have to try. Although After we find a comfortable set of sun loungers (complete with recognizably branded towels, this is Versace, after all) and enjoy a we have other favourite versions in the city, there’s still nothing quick dip in the large pool, it’s time to review the menu. There’s a wrong with fried dough. range of drinks, including spiked iced tea (and regular versions, as well), mixers, and mocktails. November | 41
While the food is perfectly pleasant, we assume many interested in visiting will wonder about what offers are available. In case you’re planning a trip to La Piscina, the venue is open daily from 10.00am until 7.00pm, and when you spend AED 200 (gentlemen) or AED 100 (ladies), you’ll get a complimentary sunbed for the day. A resident DJ plays a variety of tunes daily from 1.00pm. There is a ladies’ day every Monday with complimentary bubbles from 1.00pm until 4.00pm. There’s also sushi day on Wednesdays, offering unlimited sushi for AED 199 from 1.00pm to 4.00pm. Furthermore, if you want to make the weekend last a bit longer, there’s also a Saturday brunch, which includes an open buffet of Mediterranean dishes and free-flowing drinks from 1.00pm until 4.00pm and is priced at AED 250 per person.
Would we go back? While there are plenty of pool and beach offers in Dubai, we must admit that the upscale vibe and overall privacy of Versace is something we could get used to. While other pools and outdoor venues might attract larger crowds, sometimes we just want to relax - and poolside at La Piscina is a lovely way to spend an afternoon. Benjarong, Traditional Thai Cuisine
44 | Dining and Nightlife Middle East
Located in Dusit Thani Abu Dhabi, guests will be treated to authentic Thai cuisine at Benjarong, the hotel’s highly acclaimed Thai restaurant. Promising to bring the best of Thai cuisine to Abu Dhabi each dish is prepared with thought and intricacy. The restaurant prides itself on serving recipes that have been passed down over generations.
My dining partner opts for the Chicken Satay, homemade chicken satay, served with cucumber pickle and peanut sauce. The dish is enjoyable but as it is served on a plate that allows for a candle underneath it is a bit disappointing that we have no candle, it certainly would have helped keep the Chicken Satay warmer for longer.
We are welcomed by the team at Benjarong with a traditional Thai welcome ‘Sawadee Ka’. The waiting team, chef and restaurant manager all greet us as we arrive, this is what makes Thai culture truly warm and welcoming.
From the salad menu we select the Green Papaya Salad with long bean, cherry tomato and tamarind dressing. The dish is more than generous and can easily be shared by three or more people. At this point we realize we have slightly underestimated the portion sizes, luckily, we have a few minutes before the soup arrives.
The decor at Benjarong is reflective of rich Thai culture, with dark engraved wooden tables and bright red and golden upholstery. The zesty scent of lemongrass is evident throughout the restaurant.
The Tom Yum Soup comes in a variety of options, guests can choose from prawns, seafood, chicken or vegetables. Having ordered so many protein dishes we opt for the vegetable The menu offers a range of delicious dishes and whilst the menu alternative. The spicy and sour broth is unmistakable in aroma, options are extensive the menu is not too large to be overbearing. thick mushrooms, galangal, kaffir lime and lemongrass all add to Personally, I’d rather more choice than less. the fragrant dish. Tom Yum Soup is always a good measure of an Asian restaurant’s capabilities and Benjarong does not disappoint. To start I order the Shrimp and Crab Cakes which consist of ground shrimp, crab and water chestnuts wrapped in tofu skin served with a plum sauce. Presented as bitesize balls, the Shrimp Wanting to explore the seafood specialties, I order the Whole Sea and Crab Cakes are fresh and piping hot. Full of flavour the Bass, a large steamed sea bass with ginger, spring onion and generous portion is quickly enjoyed, a pleasant start to our dining soya sauce. Sadly, we don’t enjoy this dish, its subtle flavours fail experience.

