I’ve never received a welcome like I did flying into Sydney, Australia for WorldPride. The flight from LAX to SYD on Qantas was not only Pride-themed, but included a DIY makeup tutorial, drag shows, bingo, and boisterous live performances. Soaring at 40,000 feet in the air, mimosa in-hand, if the flight inbound to Sydney was any indication of how my time Down Under was about to unfold, it was going to be an absolute party.
WorldPride is a global LGBTQ+ festival that’s been celebrated since the year 2000, with cities competing to host the event every two years. Sydney was selected to host the 2023 festivities, a first for the Southern Hemisphere. What’s more, Sydney WorldPride includes all the excitement held alongside the city’s yearly Mardi Gras celebration. With rainbow flags lining Oxford Street, the city certainly looked ready for the over
300 events about to take place, including headliner concerts, wild parties, and historic parades over the course of the next 10 days.
Checking-in at the InterContinental Sydney, set within the beautifully restored Treasury Building of 1851, I took in the breathtaking panoramic view of the Sydney Opera House and the Sydney Harbor Bridge. I couldn’t believe that I’d actually made it for such a monumental event, and being my first time in Australia, I was incredibly excited to see what New South Wales had to offer, and experience it all alongside my husband, Michael.
Our first day, dedicated to a relaxing dip at the famous Bondi Icebergs. This iconic outdoor set of natural saltwater pools overlooks stunning Bondi Beach.
FLYING HIGH WITH PRIDE
Qantas’ Pride-themed flight to Sydney featured drag shows, bingo, and live performances. It was a celebration in the sky, setting the stage for WorldPride festivities.

