THE VISTA Contemporary Dining at The Club, Abu Dhabi Founded in 1962 The Club has established itself as Abu Dhabi’s most popular private members club. Apart from the selection of recreational activities and social events The Club also offers members a wide selection of dining options. Today we are visiting The Club to review The Vista, recently refurbished this contemporary international restaurant has been on our list of restaurants to visit for quite some time. As we arrive at The Vista we are warmly greeted by the team. The Vista provides a selection of indoor and outdoor relaxed seating. Outdoor seating offers large tables, perfect for groups and high tables and chairs great for sundowners. Views of the stunning Arabian Gulf and the complex can be enjoyed from the terrace of The Vista. The décor is fresh and modern with colourful cushions adding a splash of vibrancy to the restaurant. The international menu features Wagyu and Angus beef, Omani and Canadian lobster and a selection of fish or vegetarian dishes, the emphasis is on a top quality dining experience with a perfect al fresco dining atmosphere. The grape menu is extensive and is perfectly paired to each cut on the menu. The Vista features a state of the art, 360° bar in the middle of the restaurant, making it a focal point of your dining experience. High chairs at the bar make it ideal for a quick bite to eat or a beverage before you take your seat for dinner. The grape cellar holds up to 350 bottles of grape in two distinct fridges. With its extensive choice of grapes, the cellar offers something for everyone. We opt to sit inside. We are warmly greeted by the restaurant manager who is very professional and courteous. He introduces us to our waiter who guides us through the menu. Our waiter advises us to try The Vista’s signature dish as a starter. The Vista’s signature dish consists of 18 carat gold flaked oysters, steamed Canadian lobster in mustard and mild cheddar with caviar topped bellini. What a great recommendation by the team. This dish is delectable and the gold flakes on the oysters offer a unique dining experience. A very creative and enjoyable dish.

Contemporary dining in a unique al fresco atmosphere - a hidden gem! We admire the stunning views as we consider our main course. For our main course we opt to order from the grill. We decide to order the recommended Omani lobster tail 500g with thermidor sauce. It tastes phenomenal. The high quality lobster has been perfectly grilled and served with a selected side dish of baked potato and creamy spinach. Highly recommended. Our other main course is the grassfed sirloin steak 250g with mushroom sauce. Before the steak arrives to the table, we are presented with a selection of knives and asked to make our selection, a nice touch. The Laguiole steak knives are a selection of high quality steak knives. I select the ebony knife which is a dense black and ornamental wood that is ďŹ nely textured. The steak is well-seasoned and offers a melt in the mouth experience. This is served with a side of baked potato and vegetables of the day. Both dishes are succulent and appetizing. Full of avour and presented with great attention to detail. The Vista is easily one of the best dining experiences we have had in the city. To conclude our dining experience we select the platter of fruit and a selection of raspberry and lemon sorbet. Light and refreshing this is the perfect end to our brilliant dining experience. Overall The Vista offered the perfect dining experience. Currently only open to members our dining experience was so good, we would join The Club just to dine here again!

DINING AND NIGHTLIFE ABU DHABI
This month we explore the enchanting Shangri-La, Qaryat Al Beri, Abu Dhabi. Located within the acclaimed Qaryat Al Beri complex, Khor Al Maqta area. Shangri-La, Qaryat Al Beri, Abu Dhabi boasts one-kilometre of private beach overlooking the strait that separates Abu Dhabi Island from the mainland. The hotel is located next to a souk, a traditional Arabian market built in a modern setting offering a variety of shops under one roof. This is a contemporary adaptation of a typical Arabian market, with abras (water taxis) ferrying you round the waterside complex via meandering man-made canals. Shangri-La, Qaryat Al Beri, Abu Dhabi is only a ten minute drive from Abu Dhabi’s international airport and ďŹ fteen minutes from the popular Corniche.

