GO BACK IN TIME: THE SARUQ AL HADID MUSEUM In the historic Shindagha Heritage District is a museum where you can see some of the UAE’s most exciting archeological discoveries, from bronze artefacts to animal skeletons. Using state-of-the-art technology, in 2002 experts uncovered a remote desert site that was a centre for metalworking three thousand years ago, and today the uncovered objects are on view to the public for the first time, offering insights into the region during the Iron Age. Visitors can tour the museum, which is housed in an important architectural building, built with traditional techniques and materials in 1928, and was once owned by Sheikh Juma bin Maktoum Al Maktoum. saruqalhadid.ae

VIDA DOWNTOWN With stylish staff, some of Downtown’s best restaurants and lots of light and bright spaces, VIDA is the go-to hotel for hip travellers. DUBAI AQUARIUM You might not expect to find penguins, otters and a King Croc just metres from designer stores, but Dubai Aquarium is rather special. The 10-million-litre tank is home to thousands of aquatic animals representing more than 140 species, including sharks and rays, and you can see them all by walking through the 48-metre tunnel. Want to get closer? There’s also a glass-bottom boat, encounter experiences, and the chance to dive in the tank itself. Located in Burj Plaza it offers a fun experience for riders, as they whizz for 19 metres before landing on a soft mat. And don’t be put off by the fact it’s metal – innovative technology ensures that it’s cool all year round. Open from 4pm until 1am. THE DUBAI TROLLEY The pretty San Franciscostyle tram will soon run for seven kilometres along Mohammed Bin Rashid Boulevard and around surrounding areas, taking in Burj Khalifa, Souk Al Bahar, The Dubai Fountain, The Dubai Mall and The Opera District. For now, it spans just over one kilometre and you can hitch a ride between The Dubai Mall and Vida Downtown Dubai. emaar.com

The Tower FUTURE FOCUS:
Gazing at Dubai’s skyline, the Burj Khalifa dominates, standing proud above its neighbours, but recent announcements suggest that it will have to give up its crown as the tallest building in town… Construction on The Tower has already begun, with developer Emaar revealing that it will cost Dhs3.7 billion to complete and once finished it will be 100 metres taller than the Burj Khalifa, clocking in at a minimum of 928 metres. The new tower will, in the words of H.H Sheikh Mohammed bin Rashid Al Maktoum, ruler of Dubai and Vice President of the UAE, “be as great as the Burj Khalifa and Eiffel Tower”. Inspired by Islamic architecture and a blooming lily, The Tower will have a delicate mesh-like structure,

and will include a boutique hotel, restaurants, gardens, function halls and observation decks, with the team confirming that visitors will be able to go to the very top of the tower and stand on a 360 degree viewing platform. Located near Ras Al Khor, The Tower is due for completion in 2020, and will be the star of a new suburb that will feature eight million square feet of retail space, 39,000 apartments and homes, 22 hotels and another project called Dubai Twin Towers, plus a 4.5km Creek Boardwalk close to the wildlife sanctuary.

#MyDubai Life coach, healing practitioner and event organiser Julie-Ann Odell has got Dubai dancing to its very own rhythm among the desert dunes. As the founder of Dubai Drums, this is her #MyDubai WHAT IS DUBAI DRUMS? Dubai Drums comprises a multinational team of professional drummers, hundreds of drums and you – tourists, residents, corporate groups, friends and children. We get together and, before you know it, we’re all drumming in harmony. Complete strangers all become one. Drumming empowers people and encourages them to unite and collaborate. But most of all, it’s great fun. HOW DID IT START? One of my passions in life is anything holistic, I’m a co-active life coach, leadership coach, Reiki master and NLP practitioner. Drumming is an incredibly therapeutic practise that releases endorphins, encourages relaxation and boosts the immune system. Back in 2002 I went to Africa and learnt how to drum. I started recruiting drummers from all over the world and brought them to Dubai. From there Dubai Drums was born. WHERE CAN I DO IT? We drum at community events all over the city. At markets, at schools, at festivals and within businesses – it’s great for team building. We even performed at the 2014 Dubai Jazz Festival as the lead-in act for Santana. We had 21 percussionists on stage for 45 minutes. Santana chose us – it was such a compliment and one of my proudest moments. We run djembe hand drum classes each Monday at DUCTAC (Dubai Community Theatre and Arts Centre) at Mall of the Emirates and a family drumming class, where toddlers are welcome, every Saturday at our Urban Tribe Studio in Al Quoz. Our most popular sessions take place each lunar month to coincide with the Full Moon, when hundreds

