s we move into the Autumn of 2011 we do so with a spring in our step. Your Chamber is more active than ever and our members have an abundance of good news stories. Those with the best news stories are those who are creatively driving business development whilst providing excellent customer service and products and we have much to be proud of when it comes to energy and passion in Perthshire. Our Autumn edition of InCommerce is full of good news stories. Our feature on the recently achieved university status for Perth College UHI highlights the benefits to everyone in Perthshire. Another feature highlights the huge investment that has gone into regenerating Taymouth Castle creating a welcome addition to Perthshire’s 5* offering and creating many jobs. Another economic boost would be a successful outcome for Perth and Kinross Council’s bid for City Status which the Chamber fully supports. A key focus of the Chamber, however, is the poor availability and quality of telecommunications. A satisfactory service is required for us all to compete in the international market place that is required of us these days. cottish & Southern Energy, supported by P&K Council and Perthshire Chamber of Commerce, is organising and hosting this important engagement event on the 27th October at Perth Racecourse. The event will have a focus on how large companies through to SMEs can reduce their carbon footprint by looking at alternative travel methods to work. SSE has adopted various initiatives across their UK sites to encourage staff to use alternative means of getting to work and is keen to share it’s experiences with other businesses. Locally in Perth, SSE’s efforts have included the introduction of a car parking permit system; widening of cycle lanes in conjunction with the Council; and working in partnership with Aviva, Stagecoach Perth and the Council to enhance bus routes to encourage more staff to use the bus. The day will feature prominent speakers including SSE CEO Ian Marchant, Perth & Kinross Council Chief Executive Bernadette Malone, and Stagecoach, founder, Sir Brian Souter. To compliment this there will be workshops and a small selection of exhibitors. The workshops will be on a variety of areas and will include how to implement a cycle to work scheme; car share schemes, sustainable logistics and much more. The day will set the context of importance of travel to work / sustainable transport within the framework of carbon reduction, corporate social responsibility and the wider Scotland 2020 targets. This would also demonstrate that all different areas of business could work together in partnership within the community to tackle real geographical challenges specific to the area in the interests of carbon emissions reductions. Delegates can come along for engaging discussion and learn and share what other local businesses are doing that may save them money or make travelling easier for employees. We will shortly be contacting all businesses in Perth and Kinross with more details so keep an eye out!

Callum Walker Interiors working with Children’s Hospice Association Scotland (CHAS) Callum Walker Interiors are honoured to be working with CHAS at their children’s hospice Rachel House in Kinross. We were approached by Alison Blair of CHAS and invited to visit Rachel House with the view to furnishing an arts and crafts area that they were relocating within the hospice. Our designer, John Watson, met with Alison on site and discussed the project at length, taking note of the specific requirements to form the new area in an existing room within the hospice. The main brief was to be simplistic and functional in design, the outcome was to ensure art and craft materials were accessible to all parties using them. This was achieved by designing a bespoke area to facilitate the storage of a wide variety of art and craft supplies. The choice of colours and materials were discussed and we came to a decision fairly early in the process opting to use our German manufacturer Burger as they gave us the wood finish and the complimentary colours we had discussed. A mixture of Burger horizontal grained pearwood cherry, burgundy red and mango doors and a light coloured Getacore work surface gives a bright cheery feel to the furniture run. Knowing the work CHAS carry out with the help of their supporters and fundraisers there was no doubt in our minds we wanted to support and provide this facility with our compliments. Also donating their services to the project are local tradesmen Craig Farquharson (electrician), David Laird (plumber), Derek Addison (painter and decorator) and flooring specialist Tom Laing to ensure the project is handled from beginning to end with the love and care Rachel House deserves.

erthshire Chamber of Commerce and Perth College UHI have teamed up to deliver a series of free lectures designed to inform and inspire local businesses. Held in the College’s Brahan lecture theatre which is sponsored by the Chamber Platinum Partners, the partnership has already held a number of successful lectures. September offers a unique opportunity for businesses to attend the lecture entitled “Prospects for the UK Economy”. James McCann, Economic Adviser, Group Economics, RBS, will provide an overview of the global and UK economies with a particular emphasis on some of the economic challenges facing Scotland. RBS Group Economics provides guidance and analysis on a large range of economic issues and its team includes specialists in macroeconomic, business economics, emerging markets and research. The October lecture sees experts from Binnwaste Management outline the problems and solutions facing businesses today and in the future in terms of waste disposal. In a four-part presentation entitled “The Future is Zero Waste”, the area’s leading waste management company will detail how to combat increasing costs, comply with government targets as detailed in their Zero Waste Policy and reduce the financial and physical demands of waste disposal on your business. Members of the management team based at Binnwaste’s Glenfarg complex will talk businesses through issues such as recycling, new food disposal legislation, SDF (solid derivative fuel) and the creation of a futuristic Eco Park at Binn Farm. Every business creates waste, especially those handling food - from small boarding houses and cafes to major hotels and restaurants. Those businesses especially are encouraged to attend to learn how to throw away rubbish effectively to prevent throwing away money. These sessions provide an excellent opportunity to network with a diverse range of local business people as well as providing business advice that could be taken away and used – both very valuable outcomes from an interesting series of events.

