FROM THE DESK OF THE PRESIDENT Happy Holidays to our wonderful owners, members and valued guests! I hope you have a safe and pleasant holiday season and a happy New Year with your loved ones. We’re ready to kick off 2020, but first, let’s look back on all we achieved in 2019. I’m blown away by how far we’ve come since last year with the countless upgrades and enhancements we’ve made to so many of our resorts. Hearing all of your wonderful comments, helpful suggestions and overwhelmingly positive feedback when visiting the islands, and on TripAdvisor and social media has been so rewarding and it’s definitely the best holiday gift of all! Most notably, one of our biggest changes toward the end of 2019 was beginning renovations on our studio units at Divi Flamingo Beach Resort & Casino on Bonaire. We’re completely gutting and remodeling these popular rooms from top to bottom with new appliances, furnishings, electronics, bathrooms and so much more! We’ve also updated the outside of our studio buildings with a more modern look. Along with our continued renovations on Bonaire, we are also making great progress toward reopening Divi Carina Bay All-Inclusive Beach Resort & Casino on St. Croix in 2020. Ever since Hurricane Maria took its toll, Divi Carina Bay has been under construction, getting a complete resort-wide renovation with new restaurants and bars, fun activities, fresh room fixtures and furnishings, an upgraded pool deck with new pool and beach furniture and more. For an idea of what’s to come, check out a sneak peek on page 8. I’m often asked about how our guests stay fit while on vacation at Divi Resorts and I’m always proud to share that we offer a plethora of wellness activities, including yoga, water aerobics, beach walks and more, as well as relaxing spa treatments and fitness centers with the latest gym equipment so you can maintain your health goals and

have fun while doing it. On page 10, you’ll find some great activities to help you stay fit the Divi way! For the most upto-date activities schedule, please stop by the Concierge or Front Desk. In addition to the many activities we offer to keep you fit, I’m also proud to share that we provide a wide variety of delicious options for all diets at our resorts. We know that fresh and healthy alternatives on vacation, including vegetarian, vegan and gluten-free options are a top priority for many of you, and we’re happy to accommodate your cravings and dietary needs. For a few healthy-living ideas and tasty recipes that you can make at home from our top chefs, turn to pages 11-13. In late 2019, we had to say goodbye to our beloved Divi Aruba Phoenix Beach Resort General Manager, Mr. Gerrit Griffith, who retired after 43 amazing years with Divi Resorts. It was truly a milestone event in our history, and to honor his legacy, we’re sharing photos from his retirement party with our loyal owners, members and guests who cherished him most. Out of all of the Caribbean islands, President’s Elite Members Vicki and Metro Jones say Aruba is by far their favorite. We sat down with the couple hailing from Philadelphia to find out more about their decision to become part of the Divi Vacation Club.

Warm weather, friendly faces and fun times – these are just a few of the many reasons Metro and Vicki visit the beautiful island of Aruba year after year. Whether it’s at Divi Village Golf & Beach Resort or Divi Aruba Phoenix Beach Resort, the couple says staying at Divi Resorts and being part of the Divi Vacation Club is what makes their vacations so special. Together for 26 years and married for 16, the two recently renewed their vows on Eagle Beach during the Caribbean’s largest vow renewal ceremony. “It was wonderful – something different and so exciting,” said Vicki. “There were easily more than 300 people and we were given champagne, tokens of appreciation, hors d’oeuvres and tons of pictures. It was really nice.” It’s this type of excitement and community engagement that originally attracted the couple to Aruba. “Back in the 90s, my sister and I came here for four days but it wasn’t enough time to see all that Aruba has to offer,” said Vicki. “So when my husband and I got married and he asked me where I wanted to go, I told him here.” Vicki explained that once her husband saw how great Divi was, they immediately started purchasing timeshares, and had been upgrading ever since. Throughout the years of

ownership, their needs changed and they realized that more flexibility and services were important to them. “We wanted to update our reservations to be during the same time our family visits and we wanted the flexibility of a larger unit whenever we needed one, so upgrading to the Divi Vacation Club as President’s Elite Members checked off all those boxes, and just made great sense for us,” said Metro. “We get to check in early, we can always come midweek if we want to, we can ask for a smaller or larger unit depending on our needs, and there’s always treats in the room when we arrive. Plus, we were offered a great deal!”