We’d head to Al Fahidi beside the creek, visit the Sheikh Mohammed Centre for Cultural Understanding, stroll through the souks and ride an abra. Then we’d head to the Burj Al Arab for afternoon tea and then up the Burj Khalifa to take in the views from At The Top. Dubai has so many places to eat. Visitors always love Souk Madinat – it combines shopping and eating in such an unforgettable setting. But my favourite places to eat tend to be the lesser-known eateries where the locals hang out, particularly around Deira and Bur Dubai. Our Full Moon Desert Drumming Events take place from October to the end of May at the Al-Awir Desert Camp run by Gulf Ventures. Hundreds of people join us. We all have a desert barbecue, kids play on the rolling sand dunes and everyone drums – old and young. The atmosphere is always so jovial; it’s like a mini festival with all ages and nationalities. One time we were joined by four generations of one family from the great grandmother in her 90s to a 40-day old baby. YOU’VE BEEN IN DUBAI FOR OVER 22 YEARS, HOW’S IT CHANGED? When I first got to Dubai, the majority of what’s here now didn’t exist. It was all desert. Back then people would say “Where’s Dubai?” now it’s a household name and it’s on everyone’s bucket list. The pace of change has been phenomenal. Much of that is thanks to Dubai’s entrepreneurial spirit. It has a real ‘can-do’ attitude – that certainly rubbed off on me and gave me the courage to set up Dubai Drums. Today Dubai is a one-stop entertainment shop. 15

Pitch perfect With Dubai finally boasting a stage fit to host worldrenowned performances, such as Les Miserables coming to the emirate in November, we take our seats with Chief Executive Jasper Hope to get the low-down Having spent seven years heading up London’s Royal Albert Hall, Jasper Hope is well versed in the arena of world-class entertainment. Now at the helm of the emirate’s Dubai Opera he talks of his over whelming excitement about his job, the jealousy that his peers are suffering and his new-found love for the city. What does it mean to Dubai to have Dubai Opera? What’s all the fuss about? Dubai Opera is a stunning, iconic building, beautifully designed inside and out, but it’s what happens on stage that is so important. It represents a sea change in what audiences here in Dubai can expect. Up until now there have been other shows, but nothing that compares to the theatrical experience seen in the other great cities around the world. Dubai has had opportunities to bring big shows to the emirate in the past, but it just hasn’t had the venue – until now.

It’s been a long time in the making, so tell us about the design? What’s it like? Its design is representative of an Arabian dhow, which is so significant to the heritage of the emirate. Yet, it’s very contemporary. Outside is glass, the inner hull and auditorium is clad in dark wood. The foyer is Italian marble and etched into it are navigation lines – the longitude and latitude lines on an old nautical map – and they form a fantastic pattern in the public foyer. As you walk through the main entrance there’s a fantastic contemporary chandelier. The best way to describe it is to say it’s like bubbles from a fish or a pearl diver floating to the surface – again another design that conjures up the maritime heritage on which Dubai so heavily relied. So what are the best seats in the house? The thing about Dubai Opera is that it’s extraordinarily intimate. Even if you’re sitting in the very back row of the top tier in the far corner – traditionally the 'worst' seat in the house – you’re still only about 35m from the stage, so you can still see the faces clearly, and the acoustics are such that you can hear perfectly. Tell us about the programme and what we can expect? You can expect to see some of the greatest and best productions in the world. Placido Domingo was our opening act – he’s one of the most acclaimed opera singers out there. And then of course we have Cameron Mackintosh bringing Les Miserables 20
"You can expect to see some of the greatest and best productions in the world." to Dubai in November. This is one of the longestrunning stage musicals in the history of theatre. And, of course, he will update and adapt the show and choose the cast to suit the Dubai audience. We’ve got ballet – and not just classical, but flamenco and contemporary dance; opera, orchestral performances, comedy and even magic. At Christmas we’ve got The Nutcracker On Ice coming, combining opera, music, dance, acting, fire, stunning costumes and singing all on ice. Again it’s thanks to the technical capabilities of the venue that we are able to build an indoor ice arena in the auditorium on stage very quickly. At the end of September we have got the magic show Impossible coming. This is unlike anything else on the programme. I saw it in London last summer and was blown away, and thought we have to have this. So how do you ensure the programme appeals to audiences here in Dubai? Since moving to the emirate I’ve been struck by how dynamic and cosmopolitan this city is; how many different