to excite us and with too many bones in the fish we spend more time trying to avoid them than we do enjoying the fish. My dining companion orders the Goong Makham, wok fried king prawns with tamarind sauce and asparagus. This is a signature dish at Benjarong and upon our first bite we understand why, the thick rich tamarind sauce offers a honey like sweetness paired with the light smoky wok flavours, this dish is exceptional and most definitely the highlight of our evening. Keeping with traditional Thai desserts we order the Mango Sticky Rice to share. The mango, currently in season, offers a bounty of juiciness. The team insist that we try the Fried Banana, slightly hesitant we agree. The Fried Banana has been lightly fried allowing it to offer a slight crisp to the bite, without drying the moistness of the fruit.
46 | Dining and Nightlife Middle East
What you get from the menu is so authentically Thai that it brings back great memories of our travels to Bangkok (so yes expect vegetable shaped flowers on the side of most dishes). Dishes are very reasonably priced especially given the portion size and the service is warm and genuine. What we like is that Benjarong stays true to Thai cuisine, in a world of fusion restaurants perhaps something can be said for remaining true to authentic traditional cuisine. Whilst we wouldn’t order all the dishes again the ones we did like were superb and we would be keen to return and explore more of the menu. Sweetest Brunch At Le MĂŠridien City Centre Bahrain
48 | Dining and Nightlife Middle East
Today we are headed to Baharat Restaurant at Le Meridien City Centre Bahrain which is home to one of the best brunches in Bahrain, the Sweetest Brunch. We are shown to our table which is just opposite the live duo, allowing us to get into that weekend mood. The brunch offers a selection of live cooking stations serving everything from Fresh Lobster Tail, Freshly Shucked Oysters, Sushi, Prawn Dumplings, Roasts to Pasta. To begin we enjoy a few helpings of Freshly Shucked Oysters and a few portions of Sushi, a great start to our brunch experience. We compliment this with a few small plates of Crab Sticks, Mozzarella with Basil Pesto and Tomato Salad, Salmon Gravlax, Fish Terrine, Beetroot Moutabel, Stuffed Vine Leaves, Chickpea Salad and Prawn Cocktail. The small plates are amazing, and the presentation is well executed, it’s a pleasure to see that the team have put so much effort into the smallest of details. The fresh seafood is beautifully presented on beds of ice and we cannot help but enjoy Lobster, Mussels, Shrimps and Clams. Chef and his team are on hand to ask us how we would like our seafood cooked, we opt for grilled, with a hint of garlic butter sauce. Served to the table the grilled seafood is delicious, piping hot, the garlic butter drizzles from the seafood as we cut into it with our knife. November | 49
Next, we sample a few dishes from the Indian selection, we choose the Pani Puri and the Dosa, again we are not disappointed. The Pani Puri (which we admittedly overindulge in) are delightful, best enjoyed in one bite, they burst with flavour. Although we are tempted by the rustic smell of the Tandoori Chicken, we are saving space for something else that has caught our eye. We take a moment to relax and enjoy the band. The band is playing a selection of modern and Latin American tunes, we can’t help but tap away. The entire brunch is located in the main area of the restaurant allowing every guest to enjoy the band and feel part of the uplifting atmosphere. After a leisurely break we decide to check out the roast options. I opt to for the Roasted Salmon, Vegetables, Yorkshire Pudding and Gravy, whilst my dining companions choose the Roasted Duck and the Slow Roasted

Striploin. The entire spread is divine and credit to the chefs they have captured the essence of a proper British roast dinner. To conclude our brunch, we make our way to the desserts. Note to all, save space, one of the many highlights of the Sweetest Brunch is its wide selection of desserts. The desserts range from two chocolate fountains, one white and one milk chocolate, a live crepe station, Bread and Butter Pudding, traditional Um Ali, a range of small cakes such as Mango Delight, Crunchy Praline Mousse to White Chocolate Vanilla Cake alongside Lemon Meringue Pie, Chocolate Dipped Strawberries and seven other large cakes that we don’t manage to get the opportunity to explore. In the mood for something savoury I decide to try the selection of cheeses and bread, a great way to conclude our brunch experience.
