Our Unique Heritage.
For more than 40,000 years the Birpai people have been the original inhabitants and occupants of the Greater Port Macquarie region. Relying on the land and waterways to sustain themselves, the Birpai people made temporary huts along the river and around the lakes allowing them to follow the seasonal food trail. The region’s richly diverse landscapes together with the subtropical climate ensured that the community thrived in harmony with the environment for many thousands of years prior to the arrival of Europeans. Today, with its own unique heritage, Port Macquarie is one of the most popular tourist destinations on the NSW coast, and also one of the fastest growing regions in NSW. Discovered by John Oxley in 1818 and named after the Governor of NSW, Lachlan Macquarie, our first visitors were convicts sent to the Port Macquarie penal settlement in 1821 to serve time for secondary offences. The town was built by those convicts and overseen by military officers of the 48th Regiment. Port Macquarie was opened up to free settlers from 1830 and remained a convict town until 1847. Evidence of our convict past can be viewed at various locations including the convict built St Thomas’ Church, the well of the Female Factory in Munster Street ( Map ref K8), the well of the 1840 gaol located within the Ibis Styles Hotel and at the Port Macquarie Museum. The historic cemetery at the southern end of Horton Street (
Map ref J9) is home to
the remains of many of our early settlers including convicts, military officers and free settlers. Over the next four years Port Macquarie and the Hastings region will reach a number of milestones in their European discovery and settlement. Last year (2018) marks two hundred years since Surveyor General John Oxley’s journey of discovery during which he and his party travelled to the place he named Port Macquarie. A number of commemorative events and activities are planned throughout the Hastings region across this year. 4

Koala snoozing at the Koala Hospital
Our
Koalas. Koalas make great Mums
The gestation period is approximately 35 days and at birth, the unfurred, blind ‘pinkie’ crawls unaided from the birth canal, up through the fur and into the vertical pouch and attaches to one of the two teats. Once their eyes are opened, the joeys detach from the teat but remain in the pouch for around four to five months, growing and becoming fully furred.
PORT MACQUARIE IS THE PLACE TO CELEBRATE ONE OF AUSTRALIA’S MOST ICONIC ANIMALS - THE KOALA. HERE YOU CAN NOT ONLY GET UP CLOSE AND PERSONAL WITH OUR FURRY FRIENDS AT BILLABONG ZOO (SEE PAGE 11), YOU CAN ALSO VISIT THE WORLD’S FIRST KOALA HOSPITAL, OR TAKE THE HELLO KOALAS SCULPTURE TRAIL TO SEE OVER 60+ BEAUTIFUL KOALA SCULPTURES.
6
summer 2019/20
Anywhere from 250 grams weight onwards, the joey will become active, occasionally popping its head out and sniffing the air. Around this time the joey begins to stimulate its mother’s cloaca to produce a greenish substance called ‘pap’. This is passed down from the caecum, a specialised section of the intestinal tract where fermentation of the leaf occurs, for the joeys to eat. The ‘pap’ contains vital micro organisms (bacteria) that inoculate the joey’s gut system to enable them to digest eucalypt leaf. Without pap, a joey cannot eat eucalypt leaf and will not survive. From around six months of age, the joey will start emerging onto the mother's belly and by eight months the joey becomes a ‘back young’, staying on or near the mother. By 12 months, the koala is usually weaned. Female koalas are excellent mothers, and are highly protective of their young.