And then of course I’m not just catering to Dubai residents. Dubai is one of the world’s most popular tourist destinations and coming to a show at Dubai Opera will be an integral part of many people’s holiday. I need to ensure that our programme meets all those different demands and structure the programme to suit the breath of audience. So variety is key. What’s been the reaction? Well, the fact that the opening act by Placido Domingo sold out in just three hours of the tickets going on sale says it all. The reaction has been overwhelming and not just from the UAE but from the wider region, Europe and even America. And what does Dubai Opera mean to you? Well, of course it’s a great opportunity to be involved in a project from the very start – even before it’s been built. I’ve been here in Dubai for over two years and I’ve watched the building grow. I know the building so well. I’m part of it and it’s part of me now. And of course I am incredibly proud to be part of such a cutting edge venue. Dubai Opera is truly state-of-theart – from the lighting to its ability to change from one style to another and the equipment that can be built into the design is phenomenal. We have taken advantage of the very best that there is. My peers in other facilities around the world are seriously jealous about the capabilities of Dubai Opera. LA PERLE Prepare to be amazed. Created by the founding father of the iconic Cirque du Soleil, Franco Dragone, comes La Perle – Dubai’s first aqua-based show. With the stage being a gigantic pool holding 2.5million litres of water, watch daredevil acrobats and artists dive from 35-metres high, swing at speeds of four metres per second and generally wow the crowds as they perform death-defying aerial and aquatic tricks. Even Dragone himself says La Perle will be the most technically advanced theatre production that he has ever produced. Permanently based in Dubai, shows will take place in a 1,300-seater theatre within Al Habtoor City, boasting more than 450 shows per year. Ticket prices start from Dh399. EMIRATES AIRLINE DUBAI JAZZ FESTIVAL The 15th edition of the Emirates Airline Dubai Jazz Festival is taking place from 22 to 24 February 2017. Not to mention erupting volcanoes, 69 state-of-the-art breathing dinosaurs, hair-raising rollercoasters, a haunted hotel and exhilarating theatre shows? The answer: IMG Worlds of Adventure, of course. Under a cavernous 1.5 million square foot roof, just off Dubai’s E311 arterial highway, lies not just one, but four distinct zones of unforgettable adventures. Yes, the long-awaited “world’s largest indoor theme park” is finally open and in doing so firmly cements Dubai’s standing as THE family holiday destination of choice – all year around. It’s a race against time to set off on a safari (in your Land Rover-like carriages) to find the eggs of near extinct dinosaurs and save the species. FEAR FACTOR: Nice and low. SPIDER-MAN DOC OCK’S REVENGE ZONE: Marvel EXPERIENCE: There are two roller coasters on this track – red for Spider-Man and green for Doctor Octopus. The carriages spin on both as you’re whizzed through the New York skyline and plunged into a dark tunnel as the battle ensues. FEAR FACTOR: This is one hell of a dizzy ride, so hold onto your hats. HEIGHT RESTRICTIONS: 1.05m accompanied by adult, 1.20m alone.
THOR THUNDER SPIN ZONE: Marvel EXPERIENCE: Be prepared to be spun like a chicken on a rotisserie. What’s more, you’ll move up and down at the same time while water jets tease you from below. You’ll be stuck firmly to your seat (dangling upside down at times) as Thor, the Mighty Avenger, attempts to rescue you from the clutches of Loki, God of Mischief. FEAR FACTOR: High. Only for the adventurous. And best to let your dinner go down before taking your turn.
HEIGHT RESTRICTIONS: 1.40m. Maximum height is 1.95m THE VELOCIRAPTOR ZONE: Lost Valley-Dinosaur Adventure EXPERIENCE: Four loops of unadulterated speed. You’ll blast off on this 1.1km rollercoaster propelled at up to speeds of 100km/h in 2.5 seconds across prehistoric jungles and then outside across the desert. FEAR FACTOR: High. For adrenaline junkies only. HEIGHT RESTRICTIONS: 1.3m and above.
PREDATOR ZONE: Lost Valley-Dinosaur Adventure EXPERIENCE: After a steep incline, be prepared to fall – and when we say fall, we mean vertically. This is one – if not the – sharpest drop tracks in the region. Your heart will plummet faster than the coaster. FEAR FACTOR: High. This is for die-hard thrill seekers. IMG Worlds of Adventure is the brainchild of the Galadari family. Brothers Ilyas and Mustafa Galadari to be precise – and hence the acronym IMG. For this local family, whose generational entrepreneurial spirit has made them one of the most prominent families in the emirate, IMG Worlds of Adventure is the jewel in their business portfolio. There aren’t many families out there who can say they own a theme park, especially one that has teamed up with two of the world’s biggest entertainment broadcasters. These brothers have had a huge impact on shaping this park. It all started with the idea of a dinosaur park – and from there Cartoon Network and Marvel joined. Just to demonstrate the extent of their passionate approach, the brothers were hands on every step of the way during the development of the Hulk Epsilion 3D Ride, working closely with designers. This bespoke, first of its kind in the world, ride sees you fully immersed in a battle between Hulk and his nemesis, The Leader. Completely surrounded by 3D projection screen, riders cannot possibly capture all the action in one go – you’ll be queuing up for more as soon as you’ve got off. With rigorous health and safety regulations to adhere to, building a theme park from scratch is obviously no small feat. Yet the Galadaris are already preparing for more. Behind the scenes, built into the current structure, are four enormous empty spaces waiting in the wings for expansion. The park is futureproofed, and what we see today is just the start of the Adventures to come.

