JUNE 23-25 HOPEFEST Hope Fest is a family-friendly event that brings in nationally-known Christian musicians to the area. Hope Fest hits the stage If country music isn’t your thing, there are other music festival options
available this coming summer. Hope Fest 2017, for example, is an annual Christian music festival that will take center stage in Detroit Lakes from June 23-25. This year’s featured artists are Disciple, Colton Dixon, Rapture Ruckus, Jamie Grace, John waller and Point of Grace. Camping is available on-site and the event is family-friendly, with face painting, inflatable games, hayrides and a worship bonfire--all free of charge. Throughout the duration of the festival, there will also be a prayer tent available for concert-goers to utilize for prayer and reflection.

Show off your tough side If the usual summer fun is getting monotonous, try something a bit more exciting to kick off your summer. For another year in a row, youth ages four to 14 will have the opportunity to spend an afternoon getting dirty and having fun while participating in a challenging obstacle course. The annual Tough Laker Youth Obstacle Course will give four to six year olds the chance to tackle a ½-mile obstacle course. Meanwhile, seven to 14 year olds can take on an entire 1-mile course. Kids will have the chance to be leap, crawl, balance and climb over a variety of different obstacles at this unique, fun-filled event.

une evokes heart-warming images of bright-eyed and bushy-tailed arrivals. Wildlife, both furred and feathered, are proudly parading and dutifully feeding their new offspring. Peeps from hollow trees in the depths of our forests are heard, as young grey squirrels explore their new domain. Timid fawns are nursed by Whitetail does, while goslings can be seen bobbing between attentive parents. Tamarac is a fantastic place to observe the undisturbed delicate process of rearing young in the wild. Some of the most ador-

able sights to see are the ducklings, but these bundles of fuzz can be the hardest babies to spot. A day in the life of a duckling isn’t all it’s cracked up to be. Surviving the 50-70 days it takes a duckling to be ready for flight is tough. Research has shown that duckling survival is the second most influential factor contributing to the success of a duck population. Even before they hatch, ducklings work hard to ensure their own survival. An average clutch size for both diving and dabbling ducks can be as large as 9 eggs. To make sure no one is left behind, the ducklings make a sound from 18 | SUMMER SCENE | JUNE/JULY 2017
within the egg called “pipping” to coordinate hatching to within 12 hours of each other, despite having been laid up to 10 days apart. Within 24-48 hours of hatching, the ducklings are ushered to the nearest wetland to feed. Luckily, their feathers provide great camouflage from predators like largemouth bass, northern pike, foxes, raccoons and mink, who all have an appetite for hatchlings. The most serious challenge faced by ducklings is actually something humans can help them overcome, that’s right-you! The most productive landscape for their survival is a healthy system of abun-
dant seasonal wetlands. Over half of the United States wetland areas have been lost, and more are threatened by drainage and drought every day. The National Wildlife Refuge System fights to protect unique habitats like seasonal wetlands, and supporting that conservation effort is a great way to give the ducklings a fighting chance. Wood ducks, ring-necked ducks, blue-winged teal, and mallards are the four most common duck species nesting in your local wetlands. HEALTHY MARINADES ADD FLAVOR TO GRILLED FOODS Bonnie Brost, licensed and registered dietitian at Essentia Health