A seaplane ride to Sydney’s Northern Beaches offered breathtaking views and fresh seafood at Bret’s Bar & Brasserie—a true coastal luxury.
BONDI BEACH CELEBRATION
Bondi Beach lit up with music, fireworks, and 12,000 partygoers for WorldPride’s grand finale—a celebration of love and unity.
Basking in the sun, I was blown away by the locals nonchalantly completing their breastrokes while enormous waves toppled over the rock barrier and into the pool. The ice-blue water was surprisingly chilly, but extremely refreshing in comparison to the sun overhead. This was the perfect way to get over my jetlag and soak in a bit of Sydney’s laidback coastline.
Following our swim, we hurried to King Cross Hotel’s Rainbow Rooftop for a quick welcome happy-hour and drag show before the big opening ceremony and concert began at The Domaine. Flanked by bustling neighborhoods on all sides, and close to Sydney’s LGBTQ+ district along Oxford Street, the enormous park was perfectly located for the main events, drawing tens of thousands to the central part of the city to enjoy.
We stood amongst the crowd awaiting Kylie Mynogue to take the stage. As the sun set on our first full day in Sydney, I looked up to the sky to see what I thought were a flock of crows flying towards the trees in the park. Noticing something looked different about them, I squinted further, and much to my surprise I saw they weren’t crows at all, but giant fruit bats! Down Under, the flora and fauna are wildly different than any other continent on earth, and though we may have heard about the wildlife here before, there’s nothing like actually seeing it for yourself. Fruit bats in the air, wombats around the trees, and an occasional wallaby or koala if you’re lucky enough to spot one, I don’t think it had sunk-in that I was nearly on the opposite side of the world until I saw giant bats flying above me.
Amidst my fascination with what was going on overhead, screams erupted from all around me. Lights flashed around the stage, and Kylie Mynoque majestically took the stage. Like many of the performances throughout Pride, including those from beloved singers Charli XCX and Troye Sivan, the energy was palpable. The evening ended with an enormous firework display over the park, an epic sendoff for opening night.
Arriving to bed late and waking up early, it was time to hit the ground running and see as much of Sydney as possible, starting with – breakfast. We stopped by The Way Canteen just across the street from the InterContinental for acai bowls and avocado toast. Throughout the week, we were incredibly impressed with the quality of food. Seemingly, each cafe had their own versions of fresh-baked sourdough, perfectly executed flat whites, fresh produce like papaya, dragon fruit and passion fruits, and heaps of locally sourced leafy greens. Sydney not only
has a taste for the quality and flavor of their recipes, but also for sustainability. Noticeably different from traveling around the US, here in Sydney, single-use plastics seem to be a thing of the past. A couple other favorite restaurant stops include LOAM for fresh salads and fantastic cocktails, and Queen Chow Enmore for a modern take on Chinese street-food.
However, above all, our experience heading to Bret’s Bar & Brasserie for lunch was an experience I’ll never forget. Bret’s Bar & Brasserie is located off the docks of Sydney’s Northern Beaches, and this region is worth the visit in and of itself. The magic of the Northern Beaches is that you can find any kind of beach you’re looking for, from quiet coves to long stretches primed for surfing. From Manly to Palm Beach, each of the 20 beaches has its own distinct vibe. No matter if you’re looking to surf,
snorkel or lay out in the sand, there’s so much to explore.
I heard that one of the best things you can do while touring Sydney is take a small seaplane to the Northern Beaches for lunch. We boarded at Sydney Seaplanes in Rosebay and graciously took off for the most scenic ride of my life. Crystal blue waters lined dramatic stretches of cliffs to my right, while on my left I could see the city’s skyline come into view. Arriving at Bret’s Bar & Brasserie, I was excited to try their very well-known freshly caught array of seafood. Highlights included fresh oysters on the half shell served with chardonnay mignonette, ruby snapper with charred bean salsa, and house-made tagliolini with decadent lobster. The entire experience was a luxurious treat, and a true highlight of our time in Sydney.
As WorldPride came to a close, we made sure to make the most of the rest of our time in Sydney. We took part in The Pride Climb, scaling the Sydney Harbor Bridge to enjoy an epic panoramic view of the city. Though this particular climb was for Pride, the Bridge Climb is available to all visitors to experience throughout the summer, weather permitting. For a more relaxed afternoon with a little less altitude, we also loved strolling along the waterfront towards the Sydney Opera House. For dinner we stopped at Whalebridge, a cute Parisian outdoor eatery. With sunlight dancing in our Champagne glasses, I admired the setting sun while friends and families made their way for the night’s performance at the Opera House.
Lastly, our visit wouldn’t have been complete without attending one of WorldPride’s biggest parties. Returning to the beach where I spent my first day
kicking my jetlag, I squeezed myself into the crowd of 12,000 others at Bondi Beach for an out-of-this-world club experience. Locals and tourists alike set out their blankets, eating, drinking, mingling and meeting up with friends. The DJs played into the night, with an incredible light-show and occasional fireworks energizing the crowd. The joy and sentiment was clear: we were all here celebrating life, love, and a community coming together as one. It was a celebration of unity, and a showing of gratitude and joy for everything experienced throughout this last week. I felt honored and honestly lucky to be there to witness it, and to me it exemplified the spirit of Sydney. A city that not only welcomes its visitors, but embraces them fully, honestly, and wholeheartedly. It’s a city full of great surprises, but it’s also a city full of great love.

It’s early November in Normandy’s Pays d’Auge, a picturesque landscape of small towns and villages, rolling meadows dotted with grazing cattle, russet-colored apple orchards and half-timbered farmsteads complete with their own dairy, apple barn and cider press.
The Pays d’Auge region is known for the superior quality and richness of its local produce. This is a land where creamy cheeses rule, with a quartet of France’s finest: Camembert, Pont l’Évêque, Livarot and Pavé d’Auge being made, alongside highly-prized apple-based drinks such as the refreshing aperitif pommeau, robust ciders and especially Calvados. This fiery apple brandy takes its name from a ship that sailed in the ill-fated Spanish Armada of 1588, and has been distilled with typical French passion for more than four hundred years.