Food on the move There’s been a revolution on the streets of Dubai – a food revolution. Now, thanks to mobile kitchens, the city’s budding chefs are cooking up a storm kerbside. We take to the streets to see what’s cooking
Dubai has a brand new ingredient to add to its menu – food trucks. Devised and run by local entrepreneurs – as opposed to international brands – these mobile kitchens have shaken up the food scene in the city, offering a casual, novel, cheaper and fun alternative to the plethora of restaurants for which Dubai is already renowned. While the concept of mobile food stalls may be common on the streets of, for example, New York or London, in Dubai it’s still very much a novelty – and a tasty one at that. Often dishing out their specialty dishes at Dubai’s many alfresco events, such as the Ripe Markets or sporting events like the Dubai Rugby Sevens or the DP World Tour Championships, you need to keep tabs on the trucks on social media to discover where they’re next dishing up. We take to the streets to see what’s cooking.
GOBAI What’s cooking: Bringing the flavours of India’s southern state of Goa to the streets of Dubai (GO + bai = GObai. Get it?). Describing their fare on twitter as “a mashup of insanely foodtastic eats inspired by the Goan streets” expect a variety of curries from lamb vindaloo to chicken curry and inventive burgers, all served up in either a taco or paratha. Particularly commendable is the fact that GObai uses biodegradable packaging, as well as other carbon footprint-friendly kitchen practices. You could say that this is ‘posh nosh’ with the likes of its signature Ghaf Prawn Cocktail and ‘Posh Fish Finger Sandwich’ topping the menu. Even the hot dogs have an upmarket twist – the beef hot dog comes with avocado. Our order: It’s messy but we love the mussels and chips. SALT What’s cooking: This was one of the first mobile food vans that really got everyone’s attention a few years back and the idea of finding their location on Instagram was a novel marketing approach. The silver retro truck serves up gourmet burgers; it’s not an extensive menu but what’s on it is delicious. It seems to have berthed up in a permanent spot beside Kite Beach now providing seating (well, upturned wooden crates) placed beside the Jumeirah Corniche overlooking the beach. It’s made going out for a burger a real treat – making residents feel like tourists, and tourists feel like residents in the know. CALLE TACOS What’s cooking: As it says on the (translated) label: ‘street tacos’. Taking its inspiration from LA’s Mexican food culture, expect tacos (of course), nachos, burritos and quesadillas. The bright orange and yellow truck conjurs up the essence of Mexico, while the added injection of painted palm trees and a caravan of camels reminds you that this is a Dubai-take on tacos. Apparently the salsas and sauces are the secret family recipes from the owners’ hometowns of Jalisco and Distrito Federal in Mexico. Our order: You can’t beat the California buritto – a flour tortilla, with Monterey jack cheese, cheddar cheese, pico de gallo guacamole with a chicken, beef or vegetarian filling – served with fries. This is a gathering on the lawns of Emirates Golf Club every other Saturday of Dubai’s favourite food trucks serving guests who picnic under their allotted canopies on the grass. It’s a relaxed, family affair. Turn up at noon for the ‘brunch’ where you’ll pay Dhs285 for unlimited dishes. Alternatively, free entry starts at 3pm when the ‘Food Truck Jam’ begins and local musicians perform while you pay for what you eat. It’s the brainchild of Alex Teodoresco who set out on a mission to create a platform for Dubai’s food truck entrepreneurs and the city’s food-loving community. “These events are raw, unscripted and authentic,” he says. “They’re a perfect way to chill out at the end of the weekend; to get out of the shopping malls and to appreciate great, homemade food. “Chances are you’ll be served by the owner of the food truck who is probably cooking the food too – so you’re really supporting these hard-working, passionate entrepreneurs. “Street food is so much more than great food. It’s about sharing and being relaxed, trying new tastes, celebrating the different cultures of the city all on a plate,” says Alex. Dubai will be celebrating the food truck phenomenon once again at the 2017 Dubai Food Festival when it repeats the Eat the World event. For one weekend of the Festival, food trucks from the UK (many being award winners and finalists from the British Street Food Awards) will arrive and set up their kitchens in Dubai’s Burj Park. Here they’ll be joined by Dubai’s home-grown food trucks and together they’ll cook up a street food storm, all washed down with live entertainment. much that they decided to keep it on display at d3 later. How did your passion start? I have always been an artist. I don’t think I know how to see the world or how to relate to the world if I wasn’t making something. I’m messy. I’m restless. In terms of a formal "finding my passion", I came across a glassblowing factory in India as a design student when I was just 18 years old. I fell head over heels in love with the glow and fluidity of glass as a creative medium. I decided then and there that I needed to learn about this fabulously seductive material. And here I am.

