WELCOME Christmas can often feel quite stressful if you are cooking for a group of family or friends, this year I have created some delicious recipes, using my cookware range and Simply Better ingredients, that are easy to follow. My recipes include a delicious Roast Turkey with Lemon and Sage using the fantastic Heritage Bronze Turkey from Hogan’s Farm in county Meath and my succulent Maple & Mustard Glazed Irish Ham. If you are cooking for a vegetarian friend or family member try my Roast Baby Carrot Tarte Tatin. It’s so good everyone at your dinner table will want a slice. My canapé suggestions can be prepared in a hurry if you have some unexpected guests and my Belgian Chocolate Trifle is bound to impress. Cinnamon Swirl Bake Ingredients (Serves 4)

Method

- 1 packet Simply Better All Butter Cinnamon Swirls

1. Preheat the oven to 180°C (350°F/Gas Mark 4). Grease a square Roaster and arrange the cinnamon swirls in a single layer with the tail ends meeting in the middle. Pour over the cream.

- 125ml Simply Better Single Source Irish Jersey Cream - 50g Butter, extra for greasing - 100g Dark Brown Sugar - ½ tsp Simply Better Organic Ground Cinnamon

2. Melt the butter in the microwave and whisk in the sugar and cinnamon. Drizzle over the swirls. Cover with tin foil and bake for 30 minutes, then remove the tin foil and return to the oven for another 6-8 minutes or until golden. Serve warm straight to the table.

Neven’s Top Tip To make a cream cheese glaze, mix 100g of Simply Better Irish Original Cream Cheese with 2 tablespoons of softened butter, 75g sifted icing sugar and one tablespoon of Simply Better Organic Grade A Canadian Maple Syrup and drizzle on the cinnamon swirl bake just before serving.

MAKERS

SHELLFISH IRELAND We travelled to the picturesque fishing town of Castletownbere, West Cork, to meet the Murphy family to source our Simply Better Irish Dublin Bay Prawn Cocktail. Shellfish Ireland source our prawns from Irish fishing boats enabling them to process the catch at its freshest in Castletownbere. The prawns are combined with our delicious and light Irish made seafood sauce for a classic starter.

Italian Antipasti Ingredients (Serves 6-8)

Method

- 1 jar Simply Better Italian Aubergine Caponata

1. Spoon the aubergine caponata on to a small platter. Add the burrata cheese and gently cut the tops with a sharp knife, then season lightly with salt. Tear up the basil leaves to scatter on top and place in the centre of a board. Arrange bowls of the artichokes, pesto and chilli paste on the outside. Add piles of the grissini and croccantina and then fold and tuck in the salame, Parma ham and Bresaola. Fill in any gaps with small piles of the olives and garnish with torn flat-leaf parsley leaves to serve.

Mediterranean Mezze with Roasted Baby Beets with Chickpeas Method

Ingredients (Serves 6-8) For the roasted baby beets & chickpeas: - 2 packets Simply Better Baby Beetroot, scrubbed - 1 carton Simply Better Organic Chickpeas, drained - 1 tsp Simply Better Organic Garlic & Herb Seasoning

For the harissa yoghurt: - Finely grated Rind & Juice of ½ Lemon - 450g Simply Better Authentic Greek Yogurt - Pinch of Simply Better Clogherhead Oriel Sea Salt - 2 tbsp Simply Better Irish Made Harissa Sauce - A few Fresh Mint Leaves

For the mezze:

- 2 tsp Simply Better Organic Spicy Pepper & Herb Seasoning

- 1 jar Simply Better Italian Grilled Peppers

- 1 tsp Simply Better Organic Harissa Spice Seasoning

- 1 jar Simply Better Italian Grilled Aubergines

- 2 tbsp Simply Better Spanish Extra Virgin Olive Oil PDO

- 1 tsp Simply Better Italian Organic Glaze with Balsamic Vinegar of Modena - 1 packet Simply Better Greek Barrel Aged Feta - 1 Simply Better Handmade Irish Salami with Fennel - 1 packet Simply Better Piadina Romagnola IGP Alla Riminese

1. Preheat the oven to 220°C (450°F/Gas Mark 7). Trim and halve or quarter the beetroot. Mix the spices together. Put the chickpeas and beetroot in a large baking tin and rub all over with the oil, sprinkle over the spice mixture and mix again. Roast for 30 minutes or until crisp around the edges. Remove from the oven and leave to cool to room temperature. 2. When ready to serve, add the lemon juice and rind to the yogurt with the salt and spread thickly on to a platter, then swirl in the harissa sauce and spoon the roasted baby beets & chickpeas on top. Tear over the mint leaves and arrange in the middle of a table. 3. Drain the peppers and cut into thin slices and put on a small plate and drizzle with the organic glaze. Drain the aubergines and arrange on a small platter, then cut the feta into cubes and scatter on top. Cut the salami into slices. 4. Heat the wraps directly over a gas flame for about 30 seconds on each side until lightly charred and then stack them up and cut into triangles. Tuck in stacks of them wherever there are gaps and finish with the slices of salami. 9

