Turning To Our DNA Maintain Ageless Skin

t does not take long for scientific research to show up on store shelves. From vitamin C peels to zinc oxide, companies are constantly responding to the latest findings by offering products featuring cutting edge benefits. It turns out our DNA is no less vulnerable. The very essence of our molecular structure is becoming a guideline for beauty products and showing up in everyday skin care regimes. Jay J. By: Katherine Ferrara “I explored other specialties while in medical school – obstetrics and gynecology, dermatology and pediatrics. Then I got the chance to follow a cardiologist around and see how he worked with patients. He became my mentor, and that’s when my interest in cardiology started,” she explains. “It’s a challenging field and keeps you learning.” Turner was fortunate to find a mentor to guide her in the maledominated field of cardiology. While the number of female physicians continues to rise, fewer than one in 10 of medical students choose cardiology. The hours are long, and many women are deterred by the lifestyle, with grueling on-call hours and busy practices that leave little time for families. “To be a woman in medicine is tough,” she says. “You have to be confident in yourself and your abilities.” Turner says that things are changing in the field, and she was able to find her balance by marrying cardiac care with academics. For the past five years, she was the attending cardiologist specializing in cardiovascular disease with several hospitals in Tampa and a professor at USF’s Morsani College of Medicine. Turner was involved in several leading clinical trials, studying the use of blood thinners, stress testing and heart catheterizations on patients. Last September, she joined Bayfront Health St. Petersburg, who also established a new partnership with USF. She looks forward to building the teaching component between the two institutions, but says cardiovascular disease prevention remains her real passion, especially advocating better health care for women. “Women tend to put others before themselves, especially kids, their spouse, and work. They may encounter symptoms and ignore them, such as fatigue, shortness of breath and sweating. Listen to your body – if something doesn’t feel right, have it checked out.” The best prevention? “Know your numbers,” she says. “Blood pressure, cholesterol, blood sugar and body mass index – these are the numbers to know for a healthy lifestyle and a healthy heart.”

University in Atlanta, an opportunity arose to join Tampa General Hospital’s top-ranked heart transplant program. “They [TGH] was looking for someone and they took a bet on a guy who just completed his fellowship. They welcomed me,” he says. Mackie is proud of the commitment to patient care at TGH, one of the busiest heart transplant programs in the country. It is only one of seven hospitals in Florida that conduct heart transplants, averaging more than 40 transplants per year with an average wait time just over three months. That’s one of the shortest wait times in Florida and the nation. Mackie says seeing patients regain their health and quality of life after a transplant is one of the most rewarding parts of his job. He remains in touch with many of his patients, including a woman who was diagnosed with a form of cardiomyopathy, a disease of the heart muscle, during her pregnancy. After successfully delivering her son, she sought treatment at TGH and later underwent a successful transplant. The families still exchange Christmas cards and photos regularly. “Caring for these patients who are the sickest population and seeing how a heart transplant changes their life is a great experience. If I had to do it all over, I wouldn’t do anything different,” he says. G

Dr. Benjamin Mackie Tampa General Medical Group You might say Dr. Benjamin Mackie is a patient’s lifeline to a healthier heart. As part of Tampa General Hospital’s transplant cardiology team, he helps care for critically ill patients who are waiting for a heart transplant. According to the United Network for Organ Sharing database, there are approximately 265 adults currently on the wait list in Florida. With a focus on advanced heart catheterizations and mechanical circulatory support for patients, Mackie implants heart pumps or ventricular assist devices (VADs) as a bridge to transplantation. These tiny, battery-operated heart pumps help patients recover so they can undergo a successful heart transplant when a donor becomes available. Mackie says he always enjoyed helping people and was fascinated with medicine as a child. After graduating from USF’s Morsani College of Medicine and completing his residency at Emory

he West is wine country and Napa Valley is its purple heart. Only 30 miles long and five miles wide, the fabled region boasts 500+ wineries scattered around the picturesque towns of Napa, Yountville, Oakville, St. Helena and Calistoga. Meandering up and down country roads, I fell in love with the region when I covered June’s fabled Napa Valley Wine Auction. he state of California offers some of the most spectacular and diverse driving scenery in the United States. Within minutes one can go from spectacular Ocean views to twisty winding mountain and valley passes. To explore this further, we enlisted the help of a California Special Edition Mustang GT Convertible and set out from Los Angeles to Santa Barbara and Westlake Village. We landed at LAX, picked up our 5-litre V8 American muscle car and hit the road. We dropped the top and headed straight to the ocean and up the coast to our first destination, the Four Seasons Resort The Biltmore Santa Barbara. The Car Our 2016 Oxford White Mustang GT convertible was equipped with the optional California Special package which included 19" Ebony Black-painted machined aluminum rims; black painted mirror caps and hood vents; Ebony leather/Miko suede seat inserts with red stitching and embossed logo; hood and side stripes; performance front splitter; raised black decklid spoiler; California Special strut tower brace badge under the hood; a faux GT California Special gas cap; and unique black upper and lower grilles with Tri-bar pony logo on the upper grille. The base price of our car was $41,800. It had $5,780 in options and when you add $900 in destination charges that brings the total to $48,480 plus taxes. Mustangs are big cars, relatively speaking, and they really feel it when you’re driving through narrow winding mountain and Oceanside roads. At 188.3 inches long, 81.9 inches wide and a base curb weight of more than 3,900 lbs. the car feels bigger and heavier than you might want, but once out on to the wide-open freeways the car shines. This is a great road trip car because, unlike some of its smaller more petite competition, there’s plenty of room for passengers, bags and equipment. And with the top up, the AC on, the radio cranking out cruisin’ tunes, at highway speed the car is roomy and extremely civilized. But with the top down, the V8 does a great job of motivating all of the size and weight through the hills, valleys and highways, with an addictive accompanying muscle car soundtrack. The optional 6-speed SelectShift automatic transmission it great for life as a GT car, and the paddle shifters do a respectable job of coaxing the transmission into providing you with the gear you want, almost always when you want it. The standard transmission is the 6-speed manual, which I would have preferred. The independent rear suspension is so much better than the previous generation’s solid rear axle, and you really notice the improved handling in this driving environment. Mustangs are available with 4, 6 and 8 cylinder engines; the EcoBoost 2.3 litre inline 4 cylinder generating 310 hp/320 lb-ft of torque, the 3.7 litre V6 with 300 hp/280 lb-ft of torque, and the 5.0 litre which generates 435 hp @ 6500 rpm/400 lb-ft of torque at 4250 rpm which was in our car.

