DukesHill Christmas Ham
Our special edition Christmas ham features a honey-glazed Wiltshire ham adorned with sliced candied oranges.
Handcrafted with our traditional Wiltshire Cure, each ham matures in our unique brine for nearly a week. We add a touch of brown sugar to our brine recipe to give a subtle sweetness to this mild and delicious ham.
The hams are then air-dried for another week to mature and reduce moisture, then steam-cooked for 12 hours to achieve a delicious moist, tender & buttery texture.
Each ham is then meticulously inspected, hand-trimmed, glazed with honey and topped with sliced oranges before baking in our glazing ovens. The resulting ham has a lovely mild flavour and a moist texture with a deliciously sweet orange flavour. The perfect show-stopping Christmas centrepiece.

Our best-selling ham has a proud history. In 1841, Elizabeth Harris, the matriarch of a ham-curing dynasty based in Calne in Wiltshire, perfected a method of curing pork through immersing the pork legs in brine rather than simply applying dry salt. The result was a delicious ham that is milder in flavour than the distinctly saltier dry-cured hams of long ago.
DukesHill Wiltshire Hams are cured by immersing the whole pork legs for almost a week in our own-recipe brine, to which we add unrefined brown sugar to give a subtle sweetness to this mild and delicious ham. Perfect for the whole family.

This most quintessential English ham is produced using curing methods that have remained largely unchanged for centuries. We carefully select the best legs of British pork we can find, dress each with a pinch of saltpetre and then cover with a generous layer of salt. The process is repeated over a number of weeks before the hams are left to mature for several months in our drying rooms.

Most so-called ‘dry-cured’ bacon is made using a process called ‘cure-in-the-bag’. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours!
Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. This not only means there is no excess water and hence no white goo, but more importantly the flavour is second to none. It freezes perfectly too.

The finest luxury Caviar
Beluga Caviar
Beluga caviar comes from the Huso huso sturgeon which can reach a maximum length of 8 meters and a weight exceeding 1.5 tons! Originally from the Black Sea, the Caspian Sea and the D’Azov Sea, it was also found in the Adriatic and Ionian.
It is the rarest and hence the most expensive caviar available and is characterized by large eggs (over 3 mm) which tend to be oval, with a colour ranging from pearl grey to dark grey which are harvested from the sturgeon after an average of 20 years.
Royal Oscietra Caviar
Extracted from the Russian Sturgeon, a species originally native to the Caspian Sea, Black Sea and Azov Sea. This medium-sized sturgeon can weigh between 20 to 60kg. Only the largest roe are selected for this elegant caviar, with a subtle fruity and nutty flavour and with tones of dark brown to beige in colour. The time required to harvest this caviar is approximately 10 to 11 years. Surpassed only by Beluga in terms of quality.
Royal Baerri Caviar
This high quality caviar is extracted from the roe of the Acipenser Baerii Sturgeon. A medium sized fish weighing between 8 to 40kg, they were originally found in the fluvial basins of Siberia. Grey to amber in colour with an egg size of 2.2 - 2.7mm the roe are harvested after a minimum 8 years. It has a marked and well-rounded flavour. An excellent entry level caviar.

Isle of Mull Cheddar
This fabulously tasty, well rounded Scottish cheddar is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows. There is some variation throughout the year depending on the seasons but this adds to the interest. In winter the lack of organic grass is supplemented by hay and whisky grains, hence the cheddar appears a little whiter, and occasionally there is some blue veining.

Christmas Pudding
Our Christmas puddings are all handmade on-site and have been for over thirty years. We use free-range eggs, plump juicy vine fruits and cherries, soaked in the finest French Brandy for 24 hours along with a touch of our candied orange peel. We steep our pudding in butter instead of the traditional suet to give a much cleaner finish to the palate. Exquisitely rich, moist, and delicious.

Placing your order
For Freepost orders, allow up to 3 weeks for your form to reach us. To expedite delivery, affix a stamp and send it to Customer Service at DukesHill Ham Company Ltd, Lodge Park, Hortonwood 30, Telford, TF1 7ET.
If your order is for a specific date, please schedule delivery a few days in advance. All our hams keep well after delivery, so it’s better to refrigerate them for a day or two than risk not arriving in time!

All our products are sent to you fresh and packed securely for next working day delivery, except for smaller items and remote destinations. Delivery times aren’t guaranteed for a specific time during the day and during peak periods may be delivered later than usual. Please notify us promptly if your order doesn’t arrive.
Delivery notifications are issued by text & email (if details are provided).
We do not deliver on Sundays or Mondays. We cannot deliver to PO Box numbers or send to overseas destinations.
Weather & Delays
If adverse weather or unforeseen circumstances hinder delivery, we will strive to deliver at the earliest opportunity, with limited liability. Snow may cause delays, so please be patient if delivery drivers are not able to get through to you.
