All the key ingredients are here; sugary sand beaches, turquoise waters, cheek-caressing trade winds and golf sunny-side up. No two islands are alike, and the mix of cultures and races gives the Caribbean a unique style in cuisine, music, architecture and language. From Barbados to the Bahamas, top-drawer layouts bear the stamps of noted golf course architects such as Robert Trent Jones, Pete Dye, Greg Norman and Tom Fazio. BARBADOS - Sandy Lane Like everything at the exclusive Sandy Lane resort, its two 18-hole championship golf courses are maintained to the highest standard. Designed by esteemed architect Tom Fazio, The Green Monkey elegantly unfolds through its initial eight parkland-style holes. It then captivates golfers with a sudden plunge into a former limestone quarry, where towering 27-meterhigh coral walls dramatically overshadow the fairways. The signature hole, is the photogenic par-3 16th, where players hit down into the old quarry to a green edged by a massive bunker featuring a grass island carved in the shape of a Bajan green monkey, a species introduced to the island from West Africa around 350 years ago, and the inspiration for the course name. Sandy Lane's other course, the Country Club is a parkland layout that features several manufactured lakes creating some challenging approach shots.

BAHAMAS - Abaco Club & Tropical Links When you first glimpse the Abaco Club’s golf course, nestled in Winding Bay on Great Abaco Island, it provides an unforgettable sight with emeraldgreen fairways skirting pristine beaches and the deep-blue ocean. Billed as the world’s first ‘tropical links’ golf course, this spectacular layout is the centerpiece of a luxury resort built by British tycoon Peter de Savary who hired course architects, Donald Steel and Tom Mackenzie to bring a slice of Scotland to the tropics. They incorporated classic links ingredients - humps and hollows, small pot bunkers and undulating greens into the design. The gin-clear waters of Winding Bay are in view on the first 14 holes, while the final four traverse a coral cliff above the Atlantic. After your round, recount every moment over a frosty beverage on the veranda of the club’s main restaurant overlooking the bay and golf course.

JAMAICA - White Witch Picture this. You are at one of the Caribbean’s most stunning golf courses with panoramic views of the Caribbean Sea from 16 of its 18 holes. Golf clubs, balls, scorecard, tees, beverages and snacks are neatly arranged in your cart as you survey the surrounding landscape. This is the eye-opening 500-meter, par-5 first at the White Witch golf course in Jamaica. The course was named by its creators, golf-course architects Robert von Hagge and Rick Baril, in reference to Annie Palmer, the notorious ‘White Witch’ who was mistress of Rose Hall Plantation in the early 19th century on which the course is built. She was reported to be beautiful and beguiling and to have done away with three unsuspecting husbands. Says co-designer Rick Baril: “The topography of the course is unique, making each hole memorable and distinctive in its own right.”

DOMINICAN REPUBLIC – Casa de Campo A tempting-trio of Pete Dye-designed courses awaits golfers staying at Casa de Campo- one of the Caribbean’s most luxurious resorts. In the world’s top 100 courses, Dye’s masterpiece Teeth of the Dog skirts a jagged, rocky coastline so close you can feel the salt spray. Inland lies the designer’s lakestudded Links Course, and his third track, Dye Fore is a 6,943-meter monster that marches along a plateau perched 150-meters above the mesmerizing Chavron River. Casa de Campo is so extensive that guests are provided with a map and golf cart to help them get around. Besides the golf, there’s tennis, a marina, charter fishing and the remarkable Altos de Chavron, an exact recreation of a 15th-century Mediterranean village complete with cobbled streets and a collection of fine restaurants.

NEVIS - Four Seasons This speck of an island south-east of Puerto Rico, was thrust into the forefront of world travel in 1991 when Four Seasons Nevis opened as the Caribbean’s first AAA Five Diamond Resort, and over the years it has compiled a list of awards and accolades as lengthy as the dining room wine list. The resort's centerpiece is the 18-hole championship golf course designed by Robert Trent Jones Jr. – a roller coaster ride along the flanks of a cloud-capped volcano, with dramatic views at every turn. The course winds gently up the slope of Nevis Peak to the par-5 15th signature hole, which is set some 150-meters above sea level with magnificent views of nearby St Kitts. The par-4 18th played towards the ocean may well be the best hole on the course. If you teeoff around 2.00pm, you can finish holing out on the green in time to enjoy a beautiful sunset cresting the crystal blue waters of the Caribbean.

