This summer, my wife, our grandson, and I embarked on an eight-day Mediterranean cruise aboard the MSC World Europa. There’s something truly special about a multi-generational vacation, and we were excited to share an adventure that would help our 12-year-old grandson discover the beauty of other countries while giving us all memories to last a lifetime. Not only was the cruise a success in introducing our grandson to new cultures, landscapes, and flavors, but it also turned out to be a perfect family journey—comfortably blending relaxation, exploration, and excitement.
When we first arrived at the port, MSC World Europa immediately took our breath away. Towering above every other ship at the docks, it’s a ship you can’t help but marvel at. With its sleek silhouette and distinct Y-shaped aft, this isn’t just a cruise ship; it’s a striking example of modern design at sea. The sheer size was initially overwhelming, but MSC’s thoughtful layout quickly helped us feel at home. MSC World Europa is a pioneer in the fleet, fueled by liquified natural gas and equipped with cuttingedge environmental technology—a forward-thinking commitment that made us feel good about our choice.
LIFE ONBOARD: ACTIVITIES AND FUN
The World Europa has truly been designed with every traveler in mind. While there were tranquil Zen areas perfect for adults, we spent a good chunk of our time exploring the Family District. With its water slides, pools, go-karts, and arcades, this part of the ship was a favorite for our grandson, who always seemed to be finding new
areas to explore. For an experience like no other, we all took turns on The Venom Drop, an 11-deck dry slide and the longest at sea. It quickly became a must-do, giving us all a thrill as we spiraled down.
Our stateroom was a haven after each day of adventure, with ample space and a touch of luxury that made it feel like our own private retreat. Having a new port of call every morning added a level of excitement to our days, each one promising fresh sights and unforgettable moments. One of our favorite parts about cruising is the convenience of unpacking just once.
DINING DELIGHTS: FROM STEAK TO TEPPANYAKI
With nearly 6,000 passengers on board, the main dining areas were often bustling, so we opted to book a table at one of the specialty restaurants most nights. The culinary options were vast, each restaurant offering something unique. Two of our favorites were Butcher’s Cut and Hola! Tacos & Cantina. Butcher’s Cut offered up one of the best steaks we’ve had, while Hola! Tacos & Cantina brought a fresh, festive flavor that satisfied our craving for something spicy and bold. Our grandson’s top choice was Kaito Teppanyaki, where the chef’s skills and theatrics were as impressive as the food—an 11 out of 10, according to him!
With an endless selection of bars and lounges, each day offered a chance to try something new. Whether it was freshly squeezed juices by the pool or a handcrafted cocktail while watching the sunset, there was always something to enjoy.
OUR PORTS OF CALL: A MEDITERRANEAN TREASURE MAP
Each stop brought its own charm, history, and unique vibe. From Italy’s rich cultural roots to the lively streets of Spain and France, our Mediterranean itinerary was as diverse as it was beautiful.
NAPLES, ITALY
Our journey began in Naples, a city that seemed to overflow with energy, charm, and authenticity. Wandering through its winding, lively streets, we were immediately immersed in the sights and sounds that make this city so iconic. Street musicians played traditional Neapolitan tunes as locals bustled by, and the air was filled with the inviting aromas of freshly baked bread and simmering sauces.
CULINARY DELIGHTS: STEAK, TACOS, & TEPPANYAKI
Of course, we had to try the pizza, and it did not disappoint—hands down, the best I’ve ever tasted. The crust was light and crisp, with a perfect char, while the tomato sauce was bursting with flavor, complemented by creamy mozzarella and fragrant basil. It was a simple, yet utterly delicious