After three hours at the Sweetest Brunch we have barely tasted half the offerings. Also available for guests to enjoy is the Seafood Arabiata, Stuffed Vine Leaves with Lamb Chops, Baked Macaroni, Slow Cooked Beef, Grilled King Fish and the Fresh Pasta to name a few. Kids will enjoy the dedicated kids’ section. Overall the Sweetest Brunch offered us a great Friday afternoon, the cuisine was impressive and the staff were attentive. The wide variety of top-quality international cuisine ensures that every guest will find something to their liking. We would highly recommend a visit to the Sweetest Brunch! A Mediterranean Adventure At Brasserie Royale
52 | Dining and Nightlife Middle East
Tonight, we are visiting Brasserie Royale to venture on a culinary journey at the opulent Jumeirah Royal Saray Bahrain. Elegant cuisine from the Mediterranean set in a marbled hall awaits as Executive Chef Claudio Dieli shares his masterful new creations.
We begin with our first course ‘The King’ which consists of osetra caviar, tuna tartar, sour cream and parsley sauce. The tuna tartar is light and fragrant, the added sour cream which is presented in pasta tubes offers some acidity to the dish, an enjoyable start.
Promising Mediterranean freshness and flair with the highest quality ingredients, dishes are inspired by Executive Chef Claudio Dieli’s vision as he constructs a unique and flamboyant menu. This evening we are in for an extra special treat, as we are the first to try this exquisite new menu.
Our second course ‘Deep From The Sea’, includes king prawns, avocado, pickled onion and red chicory. This playful dish is visually stimulating, allowing our palate to transcend from the light flavours of the avocado to the fresh king prawn only then to be completed by the sharpness of the red chicory.
As we enter Jumeirah Royal Saray Bahrain we are escorted to the restaurant where chef greets us and talks us through his new menu. We take a seat indoors, as tempting as the terrace is, the restaurants décor is stunning, and we feel much more comfortable indoors. Floor to ceiling white marble with large windows give the restaurant a sense of space, whilst bright yellow chairs and a large modern chandelier add to the opulence.
Next up is the ‘Squid Ink Lobster Lasagne’ course with Omani lobster, creamy shellfish sauce and green peas. This dish is sensational, you can really taste the freshness of the Omani lobster. Unmistakable the Omani lobster always delivers on its meatiness. The squid ink lobster lasagne brings a heaviness to the dish this is further enhanced when paired with the creamy shellfish sauce. I am happy to see the use of green peas, a subtle nod to traditional Mediterranean cuisine. The food itself tastes amazing however are only criticism is the bowl it is served in, a deep bowl, we do struggle to cut the lasagne and do end up making a bit of a mess.
Executive Chef Claudio Dieli’s Mediterranean Food Adventure menu offers six delectable courses and upon first glance it seems to be a very interesting menu. We are given the option to enjoy the courses with soft beverages or selected beverages, we opt for soft beverages and for a set price of BHD 25 the menu seems very reasonably priced.

The ‘Provencal’ course is then served next with breaded lamb chop, potato, eggplant, bell pepper and olives jus. Imported from Australia, the breaded lamb chop paired with the eggplant and bell pepper offers a juxtaposition of flavours. Again, it is great to see traditional Italian ingredients such as eggplant and bell peppers being used in a more modern method of cooking. Dessert comes in two parts, first we begin with the ‘Sicilian Cannoli’ a crispy biscuit, ricotta cheese and chocolate chips. The ricotta is light and creamy, the biscuit offers just enough crisp and the chocolate chips give small hints of sweetness. The second part of the dessert is the ‘Vanilla Panna Cotta’ with citrus, passionfruit and cress. Delightful, every bite is sweet and zesty with the passionfruit giving this dish a sharp but moreish taste.

