99 Sushi Bar & Restaurant

The award-winning 99 Sushi Bar & Restaurant on Al Maryah Island will be serving its nine-course Natsu Tasting Menu until September 30th. “Natsu” is the Japanese term for summer, an apt title for all that the special menu has to offer. With a focus on light dishes and fresh produce, the set menu at the Japanese haute cuisine restaurant features a variety of seasonal classics with a contemporary twist. Available daily from 7.00pm until 11.30pm, the menu is priced at AED 789 per couple. Food is only half of the tasting menu experience. The summer dinner concept is a social affair, be it sharing the signature plate of Panko Mistura Maki with Prawn, King Crab, Avocado and Seabass or the popular ‘Golden Bricks’ of Toro Tartar served with Tobiko and Golden Leaves. Jaime Castaneda, General Manager at 99 Sushi Bar Ltd, said: “The Natsu Tasting Menu is the 99 Sushi way of taking our guests on a journey through summer in Japan. A burst of flavours come together in each course that uses premium quality ingredients and traditional cooking techniques. The dishes are light, and the sharing platter experience makes this dinner a fun night out for all.” From Toro Flambé and Scallop Nigiri options to the popular Fatty Tuna Tartar and Sashimi Platter, there is something for every palate. The expert chefs keep surprising diners with exceptional dishes like the Spanish Red Shrimp cooked in two different temperatures, Tuna and Beef Taco and Kobe Edamame. Completing the fine dining experience on a sweet note is the signature Chocolate Fondant served with Caramel Ice-Cream and Golden Leaves. There’s more; a round of coffee or tea is available for those who like to wash down a meal with a hint of caffeine. Not only does the restaurant’s Natsu menu give guests the chance to sample refreshing Japanese dishes to beat the heat, 99 Sushi Bar & Restaurant offers an elegant ambience to match. With warm lighting that complements the floor-toceiling windows overlooking the Arabian Gulf, attention to detail can be found in the chic décor as in the summer menu. 99 Sushi Bar & Restaurant, Abu Dhabi, +971 2 672 3333

Bombay Brasserie

Bombay Brasserie, Taj Dubai’s award-winning Indian designer kitchen has refreshed its menu with a range of thoughtfully created dishes and long lost recipes. The menu is inspired by traditional cooking methods intertwined with modern culinary techniques and flavours, whilst still retaining the signature classics the restaurant is renowned for. Created to enjoy in Bombay Brasserie’s warm and colourful interiors, the new dishes are a treat for the eyes as well as the taste buds. Chef Vikas brings to life rare delicacies such as the Aash Soup, a classic Persian specialty soup that lost popularity over the centuries, due to its exotic nature and the intensive slow cooking techniques required to create its rich and delicious flavours. A delicate specialty, the Wild Rice Tuna Salad, features soft-centred and lightly seared tuna with a coriander and cumin crust, served with a side of crispy Canadian wild rice and rucola. A classic Moghul street food favourite is reimagined with the Deconstructed Samosa Chaat, a crispy samosa pastry stuffed with green gram, potatoes and peas. From the mains, guests will be able to enjoy the Kale and Smoked Cheese Kebab, bringing to the table the well-loved superfood, fused with a flavourful aloo tikka and served with a special tandoor charred pear chutney. A rare and robust Hyderabadi specialty is also featured, Pathar ka Gosht - tender lamb escalopes slow cooked in a range of rich and vibrant spices, which will delight the palate. Diners can also savour prime steak like never before with Bombay Brasserie’s Smoking Rib Eye, a reinvention of a classic, the dish combines fragrant Indian spices and Roganjosh style gravy, presented in an aromatic cloud of clove smoke, for a truly gastronomic experience. A nod to the yester years of tribal cooking in the Far East, guests will be able to indulge in the Bamboo Chicken Biryani, deliciously marinated chicken and biryani rice slow cooked in spices and stuffed into a raw bamboo log which is placed over a natural fire, presenting unique smoky and woody flavours. Other highlights include the Bamboo Prawns, a dish inspired by the North Eastern Indian tribes, flawlessly herbed prawns wrapped in a banana leaf and marinated in signature house spices and gravy, covered in bamboo and cooked tandoor style. For the perfect sweet ending guests can indulge in the popular Indian frozen dessert Kulfi, savouring alterative and enticing flavours such as Chili, Rose, Mukhwas and Gulab Jamun. VaKaVa

18 | Dining and Nightlife Middle East

After a successful launch event we were eager to revisit VaKaVa Pan Latin Grill and Lounge at Jumeirah at Etihad Towers to further explore the menu. In collaboration with Mexican Celebrity Chef Richard Sandoval, VaKaVa’s menu offers a range of Pan Latin flavors, from Ceviches, Tiraditos, Tacos to sharing plates. With a broad range of restaurants in his portfolio, Chef Sandoval combines authentic Latin ingredients with international flavors and inventive techniques to create new and unexpected concepts and cuisines such as modern and coastal Mexican, Latin-Asian, Peruvian and Pan-Latin. During the past 18 years, Sandoval’s career as a Chef-Restaurateur has evolved to include serving as a culinary consultant, television personality, cookbook author and brand ambassador. RS Hospitality is now a leading international restaurant group with over 45 concepts spanning Arizona, California, Colorado, Florida, Georgia, Texas, New York, Virginia and Washington, D.C., as well as in Dubai, Abu Dhabi, Mexico, Costa Rica, Tokyo, Qatar and Serbia. When heading to VaKaVa be sure to follow the signs and take the first right, as VaKaVa is located separate to the main hotel and has its own valet. The venue is bursting with color from the moment we walk into the restaurant our eyes are captivated by the emerald greens, fuscous pinks and bronze details. VaKaVa enjoys a spectacular and extensive two-storey spot,