The couple has built lifelong friendships with staff members at Divi and locals on the island, hosting gettogethers every Sunday, and challenging friends to competitive games of putt-putt golf. “Over the past 16 years, we’ve made great friends on the island, and since our unit has a private deck, hot tub and BBQ grill, it’s the perfect spot to enjoy each other’s company during our Sunday parties,” Metro added. “We just love the whole Divi Vacation Club package and we plan on enjoying it for many years to come.” 5

STAY HEALTHY THE DIVI WAY

At Divi Resorts, and we truly pride ourselves on being your healthy escape in the Caribbean, using only the freshest ingredients to create tasty yet wholesome dishes the whole family will love. We recently caught up with Windows on Aruba’s Executive Chef Darwin Torres, to learn more about how he and other Divi Resorts chefs ensure nutritious options are always available. “We are committed to making healthy eating easy for guests at Divi Resorts,” said Torres. “I’ve done a great deal of research on nutritious eating and cooking habits, and with that knowledge, I’ve developed delicious recipes that are actually good for you. The key is to surround yourself with wholesome products that are full of flavor.” Torres says using assorted fruits, spices, vinegars, marinades, mustards, herbs, exotic roots and grains in his recipes helps “kick it up a notch’’ without adding unnecessary calories or fat. Cooking with “good” oils like olive, canola, avocado and safflower also helps to keep his dishes nutritious.

For his low-carb recipes, Torres swaps out white rice and other empty carbohydrates with whole grains and legumes to keep blood sugar levels stable. “Changing the way you cook your food also makes a difference,” Torres added. “We roast instead of fry, and grill for flavor using low-fat or no-fat sauces and dressings.” Torres’ healthy selections include his savory Grilled Salmon, exotic Stir-Fry Vegetables, mouthwatering ratatouille-style Vegetable Casserole and many gluten-free and vegan items, among others. “We think you should leave every meal feeling refreshed, reinvigorated and full of energy,” said Torres. “It’s never too late to fulfill your New Year’s resolution to eat healthier, and we’re here to help satisfy your appetite with tasty island cuisine that packs a healthy punch!”

PASSION FRUIT DRESSING Directions:

Ingredients:

12 oz. tuna loin 1 passion fruit cup extra virgin olive oil 1 avocado 1 bunch mixed greens 1 red onion Handful of capers Handful of pickles Fruit salad (optional)

1. Over medium heat, reduce

passion fruit juice by 2/3 and let cool.

2. Chill passion fruit juice

and extra virgin olive oil separately in the refrigerator until cold.

3. Once cold, add the juice to

a blender and slowly mix in the cold olive oil and salt and pepper to taste.

4. Store in the refrigerator until

ready to use.

TARTAR MIX Directions: 1. Finely chop equal amounts

of capers, pickles and red onions.

2. Combine and store in the

fridge until cold.

3. Finely chop tuna loin and

dress with passion fruit dressing. Add salt and pepper to taste.

4. Add the cooled mix of

capers, pickles and onions.

5. Slice avocado into small

chunks and plate on top of the chopped tuna.

6. Top dish with fruit salad.

Ingredients:

1 breadfruit

3 cans tuna – drained and flaked

1 medium onion

1 can diced tomatoes

1 garlic head – half minced & half whole cloves

1 bell pepper – chopped medium onion – diced

2 tbsp. fresh thyme 2 tbsp. fresh marjoram or oregano 3 sprigs fresh chives cup butter (for a healthier option, use coconut oil) 1 tbsp. salt

1 tbsp. pepper Directions: 1. Wash the breadfruit. If you

have an open flame stove top, place the breadfruit directly on the flame and roast. Continuously turn until all sides of the breadfruit are charred.

