of 2021 – 2022. We are constantly looking out for new developments and incorporate the same in our profile. We are very confident that this will only lead to further success to what we are doing to serve the nation.
Do you think the government has taken enough measures and initiatives for the food processing industry? What more can be done for this industry?
Alliance has only included those additives which are standardized, safe and allowed for consumption by FSSAI, along with the education of the correct dosage. We believe that the quality of the food should be equivalent to the health of the people. Either of them cannot and should not be compromised at any level.
FSSAI has laid down many stringent food safety norms for the Indian food Government is repeatedly taking processors. Do you think our several measures and initiatives to products have met global fulfil the needs of the people and to standards now? prevent the illegitimate activities which lead to huge abrasions in the system. But some major aspects like availability and affordability is something we, as a company, feel should be highlighted based on the diversity of the Indian population. Apart from that, there is a lot of misinformation regarding the use of chemical additives in food. We would like to clear the fact that chemical additives not only helps to increase the shelf life of the food product but also contributes in reducing the wastage of food which is the most critical issue that is facing in this modern world.
FSSAI has laid down many rules and regulations based on the climatic and geographic conditions of our country, hence there is no comparison with the FSSAI standards to that of global standards. There are certain prospects that might lead to consumption of locally grown or manufactured products in various countries abroad, that can be regulated accordingly while production but what we as a company feel that the preference and consumability of the Indian market is considered while setting out different safety norms by FSSAI. n

Whether companies sell crackers, candy bars, beer, or meat, they are always looking for fresh ways to grab the attention of busy shoppers with evolving behaviours. Unless a brand is already a household name, this can be a challenge. That’s why, in most cases, it makes sense to turn to a food and beverage marketing company with the experience and know-how to target specific segments of consumers with data-driven, professional marketing strategies. With billion-dollar markets and millions of products, food and beverage marketing requirements differ from big brands versus microbrands. Generating new business takes a through understanding of the consumer or business customer, along with careful management and balance of marketing campaigns.

GDP and employment growth after IT sector. The hospitality business is likely to bounce back to pre Covid-19 levels. Government’s support is crucial in speeding up return to normalcy of the hospitality industry at a fast pace. Keeping in mind of the economic survey report the hospitality sector is eventually finding its place in the industry.

DUPONT LAUNCHES NEW LINE OF INGREDIENTS ‘VIRSLIK’ ADDING TASTE TO YOGURTS
D
uPont has launched a new line of ingredients under the name ‘Virslik’, a processing aid that delivers a ‘desirable texture’ and ‘clean taste’. With new flavours and textures becoming available to yoghurts in the near future thanks to these ingredient innovations, this segment could be a stand-out success in the dairy market in the coming years, especially seeing as plant-based alternatives blocking the growth of dairy-based milk and cheese. DuPont claims that the Virslik line is particularly versatile in the yoghurt segment. With a successful launch, this line of ingredients could be key in promoting raising the average protein content of healthy yoghurts and similarly, raise standards for product development. According to GlobalData’s survey conducted last month, a sizeable 57% of consumers have been adapting their shopping behavior with regards to buying yoghurt since the Covid-19 outbreak. This means that the US makes for a perfect testbed to ensure that the improvements were seen in the mouthfeel and taste that the new ingredients create a line-up with what consumers are looking for in the new normal.
Moreover, the consumer is buying more yoghurt since the pandemic struck, rather than less yogurt3. This substantial increase makes it a perfect location to test new yoghurt ingredients since the uptake will relate more specifically to emerging consumer trends that are being witnessed across the world. DuPont is looking to outscore its rivals with their own Virslik bringing a yoghurt’s total protein content up to
14%, rather than the typical 9-10% that we see in yoghurts today. With high protein content currently a hot topic, this will help the ingredient outcompete ProMilk in attracting brands that appeal to consumers who are concerned about their wellbeing and keep up with the latest health trends. Versilk is the latest in a suite of solutions comprising enzymes, cultures, proteins, and functional solutions. Aside from the basis of
nutrition and taste, DuPont’s product also aims to help brands become more agile, owing to Verslik’s versatility as a component that helps manufacturers quickly respond to market trends. Recently, yoghurt has been acting as a ‘go-to’ product for consumers reacting to the lifestyle pressures initiated by the spread of Covid-19. Many consumers are buying nutritious food like yoghurt to enjoy as a light meal or snack, as opposed to something more indulgentn

IF FOOD AND BEVERAGE MATRIX BENEFITS TO US WE WILL SURELY BECOME AN FREQUENT ADVERTISER-----------BY ANIKET NANAJKAR more can be done for this industry? India’s food processing sector is one of the largest in the world and its output is expected to reach $ 535 Bn by 2025-26. It lies at the heart of the Government of India’s Make in India initiative and resonates with Prime Minister Modi’s call for ‘vocal for local’.
Aniket Nanajkar, M.D-Technofour Electronics Pvt Ltd
How has the food processing industry grown in the past decade? India’s food processing sector is one of the largest in the world and its output is expected to reach $ 535 Bn by 2025-26. It lies at the heart of the Government of India’s Make in India initiative. With India moving from a position of scarcity to surplus in terms of food production, the opportunities for increasing food processing levels are innumerable. India’s food processing sector, in recent years, has been known for its high-growth and high-profits, thus, increasing its contribution to the world food trade every year. Currently, India is processing less than 10 %¹ of its agricultural output, thus, presenting immense opportunities for increasing these processing levels and leading to investments in this sector. With agriculture and its allied sectors being the largest source of livelihoods in India, 70 % of its rural households still depend primarily on agriculture for their livelihood. Thus, this sector provides a huge employment generation potential as well. The food processing sector has been acknowledged as a high priority industry by the government of India and is currently being promoted with various fiscal reliefs and incentives.(The numbers given in above paragraph are referred from government of India publication )
Tell me about your company’s growth from its inception. Technofour Electronics Pvt Ltd is the first company who developed and manufactured India’s first Industrial Metal Detector in 1982. We have great learning in last 38 years in terms of customer expectations, challenges and safety demands. We always look for improvement in our system

Presently we are having installation base in 40 countries in the world and having our own sales partner in many countries. We carry very co-ordeal relationship with our sales partner across globe, some of our global sales partners have been working with us for last 20 years. We are having major market share in India and increasing year on year on global level. We have observed 20% CAGR in last 20 years.
New initiatives like a planned infrastructure spend of around INR 100 lakh crore (around $1 Trn) and INR 25 lakh crore to boost the rural economy have put the food processing sector on a high growth trajectory. The Pradhan Mantri Kisan Sampada Yojna, for example, is a comprehensive package which shall create modern infrastructure with efficient supply chain management from farm to retail outlet. More recently, boosting Prime Minister Modi’s Atmanirbhar Bharat vision, the scheme of Formalization of Micro Food Processing Enterprises (FME) is being rolled out. Buoyed by such actions, India’s food sector will definitely attract big FDI in coming years. .(The numbers given in above paragraph are referred from government of India publication )

How has the food processing industry grown in the past decade? India being an agriculture abundant country, food processing sector is one of the largest sectors in India. We have seen this industry grow. Consumer preferences are changing and evolving with time. Further, with the onset of COVID-19 pandemic, consumers have further started trusting branded items. Earlier the notion of a consumer was that if a
Saraf Foods is the one of the largest freeze drying company in India catering to customers globally. The company initially started with a very small capacity of a single freeze dryer; and over the period of 30 years, the company has grown. We initially used to get IQF of our products done externally, however, now we have finally brought that in-house. We now have the capability to IQF our raw material before freeze drying it. After completing 25 years as a freeze drying company, Saraf Foods has set up a new factory. This involved expansion, diversification and backward integration. The company expanded by adding more freeze drying capacity; diversified by setting up an air drying line and finally did backward integration by setting up our own IQF line.

