A

s the teams for the new season of The Block walked into the old Gatwick Hotel in St Kilda for the first time, they had no idea they would be taking on the biggest project in the show’s history. “There’s nothing that can prepare you for that feeling when you’re thrust into a property like the Gatwick,” contestant and former professional netballer Carla says. “You walk in, the carpets are wet underfoot, there’s a smell that you’re confronted with. You’re a bit like a deer in headlights.” It’s a building with a patchy past. Built as a luxurious hotel in 1937, the Gatwick fell into disrepair, and had up to recently been used as a lowbudget rooming house. In the 14th season of The Block, five couples from across Australia will transform the notorious Fitzroy Street dive from rundown hotel to high-end apartment building over just 12 weeks. Architect Julian Brenchley, who has worked on the show since its first season, says transforming the building was a feat like no other. “We like to give ourselves challenges, so year on year the brief gets bigger and bolder. They’re the biggest apartments we’ve ever done.” Brenchley says. “It’s been really exciting being involved with the rebirth of a grand old dame.” The project is set to breathe new life into this somewhat downtrodden area of St Kilda. Hocking Stuart Albert Park director David Wood, who was the auctioneer of last season’s winning property by Josh Barker and Elyse Knowles, says locals have been positive about the building’s rejuvenation. “The Block renovating the Gatwick will be the catalyst for real improvement in Fitzroy Street and the surrounding streets,” Wood says. “A lot of people who live locally have said they’d be very interested to have a look at the apartments because they love the location.”

He says the apartments are likely to fetch record prices for the area. “There’s precious few that have the size that these properties have and there’s very few that have the nature of the renovation.” The task of having 10 relative novices designing, managing and completing a renovation of the quality and scale The Block requires is not a small one, but Brenchley says most of the applicants at least had some clue about what goes on on a building site. “People are getting more savvy with how things are done,” he says. “There are limitations, but then that’s when the creative juices are meant to flow.”

or former professional netballers and Bianca and Carla, their lack of experience on the tools is made up for by their ability to stay calm under pressure. Bianca won Commonwealth Games gold and silver for Australia in netball, and hit the court for the Melbourne Phoenix and Melbourne Vixens, where she played alongside Carla. They met about 15 years ago, and though they’ve not always lived in the same state, their friendship has lasted the test of time – and so far, the test of The Block. “Coming from a team sports background, you have that foundation of knowing what you need to make a good team, and I guess, that real hunger to win,” Carla says. “I still want to make sure we come out of this very good friends – that means more to me than anything else.” It was Bianca’s idea for them to audition for the show. Her dad is a builder and she has renovated a couple of small apartments in Melbourne. “Both of us have to be labourers, we have to carry as much stuff up stairs as we can,” Bianca says. “Anything where we can get our hands dirty, we’re doing it.”

She says friends told her to get a male counterpart to audition with – someone who could do more of the physical work – but Bianca says being a rare allgirl team was not a disadvantage. “I get budget-wise it might be helpful to have a guy with a trade,” Bianca says. “But like [season seven winners] Alisa and Lysandra [Fraser] showed, it’s possible and I hope it shows other girls that they could do it too.” Another team, West Australian fiancees Courtney and Hans, are also renovation rookies. The flight attendant and pilot met seven years ago and decided on a whim to try out for the show. “I think everyone loves a bit of a cliche and the pilot-flight attendant storyline everyone kind of loves,” Courtney says. She says arriving in Melbourne with no trade contacts – especially once they saw the condition of The Gatwick – was overwhelming. “I wanted to leave. I was like ‘we are way in over our heads, there’s absolutely no way in the world we are going to be able to do this’.” Hans says the pair have realised their tendency to be “rule followers” might not always work in their favour. “The whole thing is not to take ‘no’ for an answer, and it took us a while to cotton on to that,” Hans says. “You have to just throw all caution to the wind and persevere.” Carla says what she’s learnt about herself has made the stress of renovating a room a week worth it. “It’s the best thing I’ve ever done – I loved the experiences I had with netball – but this is a challenge that’s completely out of my comfort zone and to be able to do it gives me a massive sense of achievement.” ● THE BLOCK 2018 \ Premieres Sunday August 5, 7pm, on Channel 9. ● 9now.com.au