ANGUILLA – Aurora International Golf Course The Aurora Anguilla Resort & Golf Club offers one of the Caribbean's best golf experiences thanks to a Greg Norman Signature Design 18hole golf course with breathtaking views and dramatic challenging holes. Players arriving at the tee box of the 384-yard starting hole of the Aurora International Golf Course are greeted by a spectacular view of St. Maarten and the Caribbean Sea. The overwhelming visual appeal continues with holes 2 and 10 sharing a 16,000-square-foot green that rests along the Anguilla Channel. Large sea grape trees on the left and the Merrywing pond on the right frame the perilous drive on the 423-yard 16th hole that plays into the trade winds and finishes with an elevated green surrounded by water and protected by deep bunkers. The narrowing fairway on the 18th hole ascends forty feet to a narrow green carved out of the native plantings. In addition to the main golf course, there is the 9-hole Avalon Links Short Course.

BARBADOS - Royal Westmoreland Majestically situated on the rolling slopes of St James, Royal Westmoreland Golf Club is carved through a plethora of natural rock gullies, chasms and rock-faces with superb views of the shimmering Caribbean Sea. This scenic Robert Trent Jones Jr design was opened in 1994 by Prince Andrew, who wowed onlookers by expertly splitting the fairway with his first drive. Many leading sports personalities own homes on the estate, including Ian Woosnam who has gone on record as saying the course has one of world's best collections of par-3s. In particular, the 198-yard par-3 12th challenges the lowest handicaps. Played from an elevated tee, with a tight green bordering a ravine, the golfer may require more than a snap or two of rum to steady the nerves. Bunkers abound on the course, but one of the more unusual hazards are the resident Bajan green monkeys that live in the surrounding tropical vegetation. It is not unusual for a monkey to jump out of a tree, grab a golf ball from the fairway and scamper back up into the branches with its prize.

DOMINICAN REPUBLIC - Punta Cana Resort & Club Dominated as much by abstract expanses of sand as green fairways, Punta Cana’s La Cana Golf Course 27 holes consisting of three nines (Tortuga, Hacienda and Arrecife) certainly has its own character. Innovative, beautiful and fun, this tropical gem designed by P.B Dye (son of Peter Dye), is a blend of long, rolling inland holes and several spectacular holes that line the ocean. The tee shots are wide and inviting, but it’s the second shots and the delicate ones around the greens that provide the real challenge. The 7th hole boasts a cluster of 21 pot bunkers that P.B Dye jokingly refers to as ‘Hecklebirnie’ a type of golfer’s purgatory according to Scottish lore. The course’s signature hole is a spectacular par-3 on the back nine that can be played from any of a series of tees dependent upon the golfer’s skills. Punta Cana Resort & Club also features Tom Fazio’s Corales Golf Course that culminates in a striking eighteenth hole with a dramatic carry over the rocky Bay of Corales.

JAMAICA - Cinnamon Hill The gently rolling front nine of this 6,798-yard par-71, Robert von Hagge and Rick Baril layout opens under the gaze of the 18th-century Rose Hall Great House, then rambles past the walled graveyard of Elizabeth Barrett Browning’s family and down to the ocean. The 5th hole named Majestic Blue is a memorable downhill dogleg left par-4, which plays anything from 453 to 420 yards, with the green set alongside the beach. In contrast to the first nine holes, the back nine takes to the remote hills of the plantation, making its way through narrow canyons and across deep chasms with a handful of elevated tee shots. The par-3 15th drops dramatically to a green next to a picturesque waterfall where scenes from the James Bond movie Live and Let Die were filmed.

Think exotic locations and your next thought is likely a sense of dread over the long-haul flight required to get there. Fijians are renowned for their warmth and friendliness and your first taste of the signature Fijian hospitality is to fly with Fijian Air – business class, on their non-stop flights to Nadi International Airport from Vancouver, Los Angeles and San Francisco, among other cities. Check-in is a snap with a dedicated priority check-in and additional luggage allowance. It also includes lounge access with the Premier Lounge in Nadi, or affiliate lounges in international departure cities. In Vancouver, the lounge was elegant and expansive, with a variety of seating from comfy club chairs, high tops and dining tables to enjoy the extensive buffet offerings. The bartender poured wine, crafted cocktails and made personalized bubble teas to complement the chef station and Asian cuisine. Travelers on layovers can shake off jet lag with a hot shower before continuing their journey. On board, business class passengers are greeted with hot towels scented with passion fruit, and choices of juice, wine, and bubbly. Wide leather seats provide USB ports, noise-canceling headsets, generous storage, bottled water and amenity kits with goodies like luxurious Pure Fiji toiletries, sleep masks and cozy socks. Be sure to peek out the window as the plane pushes off from the bridge and you are likely to see some familiar faces as the team, that so competently checked everyone in, waves goodbye.