MESSINA, SICILY
The Messina Cathedral was nothing short of awe-inspiring, with its towering Gothic portal that seemed to beckon us into another era. The intricate details of its 15th-century stained glass windows cast a delicate, colorful glow within, creating an almost reverent atmosphere. But the highlight was undoubtedly the astronomical clock – an engineering marvel that chimed with precision, leaving us all captivated by its ancient mechanisms.
Just steps away, we wandered over to the Fontana di Orione and Neptune Fountain, both masterpieces of Renaissance artistry. Every carved figure and mythological symbol seemed to tell a story of its own, pulling us deeper into the city’s rich tapestry of history and legend. Our grandson was especially fascinated by the myths behind the statues – tales of gods and heroes that made the statues come alive, turning our visit into a magical experience filled with wonder and discovery.
PALERMO, SICILY
In Palermo, we ventured into the historic old city. Each landmark we visited seemed to reveal another layer of history and artistry. From the grand Cattedrale di Monreale to the Quattro Canti intersection, every step through Palermo felt like walking through an open-air museum. Our grandson enjoyed seeing the ancient architecture, and my wife and I relished sharing this historical treasure with him.
BARCELONA, SPAIN
Barcelona has always held a special place in our hearts, so my wife and I were thrilled to return, this time with our grandson in tow. Our day began with a visit to the legendary works of Antoni Gaudí, which were even more mesmerizing the second time around. The Sagrada Família, with its towering spires and intricate façades, left us speechless. Seeing our grandson’s face light up as he took in the sheer scale and detail of Gaudí’s masterpiece was something we’ll cherish forever.
From there, we wandered to the whimsical Park Güell, where Gaudí’s playful mosaics, vibrant colors, and surreal shapes transported us all to another world. There’s a magic in Gaudí’s work that bridges generations, making it easy for both young and old to get lost in his architectural dreams.
After a full morning of exploring, we found ourselves on a bustling boulevard and decided to stop at a cozy local restaurant. Sipping on cool drinks and indulging in a delicious lunch of authentic Spanish flavors, we watched as the city’s rhythm unfolded around us. As we looked around the table, each of us with contented smiles, it felt like Barcelona had once again worked its charm on us – and now on the next generation too.
MARSEILLE, FRANCE
Marseille welcomed us with the warm aroma of croissants and pastries. We found a cozy café near the harbor and enjoyed hot chocolate while watching the city wake up. Our grandson declared Marseille’s pastries the “best ever,” which, coming from a young food critic, is high praise. It should be noted that transportation to and from the ship was seamless, making the experience even better.
GENOA, ITALY
As the first light of dawn crept over Genoa, we awoke to a view that took our breath away. The city unfolded before us like a vibrant painting, with rows of pastelcolored buildings in soft shades of pink, yellow, green, and blue cascading down the hills toward the sparkling Mediterranean.
After a leisurely breakfast, we made our way to one of Genoa’s premier attractions – the Aquarium of Genoa, known as the largest in Italy and one of the most renowned in Europe. Nestled in the old harbor, the aquarium seemed almost like an extension of the sea itself, blending seamlessly with the surrounding waterfront. The exhibits were beautifully crafted, each showcasing marine life from around the world.
The aquarium was a perfect mix of fun and learning. Interactive displays and touch tanks brought us closer to the ocean’s mysteries, while informative exhibits taught us about the importance of marine conservation. It was heartening to see our grandson so engaged.
Leaving the aquarium, we strolled along the harbor, watching boats bobbing gently on the water and feeling the refreshing sea breeze. The charm of Genoa, with its blend of historic architecture and lively waterfront, had truly captured our hearts. This stop wasn’t just another point on our map—it was a place we felt an instant connection to, filled with moments that would become cherished family memories.
REFLECTIONS ON OUR MEDITERRANEAN ADVENTURE
Our time aboard MSC World Europa gave us so much more than just a vacation. The ship was both luxurious and environmentally conscious, a combination we could appreciate as we introduced our grandson to the wonders of Mediterranean culture. Between ports, the ship itself was a source of endless entertainment. MSC Cruises has truly mastered the art of making family-friendly vacations feel sophisticated and fun.
From the attentive service to the incredible variety of activities and dining, MSC World Europa was everything we could have hoped for and more. We loved having the convenience of excursions booked through MSC, each one thoughtfully curated to make the most of our time in port. And with such a range of specialty restaurants, we were able to enjoy delicious food every night without the crowds of the main dining room.
Our grandson walked away from this experience with a new perspective on the world and a deeper appreciation for cultures beyond his own. And as grandparents, we felt the joy of watching him grow through new experiences, from marveling at architectural wonders to tasting his first authentic Italian gelato. A Mediterranean cruise may have been our initial idea, but MSC World Europa turned it into a journey that will stay with us forever.

JUNEAU
Juneau Alaska, located amongst the archipelago of South Eastern Alaska, is an isolated community on North America’s Pacific Coast. Even though the city is located on the mainland, it’s really only accessible by sea or air. It’s not possible to drive to Juneau. The city is bordered by impassable mountains to its West, rugged glaciers to its North, and ocean to its South and East. So when flying into Juneau, I was overwhelmed with amazement not only at the sight of the mountains, but by its view as a small community amongst a sea of endless blue and green.
It was late-August, and I could tell that autumn was already starting to arrive. The air was crisp enough to require a light jacket, the leaves were just starting to yellow, but the skies were clear and the sun pleasant. As a “mainland island”, the farthest you can travel outside of Juneau is just an hour or two in any direction. But, ironically enough, the best way to travel around the area is by car, so upon landing the first thing we did was find one to rent.
We drove into downtown Juneau to find several blocks of tightly knit historic buildings, set to the backdrop of dramatic cliffs bordering the wilderness beyond. After checking into our accommodation, we decided to explore the heart of downtown on foot to see what we could find. We started at Kindred Post, just across the street. The quaint post office and gift shop features tons of local products, like artwork from Trickster, an indigenously owned creative group that features Natively designed art pieces
A REMOTE SANCTUARY WHERE THE MOUNTAINS

After getting our fill of little treats and trinkets, we continued on to a surprising outdoor gathering space and food cart pod in the center of downtown. This clearly was the place to be, as many were out enjoying a beverage at the walkup bar, sitting around the fire pits, and even trying a s’more for ourselves.
One of the greatest natural attractions in the region is the Mendenhall Glacier. We heard about this prior to our trip and knew we needed to see it for ourselves. As the glacier is quickly receding, there are many waterfalls that have developed down the cliffs cascading below the peaks. Arriving at the Nugget Falls park, we were surprised to find that the trails were not only fenced, but also gated. Noticing a sign on one of the gates, we realized this was all to keep wildlife off the trails, especially grizzly bears. Now that