OUR REGION
Billabong Zoo Koala Breeding Program
PORT MACQUARIE’S VERY OWN BILLABONG ZOO IS REGARDED AS A WORLD RENOWN KOALA BREEDING FACILITY. THEY PROVIDE GENETICALLY STRONG, HEALTHY AND NEW BLOODLINES OF KOALAS TO OTHER ZOOS AND SANCTUARIES THROUGHOUT AUSTRALIA. WE RECENTLY INTERVIEWED BILLABONG ZOO’S OWNER/DIRECTOR, MARK STONE, ABOUT HIS EXPERIENCE WITH BREEDING KOALAS. HERE ARE SOME OF HIS ANSWERS:
The Koala Hospital. The Koala Hospital adjacent to Roto House is the world’s only hospital dedicated solely to the care and preservation of wild koalas. Founded by Jean and Max Starr in 1973, the hospital is entirely self-funded from donations, bequests, adoptions and their shop. It is managed by the charitable organisation, the Koala Conservation Australia, only has eight paid staff, 170 volunteers and hosts one overseas volunteer for one month every month - a position that is in very high demand. Facilities include a treatment clinic, eight internal intensive care units, six outdoor intensive care units and 30 rehabilitation yards. There are a small number of non releasable koala patients who are permanent residents (nine in total) that are available for the public to see. The Koala Hospital is a research institution that collaborates and works with a number of universities and other institutions. Up until about five years ago, this unique Hospital would treat up to 200-250 sick and/or injured koalas each year, and successfully rehabilitate and return about 60-70% of their admissions to the wild. Koalas are admitted from all over NSW. This year the number of koalas admitted to the Koala Hospital has reduced because of the decline of koalas in this region. How can we help the koala population? We need to ensure their genetic diversity is conserved by protecting their habitat, reducing vehicle strikes, dog attacks and disease - this is fundamental to their population health. Primary reasons for admission to care are being hit by cars, dog attacks and the bacterial infection Chlamydia which causes urogenital disease (commonly called wet bottom) and ocular (conjunctivitis). Other reasons include bushfires and issues that occur due to loss of habitat. How are the admitted Koalas named? Usually by the person who found them and the location in which they were found. Of the 900 species of eucalypt trees that grow in Australia, approximately only 60 of them across Australia are ‘food trees’ so koalas’ habitat is determined by the availability of these trees. Australian Music legend John Williamson is also passionate about saving koalas. John has been a patron of the Koala Conservation Australia ever since he met one of their founders, the late Jean Starr, in the early eighties. During a visit to the Koala Hospital, he witnessed an emergency rescue call come in. The entire experience was so impressive for John that it inspired him to write the song “Good Bye Blinky Bill”, which became enormously popular throughout Australia. He very generously donated the proceeds (Continued on page 8)
How long have you been breeding Koalas? For more than 30 years now my passion for Koalas has grown and grown. When I first received koalas from another wildlife sanctuary (nearly 40 years ago) I was working for my parents who owned and operated their own wildlife park in Nowra NSW. Once the Koalas arrived my fascination grew and grew and it wasn’t long then I looked to breed these amazing and unique animals. Why start the breeding program? Shortly after getting the Koalas, (and I had done a lot of training prior to their arrival), the next obvious hurdle was to successfully and consistently breed them. Back in those days there wasn’t a lot of information readily available out there on Koalas, there were a lot of people trying different things and they too were looking for solid and reliable information on them. It seemed every time I came across or close to the answer on Koalas I was looking for, I had even more questions! I desperately wanted to understand how to care and look after Koalas at the highest possible level so as to have the best chance of breeding them, and some day be able to help other institutions with their breeding programs and maybe even help our wild population. Why is the program important? We know more and more now how endangered the Koala has become. Without our knowledge of breeding and husbandry ideas and the requirements that are so important to Koalas, how will we protect them in the wild? Our knowledge gained from captive Koala colonies can be used to work with and help wild Koala populations. We know what Koalas need to survive, what their limitations are and what they need for protection in the wild. Our captive population of Koalas at Billabong not only give us Knowledge and better understanding, we believe they are ambassadors for their species, helping us in so many ways to help Koalas in the wild. We are able to educate the public about the plight of these beautiful animals in the wild, and what we need to do to ensure their survival, obviously Koala breeding is so important to their survival. If we remove certain elements then they won’t breed and therefore the species is doomed before we even start. There is no point in protecting an area if we don’t know that within that area the animals are going to be safe, secure and able to reproduce. What is the difference between the Koalas you breed and wild Koalas? Obviously in captivity, the problems that exist in the wild for Koalas, the battles they face, whether it’s dog attacks, cars, or loss of habitat, are removed. So we can significantly increase both the lifespan of the Koala and the breeding potential of that animal in captivity. We work within a program and look forward to a situation where we could potentially one day breed animals in captivity that are specifically bred for release. This means that those animals would have very little contact with humans or dogs and any other household situations so that they wouldn’t become complacent and would therefore have a greater success of being released back into the wild. Refer to page 11 and 12 for more information about Billabong Zoo.