hen HWKR approached me to take on one of their pop-up leases at their food hall in the Melbourne CBD, I came up with a Malaysian street food concept, which offers both traditional and fusion dishes. It was then that Chanteen was born, using family recipes passed down through the generations. Chanteen is cooking from scratch with no shortcuts, and this is my secret satay recipe. It is one our top-selling dishes along with the Char Kuey Teow. Don’t be overwhelmed by the list of ingredients as I guarantee you it is worth the hassle. Do it over the weekend, allowing 24 hours for the meat to marinate and if you haven’t got a charcoal grill, use the barbecue instead. However, charcoal will give you a deeper and smokier flavour, which you can’t get from an electric grill. If you think it’s all too much work, pop down to Chanteen before it closes on August 12. ●

Chicken satay Ingredients (Serves 4-6) 1.5kg chicken thigh (skin off), cut into bite-sized pieces Honey and water mixture, for basting Chicken satay marinade 200g shallots 100g garlic 25g galangal 60g lemongrass 25g ginger 20g turmeric powder 100g brown sugar 20g cumin powder 20g fennel powder 20g coriander powder Salt to taste 1 cup vegetable oil

20g dried chillies 50g long red chillies 60g shrimp paste (toasted) 200g shallots 100g garlic 30g fennel powder 30g coriander powder 50g lemongrass 30g ginger Satay sauce 2 cups vegetable oil 3 cups water 600g palm sugar, shaved 100g tamarind paste 500ml coconut milk 600g skinless roasted peanuts, blitzed to breadcrumb size 100ml sweet soy Method For the satay marinade, blend all ingredients together until a

Marinate the pieces of chicken for a minimum of 12 hours. ■ Skewer the chicken and cook over charcoal or a barbecue for 5-10 minutes, basting with honey and water. ■ For the satay sauce paste, blend the ingredients together to form a smooth paste. ■ For the satay sauce, fry the paste in the oil for 3-5 minutes. Add the water and palm sugar and stir until dissolved. ■ Add the tamarind paste and coconut milk. Stir to combine. Allow to simmer for 10 minutes. ■ Add the peanuts and allow the sauce to thicken to a thick gravy. Add the soy and adjust salt levels if the sauce is too sweet. ■ Serve with compressed rice, cucumber and onions. ● ■

iven the current turbo-charged interest in all things Tasmanian, it’s not surprising that the state’s pinot noir output is also attracting extra attention. It should. Tasmanian expressions of this fickle grape variety are among the best in the country and there’s an increasing acknowledgement that the state is home to several distinct subregions that make drinking the stuff even more interesting. Philip Kennedy, co-owner of recently refurbished Southbank restaurant Pure South, has not only been specialising in all things Tasmanian at his restaurant for 14 years but also makes wine in Tasmania, including pinot noir. He has watched the wine industry develop and reckons it’s like it has “advanced 40 years in the last 15 years”. “I think what’s interesting is that people are PU R E S O U T H

finally acknowledging and taking real pride in the length and the breadth of the quality in Tasmania and that there are distinct subregions,” he says. “In the north, you get more fragrant, bright pomegranate expressions, while in the south the wines are more broody, more savoury with dark cherry characteristics. ‘‘In the east, it’s hard to put into words, but they display a savoury character with an almost lolly-like lick of musk and a quality like dark red blossom.” For those wanting to compare and contrast Tasmania’s pinot noir (and others), Pure South is hosting VIN Diemen, a former wine trade show that’s evolved into an annual festival highlighting the state’s food and wine output. The festival will take over the top floor of Pure South and some of the ground level with 26

The characters I am interested in writing about tend to be marginalised. They come from life’s underclass, and are often isolated: language is not necessarily easy for them. I have this feeling that if I don’t give them a story, then who will? Bob Dylan’s 1985 song, Up To Me, plays in my head every day as I write. I don’t understand the song, and yet I do. For me it is a song about sacrifice and determination and loneliness.