he Best Western Queens Hotel in Perth is just one of hundreds of local businesses praying that this winter’s weather will be a little kinder than last.

Owners Symphony Hotels were one of many companies which suffered structural damage and internal flooding following one of the worst winters on record. But, as director Mike Sheffield pointed out, every misfortune presents opportunities – and a burst pipe and flooded conference room gave them the chance to carry out a refurbishment using local labour and suppliers. “The terrible winter weather was causing us problems as it was with cancelled events and bookings,” he explained, “and then things got even worse when an external waste pipe froze, burst and flooded through the ceiling into our Braemar Suite.

“The Braemar is a small private conference/function/dining suite which is very popular and well used. The damage meant a complete refit from ceiling and walls to carpeting, lights and furnishings.” And the dirty deluge into the Braemar Suite meant contract work for local suppliers Pankhurst Decorators, DG Ritchie joiners and Glenearn Carpets. “It took around six weeks to get the room up and running again,” said Mike. “While it gave us an excuse to upgrade the facility, I don’t want to face those same problems again. Let’s hope the snow and ice keeps to a minimum this winter.”

HADDEN CONSTRUCTION DELIVERS FIRST PERTH AND KINROSS COUNCIL HOMES IN 20 YEARS

he first Perth and Kinross Council housing built in Perth and Kinross in more than 20 years has recently been completed, marking a key stage in plans to improve the availability of affordable homes in the area.

The keys for the six new high-quality houses in Duneaves Place, Letham were handed over by Hadden Construction to Housing and Health Convener, Councillor Peter Barrett and senior Council officials. The last Council housing prior to these was built in 1985. The new properties represent the first delivery of the PKC Housing Programme with Hadden Construction also building 20 new homes in Methven, construction of which is now nearly complete, and 10 properties in the Moncrieffe area of Perth.

Cllr Barrett said: " I am sure our new tenants will be looking forward to getting settled into their homes. A huge amount of work has gone into the construction process, thanks to Hadden, producing excellent quality housing. Moreover, I would also like to thank our site neighbours for their patience during the build phase." Scott Hadden, Chairman of Hadden, said: "Hadden consider it a privilege to work in association with the council and their dedicated team to deliver the first affordable housing in the area for more than twenty years. More than a Shed

t the age of eighty-one, Grant's mum, Margaret GilliesBrown, began to feel that the East Inchmichael farmhouse she had lived in for over fifty years was too big for her. She asked her son, part owner of Gillies & Mackay, to fix her a timber cabin at the bottom of the garden. With permissions in place, work began on site this January. A true team effort involved G&M on construction and Grant's brother Lindsay on project management. Lindsay arranged the kitchen installation and organised the Gillies family into decorating, furnishing and relocation teams. Margaret is delighted with her new home which she has named Rowan Lodge and last Friday saw Grant hand over the keys to his mum with lashings of cider and scrummy sponge cake to celebrate. These days we hear a lot about work-life balance. That and the current economic crisis are forcing many to be flexible in their approach to work and family. But if we choose to work from home how do we discipline ourselves? Having our office in the garden rather than in the house allows us to close the doors on domesticity and puts us in the right frame of mind for work. Job-hunting children returning from Uni and used to their independence place a different strain on family and often giving them their own space can be beneficial. But if simple outdoor living’s your thing, where better to spend your staycation than in your very own garden getaway?

