Kim Kardashian looks absolutely stunning in the February issue. Her natural beauty shines through and I like seeing her with a more toned down, fresh look. Simply perfection! stacey, SEATTLE
I loved the Q&A with Nadia G. of “Bitchin’ Kitchen.” Her show cracks me up! Will DList bring her out for a Northwest segment of the show?
Sheena, WA Sheena, She might be coming out to our Four Year Anniversary Party in June, mostly to fix sandwiches for the staff while we are setting the venue up… with an attitude! We tape everything so don’t worry.
Jennifer, We feel the same way. It would be great to share that article with the entire world! It’s appalling how some patrons can act towards people in the service industry. To get revenge, you should waltz in to an office building and look over a worker’s shoulder and every time they misspell a word yell “JOB OPENING!” and clap. Bastards. The fashion spread in February’s issue is fabulous. Very sexy, yet classy. Nice work!
Michelle, WA My future wife, Kim Kardashian, on the cover of DList?! That’s huge! You should definitely bring her out for an event so I can propose in person!
JEFF, WA Jeff, We will absolutely not do that for you. Her appearance fee would cost more than your wedding and our father is just not willing to foot the bill at this time. Maybe five year anniversary? That would be as HUGE as her… Loved “Proper Etiquette,” the follow up article to the “Bar Rules” one you guys did a couple months ago. I wish I could post this at each table at the restaurant I work at.
Jennifer, OR
Michelle Our amazing fashion department thanks you! We will personally tell them once they all finish shopping. Must be nice, ladies… I recently moved to Portland and was looking for some outdoor activities come springtime. Any suggestions?
Danny, OR Danny, Keep up with DList and we will have the inside scoop on the new Oregon Adventure Park that should be opening soon. We are going to take a trip and feature it soon. The editors are in really good shape so it should be a breeze.

After 18 years, Snoop Dogg is releasing a sequel to his 1993 classic studio album “Doggystyle.” Though little has been leaked about the album, Snoop Dogg took to his Twitter to brag about his collaboration with Swizz Beatz. Snoop has been relatively absent on the music scene for a while, but his comeback is evident with his feature in this year’s Billboard hit “California Gurls” by Katy Perry. If that single is any indication of what is to come, I’m sure Snoop Dogg won’t disappoint.

The Tourist MARCH 22 Most successful female actress? Check. Most successful male actor? Check. Boasting a cast list including Angelina Jolie and Johnny Depp is a guaranteed money maker for a film. And this one has both! “The Tourist” tells the story of a seductive woman (Jolie) who lures in Depp’s character to help her throw off some followers. The movie then takes off and is jam packed with action, comedy and classic Depp and Jolie charm. “The Tourist” is a must see for any action-loving movie goer.
TangleD MARCH 22 Loosely based on the tale of Rapunzel, “Tangled” is the 50th animated feature in the Walt Disney Animated Classics series. With the voices of Mandy Moore and Zachary Levi (the guy from “Chuck”), “Tangled” is family fun for everyone. Known as the most expensive animated movie to date (with a budget of $260 million), it is the epitome of a Disney mega-hit. For the kids and the parents to enjoy, “Tangled” hits stores March 22.
Burlesque March 1
Jackass 3D MARCH 8
What do you get when you combine Cher, Christina Aguilera and cabarets? “Burlesque.” With the classic story of a small-town girl hitting it big, “Burlesque” puts its own musical spin on it. Christina Aguilera plays Ali, a girl from a small town who moves to LA to make it in the big city with her big voice. She stumbles into a burlesque bar and immediately falls in love with it. The rest of the story is all makeup, lingerie and musical numbers. “Burlesque” is a musical movie lover’s dream.
The men of “Jackass” have been entertaining us for years with their ridiculous and painful antics. The release of “Jackass 3D” in theaters marked the 10-year anniversary for the franchise and proved that they still got it. Complete with the entire cast and guest stars like Mike Tyson, Seann William Scott and Brandon Novak, “Jackass 3D” is just as ridiculous as we’d expect. With three different DVD versions being released, the movie will be available on Blu-ray and in 3D in stores March 8.

