n 2016, after 10 years of going into his nightclub Eve in Southbank every Saturday night, Nick Russian was tired. Running the show alongside his brother Daniel, his club was a celebrity hotspot, with everyone from Usain Bolt to Serena Williams to – famously – Britney Spears partying there. “It was mixed emotions when it ended because every single morning on a Saturday, I would wake up with massive anxiety about the night ahead,” Nick says of Eve. “When I walked out there for the final time, it felt like an enormous relief.” The 42-year-old met Rozalia, 33, his wife of nearly 10 years, when she was an Eve patron. They now have two children: Willow, seven, and Kingston, four. “When Eve shut, I wasn’t 19 years old any more; I was a mother,” Rozalia says. “To be honest, I was excited because, in my eyes, he wasn’t retiring; he was having a year off. Little did we know it has now taken five years for Nick to finally get back into it.” At that time, Nick had the higher profile of the pair, but it didn’t take long for that to change, thanks to Rozalia’s ability to use Instagram as a business. Collaborations include Armani, Tiffany jewellery and Atoir. The pair’s work ethic is in large part due to their family upbringing: Nick’s family were Italian migrants who spent time in the Bonegilla migrant camps, while Rozalia and her parents came to Australia in 1991 from Uzbekistan, fleeing a civil war. “Like our parents, everything we have is because we have worked for it,” Rozalia says. Since Eve closed, the Russian brothers had been looking for the perfect venue for their next hospitality venture. Three years ago, they found it in the form of what was Cherry Bar in AC/DC Lane. The renamed space is Bambi and will finally open soon after three years of challenges, including liquor licensing issues and the pandemic. Nick quickly points out Bambi is not a restaurant; rather, it’s a bar with food. “You can go for a drink, or you can go for dinner and have a slice of pizza and a negroni at midnight,” he says. “But on a Friday or Saturday night at a certain time, it will become more of a party, but at the same time, it is definitely not a nightclub.”  ●

Boost Juice founder Janine Allis spills the secrets of good business, and explains why she loves reality television.

Serving it up

A

few years ago, two dozen Australian Survivor contestants wiggled their toes in the sand of a remote Fijian beach and contemplated the 50 days ahead. They would have to hunt for their food, battle the elements and engage each other in sustained, unrelenting mental warfare until there was only one left. It sounds stressful. But, oddly, it did not to one contestant. “The thing that worried me the most is I like being busy,” says Janine Allis, the 55-year-old Boost Juice Bars founder, mother of four,

“Every day, you wake up and go, ‘OK, right. What’s today going to hold?’” grandmother of two and a self-made businesswoman reportedly worth $66 million. “I’m addicted to busy. And I thought, oh my god, what am I going to do all day? You do the fire, you cook the beans, you do a challenge: what do you do the rest of the day?” It turns out Allis had no trouble occupying herself, making it deep into the series before being voted off the island on day 44. But, of course, Allis was no stranger to reality television. She began her on-screen career in 2010 with Undercover Boss and then followed up with four seasons as a shark investor on Shark Tank. Now, Allis is once again busy on TV, this time appearing as an adviser on Nine’s Celebrity Apprentice Australia. Is it possible this veteran of four reality shows might just be addicted to the medium? Allis concedes that early appearances helped with brand recognition or sated her curiosity as an entrepreneur, but recently she is being driven by something else. “I think in life, if you just say yes, really interesting things happen,” laughs Allis, pointing to friendships she has made, including her latest with fellow Apprentice adviser, fashion designer Lorna Jane Clarkson. “So, in so many ways, why wouldn’t you? And you know what? TV’s fun. It’s just fun.” And, given the economic challenges thrown up over the past year through the pandemic, you could hardly blame her for seeking out a bit of levity. Retail Zoo, the company she co-owns with husband Jeff Allis and private investment firm Bain Capital, has more than 650 company-owned and franchised stores in more than 13 countries with brands such as Boost, Betty’s Burgers and Concrete Co, Salsa’s Fresh Mex and CIBO Espresso. Like most companies, it had assessed many risks, but a pandemic wasn’t one of them. “We just kind of went ‘what the?’,” recalls Allis of that time.

