Eric Lanlard Tell us a bit about yourself. I am a 47 year old pastry chef, raised and trained in France. I’ve made England my home for the past 25 years. I own a patisserie, café lounge and cookery school, based in South West London. We have a huge international fan base and we get visitors from all over the world. I first came to London to improve my English and worked for the highly regarded and respected Roux Brothers. At aged 22 I became their head pastry chef and worked for them for five years until I left to start my own business. One of the things that people are most surprised about me is that I do not have a sweet tooth …..I adore cheese!
So you’re a cheese kinda guy, what’s your favourite cheese and why? I don’t have a particular favourite. I like to sample the local cheese from wherever I happen to be. I do enjoy a slice of cheese when eating a rich fruit cake, it’s a great combination.
What inspired you to become a pâtissier? I’m not sure but I knew from the age of six that I wanted to be a pâtissier and even told my mum where I would undertake my training. I grew up in a town called Quimper which is in Brittany, Northern France. Like every French town we had several patisseries, I knew exactly where I would start my career!
How would you describe your style? My style is glamorous yet earthy. Classic with a modern twist.
What can guests expect to experience at Taste of Abu Dhabi? They will see me showcasing delicious and beautiful tasting bakes. I will share my favourite recipes, selected from my books and I’m hoping to do some savoury baking as well. I love demonstrating, teaching and enjoy sharing tips with the audience.
Will you be using any local ingredients? Middle Eastern flavours and ingredients are some of my favourites. I use them a lot and they regularly feature in my books. You can expect to see some recipes with Middle Eastern influence in my new book that comes out next year.
What do you like most about Taste of Abu Dhabi? I really like the atmosphere and meeting the fans. It will be wonderful to catch up with the chefs too, we’ve all know each other now for a number of years so it’s more like a reunion! The opportunity to enjoy some fabulous food is always a bonus!
You’ve worked for some high profile clients such as Madonna, David Beckham and the Queen Mother, how did that define your career? I always say that all of our customers and clients are VIPs. When you bake a cake for a special celebration or occasion you have to treat that commission just as carefully as you would for a star. Of course making a cake for a celebrity brings you that extra special attention but my career has developed over a long period of time. I really learnt my craft and was lucky enough to work with some very talented and generous people that taught me a lot.
From celebrity clients to TV Shows, did you ever imagine you would be where you are today? I just wanted to make pastries and cakes. I dreamt and hoped from an early age that I would one day have my own patisserie. I love what I do and I’m lucky enough to be good at what I do. If the TV shows and the celebrities all went away tomorrow you would still find me baking cakes, the passion remains the same. I’m the first in my kitchen every morning.
Would you consider opening The Café at Cake Boy in Abu Dhabi? We would love to have you in the capital! We’ve been talking about if for a long time, it has to be the right partner in the right location, hopefully one day we’ll make it happen. Watch this space…..
Any tips for our readers to fine tune their baking skills? Baking is a science. It’s important to remember accuracy so always follow the recipe and use the best ingredients. Practice makes perfect, learn the basics before attempting anything too elaborate.
For tickets visit www.tasteabudhabi.com Taste of Abu Dhabi will run from 5th to 7th November at du Arena, Yas Island.

DINING AND NIGHTLIFE ABU DHABI
How do you think social media has influenced music?
What qualities make a good musician?
It has influenced music considerably. The whole music industry has changed because of the arrival of social media. It has impacted how music is produced and how musicians interact with their audience.
It’s a combination of many different things. One needs to be in tune with the core of music itself. That is easier said than done for most people and cannot be taken for granted. Respect and true love for music are of primary importance. Music should not be used and consumed superficially. It is too special for that. There needs to be a great awareness and feeling for melody, harmony and first of all rhythm and time. It is also important to bring some of one’s own personality to music making. A person without a strong identity is not going to bring much to the table as a performer. Furthermore, versatility, flexibility and lots of good taste are essential. To play more than one instrument, well also really helps.