DOMESTIC FOOD PROCESSORS AGAIN URGE THE FINANCE MINISTRY TO LOWER GST ON PACKAGED SNACKS
T
he All India Food Processors’ Association (AIFPA) represents several large, packaged foods companies such as Haldiram’s, PepsiCo, Marico, Britannia, ITC, Bikanervala, among others; has written to the GST Council to lower tax rates for what it calls commonly used food products such as packaged or branded pickles, chutneys, sauces, fruit drinks, along with branded snack such as namkeens, bhujias, fruit and vegetable chips made of potato and banana. India presently has four GST rates of 5%, 12%, 18% and 28%, apart from a cess on luxury and demerit goods such as automobiles, tobacco, and aerated drinks. Domestic food processors have again requested the finance ministry to lower GST (goods and services tax) rates on packaged snacks such as potato chips, namkeens, and pickles ahead of the GST Council meeting in March. Currently, most of these products attract a GST of 12%. The association has requested the government to consider putting them in the 5% GST slab.
funds for making year-round supplies, the sector needs special hand-holding, the letter added.
The letter comes amid reports that the Centre is considering merging goods and services tax rates of 12% and 18% into a single slab. The companies fear that the creation of a new tax bracket could increase their tax burden and invariably the cost to consumers. AIFPA has written to the council that the branded or packaged snack foods namkeens, bhujias, fruit and vegetable chips made of potato, banana is currently placed in the 12% GST slab, so are ready-to-cook products like instant noodles. These are consumed by people from all segments of society. In the meantime, unbranded snack foods are charged 5% GST and this
creates an irregularity in the sale of processed foods in the country. AIFPA said, “This anomaly has created huge complexities and encouraged the production of unsafe and unhealthy unpackaged food in the market. Contrarily, Covid-19 has shown us a roadmap to encourage the use of safe packaged food and not unpackaged food. In fact, a shift of consumption from branded to unbranded foods reduces revenue to the government and proves counter-productive. Since the stressed economic viability of food processing industry, uncertainties of the crop, unstable farm product prices, and huge blockage of
India’s fast-moving consumer goods are built around high spending on food items. In terms of value, food contributes 57% to FMCG sales, according to market researcher Nielsen. These include staples such as pulses, rice, apart from snacks such as namkeens, cookies, chips, and beverages. The association is also seeking the removal of taxes on cutting, brining, and syruping of fruits and vegetables apart from pulping and crushing of such raw materials. Currently, these steps are charged 5%, 12% GST which is counter-productive to the objective of saving the wastage of fruits and vegetables, the letter said. Industry bodies, as well as companies, have made repeated calls to lower GST on packaged foods. For instance, biscuit makers have sought reduced tax to 5% on lower-priced biscuits or those priced below Rs100 per kg compared with the current 18%n

AUTOMATION ((IMPROVED PRODUCT QUALITY AND PRODUCTIVITY)
he Food industry is continuously trying to match the growth and evolving needs of every consumer. With rapid advancement in technology, people have been able to understand their own needs for diet and nutrition better, which can only be catered to with the development of new technology. With new eating habits and cultural enhancement, eating preferences have changed a lot everywhere in the world. People want to try and experiment with different kinds of food. Hence, automation is of great importance in the food sector. With government programmes like ‘Start up India’, India has not only opened doors for young entrepreneurs, but has also opened its doors for automation. Machine designing with safety has been taken care of greatly. This is the reason why foods like dosa have been automated by bringing in “dosamactic” machine. It is only because of the automation in food industry that serving such large quantities of meals in various schools is made possible. “Roti” making machine is one such example of automation. This technological upgradation has been a boon to the food industry and mankind.
Human civilization has seen machines taking over man. Not only our work has progressed, instead we have become dependent on machines. The impossibilities and odds have been battled. This has proved that automation, when applied in an effective way magnifies efficiency. Automation has always shown the prospects of a better future which is uplifting for man. With the development of electronics and computing, optical sorting has been developed, based on the visual appearance of the product. The need to automate industrial processes is driven by several key requirements for competitive success and in some industries, viability of the manufacturing plants. They can be listed as those needing to improve productivity and product quality.
Improved Productivity Plant productivity may be defined as the quantity of end products manufactured per unit of operating parameters – plant size, number of workers, time of operation, etc. Therefore, productivity is directly related to how efficiently the input resources are utilized in translating them into marketable end products. Automation allows managers to
monitor and have more control over the process. This is possible because automation allows for efficient scheduling of work flow and labor use. The ability to maintain good records and information about past processes can clearly highlight areas that can be targeted for a more efficient allocation of resources. One plant reported a 30 percent increase in plant productivity by using three discrete microprocessorbased controllers designed to perform all continuous loops involving complex, integrated algorithms, valve interlocking, and some sequencing. Similar controls can also be used to optimize formulations, production scheduling, and process modeling.
Improved Product Quality Quality assurance is one of the most important goals of any industry. Ability to manufacture high quality products consistently is the basis for success in the highly competitive food industry. High quality products encourage customer loyalty and result in an expanding market share. Quality assurance methods used in the food industry have traditionally involved human visual inspection. Such methods are tedious, laborious, timeconsuming and inconsistent. As plant
productivity has increased and quality tolerance tightened, it has become necessary for the food industry to employ automatic methods for quality assurance and quality control. In fact, this aspect of food manufacture is one of the areas that has received the most attention in terms of automation. Thanks to advances in computer vision technology, substantial changes have been implemented in food plants to facilitate automatic food quality evaluation. One of the most stubborn obstacles in the automation of food manufacturing is the biological variation in size, shape and homogeneity of the raw materials. Some materials (e.g., dairy) lend themselves readily to automatic processing because the raw material can be handled in bulk. Hence, automation needs to be actively persued if the food industry does not want to lag behindn

ADVANCED DIGITAL INSPECTION SORTERS FOR GREEN BEANS
ey Technology introduces the VERYX® family of digital sorters for green beans. These chuteand belt-fed sorters identify and remove extraneous vegetable matter (EVM), including stalks, calyx, stems and several other types of unwanted vegetable materials often found with harvested green beans, as well as beans with blemishes and foreign material (FM) such as sticks, wood, glass and more. With optional threeway sorting, VERYX separates beans for rework while rejecting waste product and FM and passing good beans. Through improved sort accuracy, VERYX increases the removal of EVM, FM and defects to enhance product quality while virtually eliminating false rejects to maximize yield. Ideal for many product varietals, VERYX can be tailored to sort whole or cut green beans, fresh or frozen, for fresh pack, frozen and canned product applications. These modular sorters are configured with the optimal sensor types, sensor positions, lighting, ejection system, product handling and software to meet the specific needs of each green bean processor. For multiproduct lines that also process other vegetables such as cut corn, peas, carrots, beets and more, VERYX maximizes production flexibility with fast and accurate recipe-driven changeovers that ensure repeatable results. With chute- and belt-fed sorters available in a variety of widths for low- to high-capacity processing lines, VERYX can sort green beans before or after blanching and after freezing prior to packaging, depending on the products being produced and the processor’s objectives. Thanks to inspection zones that are wider than other sorters with a similar footprint, VERYX enables processors to increase their throughputs by up to 15 percent while conserving floorspace.
learning, self-adjustment algorithms, predictive diagnostics and smart alerts including the FMAlert™ feature. This enables VERYX to automatically adapt to normal changes in the product and environment, maintaining optimal performance. As result, VERYX can operate virtually unattended during normal production. Minimal sanitation requirements and simplified maintenance help reduce downtime and the customer’s total cost of ownership.
Depending on the VERYX model size, system capacities range from up to 5.5 metric tons (12,000 lb.) of green beans per hour for VERYX B70 to up to 19 metric tons (42,000 lb.) of green beans per hour for VERYX B210, the largest sorter in the VERYX product family. Capacities are dependent on incoming defect levels and actual varieties. VERYX features next-generation 4-channel cameras and laser scanners that offer twice the resolution of previous generation sensors. Leveraging Key’s unique multi-sensor Pixel Fusion™ detection technology and objectbased recognition with advanced shape sorting algorithms, VERYX significantly improves detection accuracy. An innovative mechanical architecture, specialized product handling systems and new ejection system accurately separate EVM, FM and defects while virtually eliminating false rejects. Pixel Fusion is a patented detection technology that combines pixel-level input from multiple cameras and laser sensors to provide the clearest possible differentiation between good product, defects, FM and EVM using multispectral analysis. Objectbased recognition and advanced shape sorting algorithms combine to recognize green beans with attached stalks, calyx and stems. Those beans can be separated for rework using
the optimal ejection strategy for each item in the product stream. VERYX sorters offer in-air inspection and the ability to view all sides of the product, achieving complete surface inspection with no blind spots for superior detection and removal of green beans with surface blemishes. All-sided inspection is sustained throughout the production cycle without requiring manual cleaning, because VERYX’s architecture strategically positions sensor windows, light sources and sensor backgrounds away from product splatter and contamination zones. “At Key, we have a long history and deep expertise sorting green beans, so we’re in a great position to leverage our knowledge to improve the process, taking advantage of the newest detection technologies. We combine the most advanced green bean optical sorting with our mechanical grading and sizing systems and conveying solutions to help processors elevate their product quality and maximize yield,” said Marco Azzaretti, Advanced Inspection Systems Product Manager at Key Technology. “VERYX is an extremely versatile sorter. We customize each system to the exact needs the processor, considering the nuances of specific green bean varietals and regional differences in customer needs.” As the world’s most intelligent sorter, VERYX includes smart system features such as auto-
To further ease use and simplify operator training, Key developed an intuitive new UI designed with Human-Machine Interface experts. The VERYX UI provides different views to users of various levels depending on their needs. Recipedriven operation ensures customers can count on consistent performance from their VERYX sorter day in, day out, including when running the same product across multiple sorters on different lines. For customers running multiple product types on the same system, the ergonomic VERYX UI enables the sorter to run a new product or grade at the touch of a button. NESTLÉ LOSES BATTLE OVER ‘VEGAN BUTCHER’ TRADEMARK TERM
N
estlé has abandoned its application to trademark the term “The Vegan Butcher”, following legal opposition from US vegan shop The Herbivorous Butcher. Based in Minneapolis, The Herbivorous Butcher was set up by siblings Aubry and Kale Walch in 2016 to sell a variety of plant-based meats and cheeses. According to VegNews, in August 2017, The Herbivorous Butcher tried to register the trademark “Vegan Butcher” with the United States Patent and Trademark Office (USPTO), but
were denied on the basis that the term was “merely descriptive”.
In 2017, Nestlé acquired Californian plant-based brand Sweet Earth Foods and has since released the Awesome Burger. The Swiss giant also revealed it would sell Sweet Earth vegan deli slices from supermarket counters using the phrase “The Vegan Butcher”. As a result, VegNews reports that Nestlé applied to trademark the term with the USPTO, but was met with opposition by The Herbivorous Butcher over arguments that the term is crucial to the marketing and operations of its independent butcher shop.
Nestlé has since abandoned its application, with The Herbivorous Butcher winning the court battle. The company does not intend to pursue a trademark, as it wants to encourage companies to continue innovating with plant-based meats without potential legal recourse. On the company’s Facebook page, The Herbivorous Butcher wrote: “Friends, we are beyond thrilled to share this news with you! The phrase “vegan butcher” shouldn’t belong to any single company, and this is also a huge victory for small businesses like ours.” Last year, Nestlé was ordered by a
Dutch court to stop using the product name “Incredible Burger” following a preliminary injunction filed by Impossible Foods.n