However, we only manage a few spoons, admittedly we could have done without this course, as enjoyable as it is, the previous courses were more than generous. Overall Executive Chef Claudio Dieli’s Mediterranean Food Adventure menu offers six delectable courses. Each dish is a treat for the senses, from the smell, the presentation to the taste. We enjoy the playfulness of the flavours and with a starting price of BHD 25 its worth every dinar. BHD 25 net inclusive of soft drinks. BHD 27 net inclusive of selected beverages. The prices above are in Bahraini dinar. Jumeirah Royal Saray, Manama, Bahrain, +973 7 770 7070

Phoenicia
Phoenicia is the latest addition to the rapidly expanding JA Resorts & Hotels Restaurant and Bar portfolio, set to open in two Dubai locations early this month offering modern Middle Eastern cuisine, with menus by award-winning consulting chef, Greg Malouf. Phoenicia (pronounced fuh-neesh-a) was an ancient Mediterranean civilization that originated in Lebanon, in the west of the Fertile Crescent or what is now often referred to as ‘the cradle of civilisation’. In 2500 B.C. and beyond, the Phoenicians were famous tradesmen who introduced the cultivation of olive oil and widely sold saffron, grapes, figs and salted fish amongst many other luxuries. In a modern tribute to our Phoenician ancestors, JA Resorts & Hotels introduces two new Phoenicia restaurants, one in JA Oasis Beach Tower on The Walk, Jumeirah Beach Residence and the other in JA Beach Hotel at JA The Resort, Jebel Ali. Both restaurants are set to be ‘authentic neighbourhood eateries that celebrate the enduring popularity and history of Middle Eastern cuisine’. More than 4000 years after the first Phoenicians, their legacy lives on through cuisine and culture. Bringing that to life in the Phoenicia restaurants is the Master of Modern Middle Eastern Cuisine, Greg Malouf. As the consulting chef of Phoenicia, the Australian-Lebanese chef has designed and developed a series of ‘menus by Greg Malouf’ offering a contemporary twist on the Middle Eastern classics, such as Hazelnut Falafel and Sea Bass Sayadeeya - a refreshing blend of the best of the old with the thrill of the new. Desserts have a unique and ultra Instagrammable twist, like the Baklava Ice Cream Sandwich. With a focus on sharing, the food is enduringly approachable and affordable. Phoenicia has two outlets, one in JA Oasis Beach Tower in the heart of The Walk, JBR and the other in JA Beach Hotel, nestled amongst the expansive greenery of JA The Resort. Within Phoenicia in JA Oasis Beach Tower, the interior is a mix of a refreshing mint colour, white stone and light tone woods. Handwoven baskets and elegant fishing style décor hark back to the trading days of the Phoenician ‘sea-people’. In JA Beach Hotel, Phoenicia has a similar theme with arabesque style wrought iron, exposed brickwork and a smattering of traditional Middle Eastern artefacts setting the scene for an atmospheric meal. Greg Malouf is one of Australia’s most influential and admired chefs and is widely credited with changing the way we experience and understand Middle Eastern food. Greg draws on his classical cooking training in Europe, his travels researching regional dishes and perhaps most significantly, his Lebanese heritage for inspiration. Greg’s reputation was forged in his hometown, Melbourne where at the award-winning O’ Connells and MoMo restaurants, he won national and international recognition for his innovative food. In 2012, during his tenure at the iconic Petersham Nurseries Café in London, the restaurant achieved a second year of Michelin star status. Greg has written eight successful cookbooks and has recently won a James Beard award for the best bakery and pastry book of 2019, Suqar. A resident of Dubai, Greg brings a refined understanding of the local market to his culinary endeavours and insists that his food always retains its authentic qualities and simple presentation, without fuss or fanfare so that the flavours speak for themselves. Opening Hours 6.00pm to 11.00pm daily. Reservation recommended and children welcome. For more information visit www.jaresortshotels.com