At what moment did you realise you had become a star? When we first started out, we didn’t think of such things… at least, I didn’t. There came a point when we realized that the music we produced started to have some kind of global impact. It was a gradual process, however I never consciously thought about it. Anyway, there are so many “levels” to stardom. The most important thing is to do something meaningful, instead of trying to be a star. If one can do both, great!
What was the highlight of your career? There were several moments that stuck out for me. Not just one, I’d rather see it as a chain of events, some of which are more important and fulfilling than others. Certainly some of the greatest highlights were my shows with orchestras.
How has your playing style developed over the years? It has evolved in many ways and this is an ongoing process. Whenever I pick up the guitar, new ideas come flooding towards me. This journey is still far from finished.
Tell us about Sky Guitar and what motivated you to design your own custom guitars? The Sky Guitar came into existence because I felt that the traditional electric guitars were too limited in what they could do. I wanted to create a new kind of super guitar, an instrument more versatile and more powerful than that which existed before. An instrument with less limitations to allow me to be more freely expressive. That is the gist of the Sky Guitar. I guess, I’m obviously biased here because it was tailor made to suit my own needs but to me the Sky Guitar is simply the most advanced guitar that I have ever come across and I would not want to play any other.
Are you working on any new material at the moment? I have written many things that really urgently need recording! I hope, I’ll get down to that soon!
How do you feel about playing in the UAE? I’m really looking forward to it. I have never played in the UAE and love to meet new audiences and cultures. It should be very interesting.

DINING AND NIGHTLIFE ABU DHABI
For this visit we decide to try the new Crackers and Claws theme night at Café Palmier. Located in Le Royal Méridien, Café Palmier is a bright and modern dining venue offering views of the hotels pool area. We are warmly welcomed by Rolando the restaurant manager and escorted to our table. Our table is covered in the crackers and claws logo paired with a wooden board, thin metal seafood picks, claw crackers, a seafood hammer and napkins. We are already sure that this is going to be a fun and interactive dining experience. The restaurant is already busy and the atmosphere is upbeat, everyone seems to be in a great mood. As we browse the salad bar we are pleased to see that the team have made a conscious effort to stay true to their seafood theme and added a selection of seafood salads ranging from lobster salad, calamari salad to a shrimp salad to name a few. The regular salad bar is also available for those who wish to start with a lighter dish. For starters we opt for the lobster salad with tabbouleh on the side, fresh and full of flavor this sets the tone for the evening. We enjoy a healthy portion of the seafood chowder soup complimented by our warm bread basket. Creamy and full of flavor the seafood chowder soup is delicious. Before moving onto our mains we notice the seafood thermidor, a selection of delectable seafood covered in layers of wonderful cheese, we take a small portion, curious to taste this colorful dish.
Finally we move onto the main dish, we select the Omani lobster, jumbo prawns and crab. This dish was amazing and definitely had the wow factor. The seafood was cooked to perfection, the flavors of the grill worked well with the light seasoning. The high quality of the seafood ingredients is evident. This has to be one of the best seafood platters we have tasted, a true dining delight. To complement our main course we also try the fried sherry fish with sweet chilli sauce and the fried cream Dory fish. Both dishes tasted fresh and would appeal to all the seafood lovers in the city. Explore Crackers & Claws seafood Thursdays at Café Palmier, serving a vast array of fresh seafood including, Lobster BBQ, chilled shellfish, hot seafood appetizers and entrées and fabulous desserts. Saturday Roast

DINING AND NIGHTLIFE ABU DHABI
When we learnt that Marco Pierre White Steakhouse and Grill had launched its new Saturday Roast we could hardly contain our excitement, an award winning celebrity chef restaurant, serving a traditional roast, our luck was in! Marco Pierre White Steakhouse and Grill is located in the trendy Fairmont Bab Al Bahr. This modern and classy restaurant boasts a back lit flame wall and striking interior design. As we enter the restaurant our attention is immediately drawn to the delectable spread of roast turkey, Yorkshire puddings and the wide selection of British cheeses. We take our seats and start with the soup, we opt for the onion soup served in a hearty rye bun and the asparagus and mushroom soup. The onion soup is delicious, layers of cheese effortlessly melt over the rye bun as it absorbs the onion soup. The asparagus and mushroom soup is divine, the mushrooms have been pan fried before being added to the soup giving them a rustic smoked flavour. Finally onto the roast. On display is a wide selection featuring, prime rib roast, leg of lamb, roast turkey and bangers and mash. All the trimmings are available from Yorkshire pudding, roast potatoes, broccoli, bubble and squeak, sautéed mushrooms and Brussel sprouts to name a few.