The Spirit Of Normandy
From the Manoir d’Apreval, a familyowned estate surrounded by a lovely apple orchard in the village of
Pennedepie comes a line of Calvados and cider made in small presses from seventeen varieties of apples. As we arrive one crisp afternoon, workman Valéry Desfrieches is busy outside the fermentation house (cuverie), unloading some huge oak barrels in which the Calvados will age. Within the weathered moss-encrusted timber exterior of the cuverie is a collection of stainless steel fermentation tanks, and this is where we meet manager Agathe Letellier who begins to walk and talk us through the Calvados-making process.
“Firstly, the mild damp weather and clayed soil of the Pays d’Auge are ideal growing conditions for our apple trees, and from mid-September to midDecember, we hand-pick the apples and then press them into a juice that ends up inside these tanks,” she says.
“If you listen carefully, you can hear a hissing sound like soft rain falling on the building. That’s the apple juice naturally fermenting into a dry cider.”
She explains that after one to six months, the cider is distilled twice using a traditional alembic pot still, to separate the alcohol and eventually produce a colorless and very strong spirit of around 70 per cent alcohol. Double distillation, in addition to the apples originating in the Pays d’ Auge region are requirements for Calvados to
achieve the AOC label (Appellation d’Origine Contrôlée), the highest honor that can be bestowed on a French product.
The spirit must then be aged in oak casks for a minimum of two years, by which time it’s gained a rich amber hue (due to the tannin in the wood) that darkens, as the Calvados gets older. Usually the maturation goes on for several years, and each year the Calvados loses a little volume and alcohol content (due to evaporation) until it drops to between 40 and 45 per cent, and this is known as the ‘Angel’s Share.’ The longer the Calvados it is aged, the smoother the taste becomes.
When deemed mature, the cellar master then blends Calvados from different years choosing each for its complimentary qualities. Once bottled, it stops aging and it’s the length of time spent in the cask that’s the critical factor. Calvados is granted the description ‘Three Stars’ for a minimum of two years aging in oak casks, ‘Réserve’ or ‘Vieux’ for three or more years; ‘VO’ (Very Old) for four years and ‘XO’ or ‘Hors d’Age’ for a minimum of six years aging in oak casks.
Next, we visit the cellar (le chais), where the liquid gold is aged. “Just put a dab on your wrist and smell,” says Agathe, demonstrating the complexities of Apreval’s Calvados X0 with its aromas of wood and ripe fruit. “There’s a richness in the flavor
and finish that’s unique to aged Calvados,” she explains.
It’s a traditional custom at meal times that Normans typically down a little glass of Calvados - known as the ‘Norman hole’ (trou normand) to help aid digestion and to re-awaken the appetite between dishes. “In the middle of a meal a young Calvados is taken that acts as a digestif, then at the end we would enjoy an aged Calvados,” Agathe tells us. As Norman gastronomy is rich in butter, cream, and cheeses, the Norman hole seems a sensible suggestion.
After the tour, Agathe announces with a twinkle in her eye, there will be a taste test inside the shop and a chance to purchase other apple products including fine cider vinegars used by top Normandy chefs, regular apple juice, pommeau (a two-thirds cider and one-third Calvados mix), and dry, medium and sweet ciders.
Another Calvados distillery worth visiting is the Château du Breuil (near Deauville). Listed as an historical monument, this attractive slateroofed château was built in the 16th and 17th centuries, and has been entirely restored by its new owners who have been distilling highly respected spirits for generations.

countryside that incorporates around 20 producers of “AOC Pays d’Auge” cider. You will usually find pommeau, Calvados and cider vinegars at the same producers. Look for the apple sign and begin the route at Cambremer (35 km east of Caen), then follow it through various towns and villages to Victot.
Normandy Cheese
A Normandy cheese is the perfect partner for a Calvados or cider, with much of it being produced around the small towns of Livarot, Pont l’Évêque and Camembert. In the same way that locally grown apples are the starting point for making drinks, milk is the key ingredient for the region’s fine AOC label cheeses.
The favored breed for cheese makers is the brown and white Normandy cow, which can be seen grazing on the pastures, meadows and apple orchards from March through to November. Easily recognizable by the distinctive spectacle markings around their eyes, they produce milk widely regarded as one of the richest in France for its fat content, minerals, proteins and vitamins.
With its golden-yellow center and creamy-white rind, the circular Camembert is the quintessential Normandy cheese and known the world over. Its origins are relatively young in cheese-making terms and Marie Harel, a farmer’s wife,
invented it during the time of the French Revolution and sold her cheese in the market of Vimoutiers (excellent farmhouse Camembert are still available today). Marie’s husband Victor took advantage of meeting Napoleon III by presenting a Camembert to him, and with the Royal seal of approval the future of this small cheese was assured.
However, this style of soft cheese has been made in Normandy since the 11th century and two lesser-known and much older cheeses are Pont l’Évêque, an uncooked, unpressed cow’s milk cheese that is square in shape and Livarot, an ancient and noble cheese that dates back more than 700 years, originating with the monks. During the 19th century, Livarot became Normandy’s most sought after cheese and was dubbed ‘the workman’s meat.’ One of the most complicated cheeses to make, it sits in a cellar for a month to six weeks and the rind has to be periodically washed with lightly salted water.
Other typical Normandy cheeses include Pavé d’Auge, a semi-soft, creamy cheese with a reddish rind that is so called because it looks like the square cobblestones (pave) you still see in old marketplaces in France and the heart-shaped Neufchâtel, a soft, slightly crumbly, mouldripened cheese.

