very edition of Heady Times features two retailers – one on-premise, the other off-premise. These “Spotlights” give owners or beverage managers a platform to discuss what makes their business successful, even unique. People talk about customer service and the importance of a knowledgeable staff, but Patrick Ryan’s answer to a very simple question really caught my attention.
Heady Times asked him how the beer selection at his family’s pubs in West Chester and Phoenixville changed over the years. He replied:

Assembling a balanced portfolio makes sense. But is it as easy as it sounds? What kinds of beer and malt-based beverages do you need to carry to have a balanced selection for your customers? Jon Collins, an on-premise beverage alcohol analyst for Nielsen, has some advice. Speaking at a Beer Business Daily conference a few weeks ago, Collins said that any retailer looking for guidance when trying to assemble a balanced portfolio needs to focus on two beverage alcohol categories – premium and sessionable. According to Collins, premium products of all stripes have grown by 30% since 2013 and he believes this trend will only accelerate. Collins explains, “Consumers want quality and great taste. Right or wrong, they think that a premium product (in our business that means anything over $25 per case) gives them what they are looking for, and they don’t mind paying for it.” At the same conference, Tom Fox, a recognized leader in Retail Sales and Category Management for the CM Profit Group, addressed sessionability (ABV of 5% or less). “Not enough of these beers are offered at the bar which is a mistake. Tasty, sessionable beer is a growing category and they keep butts in seats because you can drink a couple of them. We see demand in the off-premise too. Of the top 25 national, best-selling beers, 13 have an ABV of 5% or less. Some are craft beers, 9 are FMBs and 8 are Mexican imports. What they all have in common is flavor – as in they don’t taste like water.” This edition of Heady Times features lots of products that are both premium and sessionable. I started at Origlio as an on-premise sales rep in the city of Philadelphia. My territory covered North Philadelphia, Mt. Airy and Germantown, as well as some accounts in Chester. In 2015, I transitioned into the Center City territory. I called on accounts in Center City for about a year and a half before joining the Origlio management team at the beginning of this year. What do you like most about your job? Origlio is an organization with great people. My co-workers are some of the best in the beer business and I enjoy being around them. On top of that, we have great brands to sell. Our suppliers are awesome and their reps are great partners in the marketplace.

CoverSTORY It Pays to Celebrate Cinco with Corona and Modelo
H
igh-end imports Corona and Modelo Especial, distributed in the U.S. by Constellation, are synonymous with Cinco de Mayo festivities. But did you know that these brands – which post double-digit gains year after year – are growing faster than craft beer and spirits? “No matter which channel your business competes in, job one for any retailer is increasing traffic and boosting the bottom line,” says Mike Kugler, Origlio Brand Manager of the Constellation portfolio of beer. “From what I see, the best way to do that in these challenging times – restaurant traffic is down and craft beer sales aren’t what they used to be – is to strategically promote brands that are driving growth and profit. Corona Extra, Corona Light and Modelo Especial are the fastest growing, high-end brands in the country. The demand is there and it is accelerating. To get job one done, why wouldn’t you make the most of Cinco and these best-selling, high-end beers?” Cinco de Mayo has grown into one of America’s most popular beerdrinking holidays – with revelers consuming more beer on this day than on the Super Bowl or St. Patrick’s Day. Cinco, which falls on a Friday this year, is a bona fide occasion that consumers want to celebrate. It kicks off Corona’s “120 Days of Summer” and gives people a reason, or even permission, to socialize with friends and family over a couple of beers. And when they do, they want authentic, sessionable Mexican beers like Corona Extra, Corona Light and Modelo Especial. The proof is in the numbers… Last year according to Nielsen, Americans bought more than $735 million worth of beer during Cinco. Eighty percent of all the Mexican beer sold during that time frame was from the Corona and Modelo Brand Families. These brands are on fire and here’s why… “Six of the top eight, fastest growing imports are Constellation brands, that means they don’t just sell during Cinco,” explains Kugler. “Yes, they are Mexican beers, but that’s not the only reason why they are the fastest growing, high-end brands, and by high-end I’m talking

