ood and family are everything to Jerry Mai. The Vietnamese chef, cookbook author and mother of two shares the food of her heritage at Bia Hoi (The Glen, Glen Waverley) and casual Pho Nom venues (Emporium and Collins Street, Melbourne CBD). Mai has been a chef for more than 20 years, but being a mum is a relatively new adventure. “It’s been ages since I talked about me,” she says “All I do these days is talk about my kids and my wife.” Her five-year-old, Harry, has just had his first day of prep when we speak, while James, who is one, starts childcare in a couple of days. During lockdown, Mai was forced to close two of her restaurants: Annam, her signature Chinatown restaurant, and a Pho Nom store in Melbourne Central. When Annam opened in 2017, it was deeply personal as it represented Mai’s history and culture. Harry was born just after the launch, but she rarely saw him over those first two years.

“We had a camera in his room and in the middle of service I’d log into it and watch [my wife] Eliza putting him to bed,” she says. “COVID was terrible for my businesses but really good for my family. No one could call, so we just had family time.” Bia Hoi opened just before COVID hit, and survived lockdown. Dubbed a Vietnamese beer hall, it replicates the atmosphere of a junction of the same name in Hanoi’s Old Quarter, where people pull up plastic stools at plastic tables and throw back fresh beer and street snacks. Colourful window shutters shipped from Vietnam stand out against the concrete floor, with red lanterns and greenery hanging from the ceiling. It’s more refined than the “chaos” of Vietnam, as Mai calls it, but retains the vibrancy. Highlights of the sizable menu include oversized pho and bo bun hue (beef noodle soup) steamboats for sharing, and sizzling cha ca la vong – cook-ityourself turmeric rockling with rice noodles. Mai plans to update all of her menus this year to introduce Melburnians to a broader range of Vietnamese dishes. “We scratched the surface 10 years ago with banh mi, rice paper rolls and pho. What’s the next layer? That’s the question I asked last year, and this year, I’m going to find the answer.” ●

Ingredients (Serves 4) 340g rice flour 125ml coconut milk 2 tsp ground turmeric 2 tbsp vegetable oil, + extra for drizzling 1 tsp sea salt 1 egg 500g pork belly 16 small green prawns, peeled, deveined and halved lengthways 500g bean sprouts

Nuoc mam dipping sauce: 2 cloves garlic 3 bird’s eye chillies, finely chopped 150ml fish sauce 140g caster sugar 200ml warm water Salad garnish: 1 lettuce or mustard leaf 1 bunch Vietnamese mint 1 bunch shiso 1 bunch mint

Method ■ Whisk the flour, coconut milk, turmeric, oil, salt, egg and 600ml of water in a bowl. Set aside to rest for 3 hours. ■ Bring a large saucepan of water to the boil and add a pinch of salt. Add the pork belly, then reduce the heat to a simmer and cook for 40 mins. Drain and set aside to cool, then cut into thin slices. ■ To make the nuoc mam dipping sauce, add the sugar and warm water to a bowl and stir until the sugar dissolves, then add the remaining ingredients. Give it a good stir and set aside. ■ Heat a medium, non-stick frying pan over medium-high heat. Add 5-6 slices of pork belly and stir-fry for 2-3 mins until lightly golden. Pour about 60ml of the batter into the pan and swirl to cover the base and pork belly (tip any excess batter back into the bowl – the thinner the pancake, the crispier). Cook for 5-7 mins, until the base of the pancake is golden brown, then drizzle a little oil down the inside of the pan (this makes the pancake even crispier). Scatter four prawn halves and a handful of bean sprouts over half of the pancake and fold the other half over the top. Cook for a further 2 mins, then remove from the pan. Transfer to a serving plate and take to the table. ■ Pile the lettuce or mustard leaves and herbs onto a serving plate and place in the middle of the table. Invite guests to tear off some of the pancake, place it in a lettuce leaf and top with a few herbs. Roll up tightly and dip in the nuoc mam. ■ Repeat with the remaining pancake ingredients to make eight banh xeo. ●

Minogue, of course, made her name on Neighbours, catapulted to pop stardom in the mid1980s and reinvented herself and her music in each decade since, but in recent years she has begun seriously thinking about life beyond entertainment. “Music is still number one for me and I look forward to doing more shows, but I am loving developing my brand in other markets, too,” Minogue says. Sure, there are plenty of opportunities to collaborate when you’re Kylie, but winemaking took her fancy – partially because of a love of wine from the south of France formed decades earlier, and partially because of her desire to work with De Bortoli. “This is not about cutting corners or making business decisions for the sake of it,” Minogue says. “We got pedantic about details and I was adamant to have something I am proud to put my name to.

t an intimate lunch in the Yarra Valley, two tables of die-hard fans are overlooking rows of picturesque vines as they try a new wine made in collaboration with the object of their admiration. What makes this soiree special is that not only are they some of the first people to try the vintage, they are doing so while sitting with its maker, their idol and Melbourne’s own pop princess, Kylie Minogue. Most would know her for her music, but Minogue is dancing to the beat of a new drum, or shall we say wine barrel, and bringing one of Victoria’s best wineries, De Bortoli, to the global stage.