The Adjustment Bureau
Written By Barlow Payne
3/4/11 Directed By - George Nolfi Starring - Matt Damon, Emily Blunt and Lisa Thoreson
Damnit. I was really looking forward to this one, but the rumors are that it’s just not really that good. And the fact that it has been delayed for several months doesn’t help matters any. When politician David Norris (Damon) meets and falls for ballerina Elise Sellas (Blunt), a secret group of people try to stop them from being together insisting that it’s “not part of the plan” and that they control our destiny and will stop at nothing to get “fate” back on track. Leave it to Matt Damon to ruin destiny for everyone. What a selfish prick. This movie is based on a short story by Philip K. Dick and as any sci-fi nerd out there can tell you, Phil is the man when it comes to thinking outside the box. Mr. Dick (No, not Andy) is responsible for such films as “Blade Runner,” “Total Recall,” “Minority Report,” “Paycheck,” “A Scanner Darkly” and “Next” just to name a few. So, to say Dick has been paving the way in the science fiction biz for sometime is an understatement. What I think is most amazing about Philip K. Dick is that he wrote most of the stories about 20 years before they
were ever made into movies. This is how ahead of his time he was. What I don’t get is how so many people can ruin his amazing storytelling with less than decent movie making. “Blade Runner” and “Minority Report” were amazing, if you ask me. Hell, even “Total Recall” is pretty bad ass. But movies like “Paycheck” and “Impostor” (who used scenes from “Armageddon” and “Starship Troopers,” might I add*) are so god awful that they’re not even fun. The stories are more than sound, but somewhere along the line someone stepped in and said, “No, no, no. This movie is supposed to suck!” and everyone on set was like, “Ohhhhh!” and then they all proceeded to make a complete turd of a movie. I could go on and on (even more so than I already have) about this, but I will get too worked up. I really want this movie to at least be fun, but it’s been shown before that good actors and a good story do not always a good movie make. *Sad Face* *No, Seriously, they actually spliced in scenes from these movies to finish “Impostor.” Go rent it if you don’t believe me. It’s worth it just to see how low a studio will go.
Take Me Home Tonight
Rango
All you need to know is that this movie takes place in the ‘80s, there is an epic house party, grand theft auto, boobies and something called “riding the ball.” Not Pulitzer Prize material, but who gives an eff. I’m sure it will be good for some laughs and at the very least, the soundtrack will be awesome. And if all else fails...there will be boobies. So, there’s that. I am gonna check this one out. Something tells me I might have scored it a little low.
Now, it’s no secret that I love cartoons so I might be a little biased saying this, but this one looks amazing. I mean, I’m as sick of Johnny Depp as the rest of you, but just go take one look at the trailer and tell me that you don’t want to see this movie. It’s a western starring a chameleon where the horses are chickens . I mean, what could be bad about it? The horses are chickens, for God’s sake!!! That. Is. Awesomely. Awesome. Give these people your money.
3/4/11 Directed By - Michael Dowse Starring - Topher Grace, Anna Faris and Dan Fogler
3/4/11 Directed By - Gore Verbinski Starring - Johnny Depp, Isla Fisher and Timothy Olyphant
The Beaver
3/20/11 Directed By - Jodie Foster Starring - Mel Gibson, Jodie Foster and Anton Yelchin
Now, I know what you’re thinking. “Jodie Fosters’ first movie after coming out is called ‘The Beaver?!’” And you know what? GROW UP! Gosh. This is a serious film...about a man who finds a beaver puppet in the trash and uses it to fix his life that is falling apart. OK... maybe the first idea is better. I am terrified of this movie. I am terrified of Mel Gibson. I am terrified of beavers. I will not be seeing this movie. It sounds like a dare someone offered to everyone involved. Good luck, Mel. You’re gonna need it.

Tilth Written by Jacklyn Tran Photography by Sam Cook, Claire Barboza, & Frank Huster Tilth: noun,1. the most fertile and bountiful layer of the earth’s soil, tilled to begin life. 2. the food experience of Tilth, a restaurant. Nestled in the cozy neighborhood of Wallingford is a little something called Tilth. Housed in an inconspicuous bungalow, this low-key eatery has been packing a delicious and environmentally-aware punch since 2006, drawing the attention and affection of food-lovers both near and far. Chef Owner Maria Hines, a 2009 James Beard Award winner, incredibly took just three weeks to open Tilth back in September of 2006. With the assistance of four other people and a great belief in the importance of sustainability and organics, the restaurant was assembled with that focus leading the way. Hines and company made and continue to make every effort to reduce their carbon footprint, doing much of the work themselves during the threeweek process prior to opening. They hand-sanded chairs, used eco-friendly bamboo plywood on tabletops and made their own curtains, among other tasks. Whether details large or small, from the patio built with wood monitored by the FSC (Forestry Sustainable Council) to the menus made of recycled paper, there is a “green” perspective behind it all. The Craftsman-styled houseturned-restaurant, by no means an overly extravagant expanse, is instead an inviting and homey retreat where
patrons are served in the once living room. Light and bright yellow walls warm you while simple candles and an effortless elegance from the muted décor soothe. The understated space is one that acts as a sort of canvas to the main attraction, as it creates a base that allows the spotlight to shine on the true artwork of the Tilth experience; the food. From the very first eye-catching plate, I was drawn into the beauty of each vibrant color, each textural variation and each carefully chosen ingredient, managing to stimulate my vision and tantalize my taste buds with each plate, each bite, the whole meal through. Clearly aware of their food’s affect on people, Tilth’s menu items come in two sizes to accommodate each guest’s specific desires. Whether wanting to have a taste of multiple items by ordering several small plates or wanting to savor a large plate of one favorite dish, both size options are available. A five course tasting menu ($60) with

a vegetarian alternative is also offered with wine pairings ($35). The exquisite Skagit River Ranch beef tongue ($9/$15), brined for 48 hours, cooked in a pressure cooker for an hour, chilled and then thinly sliced was wrapped with care around a piece of salsify (a root vegetable with a nutty, artichoke flavor). “A lot of Chef’s menu items are created with three ingredients, used in different ways to showcase that ingredient,” explained Chef de Cuisine Jason Brzozowy. The beef tongue was no exception to this rule, as its embellishments included grated horseradish atop and a creamy horseradish mousse on the side. Fresh green onion slivers joined the ground horseradish while green onion bits speckled the pickled salsify, making its third appearance in a green onion coulis alongside. Every morsel was a bite of delicate refinement. The wild mushroom plin, ($15/$25) a handmade, techniquedriven, pinched pasta was a rectangular pillow of parmesan and crimini
mushroom-filled, heavenly goodness. With sautéed hedgehog mushrooms, mustard greens and shaved parmesan, it made for an uncomplicated but pleasingly divine combination. With each dish served, staff was easily able to tell the story of where the ingredients came from; specifically which farmer, forager or fisherman and exactly where each could be found. With a strong dedication to organic products, Tilth was the second restaurant out of only three recognized in the whole U.S. to receive official organic recognition from the nonprofit organic certification group, Oregon Tilth. The first recipient was Restaurant Nora in Washington D.C. in 1999 and the third certification was given to Hines’ newly opened Eastern Mediterranean influenced restaurant, Golden Beetle. A sous vide sockeye salmon ($17/$27) from local fisher Pete Knutson, was a February favorite of the chef’s. Cooking at a low 120 degrees created a completely and uniformly mid-rare piece of salmon magnificence
INterview: Maria HInes What made you want to become a chef? I really enjoyed cooking and food. I grew up trying different things and cooking at home a lot.
