for women in the Middle East. My three sisters conformed to social expectations and like cooking, fashion and socialising with friends. I love cricket and am a spin bowler and opening batter. Coming to Australia, I had one goal in my mind and that was to play cricket, but because I came to study I was determined to do well and keep my grades high. I arrived in Melbourne three years ago on an inaugural scholarship between the Australian College of Kuwait and Central Queensland University to study civil engineering. I was welcomed and received a lot of support from the university which helped me progress and achieve bigger goals. I graduated last June. In April 2018, I began as a casual at Pitt & Sherry, an engineering consultancy in Southbank. They liked my work and offered me a full-time job. We are working on Melbourne’s Metro Tunnel rail project. I really enjoy the inspections and going out on site, it’s my favourite part of the job. I’m super proud to captain my national side and it’s an honour to play international cricket. We play annual competitions within our region. This year, we played the World Cup qualifiers – we don’t have a games schedule as such because we are a non-Test playing country. When I came to Melbourne, I was connected to Essendon Maribyrnong Park, the oldest women’s cricket club in the world. The Bombers were welcoming, which meant I could play and do what I’m passionate about. We won the Twenty20 grand final that season. The following summer I was awarded player of the match in the grand final, as we won back-to-back titles. The game was on a live stream and my family were able to watch back home. Last season, I moved to Dandenong Cricket Club for more opportunity to play in the first XI and we were fortunate enough to win the T20 title, beating my former side EMP. My ultimate goal is to play in the Big Bash (WBBL) here in Australia and, from a team perspective, I’d like to take Kuwait to the next level and put together a team that is professional enough to compete and play in World Cup qualifiers. ●

Flights of fancy From Melbourne to London, chef Heston Blumenthal’s creative partner Ashley Palmer-Watts is in charge of the world’s most imaginative menu.

Heston out to my table. We talked for a bit and after that I wrote to him and said I’d love to spend a few weeks at the Fat Duck and do a stint in the holidays. The rest is history.” Palmer-Watts says the menu at Dinner, at Melbourne’s Crown, begins with a curiosity and has a strong link to the past. There’s no set pattern to recipe development, just lots of trial and error with many dishes taking years to perfect. “It’s a way of life for us,” he says. “We don’t think about it in terms of time– it’s about taste.” As of July 16, Dinner in Melbourne launches its always evolving degustation-only menu, with matching tipples from its wine director. Among the magic is a revamped Rice and Flesh dish (a take on a Risotto Milanese) with almond, saffron, lamb sweetbreads and smoked olive oil for a new realisation of a Heston classic. “The recipe originated in a manuscript The Forme of Cury dated 1390 and lives in the British Library,” Palmer-Watts says. “When we revisited the dish last year, we wanted

e’s Heston Blumenthal’s right-hand man, divides his time between Melbourne and London and been on more than 46 long haul flights between both cities in the past five years alone. Welcome to a day in the life of Dinner By Heston’s chef director Ashley PalmerWatts, who had thought about joining the army until an email changed his life. “I’ve been working with Heston for almost 20 years, I can remember the day we met – it was August 28,” says Palmer-Watts, who grew up in a small town in Dorset, England and takes this call while back in London to visit his wife Emma and their two children Max, 9, and Sophia, 7. “To be honest I never thought my life would come to this, [even though] you know I dreamed of working in a Michelin star restaurant one day,” he says. “I had an uncle and aunt visit me at the London restaurant not long ago. They’re from the same village I grew up in. They couldn’t believe it – they were blown away by the food. It seems normal to me now, but they looked at me with eyes of ‘this is anything but normal’.” Blumenthal and Palmer-Watts started working together in 1999 and the rest is history – both a culinary science experiment and a meeting of the minds. They’re both obsessive-compulsive in their work ethic, have made the World’s Best 50 Restaurants list (with Dinner by Heston in London ranked 83rd in 2019) and prove there’s a lot to gain by digging deep in 14th and 15th-century cooking manuscripts. “I had read about Heston in a magazine but that was sort of it at the time,” Palmer-Watts recalls of meeting him at the Fat Duck in the ’90s. “I ate at his restaurant – more like a bistro back then; the meal was amazing but it wasn’t perfect, the restaurant was pretty cold and uncomfortable but it looked cool,” he says matter-of-factly. “I ordered a delice chocolate cylinder filled with mousse, biscuit with cherries and vanilla ice cream for dessert. It tasted amazing. I quizzed his maitre d’ Nigel about the recipe and he called