we’re at the entryway of Alaska’s great wilderness, the chance of actually running into a bear is far higher than any other place in the US. Beyond this park are countless miles of uninhabited forest.
Truly, one of the greatest things about visiting a place like Juneau, is how small it makes you feel. Living amongst the hustle and bustle of any US city, I often forget just how big the world is. Usually, when visiting a National Park, I can clearly see the border on a map, how there’s a beginning and an end, as if the park is just wedged between multiple cities. But here, standing at the edge of civilization, and seeing on the map that there’s no city past this point, I never felt so remote. I felt free. All of a sudden, I began to understand the draw to the area.
Enormous salmon filled the creeks around the trails. The hike on Nugget Falls Trail is about 2 miles roundtrip and leads to the edge of the Mendenhall Glacier, where you’ll find Nugget Falls pouring straight out of the ice. It’s an incredible sight to see, and something that should absolutely be included on any itinerary to Juneau. The view from the falls was spectacular and a great opportunity for photos.
After our hiking adventure, we were more than ready for dinner at In Bocca Al Lupo. The cozy restaurant is known for its modern Italian fare, including its wood-fired pizzas, fresh pasta and cured meats. I ordered the fresh wood-fired salmon steak while my husband, Michael, ordered the house-made pappardelle. The menu rotates depending on seasonality and availability of ingredients. I was incredibly surprised at the sheer size of the salmon steak portion, along with the flavor and char, it proved to be our favorite dish of the entire trip.
On our second day in Juneau, we decided to take a look at the region’s history at the Alaska State Museum. The museum is broken up into several rooms,

progressing chronologically from ancient to modern history. We could clearly see how the state and local communities have changed and been affected by colonization from the US. Stopping at Sacred Grounds, a purely indigenously owned and operated coffee shop, we got our espressos and made our way to the next big ticket-item on our list, a helicopter tour to Mendenhall Glacier.
One of the best ways to experience the gorgeous landscape surrounding Juneau is to view it by air. The Glacier Helicopter Tour with Coastal Helicopters is a great way to not only get a birds-eye-view, but to also have the chance to walk on Mendenhall Glacier and experience the landscape first hand.
Rounding out the trip, we returned to downtown Juneau for a toast at Amalga, a local gin distillery utilizing freshly harvested juniper berries. The gin is infused with elements of hibiscus, lavender, and light floral flavors that give it a super fresh and bright flavor. It’s perfectly paired with citrus and bubbles. As sunset approached, we walked along the water on the wharf and watched the peaks turn orange. I could smell the fresh fish frying at the waterfront restaurants, and I assumed the bald eagles could too as they stooped on a few nearby trees. We talked about all we’ve seen in Juneau so far, and really it’d only been a couple days. I thought about my impression of Alaska before this trip and how my perception had already changed. Before, I wondered why anyone would want to live in such a harshly cold environment that only gets a few hours of light during the dead of winter. But now, I understand that there’s so much beauty here in the dramatic landscape, more than I imagined. And really, there’s nothing more freeing than standing here at the edge of the wilderness.

Recently, I had the pleasure of joining a private food and walking tour with the esteemed Ciao Florence, led by the delightful Cristina, a guide whose passion for her hometown shone through every step of our journey.
We began our tour in the vibrant heart of Florence, where Cristina’s warmth immediately put our group at ease. She was not only knowledgeable about the city’s rich history but also about its culinary traditions, which elevated the tour to a whole new level. With Cristina’s guidance, each landmark and bite became a window into the Florentine soul.
Our first stop was the famed San Lorenzo Food Market, a bustling haven that seemed to pulse with the energy of Florentine daily life. The market itself was a feast for the senses, with vendors displaying fresh produce, meats, cheeses, and other delights. Cristina explained that this food hall, with its striking iron and glass architecture, was designed by Giuseppe Mengoni, who had been inspired by French aesthetics. This blend of Italian tradition and foreign influence was apparent throughout Florence, and the market was a prime example.
At a small shop specializing in truffles, we tasted one of Tuscany’s finest treasures. Everything trufflerelated awaited us—truffle oil, truffle spreads, and even truffle honey. I could feel the rich earthiness of the
truffles seep into each bite, a flavor that is distinct and unforgettable. Cristina shared how truffles are foraged in the countryside, hunted by specially trained dogs who help their owners uncover these hidden culinary gems. I couldn’t resist buying a few bottles to bring a taste of Florence back home.
As we continued to explore the market, we came across a rosticceria, where a chef was carefully carving porchetta. The aroma alone was mouth-watering. Porchetta, a seasoned, boneless pork roast, is a classic in Italian street food, and watching it being freshly carved was a joy in itself. The tender, juicy meat with crispy skin was perfection, and every bite transported me deeper into Florence’s culinary heart.
After we’d had our fill at the market, Cristina led us through some of Florence’s most iconic squares, sharing tidbits about each landmark along the way. Strolling by the towering Duomo and the Basilica of San Lorenzo, I felt as if I were walking through history. Cristina’s stories of Brunelleschi’s Dome and the legacy of the Medici family were spellbinding, blending seamlessly with the aromas wafting from nearby cafes and bakeries.

Our next tasting was at a cozy wine bar near the Cathedral Square, where we were treated to a delectable tagliere, a platter brimming with Tuscan cold cuts and cheeses. As we sipped on a glass of Chianti, Cristina explained the longstanding tradition of winemaking in Florence, an art form carried forward by prominent families such as the Antinori and Frescobaldi. Slices of finocchiona, a fennel-spiced salami, and cubes of aged Pecorino cheese paired perfectly with the Chianti’s bold flavors. This wasn’t just a tasting; it was a lesson in how Florentines take pride in the art of eating well.
To end our journey on a sweet note, Cristina led us to Gelateria La Carraia, a popular ice cream parlor known for its traditional flavors. Even though there was a long line winding out the door, Cristina worked her magic and led us to the front, giving us the perfect opportunity to cool down with a scoop or two. I opted for the “Florentine Cream,” or Buontalenti, a light and creamy gelato named after the artist who is said to have invented it. It was the perfect treat on a warm summer day—silky, rich, and a true Florentine classic.
As we strolled back, gelato in hand, I reflected on how much this tour had given me. I didn’t just get to taste the flavors of Florence; I got a deeper understanding of the traditions, stories, and people behind them. The private, intimate nature of the tour meant that we could pause and savor each moment, both literally and figuratively.
By the end of the day, my stomach was full, but so was my heart. Ciao Florence’s tour had done more than introduce me to Florence’s culinary scene; it had woven together the threads of history, culture, and cuisine into a beautiful tapestry that I’ll carry with me long after I’ve left. If you’re looking for a way to connect with Florence beyond the usual tourist sites, I can’t recommend this experience enough.