Fisher’s Hotel

he landmark Fisher’s Hotel in Pitlochry has been purchased by Mr Fionn MacCumhaill, Managing Director of The Atholl Palace and Mr Jim Staunton, a former Director of the Atholl Palace, who have embarked on restoring the hotel back to the traditional hospitality which has made Pitlochry a desirable destination for more than a century. It is expected that, over the coming years, a six figure sum will be spent. The duo has a wealth of experience in the hospitality industry over the last 25 years. The hotel, Pitlochry’s oldest, was originally built in the 1830s as a coaching

inn by the highly regarded Butter family, who did a lot for tourism in the early days. The hotel became known as "Fisher's” after the colourful character Mr Donald Fisher who ran the hotel in the 1850s. Mr. Fisher was a charming personality who, in between farming shorthorn cattle and giving speeches, made the hotel famous and enticed the celebrities of Victorian Britain to visit. Mr Gladstone stayed in the Caledonian Suite during his visits in 1864 and 1887 and this is amongst the rooms now described as 'Superior Rooms' which have already been refurbished and have ample space for their two double beds and bay windows looking out onto the centre of Pitlochry. erthshire Chamber member Kerr Stirling has helped clinch a £49million deal for a Moray housebuilder which will project it into the upper echelons of Scotland’s property companies. The Stirling solicitors acted for Springfield Properties in its £49million acquisition recently of Redrow’s Scottish operations in a deal that is set to nearly triple the Elgin-based firm's turnover to £100m. The acquisition was led by Kerr Stirling managing partner Colin Mackenzie and senior corporate solicitor Caroline Litster, backed by a number of the Kerr Stirling property team. Mr Mackenzie said: “Springfield has recently been acquiring development sites in a strategic move into Central Scotland and had opened an office in Stirling. Following the acquisition of Redrow's Scottish business, Springfield are now a major player across the country and their reputation for excellent choice and customer care should see them grow further. Provender Brown in Perth is top Scottish Deli Local delicatessen, Provender Brown of Perth has just heard that it has been judged as the top Scottish deli and one of the top 10 in the UK - and is now up for the title of Deli of the Year 2011. The Deli of the Year competition is an idea created and organised by Olives Et Al, an artisan food producer in Dorset, as a way of raising the awareness of delis everywhere and helping them get real feedback from their customers in a way that is both supportive and helpful to business owners. The judges, a panel of experts from the food industry including buyers, retailers and journalists, got very hot under the collar judging over 120 delis (from a total of over 400 nominations) and the regional finalists were finally announced after much debate and final voting. Now Provender Brown will go forward to the finals but not until an unannounced mystery shopper has visited and scored the deli for helpfulness, knowledge, quality of products stocked, customer service and above all ‘deli attitude’. “It’s hard to describe how excited we all were to hear the news – the team here just whooped for joy when they heard. erth school pupils have taken on the role of property gurus in a pioneering class project. Primary 6/7 pupils at Goodlyburn Primary School were asked to adopt the position of estate agents, tasked to sell a huge building to a multi-millionaire seeking to house his family and art collection. Anne Begg, Manager of Perthshire Solicitors Property Centre provided guidance, teaching pupils how to gauge what the client requires, researching, drawing up schedules and presenting a sales pitch to the multi-millionaire. Anne also enjoyed a presentation from five groups of four pupils who required to persuade Anne, as the mock millionaire's representative, to buy their property in India. When did you get your first taste of snooker? I was given a small 6ft snooker table at Christmas several weeks before my 13th birthday and something just gelled from the moment I hit my first ball. I fell in love with the game and wanted to play every possible moment I could. Snooker and I were a fit – after a couple of weeks I was making breaks of 50+ and beating everyone I played against. Could you foresee what lay ahead? I improved rapidly but had no idea of what lay ahead. I started playing on a full size table at a club in Dunfermline and soon began entering junior tournaments. I won my first junior title in Wales when I was 13 and snooker took over my life. I won the Scottish Amateur title aged 15 and became the youngest ever professional the following year. At the age of 21 I became the youngest ever World Snooker Champion and took that crown for a record seven times. Those were the real highlights of my career. Were there options other than snooker as a career? I started skiving school to play – I couldn’t get enough of the game. I sacrificed parties and playing football and hanging around with my mates just to spend time on the tables. I guess it was an addiction. Naturally school suffered – I sat four O-Levels, didn’t turn up for two and failed the other two. But I was earning and my parents were very supportive. I was paying my own way in life through snooker earnings from the age of 15. There was never anything else for me – nothing I would rather do.

