If curated Instagram images of luminous Scandi living rooms, crisp white picket fences and industrial sleek kitchens are becoming all too irritatingly serious, try Googling clips of seasons of Changing Rooms from the late 1990s. Nothing will strain a friendship like turning a neighbour’s rumpus room into a medieval-style beer hall, resplendent with artificial leadlighting and a carved mock-wood bar (as seen in one of my favourite old episodes). This edition, we meet the host of the rebooted version of the show Natalie Bassingthwaighte, who – in interiors speak – knows her boho chic from her Hamptons luxe. ●

TV presenter Natalie Bassingthwaighte says her new hosting role is the best fit yet.
A
ustralian TV personality and entertainer Natalie Bassingthwaighte was at the snow with her family last year when a call from Network 10 came through, offering the gig as host of a rebooted renovation show Changing Rooms. “I’ve always been fascinated with interior design and architecture and thought, how surreal, this is the perfect job for me,” Bassingthwaighte says. Changing Rooms first came to attention in the mid-’90s with host Susie Wilks, who unveiled single room renovations between families and friends, then capped at $1500. The new show’s budget is now upped to $20,000, and has two teams – often couples or friends, guided by an interior designer and tradie – make over a room and change more than colour schemes.

“My husband Cameron, who has known me for 14 years, looked at me and said: ‘Nat, I have never seen you happier than when you’re designing and moving stuff around the house. This show would be ideal for someone like you’,” she recalls. Bassingthwaighte, who married her bandmate and former Rogue Traders member Cameron McGlinchey in 2011, is obsessed with moving furniture at their 130-year-old Edwardian period home in bayside Melbourne. She describes the moment she purchased a brown leather couch years ago and snubbed her preferred mustard choice because she was talked out of the bright colour at the time. “One should never ignore their gut instinct,” she reflects. “The dismal brown couch didn’t make me happy at all. I went back and bought the mustard instead. “I think many of us tend to stick to neutrals within a home and people tend to go for Scandinavian looks, which is fine, but when you create your home, your personality needs to come through and you can add pops of colour without overkill.”

This year she will introduce a mother and baby collection, a basics range and a bumper winter assortment of goodies. “As a mum, I was always looking for good quality and stylish pieces for my kids to wear and decided I might as well start my own label and see how it goes,” she says. The bamboo-focused range is big on prints and wears its street-style cool proudly. Bassingthwaighte first made her name with TV audiences as Izzy Hoyland on Neighbours between 2003 and 2006, and in that time also started performing with her band Rogue Traders. She’s since starred in the 13-part mini-series Underbelly: The Golden Mile, the second season of

ilming Changing Rooms was a huge buzz for Bassingthwaighte, who incidentally has since become friends with one of the show’s interior designers, and scheduled a visit to see what further renovations are possible at her family home. “It might sound corny, but there’s something awesome about going along for the ride with these couples and friends in this series,” she says of the new show. “Seeing people’s lives change as well as their rooms makes fun viewing. It’s also about seeing the

The Sydney-born star has lived in Melbourne for 14 years with no plans to leave. In fact, she turned down a contract in Sydney three years ago as it didn’t fit with her family schedule. But, she says, there’s still plenty she would love to do. “I would love to be the voice of a cartoon character,” Bassingthwaighte says. “Having kids and knowing how much they’d love that would be awesome to do. I also know I will get back on the stage at some point to do more acting and film. “It’s a crazy industry with more people out of work as actors, but I am just glad I don’t put all my eggs in the one basket.” When it comes to self-care, Bassingthwaighte follows a routine of daily meditation, a yoga or pilates class and a policy of no TV in the mornings and no iPads when everyone is home of an evening. She says co-parenting with a supportive husband makes her life easier. “I know I am very lucky to have a great husband who is a huge help around the home. He washes, does the dishes, cooks, cleans. He’s better than me,” she laughs. “While filming Changing Rooms I had Cameron take care of the family situation, and now he’s about to go on tour with Jon Stevens, and I’ll be taking over. “It’s about discussing what’s coming up, seeing what’s possible between us and ultimately what is best for our family.” ● CHANGING ROOMS \ Catch the new season on Network 10