“FOOD ISN’T ONLY A BIG PART OF THEIR CULTURE - IT’S AN EXPRESSION OF THEIR LIVES”
SNUFFLING FOR TRUFFLES IN PIEDMONT
It’s early October on the outskirts of the hilltop town of Montechiaro d’Asti. The sun has yet to illuminate the plowed fields, russet-colored hedgerows, and wooded meadows, but the pre-dawn landscape is already alive with eager dogs’ snuffle and bark. It’s the beginning of the truffle-hunting season and experienced truffle hunters Luigi Faletti, and Guiseppe Tyrone are leading their keen-nosed hounds, Chico and Tom Cruise, in search of Tuber Magnatum Pico, the prized white truffle and one of the most expensive foods on earth costing between $2,000 and $3,500 per kilo.
Although the white truffle grows almost exclusively in Italy and northern Croatia, it’s generally agreed that the world’s best come from Piedmont. Their unique flavor and aroma make them much sought after by chefs and food lovers, and their rarity value creates a lucrative industry between October to January in the otherwise quiet backwater towns and villages of the region, particularly around Alba and Asti.
It’s difficult to imagine a more tranquil occupation than truffle harvesting. “The best place to look
for truffles is in damp woods, where they grow in symbiosis with the roots of oaks, elms, willows, poplars and hazelnut bushes,” says Luigi, keeping a keen eye on Chico avidly sniffing at a leafy patch of earth under a nearby willow tree. “Truffle harvesting takes place from dusk until early morning because the aroma is more intense at this time and the dogs have a better chance of detecting it.”
The fungus and the tree exchange minerals through the roots, and it takes 10 years or more for an oak tree harboring the fungus to grow a harvest of truffles. Unlike
above-ground mushrooms that grow in a few days, white truffles are underground fungi that need a minimum of 7-8 months to develop until they reach full maturity. “White truffles are usually found about 1015 cm underground and often it can take many hours searching to locate one,” says Guiseppe.
Although they can grow to the size of a potato and, in some exceptional cases, the size of a small pumpkin, Guiseppe shows me a knobbly walnut-sized example that Tom Cruise had located earlier. He cuts it open with his penknife to reveal a marbled interior, tan with creamy ivory veins. When it first hits my senses, the smell is intoxicatingmusky, fungal, peppery and garlicky, but equally reminiscent of the musky earth it came from.
Once the truffles are coaxed from the ground, they are sold to local shops, markets, and restaurants, with some dedicated menus
dedicated to the pungent treasure. Unlike the less prestigious black truffle, the white variety must never be cooked but always consumed raw. Because most of the white truffle’s flavor lies in its aroma, it is best shaved tissue-thin with a special grater over simple dishes such as risotto, pasta, salad, or velvety scrambled eggs. Some regional dishes where it appears include carne cruda (raw diced beef), fonduta, a creamy fondue made with melted cheese, milk and eggs served over toast, and fresh egg pasta called tajarin - all of course topped with shaved truffles. The white truffle taste is unique; a more subtle, lingering, smokier version of the aroma but just as unforgettable. Most hotels and agriturismo homestays around Alba will be able to arrange excursions with a truffle hunter, who will charge by the hour.
Italians have paid annual homage to their indigenous white truffle since 1923 by means of the annual Alba White Truffle Fair (Fiera del
Tartufo Bianco d’Alba), which is held throughout the autumn in the turreted medieval town of Alba and usually kicks off the first week in October and runs for several weeks. As I step inside the fair’s main tent, the air is thick with the unmistakable whiff of opulence. Fresh truffles of various sizes sit in velvet-lined cases like precious jewels, with tags attached showing the price per gram. Locals and visitors rub shoulders with extrovert chefs and rich restaurateurs doing deals on premium truffles. Long rows of booths display products such as truffle butter, truffled liver pate, truffle oil and truffle honey.
On my last evening in Piedmont, I find myself in a small rustic eatery down a quiet backstreet in Alba. As the waiter shaves slivers of Tuber Magnatum Pico over my simple pasta dish. I inhale the unmistakable aroma for the last time and raise my glass of Barolo red to Piedmont’s truffle country - gourmet travel at its very best.
It’s a typical Saturday afternoon at the Mercato di Mezzo, a quaint little market area off Bologna’s Piazza Maggiore. In this network of ancient Roman streets, once the home to the city’s craftsmen, there’s plenty of hustle and bustle. Old men engage in animated conversation, lovers eat ice creams together, stallholders yell out food bargains and shoppers crowd around the fish, fruit, cheese and meat stalls. At the restaurant/grocery store Tamburini (Via Caprarie 1 ), the display of produce looks like a work of art. Hams and salamis in every