French Cheese Board with Pear & Fennel Salad Ingredients (Serves 6-8)

For the Board:

Method

- 1 pack Simply Better French Reblochon De Savoie (or Simply Better Baking Wicklow Bán)

- 1 pack Simply Better Irish Duck Rillette Pâté

1. Preheat the oven to 180°C (350°F/Gas Mark 4). Remove sleeve and wrapper from the Reblochon or Wicklow Bán and put the cheese back into the ceramic dish. Using a small sharp knife make seven small incisions and then push a slice of garlic and a few rosemary leaves right down into each one. Place on a baking tray and bake for 20-25 minutes until the cheese is molten.

- 1 Simply Better Fermented Black Garlic Clove, cut into 7 slices - 1 fresh Rosemary Sprig - 1 tbsp Simply Better Raw Irish Honey, plus extra to serve

For the Salad: - 1 Simply Better Xenia Pear - 1 packet Simply Better Baby Fennel - ½ Lemon, pips removed - 2 tbsp Simply Better Honey & Mustard Dressing - 1 bag Baby Salad Leaves - 50g toasted hazelnuts or walnuts, roughly chopped

- 1 pack Simply Better French Comté - 1 pack Simply Better French Roquefort Vernières - 1 pack Simply Better French Epoisses - Organic White Sourdough Bread, sliced - 1 jar Cornichons, drained

2. Meanwhile, using a vegetable peeler, sharp knife or mandolin, shave the pear, discarding the core and the baby fennel into wafer-thin slices. Toss in the lemon juice and then put in a salad bowl with the lettuce leaves. Season with salt and pepper and drizzle over the dressing to lightly coat. Scatter the nuts on top. 3. Drizzle the baked cheese with the honey to taste and put on a board in the centre of a table with the salad and place extra dish of honey alongside. Transfer the duck pâté into a small bowl. Add the other cheeses, cutting them up into different shapes and arranging them on the board alongside stacks of sourdough bread. Fill in any gaps with the cornichons to serve.

Neven's Top Tip: Take the duck pâté and all the cheeses out of the fridge an hour before you plan to serve them. Take off all the packaging from each cheese and leave them to breathe back to life – the difference in flavour will be significant. 13

Roasted Baby Carrot Tarte Tatin Ingredients (Serves 8)

Method

- Plain Flour, for dusting

1. Place a large piece of parchment paper on the work surface and lightly dust with flour. Using a rolling pin, roll out the pastry to a 25cm circle, using a 9” round tin as a guide and allowing an extra 2cm border. Trim off any excess and place on a baking tray in the fridge for 30 minutes to rest.

- 1 packet Simply Better Frozen All Butter Puff Pastry, thawed and fridge cold - 2 packets Simply Better Baby Carrots - 5 Banana Shallots, halved and peeled - 50g Butter - 2 Tbsp Simply Better Organic Grade A Canadian Maple Syrup - 1 Tbsp Simply Better Organic Spicy Pepper & Herb Seasoning

2. Preheat the oven to 200°C (400°F/Gas Mark 6). Trim the carrots and place in a saucepan of boiling water. Simmer for 5 minutes, then drain. 3. Melt the butter in the tin directly on the hob over a medium heat with the maple syrup. Add the shallots and parboiled baby carrots. Allow to colour for a minute or two, then remove from the heat. Sprinkle in the seasoning and toss until evenly coated, then arrange the vegetables, with the cut sides of the shallots facing down. 4. Lay the rested pastry on top of the vegetables and tuck in the edges like a blanket. Put in the middle of the oven and bake for 30 minutes until puffed up and golden. Rest for 5 minutes, then flip on to a plate. Cut into slices and serve hot or warm.

Roast Turkey with Lemon & Sage Ingredients (Serves 6-8) - 5Kg Simply Better Heritage Bronze Free Range Fresh Irish Reared Turkey

Method 1. Preheat the oven to 190°C (375°F/Gas Mark 5). Season the turkey inside and out with salt, then sit on the trivet of the roasting tin. Pare the rind from the lemons, cut them in half and put both in the cavity with the sage, reserving a handful of leaves. Tie (Truss) the legs, if liked. 2. Pour the wine into the base of the tin and rub the turkey all over with the oil, then cover everything tightly with a single layer of tin foil. Calculate the cooking time according to packet instructions and roast until cooked through with no pink meat and the juices run clear. Or if you have a meat thermometer insert it into the thickest part of the leg it should read 75°F.

