Welcome Christmas is a time for family and friends and this year I would like to share some of my favourite recipes with you using some of the fantastic products from the Simply Better collection, which can be found in your local Dunnes Stores, so you can really impress your guests. It’s a pleasure to cook with so many great ingredients from the Simply Better Collection and the products featured in this booklet are made by some of Ireland’s best food producers. I have also added new products to my cookware range which is available to buy in your local Dunnes Stores and online at www.dunnesstores.com so I hope you get to try it and cook along with me this Christmas. Organic Irish Smoked Salmon Mini Terrines with Tiger Prawns Method

Ingredients (Serves 4) - 1 60g Simply Better Oak & Hickory Smoked Organic Irish Salmon Strips - 1 80g Simply Better Irish Farmhouse Cream Cheese -2 00g Simply Better Poached Organic Irish Side of Salmon - 1 25g Simply Better Black Tiger Prawns, plus extra for garnishing (optional) - 1 Tsp Simply Better Grated Horseradish with Cracked Peppercorns

- 150g Crème Fraiche -F inely Grated Rind and Juice of 1 Lemon -2 Tbsp Snipped Fresh Chives - 1 Tbsp Chopped Fresh Dill, plus extra to garnish -S ea Salt & Freshly Ground Black Pepper - Lemon Wedges, to serve -B rown Soda Bread, to serve

1. Oil four mini loaf tins, then line with a double layer of cling film, leaving plenty hanging over the sides. Neatly cover the base and sides of the tins with most of the smoked salmon in a slightly overlapping layer with some overhanging the sides, reserving the rest for the bottom of the finished terrines. 2. Put the cream cheese and crème fraiche in a food processor with the lemon rind and juice, horseradish and half of the poached salmon. Whizz until well blended, then turn out into a bowl. Fold in the prawns, herbs and the remaining poached salmon and season with salt and pepper. 3. Spoon the cream cheese mixture into the terrines and lay the reserved smoked salmon on top, then neatly fold over the overhanging salmon. Cover with cling film to enclose completely. Chill overnight or for up to two days. 4. To serve, carefully remove the cling film from the top of the terrines and invert on to individual serving plates. Lift off the loaf tins and cling film and garnish each terrine with a tiger prawn (if using), a lemon wedge and dill sprigs. Have a separate basket of the soda bread to hand around. Crispy Roast Potatoes with Garlic & Thyme Ingredients (Serves 6) - 1kg Floury Potatoes, such as Rooster, Desiree, King Edward or Maris Piper - 3 Tbsp Simply Better Irish Duck Fat

- 3-4 Fresh Thyme Sprigs - 6-8 Garlic Cloves, unpeeled - Sea Salt

Method 1. Preheat the oven to 220°C (425°F / Gas Mark 7). 2. Wash and peel the potatoes before cutting them in half or quarters, depending on their size. Place the potatoes in a pot of cold water with a pinch of salt, then cover and bring to the boil. Reduce the heat and simmer for 7-8 minutes. Drain the potatoes and leave in the colander to cool slightly, then give them a good shake to fluff up the edges. 3. Meanwhile, put the duck fat in a large roasting tin and put in the oven to heat. Take the roasting tin out of the oven and put on the hob over a gentle heat. Put the potatoes in one by one – they should sizzle as they hit the pan – and baste all over. Add the garlic and thyme and season with salt. 4. Roast for about 1 hour, until golden and crunchy, keeping an eye on them and basting with a little more fat if they begin to look dry. Serve immediately, as these do not appreciate hanging around.

Neven’s Tip: If you’re cooking for vegetarians, swap the duck fat for 4 Tbsp Simply Better Cold Pressed Irish Rapeseed Oil.

Sausage Meat Stuffing Balls Ingredients (Makes 10-12) - 454g Simply Better Irish Pork Sausage Meat

- 1 Tbsp Chopped Fresh FlatLeaf Parsley

- 175g Simply Better Rustic Ciabatta Breadcrumbs

- 2 Tsp Chopped Fresh Mix Herbs, such as Sage, Rosemary & Thyme

- 100g Butter - 1 Onion, finely chopped - 50g Dried Cranberries

- Sea Salt & Freshly Ground Black Pepper

Method 1. Preheat the oven to 200°C (400°F /Gas Mark 6). 2. Melt the butter in a sauté pan set over a medium heat, then add the onion and sauté for about 5 minutes, until softened. Remove the pan from the heat and mix in the sausage meat, breadcrumbs, dried cranberries and herbs, then season generously. 3. Shape into balls and place on a baking tray lined with tin foil. Bake in the oven for 30 minutes until golden brown and cooked through.