Feeling festive I opt for the roast turkey, roast potatoes, Yorkshire pudding, minted garden peas, parsnip pancakes topped with gravy and cranberry jelly, truly delightful. My colleague selects the prime rib roast, chargrilled vegetables, sautéed mushrooms, bubble and squeak topped with gravy and English mustard. Both dishes are amazing. The meat has been cooked to perfection, the Yorkshire puddings have just the right texture and crunch. The parsnip pancakes are superb to quote my colleague “Finally someone has done something creative with a parsnip”. The parsnip pancakes are dainty but full of flavour. We consider asking for the recipe but then decide we’ll just come back next Saturday. Feeling rather full and conscious we must leave space for the dessert we only manage a small sample of the artesian British cheese on display. For dessert we decide to share the lemon tart, a classic lemon tart served with vanilla bean ice cream.
A modern and classy restaurant that boasts a back lit flame wall and striking interior design.
Guests have two options firstly for AED 170* guests can enjoy a choice of soup, one trip to the carvery station, one trip to the cheese station and a dessert or guests can select the AED 245* package which will allow guests unlimited trips to the carvery and cheese station. For our visit we selected the AED 170* package this is truly good value for money and portions are very generous. Overall Saturday Roast offers good value for money, plush surroundings and delicious roast minus the washing up, what’s not to like!

The Forge

DINING AND NIGHTLIFE ABU DHABI
Boasting class and sophistication this steakhouse has managed to successfully balance suave surroundings with a warm and welcoming atmosphere. The Forge takes its name from the intricate process of forging the blade of a high quality steak knife. Its contemporary interior was designed by renowned Japanese interior design firm Super Potato and focuses on modern elements such as iron beams, intricate lighting and glass. The Forge provides guests with a relaxing and intimate dining experience, tables are perfectly positioned to offer each guest the privacy they require. Private dining rooms are also available for special occasions or large groups. We sit facing the glass walls of the kitchen, carefully watching the chefs as they created each masterpiece. As we are handed the menu our waiter effortlessly discusses each cut and helps us make our selection. The team here are very welcoming and informative. The menu has a global choice of top succulent cuts from USDA Prime Beef, Australian Master Kobe Beef to French Charolais Beef. The grape menu is extensive and is perfectly paired with each cut on the menu. Leading the kitchen is Chef de Cuisine Gerardo Recabarren. Chef Gerardo began his professional career in his home country of Argentina where he started as a trainee and rose through the ranks to the chef de partie role shortly after graduating from Celia Escuela Integral Gastronomica in Cordoba, Argentina.
The team are smartly dressed and wear a modern leather shoulder piece influenced by traditional butcher attire. It’s evident to see that the team have paid great attention to detail from the uniform, branded oak bottle openers, branded tablecloths, even the butter is presented with the signature F to represent The Forge. For starters we select, lobster bisque, crab cakes and wedge salad. The lobster bisque is wonderfully rich and chef has been generous with the lobster. The crab cakes are delicious served with a side of tomato fondue and black olive power. Chef has done well to ensure the crab cakes remain light and finally we get to enjoy a crab cake that hasn’t been drenched in oil allowing us to indulge in the full flavours of the Indonesian crab meat. The wedge salad didn’t initially have us jumping from our seats however from our first mouthful we were hooked, wedges of baby gem stand proud above the black slate plate drizzled in blue cheese dressing, maple syrup and finished with veal bites and walnut. The sweetness of the maple syrup works well with the sourness of the blue cheese and the veal bites contribute a slight saltiness to the dish. We finish our dish pleasantly surprised how a typically boring salad has been creatively reinvented.