next step for Minogue after she moved back to Melbourne from the UK in 2021. She’s the first to admit there’s plenty to learn about the wine industry, and leaves the process of winemaking to the experts, but she’s ever curious about the business and is as hands-on as she can be. She made her first visit to the De Bortoli winery in March 2021, getting to know the fourthgeneration winemakers who are as committed to what they do as she is. Alongside De Bortoli head winemaker Steve Webber and his wife Leanne De Bortoli, she added the finishing touches to the 2022 chardonnay, replacing the big oaky notes of yesteryear for a leaner renaissance of the white wine. “Chardonnay is an exciting chapter for me, and partnering with a local winery is what really mattered,” Minogue says. “I love that De Bortoli is a Victorian and family-run business. That spoke to

“Sometimes, friends of mine who have tried a Kylie wine bottle are surprised at how good it tastes. Time and time again I tell them I know it’s amazing, we work hard with the best winemakers.” Minogue launched her wine label in 2020 with a rosé from France, a prosecco rosé from Italy and a chardonnay from Western Australia, in collaboration with Benchmark Drinks. The latest in her stable of drops is a 2022 chardonnay and pinot noir, both made in collaboration with De Bortoli Wines in the Yarra Valley and set to be released this year. Joining forces with the reputed Victorian winery felt like a natural

It’s a combination of their heritage connection and the fact they are still doing what they love that really hit the mark.” While the foxy ladies of Fountain Gate liked to pour themselves a card-onnay – the tipple of choice for Kath & Kim in the early 2000s – Minogue wants to tout its more elegant profile. “Chardonnay is never out of fashion,” Webber says. ““Kath & Kim tried to make it unfashionable, but wine lovers never stopped drinking it. “We have kept our chardonnay at the top end, and the global trend shows that chardonnay sales are

doing really well worldwide. And with Kylie on board, we can really bring it into focus again.” With 15 studio albums under her belt – seven of which made it to No. 1 on the ARIA charts in Australia (making her the first female to ever achieve this) – Minogue says there are some similarities between making a record and producing wine. Both are sensory, and a good ear and a good palate are not dissimilar. “Wine is technical; it’s about what do we leave in and what do we take out?” she says. “By being at the winery, I’ve been able to absorb the knowledge the team have and we get to discuss what I’d like the finished wine to taste like. “I wanted wine that had accessibility; I wanted it to over-deliver. “I want people to fall in love with it.” It helps that De Bortoli has a large distribution platform. More than 90 sales reps take to the road around Australia selling the Kylie Minogue brand into stores and beyond. Joining Minogue is her business partner, Benchmark Drinks head Paul Schaafsma, who has helped make celebrity wine chic with the likes of Sarah Jessica Parker and Graham Norton also perfecting their own vintages. Minogue hints she’d like to make a limited-release wine with De Bortoli in the future. She’s also recently been interviewed for a film about the late Mushroom Records founder Michael Gudinski that’s in the works with filmmaker Paul Goldman, and her Instagram account shows her taking over NYLON magazine’s French edition while attending Valentino runway shows in Paris earlier this month. Minogue admits moving back to Melbourne has made her feel sentimental about her hometown. She chose a Melbourne designer for her Darling fragrance campaign – a stunning pink tulle dress by Jason Grech, the couture king who is a regular go-to for her sister Dannii and who celebrates 20 years in the business this year. “I just knew when I saw the dress it was the one to represent Darling’s comeback,” she says. “Nostalgia played a large part in the fragrance campaign and even more so with what happened the last few years [due to the pandemic]. “I have looked at doing other fragrances but never was happy to press go on them. “These projects excite me ... because I learn about new worlds and it sets me on my next adventure.” ●

Setting a high bar T om Petty fans will find the name of Abbotsford’s newest rooftop bar reason enough to get along to the Americanainspired venue. Full Moon Fever, named for Petty’s debut solo album, which featured the hits Free Falling and I Won’t Back Down (and also saw his Traveling

Wilburys bandmates Roy Orbison and George Harrison lend their talents) has a dive-bar energy that feels very old-school Melbourne (think Cherry pre-AC/DC name-change days). It pins its heart on nostalgia and glorifies a retro soundtrack. Its location above live-music venue Lulie Tavern, tucked a stone’s throw from Victoria Park station

on Johnston Street, only adds to the feverish pace of this grunge pocket rocket. Full Moon Fever goes above and beyond to embrace the hallmarks of California Dreamin’ via the Laurel Canyon era of rock ’n’ roll, but gives it a no-frills Abbotsford makeover. You can pull up a stool at the bar and know that someone making you a cocktail behind it knows a thing or two about music. (Hallelujah!) There’s a Palm Springs meets Joshua Tree National Park aesthetic inside – harking back to an era that gave us the sounds of Linda Ronstadt, The Byrds and … the list goes on. But it’s in the late ’80s that Full Moon Fever really kicks into gear, with Petty’s tracks making the perfect anthems for raising a toast with a range of agave-focused cocktails on the menu. The Tommy’s margarita (the classic) and Desert Bird (that’s tequila and Campari) are two highlights, while the burgers (we went classic cheeseburger) are the perfect accompaniment to a night on the town. The demographic is mixed. On the night we rolled in, there were inner-city renters showing their folks their new ’hood, rockers and rollers riffing to their own soundtrack in the band T-shirts of yesteryear, and cashed-up apartment owners who prefer to cruise on the east side of Hoddle Street for a point of difference to their peers. Make sure you reserve a spot on the rooftop ahead of arrival, but walk-ins are also welcome. ● ● lulietavern.com