What’s the appeal? It’s the buzz of potting those balls. The excitement of spotting and executing a shot. The thrill of winning a World Championship is the best feeling in the world. And the money? Yes, I’ve made a good living out of snooker but the cash rewards have not kept pace with other sports. When I turned pro at 16 in 1985 there was a pot worth about £5 million on the snooker tour – more than the European golf tour. That same snooker tour now yields £6 million while the European golf pot has swollen to £100 million. The withdrawal of tobacco sponsorship was one of the main financial setbacks to affect us. I still enjoy sponsorship from two major companies in China and retain an affiliation with Highland Spring. Did you spend any on fast cars? I did actually – but they spent more time in my garage than on the road after the kids arrived. I had a couple of Ferraris in my early 20s but now a Range Rover is much more practical – and essential given the last two winters in Auchterarder. Have you got another championship win in you? I’d like to think so. But I haven’t won a tournament for over five years and no one in the game has ever made that sort of comeback. What’s gone wrong? It’s all about confidence. When you’re winning you’re confident and when you’re confident you win. Break that cycle and it’s hard to get it back. Back in the 1990s when I dominated the game I was practising between seven and eight hours a day – I couldn’t physically do that now as I have family and other priorities. I’ll just have to try and get that confidence and winning feeling back and manufacture the focus that used to come naturally. I’m missing shots that I never used to and that comes from lack of confidence. Are you a bad loser? The worst. When I lived alone I used to sulk for several days and not speak to anyone. I once drove home from Sheffield to Scotland without speaking a word to the other guy in the car. Who was your snooker hero? Initially it was Jimmy White because he played all the flash shots and was a real character. Then it became Steve Davis more than anyone because he was the best player by far. I spent a lot of time around him and tried to copy him – how he played and how he conducted himself. He was a great role model. Scotland has produced its fair share of top snooker players. Absolutely, Scotland has pretty much dominated the game for the past 20 years. There are not many sports where we can claim that. Have you got a favourite shot to play? I don’t have a specific favourite shot – my main strength is break building. I’ve made over 760 century breaks – way ahead of anyone else. If my opponent misses I just love going on and making the big break. You shun the media spotlight – why? I’ve always been uncomfortable with the “celebrity” label. I’ve chosen to live a very private life away from the glare of publicity outwith the tournaments. When I started to make good in snooker people told me I would have to live in London among other “celebrities”. But I wanted to keep my feet on the ground and it’s great in Auchterarder where I’m just one of the neighbours and can count on one hand the number of people who have come asking for

an autograph. Hello magazine wanted to cover my wedding and I’ve been asked to do Strictly Come Dancing and I’m A Celebrity Get Me Out Of Here – but I’m just not interested. People have often called me shy – and I used to be painfully so as a very young man – but I’m more private than shy. You’ve recently taken on new management? Yes. Ian Doyle was my manager for the start of my career and we worked well together. I’ve just signed with “Chubby” Chandler who has had such phenomenal success with golfers such as Darren Clarke and Rory McIlroy. This is his first year venturing into the world of snooker and I’m hoping some of his winning ways with golfers rubs off on me. You’ve just seen your own company go into liquidation. It was a Limited company which ran my affairs. Let’s just say mistakes were made. I’ve had people running the business and admin side of my life since I was 15 – all I had to do was play snooker. Perhaps I should have taken a closer interest in what goes on but I’m a sportsman not a businessman. I think all sportsmen are the same. When do you think you’ll be ready to retire? I’m 42 years old now and to be honest I can’t see myself playing professionally beyond 45/46. But I’ll always be involved in snooker in some form or another. It’s my ambition to open a snooker academy in China where they are crazy about the sport and have some outstanding talent. I also fancy doing some commentary work. And you’re a bit of a hot shot in the kitchen I’m told. I love to cook. I do virtually all the cooking at home as my wife Mandy hates it. I watch all the TV chef programmes – favourite being Rick Stein – and whenever I travel abroad to tournaments I enjoy trying the local cuisine. My favourite dish to cook is just a good simple steak cooked exactly as you like it. It really annoys me how many chefs can’t seem to cook a steak the way you ask for it. What’s the strangest thing you’ve ever eaten? Duck tongue and curried stirfry swan. What’s your favourite colour? Black – and not because of the final ball. I just tend to wear a lot of black and like black in many other settings. It’s the colour I’m most comfortable with. Fancy writing a book? One was written about me when I was 21 – the same time I appeared on This Is Your Life. But I’d hardly started living then. I’m sure I will get involved with another book as I feel I now have a story to tell. How about the after-dinner speaking circuit? No way. I hate standing up to speak to a room full of people. I was best man for a friend once and I absolutely hated it. I hate to finish on a low note – but can you tell us your worst snooker moment? Losing 9-0 to fellow Scot Marcus Campbell in the first round of the UK Championship in 1999. It was a living nightmare – everything went wrong and then got worse. Nothing matches that.

