When Heston Blumenthal’s Meat Fruit (a centuries-old Tudor recipe) arrives at the table at his Melbourne restaurant Dinner, it’s a moment that must be shared. I usually subscribe to the motto “eat it, don’t tweet it”, but this is too tempting not to. Flights of fancy From Melbourne to London, chef Heston Blumenthal’s creative partner Ashley Palmer-Watts is in charge of the world’s most imaginative menu.

Heston out to my table. We talked for a bit and after that I wrote to him and said I’d love to spend a few weeks at the Fat Duck and do a stint in the holidays. The rest is history.” Palmer-Watts says the menu at Dinner, at Melbourne’s Crown, begins with a curiosity and has a strong link to the past. There’s no set pattern to recipe development, just lots of trial and error with many dishes taking years to perfect. “It’s a way of life for us,” he says. “We don’t think about it in terms of time– it’s about taste.” As of July 16, Dinner in Melbourne launches its always evolving degustation-only menu, with matching tipples from its wine director. Among the magic is a revamped Rice and Flesh dish (a take on a Risotto Milanese) with almond, saffron, lamb sweetbreads and smoked olive oil for a new realisation of a Heston classic. “The recipe originated in a manuscript The Forme of Cury dated 1390 and lives in the British Library,” Palmer-Watts says. “When we revisited the dish last year, we wanted

e’s Heston Blumenthal’s right-hand man, divides his time between Melbourne and London and been on more than 46 long haul flights between both cities in the past five years alone. Welcome to a day in the life of Dinner By Heston’s chef director Ashley PalmerWatts, who had thought about joining the army until an email changed his life. “I’ve been working with Heston for almost 20 years, I can remember the day we met – it was August 28,” says Palmer-Watts, who grew up in a small town in Dorset, England and takes this call while back in London to visit his wife Emma and their two children Max, 9, and Sophia, 7. “To be honest I never thought my life would come to this, [even though] you know I dreamed of working in a Michelin star restaurant one day,” he says. “I had an uncle and aunt visit me at the London restaurant not long ago. They’re from the same village I grew up in. They couldn’t believe it – they were blown away by the food. It seems normal to me now, but they looked at me with eyes of ‘this is anything but normal’.” Blumenthal and Palmer-Watts started working together in 1999 and the rest is history – both a culinary science experiment and a meeting of the minds. They’re both obsessive-compulsive in their work ethic, have made the World’s Best 50 Restaurants list (with Dinner by Heston in London ranked 83rd in 2019) and prove there’s a lot to gain by digging deep in 14th and 15th-century cooking manuscripts. “I had read about Heston in a magazine but that was sort of it at the time,” Palmer-Watts recalls of meeting him at the Fat Duck in the ’90s. “I ate at his restaurant – more like a bistro back then; the meal was amazing but it wasn’t perfect, the restaurant was pretty cold and uncomfortable but it looked cool,” he says matter-of-factly. “I ordered a delice chocolate cylinder filled with mousse, biscuit with cherries and vanilla ice cream for dessert. It tasted amazing. I quizzed his maitre d’ Nigel about the recipe and he called

to take it down its original almond root path rather than saffron being the dominant ingredient … it took six months to perfect.” As Heston’s chief protege, Palmer-Watts is also a master of time zone differences, often hooking up at all hours to keep both kitchens running smoothly. He says he doesn’t have time to think about jet lag when he lands in Melbourne. “It’s like anything, the more you do it, the better you get at dealing with it,” he says. “But, of course, just as I’m ready to fall asleep in Melbourne, the UK is waking up and then my mind is on that.”

rom the famous Meat Fruit (circa 1500) to Salamagundy (circa 1720), no meal brushes with the past like Blumenthal’s molecular empire, but sourcing ingredients to keep the flavours in sync is Palmer-Watts’ greatest priority. “To be fair, every recipe we have in London has to go through a localisation period,” he says. “It’s sent to the team in Melbourne and they’re talked through it on FaceTime and they will use their skills to adapt the dish. “They know how we cook and adjust the recipe using local flours and flavours so everything is slightly different because local ingredients tell the story of that country’s food best, but we aim to get them as close as is possible.” Palmer-Watts is the sort of guy you’d dream of being in business with. He’s always got Blumenthal’s back and has to finish what the wizard often starts – from trains of thought to business meetings. “We mostly share the same beliefs, but don’t always agree,” he smiles. Palmer-Watts is also the one who connects the dots when Blumenthal reels off ideas. “Heston told me about a guy who made cutlery that he wanted me to meet in Melbourne,” he begins. “I was told David was scared of heights and probably won’t come up to the restaurant but I could meet him in the lower level of Crown. “Heston said I had to order cutlery from him, and