Our experience begins before we arrive to Shangri-La, Qaryat Al Beri, Abu Dhabi. As we are contacted in advance by the guest relations manager who asked us what temperature we would like our room, which pillow from the pillow menu would suit our requirements, if we would like breakfast in the room and what morning paper we would like delivered. Impressive. As we arrive at the hotel we are warmly greeted by the team. One of the first things you will notice about the hotel is the beautiful aroma that fills the lobby, a signature Shangri-La scent. Check-in is swift and the receptionist does well to offer a warm and friendly welcome. For our visit we are staying in a deluxe room. The deluxe room comes equipped with a range of premium amenities, such as welcome fruit, LCD TV, complimentary shoe shine service, mini bar and features a stunning marble and mosaic bathroom with a walk-in rain shower, bath tub and separate toilet. The highlight of the room is the private balcony, it offers stunning views across the canal and Sheikh Zayed Mosque. The private balcony also features a small coffee table with chairs and two sun loungers. The balcony offers ample space for a relaxing afternoon. The room is spacious yet comfortable. The décor has an arabesque influence, which is emphasised by the large wooden dark doors and the arched walk ways, a theme seen throughout the hotel. Each of the 213 rooms feature a balcony or terrace with breathtaking views. If you would rather enjoy the pinnacle of privacy and extravagance, there are six spectacular four-bedroom villas, each with a private pool. To cater to the needs of extended staying guests, the hotel also has 161 serviced apartments ranging from studios to four-bedrooms.

DINING AND NIGHTLIFE ABU DHABI
After settling in to our new surroundings we decide to look over the 24 hour in room dining menu. Slightly sceptical of what to expect we order a few dishes anyway. Once our dishes arrive we can honestly say we are left pleasantly surprised. Put aside all your perceptions of dull in room dining as Shangri-La, Qaryat Al Beri, Abu Dhabi just re wrote the rule book. For our mains we enjoy a prawn, avocado and grapefruit salad with mesclun leaves, cherry tomatoes and chive dressing and a bang, bang chicken salad with roasted chicken, chilled sesame noodles, spring onions with a touch of chilli, peanut dressing and sesame seeds. For dessert we tuck into a delicious crème brûlée and an equally as enjoyable cheeseboard which is served with a slice of fresh honeycomb. It’s refreshing to see a hotel taking pride in its in room dining as much as it does to the food served in its restaurants. Needless to say we are looking forward to dinner in Bord Eau this evening, the hotels signature French restaurant.
Bord Eau As we arrive at Bord Eau we are welcomed by Othmane Bensouda, Bord Eau’s restaurant manager. Bord Eau is set in a chic dining room that boasts opulent fabrics and furniture, however this evening we opt to dine on the terrace so we can enjoy uninterrupted views of the hotels pool and Sheikh Zayed Mosque. Othmane explains that Chef de Cuisine, Didier Quennouelle, a French native takes great pride in preparing seasonal fresh produce that are flown in from France and serves each dish with an artistic expression. As we browse through the menu we decide to opt for the five course blind tasting menu as it promises to offer the ultimate Bord Eau experience. To begin our gastronomical journey we are presented with three poultries terrine and foie gras comprising of bresse duck, bresse chicken, miéral pigeon, pickled onion, caper, shimeji mushroom and
Hoi An The following evening we are dining at Hoi An. Hoi An offers modern and traditional Vietnamese cuisine in a colourful, friendly setting. Wanting to make the most of the cooler weather we decide to take a seat outside. The quaint outdoor garden is beautifully decorated with small colourful lanterns, it feels like you are dining in your own secret garden. Mastering the kitchen is Vietnamese Sous Chef, Vu Dang. After a warm welcome and an introduction to the menu Chef recommends we try something from the Sapa barbeque, only available on weekends. We select a mix of chicken, lamb and prawn skewers, which come with a selection of sauces. The selection is fantastic, grilled to perfection the simplicity of the dish is what really allows the true flavours to be enjoyed. The menu is extensive so if this is the first time you are dining at Hoi An it is best to ask the waitress for some guidance, the team are very pleasant and knowledgeable.
pommery mustard. The dish is delectable and full of flavour however the portion is generous and conscious that we have another four remaining dishes we only manage to eat half of our serving.