ast year the Employment Appeals Tribunal handed down its decision in the case of Bateman v Asda which supported the position that where, in a contract, there is a broad contractual right to alter terms of employment (a “right to vary” provision) in line with business needs an employer would be permitted, in certain circumstances, to make unilateral changes to an employee’s contractual terms including rates of pay, hours of work etc without the need for the express consent of the employee. (This is of course on the basis that the changes are properly implemented and the employer acts in line with the implied duty to maintain trust and confidence). This year the EAT has confirmed in the case of Garside and Laylock v Booth that in a situation where an employee is dismissed for a failure to accept a reduction in salary the question that should be asked to ascertain whether or not the dismissal was fair is whether it was reasonable for the employer to dismiss rather than then asking whether it was reasonable for the employee to accept the lesser terms offered to them. In this case it was found that the company had acted fairly in dismissing the employee for failing to accept the reduction. These cases mean that if a business requires, for economic reasons, to make certain contractual alterations including a reduction in salary it may now be easier to implement these changes (especially if you have a right to vary provision as part of your contract of employment). In the event that your business does require to make changes, even if you do have a right to vary provision in your contract, it would still be appropriate to take proper advice on implementation of any changes. There is an opportunity to create more research and postgraduate degree opportunities in Perth. We have three established specialist centres, Centre for Mountain Studies, Centre for Interpretation Studies and Centre for Rural Childhood and we are working on developing the Centre for Rural Entrepreneurship into other areas and creating a Centre for Sustainability. These centres provide research, knowledge transfer and consultancy services to national but importantly local businesses. They also generate visitor, spin off and inward investment opportunities. The specialist Centre for Interpretation Studies is working with the Scottish Underwater Archaeology Trust, The Scottish Crannog Centre and Edinburgh University to explore the potential to develop a unique underwater archaeology research centre and experimental archaeology visitor attraction on the shores of Loch Tay.

Focus on Employability Looking ahead, we are pledging to develop our further education and employability skills provision. We will continue to provide a wide range of further education qualifications with a strong emphasis on those that match the local employment opportunities. Our focus is to further develop these students’ core skills, their key employability skills and confidence to ensure that they are work aware and ready on completion of their studies. Recent research with Chamber of Commerce members showed us that this is what local businesses are demanding. With 100% of our further education students and 58% of our higher education students remaining in Perth and Kinross post study we recognise that it is our local businesses that matter most! What is truly beneficial for our students in developing their employability skills is to undertake projects, placements or internships with local businesses. This leads to a very positive outcome for both parties - the student is able to gain valuable work experience, while applying theoretical knowledge learned in class, and businesses get a helping hand with their business development and operational needs.

In many cases students use their ILA entitlement to improve their skills in this way. Our focus is to give greater access to a wider range of bite-sized learning opportunities for all. Centre for Enterprise We will also continue to help develop more local businesses by providing additional support for new start and growing businesses through the Centre for Enterprise, by means of conferences and workshop based skills development; networking opportunities; subsidised education and training; small grant allocation and acting as a conduit to other support agencies such as the Chamber of Commerce, Business Gateway and the PKC Business Development team.

Work-based Education, Training and Apprenticeships A range of work-based education and training opportunities will continue to be offered to encourage students to gain vocational qualifications and short course training opportunities for those in employment. Historic Gem to Gleam Again Throughout its glorious history Taymouth

from the ravages of decay and deterioration, this vitally important historic building is

to enjoy a new life as one of the country’s foremost exclusive hotel and leisure resorts due to open next year. Journalist Maureen

Young meets the team behind this amazing regeneration project.

uring her honeymoon stay in 1842, Queen Victoria described the 19th century neo-Gothic Taymouth Castle in her journal as “Princely and romantic”. And certainly it has taken a Princely sum and a romantic vision to haul one of the country’s most imposing castles back from the brink of ruin and restore it to its former glory. For the £75million restoration of A-Listed Taymouth Castle by new London-based owners Meteor Property Fund is not simply about converting the beautiful castle and 450-acre estate into a world class playground for the discerning tourist – it’s about putting the historic heart back into a truly stunning building and restoring the original features that so delighted Victoria and Albert 170 years ago. In a painstaking project that must delight the overseers from Historic Scotland, the team of experts pulled together by Meteor is involved in a true “labour of love” to respect every aspect of Taymouth Castle’s original lavish and ornate décor – no matter how faded or damaged. And the result is one of the most outstanding quality restoration successes of recent times. Walking through the massive structure with Meteor’s property development manager Martin Mortimer, project manager Jon Moore and Eric Strickland of Aberfeldy-based architects and lead consultants Mckenzie Strickland Associates, (pictured left to right on front cover) you can’t fail to be impressed by their passion and enthusiasm for the restoration.