where guests can dine indoors under the warm tones, or alfresco on the intimate patio of the ground floor. The extensive dining space is complemented by the awe-inspiring VaKaVa terrace on the first floor, where mesmerizing views of the waterfront make for the ultimate evening under the stars and the best outdoor terrace space in Abu Dhabi. The terrace is set to open later in the year when temperatures cool. We begin with the Smoked Guacamole, as the name suggests the Guacamole is presented to the table encased in a large glass filled with smoke. As the glass casing is gently raised by our waiter the smoke clears to unveil the generous portion of rich and creamy Guacamole served with a side of crisp tortilla chips. Given that you can find this dish at most restaurants in the city I believe that the theater of the smoke not only adds to the taste but to the visual stimulation giving it a unique edge. Curiosity leads me to order the Corn Bread. I personally enjoy the appealing flavors, a light bread, served piping hot, with a slightly sweet taste, the playful textures make this dish hard to resist and at only AED 20 we would recommend trying it. From the salad options we opt to try the Kale Salad, we order the Kale Salad as a light side option, although it is enjoyable, we both personally find the flavors to be too overpowering.

20 | Dining and Nightlife Middle East

A highlight of our dining experience is the Salmon Ceviche, with rocoto, tamarind and citrus sauce this dish is light, fresh and zesty. Have your phones ready as the presentation of this dish is exceptional. Served in a half-cut glass bottle on a bed of dry ice this dish will make your Instagram profile the envy of all your foodie friends. The Prawns Aguachile are not for the faint hearted, this dish is packed full of flavor, from mango to lime, cucumber to coriander your taste buds will be left enthralled. Again, this dish is spectacular from flavor to presentation, this is an excellently executed dish. Moving onto the mains we select the Octopus and the Wild Mushroom Coca Flatbread. The Octopus is served Peruvian style grilled with potato salad. The plating is detailed and elegantly done. The Octopus is perfect, understandably Octopus isn’t an easy dish to cook as many chefs make the mistake of overcooking however at VaKaVa the culinary team have perfectly prepared the dish. Upon the first bite the Octopus seems to melt in our mouth, excellent. Although the Wild Mushroom Coca Flatbread may not sound like the most exciting dish on the menu don’t underestimate Chef Richard Sandoval’s talents, he somehow manages to make even a humble Flatbread taste delicious. Be sure to add a side of Cauliflower.

Concluding our dining experience, we order the Chocolate Fondant Cake, although if it is your first time visiting VaKaVa La Bomba dessert is a must (you’ll thank us later). VaKaVa’s biggest hurdle will be shaking off the reputation of previous restaurants that had occupied the space however we believe VaKaVa has come to Abu Dhabi at the right time, sharing concepts are thriving, Pan Latin cuisine is trending, and visually stimulating dishes are more in demand than ever. Overall, we had a pleasant dining experience, as a vegetarian I was able to find dishes I enjoyed however do think VaKaVa does have an opportunity to expand this section of its menu, for those who enjoy meat or seafood you will be spoilt for choice! Smoked Guacamole, AED 60 Corn Bread, AED 20 Kale Salad, AED 55 Salmon Ceviche, AED 75 Prawns Aguachile, AED 80 Octopus, AED 145 Mushroom Flatbread, AED 75 Cauliflower, AED 45 Chocolate Fondant Cake, AED 55 VaKaVa, Jumeirah at Etihad Towers, Abu Dhabi, +971 2 8115 666

Alba Terrace

22 | Dining and Nightlife Middle East

Today we are visiting the stunning Alba Terrace created by world renowned Chef Tom Aikens, famed for being the youngest chef to have ever been awarded two Michelin Stars. Alba Terrace offers guests the finest locally sourced coffee, light lunches and sharing plates, all to be enjoyed over good conversation. Located on the Marina side of the hotel, Aikens has created a serene, coastal Mediterranean-style feel Alba Terrace. Bathing in the natural sunlight, Alba Terrace boasts floor-toceiling glass doors, a large brass clad bar and is host to vibrant brunches and tasting evenings. The bright ambience of Alba Terrace is a true reflection of the Mediterranean. A crisp, light colour palette and smooth terrazzo surfaces lead to bright lime oak wall panelling, sheer curtains and vibrant plants, bringing the outdoors, in. On the lush outdoor terrace, a series of intimate seating areas are available, under pavilions or next to the pool they provide guests with the opportunity to dine al-fresco, reminiscent of elegant Italian summers. A sunken group dining area provides a semiprivate space for outdoor gatherings. Alba Terrace has recently launched its business lunch menu which is available 12noon to 5.00pm everyday except Fridays.