Dinner is a beautifully presented and delicious three-course culinary affair with a Fijian flair but the icing on the cake is bedtime. The flight attendants offer a turn-down service with a mattress topper, duvet and pillow that turns the seat into a comfortable sky bed that makes you feel like you are sleeping on a cloud. The stand out feature was the friendly staff, and their genuine hospitality. There was a romantic elegance about it, a nod to the golden age of air travel, when flying was glamorous and the journey was memorable. Flying business class on Fiji Airlines is a game changer. Arriving well rested and feeling very pampered, Fijian singers and ukulele players welcome arrivals at the Nadi International Airport and it was easy to be excited about the adventures ahead. Travelers can easily add a stopover in Fiji en-route to Australia or New Zealand. The airline allows free layovers for up to 72 hours at no additional charge – an ideal way to add an exotic and relaxing getaway or break up a long trip. The domestic airline was started by Harold Gatty an acclaimed air navigator and inventor and was registered as Katafaga Estates Ltd., after his coconut estate. Now the airline is one of the country’s largest employers with a network to 108 international destinations. In 2023, it was ranked in 15th place in the Global Top 100 Airlines and was recognized as the Skytrax Best Airline in Australia & the Pacific at the prestigious 2023 World Airline Awards.

Over 36,500 trees have been planted over the past two years as part of A Tree for Every Take-Off, the airline’s initiative with the Fijian Department of Forestry that plants a tree for every international takeoff. The (mostly) mangrove trees eliminate four times more carbon than rainforests and helps fight greenhouse gas emissions.
Another program - Our Ocean, Our Life provides the opportunity to spend a day on a tour that helps create an ecosystem for marine life by planting mangrove seedlings and includes exploring a turtle breeding sanctuary. A portion of profits pays local villagers for the harvest and supply of the mangroves.

BY: MATTHEW SCHUELLER As we drifted through the southern Japan’s countryside towards Osaka, I couldn’t help but get excited thinking about the street food I’ve heard so much about. Pulling into Osaka station, I noticed our host, Eriko, ecstatically holding a handmade sign with prominent letters, “Welcome to Osaka!” Visiting Japan in 2017, we were already well acquainted with the incredible hospitality that is ingrained in Japanese culture, but I couldn’t help but crack a grin from ear to ear as we were greeted with hugs and excitement to show us the beautiful city. We took a cab to The Royal Classic Osaka – a towering figure in Namba district just a 5 minute walk from Dotonbori, Osaka’s most prominent and well known neighborhood, famous for its neon signs and delicious street food. Opening in 2019, the modern hotel kept the facade and structure of the old kabuki theater which really gives it this historically royal look amongst the modern skyscrapers. Rising up to the 18th floor, the view took our breath away as we looked out amongst countless buildings for as far as our eyes could see. With floor to ceiling windows, we felt as if we could stay there and watch the city for hours. But after getting settled in, our stomachs begged us to venture out, so we decided to start our exploration of the city.