I’ve always had the most idiotic fantasy about going back in time to May, 1965, and hanging around in the laneway behind London’s Savoy Hotel to watch Dylan filming the video to Subterranean Homesick Blues. It is a sublimely jumbled masterpiece of inchoate images, none of which make sense on their own, but which together erupt in the brain, to linger there like a dream you can never shake. And the video! Just him standing there in that lane, with that pile of cards. He dumped the cards in a skip. I would dive in after them.

As a 16 year old I’d play Like A Rolling Stone before going out. Then a friend loaned me Blonde On Blonde and we recited the lyrics to Visions Of Johanna. I hitched to Queensland because I wanted to say, I’d been ‘‘hittin’ some hard travelin’’. Saw him three nights running at The Music Bowl in 1978 and at Kooyong, The Palais, Rod Laver, Byron, and soon I’ll see him again. He was interviewed by a friend in 1986, and I found a spot by the hotel door, knowing he would have to walk past. He shook my hand. Brief, but deeply momentous.

Another Side Of Bob Dylan will never be far from my player, as it’s the most warm, crackling, open fire of a record I think I’ve ever heard. Ballad in Plain D reduces me to tears ... it’s a perfect song among perfect songs.

I first heard Dylan in year 8 English class, 1977: the teacher gave us the lyrics and pressed play on his Casio cassette player. Like rolling stones we wandered, warbling out. The tune was threadbare, but the lyrics made rudimentary sense – I was hooked. The glaring honesty of Dylan’s unadorned delivery may be the reason few of his songs are covered. Who would dare match his frankness?

S

t Columba’s College captains are leading the way in many of the college’s principles and behaviours. Cater House Captain Alannah Leone, Environment Captain Clare Wilson and Social Justice Captain Isabella Anderson are three of the young leaders this year, working to grow their skills and represent the student body.

My first experience with a student leader at St Columba’s was during my college tour when I was 12, almost finishing year 6. The tour guide I had was a House Captain and her passion and extensive knowledge was inspirational. When applications opened I could not wait to apply. At St Columba’s the house system plays an important role. As a college community there is always friendly competition between houses, and there is no doubt that a strong sense of community is formed within each house. The ability to represent our house through cocurricular activities, feast days and other college events, means that the house is a significant part of school. I strive to promote our patron, Sister Mary Lawrence Cater’s values of courage and creativity. In my role I am very proud of our achievements including our current fundraising efforts. Since taking on my role I have learnt that forming relationships with the girls you are representing is extremely important. Once I finish year 12 I would love to study and work in human resource management. ENVIRONMENT CAPTAIN CLARE WILSON

I did not plan to become a student leader, but after hearing some inspiring words from the 2017 student executive about their positive experience and how much they gained from their time in leadership, I felt compelled to step forward and dedicate myself to a cause I too felt strongly about. I’ve always had a passion for caring for the environment and the role of Environment Captain felt like a logical fit. In my role I have strived to work to spread awareness about environmental issues and how

individuals can effect change. Communication and teamwork are key to being a successful leader. In any position of leadership, based on my experience thus far, I believe being able to communicate with and listen effectively to your peers and teachers makes the process of effecting change far more enjoyable for everyone involved. Once I finish year 12 I hope to complete a degree in biological sciences and eventually work in conservation research. SOCIAL JUSTICE CAPTAIN ISABELLA ANDERSON

I’ve always been a vocal and passionate person. When I see injustice I’m quick to voice my opinion and do my best to provide aid. Applying to be a student leader meant that I could channel my passion into my community, and try to make a difference, one small step at a time.

I chose to apply for the position of Social Justice Captain because of my passion and previous involvement with our social justice group. Our biggest event this year revolved around International Women’s Day, when my co-captain and I outlined the achievements of women over the past 100 years. I’ve learned that time management and interdependence is essential to be a good leader. It’s important to understand how you work and interact with others, and to efficiently work collaboratively and to a deadline. At the moment I’m looking into a few different courses, but my objective is to get into a media and communications course at RMIT. My dream career is to work in the film and television industry, or become an independent content creator. ● MELISSA HEAGNEY

“Unique” is an overused word in the real estate industry, but one that aptly describes this family home.