Two courses will cost you a mere AED 95 per person whilst for a little bit extra you can treat yourself to three courses, priced at AED 120. Both come with water, a soft drink and coffee or tea. Guests have a choice of four starters, four mains and three desserts. Starters range from Mediterranean Salad, Beef Carpaccio, Fried Calamari to Pistou Soup. I opt for the Mediterranean Salad, with seared red snapper, feta and pistachio whilst my dining companion selects the Pistou Soup, with basil and parmesan. The Mediterranean Salad arrives and is bursting with colour, light and flavourful it makes for a great summer dish. The Pistou Soup (which we did take some convincing to order) smells delightful, a light soup with density added by the vegetables, don’t overlook this humble dish. For mains we have a choice of Grilled Chicken Paillard, Risotto Verde, Alba Pizza or Beef Ragu Pasta. Each and every dish sounds divine but it’s the Risotto Verde with rocket, kale, spinach and pecorino that captures my imagination. Unfortunately, due to a few intolerances my dining companion is unable to select any of the dishes. The well trained team at Alba Terrace go through the menu and kindly offer him the Pan-Fried Sea Bass with orzo, red pepper relish and basil artichokes as an alternative. September | 23

24 | Dining and Nightlife Middle East

The Risotto Verde is sensational, the creaminess of the pecorino is equally matched by the crunchy kale, creating a contrast of textures. This dish not only tastes good but gives you a sense of warmth, like a home cooked meal. The Pan-Fried Sea Bass is another great choice, the fish is light with a salty undertone, the vegetables sit in a small broth that again exude a celebration of taste and quality produce. Being very honest at this point we are feeling quite full, but our curiosity doesn’t allow us to resist seeing what Chef and the team have created for dessert. Having absolutely no will power we order dessert. We select the Seasoned Poached Fruits with vervain and almond alongside the Rosewater Pavlova, with rose syrup, soaked figs and pomegranate. We only manage a few bites but in keeping with the theme of exceptional food the desserts do not disappoint.

All the restaurants at The Abu Dhabi EDITION serve a range of great tasting food, produced with quality ingredients. The staff are extremely knowledgeable and are able to recite the menu and detailed ingredients of each dish on a whim, which is very reassuring if you have any type of dietary requirements. Starting at AED 95 to AED 120 for three courses the business lunch at Alba Terrace not only provides great value for money but more importantly exceptional quality food for guests to enjoy. Whether you are looking for a great business lunch or just want to catch up with friends Alba Terrace’s business lunch menu is a great option, plus the menu is also available on a Saturday meaning that you can dine in style without breaking the bank. Business Lunch, available daily except Fridays. Served from 12noon to 5.00pm. AED 95 for 2-courses, or AED 120 for 3-courses.

And finally… after a month of reviews I find a restaurant that offers Alba Terrace, The Abu Dhabi EDITION, +971 2 208 0000 me almond milk with my coffee, thank you to The Abu Dhabi EDITION! It’s the attention to details like this that has seen the hotel grow from strength to strength and those that have visited once have all returned time and time again. September | 25

Sontaya

26 | Dining and Nightlife Middle East

Today we are visiting Sontaya, one of Abu Dhabi’s most celebrated Asian restaurants. Sontaya, located at The St. Regis Saadiyat Island Resort, is set amongst a series of floating pavilions that look out onto the pristine Saadiyat beach and the glistening Arabian Gulf. It is a beautiful clear day when we arrive at Sontaya, the sound of water flowing under the pavilions and the turquoise ocean views set the tone for a relaxing afternoon. During the cooler months the sliding doors are opened to give the illusion that Sontaya is floating on a bed of water, a perfect setting. Not just a daytime venue, at night Sontaya transcends into one of the most serene settings in Abu Dhabi. We are warmly welcomed to the restaurant by the team, the restaurant is busy with a large table that has come in for a leisurely lunch. We take a seat in one of the cosy booths near the floor to ceiling glass windows.

We begin to browse the menu. Sontaya offers guests a comprehensive and delicious modern Southeast Asian culinary experience, borrowing flavours and inspiration from Thailand, Vietnam, Indonesia and Malaysia. The menu highlights the restaurant’s signature dishes and healthy options for those wanting to eat well. Vegetarians will enjoy their own decently sized dedicated menu which serves a range of appetizers, soups and main courses. For appetizers I decide to order the Satay Tofu and the Pomelo Salad from the vegetarian menu. The Pomelo Salad is tossed in homemade tamarind dressing, crushed peanut and roasted coconut. The Satay Tofu, served as four skewers, allows for the Tofu to be marinated in traditional herbs and spices and grilled to perfection, served with a cucumber salad and a homemade peanut sauce, we finish the entire serving in a matter of moments. My dining companion opts for the Tiger Prawn Chargrilled Satay Skewers, which again are served as four skewers, with light elements of charcoal the rustic aroma fills our senses. All the appetizers are delicious, but the Pomelo Salad is exceptional, the contrast of bitter, zesty and sweet ensures that chef has perfectly balanced the flavours to create a memorable dish. September | 27

28 | Dining and Nightlife Middle East

Our main courses compromises of the Caramelized Chilli and Lemongrass Salmon, glazed fillet salmon with chilli and lemongrass sauce, compressed cucumber, burnt spring onion and bok choy along with the Fried Seabass Fillet with Tamarind Sauce, golden fried sea bass topped with tamarind sauce, pomelo salsa and spicy onion rings. The Caramelized Chilli and Lemongrass Salmon is an impressive dish and one we would highly recommend. The chilli and lemongrass work well to evaluate the Salmon’s natural flavours. The chilli and lemongrass offer a distinctive and palatable flavour whilst the Salmon skin has been removed and fried adding additional texture to the dish. Upon its arrival the Fried Seabass Fillet doesn’t look like much however chef does well to ensure that the fish remains moist and the tamarind sauce is the perfect accompaniment. For our side dishes we enjoy the Sticky Rice and Broccoli with garlic and oyster sauce. Its refreshing to see the Broccoli isn’t being served with chilli like most restaurants, Sontaya’s version offers a subtler flavour complimenting the mains.