SNAPDEAL EXTENDS SUPPORT TO FSSAI’S ‘EAT RIGHT INDIA’ MOVEMENT
S
napdeal has extended its support to the Ministry of Health and Family Welfare’s ‘Eat Right India’ Movement being led by Food Safety and Standards Authority of India (FSSAI). From February 22, 2021, the orders that are daily shipped to reach 92 per cent of India’s total towns and cities, will have prominently placed customised information stickers about fortified products. The stickers will drive awareness about the '+F' mark that identifies fortified foods and will educate consumers about the importance of fortified foods in fighting malnutrition. The company will also use its digital channels to disseminate information about the benefits of fortified foods in daily diets and how consumers can identify such products with the '+F’ mark while buying online or offline. In addition to this, the company will also work closely with its sellers, delivery partners and third-party workers to deliver the message to a larger audience. Today, India suffers from the triple burden of malnutrition. Over half of women and children suffer from anaemia. Non-communicable diseases such as diabetes, heart disease, and hypertension account for more than 60 per cent of deaths. To tackle this growing problem,
fortification of food has been identified as a key intervention area under Poshan Abhiyaan. Food fortification is a process in which key vitamins and minerals like Vitamin A and D and minerals such as Iron, Iodine, Zinc are added to staples such as rice, wheat, oil, milk and salt to provide better nutritional outcomes. Speaking on the initiative, Rajnish Wahi, Snapdeal's senior vice president, said, “Our support for the Eat Right Movement is an extension of our spirit to serve Bharat. We are proud to galvanize forces with Food Fortification Resource Centre (FFRC) and scale up communication in a short span of time, covering millions of people and impacting community behaviour positively.” According to Arun Singhal, CEO FSSAI, such mechanisms are certainly a great vehicle in taking key messaging to the grass-roots level for the benefit of our society at large. He encouraged other similar business models to come forward and disseminate the right messaging on safe, healthy and sustainable eating practices through their vast delivery network. He urged people to start recognising the '+F' mark on 5 key staples. Talking about the future strategy for scaling-up food fortification, Singhal stated that FSSAI has already issued a draft notification for mandatory fortification of edible oil and milk. In the near future, our people will be able to get recommended doses of micro-nutrients through availability of fortified edible oil and packaged toned, double toned, skimmed milk or standardised milk fortified with essential vitamins like A and Dn

PM BATS FOR PVT SECTOR PARTICIPATION IN HEALTHCARE
P
rime Minister Narendra Modi on Tuesday urged the private sector to participate in building a network of public health laboratories under the Ayushman Bharat Pradhan Mantri Jan Arogya Yojana. He added that in the context of the pandemic, the government is focussing on every aspect of the healthcare sector, including medical equipment, medicines, ventilators, vaccines, scientific research, and surveillance infrastructure. The minister also added that under the PM Aatmanirbhar Swasth Bharat Yojana, a modern ecosystem will be developed ranging from research to testing and treatment. “As per the recommendations of the 15th Finance Commission, local bodies will get over Rs70,000 crore keeping health services in mind. That is, the government’s emphasis is not only on investment in healthcare but also to expand access to healthcare even in far-flung areas of the country,” he added further.n
FHRAI WRITES TO FM REQUESTING INCREASE IN THRESHOLD LIMIT ON ZERO GST FOR HOTELS TO RS 2000
F
ounded in 1955, the Federation of Hotel and Restaurant Associations of India (FHRAI) is India’s apex hospitality association and the 3rd largest in the world. The association has written to the Finance Minister Nirmala Sitharaman to enhance the threshold limit for zero GST for hotel room tariffs from the present Rs 1000 to Rs 2000 per room per day. The association has stated that the move will boost stays in the lower budget segment, which in turn will encourage more domestic travellers to venture out and thereby give tourism sector the much required boost. Increasing the threshold limit on zero GST will give hotels a chance to attract more tourists, thus increasing the chance of generating slightly better revenues. This could result in a multiplier effect for the hospitality as well as the tourism industry. Gurbaxish Singh Kohli, vice president, FHRAI, said, “There are quite a few budget hotels that offer accommodations in the Rs 2000 tariff per day per room. Increasing the present zero GST threshold to Rs 2000 will give these budget hotels a chance to revive business. The hospitality sector is engulfed in massive losses and mounting debts due to the pandemic and it is dealing with a very gloomy economic situation with no respite in near sight. This move will boost the lower budget hotel segment, which will encourage more domestic travellers to take vacations, aiding the tourism sector.” The FHRAI in its pre-Budget memorandum had also requested for increasing the threshold limit of hotel room tariff charged at 18 per cent GST to be raised to Rs 9500 from Rs 7500 “The Hospitality sector is dealing with a very gloomy economic situation with no foreseeable respite. Being the first sector affected by Covid-19 and the last to revive, the hospitality sector in the country is waging a battle for its existence. This unprecedented crisis has destroyed the entire hospitality eco-system in the country which would take many years to recover. Therefore, only some extraordinary measures and support from the Government can save the industry at this time of deep crisis,” concluded Kohli.n

