““I am Brett Diprose ” … and I design sports stadiums I decided I was going to be an architect in grade
7. I’m not exactly sure how it happened, but I woke up one morning and definitively knew it was what I wanted to do with my life. My uncle was an architect in Western Australia. The second thing was that my father, a pastor, went to the Solomon Islands to rebuild some of the buildings that had been destroyed after a cyclone. I remember being devastated that I couldn’t go and contribute. It’s one of those professions where it’s a blend of art and science. As I got older my fascination with detail and putting things together or dismantling things kept growing. As a student of architecture, I was fortunate enough to work on the second stadium of Melbourne Park (formerly known as Vodafone Arena, then Hisense Arena, and now Melbourne Arena). It was a seriously complex project. The stadium was going to do a number of different things. First and foremost, it was the second venue for the Australian Open. The second was as a velodrome, and then as a basketball stadium for the NBL. Equally, it was a concert venue. I worked on it for 18 months, part of a team of up to 10 architects. Most Melburnians probably don’t even remember when it didn’t exist. There are not too many projects you can work on as an architect that have such a big impact. Years later I went to an NBL game there and sat there with my son who wasn’t even born when I worked on it. I also worked on the Melbourne Sports and Aquatic Centre stage two development for the Commonwealth Games in 2006, which stretched and exposed me to so many experiences. I also spent four years on the redevelopment of Whitten Oval. I think my favourite project was working on the Metro Sports Facility (a large aquatic and leisure centre still being built) in Christchurch. It’s far and away the best team environment I’ve worked in. It began as a master plan that really started to address what Christchurch as a community needed as part of the recovery after the earthquake. Then there was the human aspect of knowing people had been through a pretty traumatic experience. ● ● warrenandmahoney.com

uyers in Melbourne’s most luxurious development to date, The Muse, could feel themselves pulled in two directions: from every window, the very best of Melbourne will entice residents out to play, while inside, a combination of space, grandeur, comfort and a level of craftsmanship rarely seen will encourage them to stay put. Residents of the 14-level, 42-residence development on the corner of St Kilda and Toorak roads will pay between $3.2 million and $45 million for an apartment here – some of the homes come with their own pools. Knight Frank’s head of project marketing Michael Robinson says most buyers are trading out of $20 million (or more) properties in Toorak or South Yarra and are seeking a high level of service and care as well as the “next level” in luxurious interiors. Up in the double storey display suite, Melbourne’s charms are on show through the windows. There’s Toorak Road to the east, with Fawkner Park running alongside it. The Shrine of Remembrance sits enigmatically to the north, surrounded by space and greenery. Beyond the Shrine are the city’s skyscrapers, the distinctive flagpole and tower of Government House and the lights of the MCG. Robinson says most buyers already know and love the area. “They like the proximity to transport, the city, parks and the arts,” he says. Much is within walking distance. The charming Bistro Gitan is metres away, the Tan or Fawkner Park are ideal for a morning stroll, and the Palace Como is the local boutique cinema. Robinson says many retirees or empty nesters dislike leaving their “patch”, so moving only one or two kilometres is appealing. For many of the wealthy purchasers, the level of luxury and care on offer are significant drawcards: a concierge to bring up the shopping or the dry cleaning, high-tech touches such as number-plate recognition to open the gates to the car park, voice control to switch on the TV and the lights or call the lift, all the way up to facial recognition and fingerprint scanning if they choose.

Inside the apartments, the emphasis is on the highest-quality natural materials crafted to an exquisite finish. spent a couple of weeks in Greece recently, and one thing I noticed was how the Greeks prepared seafood so simply. It is straight from ocean to plate, making it so fresh and tasty. All over Greece you will find old men tenderising octopuses by hitting them against rocks. We don’t do this in Australia, but I believe some restaurants and houses have dedicated washing machines to tumble octopus and tenderise them. Another way is to massage the tentacles for 30-40 minutes. This recipe uses a tenderised tentacle, which can be bought from your fishmonger. I get mine from my dear friend Angelo, of Aptus Seafood, at South Melbourne Market. It saves the hassle of cleaning up and having sore hands. I try to make it there once a week to get my seafood, and curb my oyster cravings. There are also many ways to prepare the tentacle – slice it into thicker pieces or serve it whole with a side of greens. Yamas! ●

Octopus carpaccio Ingredients (serves 4) Good olive oil 1 tenderised octopus tentacle A few sprigs of thyme Salt to taste