“I’d built this business for 21 years, and I didn’t see a way out of it.” Allis says the Australian government’s response with financial assistance, emergency leasing arrangements for retailers and some astute and agile decision-making by her executive team saved the company from disaster. Nevertheless, the experience has left an indelible mark. “Every day, you wake up and go, ‘OK, right. What’s today going to hold?”

eanwhile, the pandemic also prompted Allis and her husband to move home. The couple had been spending a weekend at their Noosa holiday house when Victoria went into lockdown. “We couldn’t get back,” says Allis. “So, I mean, help! Poor us, we got stuck in Noosa … [But] we had this lifestyle where we went swimming and surfing every day and took the dogs for a walk in nature. And we just went, ‘this is what we want’.” In March, they sold their Toorak home for more than $20 million and now live in Sydney’s northern beaches, close to the city (for business), her two sisters and the beach. Although their Great Ocean Road property in Fairhaven is technically on the market (known as the “Mad Max House”, it’s valued at more than $10 million), Allis appears reluctant to sell. “That’s more of an emotional house for us. That’s where the kids have done nippers; it’s been a happy place for 20 years.” But Melbourne hasn’t lost her for ever, says Allis, who visits at least once a month. “I’m straddling both cities. My mother lives in Melbourne … but the best thing about coming to Sydney being a Melbourne person is it got me to appreciate Melbourne again. I was there last week, and I walked down the street, and I saw the beautiful trees that have changed colour. And I love the freshness of Melbourne.

“The cool boots and the great fashion you can wear is awesome. And you know, there might be a time when I will return. But for this period of time, we’re going to go on a new adventure.” New adventures, it seems, are a driving force for Allis, personally and professionally. In business, she keeps the Boost brand fresh by talking to her young customers, staying relevant and having fun (think Vegemite smoothies). “The day that you go ‘we’re done, that business is done, we’re successful’, is the day that you’re in serious trouble,” she says. “[It’s about] that curious mind – if there’s a better way, we’ll find it. I think the meaning of life is learning. I don’t care if it’s me learning to be a yoga instructor, which I did a few years ago, or me learning to drive a boat or learning to teach my dog a new trick; learning is the key thing.” That said, it’s difficult to pin down what Allis’s next adventure may be. Last year her company Retail Zoo withdrew an application to float as a publicly listed company on the Australian Stock Exchange due to the economic environment. That may change in the coming months if conditions are more favourable. “I would say that there is an event likely to happen in the near future,” she says. “But, it depends; there are so many things.” Meanwhile, she recently joined the board of electronic retailer Kogan and says she had been talking to Andrew Banks (of Shark Tank fame) about his investments in a business that specialises in longevity and quality of life. “I think that anything to do with whatever idea that comes up, or whoever I support in a business, my skill is to understand the customer, keep business simple, and just keep delivering what they want.”  ● THE CELEBRITY APPRENTICE AUSTRALIA \ Airs Sunday to Tuesday on Nine

hotographer David Parker has dipped into his archives to unveil never-before-seen images of what Melbourne’s music scene looked like in the ’70s and ’80s, when excess, innocence and rock’n’roll ruled every night of the week. Parker, who worked as a movie stills photographer before moving into filmmaking, became known for his poignant portraits of artists on the brink of fame. He worked closely with Skyhooks and Ross Wilson of Mondo Rock, and captured Nick Cave with his band The Boys Next Door in his South Yarra studio in 1978 in all their young, burgeoning post-punk glory. “I’m really drawn to that photograph of Nick Cave because you see so much of the present Nick there,” Parker says. “That day, three bands came down to the studio from Suicide Records and The Boys Next Door were one of them. “You see the innate sense of style Nick had even back then. There is a wonderful presentation and stillness about that photograph I still love.” There’s John Farnham in concert

with the Little River Band in 1983 at Melbourne Town Hall, a young Maurice Gibb of the Bee Gees in Melbourne’s CBD in 1973 and Elton John performing at the South Melbourne Football Ground in 1974. “When I was photographing, there was no sense that in 40 years’ time these images would mean something more,” Parker says. ”We were all having a good time. Some of us survived it and some of us did not.” Parker recalls photographing the Village People at the Ansett city terminal in Franklin Street in 1980, their camp confidence dominating a quiet city street that’s forever etched in his memory. “I had a very quick opportunity to photograph them on the day they were leaving for the airport, so I shoved them in front of a bus on Franklin Street,” Parker says. “They were extraordinary performers and could switch it on with such fantastic energy, which you see in the shot. I am quite pleased I have an Ansett bus just in frame – it nails it.” Then there’s the iconic 1975 photograph of AC/DC taken in Parker’s Fitzroy courtyard studio, with Bon Scott, Malcolm and Angus Young, Phil Rudd and Mark Evans. Parker had various studios over the decades, beginning in an old drycleaning factory in Toorak, which he shared with an architect, publicist and inventor, then moving to Fitzroy, before the trek over the river again. “What’s great is that, without really knowing it, we captured Melbourne at its most vibrant, too. These are the times we still talk about.”  ●