They’ve witnessed the ripping out of tons of dry and wet-rot infested timbers, the replacement of 365 windows, the painstaking dismantling, restoring and reinstalling of hundreds of gloriously artistic and ornate panels and plasterwork. They’ve worked to maximise the peculiarities of this grand old lady to create amazing bedroom suites, they’ve restored the finest public rooms to their original breathtaking beauty and they’ve hacked through the undergrowth throughout the estate to reveal yet more treasures ripe for restoration such as a curling pond and a clutch of follies. “It’s not a job – it’s a lifestyle choice. It’s almost as if we’re married to this building now,” they admit. “We live and dream Taymouth Castle – it’s totally absorbing.” “It’s wonderful to see her take shape and start to glow again with all the style and panache she displayed in her heyday,” said Jon. “It’s difficult to imagine the derelict state we first found her in after purchase in November last year. An inch of snow inside the top floors and the main 100ft soaring open staircase - one of the most impressive in Britain – in danger of collapse because of rotting timbers. The list of decay and deterioration goes on and on – it was a really depressing sight. “Another couple of winters would have spelled the death knell for Taymouth Castle,” he added. “We got to her just in time.” Despite the challenging economic climate, Meteor has managed to deliver a redevelopment plan which will bring much-needed boosts to both the local economy and the Scottish tourism industry. A commissioned economic study by Prof. John Lennon highlights the fact that the completed development could have a direct economic impact of over £13million per year while an additional £18.4 million would be created indirectly in the local and regional economy through increased tourism to the area. The report also states that, outwith the restoration phase, a minimum of 139 core fulltime jobs will be created at the estate with a further 167 fulltime jobs being generated in the wider community as a spin-off. Throughout the current restoration work, an average of between 60 and 85 workmen are employed on site each day – most working for local Perthshire contractors. And everybody – from project manager to painter and craftsman to cleaner – has been swept along in the tide of enthusiasm to save and restore the amazing castle. Thankfully, extensive weather damage caused to the upper two floors hadn’t reached the first floor which housed the castle’s breathtaking public rooms featuring carvings, plasterwork, murals, Medieval stained glass windows, Renaissance woodwork and lavish furnishings. An extensive workshop has been set up in the castle grounds where expert craftsmen replicate and repair pieces of missing or broken wood carvings or intricate plasterwork. Complying with Historic Scotland, original materials are used and dyes and colourants sourced to match like with like.

A heraldry expert from the Royal household has committed to writing the story told by the hundreds of coats of arms adorning ceilings, panels and columns throughout the castle, each playing a part in the history of the building. Valuable carved wood panels and figures – many worth a considerable sum – have been saved, along with priceless 13th Century stained glass – among some of the oldest in existence in Europe. And thousands of pounds worth of gold leaf has been lovingly lavished on intricate fluted columns and vibrant panels and ceiling fixtures throughout. “A company called Gainsborough has even made new silk hangings for the Chinese Drawing Room to the exact design they made the originals over a hundred years ago,” said Jon. “We’re trying to pay that sort of attention to detail in everything we’re doing.” Original fittings, fixtures and furniture which were sold off from the castle over the years are being sourced across the world and – where possible – bought back to place in their original setting. “We’re using old oil paintings and photographs to determine exactly where things were,” explained Jon. “It’s been fascinating learning about the castle and the grounds and trying to restore it to its original splendour. We’re remaking and replacing about 20 per cent of all features and restoring 80 per cent so the vast majority has been saved in time. “It won’t all happen overnight, however. Let’s just say the estate is a project in progress for the next three years.” Although Taymouth Castle was built in the 19th century, the neoGothic building stands on the site of a much older Balloch Castle which dates from 1550. The original structure was demolished by Sir John Campbell, 1st Marquis of Breadalbane, to make way for the much grander structure. Final additions and alterations, employing some of the finest craftsmen of the century, were completed for the Royal honeymoon couple in 1842.

“Where we’ve not been able to display architectural and decorative features, we’ve preserved and covered them,” explained Eric. “But we want visitors to have the castle experience – not just the five-star boutique hotel experience,” he said. “The restored public rooms are just amazing and we are in the course of creating the bedroom suites which are all unique – playing on the configuration of the castle such as the turrets which make ideal bathrooms – leaving guests in no doubt they are staying in a castle. We’ve also restored all the open fireplaces to add that extra touch of Scottish warmth – many of them magnificent features in solid granite or marble.” Eric’s company is also responsible for the design of the 160 homes being constructed throughout the estate. “The idea is to make them blend perfectly with their surroundings and become part of the estate landscape – in harmony with it rather than in stark contrast – so the designs incorporate a lot of wood and glass and natural stone features.” The homes will range in price from around £600,000 to £1.2million with sizes ranging from 1700 sq ft to 3500 sq ft. And owners Meteor are confident that both the hotel and the homes will attract international attention with considerable interest already from overseas. “Taymouth Castle Estate represented a unique investment opportunity and we’re delighted that the approved plans mean we can deliver financially and ultimately present a very exciting product to the market,” said Martin. “Not only will there be the chance to stay in and enjoy the fabulous restored castle, but 160 owners will be able to secure a home within the managed estate with all its facilities. “Nowhere else in the country can offer the unique combination of residence, castle, hotel, highlands, river, loch, golf, fishing, watersports, equestrian, spa and so on – it’s everything a tourist or investor could ask for in their ideal Scottish retreat. “We were so aware of how many schemes had failed to work for the estate in the past. But the political will was there and everyone – including a very supportive team at Perth and Kinross Council – has worked hard to progress our plans to meet key marketing targets such as The Ryder Cup in 2014. “The history of Taymouth Castle is unique and, indeed, could be described as priceless,” said Martin. “What is being done now will preserve it for generations to come and that is extremely satisfying.”