conceivable size and shape dangle in the window, alongside slabs of cheese, trays of colorful pasta, and baskets of exotic fungi.
From Emilia Romagna’s regional capital Bologna, I head for nearby Modena which has its own special claim to gastronomic fame – aceto balsamico tradizionale di Modena. At the Acetaia Paltrinieri a small family producer of balsamic vinegar on the outskirts of town, the aroma of cooked ‘must’ (unfermented grape juice) lies heavily in the air. “This is
the real aceto balsamico and this is my passion,” says the owner Guido Paltrineri, as he welcomes me inside his attic, where the barrels of precious brown liquid are stored. The fruit of centuries-old knowledge, traditional balsamic vinegar is made by placing the ‘must’ in a sequence of ever-decreasing sized barrels constructed of different timbers, such as chestnut, cherry, mulberry, juniper and oak.
At the beginning of the process, when the vinegar is in the largest
barrel, more porous woods are required to facilitate evaporation. In contrast, at the end of the process, the harder woods are more suitable for conserving the aged vinegar. Aged for at least 12 years (and sometimes up to a century), aceto balsamico tradizionale di Modena is a rare and exquisite thing. The longer the vinegar ages, the thicker and more intensely flavored it becomes. Be warned, try it once, and you’ll be addicted to a sweet and sour taste and in perfect harmony.
While there are some fine dining restaurants throughout the towns of Emilia Romagna, you’re just as likely to have a great culinary experience by visiting a local one. Take for example, Trattoria Aldina (Via Luigi Albinelli 40) a typical family-run place near Modena’s bustling food market, where various pasta dishes freshly made on premises are available, including the region’s signature dish tortellini (meat-filled pasta shapes), tortelloni (pasta filled with
goat’s cheese), and tortelli (pasta stuffed with a vegetarian filling such as pumpkin).
What would a fresh pasta meal be without that other essential ingredient Parmigiano-Reggiano ? Considered the king of Italian cheeses, Parmesan cheese is without doubt the most famous product of Emilia Romagna province. It has been in existence for at least the last 700 years and is so valuable that wheels of cheese were once accepted as currency. Each wheel of cheese is aged for an average of 24 months, during which important changes take place that give the cheese its distinctive flavor, texture, aroma, and nutritional value.
Just like Parmigiano-Reggiano, the Emilia Romagna region also has an ancient tradition for pork. There is a staggering variety of types available, from Mortadella di Bologna (salami made with minced pork, lard, and black pepper), Prosciutto di
Parma (air-dried, salt-cured ham), and Culatello di Zibello, a quietly remarkable delicacy that must be sliced finer than paper. This soft, sweet, delicately flavored ham, whose name means ‘little rump’ in Italian, is produced on a strip of land by the banks of the River Po near Parma, which provides just the right humid conditions for the culatello to cure.
To observe the talent and enthusiasm of a balsamic vinegar producer or pasta maker is to realize that food isn’t only a big part of their culture - it’s an expression of their lives. It’s my last day in Italy’s gastronomic heart and I find myself boarding the Parma to Bologna train, my backpack bulging with foods bought during my journey. The landscape of vineyards, farms and small villages slips by as I snack on chunks of Parmesan cheese and slivers of Proscuitto de Parma wrapped around thin sticks of crispy bread.

For the serial outdoor adventurer, finding ways to ramp up your African bush experience is an endless obsession. To this end, a Zambezi Queen river safari is a revelation that delivers an entirely new perspective into a water world of creatures great and small. A thrilling prospect for even the most seasoned of travelers.
Houseboat travel is coming in hot. A genteel way to go and favored by those partial to laid-back getaways in more intimate situations, the Zambezi Queen has reigned supreme in Chobe for nearly two decades. Most passengers opt to fly into Victoria Falls, spend a night at Mbano Manor Lodge and shuttle from there, passing through various checkpoints before
ending up at the diminutive Namibian Immigration Office. A Mantis Collection representative is on hand at all times to assist with arrangements - a great reassurance - and once formalities are out the way, you’re escorted to the pier, whisked across the water and warmly welcomed on board your luxury floating hotel. After orientation, it’s bon voyage and the cruise begins.
Four stories high and 42 meters long the Queen cuts an elegant figure against the horizon and her new look after a recent makeover is top drawer. Décor is a conflation of European and African elements incorporating artisanal leatherwork and handcrafted rattan furniture, and the layout enables a seamless flow between the interior
and exterior. Color palettes are earthy, and the overarching feel is spacious and uncluttered, a design coup when tasked with sprucing up compact living areas with the requisite paraphernalia. Accommodations- fourteen suites in all- are bright and modern with plush carpeting underfoot that elevates the luxe factor. King-size beds are embellished with Ardmor-inspired textiles, and bedroom windows slide wide open onto spectacular panoramas, making lie-ins irresistible. Nature is the omnipresent center of attention and is never upstaged.
The uppermost level serves as the communal hub, configured to ensure optimal game viewing. Enclosed by floorto-ceiling glass, this is where you’ll find the bar, reading nooks, dining tables and lounges that foster good conversation. Two viewing decks at the bow and stern bookend this social nucleus - one with a