’ve only visited Barcelona as a backpacker piling my plate with free tapas, but those sultry, rustic bars that smell of the Maillard reaction from the kitchen remain vivid. I hadn’t experienced similar in Melbourne until dining at La Pinta, a 30-seat tapas bar in Reservoir from Catherine Chauchat (remember Boire in Collingwood?) and Adam Racina. There are no bookings, unless your party of fiveplus sits at a homely table in the prep kitchen surrounded by flour and pickling produce. We arrive to an hour-long wait during the Friday-night peak and are seated at a narrow ledge beneath a wooden ladder draped with dried herbs

menu and am thrown off course by an empanada gallega (an oval pie from Galicia) and tortilla de patatas, an omelette “cake” studded with potato and onion. Both proffer themselves from the counter and are served by the wedge at room temperature. When asked what I’d like, “both” slips out. Three Venetian-style sardine fillets arrive at our ledge, sweet and sour with onion and vinegar. Had I not also ordered velvety split fava bean dip and grilled ox tongue on lentils, I’d have asked for another. Our edible onslaught continues when shifted to the bar: blackened Anaheim peppers swimming in anchovy dressing; butterflied garfish pan-fried and bunked with almond puree; and spoja lorda – wonky, handmade ricotta ravioli from EmiliaRomagna tossed with retired egg-laying hen ragu. A rich brick of pickled pig’s head, coated in polenta and fried, threatens to send us over the edge, but if it feels like a European holiday, I say eat like you’re on one.  ●

erhaps you think the brand-new W hotel in Flinders Lane is going to be too hip for you. Think again. Sure, there’s a cool vibe at the entrance, with a gigantic lenticular artwork of Hosier Lane (by local artist Rus Kitchin) lit up behind the front desk. Down the hall, it looks like someone has taken a spray paint can to the lift lobby; yep, the dripping-paint pink walls were done by artist Ash Keating with a fire hydrant. There’s more uber-hipness inside the rooms: the Fabulous King room features what looks like a cylindrical art installation of a girl's face lit from within – only it proves to be a cupboard instead. Whenever”. The staff are called “Talent” and there’s a “W Insider” who describes himself as “a concierge on steroids”, hinting he’d make anything happen. Melbourne references abound, albeit subtly: room door handles are suggestive of Melbourne’s trams, while the hotel foyer is measured at exactly the same width as a Melbourne laneway. The pool area is dubbed Wet, which understates the fact

that it’s a dazzling spectacle of glass and curved lines overlooking the city, with a bar and 24-hour service. Rooms pay homage to Melbourne as a fashion capital. This theme repeats elsewhere, whether in a chequered carpet, or as buttons on throw pillows. If the Fabulous king room is akin to a local designer, then the Wow suite, with its swishy champagne bar and kick-back lounge room, is more

of a custom-made Maticevski garment, its sleek structured lines providing a head-turning moment. Bigger or smaller, it’s the rooms that make you realise this isn’t standard hipster fare. High Street This happening Thornbury strip is a ‘little slice of heaven’, according to the locals.

Nightlife, music, bars and cafes – these are the things that make High Street, Thornbury, a brilliant reason to venture north. It’s seven kilometres from the CBD and easy to get to on public transport; ideal for a night out. Since the turn of the last decade, new cafes and bars have gradually edged their way into the suburb, which is now a melting pot of people young and old, grounded by the Wo r darea’s s E L rich S I E Greek L A N Gand E Italian history. And, with great coffee spots to boot. An endearing mismatch of building facades host record and book stores, second-hand shops and nail salons. There is so much to look at and taste – you can even head to the evergorgeous Thornbury Picture House to catch a movie. The best thing about Thornbury is that it’s slightly more relaxed than the groovy suburbs to its south. While not everything may glisten, there are a lot of hidden gems. WHAT WILL YOU FIND THERE?

The Thornbury Local couldn’t be a more perfect spot to begin an evening adventure along High Street. I stop in for a bite and a drink to plan my next steps. The blues are playing, and the bar is dimly lit, candlelight flickering along the booth-lined walls. Three older men are standing laughing together, and the staff are giggling too, in on the gag. Susanna Joice, who works at the bar-and-music venue, says High Street has a “beautiful vibe”, where places like The Thornbury Local foster the spirit of the community. “It’s just like home when you walk in here,” she says. “There is so much here … it’s a little slice of heaven.” This place has an American-style menu and delicious woodfired pizzas – the mushroom pizza is wildly good. For a snack, go for the mac and cheese croquettes. Be warned; they are supremely addictive. Continuing on my journey, I cross the road to take a look at the lovely Pizza Farro, where the game is using spelt flour to create pizza that’s good for the gut, and they do it well. This is a wonderful place to take a few friends before heading to Thornbury Picture House for a movie.

No matter what happens in Sargood Street – who comes, who stays, who builds – the architecture of the 1930s reigns supreme. Not that this daunted Michael Munckton, who by the time he came to design this manor had run his hands over a lot of Georgian revival lines.