about anything that sells for at least $25 per case. These beers are exactly what millennial drinkers are looking for. They want authenticity, more flavor and something they can drink more than one of. And sessionability is key. I can’t tell you how many times I see LDA consumers start the party with a higher octane craft beer and then switch to a Corona or Modelo for the rest of the night. Plus, these consumers don’t want the cheapest thing out there. They want quality and they don’t mind paying for it. And, they think these beers are cool – worthy of a post on Instagram.”
More beer is sold on Cinco de Mayo than on the Super Bowl or St. Patrick’s Day. These days it’s hard to predict with any certainty what consumers want to purchase. Fifty to seventy percent of all buying decisions are made at retail, after the customer walks through the door. There is tremendous opportunity to influence what they purchase. Why not get them to ‘tradeup’ to Constellation’s high-end beers? The demand is already there. Why wouldn’t you feature these beers prominently? Why
CoverSTORY High End & Growing devote tap handles or shelf space to brands that don’t move quickly? “There hasn’t been a ton of good news lately about beer or restaurant activity,” says Origlio Sales Manager for the on-premise Tim Stammen. “Craft beer sales have slowed dramatically and National Restaurant News [a magazine devoted to all things important to that channel] published an article in February titled ‘Restaurant Traffic Won’t Improve in 2017’. The one bright spot I see is imported beer – make that Constellation beers, imported from Mexico.”

BrewerHIGHLIGHT Sly Fox Gives Back with Schuylkill River Trail (SRT) Ale
L

Sly Fox Director of Sales Mark Weinmann sat down with Heady Times to discuss the brewery’s upcoming release, SRT Ale. Brewed to honor, and raise money for, the preservation of the Schuylkill River Trail, this session IPA is emblematic of the brewery’s passion for the preservation of this legendary trail that connects Pottstown to Philadelphia.
Here are 10 things you should know about Sly Fox SRT Ale 1. S RT Ale is a low alcohol, golden, hop-forward American pale ale. Many call it a session IPA, but we’ll let you make the choice. Released in 12 oz. cans and draught, SRT Ale is a great tasting, easily crushable beer. 2. S RT stands for Schuylkill River Trail, a multi-use, part wild, part paved trail in Southeastern PA. Eventually it will extend the entire 130-mile length of the Schuylkill River. It runs through Philadelphia, Montgomery, Chester, Berks and Schuylkill counties. If you haven’t experienced it yet – get out there!

3. S ly Fox first brewed SRT Ale three years ago as a tribute to the Schuylkill River Trail and all of the trail users and outdoor athletes. 4. R eleased in time for Earth Day on the 22nd of April every year, SRT Ale is available through September. It’s a great summertime beer. 5. A portion of the proceeds from the sale of the beer goes to the Schuylkill River Heritage Area (SRHA), administered by the Schuylkill River Greenway Association. The money is used to clean up the SRT, maintain and improve existing trails and supply call boxes along the trail for safety. 6. To date, Sly Fox has raised over $9,000 in support! 7. T his month, Sly Fox Brewing Co. will receive the prestigious “Schuylkill River Legacy Award” from the SRHA. Previous recipients include PennDot and Exelon Corporations. 8. I n 2016, USA Today named the Schuylkill River Trail, “Best Urban Trail in the Nation”. 9. T he SRT Spree is an annual party that celebrates the trail and the Earth Day release of SRT Ale. Fans and enthusiasts are welcome to join the celebration along the trail: Kayak, cycle, run, hike or walk with the folks of Sly Fox, the SRHA, the Schuylkill Canal Association and Take It Outdoors Adventures. ROM CARS TO REAL ESTATE, JOE ELIA HAS SOLD ALL KINDS OF things to make a living. But his passion is beer. To get his foot in the door of an industry he was determined to be a part of, Elia accepted a job as a clerk at KOP Beer Outlet. Just one year later, he was promoted to General Manager. Since then, he has managed to successfully marry his sales knowhow with his love of beer, turning this store into a beer haven that welcomes customers from near and far.