This dish is amazing, the wagyu is cooked medium as requested (not always a given) the mash is rich and creamy and the Bordeau sauce magnificently completes the dish.
Up next is the cauliflower velouté, a thick sauce served with crab and finished with caviar. This dish is spectacular, rich and velvety the flavours of the cauliflower velouté are contrasted by the intense taste of the caviar.
Finally the dessert, the extravaganza chocolate comprising of pears, apple, redcurrant, caramelized pistachio, coconut sablé, vanilla and chocolate ice cream, which theatrically melts away once layers of warm chocolate sauce are poured over the dessert and the vanilla soufflé served with a side of homemade vanilla ice cream and citrus salad.
For our third dish the black cod, served with fennel, turnip, artichoke, celeriac purée and bouillabaisse jus. Delicious, the black cod is cooked to perfection and the celeriac purée is wonderfully light and fluffy. Our forth dish is the Wagyu beef grade 7 with mash potato and sand-grown carrots, leek and chanterelle mushroom topped with Bordeau sauce.
For the main we order from the sea section of the menu. We select the grilled red snapper fillet with sautéed bean sprouts, chilli and lemongrass sauce along with the pan roasted black cod, sautéed bok choy, spicy, dried anchovies and palm sugar reduction. The grilled red snapper is fresh, firm with a light moist texture and simply flakes off the fork. The lemongrass is the perfect compliment to the red snapper and the chilli offers a slight kick to the dish without overwhelming our palate. The pan roasted black cod is perfectly seasoned and flavours burst in the mouth with every fork full. Well-presented, it looks as good as it tastes.
The blind tasting menu is terrific, a great mix of proteins, each elegantly presented. If you visit Bord Eau we would highly recommend that you try the blind tasting menu. It will allow you to explore a selection of dishes that you would not have necessarily chosen.
simplest of dishes taste amazing, something not achieved by many. For dessert we decide to share the chilled mango soup, sliced fresh mango topped with mint coconut milk and coconut ice cream. The perfect end to a wonderful dining experience.
Although usually served with a side of rice we decide to leave the rice and order a side dish of wok-fried egg noodles comprising of prawns, chicken leg, mushrooms, vegetables and bean sprouts. Again Hoi An impresses us with its attention to detail and well balanced dishes. Chef is able to make even the

What is it about Shangri-La, Qaryat Al Beri, Abu Dhabi that keeps people coming back?
Thomas Guss, General Manager Shangri-La Qaryat Al Beri, Abu Dhabi.
How has the hotel developed in the last year and what changes can we expect to see in 2016? In 2015 Shangri-La, Qaryat Al Beri, Abu Dhabi saw many changes. We introduced P&C by Sergi Arola. This is Chef Sergi Arola, a recipient of two Michelin stars, first venture in the Middle East. We also launched JazzArabia, the Middle East’s first jazz radio station. Top radio talent broadcast live from a custom-built studio inside P&C by Sergi Arola. It’s exciting for us to be able to show guests how a radio station functions. JazzArabia can be streamed live or via the JazzArabia app, which is available for download from the app store on all smart devices. We also welcomed a new Executive Chef, revitalized Sofra bld, our Horizon Club now has a new location, we opened a mani and pedi spa for ladies and next year we plan to open another one just for men. We are also working on launching a kids club in 2016. We are working hard to reinforce our strategy of authenticity. From the arrival experience through to departure. You will notice that every single night we offer Arabic entertainment and every guest is offered a welcome Arabic coffee and dates. The concept of authenticity doesn’t stop there it is also evident in our restaurants if you visit Hoi An, our Vietnamese restaurant you will notice all our staff are from Vietnam same with Bord Eau our French restaurant and so forth. Throughout the year we also focused our efforts in conducting a series of customer surveys. As a result we now open the buffet at the earlier time of 5.30pm to allow guests with young families to enjoy dinner. In response to our customer survey we will also look to open Hoi An, Bord Eau and P&C by Sergi Arola for lunch. We want to create a culinary destination for Abu Dhabi residence, offering them a place to dine any time of the week.

