COMMINGS KEEPS IT COOL IN SIN CITY

ith his boyhood spent on a Wisconsin dairy farm and his young adulthood in culinary school, it’s hardly surprising that manhood led Scott Commings to be an executive chef in locations far and wide. But that his title crowned him the Season 12 winner of the pop-culture reality cooking show Hell’s Kitchen was a little less than than a foregone conclusion.

“Scott won because he has all the qualities I’m looking for in a head chef,” –Gordon Ramsay Commings—whose personal gastronomical passions lie in organic produce, sustainable farming and knowing personally the artisanal producers of the seasonal ingredients he tries so hard to use—has called his taking the top Hell’s Kitchen prize as “grueling,” yet it paid off in his latest post as Head Chef of Gordon Ramsay’s Pub and Grill at Caesars Palace in Las Vegas. “Scott won because he has all the qualities I’m looking for in a head chef,” said Gordon Ramsay in a Sept. 10, 2014 article on EaterVegas.com. “He is passionate, determined, and a true leader. He’s an artist plating food and has a phenomenal palate.” Want to see for yourself? Head over to his pub (reservations strongly recommended, Natch). Until then, read what Commings shared with DLXVRSN magazine about what it’s like to cook in Vegas, and who really wears the chefs’ jacket at home.

GOTTA ASK:

We know you haven’t been here that long, but what has surprised you most about chefs in Las Vegas? The sheer volume of talented individuals [and] not only on the Strip. Incredible locations are popping up all over this area. We are very lucky to have such artisans. When Gordon visits, is it “business as usual” or “watch out!”? In the kitchen it is business as usual, with our standard quality. I’d be lying if I didn’t say things just may “tighten” up a bit. Now, in the dining room it is a mad house every time he comes around. Guests are so excited to see him, as we employees are, as well.

“I am not so much of a sweet lover so I look to the savory, salty desserts...” Any unique culinary requests at the restaurant so far? I have been in the business for quite some time and have seen most of the out-of-the-ordinary requests. What really is surprising is all of the dietary/food allergies. It is something we see in this business all of the time. It is very concerning, and makes us create around those needs.

The pub serves some 1,500 customers a day. How do you balance the special requests from your Hell’s Kitchen fans to visit their tables while running a tight ship in the kitchen? Any successful restaurant begins with an incredible staff. We are so lucky at Caesars to have such talented and passionate individuals who love what they do. So even when I am away from the kitchen, the other chefs [give me] complete confidence in the operations. Dessert: As a chef, is it required or optional when you’re out on the town? I wouldn’t say “required”; however, I am always looking for that perfect dessert for myself. I am not so much of a sweet lover so I look to the savory, salty desserts [like] salted caramel, chilies and chocolate, and great cheeses and fresh fruits. What’s the biggest misconception about living in Las Vegas? Believe it or not, it’s not a party every day and this city is not just about gambling. My family has really adapted to our own “regular” family lifestyle. We have our routines, as we did before. You can come to Las Vegas for the gambling; however, there are such incredible things to see and do. Everything is over-the-top in entertainment and thought out to the finest detail. Does your daughter have the best-packed school lunch in her class? The best? You will have to ask Gwen. We believe in using good, wholesome ingredients, especially in her lunch. She is a busy little girl not only with school and wrestling with her little brother, Gavin, but she’s a gymnast, as well, practicing over 10 hours a week. We really believe in giving her good nutrition. If you could cook beside any chef for a day, who would it be? Thomas Keller has to top the list. To shadow him and see his meticulous manner and care in which he treats his ingredients would be such an incredible experience. He has such passion for everything he touches. And I believe he truly respects every artisan and farmer that provides his restaurants with incredible ingredients. Here’s the million-dollar question: Are you still “Head Chef” at home or do you share that title with your wife? I will tell you: My beautiful wife Tiffinni is the chef in our home. Yes, I have my moments. We chefs are a bit messy when it comes to cooking at home (we don’t have that wonderful crew behind us to help clean up!). So we usually use a lot more dishes than a normal home cook. With that in mind, my wife likes that I keep my talents at work. –Jen Chase, with reporting by Tyra Bell Holland