HT: How has the beer selection at KOP Beer Outlet changed since you’ve been GM? JE: When I first started, we only carried about 20 different crafts. Today we offer over 500 craft and specialty beers. That said, we are selective about what we bring in. First and foremost, we choose beers based on customer demand, then we look to those that are highly rated on sites like Beer Advocate. The remainder are chosen based on what my staff and I like – we are all pretty well versed in craft beer, with a good idea about what will sell well. HT: What is the biggest obstacle you face when offering such a large selection of beer? JE: Keeping our inventory fresh and interesting, while not going overboard. It’s all about the right beer, right quantity. I think it’s better for a customer to come in looking for something we don’t have, than to carry everything under the sun. We can always order the beer or suggest something similar, but we can’t stop a beer from going out of code. HT: Is your staff as passionate and as knowledgeable about beer as you are? JE: Yes! All the guys who work here have full time jobs outside of the store. They are here because it’s where they want to be. We often have staff tastings and discuss the beers together. We even use Cicerone flash cards to quiz each other – we’re a bunch of beer nerds. I also encourage the guys to try styles they don’t particularly care for. I think it’s imperative that they’re able to share with a customer the difference between this sour beer and that one, for example. HT: How has your customer base changed over the years? JE: Well, a lot more women shop for beer these days. But the biggest change I’ve noticed is that more people want to try different styles. Even diehard domestic drinkers are curious about what’s new. We encourage people to ‘drink fearlessly’, so this is a welcome change. HT: How do you introduce customers to something they haven’t tried before? JE: Thursdays are dedicated to beer tastings. We recently held a brown ale sampling that really opened people’s eyes. They were surprised that the same style could taste so different, depending on the brewing methods used. We also hold ‘mega tastings’ twice a year – like mini beer festivals. We sample beers from lots of different breweries and food from local restaurants. Another fun way we introduce our customers to new beers is through case swaps that we host every six weeks. After hours, 20-25 customers each purchase a case of beer and then swap bottles. At the end of the night, everyone goes home with a mixed case of great beer. During the swap I often sample a rare or expensive beer as a way of rewarding these loyal customers.
HT: How do you stay connected with your customers? JE: Social media is a great way to stay connected. We strike up friendships with our customers in person, which we continue online. We post about new products, samplings, giveaways, beer reviews, events… the list goes on. It’s an effective way to quickly communicate. We also email a weekly newsletter to customers who have signed up in-store to receive it. Recipients are the first to hear about rare releases available in the store, inventory updates, sampling schedules and upcoming events. I look at social media and the newsletter as an extension of customer service. HT: Speaking of which, how important is customer service to the success of this business? JE: It’s of the utmost importance – nothing matters more to me. I’d be more apt to forgive an employee for stealing than for not treating a customer well. To me, great service is what sets one place apart from another. I believe our reputation for superior product selection is what brings people in the door and our customer service is what keeps them coming back. HT: Tell us about your unique return policy. JE: If a customer wants to return a case, I ask that first they try at least four beers from it. The reason being, beer can taste different depending on several factors, like what you eat with it or right before it, the temperature of the beer and whether it’s been poured into a glass or drunk directly from the bottle or can. These things can alter the taste a bit. So, I encourage people to take these factors into consideration before returning it.

OR PATRICK RYAN AND HIS BROTHER AND BUSINESS PARTNER Paul Ryan, providing a warm and welcoming restaurant for their community is more than just business, it’s a proud family legacy. Their father purchased his first establishment, Smokey Joe’s, in 1952. The friendly, old-school tavern that has served patrons of Penn’s campus for nearly 80 years, remains under the leadership of the Ryan family today. Ryan’s Pub of West Chester, as well as its sister bar PJ Ryan’s of Phoenixville, both proudly uphold the family legacy of creating fun and comfortable environments with distinct service. They’re places that feel like home as soon as you enter, which is exactly how Patrick, Paul and their family like it.