The service throughout our visit is impeccable, in true Asian hospitality the staff are warm and welcoming. Since our last visit the service has improved tremendously and the staff seem more confident in recommending dishes and in their overall interactions with guests. Using a blend of cooking techniques from across the Southeast Asian regions paired with quality ingredients Sontaya is able to create dishes that boast exciting flavours and dramatic presentation. Each and every dish we tasted was well presented and offered a range of deep and delicious flavours, from salty to sweet and hot to sour, the menu offers something for all palates. If you are a fan of Asian cuisine Sontaya is a must visit. Dubai

September | 31

A symbol of modernity and an impressive architectural project, Dubai’s Palm Jumeirah, a manmade island constructed to look like a flourishing palm tree when viewed from above, has become home to some of the most extravagant and luxurious hotels in the region and none more so than the Emerald Palace Kempinski. Situated on the West Crescent, the five-star property rises out of the ocean waves and has become a landmark in its own right. Flanked by the Arabian Gulf on one side and the glittering Dubai skyline on the other, the majestic five-star property, affectionately referred to as ‘Dubai’s Palace by the sea’ is set within 100,000 square meters of manicured gardens, creating quite the first impression. Welcomed into a grand dome supported by eight pillars of Portuguese pink marble, the neoclassical architecture and design elements replicate the palaces of 18th century continental Europe.

The palatial welcome is further enhanced by hand-painted 24-carat gold leaf detailing and a grand chandelier weighing in at 850kg and adorned with 40,000 Swarovski crystals. A sense of regality prevails throughout the extensive property which is home to a 500m private beach and 391 luxurious rooms, suites and villas. Invited for a culinary weekend stay, we’re delighted by our deluxe room with ocean view. Clocking in at 75 square meters, the rooms makes for one of the largest lead-in room categories on the Palm. Truly palatial in design and with no expense spared when it comes to comfort and luxury, the space is beautifully decorated in tones of platinum and offers unrivalled views across the ocean from a small private balcony that comes alive during sunset hours.

Comfortably appointed with a large king sized bed, an abundance of textiles and plush carpeting, these deluxe rooms have evidently been designed with ease in mind and feature a number of modern touches such as, flat screen televisions, connectivity hubs and a large in-room safe (that can easily fit your laptop). Deluxe rooms also contain a small lounge area with a writing desk, a polished marble bathroom with deep tub, separate shower and walk-in closet. Kempinski are a brand renowned for European luxury and strong service and these rooms make space and comfort a priority, plus the 24-hour butler service is truly appreciated.

While a state of the art 24-hour fitness center offers guests Technogym equipment and the services of a personal trainer.

When it comes to dining, guests at the Emerald Palace are spoilt for choice with 8 bold and distinct concepts available on site. Yet it’s the classy All’onda that brought team of Dining & Nightlife to the Palm for a culinary weekend escape. For the Italian restaurant perched on the upper levels of the Emerald Palace has recently launched a Saturday afternoon cookery classes. These master classes which take place each week between 1.00pm and 4.00pm under the tutelage of All’onda’s charismatic head Chef Ibraheem Musleh aim to take guests on a culinary adventure. During the three-hour class (plus time at the end for eating your creations) we learnt not only how to create the dishes but also the history behind them, how to select the best ingredients and even some innovative culinary techniques. From the secret flavors used in All’onda’s signature Beef Tartare, through to how to construct the perfect Green Tea Tiramisu. Our favorite part however was learning to make pasta from scratch, although it’s a far more difficult process than it appears. The class was educational, yet the fun nature of the class makes it so easy to recommend.

Switching themes each week these classes cover everything from Venetian cuisine through to beverage making classes. The intimate restaurant with its sleek bar area and panoramic terraces makes for one of the more impressive restaurant locations in a city where we are spoilt for choice when it comes to views. One thing for sure, we will be recreating some of All’onda’s signature dishes at home, effortlessly blending together the cuisines of both Italy and Japan for our next dinner party. Hakkasan Abu Dhabi