The Zambezi Queen, skippered by Captain John Mulenamaswe since 2013, does a slow sail up and down a 25-kilometer strip on the Chobe. The river forms a natural boundary in a locale between Namibia and northern Botswana, edging onto the Caprivi Strip and adjacent to the Chobe National Park. In the interest of preserving the delicate ecosystem, every effort has been made to tread lightly with lowemission generators, solar heating systems, the use of energy-saving lights and an eight-stage water filtration system. Jet propulsion replaces traditional propellers and no anchors
are used, ensuring no harm comes to the riverbed, fauna or flora.
Like a series of moving tableaux, each setting differs as you sail and moor, the outlook influenced by the wind and current. In no time, it feels like you’ve bonded with the natural world, and visions like kingfishers in free fall or perhaps a lone lioness padding along the shore are deeply impacting. A smorgasbord of species is at your fingertips year-round and with no competing nautical traffic, you practically have it all to yourself. It’s a stark contrast to the action in the national park across
the bay where vehicles jostle for glimpses of the very same treasures.
As activities go, village visits offer a chance to learn more about tribal culture, with catch-and-release fishing, photography, and bird and game watching being significant drawing cards. It’s good to note that May to October sees the greatest concentration of animals in the region and November onwards is when the summer migration flocks arrive.
Tender boats are at your disposal twice daily with the first expedition heading out at golden hour. The astute guide quickly spots the early risers- egrets, storks, skimmers and herons, oblivious to the band of onlookers. Observing a group of juvenile elephants at close range, noisily snacking on bushels of aquatic grasses remains a high point. You’re near enough to hear their rumble of communication and see the road map of wrinkles on their leathery hides. Even as the rangers are cognizant of maintaining a respectful distance, the herd is aware of the visitors and remains unphased, going about their business without fuss. The advantage of being in such a small, quiet vessel is the access to narrow channels, flooded islands and other micro-habitats that are absolutely exquisite. Imagine the joy of drifting in a grove of lilac and white water lilies as African Jacanas tip-toe daintily from pad to pad and whitefronted bee-eaters dart among the trees while fish eagles call out mournfully high above an unforgettable memory. Twilight brings picture-perfect silhouettes; the nocturnal soundscape is peppered with frog song and the sounds of elephants sloshing about in the shallows. It is the stuff of dreams.
While creating a palace of memories for their guests is front of mind, the Mantis commitment to team and community is paramount. The White Rabbit Family, a dynamic conglomerate of around forty restaurants and counting, has always been a hotbed of ideation. Small wonder since it is helmed by concept guru-come-entrepreneur Boris Zarkov and chef supremo Vladimir Mukhin, two maverick outthe-box thinkers who thrive on nonconformism and whose mastery of minutiae is evident across their suite of establishments. Located in Russia, Kazakhstan, Turkey and now the United Arab Emirates, each venue is an ode to high style and polished professionalism, traits that snagged them 13th place in 2019 on the World’s 50 Best for the White Rabbit and Selfie in Moscow, and Michelin stars for the same, plus Sakhalin, in 2022.
Adding to a string of more recent successes, is Krasota in Dubai, the Family’s first foray into the UAE that opened just over a year ago. Meaning ‘beauty’ in Russian, it is a dynamic venture between Zarkov, Mukhin and digital artist Anton Nenashev. Enter a pedigreed troika that delivers on the thrill factor and gifts diners with a night of next level epicurean excellence and high-octane entertainment. Between them, they have conjured a conflation of art, AI and haute cuisine, a seven-course gastro theatre extravaganza paired with heavenly bonsai morsels, a multisensory smorgasbord that ferries tastebuds down a rabbit hole of hedonistic pleasure.
Two shows make up the Krasota repertoire. The debut production circa 2023 was Imaginary Art, joined soon after by Imaginary Future, a 3D cinematic odyssey of futuristic perspectives that spotlight humanity’s evolution. With supreme skill Nenashev deploys spectacular video content at twice the IMAX resolution, and it’s wildly impressive. Selected from a virtual reality pool of close to two hundred different possibilities, each theme plays out across a curved wall that encircles diners. While what is observed might be mere supposition, scenes feel strangely familiar and relevant, considering the way we do life these days.
There is a lot to process as the night progresses. From the lobby of The Address, guests are ushered through a gigantic doorway into a svelte, softly lit reception area where exquisite aperitifs are consumed mid divine décor and Nathalie Ziegler Pascua’s attention-grabbing pièce de la resistance-a fragmented glass chandelier suspended above the bar . It’s the perfect place to gird your imagination ahead of ‘act
two’ that unfolds in auditorium next door, a dimly lit space anchored by a twenty-seater round table and control panel that hangs above it like a miniature mothership. Ten waiters are in attendance, appearing in single file to deliver each course and hovering in readiness until the head garçon gives the cue. Staff across the White Rabbit Family kingdom are a highly valued asset and service is on point from prelude to finale. They are a slick, informed and well trained squad and their flamboyant, glowing costumes are a talking point unto themselves.