Branding Your Way

TO SUCCESS IN 2015 W

hat’s your brand?” I couldn’t have imagined needing an answer to that question when I started my television career 15 years ago…back when the Internet was just starting to make its mark. But today the world is a much different place, and to succeed requires different strategies and new ways of thinking about how to stand out. As I begin my own journey as a contributing editor here at DLXVRSN magazine, I want to share what I have learned so far (both as a journalist and a community member) about creating a memorable presence and branding yourself as the polished professional—the most “deluxe version” of yourself, if you will—that you were meant to be.

Define Your True Self

Before you can brand yourself, you have to know who you are...not who you pretend to be, but who you really are and what you need to create a life that is truly meaningful. Ever since I can remember I wanted to be a television reporter. Growing up around the world with my diplomatic family, I watched a lot of CNN International and the news anchors were, in essence, my childhood heroes. They seemed so smart, passionate and professional. In a way, there were the “brand” I wanted to emulate before I even understood what that term really meant. I graduated high school in my native country of Thailand and moved to California to study broadcast journalism at the University of San Francisco. Countless internships and low paying, entry-level TV jobs followed, but I never lost sight of my goal. I finally landed my first news reporter/anchor job in Redding, Calif., and the rest is part of my history. Of course, your career is just a part of your existence. You also have to define what you want out of your personal life. So as you climb the corporate ladder (or whatever ladder is in your field), don’t forget to invest your time and energy in who and what you love, whether it’s your family, your friends, your pets, or hobbies. Devoting your time to personal passions will make your professional life that much richer.

Don’t Forget Personal Networking

Your Internet persona has to be memorable, but you also have to make a lasting impression in person. Yes, that means stepping away from your computer once in a while and getting out there to network. Meet as many people as you can. I really believe you can land more opportunities with the help of who you know than what you know. As a reporter, my goal is always to track down the “exclusives”...stories no other reporters are getting. I find the most success in keeping in touch with people I meet. You never know what they can bring to the table. This goes for any career. Expand your circles to not just people in your industry. If you are a doctor, meet and greet with start-up entrepreneurs. Chefs, reach out to local teachers. Sometimes the most the unlikely collaborations can create the most compelling brands.

Follow Up and Request Feedback

Once you build your brand, don’t forget the people who helped you along the way. I would never be where I am today without the help of other anchors and reporters who have offered me priceless advice throughout my career. My advice to those who follow in my footsteps: Don’t be afraid to seek out mentors. And once you do, stay in touch with them. How? Call once a year. Send handwritten notes. Buy them lunch. And don’t be afraid to ask for feedback. That’s how you grow and learn. Also…stay humble, because in the end, your brand is just that…a brand. The real product is you. –Patranya Bhoolsuwan

You can’t ignore the power of social media these days, especially for how it can help establish you professionally. As a journalist, I use everything, every day—Facebook, Twitter, Instagram—not only to spread the word about my work but also to get feedback and story ideas from sources and viewers. More and more people are getting their news and information from the Internet, so it’s critical to build a positive online image and reputation. As a mentor to young journalists, I tell them that your future employer are more likely to Google you before they even look at your resume. My advice? Google yourself first! Delete what you wouldn’t want a future boss to see. Also, use professional networking sites like LinkedIn to connect with people in your industry. What Is Gel Polish?

Considered a “soft gel,” gel polish has been on the market for about 5 years and its benefit lies in its staying power: Manicures and pedicures can last a strong three weeks, depending on the product and application technique. It is applied in a salon setting by a licensed nail technician. Like gel nails, gel polish also requires a removal service. Manufactures such as OPI, Shellac, Gellish, and Essie all have systems with only slight variations in application technique. Most notably is what’s called the “curing lamp.” Depending on the manufacturer, “curing” is accomplished by a UV or an LED lamp shined on freshly done nails, which sets the color. Designed with ease of use in mind, gel polish is packaged in a nail polish bottle similar to typical polishes you’re used to seeing at salons and buying for home consumption.