Method ■ Put a griddle on high heat. Alternatively, you may use a barbecue, if you have one. Add olive oil, and, when the griddle is hot, put in the octopus. Drizzle with more olive oil. ■ ■
Add in the thyme. Cook the tentacle for approximately 10 minutes on high heat, turning around every 30 seconds. You want to get a nice char on the suction cups. Season liberally with salt.
Once cooked through, remove the tentacle and let it cool. Once cool, using a sharp knife, slice vertically down the middle into discs about 2mm thick. Put the discs on baking paper, creating a grid of four by five or however many you like. You may want to do multiple plates. Put another piece of baking paper over the top of the sliced octopus and place something heavy on top to compress it. Leave overnight in the fridge. This part is optional. You can serve immediately, but leaving it overnight allows it to dry out a little and form a better shape. When ready to serve, remove the weight and baking paper. Transfer the octopus onto a serving plate. Drizzle on some olive oil and add some radishes on top and around the carpaccio. Garnish with fennel fronds and a squeeze of lemon juice. Season with salt. ●

Y
ou don’t need a gym to smash a great workout. Whether you’re strapped for time, taking a break from your current routine or travelling, here are four great workouts that you can do anywhere – no equipment required.
FARTLEK RUNNING \ One of my favourite types of training when I’m travelling or don’t have access to a gym is called fartlek training. Fartlek means “speed play” in Swedish, and involves randomly mixing up the intensity during your runs to ensure you get out of your comfort zone. There are several apps that will do the hard work for you by creating random work and rest periods, so all you have to do is get up and run. STAIRS \ Stairs are all you need to get a complete
cardio workout that gets your heart pumping and
engages several leg muscles at the same time. Mix it up by taking the stairs one step at a time, then two steps at a time and perhaps even three (step height and safety permitting). I like to warm up with a slow jog and stretch for a couple of minutes before sprinting up quickly. Jog or walk down for recovery before going again. My go-to steps are at Sandy Point in Sandringham. BODY WEIGHT WORKOUT \ Some of the best fatburning functional exercises can be done using your own body weight. Burpees, squat jumps, push-ups, lunges – the list goes on. Movements that use multiple large-muscle groups are the most effective, and keeping the rest between sets to a minimum ensures you continuously spike your heart rate for a maximum calorie burn.

he broad and supportive sporting culture at Whitefriars College ensured David Morris thrived during his high school years. The aerial skier, Winter Olympian and maths and PE teacher joined the school in year 8 and quickly became part of the cricket and volleyball teams. “I’ve been into sports my whole life. My parents took me skiing when I was three and I did gymnastics for 15 or 16 years. When I later came across aerial skiing, it was a sweet match because I could do flips and knew how to ski,” says Morris. “At Whitefriars I was encouraged to try different sports and I was part of the Associated Catholic Colleges sports program, where we competed against other schools. I was on different sports teams – I tried football but wasn’t one of the big guys and thought I’d get trampled quite quickly! But I was into swimming and diving at school, too.” As well as his passion for sports, Morris also discovered an interest in maths. “I liked maths because it has a definite answer. There is a right or wrong answer and that’s it. I liked science, physics and chemistry, too – things that relate to real life and how things work. I had great respect for my science teacher, Greg Stewart. He’d have a laugh with the class and then he’d say ‘OK, to work’ and everyone would start working. Everyone knew his limit and respected it.” Morris graduated from Whitefriars College in 2002 and decided to become a sports and maths teacher. He studied a bachelor of applied sciences at RMIT but during his third year he was introduced to aerial skiing. His four-year university course turned into a nine-year journey as the sport demanded he trained overseas for 10 months a year. Morris was initially coached by champion Australian aerial skier, Kirstie Marshall, who spotted his potential at his local gymnastics club. She introduced Morris to the Australian team coaches. In 2013 he came first at the World Cup in Ukraine, he won silver at the 2014 Olympic Games in Russia and took third place in the 2017 World Championships. Morris is now coaching Australia’s future medalwinning aerial skiers. “I did my degree one subject

every semester or one a year and juggled sport and study. I got to an Olympics while studying and it was demanding but I graduated in 2011 with first class honours,” says Morris. Morris says he learnt the rewards of hard work and staying focused while at Whitefriars. “I paid attention, asked questions and I learnt who I was, what I was capable of, what I could become and how to go about it. My teachers encouraged me to work hard and to work to my potential and I learnt that if you study hard you get results,” says Morris. Whitefriars also taught the elite athlete the importance and value of asking for help. “I think boys particularly often think they can do it all and they see asking for help as a sign of weakness. I think asking for help is a strength,” Morris says.
“There are always people who will help you and if you want to be better, you need help to achieve your dreams and goals.” Morris has spent the past few months overseas helping to coach the Swiss team. In coming months, he will continue criss-crossing the world to work with some of the globe’s best aerial skiers. The US, Finland, Canada and China are all part of his travels with the Olympic Winter Institute of Australia. “I want to give back. A lot of people have helped me through my life and I want to pass on that knowledge and experience to help the next generation of athletes,” says Morris. “When I know what I want, I try as hard as I can to get it. I never put in a half-effort because I never want to be left wondering ‘what if?’ ” ● SARAH MARINOS