HEALTH CLAIMS ON FOOD PRODUCTS THAT INFLUENCE CONSUMER’S CHOICES When there are many companies and brands for the same or similar products, each one will try to give a reason or advantage for consumer to buy that product. This is usually done by making a claim for the product that shows that the product is better and so people should buy this one. Claims can be of various kinds. It may be concerning eating qualities of the food such as having better flavour and taste. There are claims made on purity or authenticity of ingredients or process. Claims concerning quantity such as a presence of desirable nutrient such as a vitamin or an undesirable ingredient such low sugar or salt are very commonly used. Foods are also known to have an impact on health not just through nutrients like proteins, vitamins and minerals but also some substances that are present in them that may be beneficial for health. Consumers have started relating nutritious food with health because of nutrients as well as some healthy ingredients that are present in the food product or if some unhealthy ingredients are less in it. This has encouraged many companies to make claims to that effect. FSSAI has realised that there is a possibility of consumers getting swayed by many claims some that may not be valid. In order to make consumers aware of good healthy foods with ingredients and nutrients in them affecting their well-being, FSSAI notified a series of regulations. The intention is to make food companies more responsible in communicating through advertisements and through claims on their labels prohibiting certain claims which may be deceptive or may not convey proper meaning.
Conditions of Health Claims When a health claim is made both the physiological role of the nutrient or substance as well as composition of product with respect to that substance must be considered. When a substance affecting favourably or adversely health is mentioned, the claim must relate to the amount as defined by regulation. For example, when it is claimed to have high in protein or low in sugar, the amounts must be as stipulated by the regulation. Nutrient function claims can be made on the basis of current scientific knowledge about the health effects of the nutrient. However, disease risk reduction claim can only be made as per the conditions specified by FSSAI. Calcium and vitamin D are both essential for bone health. They also reduce the risk of osteoporosis. Thus is easier to make a
claim of nutrient function claim such as calcium is essential for bone health but to make the disease risk reduction claim adequate amounts will be needed to be present in food. There are certain disease risk reduction claims have been defined by FSSAI which could be made by the manufacturer but others would need approval of claims by the FSSAI. For this a procedure has been laid down for submission of documents for seeking approval. One can also make a health benefit claim for a product prepared by the manufacturer. However, this needs substantiation with a well-designed human clinical study under the guidance of established research institution backed by published data. There are botanicals or nutraceuticals that may provide some health benefits. In order to make claims regarding these to show that the product made using these in it will provide the benefits, one may need a clinical study in which the product will have to be consumed by people being studied and the health benefit will have to be demonstrated. As such study will require expertise in physiology as well as in statistics so established institutions may have to be involved in such studies to obtain reliable data that need to be submitted to FSSAI for approval of the claims. Although claims regarding the foods can be made in a manner to indicate that the food or substance in the food may reduce the risk of a disease, however claims cannot be made to indicate that it would treat or cure a disease. As new opportunities exist many new food products are appearing in the market with many claims. Claims were made earlier also but since there were no clear rules how these would be made some were made without any basis or substantiation. Even a slight reduction of undesirable ingredients or slight addition of nutrient or healthy ingredient would be claimed in exaggerated manner. This is not possible now. Not only have the guidelines or conditions have been provided for making claims, there are stricter punishments for violations which would prevent irresponsible claims. Also the word and language that will be used as per the directives, will be easier for the consumers to understand and make proper choice for healthier and nutritious products. This would certainly create better confidence in good products. (The author is executive director, Protein Foods and Nutrition Development Association of India -PFNDAI)
CHICKP GOING COMMERCIAL WITH NOVEL PROTEIN, SEEKING NEW OPPORTUNITIES IN US MARKET
C
hickP Protein Limited reported full commercial production of its 90 per cent chickpea isolate. The company is simultaneously expanding its global activities, having kicked-off a venture in the US by sealing a joint market development agreement with Socius Ingredients, Inc. The company revved up consistent, stable production capacity to 20 metric tons per day, equating to more than 5,000 metric tons annually of its uniquely concentrated nonGMO, allergen-free chickpea protein isolate. The ingredient is designed to provide proteininfused functionality and a nutritional boost to an array of food and supplement applications, including dairy alternatives, baked products, and gluten-free foods. The company also is actively seeking new opportunities in the plant-based alternatives industry, especially in the thriving US market. Ron Klein, CEO, ChickP, said, “We have established a modern, BRC certified food facility, where we have applied proprietary technology for the production of highvalue, clean-label chickpea protein. We’ve already attracted considerable interest from major food brands, and this month alone welcomed a number of production commitments from several new customers.” The company is currently partnering with several food companies on specialised projects to develop the North American market for plantbased innovations. “Socius has exemplary protein application expertise and, with a stateof-the-art technical center in Chicago, boasts strong connections to manufacturers of plant-based products. We’re strategising with Socius to explore the many creative possibilities for producing chickpea protein-based prototypes,” said Klein. Conor Buckley, vice president, Socius, said, “ChickP’s offering sets a new standard for pure protein solutions through
multiple beneficial attributes, including a dense nutritional profile, neutral flavor, and distinguished functional properties. These render it an excellent candidate for integration into a full spectrum of dairy analogs, including beverages, desserts, creamers, and more. We look forward to working with the ChickP team to bring the organoleptic and nutritional potential of chickpea to our customers.” The company has appointed Itay Dana as VP of sales and business development to lead these activities. With nearly 15 years of experience in the food, supplement, agrotech, and life science industries, with a focus on plant-based proteins, Dana is a veteran in food engineering and biotechnology. He formerly served as the VP of Marketing and business development at Equinom, Director of New Technologies for Lycored Ltd., and was Head of Food Innovation at Galam, Ltd. The Good Food Institute (GFI) reports a booming plant-based foods industry in the US, and pulses are galvanizing alternative protein innovation. New SPINS retail sales data released March 3, 2020, show that US grocery sales of plantbased foods that directly replace animal products have grown by nearly a third in the past two years, reaching US$5 billion in sales. “The US is fast emerging as a key global player in meat and dairy alternatives. This market already is familiar with soy and pea proteins. However, these sources still cannot meet all the desired specifications for the broader spectrum of applications. Food companies are demonstrating an openness to try new plant-sourced protein contenders and the mighty chickpea is now gaining its due recognition and momentum,” said Dana.n