What’s The Difference Between Typical Nail Polish And Colored Gels?

A

good manicure can make all the difference in projecting a professional and polished appearance. Recently, there has been a lot of talk about gel manicures: the safety of the process has been questioned (that lamp, the ingredients) and there seems to be confusion about the difference between gel polish and gel nails. So let’s demystify this approach to doing digits and help you make a more informed decision about how best to next beautify your fingers and toes.

What Are Gel Nails?

Gel nails enhance your own nails by extending them from the tips of your natural ones. The type of gel used is considered “hard form,” and although it still requires using an ultraviolet (UV) or light emitting diode (LED) lamp to cure the product, it cannot be easily removed. (Removal is done by filing off the product.)

Although the chemical makeup is proprietary to each company, colored gel polish is basically gel with color pigments in it. However, drying nails the old-school way often leads to dings or smudges, and a clear up-side to a gel manicure is its curing process. Once your polish had been applied, you place your hands under the lamp to activate the “hardening,” if you will. Each layer of polish gets cured under the lamp so that by the time the top coat is cured and cleaned, you can do anything from pulling your keys from your bag to running your fingers through your hair! ikipedia defines etiquette as “a code of behavior that influences expectations for social behavior, according to contemporary conventional norms within a society, social class, or group.” I’d say, additionally, that success in any capacity simply relies on good relationships. When one is polite and considerate in dealing with others, a long-term, productive relationship can be formed…which is why a working knowledge of business etiquette is essential.

Tip #2 Do not place them in your wallet. It is a bit unsightly when trading business cards to be digging in your wallet run amok with your receipts, personal business and etcetera, trying to find your card. Not to mention, it looks unprofessional and can make the receiver uncomfortable as they watch this all unfold. It is also not a good idea to have your business cards wrapped in a rubber band. It gives the impression that you just got yours hot off the press. Instead, invest in a business card holder. You’ll thank me later.

The action lets the giver know that you are indeed interested in what it is that they do, or the services their business provides.

Tip #4 Ask for a business card ONLY if it is related to business. Often, a “different type of connection” may be on the horizon (wink*) and you can avoid unprofessionalism if you simply opt to separately ask for the person’s personal contact information instead. We wouldn’t want our bosses or colleagues to get a glimpse of a pending dinner invite coming across our computer screen. Tip #5 Remember your manners, as they are key when asking or receiving your potential contact’s information. Some examples are, “Do you mind if I have your business card?”, “Would you be kind enough to accept my business card?”, “Shall we exchange business cards and get together for a coffee sometime?” or “I’d be delighted to further discuss the possibility for crossover opportunities between our businesses! Let’s exchange information.”

Also, remember not to nonchalantly throw the business You are nobody in this town without a business card! (Kid- card in your back pocket or in your wallet or purse. Place ding, you’re amazing. It may seem obvious, but you’d be surprised how many professionals neglect to make this a habit and find themselves in non-business environments wishing to the stars that they had a card. Make it a habit to always have a few on your person.

Looking at business cards with some semblance of reverence means the difference between turning an ever-filling bowl of cards on your desk to a viable tool in your arsenal of communicating with current and future colleagues. ‘BOWLED’ OVER Quick-Service Restaurant Concept Honored For Good Food & Social Responsibility

ne of the most exciting new ideas for healthy, quick-service dining options on the horizon was showcased at the 2014 International Hotel, Motel + Restaurant Show (IHMRS), held Nov. 8-11 at the Jacob K. Javits Center in New York City. Attracting more than 16,000 industry professionals on the lookout for cutting-edge concepts in food, the IHMRS held a “foodservice contest” to honor a retail concept that could be built in an under-used, non-traditional location. This year’s winner of the 2014 Foodservice Pioneering Concept award was “BOWLS— Food That’s Good For You.”