to take it down its original almond root path rather than saffron being the dominant ingredient … it took six months to perfect.” As Heston’s chief protege, Palmer-Watts is also a master of time zone differences, often hooking up at all hours to keep both kitchens running smoothly. He says he doesn’t have time to think about jet lag when he lands in Melbourne. “It’s like anything, the more you do it, the better you get at dealing with it,” he says. “But, of course, just as I’m ready to fall asleep in Melbourne, the UK is waking up and then my mind is on that.”

rom the famous Meat Fruit (circa 1500) to Salamagundy (circa 1720), no meal brushes with the past like Blumenthal’s molecular empire, but sourcing ingredients to keep the flavours in sync is Palmer-Watts’ greatest priority. “To be fair, every recipe we have in London has to go through a localisation period,” he says. “It’s sent to the team in Melbourne and they’re talked through it on FaceTime and they will use their skills to adapt the dish. “They know how we cook and adjust the recipe using local flours and flavours so everything is slightly different because local ingredients tell the story of that country’s food best, but we aim to get them as close as is possible.” Palmer-Watts is the sort of guy you’d dream of being in business with. He’s always got Blumenthal’s back and has to finish what the wizard often starts – from trains of thought to business meetings. “We mostly share the same beliefs, but don’t always agree,” he smiles. Palmer-Watts is also the one who connects the dots when Blumenthal reels off ideas. “Heston told me about a guy who made cutlery that he wanted me to meet in Melbourne,” he begins. “I was told David was scared of heights and probably won’t come up to the restaurant but I could meet him in the lower level of Crown. “Heston said I had to order cutlery from him, and

I was thinking, great, I’ve just ordered everything for the restaurant and that’s not possible.” Turns out the man who is afraid of heights was Australian artist David Bromley, a sculptor and painter who doesn’t specialise in cutlery, but made three artistic sets that looked very Alice in Wonderland or destined for the set of a movie starring Johnny Depp. “David showed me these bronze, pirate-like cutlery pieces and I wasn’t quite sure what to do with them,” Palmer-Watts says. “It turned out David made the sets for three people – one was Heston, the others were Johnny Depp and the Rolling Stones’ Keith Richards. He’s given a set to all of them and, while we didn’t get them for the restaurant, David ended up doing three art pieces for our restaurant so he’s part of our family now, too.” ●

Home truths A frank series about motherhood has created a world pregnant with possibilities for actor Alison Bell. Wo r d s