HT: Your family has a long history of owning great establishments in the Delaware Valley. How and when did it all start? PR: My dad’s father owned a beer distributor and several corner saloons. He opened his first bar in 1916 on 51st and Lancaster streets [in West Philadelphia]. My dad bought Smokey Joe’s in 1952, which we still own to this day. Paul and I opened Ryan’s Pub in 2002 and PJ Ryan’s in 2008 (which is managed by our cousin Tom), and we’re still expanding. We’re about to open a new Ryan’s Pub location in Manayunk. HT: How have the beer selections changed over time? PR: The biggest change we’ve made is the addition of a lot more craft beer. However, our staples: Yuengling, Coors Light and Guinness remain big sellers for us. We offer 60 different beers, but those three are always available. Everything else is up for grabs – our beer menu is always changing. You have to have a balance. We’re not one of those bars with the motto, “If you’ve heard of it, we don’t have it.” We carry craft beer of course, and our staff is knowledgeable about those brands, but in order to please everyone, you have to carry well known domestics and imports in addition to the IPAs and other crafts people ask for these days. HT: Describe the menu at Ryan’s Pub. PR: We offer a wide variety of food that appeals to a diverse crowd. We’re not a Gastro Pub, but the food is a step above pub food. High quality and high value. On Fridays and Saturdays we offer a Prime Rib special. We have customers who call in advance to reserve their cut! HT: Do you hold events at any of your bars? PR: Downtown West Chester hosts First Fridays and Swinging Thursdays, which are both walkable festivals with live music, food and lots of fun, so Ryan’s Pub is always a part of those festivities. PJ Ryan’s has a room downstairs that seats 100 people, where we host Comedy Thursdays. You’re sure to see the mayor of Phoenixville there. He comes to every show (just to watch, not to perform). HT: What’s the secret to the success of Ryan’s Pub & PJ Ryan’s? PR: We [the owners] are very accessible. Whether it be myself, my son Sean, Paul, his son Paul Ryan III or Tom, 95% of the time, there is a Ryan on the premises. Another big key to our success is the kitchen and bar staff who have been with us since opening day. We all have the same objective – to run really good, friendly pubs.

Dogfish Head Saison du Buff The idea for this beer germinated way back in 2003 when three guys (Sam from Dogfish, Greg from Stone and Bill from Victory) formed the BUFF alliance (Brewers United for Freedom of Flavor) – a noble endeavor with the goal to highlight the passion and camaraderie of the American craft brew movement. BUFF didn’t really do anything (beyond a lot of talk) until 2010 when the three brewers finally got together to jointly brew a beer at the Stone Brewery. Saison du Buff was first brewed at Stone and replicated at each of the other two breweries – same recipe, same ingredients, three different breweries. By Steve Hawk As winter gives way to spring and summer, beer drinkers put down their pints of dark, high-alcohol beer and pick up refreshing, easydrinking “session” beer. But what exactly is a session beer? A great starting point is an aptlynamed blog called “The Session Beer Project.” Its author, Lew Bryson, is an authority on the subject. He says a session beer must be suitable for drinking over an extended period of time and should be:

All of these examples are low ABV, but some exceed Bryson’s recommendation slightly. First up is Hoppy Table Beer from Allagash Brewing Company in Portland, Maine. It’s a beer inspired by Belgian tradition, but it’s clearly a hybrid American style. Hoppy Table Beer features a hop-forward aroma, notes of grapefruit and the flavors of pine, citrus and stone fruit to round out its finish. It is brewed with four different hops (Chinook, Cascade,

Delco Lager incorporates smooth malts, clean hops and a crisp finish. It is a classic, everyday beer, updated for today with premium ingredients. Sierra’s Nooner Pilsner is a crisp, hoppy take on a classic German-style pilsner, one of the original session beers. Nooner is easy drinking, yet packed with the big flavor of spicy and floral whole-cone hops. And for a true artisan experience, Kellerweis is the brewery’s hazy wheat ale, inspired by traditional Bavarian techniques. This brew has a full, fruity aroma with notes of spicy cloves and banana bread. Bottom line, a session beer simply needs to be lower in alcohol, but NOT low in taste. The flavors can run the gamut from spicy to fruity to extremely hoppy. Have fun choosing your selection for 2017, as there is no shortage of options.