During the inaugural Dubai Design Week held in 2015, Anjali Srinivasan was spotted by Austrian crystal giant Swarovski and was named one of the Swarovski Designers of the Future. We catch up with the Dubai-based designer who is the director of the ChoChoMa Studios – the UAE’s only artist-run handcrafted glass-making enterprise Congratulations Anjali, how did you feel when you were recognised by Swarovski and what does this mean to you? Thank you. It was certainly a pleasant surprise. It has meant a lot particularly because Swarovski then went on to commission me to create a new, significantly innovative piece, collaboratively with the Swarovski's expert team. It means my practice can go a step further in the real world.

What pieces are you most proud of? The breathing glass blob. It’s a silvered blown object and as you walk up to it the glass reacts to the electricity in your body and it expands. You have travelled, worked and studied all over the world, honing and nurturing your skill. Why have you settled in Dubai? I see Dubai as being in the middle of the world map, with easy access to all places elsewhere. Dubai also has a small, young, energetic art scene that is still being explored and developed, so it’s exciting to be a part of that story and build a unique practice. Tell us about the ChoChoMa Studios? ChoChoMa Studios is my small team that designs and creates customised glass for clients. We also undertake classes and host interesting research or experimental projects. We produce special glass items such as sculptures, personal jewellery, furniture and wall art.
Can you tell us about your installation at last year’s Dubai Design Week? We made an 11fthigh arch of thin glass filaments, weighing only 17kgs, on site at the Dubai Design District (d3) in six days. And when I say ‘we’ I mean it was me, my assistants and the visitors to d3. It was crowd-

As he limbers up to take part in the DP World Tour Championship – the grand finale in the European Tour’s Race to Dubai taking place from 17 to 20 November – we catch up with Spanish golfer Rafa Cabrera-Bello This part of the world is not new to you. You’ve won the Omega Dubai Desert Classic in 2012, and you came so close to winning the DP World Tour Championship in 2014 – is 2016 going to be your victory moment on the Earth course at Jumeirah Golf Estates? Dubai has been a region I really enjoy visiting over the years. I have developed many friendships and love playing on its wonderful golf courses. Playing in Dubai reminds me of where I grew up in the Canary Islands, with palm trees and great weather. Winning the Dubai Desert Classic has been my highlight, and losing the DP World Tour Championship in 2014 was my biggest disappointment – having led that

great Championship by a few shots with a couple of holes to go. However, that is what makes sport so exciting, emotional and unpredictable. I will certainly be ready to give it my best to win the DP World Tour Championship this year. Tell us about your 2016 season so far? So far my season has been very special – I came to Dubai having finished 2nd in Qatar and was so close to winning the Dubai Desert Classic before Danny Willett holed a great putt on the final green! I then finished 11th in the Cadillac World Golf Championship (WGC) in Miami; the WGC Match Play Championship in Austin, Texas beating Rory McIIroy in the playoff for 3rd place; followed by 4th in Shell