Hello Koalas Sculpture Trail. “Hello Koalas Sculpture Trail is a World First”, says UK public art expert, Elaine Burke. “There is simply no other sculpture trail in the world quite like it and the only one dedicated to koalas!” Margret Meagher, Founder, Hello Koalas Sculpture Trail tells her story:
When we started planning the Trail, we aimed to create 50 one metre high fibreglass sculptures but Hello Koalas is an infectious project and we now have 75 sculptures to share with our community and visitors to our region. And more are on their way in local artists’ studios.
(Continued from page 7) from his song to the Koala Conservation Australia. John raised a considerable amount of money that enabled the Koala Hospital to build a new “John Williamson Wing” which houses their intensive care unit. Visitors to the Koala Hospital can view the clinic through a large window and see the koalas being treated. You can also observe the care and feeding of the koalas, however the koalas in recovery are behind screens. The hospital has a "koalaseum" which is a unique museum outlining the history of the cause of decline of koalas in Australia, information on their biology, reasons for admissions to care, research etc. There is a microscope and hands on items for visitors to look at as well. Did you know that 100,000 tourists visit the The Koala Hospital in Port Macquarie hospital each year? The Koala Hospital is open daily from 8am until 4.30pm with feeding times at 8am and 3pm. Free guided tours are conducted at 3pm daily where the koalas will be fed and the volunteer will explain how the koalas came into their care. Admission is free and donations are welcome - you can even adopt a koala! Located at Lord St and Roto Place, Port Macquarie, 6584 1522, koalahospital.org.au

Sometimes our Hello Koalas sculptures go on Tour so not all are available to see when people visit but there are always 50 koalas on view. We keep people aware of their movements on our website – www.hellokoalas.com and we have a 24/7 Hotline so people can email (info@hellokoalas.com), text or phone us with their queries (0416 641 482).
I thought of the idea for a sculpture trail in Port Macquarie in 2011, after moving from Sydney, following a lifetime working in tourism and the arts. The Sydney Opera House and Art Gallery of NSW were my second homes in those days. Now life has come full circle as I look after a public art trail in my regional hometown and take my Hello Koalas to Sydney for a travelling exhibition in the Royal Botanic Garden (October/November 2019). Other tour exhibitions are planned in Canberra, Victoria, Queensland and regional NSW in 2020/2021. And we have consistently won business and tourism awards since 2015 including the 2019 Regional Business Award for Excellence in Innovation and Gold for Cultural Tourism in the NSW Regional Tourism Awards. We estimate that over 1 million people a year engage with our Hello Koalas sculptures in Port Macquarie – hugging them, smiling at them, taking selfies and family photos with them and talking about them on facebook, Instagram and TripAdvisor (#hellokoalas, @hellokoalas). TripAdvisor ranks Hello Koalas Sculpture Trail #3 of 44 Things to Do (after the Coastal Walk and Koala Hospital) and #1 Landmark in Port Macquarie. This social media coverage reinforces that the Hello Koalas sculptures are such wondrous little characters, designed by hugely talented Australian artists. And the sculptures love receiving the attention! In fact, many people who see our Hello Koalas see them as loveable personalities and it is not unusual to find small children feeding them fallen gum leaves for lunch. Fortunately for Port Macquarie we have lots of real koalas too and plenty of gum trees.
For our annual Hello Koalas Festival over the June Long Weekend, we gather all our 75 sculptures for display in Port Macquarie so people have a guaranteed opportunity to see every sculpture on the Hello Koalas Sculpture Trail once a year (www.hellokoalas.com/gallery). A Festival highlight is the 2 day Hello Koalas Treasure Hunt and this year it will be held over Saturday and Sunday (7 and 8 June 2020). Discover 20 specially selected Hello Koalas and post your favourites on social media. It’s free to enter and everyone who completes the Treasure Hunt is awarded a Certificate of Achievement. Simply register online to participate (www.hellokoalas.com/festival). One of our aims with the Hello Koalas Sculpture Trail is to promote koala preservation. We want to protect koalas from road accidents, inquisitive dogs in backyards, loss of habitat through urbanisation and drought, and diseases like chlamydia. Another event we have created for our annual Hello Koalas Festival is “Cars for Koalas Show and Shine”, a display of classic and vintage cars at the Foreshore Markets, Westport Park, on the Saturday of the June Long Weekend - this year 7 June. Trophies are sponsored by Shannons Insurance. We hope to remind people to slow down when driving in areas where koalas live in our town and raise funds for our acclaimed Koala Hospital in Port Macquarie where people can see 4 Hello Koalas sculptures – all ambassadors for koala conservation. And there is a special display of Hello Koalas sculptures and Hello Koalas memorabilia, including colouring books, magnets and T towels at these popular Markets too. Pick up a FREE Hello Koalas Sculpture Trail Guide at the Glasshouse, hotels and attractions around town and or download a pdf of the Guide from www.hellokoalas.com. While many visitors aim to see all the koalas, people in town for a short time can still enjoy the Trail, with around 10 sculptures located right in the heart of town and a further 20 sculptures a short drive away, in places like Sea Acres Rainforest Centre, where you can also see a great selection of Hello Koalas memorabilia and gifts. Or visit our Hello Koalas online shop for year-round shopping from home (www.hellokoalas.com/shop).