INDIA-UK ECONOMIC TIES: TOWARDS A SHARED PROSPERITY in the year, of which India’s exports to the UK were US$ 8.8 billion and imports from the UK were valued at US$ 6.9 billion. India has maintained a favourable trade balance with the UK, albeit exports have risen at a snail’s pace in the last ten years (Figure 1). In 2019, UK accounted for 2% of India’s total trade with the world, while India’s share in UK’s total world trade was relatively less at 1.2%.
T
he marvellous successes that India and UK have exhibited all these years only scratch the surface of the exciting possibilities that lie ahead. Exciting developments wait to unfold that would bind the two countries together on a path of shared prosperity. The last few years witnessed a turning point in India-UK economic relations. Both of them are strong proponents of free trade and multilateral economic system, being fairly open economies themselves. In 2019, UK was India’s fifteenth largest trading partner and India was UK’s nineteenth largest trading partner in goods. The trade between the two nations stood at US$ 15.9 billion in 2019. The biggest success in India-UK economic dialogue has been marked by the announcement of an Enhanced Trade Partnership (ETP) at the fourteenth meeting of the JETCO, held in July, 2020. The partnership is envisaged to “address non-tariff barriers to trade and explore routes to remove tariff barriers”. Research indicates that the two nations have a tremendous untapped trade potential. India has the potential to export an additional US$ 104 billion worth of goods in which it has comparative advantage. From the time when the British first entered India in the sixteenth century to the present, trade and commerce have continued to play a vital role in strong bilateral relations between India and the UK. Having had rich historical ties in manufacturing, the two countries today, have transformed into service-led economies. Both of them are strong proponents of free trade and the multilateral economic system, being fairly open economies themselves. The past year saw the pandemic taking a toll on global cooperation, as nations started to
isolate and look inward. However, in these trying times, India and UK’s partnership reached a new milestone with their collaboration to carry out large-scale production of the AstraZeneca-Oxford vaccine. The last few years witnessed a turning point in India-UK economic relations. In 2016, the then UK’s PM Theresa May came to India on a trade mission to revitalise economic ties between the nations. The visit came at the time of UK’s decision to exit the European Union, hence signalling UK’s intentions to engage more closely with India in the postBrexit era. Signing of agreements on Intellectual Property and Ease of Doing Business and deals worth over £ 1 billion symbolised the advent of this new partnership. During PM Narendra Modi’s visit to the UK in 2018, the beginning of a “new UK-India Trade Partnership” was officially announced.
Coming to composition of trade in goods, it is interesting to note that while India’s export basket to the UK consists of mainly final goods viz, consumer and capital goods, the import basket comprises of largely intermediate goods used in the domestic industry and capital goods. The top commodities that India has been exporting to the UK traditionally are clothing items, articles of jewellery, refined petroleum products and vehicles. Lately, exports of machinery parts like turbo jets and pharmaceutical products have picked up. India’s imports from the UK have been concentrated in certain products such as gold, silver, diamonds and other precious stones, iron and steel (mainly scrap), machinery, electrical equipment and petroleum. Considering that the current trade in goods has been somewhat stagnant in the last decade, an exercise was carried out to estimate the additional trade that is possible between the two nations. The results were promising:
As the two countries forge this new partnership, it is worthwhile to study their trade and investment relations
Trade in Goods – Current and Potential In 2019, UK was India’s fifteenth largest trading partner and India was UK’s nineteenth largest trading partner in goods. Trade between the two nations stood at US$ 15.9 billion
total bilateral trade amounting to US$ 175 billion is possible if the two countries were to import from each other what they are importing from the rest of the world. India has the potential to export an additional US$ 104 billion worth of goods, in which it has a comparative advantage. The sectors having the highest potential are refined petroleum products, medicaments, gems and jewellery, automobiles, apparels and mechanical parts. Similarly, UK has an additional export potential of US$ 71 billion to India with opportunities present to export more of petroleum, iron and steel, copper, mechanical and electrical machinery, medicaments and medical and surgical apparatus.
Trade in services Both UK and India are net service exporters with trade in services contributing a share of 25% and 12% in their GDP, respectively. India’s trade in services with the UK has seen more impressive growth than trade in goods. Total trade between the two nations has almost doubled over the last decade and touched US$ 13.8 billion in 2019. Like trade in goods, India has maintained a favourable trade balance in services with exports to the UK amounting to US$ 9.8 billion and imports at US$ 4 billion in 2019 (Figure 2). competitiveness in similar skill structures, scope for collaboration is high. This is already translating in certain areas such as research and development, where UK is India’s second largest collaborator. Their joint research in science and innovation is estimated to reach £ 400 million by 2021. The increasing engagement between the two countries is also gauged by the fact that UK issues more skilled work visas to India than the rest of the world combined. Furthermore, the UK governments’ decision to create a Graduate Immigration route for enabling international students to stay back in UK for two years post-completion of studies presents huge opportunities for deeper engagement in education. Efforts should also be put in to build greater synergies in financial; telecommunication; maintenance and repair; construction; information; and insurance services.
manufacturing and engineering; smart cities; animal husbandry, dairying and fisheries; and trade. The Joint Working Group on Trade was set up at the eleventh meeting of the India-UK JETCO in 2016 to “identify practical ways to broaden and deepen trade relations”. Both the countries completed a Joint Trade Review in 2018, which is expected to serve as a roadmap for the new UK-India Trade Partnership announced in 2018.
Investments
In the food and drinks sector, considerable progress has been made already with the regulatory bodies of both the nations starting to work on issues that hinder food and drinks trade and sharing best practices on regulatory and clearance processes. The Memorandums of understanding in the fields of Telecommunications and Information and Communication Technologies (ICTs) and medical product regulation are also being finalised.
United Kingdom is the sixth largest investing nation in India with its total investments summing up to US$ 27.9 billion. Traditionally, UK’s investment in India has been concentrated in sectors like chemicals, drugs & pharmaceuticals, services, food processing and petroleum and natural gas (8%). In 2019, there were FDI inflows worth US$ 1.4 billion from the UK into India. Financial services and other services, which include inter alia, accommodation, food and beverages, real estate, education and health, attracted the biggest chunk of investments, followed by metal and machinery products, professional, scientific and technical services, information and communication and computer and electronic products. Currently, more than 400 British companies operate in India. These include well known names such as Vodafone, HSBC, Standard Chartered, Unilever and new entrants such as Dyson. India too boasts of being among the largest investors in the UK. It recently became the second largest source market for FDI projects in the UK, having invested in 120 new projects. In 2019, India’s FDI outflows to the UK equalled US$ 409 million, largely directed towards services. Firms selling professional, scientific and technical; information and communication; and administrative and support services were the top recipients. There are around 842 Indian companies operating there, few of the biggest being Tata, Reliance, Accord Healthcare, Wipro, Infosys and Genpact. The companies have a combined turnover of £ 48 billion and support over one lakh jobs. It is evident that investment relations between the two countries are scaling unprecedented heights. This has been aided by consistent bilateral efforts such as the setting up of a Fast-Track system for British companies facing operational bottlenecks in India and launching the UK-India Tech Partnership to strengthen the investment ecosystem.
Bilateral Economic Cooperation Framework India and UK have established a robust structure for cementing bilateral economic relations. The two important frameworks are the Joint Economic and Trade Committee (JETCO), which holds a dialogue at the Commerce minister-level and the India-UK Economic & Financial Dialogue (EFD) held at the Finance-Minister level. Both the frameworks were established in 2005, post India and UK upgrading their relations to a “strategic partnership” in 2004. Over the years, the deliberations at JETCO have led to formation of various Joint Working Groups, inter alia, on technological collaboration, advanced
The future of India-UK economic ties looks extremely promising. Exciting developments wait to unfold that would bind the two countries together on a path of shared prosperity.
The Trade Review identified five sectors of interest: aerospace; chemicals; automotive; food and drinks; and life sciences. Under the JWG on Trade, government-to-government dialogues on food and drinks, information communications technology (ICT), life sciences and services statistics have been initiated to eliminate non-tariff barriers to trade.
Perhaps, the biggest success in India-UK economic dialogue has been marked by the announcement of an Enhanced Trade Partnership (ETP) at the fourteenth meeting of the JETCO, held virtually in July, 2020. The partnership is envisaged to “address non-tariff barriers to trade and explore routes to remove tariff barriers”. It is expected to be implemented in the immediate future and segue into a full-fledged Free Trade Agreement later. The tenth Economic and Financial Dialogue was another landmark event as it saw the Finance Ministers of both the nations reinstating their commitment towards free trade, devoid of unnecessary barriers. They also announced a new partnership on Infrastructure Financing and Policy to support knowledge sharing and assistance for India’s National Infrastructure Pipeline and the establishment of UK India Development Cooperation Fund, a Fund of Funds for managing UK Government’s future development capital investments in India.

A shared future The marvellous successes that India and UK have exhibited all these years only scratch the surface of the exciting possibilities that lie ahead. In goods, there lies vast untapped potential for India to export medicaments, gems and jewellery, apparels, automobiles and refined petroleum and for the UK to export iron and steel, copper, mechanical and electrical machinery and medical and surgical apparatus. In services, there is incredible scope for collaborations in financial, telecommunication, construction, information and insurance sectors. The recently introduced Production Linked Incentive Scheme in India opens up a plethora of opportunities for investments from the UK in sectors like apparels, pharmaceuticals, food products, automobiles and electronic and technology products. By strengthening and deepening value chains in the identified sectors, India and UK can reap huge economic benefits. The early fruition of Enhanced Trade Partnership, which lays the ground for identification and elimination of unnecessary tariff and non-tariff barriers, would also play an instrumental role in facilitating greater trade and investments. n

n a major attempt that would pave the way for boosting India’s seafood trade, the Central Marine Fisheries Research Institute, the Marine Products Export Development Authority and the Fishery Survey of India (FSI) have jointly launched a research cruise for assessing the marine mammal population of the EEZ. The research initiative assumes significance in the wake of emerging seafood trade-related challenges faced by the fishermen targeting high-value resources and the export market players of India. The National Oceanic and Atmospheric Administration, USA, had issued import strictures of strict adherence to norms laid out in the Marine Mammal Protection Act of their country, stating that seafood exporting countries should not allow the intentional killing of marine mammals in commercial fisheries. For exporting fish and fish products, the US has given a five-year exemption period starting 1st January 2017, to nations for developing regulatory programmes by assessing marine mammal stocks, estimating by-catch, calculating by-catch limits, and reducing total by-catch. A joint initiative of the three major central agencies functioning under different ministries, the cruise

The mission is expected to lead to the genesis of a pioneering research project conceived and implemented by CMFRI with the financial assistance of the MPEDA and infrastructure support of the FSI,” said CMFRI Director A Gopalakrishnan. “This is a project of national importance with global impact, which once successfully completed would place our research status on marine mammals in the select the community of nations,” he said. R. Jeyabaskaran, Principal Investigator of the project and Senior Scientist of CMFRI said, “The project focuses on assessing the status of stock health of marine mammals and all species of sea turtles in Indian waters. Marine mammals and sea turtles play key roles in maintaining marine ecosystems.”The mission was flagged off by MPEDA chairman K.S. Srinivasn