Houston and playing in my first Masters and finishing 17th. I am currently 4th on the Race to Dubai; 26th in the World Rankings; came fifth in the Olympics, proudly representing Spain and have secured an automatic place in the 2016 European Ryder Cup. My targets for the rest of the season are to give myself chances to win a major, win a tournament, play in the Olympics and represent Europe in the Ryder Cup! How do the courses in Dubai differ from those elsewhere? The quality golf courses and facilities in Dubai are world class. The Majlis is my favourite course, the Jumeriah Golf Estates is a top facility and I train at the European Tour Performance Institute (ETPI) when I am in Dubai. I really enjoy a social game and practice with friends when I am in Dubai at JA Jebel Ali Golf Course. What’s the biggest challenge on the Earth course at Jumeirah
Golf Estates? The Earth course is a tough test from tee to green – you need to be long and very precise with your tee shots to give yourself the best approach into the greens. I love the Earth course; it suits my game and

You are known to be one of the fittest players on Tour. You are a regular visitor to the Jumeirah Golf Estates European Tour Performance Institute (ETPI), what are your thoughts on this facility? I take my fitness very seriously and I travel to many tournaments throughout the season with my trainer Emilio. I use the ETPI on a regular basis when I am in Dubai – it is a wonderful facility with great staff. In a field containing three of the world’s top four, you held

Some of my idols have won in Dubai with Seve [Ballesteros] and Ollie [Jose Maria Olazabal] and in the two years before me my friends Miguel [Angel Jiminez] and Alvaro [Quiros]. It was special to add to that Spanish heritage and it was great knowing I could win a tournament that so many top players target. Rumour has it you may be looking to spend more time in Dubai. Tell us about your love affair with the city. Dubai, particularly, is a special place for me. I have won in the Emirate so just being here brings good memories, and that obviously gets me in the right mood on the fairways. I plan to move to Dubai by the end of the year. It is perfect for my schedule as a professional golfer being close to Europe and Asia during the European winters. I love the weather, golf, great food and restaurants and, most importantly, my girlfriend lives and works in Dubai! What do you love doing here? Seeing my girlfriend (I have to say that don’t I?), meeting friends, training and going out for dinner. I love going for a steak at The Meat Co at Madinat Jumeirah – the views of the Burj Al Arab are spectacular and I love the atmosphere in the souk. Determined not to be left a golfing widow whilst on holiday in Dubai, French holidaymaker Emilie Arnold signs up for a golf lesson at Jumeirah Golf Estates’ European Tour Performance Institute (ETPI). According to Gavin Sutherland, the senior teaching professional at the ETPI, there are few places in the world that are as advanced as this golf academy. After all, it is the training ground for some of the best players in the world, many of whom head here each year to prepare for and play in the Race to Dubai, which takes place on the club’s Earth course. Considering my experience of golf extends little beyond my crazy golf childhood days beside the seaside or the odd attempt at croquet, Gavin has his work cut out for him. But surely it can’t be that hard? After ensuring I’m holding the club correctly, we start with some chipping – the aim being to get the ball airborne. Gavin points out that just as in the game of squash or tennis, I want to hit the ball with the very centre of the club’s head. Considering there’s a slight (read this as ‘massive’) size differential with that analogy, it’s safe to say that chipping is not easy. But Gavin has lots of patience, giving me pointers after each (failed) attempt on how to improve – don’t swing too high; clip the grass; not so hard… Yet he’s really encouraging, and is as delighted as me when the ball eventually makes that perfect arc into the air towards the tee. We move swiftly on to putting. I’m astounded at how hard it is to simply hit the ball into a hole just one metre away. We practise the stance; the gentle swing; and analyse the surface of the smooth, almost velvet-like grass to check if there’s even a hint of a gradient. The 45-minute lesson flies by. It’s been fun. It’s been relaxing and the scenery beautiful. Gavin has inspired me to take another lesson. Perhaps soon I’ll be tapping into the video swing analysis equipment? Setting new standards in the mid-market hotel sector, this new social hub for independent travellers sets the bar exceptionally high
Rove Downtown can simply be classified as a ‘game changer’. While the city has its fair share of mid-market hotels, this new three-star hotel breaks the mold with its innovative approach. The developers, Emaar Hospitality Group, has clearly thought about their target market – modern, savvy, cost conscious, appreciators of art, social media addicts and thoroughly independent. As such, Emaar has come up with what it bills a ‘limited service hotel’. By that they mean self check-in, self-parking, no porters, left-luggage lockers and, with its very own laundromat, guests can

