Is this your first time in the UAE? I worked in Dubai a few years ago but this is my first time in Abu Dhabi. Have you had much time to explore Abu Dhabi? I haven’t, I’ve only been here 3 weeks. I did visit Yas Waterworld with my family and we enjoyed a stroll along the Corniche but it will be a few weeks before I have the opportunity to get out and explore the city. I have a very big list of restaurants I want to visit, Abu Dhabi has a very trendy and upcoming food scene. From your travels what have you learnt and what would you like to implement at the InterContinental Abu Dhabi? I’ve learnt so much over the last few years it has really been amazing. When I was working on a pre-opening in China I had the opportunity to work with a very talented Executive Chef, he’d done 11 pre-openings, it was great for me to be able to learn from someone with that type of knowledge and we are still friends today. Whilst in China I also got to learn the true meaning of fresh seafood. We had a fish tank at the bottom of the hotel and when the order came in the guy downstairs would process the fish and send it up, fish tanks are a very common practice in China. Guests would complain if the fish came in the day before, they wanted real fresh seafood. I’ve worked in a few Asian countries like Thailand, Vietnam and the Philippines from each of these places I’ve learnt something new. One size doesn’t fit all but as I understand more about InterContinental Abu Dhabi I will be able to identify where we can implement these best practices.

Executive Chef Chris Curtis joins the iconic InterContinental Abu Dhabi Newly appointed Executive Chef Chris Curtis has joined the iconic InterContinental Abu Dhabi. With more than 18 years’ experience his role will be to oversee the daily operations and cuisine for the seven award-winning restaurants at the hotel, as well as banquet events and outside catering services undertaken by the property. We caught up with Executive Chef Chris Curtis to find out a little bit more about him and what he has planned for the InterContinental Abu Dhabi. Tell us a bit about yourself and how you became a chef I’m originally from Australia. I’ve been in the hospitality industry for more than 18 years. I started working in the hospitality industry after backpacking. I worked in a variety of roles from concierge to night auditor but I wanted to explore my passion for cooking. I trained in the French techniques, all the most regarded culinary schools methods are based on French teachings from cuts to sauces this is the foundation for culinary professionals. I was 24 years old when I started, this is older than most chefs’. My strategy was to work in only the best restaurants this way I was able to gain quality experience. It took me a while but eventually I was able to gain experience in two of the best fine dining restaurants in Canberra. I worked really hard for 5 years, putting in 17 hour days, even on my day off I would go and prep for the next day. It was hard work but I learnt so much it was worth it. I then went back to hospitality this time in F&B and branched out into operations. After that I decided to move around for a few years and gain international experience. What did you like most about working in Australia? We have a lot of produce, the varying climate from the North to East coast allows us to grow most of our own foods. The suppliers are very knowledgeable and passionate, some specialize in just a few ingredients. Australia also has a very competitive F&B scene. Take Melbourne for example, the food scene there is amazing. Its multicultural society has had a large influence on the food scene. You’ve only been here 3 weeks but what have you been focusing on since you arrived? I’ve been getting to know my team and building trust with them. It’s important that I get to know the business, learn expectations, capabilities and develop the team in line with these, this will set the foundation which I can then build on. We have a new outlet coming which will be a Pan-Asian but we’re keeping it under wraps for now. How do you think your international experience helps you with this? Tremendously, whatever I’ve taken from each project to the next has just got better and better due to my growing international experience. In my junior years, I moved around and travelled to get that experience instead of staying with one brand, I felt I was able to learn more by experiencing different cultures. Why do you think the InterContinental Abu Dhabi remains one of the most popular places to dine in the city? The team here are very friendly, they are always very welcoming and go over and above for each guest. I believe it’s this great service that keeps guests coming back time and time again. This positive attitude is very much the hotel’s culture from the General Manager down. Guests are always commenting on the great service they receive, you can see this from the positive reviews on TripAdvisor. The InterContinental has some spectacular restaurants which is your favourite restaurant and why? Tough question. I really like Chamas the quality of cuts are exceptional, Belgian Café has a great vibe and the newly opened terrace is the best place to sit and chat with friends. Byblos Sur Mer is also beautiful but then Thai food is my favourite so how can I not like Fishmarket. I don’t think I can choose one, I enjoy all the various offerings. I think that’s the best thing, InterContinental Abu Dhabi offers something for everyone. Getting There Flights run daily from Abu Dhabi and Dubai to Malé, Maldives and cost between AED 2,200 and AED 2,700 for an economy, return, direct flight. Plan in advance and you can benefit from some great savings. We flew with Fly Dubai and paid only AED 2,500 per person for a direct, return, business class flight. This meant we were able to enjoy priority check-in, business class lounge, with a light buffet and beverages, as well as spacious business class seating. The flight takes around 4.5 hours. Once you arrive at Malé International Airport you will be greeted by the warm smiles of the Shangri-La’s Villingili Resort & Spa team. Located south of the equator on Villingili Island, the southernmost tip of Addu Atoll, the exclusive resort is only accessible by domestic flight but Shangri-La’s Villingili Resort & Spa team will take care of all the details as you are escorted to the executive lounge where you can relax, refresh and enjoy a bite to eat before embarking on your domestic flight to Gan International Airport, a short 70 minute scenic flight. Water Villa As the boat nears the Shangri-La’s Villingili Resort & Spa we are mesmerized by the azure waters that surround the island. White sands glisten and coconut palm trees dance in the breeze, it’s difficult to imagine a more perfect setting. We step off the boat and are warmly greeted by the team with faces full of smiles, a fresh coconut and a colourful flower. What a welcome. We are escorted by buggy to our Water Villa. As we drive over the timber walkway to the villa we are in awe of the astounding beauty that surrounds us. Built on stilts in the resorts lagoon water, villas offer guests unrivalled privacy and relaxation. Our personal island host shows us around the villa, we are amazed by how spacious the villa is. High ceilings and a multitude of windows add to the luxurious setting. As you enter the villa, you walk into the corridor to the right you have the outdoor shower, bathroom with his and her vanity counters, a large oval bathtub, rain shower, restroom, walk in wardrobe and seating area. To the left, the bedroom, another seating area, private open terrace with an upstairs lounge, a wide deck downstairs with two sun loungers and a hammock that hangs over the ocean, allowing you to spend countless afternoons watching the marine life. To the front of the villa, spanning ocean views, to the back a pristine shoreline. Amenities include a media entertainment system, iPod docking station, complimentary WI-FI, Nespresso machine, Shangri-La premium toiletries, pillow menu, hair dryer, bathrobes and slippers. To add to the authenticity of the experience guests are presented with Addu Atoll bananas which come from the nearby island of Meedhoo.