Our Beaches. For surfing, the best spots are Town, Flynns, Lighthouse, Rainbow and North Haven beaches. The Breakwall at Town Beach works best with swell from the south through to the north-east. The Middle has some powerful lefts and is for the experienced surfer only, while Flagstaff is the protected southern headland of Town Beach. At Flynns Beach, waves can be found with swells from the south to east with offshore north-west winds through to south-east winds. Lighthouse Beach has a protected northern corner that handles north to north-east swell.
BEACH GUIDE P O R T M AC Q UA R I E
Further south, Cathie is an open beach, which can offer powerful waves with south to east swell. Rainbow Beach is a protected southern headland with a right point break and beach breaks. Grants Headland picks up the smallest of swells and is best in the north-east swell with west to north-east winds. North Haven (Grants Beach) offers beach breaks with the best waves south to east swell, and works best with west to south-east winds. The bar can hand out some large waves but tidal flow from the river affects the wave quality. (With thanks to Port Macquarie Surf School for surfing information). Port Macquarie Surf School Learning to surf is fun and easy, especially at the multi award winning Port Macquarie Surf School where they have lessons daily. All coaches are fully accredited, licensed and insured with Surfing Australia. You will learn surf safety and awareness as well as how to catch a wave. They cater for all ages and abilities from beginners through to advanced. Port Macquarie Surf School is Council approved and a licensed Surfing Australia Surf School. If you are looking for calmer waters and a great place to take the little ones, there are couple of options to choose from - all of which require parent supervision. With its rocky outcrop, Shelly Beach creates a somewhat protected lagoon and is ideal for the littlies. Other good areas for kids include Settlement Point, Lake Cathie lagoon (when open to the ocean) and Pilot Beach in Dunbogan. Town Beach is also good with a long break and plenty of rock pools towards the point for the kids to explore. Beach fishing is very
popular with locals and tourists alike. Rocky Beach, Lighthouse Beach, Rainbow Beach and Grants Beach are all popular spots. If you want somewhere to get your 4WD dirty, try North Beach, Lighthouse Beach, Rainbow Beach, Grants Beach or Dunbogan Beach – all of which have a 4WD entrance. A licence is required for recreational fishing (service.nsw. gov.au) and you also require a permit to drive on the approved 4WD beaches. Facilities include picnic tables, BBQs, a playground, lots of parking and a nearby cafe. You can even take the short ferry ride over to the North Shore from here. Dolphins are frequently spotted along the shore as they frolic in the shallows of the river. Be sure to look out for them! Map ref H3 Tacking Point Named by Matthew Flinders in July 1802. The lighthouse is the third oldest in the country and has recently been restored. It was built in 1879 to warn ships of the rocks near the shore and was converted to automatic operation in 1919. Apart from the interest of the lighthouse itself, Tacking Point with its elevation above the surrounding coastline offers superb views to both the north and the south – in October and November be sure to look out for whales. The Hinterland is a truly spectacular sight and is popular with bush walkers, four-wheel drive enthusiasts or those just keen to explore. Take time to discover this region with a day trip or two. Perhaps stay overnight in one of the many cottages or B&B’s scattered along the way. We have outlined some trails you may like to try, or you may prefer to make up your own, but whatever you do don’t miss this vast area of natural beauty. Bellrowan Valley Horseriding has some wonderful trails if you want to take in the breathtaking views on horseback – located in Beechwood, just north of Wauchope. Comboyne A tranquil place of rolling green pastures, forests, streams and waterfalls located about a 1 hour drive from Port Macquarie. Here you’ll find the Boorganna Nature Reserve, a large remnant of the forest that once covered the whole plateau. There is a fantastic 2.7km walking track that starts at the

