June 20 Relay for Life Relay For Life represents the hope that those lost to cancer will not be forgotten, that those fighting cancer will be supported, and that one day cancer will be eliminated. Discover the outdoors at wildlife sanctuary
E
arly summer is a wonderful time to quietly observe the young of spring. Look for deer fawns hiding behind their mothers, bear cubs exploring their new world, and eaglets demanding to be fed. Experience the vibrant colors and fragrances of early summer woodland wildflowers including the showy pink lady slipper. Listen for songbirds as they settle in for the summer season. 24 | SUMMER SCENE | JUNE 2014
Wildlife watching Here at Tamarac, wildlife is left undisturbed as they care for their young. Portions of the refuge are closed to the public during this crucial time, but many viewing opportunities can still exist. The most optimum times for viewing wildlife occur around sunrise and sunset. But sometimes even an afternoon visit can be rewarding to the quiet, watchful observer. To increase your chances of see-
ing wildlife, explore the edges of the lakes, marshes and meadows of the five-mile Blackbird Wildlife Drive. If you feel inclined to exercise, hike the two-mile long Old Indian Hiking Trail and experience the beauty of the maple-basswood forest. Another option is to venture out on the North Country Trail, which traverses 14 miles through the southern, half of the refuge.

lakes open to fishing. There are many varieties of fish to be caught including crappie, walleye, sunfish, northern pike and bass. A fishing map and regulations can be obtained at the refuge information kiosks.
Visitor Center If you’ve got questions, our enthusiastic staff has answers. We are eager to help you make the most of your visit. Check out our interactive exhibits and learn about the divers habitats, which support Tamarac’s many species of wildlife. Learn about the historical use of the refuge including old Ojibwe Indians and the European settlers. Be sure to view our large screen presentations entitled: “Tamarac: Its life and Legends.” Before you leave, browse in the Tamarac Bookshop. Proceeds from sales support educational programs at the refuge. The visitor center hours are Monday-Friday, 8 a.m. – 4 p.m. and weekends 10 a.m. – 5 p.m.
April showers bring May flowers (June showers don’t hurt either) This common saying is especially true to Tamarac National Wildlife Refuge. As many of us wait for the storms to cease and the sun to shine, trees and flowers soak in the rain, waking up after a long winter to enjoy the spring and summer months. Along with the fresh smells of spring comes a feeling of excitement. Waiting in anticipation for colorful flowers to bloom, among these flowers, the Marsh Marigold; a simple, beautiful, historic plant. Marsh Marigolds are commonly found in, well, marshes. They light up swamps, streams and damp fields with their vibrant yellow pedals and shiny green leaves. One of the first flowers to bloom, they become abundant in mid-May. The bright yellow lights up dark, swampy areas, making the marigold an inspiration to many a poet. Jean Ingelow, inspired the marigolds beauty, wrote:
O velvet bee! You’re a dusty fellow! You’ve powdered your legs with gold. O brave marsh marybuds, rich and yellow, Give me your money to hold! Along with being an inspiration to poets, the marigold was also used as a medicinal plant. Boiled, to remove acrid irritants, the marigold was then put into cough syrups, though some say the syrups would have worked just as well without it. The flowers leaves were also used as a side dish, people raving that it was even better than spinach. American Indians long consumed the leaves as an everyday vegetable. The marigold has a rich history and is a wonderful sign of spring. If you want to wander into the woods for a day to find these, and many other beautiful flowers, come walk the trails of Tamarac Wildlife Refuge. The marigolds can be found in abundance on the Blackbird Wildlife Drive near stop 6, along highway 29 south of Pine Lake, and on the North Country Trail, about one mile from the 400th Ave. access. Be sure to get outside and enjoy the natural beauties of spring and summer while they last!

SUMMER RECIPES GRILLED LEMONPEPPER ZUCCHINI
Serves: 4 Prep time: 20 minutes Cook Time: 35 minutes
Ingredients 2 small yellow squash, sliced 2 small zucchini, sliced 1 small onion, diced 1 red bell pepper, minced 1 1/2 tablespoons extra-virgin olive oil 1 tablespoon lemon-pepper seasoning Directions 1. Preheat an outdoor grill for high heat. When hot, lightly oil grate. 2. Combine the squash, zucchini, onion, and bell pepper in a bowl; drizzle with olive oil; sprinkle with lemon-pepper seasoning; stir to coat. Place the vegetable mixture in
the center of a large sheet of aluminum foil. Top with another large sheet of aluminum foil. Roll the edges of the foil sheets together to seal into a packet. 3. Place packet on the preheated grill. Cook until the vegetables are tender, about 30 minutes, turning the packet every 5 to 10 minutes.
STRAWBERRY SHORTCAKE Serves: 18-inch round cake Prep time: 30 minutes Cook Time: 20 minutes
Ingredients 3 pints fresh strawberries 1/2 cup white sugar 2 1/4 cups all-purpose flour 4 teaspoons baking powder 2 tablespoons white sugar 1/4 teaspoon salt 1/3 cup shortening 1 egg 2/3 cup milk 2 cups whipped heavy cream
Directions 1. Slice the strawberries and toss them with 1/2 cup of white sugar. Set aside. 2. Preheat oven to 425 degrees F (220 degrees C). Grease and flour one 8 inch round cake pan. 3. In a medium bowl combine the flour, bak-
ing powder, 2 tablespoons white sugar and the salt. With a pastry blender cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg and milk. Stir until just combined. 4. Spread the batter into the prepared pan. Bake at 425 degrees F (220 degrees C) for 15 to 20 minutes or until golden brown. Let cool partially in pan on wire rack.
5. Slice partially cooled cake in half, making two layers. Place half of the strawberries on one layer and top with the other layer. Top with remaining strawberries and cover with the whipped cream. Recipes found at www.allrecipes.com
MEXICAN BEAN AND RICE SALAD Ingredients 2 cups cooked brown rice 1 (15 ounce) can kidney beans, rinsed and drained 1 (15 ounce) can black beans, rinsed and drained 1 (15.25 ounce) can whole kernel corn, drained 1 small onion, diced 1 green bell pepper, diced 2 jalape単o peppers, seeded and diced 1 lime, zested and juiced 1/4 cup chopped cilantro leaves 1 teaspoon minced garlic 1 1/2 teaspoons ground cumin salt to taste

1. In a large salad bowl, combine the brown rice, kidney beans, black beans, corn, onion, green pepper, jalape単o peppers, lime zest and juice, cilantro, garlic, and cumin. Lightly toss all ingredients to mix well, and sprinkle with salt to taste. 2. Refrigerate salad for 1 hour, toss again, and serve.