Dining The breakfast features a delectable international buffet, serving everything from waffles to noodles, all nationalities are catered for. Live cooking stations ensure that any dietary requirements can be met by the team of talented chefs. We enjoy a hearty English breakfast with all the trimmings. Be sure to try the fresh blended juices, the selection of juices varies every morning but they will leave you energized for the rest of the day. The lunch menu is vast, serving everything from, pasta, pizza, sandwiches, burgers soups, salads, Asian cuisine, fish, meats and grills. Our favorite dish is the seafood ceviche, Indian-ocean citrus marinated seafood with tomato, coriander, lemon vinegar, potatoes, black olives and banana chips. Light and flavorful this is the ideal dish to enjoy on a tropical island. Also noteworthy is the nasi goreng kampung from the Asian selection, a Southeast Asian-style fried rice, fried egg, beef satay and shrimp crackers. For the health conscious traveler, the menu also offers a selection of healthy dishes. Come the evening and Javvu transforms into an elegant beachside setting. Don’t miss the theme nights with entertainment by the islands local band, the atmosphere is electric. The second evening we decide to dine at Dr. Ali’s Restaurant and Bar located on the east coast of the resort. Named after the much loved island doctor, Dr. Ali who would use exotic ingredients to create his marvelous recipes. Designed to represent the late Dr. Ali’s mansion, the restaurant is adorned with ancient furniture from his house. The menu features fine fare with influences from the Indian Ocean, South China Sea and the Arabian Gulf. For starters we decide to explore the Arabian Gulf menu. We opt for the fattoush, falafels and cheese sambousek. From the South China Sea menu we opt for bo cuon xa nuong, Vietnamese style roasted beef tenderloin, lemongrass, sesame seed with sweet chili-garlic sauce. It’s not often you find a restaurant that is able to do so many cuisines so well, the resorts secret, they have four chefs who are experts in their own section of the menu, genius. For our main course we select the braised beef with chili broth, sliced beef, dried chili, iceberg lettuce, dark soya chili bean sauce, also from the South China Sea menu. From the Indian Ocean menu the highly recommended Maldivian fish curry, Maldivian yellow fin tuna curry with local addu spices and from the Arabian Gulf, the charcoal grill sheesh taouk, grilled pieces of chicken breast marinated with oregano. For our sides we enjoy saffron rice and grilled vegetables. The vegetables were as fresh as can be, most of them were picked that very morning from the chef’s onsite garden. Overall the meal was fantastic, every dish echoed authenticity and delighted and inspired our palate.