There are a few culinary treats that are “must-tries” when visiting Osaka. Perhaps the most iconic street food is takoyaki. Small pieces of octopus are fried in savory pancake-balls and topped with sauces. Walking through Dotonbori, you may even see some carrying piles of takoyaki with heaps of green onion or poached egg on top! Another favorite is okonomiyaki. Made with flour, eggs, tempura scraps, cabbage, pork belly, and topped with a variety of condiments, okonomiyaki is best enjoyed in restaurants with griddles for the centers of the tables to cook right in front of you, and an Asahi on the side. Lastly, kushikatsu is Osaka’s traditional fried food. A variety of meats, vegetables and fish are individually skewered, coated with panko, and deep fried for enjoyment. You can find a delicious assortment of kushikatsu at restaurants all around Osaka and street vendors alike. Waking up for our first FULL day in the city, we set up our itinerary using the Osaka e-pass so we could get free and easy entry into the top attractions. To put our navigation skills to the test, we descended from the Royal Classic Osaka to the city underground, Namba Station. Taking the train 20 minutes north, we made our way to our first stop, The Umeda Sky Building. This architectural wonder comprises two 40-story towers that connect at their uppermost parts. With bridges and escalators crossing its wide central atrium, it’s unlike any skyscraper I’ve ever seen. It truly looks like a vision from a futuristic film. The glass elevator shot us upward to the circular viewing area with panoramic views of the city. 22 . DRIFTTRAVEL.COM
After filling our camera rolls with the view, we descended underground to walk between city blocks through the malls. September in Japan is hot and humid, so making our way through the underground city was not only fascinating, but saved us from the heat. Taking the subway south, we arrived at one of the most beautiful temples in the city, Shitenno-ji. The temple offers a peaceful escape from the city’s hustle and bustle. Its beautiful architecture and serene surroundings make it a must-visit. Though Shitenno-ji was a nice stop, we were extremely excited to explore the district just adjacent, Shinsekai. Reminiscent of early20th century Japan, Shinsekai was supposed to become a showcase of the Japanese industrial revolution and an attraction for tourists from all over the world. Now, divided into North and South, the district is an eclectic mix – half modeled after Paris, and the other half modeled after Coney Island. Walking through the neighborhood felt like walking through an old county fair, and to me this was the most surprising and unexpected area to experience. Along Shinsekai’s main street, the Jumbo Tsuribune Tsurikichi Restaurant attracts visitors by allowing them to fish for their own food. With an enormous pool area full of live fish, customers are given fishing poles and nets to catch their own, and the prizes are quickly and freshly prepared. We couldn’t help but to go in and try to fish ourselves, but we came up empty after 45 minutes and settled for takoyaki from the regular menu. Regardless, I’ll never forget the experience. At the center of Shinsekai is its main attraction, Tsutenkaku Tower. This metal structure is modeled after the Eiffel Tower, except here you TRAVEL OFTEN . LIVE WELL . 23
can ride down a 60 meter slide that gives you views of the district as you descend. We heard that the Swissotel Nankai has a skyfarm on one of its highest floors. The bartenders and chefs use the produce from the hydroponic system to create their versatile dishes and drinks. We had to give it a try, so we made our way to yet another incredible view of the city, Swissotel Nankai’s top-floor bar. The cocktails were among the best we’ve tried in Japan during our two week visit. The following days were filled with the top sights to see in the city, including visits to the iconic Osaka Castle and Sumiyoshi Taisha Shrine. One of the biggest surprises of the week was our visit to TeamLabs Botanical Gardens. I didn’t know what to expect, as I stood in line to collect my ticket at the entrance. I questioned why I would want to tour a garden at night. But upon entering the grounds, I realized that this was a garden like none I’d ever seen before. TeamLabs creates incredible visual and audio experiences through interactive art pieces. In the botanical gardens, we were immersed into a forest full of other-worldly light displays, music and sound from every direction, and statues that modify the area when you touch them. Wandering through the natural scenery and exhibits, I felt completely at peace.

Osaka is simply full of surprises. We often hear a lot about traveling to Tokyo and Kyoto, but what I discovered while visiting Japan’s second largest city, is that it has more to offer than I could experience in a single trip… Tiny alleyways interweave amongst skyscrapers, neon lights illuminate paths lined with gyoza and yakitori eateries. Bars big enough for only five to ten people are even stacked one atop another in 14-story buildings, a nightlife scene like no other. I visited for a total of 5 days, yet I felt like I barely scratched the surface. So, in order to calm the itch, I’ve promised myself to make a trip back next year.

A
Cape Crawford is not the kind of place that allows itself to be easily located on a map. Despite the name, it is over one hundred kilometers inland from the Gulf of Carpentaria to this tiny township, whose only establishment is the somehow appropriately named Heartbreak Hotel. From Cape Crawford, it would take the hardy a couple of days to make the trip southeast to the Abner Ranges in a four-wheel drive. Or it could take the hardier still a week to trek across the severe red savannah and up into the ranges. But for those less willing to brave the harsh elements of the Northern Territory, it’s easier to take the helicopter to the Lost City. Racing clouds cast shadows over the strange megalithic pillars and domes of the Northern Territory’s ancient Lost City. Displaying some of Australia’s most impressive geology, the aptly named ‘Lost City’ looks for all the world like the high-rise central business district of a forgotten civilization.