S
ummer means healthy menu options as we start grilling lean meats, chicken, fish and vegetables--and marinating can add robust flavors. Grilling red meats to the point of charring can increase the heterocyclic amines that have been connected to increasing the risk of cancer, but marinating meats first may help decrease this risk, according to the American Cancer Research Institute. Marinades have three parts: an acidic liquid, oil and seasonings. Common acids include vinegars, citrus juices, yogurt, buttermilk or wine. The acid causes the tissue on the meat’s surface to break down, which allows more moisture to be absorbed and results in a juicier product. Leaving meats in a marinade too long, though, may “chemically cook” them and cause the surface to turn mushy. A variety of oils can be used, and spices and herbs add a wide variety of flavor. A general rule is that you need about ½ cup of marinade for each pound of meat or two pounds of vegetables. And, while many marinades are high in sodium, about one-third of the sodium and calories of the marinade will be absorbed by the meat or vegetables. However, many bottled marinades have 300 to 600 milligrams of sodium in each tablespoon and, even if only one-third is absorbed, that’s still 100 to 200 milligrams of sodium. The solution? Make your own marinades at home using fresh ingredients. Marinating time depends on the type, cut and size of the meat; thinner cuts 20 | SUMMER SCENE | JUNE/JULY 2017
require less time. For example, steaks or chops need to marinate for two to four hours, while a whole roast needs four to six hours. Fish and vegetables require very little time (15-30 minutes). Note that meat that is still frozen will not absorb a marinade, so be sure to thaw first. Follow these guidelines from the Academy of Nutrition and Dietetics while marinating to reduce the risk of foodborne illnesses: - Contain it. Marinate food in a container, preferably glass or food-grade plastic. Don’t use metal or glazed pottery, as the acid in the marinade can interact with it and may add lead. Foodgrade plastic, resealable bags are convenient, but must be disposed of after use. - Let the refrigerator be your friend. Make sure the container of marinating food is fully covered and store it in the fridge--not on the kitchen counter. This will keep food out of the temperature danger zone (40 to 140 degrees), when harmful bacteria can multiply rapidly and cause foodborne illnesses. If traveling, pack marinating meat with ice to maintain temperature. - Never reuse marinade. Crosscontamination can occur when a marinade is used with raw meat, poultry or fish and is then reused “as is” on cooked food and can lead to food poisoning. Used marinade needs to be boiled to destroy harmful bacteria before being used as a sauce. Here are some healthy marinades to get your summer off to a great start:
CHIPOTLE LIME MARINADE This marinade is great with lean pork, chicken, fish or vegetables. Makes about ¾ cup. Ingredients 1 chipotle chili pepper in adobo sauce plus 1 teaspoon of the adobe sauce ½ teaspoon minced garlic 1 tablespoon canola oil ½ cup orange juice 3 tablespoons fresh squeezed lime juice 1 tablespoon red-wine vinegar 1 teaspoon dried oregano 1 teaspoon salt ¼ teaspoon fresh ground pepper. Directions Place all ingredients in a blender or food processor and blend until smooth. Pour mixture into a gallon zip-lock bag or glass container. Use ½ cup per pound of meat or two pounds of vegetables. Nutrition Facts Servings: 12 Servings size: 1 tablespoon Calories: 14 Total fat: 1 gram Saturated fat: 0 grams Sodium: 35 milligrams Carbohydrates: 1 gram Protein: 0 grams