Fishing for zest and freshness

eviche is the perfect dish for summer. It’s light and bright and packed full of freshness. The plus side is that it requires no cooking and you therefore will not need to even use the oven or stove. Ceviche is a Latin American dish that originated in Peru over two thousand years ago. It consists of fresh raw fish cured in citrus juices and can include other ingredients such as capsicum, chilli, cucumber, coriander or tomato. The acid in the citrus cooks the fish so be sure not to cure it for too long.
The acid is usually only added a few minutes before serving. I’ve used snapper here as I like the texture of it but any other semi-firm white fish would work well too. Stay away from oily fish such as mackerel, sardines, tuna or salmon. The most important thing is to get the freshest ingredients, keep the fish cold at all times and to cut everything similar in size. Also remember to remove the bloodline. Your fishmonger can do this for you and save you the hassle. ●

Snapper ceviche tostadas
ANAKA RODRIGUE / FOOD STYLING EMMA ROSEN
Serves 6 Ingredients 1 red capsicum 2 tomatoes, cored 1 long red chilli, finely chopped ∏ red onion, finely chopped 1 packet of corn tortilla Oil for frying 2 snapper fillets, pin boned Juice of 1 lemon Salt and pepper to taste 2 jalapenos, sliced into 2mm thickness for garnish
Method ■ Start by making the salsa. Dice the capsicum and tomatoes into small, 5mm pieces and place into a medium-sized mixing bowl. ■ Add the chilli, red onion and leave it covered in the fridge. ■ In the meantime, heat some oil in a small pot. Use a thermometer to ensure the oil sits at approximately 170C. Using a 2-inch (5cm) cookie cutter, cut out circles from the corn tortilla. You may also just cut them up any shape you like. ■ Fry the tostadas until golden and crispy. ■ Just before serving, season sliced fish with lemon juice, and salt and pepper. ■ To present, place all the components onto a large serving platter and DIY assemble at the table. ●

I
f the rapid approach of the end of the year wasn’t enough to freak you out about time passing, news that Donovans turned 20 might just do it. But what better place is there to ignore life flashing before your eyes than at a timeless restaurant with absolute beachfront views and a terrace perfect for downing pre- or post-dinner cocktails? Just like everything else at Donovans – from the menu to the decor – the cocktails are tweaked to suit the season. Nick Packhouse, who looks after the drinks list at the restaurant with Kevin Donovan, says the approach is “to have something for everybody, using good ingredients that will cater to all tastes”. The list bears that out with several versions of Bloody Mary (including a Scary Mary that pumps
up the chilli heat), a selection of spritz and a cocktail list chockful of classic drinks – Negroni, Gimlet, Margarita, Sour – usually given a bit of a Donovans-style twist. A Donovans classic, and one perfectly suited to balmy weather, is the Chop Chop Charlie. Vodka, the vanilla-based Liquor 43, apple juice, passionfruit and fresh mint are combined in a Boston shaker before being poured into a highball glass filled with ice. It’s a refreshing, luxurious drink that beckons you to a second round. There’s also the Donovans’ version of the Corpse Reviver #2 that uses locally made Maidenii Quinquina (a “tonic wine” infused with cinchona bark), gin, Cointreau, a dash of pastis and lemon juice that's shaken over ice and strained into a

prawns and a Bombe Alaska built for two is not a hard sell. As Donovans strides confidently into its third decade, it’s the perfect opportunity to raise a cocktail beachside to the good things brought by the passing of time. ●

ollywood actor Rami Malek took out the best actor award at the Golden Globes for his portrayal of Freddie Mercury in the Queen biopic Bohemian Rhapsody. Now, in his first Oscar nod, the 37-year-old is up against Bradley Cooper, Willem Dafoe, Viggo Mortensen and Christian Bale for the best actor award at the 70th Academy Awards. Malek first discovered Queen via cassette tape, but it was Mike Myers’ Wayne’s World in 1992, which used
Queen’s Bohemian Rhapsody in the opening scenes, that reminded the world what really happened in 1975. That song roared back up the charts to reach No. 2 in the US. “I grew up in the ’80s so Queen songs were pretty much on high rotation,” Malek says. The ambitious actor knew playing the part of Queen’s frontman would be controversial, but was willing to give it a crack. “I am just happy this film didn’t go sour,” he says.