and the man credited with its resuscitation and reinterpretation. A fifth generation cook with an appetite for experimentation (that was so well captured in Netflix’s Chef’s Table series) he straddles past, present and future with flair and ingenuity. Helming his Dubai kitchen crew is Executive Chef Dmitry Vinokurov. Only 30 and tasked with the honor of fulfilling Mukhin’s brief, close communication with his mentor is paramount together with a keen focus on the Krasota vision. “We frequently discuss new ideas, seasonal changes and how to keep things fresh and exciting for our guests,” Mukhin explains. On sourcing top notch produce which is scant in the region, the team relies on trusted suppliers from around the world. True to form, the WRF is also committed to supporting local producers as much as possible, working with local farms that use innovative growing techniques such as hydroponics to provide fresh
herbs, greens and other ingredients. “This approach not only ensures the high quality of our ingredients but also allows us to incorporate a sense of place into our dishes, blending global flavors with a local touch,” he says.
Crafting the Krasota menu required an understanding of the Dubai audience and their preferences, while staying true to the concept of blending art, culture and cuisine. “We started by identifying key ingredients available in the UAE, exploring how they could be integrated with our Russian culinary roots. Then, we focused on building a narrative that each dish would tell, to complete the immersive experience. Collaboration was key — our chefs brainstormed ideas, experimented with flavors and refined dishes through tastings that happen on a regular basis.” They also considered the visual and sensory aspects, ensuring that every dish aligned with the overall theme
and atmosphere of the restaurant.” The result is a menu that balances innovation with tradition, tailored to resonate with guests’ fancy. “I always aim to offer our diners emotions, satisfaction and happy moments,” he adds and by all accounts, it’s a fait accompli.
It’s not uncommon to feel a range of emotions as senses go into overdrive. There is so much to absorb as eyes move from plate to projection while fingers curl around textured, handcrafted cutlery and hands brush lightly across the tablecloth, activating a shimmer of flitting lights that come to life under your palm. It’s a lot and it’s exhilarating. The narratives that influence the menu are layered and complex too. ‘Space’ takes inspiration from iconic films like Star Wars and Solaris, capturing humanity’s enduring fascination with the cosmos and the excitement of exploring new frontiers and ‘Chimera’ enchants with the vision of lush, fantastical forests, symbolizing humanity’s positive efforts to balance consumerism with a commitment to preserving the environment while ‘Underwater envisions the adventurous spirit of amphibious humans exploring new habitats beneath the oceans, a creative response to Earth’s depleted resources. ‘Cyberpunk’ presents the bold emergence of a technologically enhanced humanity, pushing the limits of what’s possible and expanding our understanding of life itself, while ‘Apocalypse’ offers a contemplative perspective, reminding us of the importance of maintaining human connection in a device-driven world. ‘AI’ delves into the exciting frontier of artificial intelligence, where humanity navigates the ethical challenges of coexisting with super-intelligent beings and the evening concludes on a hopeful note with ‘Eternal Life’, a serene segment where humanity steps out of the urban matrix, finding a utopian balance between nature, technology and personal fulfillment. There is even a deep fake video of the late Paul Bocuse, an addition suggested by Vladimir. Nenashev has cleverly brought his culinary spirit into the restaurant using artificial intelligence to recreate his iconic dishes -like the truffle and foie gras
soup- tailored to guests’ preferences and this is Mukhin’s way of honoring him. “Bocuse was a true revolutionary in the world of French cuisine and an inspiration to me. He didn’t just preserve culinary traditions but transformed them, turning his native recipes into a global cultural treasure. His work has had a profound impact on countless chefs, myself included, and it was after reading one of his books that I was inspired to embark on my own journey to reboot Russian cuisine. His influence on me is deeply personal which is why he holds a special place in Krasota.”

TO DIVE THE GREAT BLUE HOLE: WORTH IT, OR NOT?

Sitting about 88 kilometers (55 miles) off mainland Belize is one of the most renowned dive sites in the world: the Great Blue Hole. This natural marvel is a marine sinkhole that plunges 125 meters (410 feet) deep compared to the neighboring depth of 5 meters (15 feet) and is entirely surrounded by a vibrant reef. In fact, the drastic difference in depth creates such a stark contrast in the water’s color that the hole can be seen even from space! It’s a sight that, once seen, is unforgettable. For many, this visual wonder prompts the inevitable question, “What’s down there?” To uncover the mysteries of the Great Blue Hole, we spent two weeks living along the Belizean coastline, engaging with dive experts, conservationists, and scientists.
Led by Tara Scarbrough, Chief Resilience Officer with the Coastal Zone Management Authority & Institute, we were in expert hands. Tara, a seasoned
dive professional and conservationist, has extensive experience diving this reef system. And for the most part, knows all the dive operators, stakeholders and scientists from Belize that manage what’s sitting right off their shorelines. She explained that the Great Blue Hole is essentially an oceanic sinkhole, unique because it extends below sea level and contains a mix of fresh and saltwater influenced by tides. This contrasts with typical sinkholes, which are often freshwater and seen on land.
Part of the second largest double barrier reef system in the world, the blue hole offers some of the best diving experiences in the Caribbean. It’s closely monitored and protected by the Belize Audubon Society as the onsite co-manager, and the National Biodiversity Office of the Government of Belize. In 1996, UNESCO declared it a World Heritage Site, along with six other