For a closer insight into cheese making, we visit Fromagerie Graindorge, a cheese producer in Livarot that offers tours and tastings. Established in 1910 by Eugène Graindorge, who turned the milk produced on his farm into Livarot cheeses and became a specialist in caring for cheeses produced by his neighbors. He built cheese cellars in the town, and in the 1950s, his son, Bernard Graindorge, brought their cheeses to the Parisian tables where they encountered a huge success. Today, Graindorge is a market leader for Pont l’Évêque and Livarot cheeses.
After enjoying a short introductory film and reading some informative displays we stroll past a unique collection of old black-and-white photos, cheese-making implements, milk churns, cheese moulds and a replica of the world’s largest Livarot cheese. Measuring around one meter in diameter, it was made from 1165 liters of milk (the equivalent of 250 standard size Livarot cheeses),
and shared with all the residents of the town on a special fiesta day in 2008.
There’s ample opportunity to observe the various stages of cheese production - working the curd, salting and drying, and washing the rind. One of the most interesting aspects is the final stage of making a LIvarot cheese. Each one is bound by hand with 5 strips of a native reed called ‘roseau.’ Because of these five imprinted strips on its rind, Livarot is often referred to as le colonel.
Before leaving, it’s mandatory to sample some of the cheeses, beautifully displayed in colorful boxes inside the Graindorge shop. Keep an eye out for Le Grain d’Orge with Calvados. During maturation the rind is carefully washed in brine, and then brushed with Calvados so it gradually becomes infused with the full flavor of apples - a delicious fromage with a soft, golden texture that combines two of region’s most celebrated products. ‘Bon voyage’ and ‘Bon appetit’

Calvados is typically served straight and at room temperature. The more common aromas are ripe apple, peach, apricot, vanilla, wood, caramel, tobacco and leather. These characteristics are often echoed on the palate. Calvados is also amongst the most versatile of spirits. It can be served as an aperitif, blended in drinks, as a digestive and has a long tradition of culinary use in Normandy.

Livarot: A cow’s milk washed-rind cheese, it has an assertive aroma and nutty flavor. The pâté is semisoft, creamy and smooth with small holes. It’s a very strong tasting cheese with a heavy moist texture.
Pavé d’Auge: Is a piquant cheese with a long tradition. It is a semi-soft, creamy cheese with a reddish rind. The maturation period is from two to three months.
Neufchâtel: A soft, slightly crumbly, mould-ripened cheese and one of the oldest cheeses in France. It looks similar to Camembert, with a dry, white, edible rind, but the taste is saltier and sharper. It is usually sold in heart shapes.