Was there any specific moment you can remember that made you realize the importance of sustainability and began the path for your advocacy of sustainable ways, organic ingredients and local farms? Cooking in France. Everything in the restaurant I worked at was sustainable and local.
What are some easy tips for home cooks who want to be more sustainable in their own kitchen? Shop at the farmer’s market.
I hear you’re an avid rock climber. With all of your business ventures, are you able to find time to enjoy that passion? Not right now. Having two restaurants now, it kind of has me on the go at all times.
that was then dusted with sumac. A smear of pesto crowned the fish, arranged on a bed of deconstructed pesto components; parsley, pine nuts, garlic and olive oil with diced parsley root. A parsley root puree rounded out the dish while a crisp baked salmon skin added a delicious crunch. Juicy grilled Dakota beef top sirloin medallions ($21/$29) were paired with beautiful Full Circle Farm baby turnips and a creamy, truffled potato puree with a drizzle of house made Worcestershire sauce. With two restaurants on her hands now, Chef Hines splits her time between Tilth and Golden Beetle. When she’s away, however,
Love is exactly the vibe that seemed to ooze from Chef Brzozowy’s meticulous hands as he carefully crafted each aspect of every dish. “I taste these things all day, but I come in to eat quite often too,” Brzozowy revealed as he put the finishing touches on our dessert. “It’s really refreshing to come dine here and think, ‘Man, it is really good!’” With that, Chef Brzozowy set down a marvelous looking plate of olive oil cake ($9) advising that it united what he considered to be one of the best flavor combinations: fennel, olive oil and citrus. A peak at the dollop of fennel ice cream over the crunchy olive brittle,
“A lot of Chef’s menu items are created with three ingredients, used in different ways to showcase that ingredient.” - Chef Jason Brzozowy control of the Tilth kitchen is left in the capable hands of Chef Brzozowy, who was promoted from sous chef to chef de cuisine. “I started here as line cook and wasn’t quite confident and didn’t think I was very creative,” Brzozowy recalled. “But I was later put into the role of sous chef where I had to be both confident and creative and now I love it. Chef [Hines] is a great person to work for. She loves getting our input and our ideas.”
gleaming Satsuma tangerine segments with the moist cake and I was sold. Tilth is not only rich in creativity and flavor, but also in its purpose. The passion for food radiates from the menu just as strongly as the social and sustainable consciousness, the joining of which, continues to keep Tilth among the top culinary destinations in the region.
What were your aspirations as a chef early on? I was hoping I would be where I am now, ever since I was 16.
You’ve been on Bravo’s “Top Chef Masters” and Food Network’s “Iron Chef America.” Are there any reality shows you consider a guilty pleasure? I don’t watch television. I’d not even see the shows until I was invited to do them. Then I watched them on YouTube and decided to take part.
How did it feel to win your battle against Iron Chef Morimoto? Fantastic. We were definitely celebrating after.
Since being in the national spotlight on those shows, have things changed?
after airing, but things have leveled out.
What was the most challenging aspect of those experiences? Both were challenging in their time constraints and who you’re competing against. It was a lot of stress and exhilaration, which I like. That’s the restaurant business, though. If I had to choose two words to describe the restaurant business, those would be it.
If you had to eat one thing for the rest of your life, what would you choose? Chawanmushi, a savory egg custard. Custard is one of my favorite things to eat and Chef Taichi (Kitamura) makes a great one.
Tilth serves New American cuisine, while Golden Beetle will be influenced by East Mediterranean street food. Of your many travels, is there any country you’ve been to that you’ve just completely identified with? Morroco. The food was just so amazing and they had really amazing street food. I was really taken by that. I’ve always been fascinated by the food from that area. I went 10 years ago and it was really enjoyable.