A PERTHSHIRE businessman has led the launch of a new leading independent financial planning practice, after buying his previous business back from Britain’s fourth largest building society. In recent years Afternoon Tea has seen resurgence with some of Britain’s most prestigious venues and smaller outlets offering their own take on this very British favourite. Afternoon Tea dates back to the early nineteenth century when Anna, the 7th Duchess of Bedford was said to have complained of “a sinking feeling” during the late afternoon. Her rooms at Woburn Abbey soon became the place for the social elite to be in the afternoon and the experience became so popular that on her return to London she continued the practice and invited friends to join her… this time with a respectable enough reputation to move things into the drawing room. Even then, the enjoyment was such that ladies all over London became accustomed to sitting down in the afternoon to pour tea and eat cake. Ladies of 18th century London, we salute you! Today, Afternoon Tea is served in many guises; from 5 star hotels such as Gleneagles and The Dorchester to chic cafes and quirky Tearooms. There has been a recent trend in taking it with champagne or in Hettie’s case, their own Iced Tea Cocktails! “We wanted to do something traditional and elegant. Something that would feel like a real decadent and indulgent treat without blowing the budget!” explained Nicola Martin of Hettie’s Tearooms. “Both Clare and I come from homes where mother’s baked and treats were plates of homemade scones and slabs of fruit loaf. When we were researching Tearooms and Teas we realised people had begun to look back to times when simple, quality experiences were more enjoyable and important that big showy luxuries. Tea, Cake and Sandwiches! It’s a little slice of afternoon heaven!” The return of this most British of past-times isn’t just an opportunity for us to enjoy our scones from the best china and our tea loose instead of bagged, but it’s also a wonderful way to show tourists and visitors just how Tea and Cake can make your day! Nicola has given us some of her favourite High Tea Recipes – including the rather indulgent Iced Tea Cocktail!

Hettie’s Cold Tea Loaf This is my Mum’s recipe – she got it from Nana Munro – and its been adapted to use our Heather Tea which is my Dad’s favourite! Ingredients: 12oz dried mixed fruit 10oz self-raising flour 4oz brown sugar 1 egg 1 large cup of Hettie’s In The Heather Tea, cold. (you can use straight forward black tea for this) Preparation: Steep fruit in the tea in overnight. Pre-heat oven to 180C Mix all ingredients in a bowl and stir well Transfer to a loaf tin and cook for around one hour – one hour fifteen minutes. Tip – pop a skewer into the loaf and when the it comes out clean – you’re ready! Cool on a wire rack and serve with butter.

Iced Tea Cocktails

Scones A bit like soup in so much as everyone thinks their mum’s are the best. They’re wrong. My mum’s are the best! Ingredients: 225g self raising flour 55g cold butter 1 level tsp baking powder 1/2 tsp salt 150 ml milk 1 egg beaten with a little milk Preparation: Heat the oven to 220C / Gas 7 Grease and flour a baking sheet. Sieve the flour into a baking bowl then add the butter, baking powder and salt. Quickly rub the butter into the flour until the mixture resembles fine breadcrumbs. Make a well in the centre and in enough milk to make a soft, pliable dough. Turn the mixture on to a floured board and knead / turn very lightly until just smooth then lightly roll out to 2cm / 3/4” thick. Cut rounds with a 7.5cm/3” cutter or cut into triangles with a sharp knife. Place on the baking tray and brush with the beaten egg and milk mixture. Bake near the top of the hot oven for 15 minutes or until golden brown and well risen. Cool on a wire rack before eating.

Ingredients: 1 pot of fruity tea such as Hettie’s Berrytastic Baby 75ml Vodka A dash of a quality old fashioned lemonade such as fentimans Ice to Serve Preparation: Cool down the Berrytastic Baby Tea and add the ice, lemonade and vodka. Serve in china cups with Afternoon Tea and lots of friends!