36 | Dining and Nightlife Middle East

From the moment we enter Hakkasan Abu Dhabi we are greeted by smooth electric house music and dim blue and red lighting which sets a relaxing atmosphere for the evening. The restaurant is bustling with guests and the aroma of fine fare fills the air. Carved wooden screens and latticing separate the dining area allowing the large space to become intimate for diners to enjoy. At the kitchen the glass screen gives guests the opportunity to be entertained as a host of chefs work tirelessly to create intricate tasteful dishes. We begin with the Fried Soft Shell Crab with Chilli and Curry Leaf. A fantastic dish to start our dining experience, from the crispy fried Soft Shell Crab to the spicy Chilli and aromatic Curry Leaf this dish is a sensory delight. Unable to resist my dining companion opts for the Crispy Scampi Tail with Almond, Oatmeal and Curry Leaf. Beautifully plated this dish does not only offer a visual stimulation but a palatable one however this dish does pack some strong flavours, but the portion size makes it just enough to remain enjoyable. Wanting to try a few vegetarian options I select the Stir-Fry Vegetable and Pine Nut Lettuce Wrap and from the Dim Sum menu I order the Grilled Vegetarian Shanghai Dumplings. The Lettuce Wraps taste delicious, light and with a rustic soy echo they make for a pleasant dish. The Grilled Vegetarian Shanghai

Dumplings are also enjoyable but sadly not as impressive as our previous dishes which have raised the bar on our dining experience this evening. Guests are spoilt for choice when selecting their mains with dishes ranging from the Roasted Silver Cod, Steamed Alaskan Crab, Pipa Duck, Wok-Seared Wagyu Beef to Chinese Vegetables. From the Fish section we opt for the Grilled Chilean Sea Bass with Honey and from the Seafood section we select the Charcoal Grilled Canadian Lobster with a side of Vegetable Fried Rice. Both dishes are divine and probably the two best dishes we’ve enjoyed so far this year. The Grilled Chilean Sea Bass with Honey tastes exceptional, cooked to perfection the fish beautifully flakes off the fork, to the taste the Sea Bass is subtle with a more powerful sweet taste, the unique presentation shows of the culinary teams innovative style. However, it is the Charcoal Grilled Canadian Lobster that leaves us all in awe, the Lobster meat is light yet the sweet but nutty sauce plays alongside the meaty texture making this a standout dish. The Vegetable Fried Rice is an ideal side as its relaxed flavours do well not to overwhelm our palate.

Concluding our dining experience, we gaze over the dessert menu, I will say this is our least favourite part of our dining experience as we personally don’t like the description of any of the desserts except the Milk Chocolate and Hazelnut Parfait which we decide to share. Once it arrives the dessert is really pleasing and more than enough for two to share.

Set in the majestic Emirates Palace, Hakkasan Abu Dhabi comprises of a restaurant, bar, lounge, four private dining rooms and a spanning terrace. The 108-seat terrace boasts a stylish bar area complete with a bespoke beverage menu and laid-back cabanas overlooking the city-skyline. The terrace is due to re-open mid-October.

One criticism is that Hakkasan needs to work on offering guests milk alternatives, I asked for a coffee with either almond, coconut or soya milk to be told they only serve cows milk. For a restaurant of Hakkasan’s calibre we expect options.

Fried Soft Shell Crab, AED 118 Crispy Scampi Tail, AED 168 Stir-Fry Vegetable and Pine Nut Lettuce Wrap, AED 75 Grilled Vegetarian Shanghai Dumplings, AED 55 Grilled Chilean Sea Bass, AED 238 Charcoal Grilled Canadian Lobster, AED 318 Vegetable Fried Rice, AED 58 Milk Chocolate and Hazelnut Parfait, AED 50

If you are looking for fine Cantonese cuisine it really doesn’t get any better than Hakkasan. Overall our starters and mains were excellent, we won’t be too critical on the desserts as we were only going by the descriptions (and the one we did choose was enjoyable).

Phoenix Social Club

40 | Dining and Nightlife Middle East

Phoenix Social Club is the latest food and beverage concept to open at the H Hotel, taking up residence in the first-floor space previously occupied by Okku. The contemporary Japanese restaurant has been replaced by what can only really be described as a post-prohibition nightlife destination that blends together a speakeasy bar and supper club concept, into something rather unique for the Dubai restaurant scene. Entering past a wall illuminated in flames, we traverse a narrow stairway before reaching an elevated bar that fills the left side of the room. The bar is both striking and memorable thanks to the bejeweled ceiling it sits beneath and a seat here is a great place to soak up the Phoenix Social Club vibe. A live duo performs a Jazz rendition of Mario’s 2004 hit ‘Let Me Love You’, filling the narrow space with an unexpected atmosphere that does not let up during the evening, an impressive feat considering our early dinner reservation. It would appear other guests have the same idea, for the restaurant is nearing capacity by the time we make our way into the dining room. Snippets from retro black and white movies fill a large screen at the back of the room, while portraits of Marilyn Monroe and Audrey Hepburn adorn the walls. These help to create the feeling of modernized nostalgia that the venue is striving for.

We sink into comfortable leather chairs separated by sleek marble table tops and although the tables are perhaps a little too close together for our liking, the small space has been utilized well. We begin with a selection of mixology from the expertly crafted beverage menu. In a city known for extravagant presentation and gimmicks, the team at Phoenix Social Club have really outdone themselves when it comes to the drinks. One of the highlighted beverages features an artisanal ice cube with a cork, inside lies the majority of the drink which must then be syphoned out using a small pipet. Similarly, the Monroe’s Charm which is named after the iconic actress is a grapefruit and mandarin concoction adorned with candy floss. As a nightlife venue Phoenix Social Club feels skewed more towards beverages than a dining destination, which is a shame because the short menu selection offers some exceptional dishes. Broken down into small and large plates and a number of tandoor breads, key members of the kitchen team have come from the recently opened The London Project on Bluewaters Island and the innovation from the culinary team is clearly evident across both venues.