ustralian actress Alison Bell was eight months’ pregnant with her first child when the ABC rang to deliver the news. The comedy-drama she co-wrote with creator Sarah Scheller had been given the green light. The Letdown, which aired its second season on the ABC and is streaming this month on Netflix, tells the story of motherhood from the perspective of a group of first-time mums. It’s packed with humour, some dark selfdeprecating moments as well as the ups and downs (and occasional friendships) that come with joining a mothers’ group you thought you didn’t need. “Getting that phone call from the ABC was the most thrilling and terrifying moment in my life,” recalls Bell, who has just moved from Melbourne to Los Angeles with husband John Leary and their five-year-old son Augustus. “I was about to give birth and didn’t have any maternity leave options when we got the go-ahead. “So while we had written a script about first-time mothers, there were some aspects which didn’t fit with my own life,” adds Bell, who plays the lead character Audrey, a full-time mum in the show feeling disconnected from her work identity. “I pretty much worked every gap I could find to get this series done. The first year of my son’s life was mental – I’m sure he’ll love me for that later in
life,” she smiles. A stellar cast comes back for season two including Duncan Fellows, Sacha Horler, Lucy Durack, Celeste Barber, Patrick Brammall and Noni Hazelhurst. The new season begins with the babies’ first birthday milestone – the plotline shifting from internal mum dialogue to how what they do affects the wider family circle. Bell says the series has resonated with so many thanks to its honest portrayal of being a mum. “We decided to tell the truth and I think that’s why we got the chance to come back,” she says. “We wanted to make a comedy and to make people laugh, but there’s politics underneath this series,
which is so relevant. Our aesthetic is very considered and potentially confronting for some people. But I think one of our jobs was to show the human experience and tell the truth about motherhood. We’re more candid about the female experience. It’s something that’s starting to happen and we’re part of that movement.” Bell met Scheller when cast in the TV series Laid, which Scheller’s husband Trent O’Donnell directed, in 2011 to 2012. “We became friends and she came to see me in a theatre show and asked me out for coffee. She told me about this idea to do a show about mothers and mothers’ group and I told her, yes, it must be done,” Bell says. Now, Bell and Scheller are both based in LA thanks to the success of The Letdown. “Whichever direction my career goes, as long as it’s not backwards, I’ll be happy,” Bell says. “I would be foolish to turn my back on the doors that are slightly ajar,” she explains of moving her family abroad and chasing a career opportunity. “It’s an interesting adventure we’re on and I’m going with it. Our son starts his first year of school in August. We’re all on this new journey together and we’re going for it.” ●

ultiple Grammy Awardwinning artist Melissa Etheridge has just released her 14th studio album The Medicine Show. It’s an ode to the importance of wellbeing, a personal trip down memory lane about getting through life’s toughest moments and proof that she’s back – defiant and healthier than ever. It’s been 15 years since Etheridge was diagnosed with breast cancer, putting her music career on hold at the time for treatment. An emotional
stage comeback a year later in 2005 (with no hair due to losing it during chemotherapy) saw her perform a cover of Janis Joplin’s Piece Of My Heart at the Grammy’s with Joss Stone, a delivery packed with intense emotional conviction that still brings a tear to her eye thinking about it. “I look at life as the pre-cancer and post-cancer phase,” says Etheridge, 58. “Cancer made me stop and assess everything in my life. “It opened a spiritual side of me. When faced with mortality, it makes

“I was able to get work at some lesbian bars and had a great following as a result. The bad news was I had to bring record company executives to see me there, which wasn’t always easy in the ’80s,” she laughs. “I mean who was going to sign a lesbian back in the ’80s? “Nobody was out. I was turned down by everyone. Finally, Chris Blackwell came along in 1986 and said ‘I don’t understand why people haven’t signed you’. He signed acts like Bob Marley and U2 and believed in me.” Best known for her classic blues hit Bring Me Some Water Water, Etheridge says it wasn’t easy getting the song on the radio. “At the time there was an unwritten rule on radio that you couldn’t have more than two women on a playlist. I had a bit of that happen in those early years, it wasn’t overtly or angrily at my face. But it was the system and it has changed, but we have a long way to go.” ●

Her late father John was a high school teacher and basketball coach, and her mother Elizabeth a computer analyst long before they even called it that. Her elder sister Jennifer got a guitar for her 12th birthday but it was Melissa who begged to learn how to play from the age of nine. The rest was rock history in the making. She played in bands between the ages of 12 and 18, with her father taking her to shows that were four hours away from home. “Dad was the one who drove me. He knew if what I did was making me happy, he was all for it,” she recalls. Etheridge arrived in LA in 1982 and signed a major label deal in 1986 but didn’t release her self-titled debut album until 1988. “I had six years of grinding it out in LA,” Etheridge says.