The natural beauty of pristine Swedish Lapland surrounds, even while driving on icy, windswept roads in sub-zero temperatures where signs are often covered with snow. Abisko National Park offers winter hiking on paths amidst the sparkling snow. Claudio Comi, an expert guide from Lights Over Lapland describes a glacier as “good-looking.” He also suggests being patient and positive while waiting for clear skies to view the Northern Lights, as he tells us about the seasonal change of colors in the ptarmigan (northern grouse) and arctic fox.
Without viewing the elusive, but soughtafter Northern Lights, the stillness of the natural world has much to impart with clear rivers, ancient forests, and lofty mountains, where local Indigenous Sami dialects have 300 words for snow. This UNESCO World Heritage Site of Laponia, known as “Europe’s last wilderness,” has been inhabited since the end of the Ice Age. It contains rich flora, fauna, crystal lakes, and geological history in a vast Arctic

region with nature preserves and four national parks (one dating from 1909) in northernmost Sweden. Large numbers of reindeer are moved through this bio-diverse area by Indigenous Sami herders following an ancestral way of life in tune with a changing seasonal landscape.
Most memorable are encounters with specific people in remote locales. They color our experiences, serving as highlights of an adventure in a frosty land, touching our hearts well below many thermal layers of needed warm clothing.
DISCOVER SWEDEN’S ARCTIC WILDERNESS AND CULTURE
In Jokkmokk, a town that literally means “a place to live in the wintertime,” we connect with enthusiastic herbalist Eva Gunnare, an excellent chef, forager, and healer sharing medicinal properties of natural plants. The visit is a bright star for weary travelers navigating snow-covered roads in winter. She invites us into her home with a roaring fire in the wood stove, offering bowls of tasty, homemade mushroom soup as we learn about herbs and more. Mushrooms are not usually part of traditional Indigenous Sami cuisine because they are food often reserved for reindeer, animals said to be particularly fond of the porcini variety.
To make blood sausage, Gunnare rinses reindeer intestines, which she describes as “feeling like silk.” She is fond of tapping birch trees for sap, tea, and detoxification while releasing the “flavor of spring.” And she emphasizes all senses are used
in food preparation, a common theme in a variety of her Essence of Lapland programs.
Gunnare, an unofficial ambassador of Swedish Lapland, speaks of the angelica plant: “This flower is God’s gift to humans.” Exported since the time of the Vikings, it grows in the cold and kills bacteria. She points out meadowsweet, a white flower from which aspirin is derived. It may also be mixed with lemon, cardamom, and cinnamon to serve as a drink (glug) with raisins or bog bilberries, containing more vitamin C than blueberries. Spending time with Eva is an opportunity to reconnect with the natural world, focused on how things grow and taste. It is also a reminder of the thin line separating food from medicine as in tasty tonics.
She explains most Swedes speak with each other to communicate, but this is not necessarily the case for the Sami. For them, she tells us, silent
knowledge is a seamless means of communication in a natural way, where reindeer herding (split equally between men and women) is a lifestyle. Sami trapper and storyteller Johan Turi elucidates the relationship between the Sami and environment in the book, Sapmi Skies, Myth and Science Over Swedish Lapland by Consuelo Griggio and Thomas Kuhn. “The animals, the trees, the stones, and other inanimate things have lost the power of speech but still retain hearing and intellect. Therefore it is necessary to treat all animals well and to regard all things as if they were living beings who hear and understand.”
This concept is echoed at our meeting with Alex Kemp to explore Sami culture and heritage at Nutti Sami Siida, an award-winning pioneer Sami tourism organization based in Jukkasjarvi. Beyond showing us reindeer in corals, Alex shares
folklore and practices of the Sami people, a culture he is interested in discovering more about to understand his own heritage, seeking to find balance between modernity and the old way of life.
The usual transfer of traditional, collective knowledge for the Sami happens not in a school, but more often through families, with grandparents dispensing it in an oral process called, “arbediehtu.” Part of this is the idea to be respectful of the powerful Northern Lights (Aurora Borealis), as they display colors dancing in the night while viewers below remain still, without noisemaking, whistling, or pointing at the sky.
Myths, stories of creation, and rituals are means of transmitting the culture orally from one generation to the next, sometimes in disappearing languages while some are working to reclaim these lost mother tongues. Alex shares a sampling of stories and practices about the Fire Goddess, such as aiming the spout of the kettle away from the door to show respect to the goddess living beneath the fire. Another traditional practice is wearing silver to keep evil spirits away.
He also discusses yorik, a spiritual trance achieved through noaidi shamanic music usually accompanied by a frame drum, which was confiscated or destroyed by missionaries in times past. The drum was a source of knowledge and aided the noaidi as a mediator between gods, goddesses, and people. The noaidi, operating beyond time and space, accessing the spirit world, could give counsel to those seeking answers about daily life, sometimes suggesting animal sacrifice in an area with a majestic landscape. “Sadly, today many of us
have forgotten about nature,” says Alex. Then he adds: “We are alive because of nature.”
Displays of Sami culture with traditional outfits similar to that worn by Alex are exhibited at Ajtte, The Swedish Mountain and Sami Museum in Jokkmokk. It’s a good place to learn about clothing, an informative fashion statement acting as an identifier imparting geographic, material social standing, and marital status through textile colors and patterns. Silver and pewter may adorn the fabric as accessories, acting as amulets and financial investments.
Sapmi is technically not a nation in the Arctic, but it is a land with a national anthem, national flag, and celebrations of National Day on February 6. Other exhibits at the museum are collections of art, artifacts, and cultural-historic, utilitarian objects regarding Sami heritage and craft with moose and reindeer antlers skillfully made into spoons, needles, and knives. Every part of the birch tree is called upon and birch roots may become handmade baskets and cheese molds.
Another Arctic outing leads us to encounter production manager Agnes Otterbech at Mathantverket Vuollerim, an artisan dairy where we learn about cheesemaking in a rural community above the Arctic Circle. Rare and endangered Garda mountain cows share their name with local cheese.
Surprisingly, the cows can live in weather dipping down to -40 C degrees. Fascinating facts (some of the mountain cows have ancestry traced back to the 1890s) are mentioned as delicious tastes are revealed in 10 varieties of Arctic cheeses made from 100% mountain cow milk at the dairy. The flavorful cheeses (one made to put in your coffee) are sold at their shop and café as well as in other Swedish locales including Stockholm.
The clean air, water, and high quality grass all contribute to the outstanding products produced here, some of which have won awards. The farmhouse dairy at this highly acclaimed boutique factory is an entrepreneurial, community endeavor where many townspeople
participate part-time or have shares of ownership with some profits helping to fund other community projects. The cheesery also serves as a model, inspiring other communityowned businesses.
Community is important in Swedish Lapland, a place where not everything is explained with words. The cultural landscape is passed through generations with knowledge of how to live in nature without exploiting its riches. In this Arctic environment with crisp, clean air, experiences are paramount to accessing silent knowledge, while a visit here encourages travelers to become more open to new perspectives.