As an Asian brand we focus highly on hospitality and authenticity of our team. I think that this shines through and enhances the guests experience. The hotels design has its own charm and you still feel that you are in Abu Dhabi when staying at the Shangri-La, Qaryat Al Beri. We also offer a variety to our guests from the brand of Shangri-La to Traders, we have top end villas and residence, we provide one solution to any guest. The Souk is a very unique selling point, it offers a variety of food and beverage outlets that differs to what we offer at the hotel, therefore giving the guests over 25 dining options. We want to ensure a 5 star service hence we are one of the only hotels that provide free high speed internet as a brand standard.
What is your favourite restaurant in the hotel and why? Tough question….. P&C by Sergi Arola, because you can enjoy dinner in the restaurant and then make your way upstairs and enjoy a beverage, it offers guests a journey. That being said I do believe that we offer the best Asian cuisine, after all we are an Asian brand and that is what Shangri-La is all about.
Describe your perfect day at Shangri-La, Qaryat Al Beri, Abu Dhabi. We want people to come back to Abu Dhabi so it’s important that we offer guests the best experience possible.
There is so much to do at the hotel we have 6 swimming pools, a beach, a private adult pool, the abras and that’s before guests leave the hotel and visit the Souk or use our free shuttle bus and venture to Yas Mall or the Corniche. I’d recommend that they stay longer and experience all that Shangri-La, Qaryat Al Beri and Abu Dhabi has to offer.
CHI, The Spa Finally to conclude our experience at Shangri-La Qaryat Al Beri, Abu Dhabi we book a massage at the renowned CHI, The Spa. CHI, The Spa offers a place of relaxation, enchantment and well-being. As we enter the spa its smells amazing and we instantly begin to feel relaxed. We are greeted by our therapists Irene and Rama. Today we are experiencing a 60 minute Asian Blend massage, a gentle and soothing massage bringing together techniques of Swedish, Shiatsu and Reflexology. The massage is performed perfectly. The therapists Irene and Rama are highly professional and clearly have a deep understanding of massage techniques. All massages and treatments are based on authentic natural healing methods found in traditional well-being practices shared by many Asian cultures. CHI, The Spa is well worth a visit and is open to guests from outside the hotel. Overall Shangri-La, Qaryat Al Beri, Abu Dhabi delivered in every aspect. If you have family visiting from out of town or you just need a relaxing weekend without wanting the hassle of traveling to far we would highly recommend Shangri-La, Qaryat Al Beri, Abu Dhabi. If you don’t stay then just visit one of their splendid restaurants. A fantastic hotel giving guests a memorable journey from check in to check out.

AFTERNOON TEA AT STRATOS LE ROYAL MÉRIDIEN, ABU DHABI

DINING AND NIGHTLIFE ABU DHABI
Renowned master pâtissier Eric Lanlard has officially bestowed a selection of delectable afternoon treats on Abu Dhabi residence. Eric personally selected Stratos as one of the few global residences to display and curate an enchanting array of his finest sweet treats. Working closely with Le Royal Méridien’s award-winning Executive Chef and Food & Beverage Director,Justin Galea, the inspirational culinary artiste has designed a distinctive menu, influenced by the heritage of the UAE. “I love Middle Eastern flavours and sweets and with this exclusive Afternoon Tea we intend to take guests on a magical culinary journey in the gorgeous surroundings of the Stratos lounge, where our creations will be as inspiring, as the beautiful views of Abu Dhabi” said Eric. Flavours of saffron, rose water, dates, cardamom, cumin, pistachios, bee pollen and caraway seeds creatively feature throughout the sweet and savoury afternoon tea. Before we embark upon our gastronomic journey we are asked to close our eyes and take a deep breath. The subtle fragrance of a specially created cardamom edible perfume is then sprayed, evoking memories of an Arabian Souk.