HOW DO THE FROZEN DAIRY STARTUPS IN INDIA MAINTAIN AND IMPROVE HYGIENE? - PRERNA PURI
he dairy market and frozen foods sector has witnessed a surge in its growth all thanks to the fast-paced urban lifestyle. Encompassing various products under its umbrella, the dairy industry contributes a major share to the country’s GDP. Comprising of cream, milk and other milk-based products, frozen dairy products and desserts have been the recent entrants in the dairy industry. Since every individual is on the go and prefers quick services and products that offer easy and quick usage, the frozen foods especially frozen dairy desserts come as a boon and also upgrade the lifestyle of the urban people. While earlier the Indian dairy market rang the names of Amul, Mother Dairy, other frozen desserts, made us recall names like Nirula’s, Giani’s, Baskin Robbins, Cocoberry, etc. However, off lately with the inception of some start-ups offering unique frozen dairy foods, which are natural, made with pure ingredients, and without the use of additives.
Indian dairy, Frozen Dairy, and Ice cream market growth The global dairy market is expected to grow at a CAGR of 5 per cent to reach USD 703.5 billion by 2024 as per The Cow Boy Channel. As per IMARC GROUP’S report, the Indian dairy market was valued at INR 11,360 billion in 2020. As reported by EMR, it is expected to grow at a CAGR of 6 per cent over the period of 2021-2026. As per ICRA, the ice cream sector suffered a huge dip owing to the lockdown in peak summers along with the safety measure to avoid cold foods and chilled beverages. While frozen desserts and ice creams are often used interchangeably, the ones made exclusively with dairy are referred to as dairy ice creams. Frozen desserts however are a broader concept encompassing ice creams, frozen yogurts along with other icy toothsome desserts. Since there was a lot of confusion, it was just recently that FSSAI has made it mandatory for the frozen dessert industry to mention on the packaging if that particular product is a frozen dessert or ice cream to help the consumers make an informed decision. As per MarkNtel Advisors’ report, India Ice Cream Market Analysis 2021, the Indian ice cream market is expected to grow at a CAGR OF 11 per cent during 2021-2026. According to Fortune Business Sights reports, the ice cream market size is expected
to reach USD 91,90 billion by 2027 growing at a CAGR of 4.01 per cent during the said period. Additionally, the premiumization of ice creams will be an emerging trend in the sector. Ice creams will be increasingly prepared from rich and natural ingredients and this will be done primarily by emerging businesses and start-ups. The brands on the other hand will be investing their time, efforts, and finances on improvising their research and development activities with an aim to offer healthy foods along with optimal nutritional levels. The brands and start-ups at the global level are focusing on the launch of product innovations to help them differentiate from the other players in the market and to create a niche for themselves. A prominent example of this being that in January 2021, Unilever Group launched a double red velvet variant under its Magnum brand. Additionally, other major brands like Amul, Mother Dairy, and Dairy day have also come up with product innovations like camel milk ice cream, along with new flavors and ice cream range with immunityboosting properties. While the pandemic led to the dip in the ice cream market in 2020, the sector is expected to pick up the pace and the demand for ice creams in India will witness an all-time rise. Rapid urbanization, growth in the food processing industry, along with the presence of giant players in the sector will be the key factors responsible for its growth. Along with these, increased investment to improve the cold storage infrastructure, growing disposable income, and the increasing popularity of frozen desserts are other contributory factors. Despite being a recent member of the dairy industry, the frozen foods market especially the frozen dairy segment has witnessed technological developments.
Foray of start-ups in ice cream sector However, a common notion goes around that frozen foods are packed with preservatives and additives. But not many are aware that due to the technological advancements, preparing natural frozen foods especially dairy products without any additives is no more a challenge. It is very much feasible. The testimony of this statement lies in the fact that there are various start-ups that offer natural frozen foods and frozen dairy products devoid of any additive, preservative, chemicals, or emulsifiers. The ice cream and frozen dessert market are highly competitive in the
present times. While the ice cream market is dominated by brands, off lately, the industry has witnessed the launch of various start-ups offering unique and natural products. Ventures like Havmore, Habbit, Maverick, just to name a few amongst the many others strive to come up with new flavours and variants to ensure their survival in the highly competitive market.

Ice cream and frozen yogurts contribute a major share in the frozen dairy market. However, off lately there has been the introduction of non-dairy ice creams in the sector as well. There has been an increased preference for such foods owing to their health and nutritive factor in the present times where people give utmost importance towards maintaining good health.

Challenge faced by the ice cream sector: Enforcing top notch hygiene regulations However, a major challenge faced by the ice cream sector in India is the misguidance and misinformation doing the rounds regarding the consumption of chilled drinks and cold foods leading to the increased risk of catching the virus. While the ICCMA made concerted efforts to clear this misconception, these rumours led to the rising of major health and hygiene concerns amidst the public for ice creams and frozen dairy products. This also leads to increased pressure on both brands and start-ups but more so on the latter as the former are the key players and are recognised for their quality and brand value. They have a vast and existing consumer base and hence don’t have to deal with consumer loyalty issues. However, the start-ups on the other hand need to ensure the following of all the requisite hygiene measures at all levels right from raw material procurement to the packaging so as to instil confidence about their products amongst the consumers. Strictly enforcing all the required rules at the production and packaging levels will help the organisations to maintain their safety standards. Additionally, third-party food delivery firms like Zomato and Swiggy are also regularly vising the restaurants and eating joints to ensure that they
Some of the very basic yet essential hacks for start-ups in ice cream sector and frozen dairy industry and for any organisation to maintain hygiene and work optimally during the on-going pandemic are :-
Additionally, every business should have Covid-19 scanning equipment set up in place. This is essential so that any employee exhibiting the symptoms and having a temperature of more than 99 degrees Fahrenheit should not be allowed to enter the workplace and should be refrained from working. Rather they should be provided the required assistance so that he/she can get themselves tested. Along with this, the introduction of technological advancements to ensure contactless working as much as possible will help in curbing the spreading of the scare and the spreading of the virus. Tech has indeed revolutionised the working of the dairy and frozen dairy sector in India. With the frozen dairy market turning highly competitive, the dairy start-ups have to deliver the state of the art products to ensure customer satisfaction and loyalty along with securing their consumer base. The inculcation of top-notch hygiene practices will further aid in this objective of successfully developing a good relationship with their consumers. Considering they are start-ups, they need to be careful about their working as this is a make or break situation for them where one mistake could lead to the loss of consumer trust and interest. Having said this, on the whole, 2021 seems to be the year of recovery with the increased preference for frozen dairy products and ice creams by the consumers.n (The author is CEO and founder of Prerna's Handcrafted Ice Cream. WHITE SCIENCE – A PRAGMATIC SOLUTION FOR REPLACING TITANIUM DIOXIDE BY DR. ROLAND BECK What Is The Market Need?
though calcium sulphate has a lower refractive index it outperforms calcium carbonate for two main reasons, i.e. the larger particle size range available which is largely in line with the optimal particle size for whiteness, and the acid stability which allows its use in all food and beverage categories.
Titanium dioxide, TiO2 (E171) needs to be replaced, since its public acceptance as a food additive has steadily declined in recent years and its technological necessity as a whitening pigment in food is being challenged by consumer groups.
What Are The Reasons For This? The naturalness of titanium dioxide is being challenged due to the synthetic chemical process used for producing a white pigment out of a black mineral (ilmenite). Furthermore, questions on the nano scale proportion in food grade E171 are being raised and there are growing consumer reservations about introducing a completely insoluble, inorganic, syntheticallyproduced mole- cule into the food chain.
Why Has Titanium Dioxide Been Used As Food Additive? The unique whitening power and the chemical inertness of TiO2 made it an unchallenged whitening pigment, not only used in the food industry, but also in papermaking, paints, plaster and plastic processing.
What Makes Tio2 Unique As A Whitening Pigment? The unusually high refractive index, the small particle size and the almost matrixindependent whitening power.

parameter and the relative refractive index of a particle in a given matrix to the scattering cross section. About 50 years later, when computers became capable of calculating the results of Mie’s equations, Weber transformed the basic equation, deriving an easily calculable formula relating the optimal particle diameter of the maximal scattering power to the refractive indices of the whitening pigment and the matrix in which the pigment is dispersed. In Figure 1 the optimal particle sizes of several whitening products, which are in principle food grade materials, are plotted in relation to the optical properties of the matrix. Titanium dioxide shows almost no matrix- dependent variation of the optimal particle size, whereas all other whitening products, i.e. magnesium carbonate, calcium carbonate, calcium sulphate, starch or beverage cloud emulsions show a substantial matrix effect. The smaller the optical contrast, i.e. the smaller the difference of the refractive indices of the whitening agent and the matrix (nD and nB), the larger the optimal particle size becomes.