picnic area where you can see many differing bird species and lush rainforest plants. Allow a few hours for this. While in Comboyne, you must drive a further 25kms to visit Ellenborough Falls in the Manning Valley - a truly amazing sight as water plunges into a gorge 200m below. There is a viewing platform and a timber walkway for those who would like to walk to the bottom of the falls. Whilst the road is mostly unsealed, it is definitely worth the trip (allow around 45 minutes for the drive from Comboyne). They have two walks, one 500m to the lower falls, and another 700m to the knoll plus there is a Kiosk and picnic facilities which makes it a great lunchtime stop. Lorne and Kendall Whilst part of the Camden Haven, these two small towns also form part of the Hinterland. Kendall ‘The Poets Village’ - is a quiet village with a population of 250 people located just off the Pacific Highway, at Kew. Its vibrancy, diversity and charm fuel Kendall’s community spirit and have earned it a reputation as a great place to live and visit. Named after the Australian poet Henry Kendall, it is a growing community, with its famous golf course, craft and antique stores as well as numerous other tourist attractions. Miss Nellie's Café Life is short - Lick the Spoon! Better still, head to Miss Nellie's Café for a homemade treat and see why this hip, hinterland cafe is one of the most popular hidden treasures of the Hastings! Nestled in the village of Kendall, where the beaches meet the lush scenic valleys of the Camden Haven, Miss Nellie’s is a modern-yet-classic haven for all. Defying the country cafe trend, the decor and vibe is modern with a retro twist, and guests are greeted with a friendly smile and welcoming atmosphere. Enjoy a relaxing coffee, homemade cake or Devonshire tea with Miss Nellie’s jam, or bring family and friends to indulge in the freshly prepared light meal menu (including a generous Gluten- free offering) using the best of the Hastings’ local produce. Lake Cathie + Bonny Hills.
Lake Cathie (Pronounced cat-eye) – Located midway between Port Macquarie and Laurieton, Lake Cathie (when open to the ocean) is centered on a large toddler-friendly saltwater lake and is perfect for young families. With fishing and swimming, picnic tables, BBQ facilities and a playground, it is an ideal spot to spend a day. Cathie Beach adjoins the Lake and is a popular swimming beach. There is also a wonderful walking track that takes in both the lake and the ocean.
Bonny Hills Garden Centre Stockists of the largest range of plants in the Hastings region. The massive pond water feature sets the scene for a relaxing real life experience of plants, pots, water features, landscape supplies... everything. Upon entering you’ll find spacious, sealed car parking, and wide wheelchair friendly pathways. Bonny Hills South of Lake Cathie, Bonny Hills boasts some of the best coastal views in the region. It is home to the stunning Rainbow Beach, a huge expanse of white sand that goes on forever. The beach is patrolled during summer and has a fantastic picnic and BBQ area with playground equipment. Not only popular for swimming, Rainbow Beach is also an excellent surfing beach for both body boarders and surfers.

Camden Haven.
Camden Haven The collective name given for the communities scattered along the Camden Haven River including Laurieton, North Haven and Dunbogan at the mouth of the river, stretching to Kew, Kendall, Lorne and Comboyne further inland. With cafes and shopping combined with local charm, the Camden Haven is a wonderful place for a day or a week. It is all about water activities and the lake and river provide plenty of opportunity for fishing, boating and walking along the foreshores. Enjoy the peace and quiet on this magnificent river or grab your fishing rod and throw a line in, you’ll certainly attract the attention of some quizzical pelicans!