September | 41

42 | Dining and Nightlife Middle East

Most interesting is Phoenix Social Club’s ‘trust the chef’ concept which puts your food entirely in the hands of the kitchen. We haven’t seen anything quite like this in Dubai before and it’s rather exciting to have each dish arriving at the table as a complete surprise. Our meal begins with the Tandoor Bread with Burratina, a beautiful introduction to the cuisine at Phoenix Social Club that presents warm bread served with paprika truffle honey and a ball of creamy burratina topped with balsamic pearls and fresh truffle. Alluring ingredients and textures continue with the Chicken Liver Parfait. Plated alongside crème fraiche, caramelized yoghurt and endives, the inclusion of rose brings a hint of sweetness and color to a plate which offers artistic presentation. The Ceviche of Hamachi should also not be missed, mainly due to the inclusion of burnt avocado and tiger milk which helps to elevate the flavor of the dish.

Only two choices are offered for dessert, a Compressed Watermelon with Textures of White Chocolate and a Saffron and Pear Sorbet with Spiced Caramel and Brick Pastry. Both are wisely light and executed well but with menu development at Phoenix Social Club still ongoing we would like to see a few more dessert options added in the coming months. Inspired by the supper clubs of 1930s and 1940s New York, Phoenix Social Club has captured the essence of a bygone era while managing to modernize and refine the idea of a secret hangout, into an exciting nightlight venue that combines dining, drinking and dancing. The venue looks likely to be a sure fire hit for the Trade Centre area and injects some much-needed life into the F&B offering at the H Hotel. Tandoor Bread with Burratina, AED 54 Chicken Liver Parfait, AED 35 Hamachi Ceviche, AED 70 Chargrilled Octopus, AED 75 Beef Cheek Tortellini, AED 70

From the large plates we enjoy the Chargrilled Octopus. Bringing an impressive cook to the protein, Japanese flavors are prominent, with the octopus tentacle sitting upon a nori powder and wrapping seductively around a miso foam in a dish of Phoenix Social Club, H Hotel, Dubai, +971 4 338 3434 impressive construction. The Beef Cheek Tortellini also fare rather well as me move from Asian into European cuisine, though we By David Tapley would have preferred more pieces of the pasta which is served a beautiful porcini beurre monte and parmigiano-reggiano crisps. COYA Friday Brunch

44 | Dining and Nightlife Middle East

This Friday afternoon we are visiting COYA Abu Dhabi to experience their Friday Brunch. Last time we visited COYA, they had just launched their Friday Brunch, at the time we were very impressed. Today the biggest question on our mind is, does COYA Abu Dhabi still have what it takes to be one of our top brunches in the Capital? We arrive slightly later than expected however the team accommodates us and shows us to our table. We are welcomed to our table with Guacamole, although previously it had been made fresh in front of us this time it seems to already be placed

on the table, we are not sure if this is because we are late or if this is now a standard, as the brunch has become more popular it maybe a time saving exercise, regardless it still tastes good. However, if given the choice I’d have preferred it come to the table upon my arrival. To begin we are invited to enjoy a range of unlimited starters which are served on an open buffet, we take a selection of Tuna Tiradito, Yellowtail Tiradito, Tuna Tartare, Kale Salad, Corn Salad, Avocado Maki and Burrata. All are exceptional, and I do not use that word lightly.

September | 45

Even a basic Corn Salad is exciting with a dynamic range of flavours and textures. The Burrata, a new addition since our last visit, is light and creamy and fits well amongst the offerings. For the Ceviche we take a small sample of the Salmon, Sea Bass, Red Snapper, and Tuna Ceviche. The freshness of the seafood is evident and even though it is served as bite sized options buffet style the bed of ice ensures the freshness remains. The Red Snapper is our favourite, light and full of flavour we are almost tempted to go up for a second and third helping but decide to hold off for the courses to come.

46 | Dining and Nightlife Middle East

Served tableside are the Sea Bass and Potato Croquettes and the Crispy Calamari. Piping hot the Sea Bass and Potato Croquettes feel like a warm hug in the mouth, beautifully done. The Crispy Calamari is lightly flavoured, and the portion is more than generous. For the mains there are a variety of Peruvian dishes guests may choose from based on the fundamentals; Steak, Chicken, Vegetarian, Grilled Salmon and Sea Bass Risotto. All are served with a side of Grilled Asparagus and Corn Puree. We select the Sea Bass Risotto and the Chicken. The Sea Bass Risotto is rich

and nutty with notes of miso as the historical Asian influence on blending its ancient roots with its modern setting. With the right Peruvian food is pleasantly apparent. The Chicken is lightly grilled balance of each and all to keep their guests both satisfied and yet offering a smooth charcoal taste. intrigued. The waitstaff are excellent, affluent in Peruvian fare and dietary requirements. Dessert is served as multiple different small plates from Caramel Popcorn served on a platter of corn, in homage to one of COYA Abu Dhabi remains one of our favourite brunches in Abu Peru’s favourite grains, Tres Leches, Berry Cheesecake to a twist Dhabi from its knowledgeable waiting staff, lively atmosphere to on the classic Crème Brulée. its fine cuisine we have no issues in recommending COYA Abu Dhabi’s Brunch as a must! The Next Chapter In Indian Fine Dining

48 | Dining and Nightlife Middle East

Billing itself as ‘The World’s Most Exclusive Modern Indian Dining Experience,’ Tresind Studio is the creative genius of awardwinning Chef Himanshu Saini. Located within Tresind at the voco Hotel on bustling Sheikh Zayed Road, this tour de force in modern Indian gastronomy is well worth a visit.