For guests wanting to eat in-house, then their selfservice restaurant The Daily cooks up a selection of healthy dishes served on metal plates and eaten from long tables, ideal for sharing. The result is a buzzing, relaxed atmosphere, not unlike a busy school canteen. But what also sets Rove Downtown apart from the rest of the mid-scale options in Dubai is its location. For an average price tag of just Dhs300 for a room (which sounds even better when converted to a mere $40 per person), guests can stay in what’s dubbed the ‘Centre of Now’. That’s the name for the district that surrounds the world’s tallest tower, the Burj Khalifa, and incorporates The Dubai Mall, the dancing Dubai Fountain, Souk al Bahar and Emaar Boulevard – in other words some of Dubai’s most popular tourist attractions (and most prestigious five-star hotels, no less), all within walking distance. Connectivity to the rest of the city is also on tap thanks to the nearby metro station. All 420 rooms are identical, but some enjoy great views of the Burj Khalifa. disposable cups beside the nonbranded kettle and lack of toiletries remind you that this is a three-star, but that’s more than made up for with the comfy beds, rain shower and the quirky touches such as the hotel keycard that simply states: ‘I Can Open Doors’ and the ‘Forget Me Not’ wall art which acts as a reminder to guests before they leave their room to take their keys, wallet and phone with them.
Indeed, these quirky signs and artwork are present throughout the hotel. Interactive art encourages guests to ‘step into the picture’ and take selfies; while local artists have contributed work that highlights the emirate’s culture and heritage – including an old bicycle from Satwa that hangs on a wall in the lobby surrounded by local artwork. For those on business, Rove Downtown offers a no nonsense approach. Self-service coffee machines and rooms ready to be configured exactly as the client wishes can be booked online by the hour. The Outlaw twist at Burj Al Arab
From his Michelin-starred kitchens on the UK’s rugged Cornish coast, award-winning British chef Nathan Outlaw sets out on his first international venture when he takes control of the refurbished Al Mahara restaurant in the luxurious Jumeirah Burj Al Arab hotel You’re renowned for your seafood dishes. What can we expect on the menu at the new Al Mahara? Seafood of course, but this time celebrating a British style of cooking. What I like to do with my dishes is let the seafood shine and allow the impact to come through in the taste; I don’t like to play with the fish too much… I like to hook it and then cook it, simple and uncomplicated. Each dish on the menu has been created specifically for Burj Al Arab and the menu will be a reflection of my style of cooking, which is one of simplicity but with complex flavour combinations using local, seasonal, responsibly-sourced ingredients. Then we’ll add the ‘Outlaw’ touch. What is the Outlaw touch? A more down to earth style of hospitality, with a fun and buzzing atmosphere. I want all my front of house to be individual characters, not robots, and I want their personalities to shine through. I don’t want guests to feel like they have people constantly looking over their shoulders. The Burj Al Arab is moving with the times and they are championing this style of hospitality which is very refreshing. Why the Burj al Arab? They approached me. Initially I thought it was hoax. This is my first venture out of the UK and what an amazing property to partner with. It’s known as the best hotel in the world, but everyone is so down to earth, you don’t feel intimidated at all. Working with such an iconic brand is a once-in-a-lifetime opportunity. Tell us about the ingredients. I have to admit, the biggest concern I had was the quality of the 64
seafood, because where I’m based in Cornwall I possibly have the best seafood you can get in the world. But when I got to Dubai and saw the seafood was from where I’m from back home, I knew that quality wasn’t going to be an issue. I am always super careful with the sustainability of my fish. I’m really a stickler with this, I won’t put anything that’s not sustainable on my menus. I’ve been to the Dubai fish market and it’s amazing. I would like to look at using local ingredients in the menu in the future, as I am a big fan of supporting local businesses and products and I’d love to be able to introduce local sustainably sourced seafood. It’s definitely in the plan. What signature dishes should we look out for on the menu? My lobster risotto, something I did when I opened my first restaurant at 24 years old. I was really working on a shoestring back then in a very affluent area in Cornwall where people expected to see luxury ingredients on the menu – but I couldn’t afford them. Rather than the expensive lobsters that you could serve whole, I bought the big, odd-shaped, and thus cheaper, ones. I’d use the whole thing – no wastage at all. That dish is still one of my favourites today and still on my menu some 15 years later. Then there’s the desserts. The Middle East has a very sweet tooth, and so do the British, so I’m introducing some really typical British puddings,

such as Eton mess, sticky toffee pudding and a treacle tart. They won’t be typically traditional though, they will have the ‘Outlaw’ twist and be served with lots of theatre.
What do you think of the food scene in the city? Dubai has very much claimed its spot on the world food map – and can definitely play with the big boys. As a chef it is one of the places you want to be.