You opened Tilth in 2006. How has your outlook or cooking technique evolved since then? I’ve been able to increase my dedication to organics and sustainability. As an owner, I have control of where my money is going so it’s very rewarding to know that I can decide where every cent is spent and that it works toward a cause.
Your latest and second restaurant, Golden Beetle, opened just last month. Should we keep our eyes peeled for a Maria Hines empire-in-themaking? Do you intend to open more restaurants in the future? No. For now, two’s definitely enough.
It’s been business as usual. There’s an increase right

Appetite Temptation Written by Alexis R. Smith Photography by Sam Cook To encourage the foodie in each of us, Licorous exists to tempt the palate before dinner and to soothe it after feasting. Oftentimes I’ve found myself tempted to skip dinner and not leave Licorous until closing. The menu boasts a drink for just about every taste or mood. My favorite menu items are the houseinfused alcohols. It’s always difficult to choose between an infused sipping flight or a cocktail featuring a Licorous creation. The best of the alcohols is the Shiso Vodka, followed closely by Hibiscus Tequila. When not looking for a vodka or tequila drink, I always order the lush bourbon-based Sign of the Times. Bartenders imagining far too many
incredible drinks for one menu make Licorous the ideal cocktail bar. If you know your tastes, alcohol preference or can’t choose, the bartenders thrive at turning your craving into the perfect spontaneous concoction. While at Licorous, I asked Jeshua Madden, a superb bartender, to stir up his favorite drink. A few moments later, after watching him muddle what looked like wasabi, the Emerald Weapon appeared in front of me. Amazingly crisp, the drink layered on a new refreshing bite at each sip. The Emerald Weapon is definitely worth a trip to Licorous. If you’re anything like me, at first taste you may forget dinner plans and stay for a night of palate-teasing cocktails.

TYPES OF GREENS Written by Kate Opatz The variety of greens you’re likely to find on Seattle menus is a testament to the Northwest’s prime growing conditions and the many species easily foraged nearby. These are a few more common types you’ll find braised, grilled, charred, creamed and tossed fresh in a salad.
KALE
Familiar to most of us, kale is a standby green in the Northwest. Actually an extremely nutritious form of cabbage, it is somewhat tougher than other greens. As a result, kale is at its finest when cooked; boiled, steamed, stir-fried or baked.
Escarole
Though it’s a member of the endive family, escarole is less bitter than other varieties. Hearty and healthy, escarole is perfect in salads or soups.
Radicchio
A member of the chicory family, radicchio is purplyred, with white veins. It’s both spicy and bitter, but the flavor becomes mellower after grilling.
Miner’s Lettuce
One of the first spring greens to be found, miner’s lettuce has delicate spade or round-shaped leaves. It has a very mild flavor, just a bit like spinach, and can be found growing wild near and even within Seattle.
Upland Cress Sorrel
Often forged locally, sorrel has a tart, lemony flavor. It can be used in soups, sauces or salads, much as you would spinach.
With a spicy, peppery flavor, upland cress is more pungent than watercress. It may be cooked like kale or kept raw in a salad or as a garnish.
Greens on Seattle Menus: Greens are wellestablished residents on Seattle menus. Though often found as side dishes and in supporting roles, their versatility and flavor mean they play vital roles in adding texture and color, flavor and nutrition. Some preparations just happen to be better than others, however. Here are a few places around town making greens into masterpieces.
Dinette
Lacinato kale salad with Fuji apple, radicchio, pecans, Beecher’s sharp cheddar and caraway vinaigrette.
Zoë
Charred and marinated escarole.
Bastille’s Rooftop Garden
Poppy
Radicchio, grapefruit, and taggia olive salad.
Local 360
Creamed baby kale with brioche and Washington parmesan.
Café Juanita
Curly endive with goose confit, grapefruit and pomegranate.
Book Bindery
Apple salad, pork belly, upland cress.
The most local greens in Seattle can be had at Bastille in Ballard. There’s no competition, really, because the arugula, miner’s lettuce, spinach and peppercress are all grown upstairs. The 4,500 square foot rooftop garden provides the restaurant with mostly salad greens, but also basil, radishes, beets, tomatoes and beans, season permitting. Designed and maintained by Colin McCrate of Seattle Urban Farm Company, the garden has now had two full summer seasons. McCrate checks in on the garden at least once a week, more in the summer, to replant, look out for plant diseases and maintain the irrigation system. The chefs harvest as needed. “It’s a busy restaurant,” McCrate said. “When things are going well in the summer, we’re giving the restaurant about 50 percent of the salad greens they need.” These greens can be found on the Bastille menu in the form of the Salade du Toit (salad of the roof), the beet and arugula salad, and the herbencrusted pan-seared salmon, to name a few.

GIVE THANKS TO THE MUSIC.