The four tier afternoon tea features a selection of savoury, sweets and scones. The highlights of the menu are the vanilla cured Scottish salmon on beetroot and caraway seed bread from the savoury selection, the lychee and raspberry dome on a Breton biscuit crust from the sweet selection and the orange blossom and bee pollen scones topped with clotted cream and homemade preserves. We are thrilled to see that real clotted cream has been used for the scones, a very rare treat. What is particularly wonderful about this afternoon tea is that it is perfectly balanced between sweet and savoury, therefore making the afternoon tea an enjoyable experience and leaving guests feeling satisfied without overindulged.
“Guests can look forward to exquisite presentation of sandwiches, freshly baked scones, tea cakes, pastries and more that come with the breath taking creativity which has won Eric a huge, celebrity A-list following,” said Max Wiegerinck, General Manager, of Le Royal Méridien, Abu Dhabi. Eric Lanlard’s ‘Soir D’Orient’ Afternoon Tea will be served from 3.00pm to 6.00pm daily and priced at AED 195* per person, a bubbly afternoon tea is also available for AED 295*.
Stratos Le Royal Méridien, Abu Dhabi 800 101 101
The tea menu is extensive with a selection of black, white, flowering, oolong, pu-erh and herbal infused teas on the menu. The team of dedicated tea sommeliers are on hand to advise which tea would best suit your preference. We selected a simple black tea, partly because we are so busy enjoying our fresh scones (they were really, really good). Apart from tea the menu has a selection of mocktails and mixers. Stratos itself is a stunning venue, as the capital’s only revolving lounge bar and grill Stratos provides an optimum venue for a chic, celebrity chef created, afternoon tea, plus the scenery is stunning.

Through the innovation focus of the new look event, a range of trends will be up for discussion. These will include the global rise in meat consumption driven by rising populations, incomes and urbanization; concerns regarding the consumption of convenience foods, especially in countries such as the GCC states where busy lifestyles and increased demand for processed foodstuffs are impacting health. On the flip side, growing consumer demand for organic and/or locally produced foods that support the ‘clean eating’ movement and that have long term benefits for the next generation of consumer.

DINING AND NIGHTLIFE ABU DHABI
Held under the patronage of HH Sheikh Mansour Bin Zayed Al Nahyan Deputy Prime Minister of the UAE, Minister of Presidential Affairs and Chairman of Abu Dhabi Food Control Authority, SIAL Middle East will feature a number of new initiatives addressing food trends from around the world. “The UN expects the world’s population to hit nine billion people by 2050, which, combined with the increased calorific intake of a growing, more affluent population, is predicted to dramatically hike food demand in the decades to come,” said Ali Yousef Al Saad, Chairman of the organizing committee for SIAL 2015 and Acting Director of Communications and Community service Division at Abu Dhabi Food Control Authority (ADFCA). “As well as the ongoing problem of food security and scarcity, this year’s new look SIAL Middle East will also focus on innovation and global food trends in meeting increased demand and catering to a diverse world where cultural influences, economic forces and nutritional education and awareness will continue to impact food production and availability. “ADFCA, with the full support of the leaders of the nation, is committed to further developing a sustainable food sector in the emirate with particular focus on supporting and participating in a range of international events with the aim of further enhancing innovation within the region,” added Al Saad.