“It is a personalized experience, allowing guests to create their meal based upon flavors, personal preferences, allergies and time of day,” – Robert J. Nyman BOWLS is an edgy concept that was in part created in collaboration with the Nyman Group of Scottsdale, Ariz. and Las Vegas, Nev.; Robert Rippe & Associates of Minnetonka, Minn.; and Okami Creative. “It is a personalized experience, allowing guests to create their meal based upon flavors, personal preferences, allergies and time of day,” says Robert J. Nyman, president of the Nyman Group, Ltd., which specializes in restaurant consulting and management. “The service line is non-linear, and chefs guide the guests through various ingredients offering tastes and explanations about where food is from and the nutritional value, while preparing each personalized bowl.” If built to fruition, BOWLS would be a quick-service restaurant that could occupy 500 to 1000 square feet of space, and its main allure is its array of good-for-you ingredients that could be combined to create anyone’s new favorite on-the-road meal. Menu items proposed include hormone- and nitrate-free proteins and protein alternatives; starches like gluten-free noodles, brown rice, quinoa and warm lavash bread; and seasonal vegetables.

To that, I say let them eat soup! In particular, this butternut squash soup, which combines everyday ingredients that are anything but simplistic. Squash, apples, cinnamon, and bacon come together to satisfy our urge for the sweet-savory-spicy flavors we often crave in cool weather…and they do it all in one bowl. Serve this soup as an appetizer in demitasse cups for one-handed sipping at a cocktail party, or if you’re gathering around a table, ladle it into deep, warming bowls with crusty bread. You won’t want to miss a drop. –Calvin Cooper

HOW TO MAKE SPICED SQUASH SOUP Step 1: Melt the butter in a large pot over medium-low heat and add the onion and squash. Season with salt and pepper and cook until the onion is soft, about 8 minutes. Stir in the sage, cinnamon and flour. Add the cider and cook over high heat, stirring, until thickened. Add the broth and heavy cream, cover, and bring to a boil. Once boiled, turn down the heat and let cool slightly. Step 2: Meanwhile, in a medium skillet over medium-high heat, cook the bacon until crisp, turning occasionally, about 2 minutes. Drain on paper towels. Step 3: Using a hand-held immersion blender, puree the soup until smooth. Then, add the potato and apple and bring the soup back to a low boil. Reduce to a simmer, and cook—stirring occasionally—until the potato is tender but not mushy, about 8 to 10 minutes. Step 4: Season with salt and pepper. Garnish with bacon and chives, if using, and serve with bread, if desired.

CROWNED PERSPECTIVE LIFE AFTER SUCCESSFUL PAGEANTS & EMBRACING BEAUTY WITHIN

P

ageants. They can be an expensive hobby that may never offer a return on a parent’s investment, yet so many little girls dream of being princesses. I, however, was not one of them. It wasn’t until my teen years that I realized I had the pageant bug in me, and while I didn’t love the term “beauty queen” and the negative stigma that went with it, something pushed me into pageantry and I became hooked. Yet through competing, I learned that being a beauty queen alone wouldn’t fulfill the things in me I didn’t even know I was missing. In the end, it would seem that maybe I didn’t want to wear a crown after all…that I didn’t need to. I’d been wearing one the whole time. I just didn’t realize it.

HERE’S MY STORY.

As a college athlete, during my senior year, I took a leap. I wanted to step outside of the box I’d created for myself and do something different—trade in my track spikes for heels. (Oh, if only I could figure out how to walk in them!) While I’d prided myself on my strength and athleticism, beauty and femininity were traits I’d never tapped into. My exterior tough girl concealed a very insecure one. Yet I

wanted to be pretty. I wanted to be worthy. I wanted guys to look at me as a girl and not just one of them. So…I decided I was going to win a crown. “That’s what I will do,” I thought. “Get really pretty. Wear a nice gown. Win. Everyone will look at me in adoration. I might even finally like what I see in the mirror.” It was the perfect remedy for the secret of my insecurity, and nobody would be the wiser.