Located in Capitol Hill, the Capitol Club remains excellent in its entirety, being graced with talent that flocks through its doors. Written by Hannah Montgomery Photography by Sam Cook “Appreciation is a wonderful thing. It makes what is excellent in others belong to us as well,” as intellectually quoted by Enlightenment writer and philosopher, Voltaire. The Capitol Club shares the music from within to be appreciated by all. With an exceptional venue and gifted artists, various forms of excellence mesh together to creatively fashion a craved vibe so distinct, Capitol Club may be the only place to discover it. The authentic essence the owners draw into their environment streams in from eclectic faucets to gather, play as one and thus prove their undivided appreciation for music. Leihulu Iwi’ula, an owner of Capitol Club, proudly informed that diverse artists – both local and distant – convene to play at their venue not for the profit of money or extra publicity, but instead to share their passion for beautiful, inventive and well-enjoyed music to those with open ears. “A lot of groups roll through the Capitol Club and like it because I let them play whatever it is they want to,” Iwi’ula mentioned as she spoke of the venue’s flexibility, open-mindedness and vast amount of grass roots Capitol Club has graciously hosted. “It’s great! It’s just all these people coming together to collectively share their music and express artistic freedom. It creates a fun, bohemian vibe with no restrictions and that’s why people love it here.” Capitol Club has confidently built up its reputation for housing exciting nights filled with a wide variety of music, dancing, drinks, dining and lounging. Each night of the week has carefully been selected and opens to a new themed evening of fun. No, I do not mean bring out your collection of Halloween costumes or arrive dressed in your silly ‘80’s attire. (Although this would provide added entertainment for all and Capitol Club would surely welcome you.) Rather, I mean come Tuesday and experience a night entirely different from the one before. Here is the line-up: Monday nights are referred to as The Jet Set, hosted by DJ 100 Proof, DJ Swervewon and a different guest DJ, local artist or occasional record release party. Tuesday nights are creatively named Flamenco Night with flamenco dancing. Wednesdays are a mishmash of choices, with trivia nights, half priced wine bottles available or DJ’s spinning the tunes. Thursday nights offer $1 tacos and from 8 p.m. to 10 p.m., there is a stand up comedy show. Fridays open the door for

DJ’s playing sounds that will keep you dancing. If weekdays are too busy and tiresome because of your 9 to 5 occupation, weekends are crowned with lively DJ hosted nights such as Get Physical with DJ Edis and guests or Sunday’s all day happy hour, including many sporadic performances that tend to roll through. There you have it. An entire fun-filled, entertaining week of diversely themed nights to choose from, enjoy and appreciate for their individualities. Clearly this scene has much to offer and is not limited to your run-of-the-mill drunken late night out from 10 p.m. to 2 a.m. Instead, Capitol Club invites you in with open arms to join them earlier for excellent meals, small bites and tasteful drinks carefully crafted by a team of obviously experienced chefs and bartenders. The staff seems to create their treats out of sheer appreciation for their guests, though it is clear that we are the ones who should be grateful. In addition to savoring their scrumptious, tangible morsels, the lingering aura resting within their dimly lit walls creates a mood so comforting that being respectfully asked to leave at 2 a.m. is the worst part. The rustically tan and bronzed-painted walls with red accents throughout the rooms strategically graced by the plethora of white tea light candles and hanging star lanterns envelope you as if out for a warm evening in Tuscany. Columns and decorative wine glasses stand by and hang above the bar where adjacent small tables and an L-shaped couch line the walls, complete with purple and red pillows so deep in color they resemble the richness of delectable, fullbodied wines. With two full floors, dining, drinking and dancing are encouraged to fill every last square foot Capitol Club has to offer. On warm summer nights, the venue boasts an outside iron-made patio located on the second level to look out and admire Capitol Hill’s early evening crowd and vivacious nightlife. If it is not evident enough, I suggest you personally experience a night at Capitol Club to fully understand its greatness for yourself. It is absolutely exceptional and ideal for comfortable evenings of tasteful drinks and nights of hearty authentic music sure to satisfy all moods yearning to lounge or even dance the starry nights away. With this much to offer, one has to wholly appreciate Capitol Club’s talent to welcome, comfort and entertain its guests. Drop in and melt into part of the crowd. There is no sense in remaining a stranger.