Area focus - Perth Harbour

erth Harbour has played an important role in the economic development of the region for the past 900 years and continues to form an integral part of the local economy today. InCommerce takes a closer look at the changing tides affecting this important asset to the local economy. People who live outside Perth may have no idea that the Fair City has its own thriving harbour. However, Perth has had a port since medieval times and the city has been an important centre for shipbuilding and trade since then. The ideal situation of the modern Perth Harbour - on the River Tay just 30 miles from the North Sea â&#x20AC;&#x201C; makes it a bustling and popular destination for cargo ships from around Europe. Linked to an excellent network of motorways, dual carriageways and the national rail network, Perth is ideal for fast and easy transportation of goods to all areas of Scotland and Northern England. Perth also benefits from easy access to air services with Dundee Airport (22 miles), Edinburgh Airport (39 miles) and Glasgow Airport (69 miles) all within easy reach. This proximity to transport links ensures that transporting goods through Perth Harbour is very cost-effective, as haulage miles are minimised by bringing goods closer to their final destination and providing a lower cost alternative to the larger coastal ports. Coastal and dry bulk ships up to 90 metres in length can be accepted into Perth Harbour, day or night, carrying up to 2,500 tonnes from Europe, the Baltic or Scandinavia. Larger vessels can be accepted at the sole discretion of the Harbour Master. Vessels can be received on one high tide and depart on the next, ensuring maximum efficiency.

Cranes with safe working loads of up to 40 tonnes are available together with mobile handling equipment suitable for all types of cargoes. In addition to fresh water at all berths, floodlights can be provided for night work and stores and fuel can be arranged by agents. Cargoes that pass through Perth Harbour now range from the traditional agricultural related cargoes such as animal feedstuffs and liquid fertilisers to timber, chemicals and wheat. The Port is owned and operated by Perth & Kinross Council which is also the navigation authority for the River Tay between the Harbour and Balmerino. The harbour benefits from being within a major industrial and commercial centre with around 1300 people employed by 140 companies based there.

Harbour Facilities Accommodation The area of the Tidal Basin is 1.2ha, with 418 metres of quayage. Depths at the quays at low water vary according to the height of the river. Vessels lie aground at low water and the harbour bottom is mud. Depth in the Harbour at HWST is 4.6 metres.

Cranage Ample mobile cranes available for cargo handling with S.W.L. from 5 to 40 tonnes. Bulk grain elevators, forklifts and modern handling machinery are also available. Handling Restrictions As an inland port, Perth Harbour is ideally suited to the handling of ‘Rhine barge’ type vessels, up to 90 metres in length. Normal Safe Fresh Water transit draft in the upper river is set at 0.2 metres less than the height of tide on the day of transit. The maximum fresh water draft permitted is 4.2 metres all the foregoing at the sole discretion of the Harbour Master. Pilotage The Perth Harbour Master will arrange for the services of local qualified Pilots to assist vessels in making passage between Dundee and Perth. The contract for the services of a Pilot is between the Pilot and the vessel’s owner and the account will be rendered direct from the Pilot to the Shipping Agent. Masters are strongly advised to make use of this facility although it is not compulsory and is not provided under the terms of the Pilotage Act 1987. Radio Communication Perth Harbour Radio Channel 9 Ship Repairs Small ship repairs can be undertaken locally.

Navigation to the Harbour and its quayside facilities has been improved, and a marketing campaign has raised its profile to potential customers. A review of the Harbour is intended to establish what further improvements can be made in future. Councillor John Kellas, Convenor of the Council’s Enterprise and Infrastructure Committee, said: “There is a long established culture at Perth Harbour where agents and operators work enthusiastically with existing and new customers to provide the best possible level of service at an attractive cost. The main shipping agents, operators and Harbourmaster have an excellent working relationship providing a better service for customers. The level of service that they provide individually and jointly is unlikely to be found at other ports and makes Perth Harbour a great place to do business. Tidal Reference HSWT is 4.6 metres. Depth at low water varies according to the height of the water in the river, but the harbour never dries out. The harbour has a NAABSA classification (Not Always Afloat but Safe Aground). Heights of Spring and Neap tides can vary with barometric pressure, and with the direction of the winds. After periods of heavy rains, or melting snow, a spate is experienced which can considerably increase the height of the river and the strength of current. Under normal conditions the tidal current rate at half flood is typically: Spring 3 knots, Neap 1.5 knots, and at half ebb: Spring 4 to 5 knots, Neap 3 knots. Weighbridge 2 x 50 tonnes (privately owned).