ROAST LAMB REC IPE

Connemara Hill Leg of Lamb with Boulangère Potatoes Ingredients (Serves 4-6) - 1 .8kg Simply Better Connemara Hill Lamb Leg of Lamb - 1 Tbsp Simply Better Cold Pressed Irish Rapeseed Oil - 3 Onions, thinly sliced - 1 .5kg Potatoes, peeled and thinly sliced

-4 Fresh Thyme Sprigs, leaves stripped - 400ml Chicken Stock - 3 Garlic Cloves, sliced - 2 Fresh Rosemary Sprigs - 20g Butter -S ea Salt & Freshly Ground Black Pepper

Method 1. Preheat the oven to 200°C (400°F/Gas Mark 6). 2. T o make the Boulangère Potatoes, heat the oil in a frying pan with the butter and sauté the onions for 3-4 minutes over a medium heat, until softened but not coloured. Season to taste. 3. Layer the potatoes, onions and thyme leaves in a large roasting tin large enough to fit the leg of lamb. Season each layer as you go and finish with an attractive overlapping layer of the potatoes. Pour over the stock and set to one side. 4. Using a sharp knife, make small incisions all over the lamb and press a garlic slice and a tiny sprig of the rosemary into each one. Then place the lamb carefully on top of the potatoes in the roasting tin. 5. Roast for 20 minutes, then reduce the oven temperature to 180°C (350°F/Gas Mark 4) and roast for 1 hour 30 minutes. 6. T ransfer the leg of lamb to a carving platter and cover loosely with foil, then leave to rest for 15 minutes, keeping the Boulangère Potatoes warm.

- 1 Tbsp Milk

- 2 Tbsp Simply Better Irish Made Soy & Ginger Sauce

- 1 Tbsp Sesame Seeds

Method 1. H eat a tablespoon of oil in a non-stick frying pan over a medium heat. Add the sausages to the pan and cook for 5-6 minutes until light and golden in colour.

2. Mix together the hoisin sauce, soy sauce, sweet chilli sauce, honey and 2 teaspoons of cold water in a bowl. Drain off any excess fat from the sausages then pour over the glaze and sesame seeds, turning to coat.

3. Cook the sausages for another 3-4 minutes, until golden and sticky. 4. To serve, arrange on a warmed plate skewered with cocktail sticks.

- 2 Tsp Sesame Seeds - Plain Flour, for dusting - Sea Salt & Freshly Ground Pepper - Simply Better Handmade Tomato Relish, to serve

1. Preheat the oven to 200°C (400°F/ Gas Mark 6). Line 2 baking sheets with non-stick baking paper. 2. To make the filling, put the sausage meat in a food processor with the sweet chilli sauce, basil pesto, 2 eggs, salt and pepper and blitz to combine, then transfer to a piping bag. 3. Roll out the pastry on a lightly floured work surface to make a long oblong shape that measures 35cm x 33cm (14in x 13in), then cut the pastry in half again lengthways. Pipe half of the sausage meat filling into a long log shape that will run the whole length of the pastry making sure it’s approximately 5mm (¼in) from the edge. Break the remaining egg into a bowl and add the milk and a pinch of salt, then lightly beat together to make an egg wash. Brush the sides of the pastry with the egg wash, then fold the pastry over to enclose the filling and press down well to seal the edges, either crimping them with your fingers or pressing down with a fork. Repeat with the rest of the pastry and filling. 4. Cut each long sausage roll into 8 bite-sized pieces, trimming down and discarding the ends. Glaze the sausage rolls with the rest of the egg wash, then sprinkle each one lightly with sesame seeds and arrange on the lined baking sheets. 5. Bake in the oven for 20-25 minutes, until cooked through and lightly golden, swapping the baking sheets around on the oven shelves halfway through. Arrange on plates or a large platter and serve hot or cold with Simply Better Handmade Tomato Relish. 23