protected areas in the country: Bacalar Chico National Park and Marine Reserve, Half Moon Caye Natural Monument, South Water Caye Marine Reserve, Glover’s Reef Marine Reserve, Laughing Bird Caye National Park, Sapodilla Cayes Marine Reserve, and, of course, the Blue Hole Natural Monument. These areas collectively make up 12% of the entire reef system, ensuring its preservation and the sustainability of its diverse marine life.
Other notable blue holes around the world include Dean’s Blue Hole in the Bahamas (200 meters / 660 feet), the Lost Blue Hole in the Bahamas (67 meters / 220 feet), and the Dahab Blue Hole in Egypt (120 meters / 393 feet). But these aren’t even the deepest ones out there. In fact, the deepest blue holes aren’t typically considered for recreational divers due to being sanctioned off for scientific research, behind hard to access or being just downright unsafe.
The Dragon Hole in South China reaches 301 meters (987 feet) and Taam Ja’ was recently announced as the world’s deepest blue hole, sitting at 450 meters (1,476 feet) in Chetumal, Mexico. Unlike the Great Blue Hole that’s visible from space, Taam Ja’ is nearly impossible to see from above, unless the conditions in the rough Chetumal Bay are perfect—which is a rarity. We were fortunate enough to work alongside the fishermen and the research team that discovered this hole. And together, we all were some of the first people in the world to dive this site— piquing our curiosity about the natural world and the extensive cavernous systems they typically connect with.
These cave systems, now submerged, were formed centuries ago when they were above sea level. This is particularly true for the cenotes on the Yucatan Peninsula, which are freshwater sinkholes formed by collapsed cave ceilings. The Great Blue Hole, shaped during the last ice age, was initially a series of caverns created by water filtering through rock, forming stalactites and stalagmites. As the ice age ended and polar ice caps receded, these caverns collapsed, forming the deep hole. The tropical Caribbean waters filled this void, and over time, limestone fragments settled, creating the underwater landscape we see today.
In 1971, Jacques Cousteau and his crew on the Calypso brought the Great Blue Hole to the public’s attention, sparking a surge in dive tourism in the area. It’s reported that Cousteau and his team used dynamite to widen the coral reef surrounding the Great Blue Hole, allowing their ship to navigate through and into the hole itself. During Cousteau’s era, conservation often took a backseat to exploration and discovery. Although Cousteau later condemned dynamite fishing, he did use these types of explosives for scientific exploration. Despite this, Cousteau made significant contributions to our understanding of this natural wonder, notably determining that the cavernous system was above sea level approximately 153,000 years ago.
In 2018, Fabien Cousteau, continuing his family’s legacy, returned to the Great Blue Hole with Sir Richard Branson to further explore and understand this geological hotspot. They embarked on a pioneering expedition using the Stingray 500, a three-person submarine, to create a 3D map of the Blue Hole’s interior. This groundbreaking mission led to several significant discoveries that were not possible during the original Cousteau explorations. One of the most remarkable findings was the presence of stalactites near the bottom of the hole, highlighting the cavern’s ancient origin above sea level. At a depth of around 92 meters (300 feet), where the environment is void of oxygen and sunlight, they utilized high-resolution sonar to map the abyssal darkness. This deep-sea exploration provided unprecedented insights into the Great Blue Hole, and similar insights are expected from future explorations of Taam Ja’, which has yet to be mapped in such a manner.
Despite its awe-inspiring nature, some still question if diving the Great Blue Hole is worth it. The online debate, often summarized by the popular search query “Is diving the Blue Hole worth it?”, focuses on the experience’s cost and duration. The trip requires a substantial dive team,
a full boat of passengers, and enough fuel for the round trip, making it one of the pricier single-day dives out there. Additionally, the dive itself reaches depths of 40 meters (125 feet) and lasts around 30-40 minutes, with only about 10-12 minutes spent at the deepest point. Some divers feel that the limited marine life and brief dive duration do not justify the expense.
To us, this sentiment was shocking. Any dive that allows you to witness earth’s geological formation over eons is awe-inspiring. The stalactites hanging from the overhangs are extraordinary, and if you’re incredibly fortunate, you might see hordes of sharks navigating the depths—something that we got to witness firsthand ourselves. Tara has encountered fleets of these hammerheads multiple times! However, those considering this experience should realize that seeing such a unique place on earth in person is a rare privilege. This site is not accessible to everyone.
Many argue that the true highlights of the full-day excursion to the Great Blue Hole are actually the famed dive sites around Lighthouse Reef Atoll. As the furthest of Belize’s atolls, it encompasses several cayes, including Sandbore, Northern, Half Moon, Long, and Hat. Among these, the most renowned and frequently visited dive sites are Half Moon Caye Wall and Long Caye Aquarium. The reviews and chatter online are justified—these two sites are utterly breathtaking, especially Half Moon Caye Wall, which is often deemed some of the best scuba diving in the world.
But the Caribbean was heavily impacted by the stony coral tissue loss disease (SCTLD) around the time of COVID-19. To best describe SCTLD, imagine the ocean experiencing its very own pandemic, rapidly decimating coral colonies within weeks or even days. This is where the Long and Half Moon Cayes prove to be unique once again. They
were minimally impacted by SCTLD, leaving us able to witness these rare dive sites in pristine condition, comparatively.
But this unique opportunity to explore the healthier parts of the barrier reef was only possible by taking a full-day voyage to the Great Blue Hole, making the trek that much more worth it. Surrounded by sharks and massive groupers weaving through the coral, we also encountered a remarkable loggerhead turtle, estimated to be at least a century old. We couldn’t help but imagine how much transformation this creature had witnessed over their long and mysterious life.
Seeing this turtle felt like a sign—a testament to the effort required to reach this reef paradise. Scuba diving these sites in their current condition makes us realize just how fortunate we are. Although we will never witness the same level of marine life that Jacques Cousteau encountered during his voyage to the Great Blue Hole, we are blessed that the country of Belize, with its dedicated marine management teams, have tirelessly worked to protect these sites with the future in mind.
The moral of this story is simple: as a scuba diver visiting Belize, experiencing the Great Blue Hole almost feels like a MUST for those who can. Embrace the moment, appreciate the opportunity, and share your love for this unique site with the divers you encounter along the way. Despite its notoriety, the Great Blue Hole remains a mysterious and remote place on the planet, making every second of your time diving here worth it.