A Scientific Solution To The Problem The appearance of white is an optical phenomenon based on the reflection of light, which was discovered more than 200 years ago by Augustin Jean Fresnel, and also the scattering of light which was brilliantly described more than 100 years ago by Gustav Mie, linking the so-called size
In Figure 2 the relative whitening effect of the optimal particle sizes of 4 of these products and tricalcium phosphate is plotted in different matrices and compared to TiO2 which is set for better comparison arbitrarily at 1. A whitening product which shows its whitening effect on a surface exposed to air, such as in pan coating or whitening a powder blend, can be achieved by almost any material with a refractive index ranging from starch (nP=1.52) to magnesium carbonate (nP=1.70), provided the appropriate optimal particle size is used. For applications in aqueous, diet or full
sugar beverages the refractive index of the whitening agent already has a more pronounced effect because the optical contrast in the beverage medium becomes smaller. In hard boiled candies, which have a matrix refractive index close to that of starch, starch would need to be dosed more than 50 times compared to TiO2 to achieve a comparable whitening effect, provided a product with the optimal particle size of about 15 µm is used. The dosage is not realistic, and the particle size of 15µm would be unacceptable due to the negative sensory effect. On the other hand, starch has been used for panning because the theoretical dosage required is only 4.5 times that of TiO2 at an optimal particle size 0.5µm. Rice starch, one of the smallest commercially available starches, has a particle range of 3-8 µm, peaking around 5 µm which is almost a magnitude larger than the optimal particle size for whitening with a carbohydrate, resulting only in about 1/5th of the maximum whitening effect. Thus, 20 to 25 times of rice starch is required in panning to yield a comparable whitening effect to TiO2. This dosage was found acceptable by some producers because the resulting much thicker white layer is usually covered by a colored coating and the thickness of the white layer is not seen, nor does the sensory effect of the small grain size of rice starch have a significant impact on this particular application and eating habits. Starch has a very limited application reach besides panning, magnesium carbonate has diuretic side effects, and tricalcium phosphate is synthetically produced and therefore does not meet the consumer’s demand for naturalness. Calcium sulphate and carbonate thus remain as the most promising candidates for replacing TiO2. In Table 1 the dosage requirements of commercially available food grade materials are compared. Even
Calcium sulphate is a naturally occurring mineral which is only processed via physical means. It is poorly soluble in water, but sufficiently soluble to dissolve in the digestive tract to serve in addition as a source for calcium. Its particle size requirement for whitening is large enough to unequivocally put calcium sulphate outside the nano legislation range and need for novel food registration. Sensory impact of calcium sulphate is negligible, which is in contrast to calcium carbonate. Cost in use for calcium sulphate is the lowest of all evaluated TiO2 alternatives so far, due to its lower practical dosage requirements for achieving the same whiteness and its basic cost structure. Döhler has pioneered and patented the development of calcium sulphate as a whitening product in many food and dry beverage applications, and it is an approved additive and supplement in all major regulatory regions like EFSA, FDA or JECFA.
Integrated Natural Color Solutions Doehler’s coloring solutions are based on pure natural products, with the colors being extracted from fruits, cereals, vegetables, malt or other plant-based raw materials. FSSAI TO CONSIDER NEW APPROACH REGARDING FRONT OF THE PACK LABELLING ON NUTRITION
T
he Food Safety and Standards Authority of India (FSSAI) has mooted yet another idea for the front of the pack labelling, for helping the consumers, to make ‘informed choices’ on nutrition. The CEO of the apex food regulator has made a statement that the FSSAI is considering changes in the front of the pack labelling norms to include info on fat, salt and sugar content, which presently needs to be given at back of the pack. The labelling norms were recently notified by FSSAI detailing the requirement on nutrition information and its placement on the food pack. CEO FSSAI’s statement reads, “We are making an effort to bring down salt consumption so that disease caused due to high intake of salt could be reduced.” The statement added that rounds of consultation were held with the stakeholders on a workable solution. Similar plans were considered by the FSSAI in the recent past include traffic light logo for fat, salt and sugar content on front of the pack, red dot for food products having high fat, salt sugar content and even once there were plans for a symbol for nutrition to distinguish healthier products from the HFSS products. FSSAI had also launched a trans-fat free logo for the food businesses, which was voluntary. It is pertinent to mention that FSSAI has been doing consultation on the labelling norms for food products considered high on fat, salt and sugar and generally referred to HFSS food or junk food.

KARNATAKA GOVT TO ESTABLISH COOP SOCIETY FOR MANGO STORAGE & PRESERVATION
The matter has been under consideration for the last 10 years after a PIL was filed in the Delhi High Court for banning junk food in schools, after which an expert committee was formed by the FSSAI on such food products. Recently, FSSAI has notified rules for the fortified processed food including cereal products, bakery wares, and fruit juices however the food products high on fat, salt and sugar were excluded from these regulations. Subsequently, the FSSAI has issued a clarification on exclusion of the high fat sugar salt –HFSS food from the ambit of the notified regulation and stated, “Considering the fact that the HFSS Foods have not been defined and notified in the Food Safety and Standards –Labelling and Display-Regulations 2020, it is clarified that the compliance of sub regulation 7 (governing such food products under the fortified regulations) shall come into effect once the HFSS food are defined and notified under the FSS-Labelling and Display –Regulation 2020.”
K
arnataka government will need to establish a cooperative society, develop storage and preservation facilities for mango crop, according to Health and Medical Education Minister Dr K .Sudhakar. Similarly, there is need here to establish a society for storage and preservation
of mangoes. This is also in line with PM Modi’s vision of Aatmanirbhar Bharat,” he added. Mangoes are grown in 1.67 lakh hectare area in the state, Kolar, Chikkaballapur and Ramanagar is leading with production of 12-14 lakh tonnes of mangoes. 14 lakh tonnes of mango yield is expected this season as there is an increase in production, said the Minister. “Kisan Rail is helpful for farmers to transport their produce. GIVAUDAN LAUNCHES GROUND-BREAKING AI TOOLS FOR NEXT- GEN DEVELOPMENT
G
ivaudan Taste and Wellbeing has launched its unique Advanced Tools for Modelling (ATOM) which use state-of-the-art artificial intelligence to optimise food and flavour formulation and facilitate co-creation and collaboration with customers. Aligned with the company’s 2025 strategy and intent on leading the way in digitalisation, these pioneering tools open new doors to creative development and are able to dramatically cut the time to market for new products. ATOM is the latest addition to an ecosystem of digital and AI tools that allow the companies teams in all regions of the world to streamline the end-to-end creation process from conception to rollout. Building on over two decades of research, ATOM uses artificial intelligence (AI) and data science techniques to minimise trial and error in the process. The tools identify positive and negative
flavour drivers and explore ingredient synergies, to generate new options and insights aligned with consumer preferences. The results are then displayed in graphically rich and interactive dashboards that allow the company to co-create with its customers, enhancing creativity and delivering game-changing new food experiences. Fabio Campanile, head of global science andtechnology, taste andwellbeing,Givaudan, said, “ATOM strikes the right balance between AI and human intuition, complementing the work of our expert flavourists and developers.Tools such as ATOM enable us to help our customers to go beyond consumer expectations, using insight, collaboration and innovation. Implementing what we call ‘wideeyed thinking’ allows us to use these insights to leverage our curiosity and deep ingredient knowledge to accelerate new product development and create the food experiences of the future.”
Early projects using the tools have been highly successful. ATOM was recently used in a project to reduce salt in cheese snacks. Narrowing down the perfect blend of ingredients would normally take extensive trial and error, but the team was able to quickly identify the ideal recipe, delivering a 33 per cent reduction in
salt, from a much smaller range of options predicted by ATOM. In blind taste testing the reduced salt recipe scored as highly as the original fullsalt snack, making it just as tasty, with 33 per cent less salt. The process has also proved highly successful for sugar reduction, vanillin replacement, and meat alternative projects.n
SIDEL EXTENDS ITS WB WRAP-AROUND PACKING PLATFORM TO HANDLE RSC CASES
S
idel has launched a new Cermex WB47 case packer, expanding its WB wraparound range to handle not only the wrap-around blank family but also American cases (RSC and HSC). Additionally, the upgraded WB platform ensures enhanced flexibility with shorter changeover times. In 45 years, the company has installed more than 8,000 packers, including 1,000 wrap-around machines. More than 130 units of the best-seller Cermex WB46 and the new Cermex WB47 have already been manufactured in four years. The current market situation demands greater adaptability of equipment that is capable of handling various combinations of primary and secondary packaging grouped in many batch sizes and configurations. Moreover, production runs are becoming shorter, and therefore high flexibility with reduced downtime and fast, easy and repeatable changeovers for case packing are essential. Meeting the various requirements of supermarkets, discount stores, online retailers and more, the Cermex WB packing platform is truly unique for the Food, Home and Personal Care (FHPC) markets. Didier Saussereau, packing product manager, Sidel, said, “The Cermex WB’s case-packing range is able to handle a great variety of primary and secondary packaging types, including complete wrap-around blanks,
trays, trays with ledges, two-piece packaging (tray plus lid), and provide Shelf-Ready Packaging (SRP) and easy-to-open functionalities. With the Cermex WB47, Sidel extends the flexibility and adaptability of the solution even more.” The new case packer makes it possible to run RSC and half slotted cases (HSC) with an increased speed of 22 cases per minute compared to 15 cases per minute with the traditional RSC case-packing range. Moreover, the wrap-around version can run at up to 30 blanks per minute. Thus, if some brand owners are still operating today with RSC cases, choosing a WB47 still allows them to switch easily in the future to wrap-around blanks, thanks to this common platform and a simple upgrade kit. Additionally, the WB case-packing platform can perform ‘easy-to-operate’ up to fully automatic changeovers, thus reducing downtime when changing products, packaging, batch sizes or configurations. The average time for the changeover is five minutes, depending on the version. For those manufacturers who already have Cermex WB46 machines in their workshop, the new Cermex WB47 will not only widen their secondary packaging options but will also maintain consistency of case-packing assets, with operators and maintenance staff easily trained, while optimising spare parts management. “This was the case with two global brand owners who
were satisfied with their well-known, proven and reliable Cermex WB46 solutions and decided to acquire the new WB47 to complete their packaging options,” concluded Didier. The company designs and manufactures packing solutions for any secondary corrugated packaging. In 45 years, the company has installed 8,000 packers worldwide, including 1,000 wrap-around machines. Thanks to various infeed and collation systems adapted to the primary packaging types, more than 130 Cermex WB units have been sold with different configurations for different market category needs since 2017.
Furthermore, the company’s dedicated packing site in Corcelleslès-Cîteaux (France), where the WB platform is manufactured, received the official 'Vitrine Industrie du Futur' award in 2020. This prize recognises the implementation of Industry 4.0 initiatives with new technologies, such as robotics, cobotics, mechatronics, virtual commissioning, connected machines and digital twins. ‘Alliance Industrie du Futur' (AIF) also appreciated the site’s ambition regarding eco-design and its strategy for training and talent recruitment, including the co-creation of a robotics school.n