Another moving part is Turkish-Australian celeb chef Ismail Tosun (ex Gigibaba). “We started Babajan together and his influence is definitely there, in the menu, the way I cook – I’ve learnt so much from him,” Chiaplias says. “I’m Greek,” she adds, crediting her background for “making it easy to connect with Turkish food”.

Babajan’s a humming little spot, a friendly, modTurkish place dishing up rustic yet refined homestyle cooking with heart. Piled high on the counter is a spread of haloumi pies, simit (like a Turkish-style bagel), grain-based salads, and four types of borek, including mushroom and walnut, and lamb cooked in a Baharat spice mix with potato. Savouries sit alongside custard tarts (golden in all the right places), icing-sugar-dusted kourabiedes (butter cookies), and cardamom-spiced apple cake
with a sticky strawberry jam layer and thick butter cream icing dotted with vivid green pistachios. On the menu proper, there’s the eggplant Aleppo cheese toastie. “I did try to take it off, but I got backlash,” Chiaplias says of customer’s feedback. An aromatic curry sauce rich with cumin, fenugreek, ginger and turmeric is poured over fried eggplant, with bitey cheddar, fermented chilli, fried eggs and sumac onions and – boom – that’s brunch. Still want more? You can add 12-hour cooked lamb shoulder for $7. Menemen eggs, an Istanbul staple and Babajan’s brunch star, comes in a hot, two-handled pan, a tempting mess of barely cooked eggs in a lightly

saucy brew of onion, tomato, spinach, salty cheese and harissa adding a chilli kick. Crab and haloumi omelette is a rusted-on fave, as is the lahmacun, spiced ground lamb on a crisp, feather-light bready base with a herby salad and sumac-tahini dressing. “We didn’t think breakfast would be the main focus,” Chiaplias says, “but that’s what people connected to and it’s built to be a real brunch spot.” Babajan is licensed; happy hour runs from 3pm to 5pm when signature cocktails flow and gin meets pomegranate molasses. Of course, you can always grab takeaway; just leave the tables behind. ●

In the end that career choice went by the wayside and Maddern moved to Melbourne when she was 18 to go to the University of Melbourne, and never looked back. She is now one of Channel Nine’s marquee presenters, on air alongside Ben Fordham and Freddie Flintoff co-hosting Australian Ninja Warrior for a third series. She also is one of the hosts of Nine’s Australian Open coverage and has been presenting the cricket World Cup from Melbourne. Australian Ninja Warrior was filmed in Melbourne for the first time late last year, with a huge set built at Scienceworks in Spotswood, and the iconic West Gate Bridge in the background. The city is showcased to the whole of Australia, with impressive aerial shots set to wow viewers.

hen Rebecca Maddern was a teenager growing up in Geelong, becoming a television presenter wasn’t her first career choice. Maddern, 41, like many teenagers of her generation, was obsessed with riding horses. “When I was 15 I wanted to be a mounted policewoman,” she says. “I loved riding horses, and I was trying to think of a career where I could ride horses seven days a week. “However, I’m not sure about the police force part, but being around horses everyday appealed to me.”

Getting the huge production to Melbourne from Sydney was a coup, and positive for the television industry as a whole. “It actually looks incredible to see Melbourne for this vantage point,” Maddern says. “We couldn’t have asked for a better location. The local council was fantastic, we had brilliant crowds and we filmed into the wee hours of the morning.” For Maddern, the gruelling filming schedule included some very cold nights but, most importantly, she was in her home city. She has a daughter, Ruby, who is now one year old. “It made things a lot easier to be in the same city as your child when she was eight months old,” Maddern says. “We were filming overnight and it was a bit of a juggle, but my