2. Preheat the oven to 350°F.

Wrap the roasted breadfruit and the whole cloves of garlic in foil and place in the oven for 40-60 minutes.

3. Remove, unwrap and let cool. 4. When cool enough to handle

carefully cut the breadfruit. Beware of the ash on the outer layer. Remove all of the meat from the breadfruit, roughly chop and set aside.

5. In a medium frying pan,

sauté chopped onions, garlic, thyme and marjoram in butter (or coconut oil) for 2 minutes.

2. Add tuna and herbs. Sauté

for another minute.

3. Stir in tomatoes and

gradually add broth while stirring constantly.

4. Season with sugar, salt and

pepper. Bring to a boil and then lower to a simmer.

5. Continue to cook and stir

until the creole reduces to a thick gravy.

6. Ladle the creole tuna over

the roasted breadfruit and enjoy your dish!

6. Add the chopped breadfruit

and stir until it’s fully incorporated. Season to taste with salt and pepper.

7. Finally, add chives and sauté

for 1 minute.

8. Serve hot. You can use the

shell of the breadfruit as the dish for a unique, island look.

FINAL FAREWELL TO MR. GERRIT GRIFFITH After 43 years of incredible service to Divi Resorts, Mr. Gerrit Griffith took his final bow as General Manager of Divi Aruba Phoenix Beach Resort. Friends, family, coworkers, loved ones and local dignitaries gathered to celebrate this one-of-a-kind gentleman, who stole the hearts of our loyal owners, members and guests. He will truly be missed by all and we wish him the very best in his retirement!

CARNIVAL TIME! Carnival is hands down one of the most exciting and colorful times of the year in the Caribbean! The vibrant costumes and lively spirit of the Caribbean fills the streets and continues for several weeks with plenty of parades, upbeat music, costume contests and celebratory food and drink. On Aruba and Bonaire, Carnival typically takes place right before Lent, giving locals one last hurrah before a traditional time of sacrifice, similar to the well-known Mardi Gras celebration in New Orleans. Here’s a brief tour through the festivities you’ll see this January and February on Aruba and Bonaire.

ARUBA Carnival is celebrated throughout January and February with “jump ups”, which are fabulous street parties with parades, live music, Carnival Queen elections and other friendly competitions. Plus, the Lighting Parade in downtown Oranjestad is not to be missed! BONAIRE Carnival, or Karnaval, as it’s often called on Bonaire, is a must-see event and a spectacle to behold on this island. Celebrations begin early in the year with Tumba music festivals in either Kralendijk or Rincon. Tumba is an Africaninfluenced type of music with hints of merengue and Latin jazz that originated on the ABC islands of Aruba, Bonaire and Curaçao. Local Tumba musicians compete for the opportunity to play in parades throughout the season. “Jump-ins,” similar to Aruba’s “jump ups,” also happen frequently. Jump-ins move spontaneously from place to place and overflow on the streets of Bonaire’s major towns with an explosion of music, dancing, eating and drinking. Tourists and locals alike we welcomed to take part in jumpins, so don’t forget to wear your dancing shoes! Grand Karnaval Parades are held in Kralendijk and Rincon shortly before the beginning of Lent. Participants in vibrant sequined costumes march and dance through the streets to the rhythm of joyful Tumba music. It’s an awe-inspiring expression of Bonaire’s dazzling culture. The pinnacle of Carnival season happens during the Grand Parades in Oranjestad and San Nicolas. Participants take over their respective cities decked out in glitter, feathers, sequins and elaborate headdresses and dance down the parade routes accompanied by colorful floats and upbeat music. Hundreds of spectators enjoy the show-stopping pageantry during this spirited tradition, which is now in its 66th year! The fun ends with the burning of King Momo, an event that marks the end of Carnival Season for the year.