For those who enjoy a drink in the shared lounge area, located just outside the door leading into Tresind Studio. For those not in the know, the have never been to Tresind Studio, the meal always begins with a bit of a show. We’re first treated to a round of snacks, small bites of immaculately created hors d’oeuvres. Plating is a true highlight here, and the delicate nibbles are presented on unique dishes. After finishing a leisurely drink, we’re ushered inside Tresind Studio, and get our first glimpse of the establishment.

Even something as simple as bread finds a way to be elevated and delicious. There is always a surprise or two on the menu, and the evening of our visit is no different. We don’t want to spoil what happens for future guests, but we will mention a cartoon lamb was involved with our favorite course.

Water is quickly topped up, and we are never with an empty glass. Plates are expediently cleared, and the overall pacing is perfect. Overdue for a catch-up, my guest and I were happy to enjoy all of the courses at a leisurely pace (and were the last ones in the dining room).

As much as we enjoy the new additions to the Chapter Two menu at Tresind Studio, we’re happy to see some inclusions from Chapter One. Most specifically, the beautifully presented Wagyu Curry, which remains one of our favorites. Similarly, a highlight of the meal which remains from the first version of the menu is the humble Khichdi, a uniquely prepared group of ingredients representing all of India. We love the intelligent approach, as well as the modest method of serving. As we near the end of our many courses, desserts follow the trend of the rest of the meal and are composed of beautiful well-constructed bites, and memorably finish the meal.

Our only note, and we’ve mentioned this during Chapter One, is how we would love to see a special beverage pairing for such an elevated menu.

Overall, we love the orchestration of the service throughout the meal. Tresind Studio differentiates their wait staff by identifying them as butlers, who are dressed and trained to match their designations.

W Hotels Debuts In Oman With The Opening Of W Muscat

W Hotels Worldwide, part of Marriott International Inc., announced the opening of W Muscat, the brand’s newest beachfront W Escape and the second to open in the Middle East this year. Set against the stunning backdrop of the rugged Al Hajar Mountains, which form a stark contrast to the historic capital city’s lively waterfront, W Muscat sits at the intersection of the bustling Shatti Al Qurum area. The new hotel opens in an ideal locale to bring the W brand’s signature take on playful luxury to the serene waterfront of Oman. All of the 279 guestrooms and suites at W Muscat provide uninterrupted views of the glistening blue water, with their design drawing inspiration from the ocean as well as the asymmetrical lines of the nearby mountains, caves and desert. These are contrasted with art deco detailing, reminiscent of traditional Omani charm. An enormous 1800 sqm beachfront pool offers breathtaking views of the Gulf of Oman and forms part of the W brand’s iconic WET experience. Here, guests can swim, soak up the sun and enjoy signature beverages while listening to live DJ performances. W Muscat will be hosting a FUEL Weekend in October - the W brand’s signature fitness and wellness retreat where WET will take center stage. FUEL guests can expect next level, energy-soaked celebrity workouts, parties and delicious beverage and food offerings. The highly anticipated Siddharta Lounge By Buddha-Bar makes an Oman debut at W Muscat, bringing its signature flair for culinary prowess and inventive beverages to the rooftop restaurant and lounge. Overlooking the sweeping coastline of Shatti Al Qurum, the space interlocks both indoor and outdoor venues and celebrates the story of Bedouin travelers through innovative design and artistic representation. Breathtaking ocean vistas are framed by an extraordinary rooftop infinity pool that invites guests to literally dive into the action and order a beverage at the swim up bar. Siddharta Lounge By Buddha-Bar transforms from a daytime respite for lounging and relaxing amongst gorgeous views to a scene-setting hotspot when the sun goes down and the music turns up. The concept builds on the adventurous and inventive spirit of George V Eatertainment from Raymond and Tarja Visan. Siddharta Lounge By Buddha-Bar promises a packed calendar of events focused on social dining and electro-ethnic music. Harvest offers guests greener, lighter, fresher and brighter options for breakfast, lunch and dinner. The menu is designed using locally sourced produce and rotating specialties including an exclusive coffee roasted locally in Oman. The restaurant is sprinkled with silver beads inspired by the trade of pearl fishing. CHAR, as the name suggests, dares to defy the traditional grill house, where everything and anything meets the flame. Without hesitation or constraints, the décor embodies an Omani Dhow with tug rope lighting adorning the ceiling and wall-side signal beams as if the space were at sea. Evocative of 1930s Shanghai, Ba Ban named after Chinese opera-like music, fuses Chinese aesthetics and modern eastern style. rgola By Perbellini