½ teaspoon ground cinnamon 5 dashes of hot sauce Directions Heat oil in small saucepan. Add onion and garlic; cook about 2 minutes. Transfer to a small bowl. Stir in remaining ingredients. Add up two pounds of protein of your choice.
BIG BOLD MARINADE This marinade is wonderful on all kinds of meat and fish as well as firm tofu. I adapted this recipe from eatingwell.com. It makes 1 cup. Ingredients 2 tablespoons canola oil ¼ cup onion, finely chopped 2 tablespoons minced garlic 3 tablespoons reduced-sodium soy sauce ¼ cup red wine vinegar ½ teaspoon freshly grated orange zest ¼ cup orange juice 2 tablespoons packed brown sugar 2 teaspoons ground allspice ¾ teaspoon fresh ground pepper ½ teaspoon dried thyme ½ teaspoon ground cloves

LEMON AND GARLIC MARINADE This is a great marinade for vegetables, fish and lean beef. Makes ¼ cup. Ingredients 1 tablespoon olive oil 2 tablespoons lemon juice 1 tablespoon lemon zest 1 teaspoon minced garlic 1 teaspoon Paul Prudhomme’s Magic Salt-Free

WILDLIFE WATCHING Here at Tamarac, wildlife is left undisturbed as they perform the mating rituals of spring. Portions of the refuge are closed to the public during this crucial time, but many viewing opportunities still exist. The most optimum times for viewing wildlife occur around sunrise and sunset. But sometimes even an afternoon visit can be rewarding to the quiet, watchful observer. To increase
your chances of seeing wildlife, explore the edges of lakes, marshes and meadows the 5 mile Blackbird Wildlife Drive. If you feel inclined to exercise, hike the 2 mile long Old Indian Hiking Trail and experience the beauty of the maple basswood forest. his summer, kids in the Detroit Lakes area will be mixing media with meals at the Boys and Girls
Club. The program, “Picture Us Cooking,” is led in partnership with the University of Minnesota Extension, Becker County 4-H and SNAP-ED and focuses on teaching children about cooking nutritious, delicious foods while also gaining some basic photography experience. “At the beginning of their class, they’ll choose one plant and watch it grow throughout the summer, and they’ll do some journaling and do some measuring,” explained SNAP-ED Educator DETROIT LAKES NEWSPAPERS
Donna Anderson. “My portion is more focused on the nutrition part and healthy snacks, while Leigh (Edward)’s curriculum is specific to 4-H and will help the kids learn how to take pictures and learn what they’re doing with a camera. We thought it would be cool to incorporate it all together.” The children participating in the program attend the Boys and Girls Club and will be planting the herbs provided through this year’s One Vegetable, One Community program--basil and oregano. The program begins on June 20 and runs through August 15. According to Anderson, the children
will be learning about how to effectively read nutrition labels, how to create easy, healthy snacks and how to share that information with their parents at home. The kids will get the chance to do some gardening with a Master Gardener through the University of Minnesota Extension program, too. “We’re hoping that the kids will want to grow food or that they will at least see how it grows if they’ve never seen it or have only purchased food at the grocery store,” Anderson said. “We want to help them understand how nutrition works and why it’s important.” SUMMER SCENE | JUNE/JULY 2017 | 25

THE SUN TIPS FOR SUMMER SKINCARE

W
ith the sun burning brighter-and longer--than usual in the coming months, basking in its rays may seem like an undeniable temptation. Before you head out on the lake or sprawl out on a towel in the sand, though, take the time to protect your skin from those warm but harmful rays. We sat down with Dr. Joanne Montgomery, a dermatologist at Sanford Health, and got some tips on what steps to take--and what to keep an eye out for in terms of skin changes. USE THE RIGHT SPF Sun protection factor--or SPF--is a measure of how well sunscreen protects against UVB rays, according to the Mayo Clinic. According to Dr. Montgomery, the ideal sunscreen is a broad-spectrum (meaning it protects you from both UVA and UVB rays) with an SPF of 30. “The SPF numbers have really gotten out of control, because the difference in protection between an SPF 30 and an SPF 50 is only one percentage different,” Montgomery said. “Otherwise, an SPF 15 might be okay if you’re just going to your car and back but, typically, we recommend SPF 30 sunscreen.” 28 | SUMMER SCENE | JUNE/JULY 2017
DON’T SKIMP ON SUNSCREEN According to Dr. Montgomery, most individuals use much less sunscreen than they should be using. “In studies, people actually use half to a third more sunscreen than they do in everyday life,” she explained. “So, even if you’re using an SPF 30 sunscreen, you’re likely not getting that much protection. You also need to make sure you’re reapplying your sunscreen if you’re swimming or if you’ve been out for two or three hours.” She said that, when it comes to children, the safest plan is to keep babies under six months old out of the sun completely, as their skin is sensitive to the sun and to sunscreen. Kids over six months of age need to be using sunscreen and sun-protective clothing, she added. TAKE OTHER PROTECTIVE MEASURES In addition to using the proper SPF and amount of sunscreen, Dr. Montgomery recommends taking other precautions against those sunny, harmful rays this summer, too. “Wear protective clothing, a broad-brimmed hat and sunglasses to protect your eyes,” she said. “Try to seek shade and stay out of the sun as much as you can between
10 a.m. and 4 p.m., which are the peak hours. I also really recommend staying away from tanning oils.” PAY ATTENTION TO YOUR SKIN According to the Skin Cancer Foundation, an estimated 87,110 new cases of invasive melanoma will be diagnosed in the U.S. in 2017. Likewise, the organization reports that over 5.4 million cases of nonmelanoma skin cancer are treated in more than 3.3 million people in the U.S. each year. So, even if you take all the right precautions, pay attention to any concerning changes in your skin. “Look for new brown spots, new moles on the skin that pop up or moles that are changing in size, shape or color,” Dr. Montgomery said. “Also, any moles that are itchy or bleeding are concerning. If you have a question or if you’re concerned, it’s always good to get it looked it. Monitor it or have a primary care physician look at it until you can get in to a dermatologist.” Overall, with sunny weather calling you outside, be sure to take the necessary precautions to protect yourself from harmful sun exposure--and enjoy the lake from a shady tree or under a layer of sunscreen.
