In troubled times, TV shows in which the whole family can sit down to watch are so treasured. Enter the rebooted Seachange, on Channel Nine. It’s the series that made now Hollywood star David Wenham (Diver Dan) a heartthrob, and in magistrate Laura Gibson, played beautifully by Sigrid Thornton, showed a strong woman could still express her fragility. The show coined the real estate phrase “sea change”, for city-slickers seeking peace and quiet, even if Laura encountered hiccups on the way to that nirvana. ““I am Glenn Watson” … and I’m a butcher at Rockpool Bar & Grill I never thought in my wildest dreams I’d be

working in a restaurant as a butcher. It is pretty unusual. There’s three of us full-time in Australia and we’re all within the Rockpool Dining Group. Because this is a steak restaurant, the best way to do that is have your own butcher – do everything in-house. Basically I deal directly with the producers and then we dry age all our own meat, so it’s minimum 50 to 60 days drying. With dry ageing, the flavour’s so much better. I’ve been here at the Melbourne restaurant for almost 11 years; before that I was in butcher shops. I started off as a clean-up kid when I was 13, after school and on Saturday mornings. Mum sent me up to the local butcher shop to get some mince and I

saw the ad on the window. I loved it from day one. You could muck around and earn good money, and it was fun. It still is. I ended up finding an apprenticeship when I was 15 and left school. I started off in a butcher’s shop and halfway through my apprenticeship I changed to a family-run Italian small goods company. I enjoyed making salami and prosciutto, all that sort of stuff. We’re talking in the early ’80s. For an Anglo-Saxon kid to be sitting down at lunch eating prosciutto at 15 and 16, it wasn’t the norm. I’ve worked in kosher butchers; I’ve worked at David Jones. I’ve picked the jobs I wanted because I wanted to learn as much as I could in my trade, and this is the pinnacle of a butcher’s job.

To start my week off, I’ll make sausages and start preparing. I’ll look to see what functions are on, to make sure we’ve got enough stock. The spring racing carnival’s coming up and because we dry age we’ve got to plan in advance. This job isn’t for everyone. It’s physical. You’re lifting and cutting. Some people think you get everything out of a box, but you don’t, we have to process it. We get over a tonne of wagyu each month, and that’s just the wagyu. We have anywhere from $90,000 to $120,000 of beef ageing at any one time, and at the end of the day I’m responsible for that. ● ● rockpoolbarandgrill.com.au

any of us struggle to know we want to do with our lives, but Sigrid Thornton knew she wanted to be an actor at a very young age. Growing up in Brisbane, acting was always in her blood. “I wanted to be an actor probably from about the age of seven,” she says. “It’s a very hard thing to define exactly what drives a seven-year-old to such a calling, but it chose me, really. “I started doing acting workshops from that very early age and it wasn’t something that I really thought about, it was something I just wanted to do and it gave me pleasure and made me feel happy.” It’s been 40 years since Thornton had her first major role in a drama series, appearing in 30 episodes of the classic Australian drama Prisoner in 1979. She didn’t celebrate the achievement because, in reality, at the age of 60 she feels like she has been acting most of her life. “I didn’t have a party or anything, as I have been acting since I was a child,” she says of the milestone. “I have had the good fortune of having an enduring career.” Thornton loves being an actor today as much as she did when she started out. “I love it in a more clearly defined, concentrated kind of way now,” she says. “I love the actual process of being in the zone and making a performance work. That’s a rather hard thing to describe, it is a Zen kind of state that actors talk about. It’s a very fulfilling place to be.” Ever since that role on Prisoner she has barely left our screens – big or small. Whether it is winning hearts in the The Man From Snowy River or most recently a gritty role in Wentworth, she excels at everything she does. Thornton is back again in Seachange, reprising

Sigrid Thornton is back in Pearl Bay as the much-missed TV series Seachange returns.

A change of heart her role of the much loved magistrate Laura Gibson, this time on Channel Nine. The original series of Seachange finished to much public outcry in 2000 after three years on the ABC. It has taken almost 20 years to get the fictional town of Pearl Bay back on the map again. On this renewed occasion, Seachange wasn’t filmed in the Victorian town of Barwon Heads. Instead, it was shot in the just-as-pretty spot of Brunswick Heads in northern NSW. And this time around, Thornton is not only starring in the lead role, but is also a producer. “I have been working seven days a week, so I feel like I could probably sleep for month to make up for it,” she says. If you had have asked Thornton a couple of years ago if Seachange would ever come back, she would have probably said no. “I hadn’t dreamed of it returning,” Sigrid says of the Seachange reboot. “I hadn’t imagined that this would ever happen, really. So I’ve been very keen to take it one step at a time and not have any particular expectations, because it’s a long time later and this woman, although very much in the same spirit, she has had a lot of life experiences. “It has been an extraordinary experience bringing her back.”