He is flexible in his work and we did what everybody else does – called on parents and friends.” Maddern cut her teeth in the industry at Channel Seven including reporting and presenting on Sunrise, before moving to Nine in 2016 to cohost The Footy Show. She looks back at the experience with fondness, and only has good things to say about her co-hosts after the show was axed this year following a 25-year run. “I have the most wonderful memories of The Footy Show,” she says. “Professionally I learnt the most I ever learnt in that job.
“It was an absolute joy working with those boys, including Sam Newman, whom I absolutely adore.” As for Australian Ninja Warrior Warrior, Maddern says the show is akin to a sport, just adding to an already wonderful and crowded sporting calendar in the city. “We all know that Melbourne really is the sporting capital of Australia,” she says. “I think filming the show in Melbourne gives it a different kind of edge and I think that translates through the screen.” ● AUSTRALIAN NINJA WARRIOR \ Channel Nine, Sunday at 7pm,

Squaring the circle of friends
I
think we can all admit that we are a product of our environment to some degree, and a large part of that environment is the people in it. The late American motivational speaker Jim Rohn once said, “You are the average of the five people you spend the most time with”. I love this quote and I definitely think there is some truth in it. However, it’s 2019 and I think we need to look a little bit further than this. Our digital circle has a much greater impact than perhaps we realise. In my space, with an online fitness program, I am fortunate enough to see technology help tens of thousands of people every day. But not for one second do I think it is only positive. Technology can be your best friend or your worst enemy depending on how and when you use it.
Think about those around you and ask yourself, are these people influencing my life for the better? Are they having a positive influence on the way I think, the way I act and the way I feel? Life is too short to spend time with people who don’t enrich it. To extend this even further, are you looking beyond your social circle to the social media accounts and broader media that you interact with every day? Who are you following? Why are you following them? What effect or impact is it having on you? You might not consider this your immediate circle but for many people, they are who or what you interact with the most. We have to take control of what we experience and if you want to experience positivity, you need to surround yourself with it – especially online.

his year’s Genazzano school captains, Andriyani Millie and Maya Courtney, both 18, talk about what the role means to them and their deep attachment to the school.
Andriyani Millie joined Genazzano in year 9. Her family lives in Brunei and Andriyani has been a boarder since she enrolled. “My aunty was here, and my dad and uncle went to Xavier – our brother school. I am part of a legacy here and I was pretty excited to move to Australia because Brunei is a small country,” she says. “I walked into my home room [in year 9] and the girls were so welcoming. “I’ve made friendships that will continue throughout my life. My aunt is now in her 70s and is still friends with her schoolmates. “I’ve had so many positive experiences at Genazzano. “During work experience I spent time at a kindergarten, a museum and an aged-care facility. I also did the Duke of Edinburgh Program and realised I had some leadership skills. So last year I applied to be school captain and getting the role was so exciting. “I think a captain has to be passionate, confident, proactive and a good communicator. “There are two types of leader – one who leads from the front and who says, ‘this is what is going to happen’. And there is the leader at the back making sure nobody is left behind. “When I graduate, I’m interested in health and sciences and I’ve applied for the Australian Defence Force. I hope to be a doctor with the Royal Australian Navy. “Genazzano has been my home and my family for the past few years and I will be forever grateful.”
MAYA SAYS... Maya Courtney has been at Genazzano since year 7. She enrolled due to her family’s links to the school and the strong music and drama program. “I walked into the school on my first day and everyone seemed to know each other. A group of girls rushed over and took me around the school and they’re still my best friends. Genazzano girls are

I was quite behind in maths when I came here but teachers have boosted my confidence and now I’m doing VCE maths. “A few years ago, I wouldn’t have thought I would do that, but maths became one of my favourite subjects. “I’m proud to have been chosen as school captain – I thought you’d have to be here since prep or be the strongest academic student to be chosen. “I never really expected to be appointed but I’ve
always wanted the best for my school. Putting on my uniform in the morning is still so exciting. “Andriyani and I work well together and we’ve both encouraged our year 12 classmates to enjoy the moment because the last year here is going so fast. You can miss things when you look too far ahead. “Next year I hope to take on a bachelor of fine arts in acting; appearing on Broadway is my ultimate dream. “I was a completely different girl when I first came to Genazzano.