Loch Ness Monster Loch Ness is a large, deep, freshwater loch in the Scottish Highlands. It is commonly known for the legendary sightings of the Loch Ness Monster. Lox and Cream Cheese Lox, or smoked salmon, is a very thin fillet of salmon that has been cured and cold smoked. Smoked salmon is consumed in many parts of the world. The word lox is a Yiddish word for salmon. Although lox is cured and smoked, it is not cooked, leaving the fish smooth and pink. In the United States, lox are served in very thin slices and are enjoyed primarily as a breakfast food. GETTING TO K Taking a leap of faith is never easy. This is especially true when that leap spans from continent to continent like the one that the Seattle Sounders’ No. 1 draft pick, Michael Tetteh, took as a teenager. He’s gone from playing backyard soccer in Ghana to get to where he is today; a professional soccer player getting ready to play on a pitch where more than 30,000 fans will be in attendance. “Soccer is everything for a lot of kids who grow up in Ghana,” Tetteh commented. “It was for me.” He grew up in Odumasi, a small village in eastern Ghana populated by less than 10,000 people where he and his family made do without much. Although his father’s job brought his family to the capital city of Accra for a period of time, Tetteh left his lifestyle and his family behind when he moved to the United States at the age of 16. Tetteh didn’t hesitate when the opportunity to play soccer in America came to him. He took part in a Ghanaian organization called Right to Dream that aims to help underprivileged children reach their true potential in life through sport and education. This organization was a pivotal point in Tetteh’s life. “Right to Dream was everything for me,” he stated. According to Tetteh, being a part of the organization made him who he is today. “I learned everything about soccer. I learned how to take responsibility for myself, have respect for others and pretty much just how to become a good person,” he added. “I was very, very fortunate that I got to be a part of Right to Dream.” After an intense period of training camps and tryouts, Tetteh was offered a scholarship to play soccer at the Dunn School in Los Olivos, Calif., where in his three-year tenure he earned numerous accolades such as being named to the First Team All-Division, MVP and Most Inspirational Player. He was able to accomplish this despite making an enormous transition. “I’ve been through the experiences that have made me a very strong person and I do a very good job of taking care of myself,” Tetteh said. “So when I moved to the States, I was able to adjust very easily.” Coupled with his life experiences, he attributes his success to the support system as well as the nature of the people who surround him on a day-to-day basis.

“That’s something that I like about people here in America,” he commented. “If you have a talent and want to do something with your life, you have people who support you. So I was very fortunate to meet great people in Santa Barbara who have affected my life so much.” Having this support system and working as hard as Tetteh did led to him becoming a highly-touted college prospect, eventually choosing to attend the University of California Santa Barbara. Though it is now evident he accomplished a great deal during his time there, eventually becoming a Generation Adidas player and entering the MLS SuperDraft a year early, he had to overcome even more obstacles throughout college. “I went through a phase where I was injured and that was very tough for me,” he stated. He had to sit out for months because of an injury that went misdiagnosed. Eventually the root of the problem turned out to be a hernia that Tetteh underwent surgery to fix. But this was not the end of his struggles. “I was recovered from the surgery when training started, but then I hurt myself again,” he recalled. “I tore a muscle, my obturator muscle, and I sat out for four weeks after that. Once I came back and played my first game, I was back and I sprained my ankle, so it was a very tough season for me.” Fortunately, Tetteh was able to find the silver lining wrapped around all his injuries. “It was a hard time for me, but I learned a lot,” he said. “I did a lot of thinking about where I’m heading in life. I learned a lot from it and now I feel great. Now I also do yoga a lot, I eat healthy, I do good things for my body and I take care of myself.” Being healthy and staying that way is now a must for Tetteh as he is fighting for playing time with the Sounders. “I know I have to work hard for a spot on this team,” he commented. “My goal is to learn from the other players and to hopefully just get out there and play.” By getting drafted by the Sounders, he is already one step closer to realizing his dreams that he has worked at for a lifetime. “When my name was called at the SuperDraft, I thought to myself, you know what, this is going to be a perfect fit.”

BACK TO BASICS
The fashion industry has begun to adopt and promote eco-friendly methods of production and manufacturing. Designers, retailers and consumers have become more eco-conscious when it comes to their clothes. Why is it Written by Kyla I. Stelling important to keep our wardrobes both stylish and sustainable? Large green tags with “Organic Cotton” written in bold are attached to a rack of white T-shirts. These tees are showcased and set apart from the regular, non-organic tees. One must wonder what the difference is between the two seemingly identical shirts. They feel the same, they’re uniformly sewn and dyed. Yet one set is organic and the other isn’t. In a world that has become exceedingly ecoconscious, we’re bombarded with terms and labels that are oftentimes difficult to discern. Organic, fair-trade, sustainable, eco-friendly, vegan…What does each mean in relation to our clothing? What are the benefits, exactly, of organic cotton? Why does it matter whether shoes are vegan? Is eco-clothing the new, avant-garde trend or is it a major movement that will