AFTER FEEDING WEST DELHIITES, THE TUMMY SECTION TO EXPAND PAN INDIA
A
casual and chic outlet in west Delhi known for its quirky shawarmas, Tummy Section screams fusion in all ways possible. The restaurant calls their shawarmas 'Shawario', which is their unique re-invented avatar for Delhiites to eat and fall in love with. Currently operating with five outlets, the restaurant is looking forward to expanding through a franchise model. They're planning to go, pan–India by 2025, starting from north India, followed by west, central and eastern parts of India. They are aiming at adding 20 additional outlets every year for the next five years to achieve their milestone. Started in 2009, the restaurant had a vision of fusing desi and videsi cooking styles to create something unique and finger-licking good. And that is how Shawarios came into being and became Delhiites first love. Customers have showered immense love on their Crunchwich, Ramly Range, and Cheeky Buns. Their first outlet was on Jail Road and considering its huge success, Malviya Nagar was chosen as the next location because it caters to a similar crowd. The brainchild of Yash Suri, Pankaj Arora, and Nikhil Arora, it is basically every gang’s dream venture. This trio is basically
the heart, mind, and soul of the restaurant, with Yash taking care of the finances, Nikhil in-charge of everything creative, and Pankaj holding the reins of operations. It has been up and running for 11 years and the trio says, “We never realised how all this time passed by so quickly because we love what we do, it never seemed like work to us. We have loved doing things together and seeing our baby grow into such a big brand.” Their journey has been very smooth since all the three founders have very diligently divided the responsibilities based on their skill sets. They have perfectly synchronised their ideas and style of working over the years and that’s quintessentially the secret of their success. Just like any business, the restaurant has its own share of highs and lows but the right team of people and good training help the owners achieve what they desire. Their products are highly standardised at all their outlets and that is what makes the restaurant what it is today. A few of the most famous dishes are Chicken Shawario, Ramly Burgers, and their Creamy Chicken Lollipops. The idea behind menu curation at the restaurant was largely focused on delivering what Delhiites love but in a unique manner.n

yoghurt. The flavor profiles for Yo Pop include Banana, Vanilla, Pina Colada and Mango. “French yogurts combines the goodness of milk, yumminess of fruits and probiotic cultures for good gut health and immunity and Yo Pop is a complete new experience in the category. With Mamie as our inspiration, we bring to you a complete blend of nourishment and fulfillment. We aim to ensure we can spread smiles through a unique experience filled with guilt free indulgence”, added Vivek. Brahmani Nara, executive director, Heritage Foods Ltd., said, “We take immense pride in introducing our milestone brand with a true world-class food and beverage organisation like Novandie, a subsidiary of Andros France. While Mamie Yova carries
the Frenchness into its product range, it also ensures the brand is deep-rooted in India. We have heavily invested in the state of art facility at Palghar, Maharashtra. Making it an Indian brand for the Indian consumers.” Emilie Moulard, country manager – India, Andros, said, “Yogurt has always been an important component of daily meals, in every household, in France. Since 1970 our yogurt brand in France, Mamie Nova, has been a consumer favorite. In India, the brand is making its debut with the name Mamie Yova, where Mamie means ‘grandmother’ - a term most families associate with experience, trust and tradition, while ‘Yova’ symbolizes being young at heart; thus, making a strong connection with the Indian audience. With our proven experience and legacy, we are positive we will achieve
Along with the launch of its two unique ranges of products, the brand is also taking a unique digital approach to replicate the in-person experience for its consumers. Using Augmented Reality (AR) based connected packaging, it is making its way to the phones and, thus, to the lives of their audience, overcoming challenges of physical distancing that needs to be followed amidst the pandemic. “Consumers will get a chance to engage with the brand and discover more about Mamie and the products, along with learning a new product usage. Unlike the typical scenario of undertaking on-ground activities during the launch, we are using AR to create a brand connect with the audience, explain them the product usage, and improve their experience. This is possibly the first instance of a dairy company using this approach, in India”, added Vivek.n

INNOVATIVE SOLAR ICE-MAKING MACHINE FOR INDONESIAN SMALL-SCALE FISHERMEN
High-tech solution from Southern Germany for a German-Indonesian project for rural development and to avoid food waste
Indonesia is the world's leading tuna producing nation and the second largest fish producer overall. However, small-scale fishermen who practice environmentally sound fishing methods are often unable to transport their fish to consumers due to a lack of refrigeration facilities. As a result, these fishermen find it virtually impossible to compete with industrial fishing; much of their catch is spoiled, causing poverty amongst the fishermen.
Indonesia's policy aims to conserve fish stocks and secure the income of fishermen in remote areas. The key factor in achieving this is to keep the catch continuously refrigerated. The GIZ initiated and provided support for the development of a solar powered ice-making machine. Together with a number of Indonesian, German and other European companies, the production of these machines was also established in Indonesia. Development began in 2016 and the pilot plant started up successfully in 2018 – the first commercial unit will go into operation in Indonesia in 2021.
sustainable basis, especially in remote and low-income regions of Indonesia.”
In accordance with the guiding principle of Industry 4.0, the innovative technology ensures the production of up to 1.2 tons of block ice per day, dynamically and automatically adapted to the amount of solar energy available. This does not require either a power connection or an expensive, large battery storage system, allowing ice blocks to be produced in locations away from power grids and used for cooling locally caught fish. Stegmüller from the GIZ: “This secures the income of fishermen who operate on a
Steffen Sinn, Area Sales Manager Asia, at the German fan producer Ziehl-Abegg, explains: „The highly efficient fan is using the low solar power to produce enough cooling energy which is used to freeze down the water.“ The secret behind the high efficiency of the fan is the blade design inspired by nature. Ziehl-Abegg is technology leader by biomimicry in the fan industry. “The edge of the blade is serrated similarly to the owl wings”, Sinn adds. “This fan design saves energy.”

ndonesia's small-scale fishermen in disadvantaged regions will in future be able to sell their products nationwide with the help of seamless refrigeration chains. This is being made possible by a solarpowered machine for the production of ice blocks. This innovative type of unit was developed as part of a multiyear German-Indonesian cooperation arrangement. “The fish is prevented from spoiling, with the ice being produced on a totally climate-neutral basis,” says Frank Stegmüller of the German Agency for International Cooperation (GIZ). “This is a genuine German-Indonesian success story.”
Components and know-how were provided free of charge during the development phase by the German companies Bitzer, Ziehl-Abegg and BAE Batterien. The development as well as technical support were provided by experts from the ILK Dresden [Institute of Air Handling and Refrigeration]. The solar powered icemaking machines are manufactured by the Indonesian industrial company Selaras Mandiri Tehnik (AIREF). Other project partners include REC Solar, ATW Solar, Studer and Omron.