3. Turn the heat up to 220°C (450°F/Gas Mark 7). Pick the reserved sage leaves and mix in a small bowl with the remaining oil. Remove the turkey from the oven and pour over the sage mixture and roast for a final 10 minutes until crisp and golden brown. Cover with two clean tea towels and leave to rest for at least 20 minutes and up to 1 hour. 4. Char some extra lemons in a hot frying pan with a splash of oil to garnish and transfer to a warm platter. 5. Remove any excess fat from the cooking juices left in the tin with kitchen paper and then place directly on the hob and whisk in the gravy. Heat for 2-3 minutes until bubbling and thickened. 6. To carve, remove the legs and wings, dividing the legs into drumsticks and thighs, then cut off each whole breast. Cut into slices and arrange on a large platter.

Boulangère Potatoes

Sausage, Wild Sage & Red Onion Stuffing Roll

Ingredients (Serves 6-8) - 4 White or Brown Onions, thinly sliced - 1 tsp Fresh Thyme Leaves - 2 tbsp Simply Better Italian Extra Virgin Olive Oil, plus extra for greasing

Method

- 1 tsp Simply Better Clogherhead Oriel Sea Salt - ½ tsp Ground White Pepper - 2kg Potatoes such as Rooster or Maris Piper - 1 pouch Simply Better Irish Made Free Range Chicken Stock - 25g Butter

1. Preheat the oven to 200°C (400°F/Gas Mark 6). Fry the onion and thyme leaves over a medium to high heat in the oil for 10-15 minutes until softened and lightly coloured. Season with a little salt and pepper. 2. Peel the potatoes and thinly slice by hand or with a food processor or use a mandolin. Spread a layer of the potatoes in a 9” square tin and season lightly. Sprinkle over a layer of the onions and continue layering, finishing with a layer of potatoes. Pour over the stock and dot with the butter, then bake for 1 hour until the potatoes are tender and the top is crisp and golden. Cut into slices to serve.

Neven’s Top Tip: This can be made in advance and left to cool completely. Cover with clingfilm and chill for at least 6 hours or overnight is best and it can be made up to two days before you plan to use it. When ready to serve, preheat the oven to 160°C (325°F/Gas Mark 3). Cut into portions and arrange on a non-stick baking tray. Bake for 15-20 minutes until heated through. 24

Method 1. Preheat the oven to 200°C (400°F/Gas Mark 6). Mix the sausage meat, stuffing and bacon in a bowl and then shape into a large roll. Wrap in a layer of parchment paper and tin foil, twisting the ends very securely to seal. Cook, seam side up for 45 minutes until cooked through. Unwrap just before cutting into slices to serve.

Neven’s Top Tip: This clever stuffing roll not only tastes delicious, but its practical shape also means it takes up very little space in the oven as it can be slid in alongside the turkey in the roasting tin.

Maple & Mustard Glazed Irish Ham Ingredients (Serves 8-10)

Method

- 2kg Simply Better West Cork Unsmoked Gammon Joint

1. Rinse the gammon with fresh water and put in a pot of boiling water. Add the onion, celery, peppercorns and two of the star anise. Bring to a simmer over a low heat and cook for 1 ½ hours. Leave to cool in the liquid.

- 1 Onion, sliced - 2 Celery Sticks, roughly chopped - 1 tbsp Black Peppercorns - 6 Star Anise - 3 tbsp Simply Better Irish Wholegrain Mustard - 6 tbsp Simply Better Organic Grade A Canadian Maple Syrup

2. Preheat the oven to 180°C (350°F/Gas Mark 4). Remove the gammon from the pot and place in a 9” round tin. Using a sharp knife, cut off the skin, leaving the fat on top and score diagonally into a diamond pattern. Pour around 500ml of the cooking liquid which will help to keep the joint moist. 3. Smear the mustard all over the fat of the ham and press in the remaining star anise. Mix four tablespoons the maple syrup with the organic glaze and spoon on top. Roast for 30 minutes until cooked through. Remove from the oven and drizzle over the remaining two tablespoons of the maple syrup. Leave to rest for at least 15 minutes or up to 1 hour, covered loosely with tin foil before slicing and serving.

Method

- 2 cartons Simply Better Coole Swan Fresh Custard

1. Using a spatula, put the cartons of custard into a large bowl and whisk in the chocolate sauce until smooth.

2. Cut the brownies in half and place in the bottom of a trifle bowl. Drizzle over the coffee. Roughly crush up the salted caramel sablé biscuits and sprinkle over the brownies. Spoon the chocolate custard all over the top, then cover and chill for at least 2 hours or overnight is best. 3. Whisk the cream until peaks form and dollop on top. Decorate with the milk chocolate buttons and the chopped honeycomb chocolate. Serve straight to the table in all its glory!