I was thinking, great, I’ve just ordered everything for the restaurant and that’s not possible.” Turns out the man who is afraid of heights was Australian artist David Bromley, a sculptor and painter who doesn’t specialise in cutlery, but made three artistic sets that looked very Alice in Wonderland or destined for the set of a movie starring Johnny Depp. “David showed me these bronze, pirate-like cutlery pieces and I wasn’t quite sure what to do with them,” Palmer-Watts says. “It turned out David made the sets for three people – one was Heston, the others were Johnny Depp and the Rolling Stones’ Keith Richards. He’s given a set to all of them and, while we didn’t get them for the restaurant, David ended up doing three art pieces for our restaurant so he’s part of our family now, too.” ●

ultiple Grammy Awardwinning artist Melissa Etheridge has just released her 14th studio album The Medicine Show. It’s an ode to the importance of wellbeing, a personal trip down memory lane about getting through life’s toughest moments and proof that she’s back – defiant and healthier than ever. It’s been 15 years since Etheridge was diagnosed with breast cancer, putting her music career on hold at the time for treatment. An emotional
stage comeback a year later in 2005 (with no hair due to losing it during chemotherapy) saw her perform a cover of Janis Joplin’s Piece Of My Heart at the Grammy’s with Joss Stone, a delivery packed with intense emotional conviction that still brings a tear to her eye thinking about it. “I look at life as the pre-cancer and post-cancer phase,” says Etheridge, 58. “Cancer made me stop and assess everything in my life. “It opened a spiritual side of me. When faced with mortality, it makes

“I was able to get work at some lesbian bars and had a great following as a result. The bad news was I had to bring record company executives to see me there, which wasn’t always easy in the ’80s,” she laughs. “I mean who was going to sign a lesbian back in the ’80s? “Nobody was out. I was turned down by everyone. Finally, Chris Blackwell came along in 1986 and said ‘I don’t understand why people haven’t signed you’. He signed acts like Bob Marley and U2 and believed in me.” Best known for her classic blues hit Bring Me Some Water Water, Etheridge says it wasn’t easy getting the song on the radio. “At the time there was an unwritten rule on radio that you couldn’t have more than two women on a playlist. I had a bit of that happen in those early years, it wasn’t overtly or angrily at my face. But it was the system and it has changed, but we have a long way to go.” ●

Her late father John was a high school teacher and basketball coach, and her mother Elizabeth a computer analyst long before they even called it that. Her elder sister Jennifer got a guitar for her 12th birthday but it was Melissa who begged to learn how to play from the age of nine. The rest was rock history in the making. She played in bands between the ages of 12 and 18, with her father taking her to shows that were four hours away from home. “Dad was the one who drove me. He knew if what I did was making me happy, he was all for it,” she recalls. Etheridge arrived in LA in 1982 and signed a major label deal in 1986 but didn’t release her self-titled debut album until 1988. “I had six years of grinding it out in LA,” Etheridge says.

Squaring the circle of friends
I
think we can all admit that we are a product of our environment to some degree, and a large part of that environment is the people in it. The late American motivational speaker Jim Rohn once said, “You are the average of the five people you spend the most time with”. I love this quote and I definitely think there is some truth in it. However, it’s 2019 and I think we need to look a little bit further than this. Our digital circle has a much greater impact than perhaps we realise. In my space, with an online fitness program, I am fortunate enough to see technology help tens of thousands of people every day. But not for one second do I think it is only positive. Technology can be your best friend or your worst enemy depending on how and when you use it.
Think about those around you and ask yourself, are these people influencing my life for the better? Are they having a positive influence on the way I think, the way I act and the way I feel? Life is too short to spend time with people who don’t enrich it. To extend this even further, are you looking beyond your social circle to the social media accounts and broader media that you interact with every day? Who are you following? Why are you following them? What effect or impact is it having on you? You might not consider this your immediate circle but for many people, they are who or what you interact with the most. We have to take control of what we experience and if you want to experience positivity, you need to surround yourself with it – especially online.

S
chool has been a second home to Deborah Frizza for as far back as she can remember. Her father was a school principal (one of his postings was at Emmaus College) and his work saw Frizza and her siblings move around Victoria. “During holiday times, Dad would get my sisters and I to help him move furniture around at school and our social life revolved around barbecues with the teachers whom Dad worked with,” says Frizza. Inevitably, teaching was a natural fit and she studied a bachelor of education at Victoria College Rusden – focusing on PE and mathematics – and then a masters in education at the University of Melbourne. Frizza has taught in the independent and government education sectors but was drawn to the Catholic system because of its strong focus on student wellbeing. “The Catholic sector takes care of its students very well. There isn’t just a strong academic focus but a very real sense of looking after the students as people,” Frizza says. “At Emmaus, we know each student very well and we work with families individually on what will work best for each student. People matter here and we treat everyone with respect.” Frizza’s father spoke highly about his time at Emmaus College and when Frizza was offered a role there, she had no hesitation in accepting. The Catholic co-education school is in the eastern suburbs of Melbourne and has 1330 students. “Dad loved his time here and described the college as one of the best schools he ever taught at,” Frizza says. Family ties aside, she was also excited by the challenge and opportunity of stepping into a new role as executive director of strategic outcomes. Her primary focus is to look at ways to continue to improve academic outcomes for each student, and there’s also a strong focus on supporting teachers to enhance how they engage and teach in the classroom. With the support of current principal Tony Hirst, and assistant principals David White and William Keane, Frizza is trialling different strategies in the classroom to see which have the greatest positive impact on student learning. “You can do plenty of research and reading but the key is to make learning and strategies come to