t took heading back to her country roots in Violet Town, just north of Euroa, for singer-songwriter Ella Hooper to accept it was okay to make a new album that honoured her upbringing. “I moved back in with Mum to save money in 2020 so I could make a record and then the pandemic happened and I got stuck there,” says Hooper, who splits her time between Castlemaine and her apartment in Kensington these days. “I felt a little done with Melbourne at the time, and knew Mum had an incredible place I could base myself out of while I kept doing shows. But then, of course, everything stood still with COVID.” Her new album, Small Town Temple, turned out to be a far more poignant exploration of self and musical identity than Hooper had planned. She realised it was time to make a country album of her own after a trip to Nashville for AMERICANAFEST in 2019 “I felt like I had seen my next chapter in Nashville,” Hooper says. “I had such a great time meeting like-minded people who were as passionate about music as I was that it felt so natural to go in this direction.” Both her mother, Helen, and father, Jeremy, play on Small Town Temple. Both passed away within two weeks of each other in January this year, making their place on the album even more heart-wrenching. “I did question if the time was right to release a record in the year Mum and Dad died, but I didn’t want to turn my back on it while it was fresh and real,” Hooper says.

Hometown refrain She and her brother Jesse found fame with their rock band Killing Heidi, going from obscure country kids to chart-topping stars with their debut album, Reflector Reflector, in 2000. It contained the catchy hit single Mascara, which went to No. 1 when Hooper had just turned 17. Talking about that period in her life has become easier with time. It hasn’t been easy for Hooper, who has remained a part of the music business ever since, trying to hold her place within it. “I credit Violet Town for making me survive a teenage rock star experience,” she says, smiling. “Those roots are really precious and it was no

accident I ended up back there with plenty to reflect on and make peace with. “For a long time after the Killing Heidi experience, I had imposter syndrome. I have come to accept it now, but I got tired of trying to prove I was better, that I was tougher and different than my past. It has made me who I am today.”

tables laid with burgundy gingham tablecloths. Swordfish paccheri (large tube pasta) and bruschetta with ’nduja, the region’s spicy, spreadable salami, are highlights. For a casual lunch under €10 ($15), Rusti & Co sells sizeable arancini, deep-fried rice balls filled with everything from cipolla rossa di Tropea (the city’s famous sweet, red onions) to Nutella. On the opposite corner, L’Angelo del Gusto is a deli with a paninazzo menu, where fresh bread is layered with cold cuts and buffalo mozzarella or octopus with boiled potato. Both taste better when savoured on Spiaggia della Rotonda, Tropea’s main beach punctuated by colourful umbrellas. It’s bookended by two caves, Grotta del Palombaro and the smaller Grotta di San Leonardo. To get there from the centre, it’s either a short tuk-tuk ride or some steps down. Spend a sunset here gazing back at the terracotta

apartment buildings built into the cliffs as they turn rose gold. Tropea is traversable by foot. Corso Vittorio Emmanuele is the main street into the historic centre, lined with souvenir shops (bring back some “Calabrian Viagra”, aka ’nduja in a jar) and gelati stores (visit Gelato Tonino for kooky local flavours). Follow the tune of a busker – perhaps playing the accordion – to the end of the street for a view over the cliffs down Spiaggia della Rotonda.

Another walkable sight is Cattedrale di Maria Santissima di Romania, a Byzantine cathedral built in the 12th century with two undetonated World War II bombs inside. It’s said the town’s patron saint, Our Lady of Romania, protected Tropea from both the explosions and the region’s devastating earthquakes. On the way out, swing by Koes I Cuoppi for a paper cone of fritto misto di mare, lightly fried seafood.

For something unique, Creazioni Artistiche Il Faro is a shop-cumgallery of handmade figurines with animated expressions. They’re assembled into themes from classic nativity to a bustling marketplace. Speaking of markets, the small morning mercato off Via Accademia degli Affaticati is the pick for a taste of local life. In summer, cactus fruit, stone fruit and local dairy and meat products are perfect picnic additions. Regulars flock to the pescheria (fish market), but you can try the daily catch nearby at Ristopescheria Angelo Del Mar. Try jet-black Calabrian fileja (screw-shaped pasta) with ribbons of cuttlefish and ink. Four nights in Tropea is a decent amount of time, but you’ll grow accustomed to the slow rhythm, fresh seafood and stunning sunsets. Better make it a week. ● The writer visited Tropea as a guest of