Recipe: Scallops with Hazelnut Butter and Watercress Cream Ingredients: ● 12 medium scallops Watercress Cream ● 2 sheets bronze leaf gelatin (4g each) ● A little light rapeseed oil ● 1 small white onion, peeled and finely chopped ● 2 garlic cloves, peeled, finely chopped ● 300g watercress ● 300ml double cream Hazelnut Butter ● 150g blanched hazelnuts ● 1tbsp caster sugar ● 100g unsalted butter at room temperature ● 2 tbsp chopped flat-leaf parsley ● 2 tbsp chopped chives ● Sea salt and freshly ground pepper To Finish ● Handful of watercress sprigs ● Olive oil for dressing
Method: 1. Shell and clean the scallops, removing the roes; set aside. 2. To make the watercress cream, soak the gelatin in a shallow dish of water. Heat a little oil in a medium pan and gently sweat the onion and garlic for two minutes without colouring. Add the watercress and sweat for another two minutes, then pour in the cream and let bubble for one minute. 3. Transfer the mixture to a blender. Immediately drain the gelatin leaves, squeezing out the excess water and add them to the blender. Blitz for one minute to dissolve the gelatin. Pass the mixture through a sieve into a jug and then pour into shallow soup plates. Place in the fridge for at least an hour to set. 4. For the hazelnut butter, toast the hazelnuts in a dry pan for about a minute until coloured and fragrant, sprinkling them with the sugar as they begin to colour. While still hot, blitz the hazelnuts in a food processor until finely ground. Let cool slightly. 5. While the nuts are still slightly warm, mix them with the butter and herbs and season with salt and pepper. Spoon the hazelnut butter into a sausage shape on a greaseproof sheet of paper. Cover with another sheet of greaseproof paper and roll out to the thickness of two Dirham coins together. Chill in the freezer for one hour to firm up. 6. Using a metal cutter, cut the chilled butter into rounds, the size of the scallops. Keep in the fridge until ready to use. You will have more than you need so wrap the rest and freeze for another occasion. 7. About 10 minutes before serving, remove the plates from the fridge to take the chill off the watercress cream. Heat your grill to medium and oil the grill tray. 8. Lay the scallops on the tray, season lightly with salt and grill gently for two minutes. Place a round of hazelnut butter on each one and grill gently for a further two minutes or until cooked. 9. To serve, arrange three scallops on each portion of watercress cream. Dress the handful of watercress with a little olive oil and arrange on the plates, then serve.

Camel racing
This favourite local pastime has to be seen to be believed Known as ‘ships of the desert’, camels have roamed the waves of sand dunes in Dubai since time immemorial. Once upon a time, these creatures were relied upon to transport Bedouin from oasis to oasis. Today, usurped by four-by-fours vehicles, these ‘ships’ are now used in the thrilling and traditional sport of camel racing. Today, if you head out of town, you’ll still see them lumbering across the dunes. But from October to March, if you head out to one of the camel race courses you’ll see these beloved beasts reach speeds of up to 40kms per hour as they pound along the sandy tracks cheered on by crowds of excited locals. Indeed, camel racing is one of the favourite pastimes among Emiratis – particularly sheikhs. The UAE is famed for its thoroughbred one-humped Arabian camels and today winning the race is what matters. For this truly Arabian experience, head out to the Al Marmoon Camel Racetrack for either the early morning or late afternoon starting guns. Here you cannot help but be bewildered by the excitement and chaos. With legs splayed in all directions, the camels are released from their pens and thunder along the

track, while on the sidelines a convoy of SUVs keeps up with the race, beeping their horns and cheering on their chosen camel. At the same time, manic, excitable Arabic commentary booms out of the loud speakers adding to the action-packed atmosphere. This really is a sight to behold, so don’t forget your camera.