Rising from the ground and covering an area of around 10 square kilometers, sandstone spires, pillars and bizarre-shaped pinnacles jut skywards to heights of up to 60 meters. They are quite unlike any other rock formation in Australia, and very different from the beehive shaped formations of the Olgas found near the famed Uluru (Ayers Rock) further south in the Northern Territory. The pinnacles have formed from preCambrian sediments laid down 1.4 billion years ago, on the floor of an ancient sea. Subjected to compression, faulting, uplifting and tilting over millions of years, and eroded by the processes of wind and water, of which there is in abundance during the flooding rains of the monsoonal ‘wet season’, the Lost City’s quartz sandstone spires are continually undergoing change. Made up of medium grain quartz sandstones, the outer crusting consists of particles of iron, silicas, calcites and algae. Spectacular though the rocks are, there is little here for the rock climber. The rocky ledges that run around the columns are deceptive, with hand and foot holds that crumble under the slightest pressure. Rocky ledges run rings around the columns, providing what would look to be strong hand and foot holds, but are in fact very brittle, crumbling under any pressure.

Anyone standing at the base of these geological giants are dwarfed by the glowing red and gold walls as they pass through narrow ravines and chasms. At every turn there are yet more weird and wonderful towers and corridors. Some columns stand alone, leaning or balancing precariously, others huddle together in clusters, presenting a whole gamut of potential walkways at their bases. Every structure is different. Fabulous joint lines and tilt lines create a smorgasbord of textures and visual stimulus. By the vertical nature of the spires, eyes are inevitably and repeatedly drawn skywards. Plants strike a hold in joints and crevices high above, having adapted tenaciously to the extremes of climate found in the Gulf Country. Evidence of this tenacity can be seen where rock fig trees cling to sheer vertical walls, their survival dependent on the success of their network of grasping gnarled roots that seek out trapped nutrients and moisture in every nook and cranny. The entire area is dissected by dry creek beds which during the height of the wet season flow with swirling floods, sweeping around the base of these geological giants, cascading down the red and gold walls, carving away more and more

surface rock in the on-going process of weathering and erosion. Deep within the Lost City, the labyrinth of narrow corridors, chasms and tunnels condenses into a dangerous maze. Here the needlepoint of a compass would be of little use due to deviation caused by the presence of iron in the surrounding rock. In shadowy recesses Aboriginal art can still be found and depicted in ochre are emus, goannas and even a mounted policeman painted in the late 1800s. In these cool and quiet places, freshwater pools would have proved an attraction to the Aboriginal people who had once passed through on their seasonal forays. Like Central Australia’s Uluru and the Olgas it is highly likely that the Lost City would have had a strong spiritual significance for the Aboriginal people. Unfortunately much of the Aboriginal history associated with the Lost City, which would have been handed down from generation to generation over thousands of years, has been lost. Though the Lost City would have exerted its power on the imagination of the Aborigines, just as it impresses the modern visitor, most of the stories and legends tied up with the place have, like its former name, long faded from memory.

FACT FILE: Getting There- The Heartbreak Hotel (also known as Cape Crawford) is located 275 km from the Stuart Highway and 106 km south-west of Borroloola at the intersection of the Carpentaria and Tablelands Highways. Accommodation/CampingAccommodation consists of 30 air-conditioned hotel rooms (with optional fridges for keeping your beer ice cold) in addition to powered sites for caravans and motorhomes set amidst well kept lawns and shady trees. Other facilities include a restaurant, laundry, ice, bottled gas refills and a service station with general store. Lost City Helicopter Flights / Tours: The tour operates opposite Heartbreak Hotel or from the main booking office on Roper Bar Road, Cape Crawford. It takes around 10 minutes to reach the columns, flying over the Abner Ranges on the way. Ground tours operate daily into the Lost City from April to October depending on the wet season. Tours last around two hours, and starting at 4.30pm is the time of day the light is at its most spectacular. If you prefer not to land at the Lost City, you can still take the scenic flight part of the tour. Your experienced pilot will take you over the fault line and along the escarpment giving you plenty of aerial photo opportunities. The helicopter has no doors for better visibility, any squeamish flyers are advised to take the middle seat.