New additions to the exhibition include the SIAL Innovation World Champions. Creativity and originality in the global food arena will be put to the test as the popular show feature welcomes winners from SIAL events from around the world, the first time this has happened, to share their own unique perspective and experiences with fellow culinary professionals. A new concept debuting at this year’s La Cuisine by SIAL, the international competition which hosts some 850 chefs and senior judges, is the opportunity for senior participating chefs to meet pre-identified exhibitors and press at a special session on day two of the show. There will also be a further opportunity for chefs to take part in the ‘Innovation in the Air’ category, where the winners have their dishes catered onboard airline fleets from across the world. The Global Chefs Challenge Semi-Final will run alongside La Cuisine by SIAL and will include a total of three competitions; Global Chefs, Global Pastry Chefs and Hans Bueschkens Young Chefs Challenge. For coffee connoisseurs, the addition of the Regional Barista Championship to the exhibition, organised in association with the International Coffee & Tea Festival, will see 21 regional barista competitors compete for the title of best regional barista. A specially created Brew Bar will showcase the latest innovations from the coffee world and an opportunity to taste some of the coffees on show. For more information, please go to: www.sialme.com
BRUNCH AT THE FOUNDRY
SOUTHERN SUN
28
DINING AND NIGHTLIFE ABU DHABI
Located in Southern Sun Hotel, The Foundry is renowned in Abu Dhabi as being one of the best steakhouses. By day, The Foundry is a spacious breakfast and lunch venue serving both buffet and a la carte. At night, it quite literally transforms into an intimate and stylish steakhouse serving the finest cuts in the city. Today we are visiting The Foundry to review their brunch. For brunch,The Foundry offers a relaxed, sophisticated and modern dining venue. We are warmly greeted by the restaurant manager and escorted to our table. Our table is one of the three tables that is separate from the restaurant and based on miniature private dining island. The sound of water underneath our dining table sets a relaxing mood as we prepare to explore what The Foundry has to offer. Having dined at The Foundry previously we are confident that the food quality and service will be evident at the brunch. For starters we opt for a selection of the French and Irish oysters served with a dash of lemon. The Irish oysters are slightly meatier in comparison to the French oysters, which are slightly creamy. However both the selection of oysters are fresh and full of flavor. These oysters are so fresh you could smell and taste the sea salt. A big thumbs up from us. One of my favorite items is the small silver seafood bucket. This contains mussels, crab, prawns and lobster, apart from looking good it also ensures that you can sample the best seafood offerings at once. As we enjoy the seafood bucket it is evident that only the highest quality of seafood is being used. A salad bar is also available for those who wish to start with a lighter dish.
Before moving onto our mains we notice the seafood thermidor, a selection of delectable seafood covered in layers of wonderful cheese,we take a small portion, curious to taste this delicious looking dish. As we browse the brunch offerings I am drawn to the steak station. On offer is a selection of cuts from the Johnstone Ireland rib eye grass fed 21 days dry aged, Ekro, Holland milk fed veal loin, USDA Angus USA tenderloin, Jacks Creek Australia flank steak Wagyu MB3 grain fed to the Mulwarra, Argentina black Angus striploin grain fed. The selection of top quality cuts is great and one of the best we have seen at a brunch. Other highlights include the cheese room, charcuterie station, oyster station, with oysters from Ireland and France, carpaccio and tartar station, foie gras station as well as the main seafood and salad buffet. Back to the steak. Chef recommends that we try the Johnstone, Ireland, rib eye, grass fed, 21 days dry aged steak and the Argentina black Angus striploin, grain fed. Both steaks are phenomenal so much so that we go back for more. Full of flavor, these delectable and high quality steaks are what make The Foundry brunch stand out. Finding some room for dessert we enjoy a fruit platter and churros served with whipped cream and well presented in a small frying basket.
The brunch starts from AED 199* per person and is available every Friday from 12.30pm to 4.00pm.
If you are looking for a sophisticated, affordable and modern place to brunch, why not try The Foundry brunch at Southern Sun, Abu Dhabi.