Malek flew to London to learn to dance with a choreographer, play the piano and undertake singing lessons. His character was months in the making. During these stages he heard many stories about Mercury. “My favourite urban legend is that Mercury dressed Princess Diana in a motorcycle leather jacket to make her look like a man and took her to a gay bar one night,” says Malek. “Wouldn’t that have been something.” He also urges fans to look out for a scene which didn’t make the movie. “It’s when Freddie is writing A Crazy Little Thing Called Love in the bath and calls his assistant to bring him a guitar. He composed the song there and then in the tub,” says Malek. “We filmed it and I hope it’ll come out on an extended cut.” ●

Mercury’s visionary dress style adds to the film’s sartorial splendour. From sequins and topless looks, leather pants, Adidas trainers and Wrangler jeans, Mercury’s key moments are captured well. He wore an iconic white butterfly sleeve blouse that British designer Zandra Rhodes made for him in the ’70s – apparently a wedding dress he saw at her store which she cut into a top. The exact silhouette is replicated in a lighter fabric. lympia Valance has been offered a role on every reality show imaginable, but there is only one she has said yes to – Dancing with the Stars. “If I was ever going to do a reality show, it would be a dancing show,” she says. “I’ve always wanted to learn to dance and it’s something I’ve always loved watching.” She and partner Jarryd Byrne are training up to seven hour a day, and she is already seeing results. “They don’t tell you how strenuous it is,” she says. “I’ve got such a growing respect for these dancers because it’s really, really tough.” Valance, 26, is one of the major stars of the Network 10 reboot of the reality show, alongside Denise Scott, Courtney Act, and controversially, Karl Stefanovic’s ex-wife, Cassandra Thorburn. Grant Denyer and Amanda Keller are the hosts. Ten has high hopes the show will connect with viewers once again. At the show’s peak on Channel 7, with Daryl Somers as host, it averaged 2 million viewers a week. Valance’s star is on the rise; she is also set to film
the second series of Playing for Keeps in the first half of this year. She plays super-confident WAG Tahlia Woods in the Ten series, which follows the trials and tribulations of a group players’ partners in footballobsessed Melbourne. Tahlia’s one-liners and the fact the show is about WAGS made it a cult hit in Melbourne last year. Valance said she wasn’t surprised by the show’s success. “When I read the script I thought that if they do this properly and make it look good, it was always going to be a success,” she says. “People can really relate to it.” With a home in Los Angeles and Melbourne, Valance intends to divide herself between the two in the coming years. Personally, things are also looking good for Valance; she is in a relationship with Los Angelesbased Australian actor Luke Bracey. After both Dancing with the Stars and Playing for Keeps finish filming this year, Valance is heading to Greece for an extended family holiday. ●

Dr. Tony Stubbs, Eye Surgeon, says that just about anyone can have their vision restored and be rid of their glasses for most of the time. And this is without the use of laser surgery. Dr Stubbs formerly at the Royal Victorian Eye Hospital who has worked with the Fred Hollows eye department at the Prince of Wales Hospital in Sydney, says he began his career through the inspiration of his father, Dr Maxwell Stubbs. “My father was a pioneer in cataract implant surgery from 1963! He has now passed away but some of his patients still come in for a check-up. Not only is this inspirational, it also demonstrates that good surgery outlasts the surgeon,” Dr Stubbs says. A specialist who helps people who have been advised they are unsuitable for laser surgery, Dr Stubbs is also committed to demonstrating that age, corneal distortion or astigmatism are no barriers to eliminating the need for glasses. One of my best moments was treating a 12-year-old girl who was struggling at school because of poor vision due to congenital cataracts even with the use of thick glasses. Now 10 years later, she still has 20/20 vision without glasses. That inspires me. “Seeing my patients’ bright smiles after surgery, as they stop squinting and can read without glasses, is definitely the best part of my job.” No referral is needed and no out-of-pocket expenses are incurred for an assessment to enable all options available to be considered.