At the bow of the ship, the Captain's wheelhouse takes center stage. Cruising along the Rhone on a longship takes navigational prowess as the vessel, spanning 135 meters wide, gracefully maneuvers its way under unbelievably low bridges and through narrow locks. The low bridges require the crew to occasionally close the top Sun Deck to passengers, retract the canopy, stow away the furniture, and lower the wheelhouse into the floor. Undeterred, the Captain continues to guide the ship from a small window and open-air hatch. There are about 15 locks along this stretch with the deepest plunging to about 23 meters. You can remain on the Sun Deck for most lock transits, so secure a front-row seat at the bow to watch the rise and fall of the water levels. For some locks there are only about 20 centimeters between the sides of the ship and the lock walls – close enough to touch (but don’t). Viking voyages are tailored to interests of the "thinking person" – those with a penchant for history, science, culture and cuisine. You’ll be offered a bevy of free daily excursions, as well as optional paid tours for those eager to dive deeper into the local wonders. These excursions, guided by knowledgeable and affable experts, offer an educational and entertaining experience.

THE BIG BUS
As we stepped onto the Big Bus Tours in London, excitement and anticipation bubbled within us. Exploring the vibrant city of London had always been a dream, and now, we were about to embark on a journey that would take us to some of its most iconic landmarks. The moment I found my seat on the top deck of the double-decker bus, I knew we had made the right choice. The open-air view offered a spectacular vantage point, and you could feel the breeze gently caress your face as we began our tour. The recorded tour guide's cheerful voice welcomed us aboard and set the tone for an informative and enjoyable experience. As we navigated through the bustling streets of London, the guide shared fascinating historical facts and anecdotes about the landmarks we passed. From the Tower of London, with its storied past and imposing presence, to the majestic Buckingham Palace, every detail seemed to come alive with the guide's vivid storytelling. The bus passed by the iconic River Thames, and you couldn't help but gaze in awe at the London Eye, standing tall against the skyline. The sight of the famous Parliament House and the clock tower, commonly known as Big Ben, left me speechless, evoking a sense of wonder and admiration for the city's rich heritage.

With each stop, we had the freedom to hop off the bus, explore the area on foot, and immerse myself in the local culture. We decided to explore the charming streets of Covent Garden, indulging in the vibrant atmosphere, street performances, and unique shops. The Big Bus Tour not only took us to London's famous landmarks but also unveiled hidden gems and lesserknown historical sites. It was an enchanting experience to witness the city's fusion of old-world charm and modern vibrancy, all while enjoying the comfort of the bus. As the day drew to a close, the sun began to set, casting a golden hue over the city. The guide shared some final insights, and we couldn't help but reflect on the incredible journey we had just experienced. Leaving the bus, we took one last glance at the illuminated city, feeling grateful for this unique and captivating experience. London had cast its spell on me, and I knew we would carry the spirit of this city with me wherever we went. The Big Bus Tours had not only shown me the grandeur of London but also allowed me to connect with its soul, and for that, I would be forever grateful.

The next morning, the sun cast a gentle glow over London as we gathered with a small group of eager tourists under the Abraham Lincoln statue in Parliament Square. You could feel the anticipation in the air; today, we were embarking on the London Walking Tour with Westminster Abbey, led by our guide from The Tour Guys. Our guide, Brenda, a tall woman with a friendly face and sharp wit, greeted us. Her passion for London's history was evident from the start. As we set off, Brenda regaled us with stories of London's past, infusing each tale with humorous anecdotes and fascinating facts. As we walked, the city's iconic landmarks came to life through Brenda’s stories. The cobblestone streets echoed with tales of kings, queens, and revolutions. We stopped at several key sites, each time diving deep into its significance. Then, there it was: Westminster Abbey. Standing before its magnificent Gothic facade, we were immediately awed. As we stepped inside, the air grew reverent. The play of sunlight through stained glass windows painted a myriad of colors on the ancient stone floors. Brenda, with her deep knowledge, guided us through. We saw the Coronation Chair, an ancient and somewhat unassuming piece of furniture, but one that has witnessed the crowning of monarchs since the 14th century.