change the standard of material production and fashion design? In order to be a conscious consumer, learning to clearly identify and define what makes a product “green” is important. In recent years, fashion designers and clothing stores have been attaching these “green” labels to their products without much explanation to their significance. Looking at some of the most commonly used terms, we can focus on what each label means and understand its social and environmental benefits. There is concern that while ethical fashion is better for the environment, it might compromise the aesthetics or design of clothes. Earth Pledge, a company that partners with businesses and communities to accelerate the adoption of sustainable practices, kicked off New York Fashion Week in 20008 with a runway show of sustainable designs. The show included 28 looks created by leading designers including Versace, Givenchy, Maison Martin Margiela, Donna Karan and Jil Sander. Rather than using traditional luxury fabrics like silk and cashmere, these designers utilized more earth-friendly materials such as sasawashi, peace silk and hemp. The show was a success, proving that clothes could be both beautiful and ethical. It dispelled the worry that we might have to sacrifice our style if we want to be eco-friendly. British fashion designer Stella McCartney is known for the environmentally friendly and ethical measures she
36
“The best investment on earth is earth.” -Louis J. Glickman
takes in her work. She approaches sustainability by finding leather and fur alternatives, implements organic and recycled materials into her designs and utilizes eco-friendly methods of production. In a 2009 interview with Above Magazine, McCartney explained where her environmental ethics derive from. “Ethical thinking is a parcel of the way we were brought up. It first came from diet. When it came to working in fashion, it would have been very hypocritical of me to work with leather and fur. For [my family], being vegetarian was never about health, but because we didn’t believe in killing animals. So I started addressing it more in my work.” McCartney extends her eco-consciousness to all realms of environmental sustainability. Stella McCartney Ltd is a certified carbon neutral company that in 2009 recycled 2,563 kilograms of paper and 1,408 of plastic. McCartney’s shipping bags are made of corn products and are 100 percent biodegradable. McCartney remarks that making fashion ethical should be more of a mindset rather than a feeling of guilt and constriction. “There are organic fabrics, low impact dyes,” She stated. “My fashions are mainly made in Italy, so child labor is not an issue for us. We do a lot on fair trade. The first question that comes up when we open a store is can we use wind power? Sometimes we can, sometimes we can’t. Because it’s a mindset, it comes quite naturally. When we can make things better, we do it. We do things on an achievable level in order to make it happen.” It’s unrealistic to ask people to convert their entire clothing collection into a conclusively organic, fair trade, vegan wardrobe. As a forward-thinking fashionista, the best thing to do is be mindful of where your clothes come from, how they’re made and who’s making them. There are a number of designers that are making a conscious attempt to use environmentally friendly materials and practice socially responsible methods of production. And while sometimes their clothes aren’t purely green, they still have eco-merit. Environmental awareness of clothing and textile production seems to be more than just a brief fad. Going green appears to be a growing fashion trend. One that we will likely see reoccurring for quite a few seasons.
ORGANIC The term organic is used in reference to a fabric and its manufacturing process. Organic fabrics come from natural fibers, like cotton, and have not been treated with chemicals or undergone any artificial procedures. Conventionally grown, non-organic cotton uses pesticides and nitrogen-based fertilizers during its plantation process. The Environmental Justice Foundation reports that cotton uses 2.5 percent of the world’s cultivated land yet uses 16 percent of the world’s insecticides, which is more than any other single major crop. According to The Daily Green, a publication that promotes responsible consumerism, “Researchers have found that the fertilizers used on cotton are the most detrimental to the environment, running off into freshwater habitats and groundwater and causing oxygen-free dead zones in water bodies.” Organic cotton farming does not involve any synthetic chemicals, but instead uses natural alternatives that won’t compromise the environment or our health. In the final processing stages, organic cotton-fabric doesn’t involve any bleaches or toxic chemicals.
VEGAN Vegan clothing and fabrics are used to circumvent animal cruelty. They focus less on the environmental impact of a textile or fabric. Vegans avoid using or wearing anything that comes from animals, regardless of whether the animal is harmed. Fibers and materials that are not considered vegan include wool, leather, feathers, silk and fur. Synthetic or natural microfiber, PVC (pleather) and rubber are vegan substitutes for leather products. Plant-based fibers such as cotton, linen, bamboo, hemp and jute are also classified as being vegan.
FAIR TRADE Fair trade is a social movement that aims to create better working environments and trading conditions for workers and producers in developing countries. It advocates higher social and environmental standards. Actress Emma Watson recently collaborated with fair-trade fashion brand, People Tree, to design a collection. “It’s important to differentiate between fast fashion, which is made very quickly for a small price, and fair-trade fashion,” Watson responded when asked if it’s possible to enjoy high-street fashion and also support fair trade. “So if you buy a T-shirt for $2, you just have to do the math and work out how much the person who made it is being paid.”