Spa The next day we ride our bikes to CHI, The Spa. CHI, The Spa is tucked away amidst the topical palms. This isolated sanctuary sits just above the ocean, the symphony of the waves sets the tone for a relaxing afternoon. Shangri-La is renowned for its spa’s, we are looking forward to experiencing the kandu boli ritual. Kandu boli meaning seashell, draws energy from the ocean. In this unique treatment a Cowrie shell is massaged over your body and face with warm Maldivian pure coconut oil drizzled through your hair followed by a tranquil scalp massage. The treatment is concluded by a local lullaby being gently sung. The spa also offers a unique yoga pavilion overlooking the Indian Ocean, individual treatment villas with private gardens and steam rooms. Each guest is able to experience one free yoga class. The teacher is fantastic and makes the experience enjoyable and educational.

Recreation For a relaxed ocean trip, enjoy an ocean adventure on the dolphin cruise. A great trip where we were fortunate enough to see pods of dolphins in their natural habitat. A must try. For the water sports enthusiasts, the resort offers complimentary snorkelling, kayaking and paddle boarding. Motorized sports are available but for an additional cost. We did try the snorkelling admittedly were weren’t that good but we did get to see an amazing abundance of marine life. For the Fitness fanatic, keep your training up at the fitness centre on the island from military exercise boot camps to peaceful yoga classes by the ocean waves. There is something for everyone here. For the avid golfer why not try the only 9- hole golf course in the Maldives. Villingili’s golf course is nestled in seven-and-a-half hectares at the southern end of the island.

Benjarong A culinary journey through Thai cuisine Considering my spouse’s love for Thai food, all I could ask myself is how have we never been here before? Benjarong is Dusit Thani Abu Dhabi’s signature Thai restaurant, hidden deep in the centrally located hotel. After dodging through the weeknight traffic, we are more than happy to experience the peace and calm. The dark wood and cool green accents create a feeling of relaxed elegance. There are no tablecloths and the staff are full of smiles, while both families and couples fill the restaurant. The chairs are large and plush, and the seats are each fitted with an extra pillow. Pure comfort. The meal starts with a soothing warm towel, to clean your hands, and a delicious shot of sweet lemongrass tea, leaving you to wonder if the meal ahead could possibly beat this incredible beginning. The menu is varied enough to exhibit all of the Thai staples without feeling extensive, partially because it is organized and easily readable on one large thick card. We start with the mixed starter platter, which features tastes of a variety of appetizers. The chicken satay is juicy and piping hot. The fresh rice paper rolls are incredibly bright, thanks to the crunchy fresh herbs and even the fried spring rolls are light and crispy, rather than the far too often tasteless and oily variety. The small array of potent dipping sauces allows for a different flavor with every bite…spicy, sweet, nutty, salty… The main dishes are all enticing and it is hard to decide on a select few. The pan fried salmon is innovatively thinly sliced to create flat, buttery pieces with crispy edges. It is drizzled with a light red curry sauce and the whole dish is easy to finish yet entirely satisfying. The tofu in chili paste offers large chunks of tofu tossed in a flavorful spicy sauce and littered with crunchy baby corn and fresh raw peppers. You will need a strong tolerance for heat, but even the discerning meat eater will enjoy this dish. And, as a seafood lover, two of my favorite dishes were the king prawn plate and the prawn fried rice. The king prawns were large and tender (actual real king prawns). They come lightly battered and flash fried, served with three dipping sauces. The fried rice was a generous mound with a multitude of fleshy pink whole prawns mixed in. The best part however, is the deep fried egg that is served on top. As you cut into the crispy egg white, the thick creamy yolk runs slowly into and over the rice. It is Thai soul food and a meal that you could eat every day. Over these past few years in Abu Dhabi and all of the Thai food I have eaten, I had yet to experience the treasure that is to be found at Benjarong, Dusit Thani Abu Dhabi. Brunch at Jumeirah at