“Beauty comes from within, not the other way around” Being competitive and adventurous, I told everyone I was going to transform myself from Miss Tomboy USA to Miss Virginia…but the Cinderella story wouldn’t come that easy. Pageantry is more than becoming beautiful, and despite my efforts, the best clothes, makeup and weaves in the world weren’t fixing the hot mess I felt like inside. No matter how much I made up my exterior, my interior felt inferior. I became depressed, and wondered how something as “simple” as a pageant could bring me so low.

It took graduating from college and moving to Las Vegas (of all places) from my small conservative Virginia town to realize how backward my idea was. Beauty comes from within, not the other way around.

its, all of which become more important at times like that. So, when I suddenly had a flash of doubt, I had to check it, fast. Waiting for scores to be tabulated wasn’t the time for worry.

Fast forward a few years of living with my new perspective and I made it my mission to go for the crown again. But instead of wanting a crown to complete me, I would make sure my heart and mind were complete before I went for a crown. My winning formula helped earn me the Miss Nevada United States title.

I was in the top-5 and was feeling good. As we stood hand in hand, I stared into the audience and saw friends and family smiling, yelling and screaming. But louder than the cheers were the questions in my head. I tried to shut them down, but they persisted.

“Why did I really do this?”

“What if you do win? Is another crown really going to define you as a woman?”

Winning that title meant I’d be heading to the national stage to compete for Miss United States, the next step in the pageantry track. Yet, things can never be that simple. Fast forward again. Weeks before the Miss United States pageant, amid a recession, I was laid off. There went my glam squad of hair and makeup professionals. My wardrobe became a recycled gown. My makeup? I did it. But as I stepped on to the stage, I exuded energy. And when I tossed over my shoulder a little look—a sassy smirk in my $100 dress—I went from Miss Tomboy turned Miss United States. And, I won.

Minutes later, the emcees had the envelope that held the fate of my 10-year journey. “The 4th runner-up is…Alabama!” Ok, good. One down, I thought… but something told me I was next. And I was.

That would be enough of a happily-ever-after for most, but for me, it had only just begun. It was a pit stop along the path of my self-acceptance. I had more work to do.

“The 3rd runner-up is…Nevada.”

It’s winter 2014. The taste of triumph was so sweet from my last win that I wanted it again (you can take the girl out of the athlete…). Now, with experience behind me, I knew people. I’d modeled runway shows and photo shoots wearing designer duds and had makeup artists asking permission to paint my face. “Ms. United States, here I come,” I thought. “Let’s make history.” I could be the first person to win two titles in the same system. And this time, I’d know how to walk in heels.

For a fierce competitor the goal is always to win. But over the next few days of decompressing and reflecting I had a seemingly ridiculous thought:

I’d won Ms. Nevada United States in May and immediately had my sights on the Ms. United States crown In July. With a designer friend making my gown, boutiques offering me accessories, my hairdresser providing custom hair products, and with my own makeup artist traveling with me this time, I had the ingredients for another victory.

“What’s next? Is this crown necessary to be an inspiration and share your story?” It was pageant time. And every time my heeled feet hit the runway my internal soundtrack was Survivor-meets-Beyoncé…Eye of the Tiger mashed with Flawless. I’d always enjoyed a strong cheering section but I’d picked up quite a few strangers along the way. And if I was unsure of myself the first time around, this time I felt success in my bones. (And all of this? This story? It’s not conceit, but rather an inherent confidence that has grown deep and strong in me. A far cry from my mental state in my first pageant that was now 10 years ago....) Everything was perfect: gown color and fit, makeup. I’d made visualization, positive energy, and speaking my desires into existence daily hab-

All-righty then, I thought. Pageant history will not be made this night.