Our footsteps echoed softly as we moved to the Poets’ Corner. Surrounded by tributes to literary giants like Dickens, Chaucer, and Austen. The gravity of the place was immense, especially as we passed by the tombs of Sir Isaac Newton and Stephen Hawking. We paused at the magnificent High Altar, rebuilt after World War II, where Brenda spoke of its significance in royal weddings and state events. The intricacies of the Lady Chapel left us in awe, with its delicate fan-vaulted ceiling and beautiful statues. Exiting the Abbey, Brenda pointed out the Westminster’s cloisters and the College Garden, the oldest garden in England, sharing tales of monks and their ancient herbal remedies. The tour concluded outside, amidst the echoes of Big Ben’s chimes. Brenda’s expertise had transformed Westminster Abbey from a historic monument to a living tapestry of stories, heroes, and legends. As we headed back to our hotel, I realized the tour was more than just a walk through a city; it was a journey through time, led by someone who truly loved and understood London.

Travel Bites Gourmet seafood on Canada’s Prince Edward Island BY: ANDREW MARSHALL

It may be small, but Canada’s Prince Edward Island is a haven for seafood lovers. It’s mid-September and we are deep in the heart of Atlantic Canada’s Nova Scotia, having just driven past a sign that indicates the halfway point between the equator and the North Pole. With the automatic set to cruise control and some cool sounds on the radio, we cut through a swathe of dense pine forest that stretches as far as the eye can see. After crossing the spectacular almost 13kmlong Confederation Bridge, we arrive on Prince Edward Island - our final destination for a week-long gourmet travel experience. Only 280 km from tip to tip, Prince Edward Island (known locally as PEI) is Canada’s tiniest province, but still manages to punch above its weight in the culinary world. Its pristine waters and beaches produce some of the planet’s finest seafood in a smorgasbord that’s as inspiring as its magnificent red sands and salt-sprayed red cliffs. Foodies know it as shellfish heaven, thanks to its abundance of local specialties such as oysters, lobster, mussels, clams, and scallops. PEI has several other qualities to recommend it too. In addition to the first-rate seafood, factors like stunning scenery, a moderate climate, friendly locals, and plentiful activities all add to the island’s appeal. Our first port of call is PEI’s capital Charlottetown, which contains The Great George - a gorgeous historic boutique hotel dating back to the1800s. Conveniently located in the heart of downtown, the hotel consists of several tastefully restored guest rooms housed within a cluster of award-winning heritage buildings along Great George Street, Charlottetown’s most famous thoroughfare. With thoughts of the gastronomic adventures to come, we excitedly clamber up the wooden steps to the porch of our multi-room suite and turn the key in the lock to our home away from home for three nights. THE GREAT LOBSTER HUNT Later in the afternoon, we stroll down to the waterfront, where we join Mark and Cody Jenkins, brothers and fourth-generation fishermen who have been operating their Top-Notch Lobster Tour's lobster-fishing excursions for the past several years. “It used to be known as the ‘poor man’s food’ here in PEI. But now, lobster's a local delicacy like no other,” says Mark. “It’s a big industry.” And certainly, one that has paid off well for the pair, who regularly takes customers on a “lobster-fishing crash course,” in which guests get to haul two lobster traps and a crab trap in a span of two-and-a-half hours and, of course, finish off with the requisite lobster dinner. As the boat motors away from shore, Cody serves chilled drinks from the cooler, while Mark enthusiastically regales us with facts on all things lobster. “One of the largest ones ever caught was in Nova Scotia – it was nearly 4ft long, 44 pounds and 130 years old,” he says, illuminating us on the prized crustacean’s life cycle, before allowing us to play fishermen and haul traps. Later, over the crunching sounds and appreciative silence of guests busily tucking into a delicious supper of lobster, potato salad and crusty rolls, Mark shares more about what life is like on the island. It’s serious back-to-nature stuff when they’re not conducting tours, with the brothers spending about 10 to 12 hours a day during the season on their lobster run checking traps. Winter is when they get a much-needed break. That’s when, he says with a grin, they’re true Canadians who play hockey and drink lots of beer. Jokes aside, it’s clear that lobster fishing separates the men from the boys. The brothers make their own traps - cutting the trees, milling the timber, and building about 200 traps at a time. The utilitarian pieces of equipment, too, have their own history. They are usually made of juniper wood (which is rot-resistant), and the Jenkins say there’s still a trap in circulation, which their father built over 20 years ago. The arrival of the lobster season each year is a highly anticipated event for locals like the Jenkins and is tightly woven into the culinary fabric of the island. You’ll get seafood all year round, but there are some especially good times to visit. PEI has a plentiful catch that runs from May to June on the island’s north side, and August to September on the south. Whether it's enjoyed on a boat trip, at a picnic table in the backyard with friends or at a no-frills “lobster supper” held in dining halls and churches throughout the island, this is the classic PEI dining experience you shouldn’t miss. Two of the most renowned places to enjoy a lobster supper are New Glasgow Lobster Suppers (proudly serving since 1958), in New Glasgow with spectacular views of the River Clyde, and the Fisherman's Wharf Lobster Suppers in beautiful North Rustico.