Since 2000 the world has changed dramatically, but Thornton still believes there is a place for a nice drama like Seachange, amid so much doom and gloom. “Storytelling has changed enormously since Seachange was made and there are many more complex stories out there to be listened to, viewed and heard,” she says. “So it’s a different world. “But I still think that Seachange is even more relevant, perhaps more than ever because the world is in need of a soothing influence. “It’s a story that talks about connections between people and the loving connection between people “ The new Seachange also sees the return of John Howard as Bob Jelly, Kerry Armstrong playing his wife Heather, and Kevin Harrington in the role of Kevin Findley. Brooke Satchwell joins the cast as Miranda Gibson, Laura’s daughter. It was a joy for Thornton to bring Laura Gibson back to life, with all her quirks. “I think Laura is an unusual central figure,” Thornton says. “She’s not your traditional heroine. “She is neurotic, damaged, a bit obsessive compulsive and controlling, but she is constantly looking to redeem herself and her heart is in the right place. “She’s constantly looking to improve herself and the lives of those around her.” Based in Melbourne with her husband Tom Burstall, Thornton is looking forward to some quiet time now that the first series, of hopefully many, has been completed. “I got back home on Sunday night and my suitcases are still spilling out and unpacked because I’ve had such a busy time since I got home,” she says. “I’m looking forward to getting my act back together.” ● SEACHANGE \ On Channel Nine, Tuesdays at 8.40pm.

There are around 85 different producers of the ubiquitous condiment fish sauce, but the Khai Hoan fish sauce factory in Duong Dong is one of the best places to see (and smell) the traditional red wooden vats holding tonnes of anchovy and salt. Pepper is another thriving industry, and villages such as Cua Duong, Ganh Dau or Cua Can show visitors how the piquant little beads of fruit grow and the ways pepper has influenced Vietnamese cuisine. Pearl aficionados will be in heaven at Quoc An Pearl, where you can learn about the island’s pearl cultivation and buy the lustrous orbs.

See the unspoilt natural beauty of the island by catching a ride on the world’s longest cable car at the Sun World Hon Thom Nature Park. The carriages glide silently from An Thoi town to Hon Thom islet covering eight kilometres of forested and uninhabited islands, people fishing in traditional boats and coracles, and fishing villages where the tide laps at the door of tiny corrugated iron shacks. Then spend time exploring Phu Quoc National Park, where forest, sea and mountains meet. The national park covers 50 per cent of the island and is home to long-tailed macaques, silver langurs, slow lorises and otters. The best spot for hiking and bird watching is the peaceful Khu Rung Nguyen Sinh Forest Reserve. ●

tudents at Academy of Mary Immaculate use the city of Melbourne as their classroom during a creative, cross-curricular program. From walking The Black Mile along Gertrude Street and sampling indigenous food at Charcoal Lane, to learning about spirituality in pre-gold rush Melbourne, the Synergy program for year 9 students is a term of exploration. It has been offered at Academy of Mary Immaculate in Fitzroy for five years and is regarded as one of the highlights of the school’s education program. It spans the curriculum and embraces science, maths, English, the arts, history and geography. “The aim of Synergy is to enhance curiosity and to develop independent learners and students who think critically and creatively,” says Catherine Glenister, a Synergy learning leader. “It’s an integrated inquiry-based program that uses Melbourne as our classroom and we’ve found it to be a powerful way of teaching. It is a deep, rich experience for the girls.” The program has five units and a Tuning In week that allows teachers to get to know the students, introduces them to the city, and gives them a taste of what Melbourne and Synergy have to offer. A scavenger hunt and visits to Melbourne Museum and the State Library are part of the orientation. “Being in Fitzroy, we are perfectly placed for a city-experience program,” says Glenister. “The students begin to think about where Melbourne fits internationally and they look at our historic links with other places. We look beyond the walls of Academy and look at Melbourne through a variety of lenses.” Synergy units cover the First Peoples of Melbourne, including their experiences through the centuries and the impact of settlement and colonisation. The Spiritual City unit looks at the development of the Anglican and Catholic churches in Melbourne, the differences between the religions and significant religious figures. Visits to St James Cathedral, St Frances Church and an exploration of the architecture and history of St Patrick’s Cathedral are part of the experience. Sustainability studies include a Yarra River Keeper workshop to learn about how to protect

down barriers,” says Glenister. “At the end of the Synergy program we see sparks flying in the classroom. The students are engaged, motivated and confident. I remember one student who told me she’d never felt she was a good learner. Through the program she realised that she just learned differently, and she gained the confidence to feel that she could go on to achieve anything.” ● SARAH MARINOS