Thailand is a country that offers a little something for everyone. From the busy streets and lavish shopping malls of Bangkok to the sleepy mountain villages in the north. The island of Koh Samui in Thailand’s southeastern Gulf is one of the true jewels of this beautiful country.
Located only a one hour flight south of Bangkok, Koh Samui is an island paradise that can’t be missed during your stay in Thailand. There is an inviting laid back vibe here that welcomes you the moment you arrive. The island’s rugged coastline is highlighted by clear blue green water that surrounds its white sandy edges. Restaurants and seaside cafes are scattered throughout the island with the most common areas for foreigners being; Bo Phut, also known as Fisherman’s Village, Chaweng, and Lamai.

Afterwards, you can enjoy some time walking along the empty beaches and swimming in the crystal blue water. If you are looking for a place to detach from the world, you just may find it in Lamai.
During your stay on Koh Samui, you may want to visit some other places on the island. The town of Nathon serves the ferry back to the mainland and has a night market that is less frequented by tourists. During the day Nathon is a great place to have lunch at one of the
many seaside cafes and relax while looking out to the distant islands. Getting to Nathon is easy. There are several small buses and taxis that make travel around the island hassle free. Also, being a tourist destination, you will find English is commonly spoken throughout the island.
Koh Samui is often a jumping off point for other islands in the area such as Koh Phangan and Koh Tao. Koh Phangan which is home to the famous Full Moon Parties is a beautiful and less populated island to the north. This is another place that is worth setting time aside for.
From here it is common for people to make the trip to the tiny island of Koh Tao. This is Thailand’s postcard perfect island and a popular destination with scuba drivers and backpackers alike.