DINING AND NIGHTLIFE ABU DHABI
Tell us a bit about yourself. I am the Worldwide Executive Bar Chef for George V Eatertainment. I started my career at the young age of 16 in Barfly Paris and have worked for the company and in the industry for over 20 years. Barfly is special to me as I started my career here. It was also the first place that we opened in Paris. I am in charge of the beverage concepts at Buddha Bar and Barfly and manage a total of 25 bar teams around the world.
Did you ever imagine that the brand would grow to what it is today? When I started working at Barfly I never imagined that it would be the brand it is today or that I would be travelling around the world opening new locations. It’s amazing when you look at what the brand has achieved and I believe it will continue to grow from strength to strength.
Is it challenging to source certain products in certain locations? Yes, it is very difficult to get certain products in certain locations but we need to think outside the box. For example we are currently extracting edible scents from the perfume industry and infusing them with our beverages. Sometimes our challenges offer us an opportunity to develop. Our job is to give guests an amazing experience, if we don’t do this we haven’t succeeded.
Tell us about Barfly Abu Dhabi’s beverage menu?
We are thrilled to be opening in Abu Dhabi and I feel that the Venetian Village provides the perfect location to introduce our concept to the Abu Dhabi market.
We will open Barfly Abu Dhabi with our signature beverages, this comprises of mixers and mocktails. The menu is displayed as one because I believe that the experience should be the same. Regardless if you are ordering a mixer or a mocktail the expectation and experience should be equally as enjoyable. After 4 months I will return to Barfly Abu Dhabi and we will review the menu. At this point the team and I will develop the menu together. It’s important for me to involve the team as I want them to be part of the menu and feel proud of the menu.
Will Barfly Abu Dhabi vary to other Barfly venues?
What makes Barfly’s beverages so unique?
How does it feel to be launching Barfly Abu Dhabi?
For Abu Dhabi we want to try and create something unique. It’s important to offer our guests an unrivalled experience. Although I have opened three concepts in Dubai I want to do something different for Abu Dhabi. I still need some time to explore the area and I really want to visit a few markets to see what spices are available.
Are you staying in Abu Dhabi until the launch? I will stay for a week then I go to Venezuela, as we have another opening there and then I will come back at the start of December to focus on the opening of Barfly Abu Dhabi. I will stay for 2-3 weeks and then come back and forth throughout the year.
How do you develop a new beverage? Having worked in the industry for so long is an advantage but I ensure that I never rely purely on my past experience, I keep developing myself. To develop a new beverage I take inspiration from around the world. I’m fortunate enough to travel extensively with my job. When I visit countries such as Mexico, Russia or India, I always take the time to learn about new trends. However I don’t just limit myself to new trends in the beverage industry, I look at other industries from culinary to pastry. Barfly is a trendy concept, it sets the benchmark and therefore it’s important that we keep innovating.
Our beverages are amazing and the mocktails are especially spectacular. I want to highlight the mocktails as these are especially challenging. As guests you have all experienced going to a bar and asking for a mocktail and feeling deflated when presented with a basic juice mix. This is an issue throughout the industry. At Barfly we create our mocktails with the same attention to detail as we do our mixers. I train my team to look beyond the bar when creating a beverage, think of the herbs and spices you use when cooking, venture to the kitchen and take inspiration. Hence we are called bar chefs not bar managers, we approach our beverage menu in the same way a chef would approach creating a new menu, with care and passion. Our beverages feature a selection of fresh ingredients from ginger to coconut foam, we are always developing new ideas. Our beverages are our art, from the garnish to the glass we pride ourselves on the taste and presentation.
When you work in this industry it is important to open your mind read all the information available and take influence from different cultures and industries. I recently went back to school to learn sugar art which I am now working on implementing into our beverage menu. It’s rewarding when a guest enjoys a mocktail more than a mixer as we work so much harder to create something marvellous.
Tell us a bit about your style. Raymond Visan the creator of Buddha Bar would always look very cool and stylish being 16 and working for him greatly influenced my style. You will always see me with my accessories, I can’t work without them, it has become my identity.