One of the best parts of my job is when a teacher tries something new in the classroom and then tells me, ‘that actually works’,” says Frizza. “This year we’ve also started individual academic coaching. Each year 12 student has an academic coach who guides them through the year. Year 12 can be tough and stressful for students and we want to make sure they do the best they can but not to the extent that they fall over along the way.” Outside of school, Frizza combines her love of
keeping physically fit with a passion for travel. She’s completed the Kokoda Track and has hiked through the Dolomites in Italy and the Canadian Rockies. Later this year she will spend time kayaking in the Antarctic. But at the end of that adventure she will be happy to return to her role at Emmaus College. “I’m enjoying being part of the college community and building on the good things that are already happening here,” she says. ● SARAH MARINOS

his year’s Genazzano school captains, Andriyani Millie and Maya Courtney, both 18, talk about what the role means to them and their deep attachment to the school.
Andriyani Millie joined Genazzano in year 9. Her family lives in Brunei and Andriyani has been a boarder since she enrolled. “My aunty was here, and my dad and uncle went to Xavier – our brother school. I am part of a legacy here and I was pretty excited to move to Australia because Brunei is a small country,” she says. “I walked into my home room [in year 9] and the girls were so welcoming. “I’ve made friendships that will continue throughout my life. My aunt is now in her 70s and is still friends with her schoolmates. “I’ve had so many positive experiences at Genazzano. “During work experience I spent time at a kindergarten, a museum and an aged-care facility. I also did the Duke of Edinburgh Program and realised I had some leadership skills. So last year I applied to be school captain and getting the role was so exciting. “I think a captain has to be passionate, confident, proactive and a good communicator. “There are two types of leader – one who leads from the front and who says, ‘this is what is going to happen’. And there is the leader at the back making sure nobody is left behind. “When I graduate, I’m interested in health and sciences and I’ve applied for the Australian Defence Force. I hope to be a doctor with the Royal Australian Navy. “Genazzano has been my home and my family for the past few years and I will be forever grateful.”
MAYA SAYS... Maya Courtney has been at Genazzano since year 7. She enrolled due to her family’s links to the school and the strong music and drama program. “I walked into the school on my first day and everyone seemed to know each other. A group of girls rushed over and took me around the school and they’re still my best friends. Genazzano girls are

I was quite behind in maths when I came here but teachers have boosted my confidence and now I’m doing VCE maths. “A few years ago, I wouldn’t have thought I would do that, but maths became one of my favourite subjects. “I’m proud to have been chosen as school captain – I thought you’d have to be here since prep or be the strongest academic student to be chosen. “I never really expected to be appointed but I’ve
always wanted the best for my school. Putting on my uniform in the morning is still so exciting. “Andriyani and I work well together and we’ve both encouraged our year 12 classmates to enjoy the moment because the last year here is going so fast. You can miss things when you look too far ahead. “Next year I hope to take on a bachelor of fine arts in acting; appearing on Broadway is my ultimate dream. “I was a completely different girl when I first came to Genazzano. I was so shy but I’ve grown so much. It’s a nurturing place and I feel whole when I am here. Genazzano will always be a part of me.” ● SARAH MARINOS

Is winter a good time to sell? Buyers are not seasonal. They buy when the right opportunity presents itself. As the cooler weather sets in, many people considering going to the market will be faced with a quandary – sell in winter or wait until spring? The winter vs spring debate rolls around every year with predictions of low or no activity over winter and a plethora of new listings ready for the spring market. Buyers are not seasonal. They buy when the right opportunity presents itself. The number of listings on market tends to fluctuate with the seasons though. Aside from the practical considerations such as work commitments, school terms and actually being ready to go on the market, the impact of the season on the campaign’s success is often misinterpreted. There is a widely held view that more people sell in spring because the house & garden present better and therefore sellers achieve a higher sales price as a result. There is no doubt on two points of the accepted wisdom about the spring selling season.
Firstly, there will be a lot of new listings to hit the market in spring that have been held back over the winter. Secondly most properties do present better in spring than winter.

These two points can cause people to jump to a third, incorrect assumption. The mistaken assumption that spring is a better time to sell than winter, from a selling price perspective. Winter is often under-rated as a selling season. The fact that many competing home sellers hold their properties for the spring creates a shortage of stock on market between June and September. Low stock levels in winter can create artificial strength in the property market as buyer demand outstrips seller supply. Don’t miss a good selling opportunity this winter.