Studio Karri L | Wax Sabbath | Shampoo Bar
4105 East Madison Street Suite #1 Seattle, WA 98112 www.studiokarril.com
Written by Kayleigh Capelle Photography by Doug Betzold In Seattle, being green is widely promoted for most aspects of living. A good majority of us make an attempt to do our part in keeping our beautiful city (and world) clean. What many of us haven’t realized is that taking care of our ecosystem should really start with taking care of ourselves, specifically in our beauty care rituals. The owners of Studio Karri L, Wax Sabbath and Shampoo Bar have mastered the art of looking and feeling beautiful in an all-natural way. Let’s try an experiment. Take a deep breath, close your eyes and try to imagine the best pedicure ever. Did you find yourself relaxed by the scent of essential oils like lavender and Roman chamomile? Cozied up under warm blankets and enjoying an impressive foot rub? Then you were probably sitting in Studio Karri L. For the past 10 years, owner Karri Patton has been pampering a very elite group of women who really know how to take care of their nails. Tucked away in the main shopping/dining area of Madison Park, Studio Karri L is Seattle’s only all natural nail care and reflexology salon. All products used are paraben free and the nail lacquers are all classified as “3 Free” (lacking toluene, formaldehyde and dibutyl phthalate, chemicals that have been linked to cancer and other health problems). The organic theme lies not only in the products carried in her salon, but also in the demeanor and, dare I say, the “energy” that Patton creates in this comforting, hidden oasis. When asked what kind of atmosphere she wished to create when opening her salon Patton
5701-C Airport Way S. Seattle, WA 98108 www.waxsabbathspa.com
stated, “You can get a mani/pedi anywhere, but here it’s an experience.” The one-on-one treatments with Patton and the top-of-the-line nail lacquers are reason enough to pay her a visit. I recommend Cajun Shrimp by O.P.I. for a vibrant spring shade. On a surprisingly sunny and warm January day, I had the opportunity to explore the historic neighborhood of Georgetown and met some very warm-hearted businesses owners. One was Sandy Roden, owner of Wax Sabbath Eco-Friendly Waxing Spa. Hopefully, all of my fellow rock ‘n’ roll junkies out there can appreciate the pure genius of the name Wax Sabbath, as a tribute to one of the greatest bands of all time, Black Sabbath. This immediately amped my excitement for visiting this Earth-friendly spa. As I entered the vintage door of Wax Sabbath, my high expectations were immediately met. The atmosphere not only catered to my eclectic tastes, but it was also quite relaxing. Since opening in April of last year, Wax Sabbath has built a strong customer base, mostly in favor of the specialty Brazilian wax treatment. When getting a Brazilian or any other waxing treatment, being gentle with the skin is of utmost importance. This is why Roden only uses natural-based wax. She also provides each client with the information and natural-based aftercare products to keep skin healthy and smooth. Along with the products used, Wax Sabbath is totally dedicated to environmentally friendly practices; from cleaning products and biodegradable trash bags to organic
cotton swabs and linens. If you’re as dedicated as I am to taking care of your skin and following safe hair removal practices, Wax Sabbath needs to be worked into your spa scheduling. When coloring my hair in the past, I never really considered doing it organically. In fact, I never really knew that was an option if I actually wanted the color to stay. Nancy Cole, owner of Shampoo Bar Organic Salon, showed me a very fun, all-natural way to keep my color up to date. Many of you may already be familiar with henna hair dying, but for those of you that are not, you’re in for a treat. Cole has found a way to create organic dyes, using henna and other plantbased powders like cassia and indigo, to create your desired shade. Her secret? She mixes natural herbs to lighten or darken the color. In my experience at Shampoo Bar, a black tea was mixed with henna to create an auburn color with depth. Not only is the mixing of the plants and herbs an exciting process, it’s also extremely healthy for your hair. Although this form of dye is only semi-permanent, Cole informed me that her clients come in for touchups just as often as clients who dye their hair, well, non-organically. The whole atmosphere of Shampoo Bar has adopted an all-natural theme. There is plant life everywhere (which I found to be quite energizing). Only organic products are used and the tea not used for dying is brewed in a cup just for you. Talk about a relaxing salon visit. Nancy Cole goes out of her way to create an experience tailored to each individual specifically.

Le Frock Le Recyclé, C’est Chic Written by Steven Dolan Photography by Doug Betzold A source of vintage finds for almost 20 years, Le Frock has left a glamorous mark on the Capitol Hill landscape. It doesn’t hurt that this lovely little establishment helps alleviate your mark on the world and your pocketbook. Walking into Capitol Hill’s Le Frock is much like stepping into a treasure trove, but instead of piles of golden coins, the boutique offers the discovery of a covetable array of vintage and recycled fashion. Le Frock has a little something for everyone, offering contemporary and vintage pieces, designer and otherwise. “It doesn’t have to be designer if it’s cute,” explained manager Paula Lucas about the buying policy. She noted that the store will not sell anything “too terribly conservative.” This adventurous frame of mind has manifested itself on the racks, walls and displays with a vibrant, multi-colored Gianni Versace sweater from the ‘90s at one end of the store and a more contemporary, voluminous, charcoal-gray Monique Lhuillier gown hanging from another. Le Frock is visual overstimulation at its best and most beautiful. A longtime staff member, Gentry Michaels, functions as a designer clothing expert. As he took me through the standout pieces, he asserted “people actually dressed” in this manner when what we call “vintage” was being produced and worn new. With such a comment, Michaels touched on the precious nature of vintage fashion. Le Frock’s customers will leave having bought
something special and distinctive, not a piece of a silently designated uniform. Not only are the clothes exceptional, but they come at a reasonable price. For example, a Roger Vivier for Agnes B. bootie in “excellent condition” is priced at $88, while a new, fairly simple Vivier flat from bluefly.com will put you back nearly $400, before tax and shipping. In fact, Le Frock has an entire section dedicated to pieces 50 percent off market price. Another fantastic benefit of shopping through Le Frock is the environmental aspect. Quite simply, recycled clothing offsets the demand to manufacture new clothing, which depletes resources and causes pollution. “Clothing is so disposable in this day and age,” Lucas lamented, obviously disappointed that quality clothing isn’t cherished and that fast fashion has taken its toll on the environment. Le Frock’s beginning, nearly two decades ago, predated the ever-present green movement, thus successfully achieving an innate environmentalism before it became cool. This is just one of the numerous indications that throughout its lifetime, Le Frock has managed to evolve and stay relevant, which is a true measure of style.