If you don’t have any plans this Friday I would recommend booking yourself a table for brunch at Nahaam. Nahaam is a chic and glitzy venue perfect for a sophisticated Friday brunch, the pool and ocean views only add to the sense of serenity. The brunch features a selection of live food and beverage stations, offering you all the favorites from their award-winning restaurants.

Being seafood lovers we are thrilled to see the wide variety of fresh seafood available. The ice bar boasts half lobster, Alaskan crab, poached mussels and poached prawns. The selection of ceviche is brilliant, red snapper, tuna and salmon, all divine however the tuna ceviche is our favorite as it has a slight zest which elevates the dish. The octopus carpaccio is exceptional, this is the first time we’ve seen this in Abu Dhabi. Tender slices of octopus are lightly drizzled in vinaigrette and topped with fresh crunchy salad. Also worth mentioning is the seared yellow fin tuna loin, nori, potato, artichoke and quail eggs, crabmeat salad, pomelo, wild rice with coriander and mango salsa and the seafood terrine all as delectable as the next. The brunch also features an extensive salad bar, be sure to try the Californian cobb salad steamed mussels, mango, spring onion with tamarind sauce, you won’t be disappointed. On the terrace you will find the BBQ grilling station and Asian selections. The BBQ grilling station offers everything from succulent jerk marinated BBQ prawns to mouthwatering beef brisket. The Asian selection varies greatly from dim sum to stir fried delicacies. We are not able to resist the Peking duck, served in either steamed or fried mantou bread and smothered in thick hoisin sauce how could we say no. We take this with a side of brisket and some light salad.

BiCE team is on hand to serve up a selection of fresh pasta, we try a few pieces of the fresh ricotta and spinach ravioli, in true BiCE style the pasta is cooked to perfection. Adding some theatrics to the brunch is the Tori No Su team, the live whole tuna carving is performed in front of guests adding a few wow’s and ohh’s to the day. There is an extensive cheese selection along with a fresh fruit section but we head straight for the luscious cakes and pastries. Brunch at Nahaam offers a multitude of guilty pleasures for all taste buds. Taste of Abu Dhabi takes place from 10th to 12th November 2016 at Zayed Sports City. Dine Like A Movie Star At The Movies Earlier this year celebrity Chef Gary Rhodes launched his ThEATre by Rhodes concept in partnership with VOX Cinemas. Available at Yas Mall and Nation Galleria, ThEATre by Rhodes gives movie fans the chance to dine like a movie star at the movies. Created by Michelin Star, celebrity Chef Gary Rhodes and his team, the menu features a selection of sweet and savoury dishes like crab and asparagus bruschetta, spicy lamb and date meatball fritters, krispie prawns and a wide selection of desserts. The menu is split into three sections, the preview, the main movie and the credits, a customised fun twist. The movie theatre offers large, comfortable, reclining armchairs with blankets and pillows. With 36 exclusive seats it allows movie fans to enjoy interactive cinema seating and table service. For the preview we order the peppered beef sticks with sweet chilli and pomegranate jam along with the crab and asparagus bruschetta. The peppered beef sticks offer bite after bite of succulent thick and flavourful beef. The sweet chilli and pomegranate jam is spicy, so be careful not to overdo it. The crab and asparagus bruschetta is generous, mountains of fresh crab are elegantly placed onto the crisp bruschetta. Up next, the main movie, lobster and chicken caesar tacos. Its not every day you get to enjoy lobster whilst watching a movie. The lobster and chicken caesar tacos are served as three large tacos with a hefty offering of lobster and chicken. As we finish our first taco we are already full but they taste so good we continue to eat. We ask our waiter for a 30 minute break before the dessert. For the credits we enjoy the date and banana French toast along with the knickerbocker glory. A great end to a unique dining experience.