Before our steaks arrive we are presented with a selection of knives and asked to make our selection, a nice touch. Our steaks are served on The Forge’s signature black slate plate and look fabulous. I have ordered the Argentinean tenderloin whilst my guest opts for the USDA prime beef striploin. For sides we select baked potato, grilled vegetables, truffle and parmesan fries and grilled asparagus. To compliment my Argentinean tenderloin I opt for the chimichurri sauce, originally from Rio de la Plata, Argentina. Chimichurri is made from finely chopped parsley, minced garlic, olive oil, oregano, and white vinegar. The Argentinean tenderloin is delicious, ordered medium and cooked to perfection, it simply melts in the mouth. The USDA prime beef striploin is enjoyed with wild mushroom sauce. A top quality cut with only about 2% of steak receiving the prime accolade, the USDA prime beef striploin is spectacular. To conclude our dining experience we select the carrot cake served with raspberry sherbet and alitato, a dark chocolate soufflé with vanilla ice cream. A great steakhouse set in the stunning Ritz Carlton Abu Dhabi, Grand Canal.

Spoil yourself at Khalidiya Palace Rayhaan by Rotana Wellness and Massage Spa As we enter Wellness and Massage Spa we are warmly greeted by the team. The spa smells sensational, setting the tone for a relaxing and enjoyable experience. Wellness Massage Spa features six treatment suites and two luxurious relaxation rooms, one for ladies and the other for men. Treatments range from massage, facials, scrub and wraps to deluxe packages. Most of the treatments are available from 30 minutes to 90 minutes except the detox and revive package which lasts for 2 hours. The prices are extremely competitive for a hotel spa. Massage prices for non-members start at AED 173* for a 30 minute ultimate aromatherapy massage and the most expensive massage is the 90 minute hot stone experience set at AED 530* for non-members. Members are entitled to a discount.
Wellness and Massage Spa uses premium quality natural products by Aromatherapy Associates London, one of the leading aromatherapy experts. We select the 90 minute ultimate aromatherapy massage priced at AED 388* for non-members. The therapist shows us to the changing area. The changing area consists of a private changing room with a shower and locker storage for personal belongings. We waste no time getting into our robes and heading to the relaxation room. The relaxation room is a chilled private area and we enjoy a few relaxing moments before we are called into the treatment room. The dimly lit treatment room offers a sense of calm from our hectic day. The massage is performed well and the therapist uses a selection of massage techniques from rubbing to kneading. The combination of these techniques ensures that any muscle tension is relieved. This was one of the best massages we have experienced in the city and the price is so reasonable we would definitely consider revisiting. The following day we feel fully energized and our back, legs and arms feel much looser then they have in months.
We also learnt a few interesting benefits to massage, 1. Relieves stress Lowering stress levels is key to achieving a healthier lifestyle. A single massage can greatly reduce stress levels. 2. Encourages relaxation Massage helps the body enter a relaxing rest and recovery mode, which continues long after the massage is over. 3. Improves posture If most of your time is spent at a desk then you’re probably guilty of slouching. Massage helps reinforce your body’s natural posture. 4. Massage relieves headaches Regular massage helps ease the pressure and pain of headaches and also reduces the chance and frequency of headaches. 5. Massage strengthens the immune system Studies indicate that people who received a 45 minute massage had an increased number of lymphocytes, which are white blood cells that play a large role in defending the body from disease.