True victory was in me, not winning. My victory was in the journey I unknowingly set out on 10 years earlier, when I was searching for outward validity of who I was on the inside. Interestingly, my greatest successes didn’t come when my clothes and makeup were impeccable. They came in the used dress from EBay, old outfits pulled from my closet, and hair and makeup I did myself. They came from my smile that reflected the energy and comfort now in my soul, and from the peace and gratitude that glowingly reflected off my skin. I didn’t place first, but my true win was that I no longer needed validation from others. I overcame my self-deprecation and was finally the girl that long ago I wasn’t sure I’d be worthy enough to become. And that night, as I took off my gorgeous lace coral gown, jewels and shoes—after hugging competitors who have become lifelong friends—I headed to a restaurant for a well deserved glass of Pinot Noir with my family where I was overcome with another unfamiliar sensation: How is it that I feel this good after falling short of the goal? It was because under my dress and makeup, I was liberated. I’d become the woman I never thought I could be. I was Lady Liberty personified, minus the crown, and that fact made my loss the sweetest victory I’d ever tasted.

HIP-HOP LEGENDS SAY ‘15 IS THE

R

apper’s Delight. Hearing name of this iconic American hip-hop single can bring back all kinds of memories no matter how old you are. Did you jam to it at a club? Tune it up on your Sony Walkman? Rock it out on the radio in your teenage bedroom? It may be hard to believe, but that the song came out 35 years ago this year.

35.YEARS.THIS.YEAR. Today, the two surviving members of the Sugar Hill Gang are as passionate as ever about their musical career and upcoming album. DLXVRSN magazine recently caught up with Michael Wright (aka “Wonder Mike”) and Guy O’Brien (“Master Gee”) about their plans for the upcoming year. “We are lovers of music,” says Wright. “We want to create songs people can relate to and dance to. We aren’t out just to make a quick buck.” Wright says that’s one of the reasons this will be the first album for the band to come out in years: The timing had to be right to give the fans the quality music they expect. Wright and O’Brien are now also under new management and will be performing under the new name “Rapper’s Delight.” This, after losing the third original band member Henry Lee Jackson aka “Big Bank Hank” to cancer last year. “He had a great voice…that’s my best memory of him,” says O’Brien, who now runs his own fitness and personal training company, Jump On It Fitness. “The three of us, we grew up together, had families; but we were once kids in love with music and hip hop and we never lost that.” Wright agrees that Jackson had a phenomenal voice, and has other fond memories of him…especially on their tour bus. “We would play cards all night from Detroit to Miami,

and we would get into arguments like brothers. But we always got over it and just enjoyed our times on stage.” O’Brien and Wright say that over the years they have never really stopped performing. They traveled across the United States and Canada, but also went as far as Europe and Asia. They are dedicating their new album and 2015 tour to the honor of Jackson. Be on the look out for a song called Show Me the Love on which they collaborated with the Cleveland, Ohio-based group, Broccoli Samurai. “It has a European flavor to the music and it’s about spreading love, especially with all the violence in the world right now,” says Wright. O’Brien loves the song, too. “It’s an opportunity to get our thoughts and ideas out. We have a lot more passion than in the past. We are older, more mature about life.” Wright’s and O’Brien’s paths cross beyond the music they make, as they’ve cultivated lives beyond their songs. The duo is working together with manager David Mallie to promote a scent-marketing company called Aroma Country. And while not at work they both consider themselves family men and dads to their grown children. Wright’s 21-yearold daughter, Carmen Delgina, is even following in his footsteps. In 2014 she was a contestant on the hit show American Idol. Wright says he couldn’t be more proud. “She was always singing, since she was 2,” says Wright. “I knew she had something special.” Carmen will be collaborating with her father in the new Rapper’s Delight album. The band will be performing at the Bock Beer Fest in Los Angeles this month to kick start what they expect to be a busy year. They can’t wait to get a new audience to jam to the iconic Rapper’s Delight, the best-selling hip-hop song of all time. O’Brien is now 53 and Wright is 58, but both say they are still as passionate about their craft as when they started in this business. And they say 2015 will be the year of reinvention and they can’t wait to show it off to the world. “Age doesn’t matter. We are still going strong,” says Wright. “We will always be doing music until I drop…until I draw my last breath.” –Patranya Bhoolsuwan