Describe your role in three words Experience. Change. Creation Barfly Abu Dhabi coming soon to the Venetian Village!

The Third Place Concept to coffee
We speak to Hala Zainal one of the three managing partners that developed and launched the acclaimed Abu Dhabi café, The Third Place. Tell the readers a bit about yourself? I was born and raised in the UAE but I lived in New Zealand for a while. I am an architect by trade and hold a masters in sustainable design. I don’t know if I threw away 6 years of my life studying as now I am one of the managing partners of The Third Place. Laughing. I’m also a qualified yoga instructor and a huge coffee fan! Anywhere I go it’s the first thing I seek out. When I studied at the American University of Sharjah I would hate studying in my studio so I would travel to Dubai and explore small cafés and work there. When I travelled to New Zealand I was able to enjoy an abundance of hole in the wall cafés, I was in my element. What inspired you to create The Third Place? The Third Place was established by myself and my partners Ahmed Bashkeel and Dalal Al-Mousa. We are all big coffee culture fans and love hole on the wall style cafés. We like European style cafés which is a trend that is still developing here in the UAE. The idea started with us complaining of the lack of cafés in Abu Dhabi and here we are today. What was the initial concept for The Third Place? The initial concept was to establish a coffee shop so cosy and home-owned that everyone would feel like it was their third place. The Third Place is based upon the idea of humans needing a third place to escape their homes and offices. What was it like setting up The Third Place? There was a lot of headaches in setting up the business. It was the first time any of us had done something like this so it was a steep learning curve. I remember when we were looking for a venue. Ahmed found this venue, we never planned to be in a villa but when we saw the villa we liked it and thought this could work. Ahmed dealt with the paper work whilst Dalal was working on how to bring the vision to life. Dalal was managing the interior design and was in Kuwait at the time, I was working full time and so was Ahmed. I would have to leave work at lunch time and check on the construction. But we got there in the end.

DINING AND NIGHTLIFE ABU DHABI
What was the biggest challenge?
Who created the menu?
The biggest challenge was learning to own and operate something that we knew little about, in regards to the business world. To turn it from a dream to reality whilst maintaining the dream. One thing we are good at is seeking help. We always seek help from family, friends and specialists, it’s good to ask for help, it’s what keeps us learning and developing. We use the resources around us to our best effect, our team are our biggest resource and we are very engaged with our team. We use them quite a bit for their input as they are the people that deal with our customers every day.
The menu was interesting, the three of us tried to figure out what we wanted. We started with 3 sandwiches and 3 salads, everyone had their ideas. It’s difficult to put an international menu together, especially when you have little culinary experience. Eventually we recruited a food consultant who helped us develop the menu, he still works with us today and is very much a part of The Third Place family.
Do you have any plans to expand in the UAE? We don’t have any plans for a second location at the moment. We like being a one off, if there ever was to be a second location it would be on the outskirts of the city. We want The Third Place to keep its charm, after all, that’s what sets us apart.
What defines The Third Place? We like to do things with a bit of a twist. We offer a selection of vegan and gluten free items and we have recently added almond milk due to demand. We also offer a very popular healthy soda alternative, our pomegranate bubble gum is a huge hit with our customers. People come in or beep their horns outside and ask for 12 pomegranate bubble gum sodas a time. It’s a nice feeling.
Do you offer any unique activities or events for your customers? We hold ladies only yoga classes, Mondays at 9.30am and Wednesdays at 7.45pm which costs AED 60. We also have a multi-function space available for hire, where we have held a selection of events from CPR training to baby showers.
Who typically visits The Third Place? Completely different crowds visit The Third Place. At any given time you will have businessmen having a meeting, students doing homework and mothers enjoying a good chat with friends. It’s an infectious vibe.
Any other exciting activities that the team at The Third Place are involved in? Yes, you will find us at Ripe Market, Mushrif Central every Saturday 4.00pm to 9.00pm. We have a selection of wraps, teas and coffees on offer so pop by and say hi!