Laurieton, North Haven and Dunbogan North Brother Mountain overlooks Laurieton, North Haven and Dunbogan. At the summit (490 metres), in Dooragan National Park, is the North Brother Lookout (accessible via sealed roads), which is not to be missed, offering a superb view over the coastline, the lakes and the mouth of the Camden Haven River. It is one of Australia’s most impressive coastal panoramas. The area is characterised by large stands of rainforest which are rich in native fauna and flora.Take a picnic as they have excellent facilities. Three walks of varying length and difficulty are available if you are feeling energetic. The mountain supports a wide range of vegetation communities, including some of the best examples of old growth blackbutt forest in NSW and pockets of sub-tropical rainforest that provide habitat for gliders, bats and koalas. Laurieton Residential Resort IT HAS been a busy five years for the team at the Laurieton Residential Resort. Since 2014, the team has built one of the best residential resorts in NSW. Not only have they won a clutch of awards, but they've also been setting a new bench-mark for quality and style for over 55's living. With all that's available at the Resort, it's not hard to see why the community is thriving. There are two pools, indoor and out, bowls greens and barbeque and picnic areas that are perfect for when the grandkids visit. For a social evening, you can head to the clubhouse for a resident-led event or catch a movie in the plush theatre room. Now the project is nearing completion, only a few new homes are remaining, including the most spacious models - the Hastings and the Hunter. These homes have designer colour selections, a quality stone kitchen with ample storage, upgraded flooring, upgraded bathroom selections and a turnkey landscaped garden.

Camden Haven. North Haven Takeaway & Café A great spot to stop and grab a bite to eat or enjoy a nice cup of Holy Goat coffee. With a park and picnic area opposite and the waterfront nearby, this surf themed cafe offers a great choice of burgers, fresh beer battered fish and chips, homemade hand cut scallops, fresh sandwiches and wraps. Cool down with a mouth watering scoop of ice cream - 24 flavours to choose from - and pick up a loaf of bread and some milk. Open 7 days from 8am until late and extended hours during the holiday periods.
Take the road from Laurieton and head south and you will enter the northern section of Crowdy Bay National Park. This area of parkland was first sighted by Captain Cook in 1770. He saw Aborigines standing on what is now known as Diamond Head and named the promontory Indian Head. In more recent times a man named Ernie Metcalf lived on the headland. He was the subject of ‘The Man on the Headland’ written by Kylie Tennant. He built a hut for Tennant who subsequently gifted it to the park. It was restored in 1980 and is now one of the park’s attractions. Diamond Head itself is quite striking. It rises 113 metres and is edged by the wetlands and heathlands of the coastal plain. The park is ideal for bushwalking, birdwatching, fishing (from the rock platforms you can catch groper, bream, tailor and drummer) and swimming.

Burkhardt's Organic The Source of Flour

Where does your flour come from? When was the last time you asked your baker where their flour comes from? Why does it matter? While we, as consumers, are developing a greater interest in the origin of our meat, seafood or vegetables, it’s the bread we eat that is sometimes not considered. Bread for many of us is a daily item. How much does the freshness of the flour, the way it’s processed or the variety of the wheat really matter? It matters a bunch! It was Michael Burkhardt, who is the owner and baker at Burkhardt’s Organic, who began to enlighten me on what it is we are consuming, which
for many of us, is done without much thought. We took it a step further and Michael invited me out to the Mill itself where all his flour is sourced for his bakery in Port Macquarie. If we were attempting to meet the miller or farmer, in most cases we’d probably end up having to visit 10 to 15 silos located all over the country, or perhaps not even in the same country, and that’s if we could trace it at all! This is because flour, on mass scales, is collected, mixed and refined for maximum yield. The difference with using his single origin, single variety flour is that it is not only easy to trace back to the farmer, but the farmer and the miller are located right here in NSW. We
only had to travel to one location in Tamworth, about 3 hours away from Port Macquarie, to meet with Kevin Sherrie who is the Miller at FPM Cereal Milling, and John Campbell who is the wholesaler and founder of Provenance Flour and Malt. It seemed to me that Kevin and John share a passion. It’s their unique process and the attention to retaining maximum flavour and nutrition from the wheat that makes this flour far superior when compared to what is often called a fair average quality grain. Not only that, but their supply circle offers their bakers the best quality flour, is respectful and sustainable to the environment and supportive of
the local community. So we as consumers get the benefit of the exceptional flavour of the bread, and also bread that has not been stripped of the nutrients, or tampered with in the milling process to stretch it out for better yield. FPM Cereal Milling uses unique artisan cold milling technology that maximises the flour’s nutrient bioavailability. So where can you sample some of this top quality and healthy bread? Burkhardt's Organic is located on Short Street in Port Macquarie and the friendly people there are always ready to help. Ask for Michael and he’ll no doubt love to tell you more about why he’s using the flour he uses.