But there are other contenders to the seafood throne too. No trip to PEI is complete without indulging in another of its signature seafoods – oysters. Just around the corner from our residence on Great George Street in Charlottetown is the intimate Claddagh Oyster House - one of the best places in PEI to savor mollusks. Sitting at the bar, we order a dozen on the half shell (each with evocative names like Lucky Limes, Raspberry Points and Shiny Seas), and settle down to watch the servers ply their trade. Behind the bar, waiter, and oyster shucker Brett Wilson is hard at work. He deftly feels an oyster to find its most vulnerable point of entry, then skillfully sweeps the blade of his knife through the muscle connected to the shell. Within moments, an exquisite display of a dozen plump mollusks are placed in front of us ready to be savored unadorned. Or, if you insist, with a squeeze of lemon or a splash of hot sauce. And to wash it all down with? “A stout or a chilled sauvignon blanc,” which, according to Wilson, are 'the perfect partner for oysters.' Other notable places to sample seafood on PEI include Sims Corner Steakhouse & Oyster Bar, Carr’s Oyster Bar in Stanley Bridge (on the north coast) and Clam Diggers Beach House & Restaurant located on the waterfront in Cardigan on the east coast. Clam Diggers is typical of many of the island’s restaurants, where seafood comes straight from the boats of local fishmongers and fisherman. Scallops arrive in cheesecloth sacks, lobsters caught within a mile or two are dropped off, and fish like whole halibut come packed in ice, fresh from the ocean. It’s the perfect backdrop against which to spend a memorable evening – try tucking into their delicious ocean fresh chowder, fried scallops, clam dinner or shellfish platter while sipping a chilled beer and taking in the spectacular sunset views from the outside deck.

WORLD OF OYSTERS Next morning, we drive to Fernwood on PEI’s south coast to meet Brian Lewis, co-owner of Future Seafoods, to learn more about oysters. “Welcome to beautiful Bedeque Bay,” says Brian, as we hop aboard a traditional oyster dory from an idyllic beach setting. Out on the water’s mirror–like surface, Brian expertly demonstrates the art of oyster tonging before we have a go ourselves. Using his two oyster tongs in a scissor-like action on the estuary bed, he digs up a catch and places it on a small platform attached to the boat. Among the weeds and mud are the jewels of PEI’s seafood crown. A typical oyster will take three years to mature, and any that don’t make the size limit go back in the water to grow some more. Brian quickly shucks an oyster and savors its briny flavor. “What a finish on that one - it’s like tasting the ocean,” he proclaims, tossing the empty shell back into the oyster bed. Later we head back to the plant, where we get to see how oysters are graded and packaged, following the process all the way to the point where the mollusks are loaded onto the back of a truck to be shipped to places like Boston. Post-induction into the world of oysters, we cross to the island’s north coast. Standing proudly near the National Park, and overlooking the beach named after it, is the historic mansion of Dalvay By the Sea, which dates back to 1895. Easily the most stunning place to stay on the north shore, it drew much attention, when William and Kate, the Duke and Duchess of Cambridge, visited as part of their royal tour to Canada in July 2011, where among other activities, they sampled the chef ’s seafood dishes. On our last day in PEI, we followed the scenic North Cape Coastal Drive to the historic West Point Lighthouse, our accommodation for the night. Built in 1875, sections of the former lighthouse keepers’ quarters have been converted into an elegant 13-room inn - the first of its kind in Canada. After visiting the museum’s extensive collection of artifacts and climbing the tower for breathtaking views, we sit down on our own private deck for a gentle respite. With the sound of waves crashing in the Northumberland Strait all around us, we uncork a bottle of white wine and shuck a few oysters in a fitting tribute to Canada’s Prince Edward Island, a true seafood paradise.