Located at the iconic Gulf Hotel Bahrain foodies will find the gem of Italian cuisine, La Pergola by Perbellini. In true Italian style, as we enter the restaurant we are warmly greeted by the team. The restaurants décor is clean and modern and features small backlit walls, pristine white tablecloths and blue chairs which offer a burst of colour. La Pergola by Perbellini was opened in 2018 under the leadership of two time Michelin-Star recipient, Chef Giancarlo Perbellini. Chef Giancarlo Perbellini has delivered a composition of Italian dishes, combined with innovation and tradition, complimenting the restaurants contemporary elegance. His cuisine is known for using the highest quality ingredients and preparing all ingredients in house daily. Every hand rolled pasta, kneaded dough and unique sauce is a labour of talent and love. Chef Giancarlo Perbellini loves to define himself as an artisan cook. Born in 1964 in Bovolone, a quiet town located in the Verona valley, his roots lie in the great Italian rural tradition, where the land and its produce are a fundamental resource. He grew up while cultivating a passion for pastry-making, kept alive by his family, and for cuisine, to which he decided to dedicate his studies and career. His first steps into the culinary arts were taken at the restaurant Marconi and 12 Apostoli in Verona, his career grew and began to take off at the restaurant San Domenico in Imola. The elegant and refined atmosphere at Gianluigi Morini’s grande maison and the French inspiration of Nino Bergese’s cuisine led him to highly regarded restaurants outside of Italy. From Taillevent to Ambroisie, as well as Terrasse in Juan Les Pins and Chateau d’Esclimont, he gained a multitude of experience and created a foundation within haute cuisine. In 1989, he opened an eponymous restaurant in Isola Rizza, where he was able to temper the taste of tradition with innovation. Three years later, in 1992, his hard work produced its first official recognition he was awarded the “Chef Europeen du Poisson”. In 1996, Giancarlo Perbellini earned his first Michelin-Star and in 1998 he was named Emerging Chef by the Espresso Guide. His second star was awarded in 2002, to which were added three forks from the Gambero Rosso guide in 2005. He has been President of the Italian Commission of the prestigious competition for chefs, the “Bocuse d’Or”, since 2010. Today we are excited to be visiting La Pergola by Perbellini to have a sneak peek of the newly launched Pasta Degustation promotion. The menu features a selection of Spaghetti with Pesto and Calamari, Homemade Gnocchi with Tomato and Basil, Deconstructed Lasagne Moderna with Beef Ragout to name a few. The Spaghetti with Pesto and Calamari is a great dish especially for those who enjoy a strong pesto taste. The Homemade Gnocchi with Tomato and Basil is my personal favourite, delicious potato gnocchi is paired with a slightly sweet tomato and basil sauce. My dining companion thoroughly enjoys the Deconstructed Lasagne, lighter than usual the thin sheets of pasta make this lasagne dish unexpectedly light and tasty. With its award-winning restaurants The Gulf Hotel has firmly positioned itself as a gastronomic and entertainment paradise in Bahrain. This September relish four of the best pasta recipes by Chef Perbellini every Monday with Pasta Degustation at La Pergola. The Gulf Hotel Bahrain, +973 1774 6419

At Rotana

September | 57

As we arrive at Saadiyat Rotana Resort and Villas we are directed to the dedicated spa carpark. Having its own entrance and carpark is a big plus, it means that we won’t have to walk through the hotel after our treatment. As we enter the spa we are warmly welcomed by our therapists and given a fresh juice and a cold towel. We then take a moment to discuss the various treatments and problem areas we wish to address during our visit. I eventually opt for the 60- minute Aromatherapy Massage. The Aromatherapy Massage is effective in easing stress and calming the mind. The therapist leads us to the separate changing area. The changing area is immaculately clean. After quickly getting changed into our robes we make our way to the relaxation room. The relaxation room at Zen the spa is one of my favorites in Abu Dhabi. The live moss wall freshens the room adding to the sense of nature and relaxation. The relaxation room is a chilled private area and we enjoy a few relaxing moments before we are called into the treatment room. The treatment room features a large comfortable massage bed and dark wooden interiors, dimly lit it sets the scene for our treatment. We are given a choice of organic essential oils to suit our mood, I opt for the lavender a classic relaxing oil. Although we are asked to select our treatment from the menu the therapists focus on creating a bespoke massage where guests can customize the pressure, technique and oils used. Upon filling in the questionnaire, we give our therapist clear instructions on areas to focus on and areas to avoid.

58 | Dining and Nightlife Middle East

The massage is performed ok however a few points for the therapist to note, we did ask them to avoid our lower back and at one point they did put a lot of pressure on the area, another issue was the massage bed. We didn’t realize that we had the option to have the bed heated, it was only towards the end the therapist informed us that we could have the heated massage bed switch on. This would have been great to know at the start of the treatment. A few small issues aside the rest of the treatment was performed well. We conclude our spa experience in the relaxation room where we are offered a selection of teas and dried fruits. Resembling a tropical oasis, the live plant wall adds a sense of profound natural freshness, a great end to our time at Zen the spa. Saadiyat Rotana Resort and Villas is located just a mere 5 minutes’ drive from the city center but once you arrive you will feel worlds apart from the hustle and bustle. Let your cares drift away at Zen the spa at Rotana, which has its own private entrance and several elegantly designed treatment rooms and relaxation areas. Open from 10am to 10pm, this wellness retreat by the beach offers massages, facials and beauty and wellbeing treatments that will soothe your mind and body.