By: Michael Taylor Santa Barbara From LAX we took the famed Pacific Coast Highway (PCH/State Route 1) from Maria Del Rey all the way up the ocean to Oxnard. With the top down our sights were filled with the Pacific Ocean to the left, the Santa Monica Mountains to the right and nothing but blue skies above. From Oxnard we headed inland and got on the US 101 freeway, put the well-insulated top up and AC on and had a very civilized run up to Santa Barbara. Once in Santa Barbara we dropped the top again and headed to the ocean to our first destination, the relaxed atmosphere of the Four Seasons Resort The Biltmore Santa Barbara. Built in 1927 this sprawling resort is set on 22 rustic yet manicured acres and offers 207 guest rooms and 22 charming bungalows. It is the definition of California casual relaxed luxury nestled between the Pacific Ocean on Butterfly Beach and the Santa Ynez Mountains. The Resort recently underwent a $305 million renovation that took a decade to complete. The resort is owned by billionaire Ty Warner, who made his fortune from Beanie Babies, and is managed by Four Seasons Hotels & Resorts. While in Santa Barbara it is worth taking the time for a drive out onto Stearns Wharf, Santa Barbara’s number one tourist attraction. It was first completed in 1872 and was built out of wood by local lumberman John Stearns, hence the name. There’s nothing like driving a two ton vehicle with the top down 2,000 feet out into the Ocean on a wooden wharf. You could see the water below between the cracks in the beams that we were driving over. I felt like we should have been wearing lifejackets! Westlake Village From Santa Barbara we headed south to Westlake Village which is about 55 miles south-east and 10 miles inland from the Ocean. We took a bit of a detour and approached Westlake Village from Malibu and it was one of the most spectacular drives we’ve ever had. The hills and valleys and switchbacks seem to be endless with more breathtaking views around each blind corner. The Mustang handled it all effortlessly although it is a fulltime job making sure that large front end stays on your side of the narrow lanes and keeps pointed in the right direction. The soundtrack from the rumbling V8 reverberated through the hills and valleys. There’s no replacement for displacement, especially when it’s naturally aspirated with no turbochargers to muffle the enthusiasm emitted from the rear tailpipes. Our final stop was the Four Seasons Hotel Westlake Village. It is situated on 11 acres and is just 10 years old. A much more modern hotel compared to the 90 year old Biltmore. It has 269 rooms, indoor and outdoor pools, and, at 40,000 square feet, one of the largest Four Seasons spas in North America. This Five Diamond Award winning hotel is in the foothills of the beautiful Santa Monica Mountains and was built by the Dole Food Company when they Continue on the next page.

dR Auto built their headquarters which are across the street. This was a much busier hotel than in Santa Barbara with lots of events taking place and plenty of exotic California cars to ogle in the valet parking area. Conclusion We couldn’t have asked for better weather or hotels on our trip and we really couldn’t have asked for a better car either. The 5-litre Mustang GT convertible was a great driving companion for our 500 km/310 mile journey. It was extremely well equipped, had plenty of room and storage, seamless technology and lots of power from a very willing engine. Yet it was as civilized as we needed it to be when we wanted a break from the sun and sound, which wasn’t very often. We will remember the amazing sunny oceanside, mountain and valley views and the great driving experience in the Mustang and look forward to our next trip to The Golden State. G

Barnes After a quick hour-long flight, or three-hour drive across the state from the Tampa Bay area, you can easily find yourself in Palm Beach, “America’s First Resort Destination” on Florida’s East Coast, for a quick getaway, just as vacationers have been doing for more than a century. In the late-1800s, railroad magnate Henry Flagler continued his southward journey toward the Florida Keys, and built two resorts that quickly gained popularity amongst the travelers who arrived in Palm Beach via his railroad line. Building upon his first resort’s success, The Royal Poinciana, Flagler followed up with his second resort, the oceanfront Palm Beach Inn. Because of its proximity to the Atlantic Ocean and “the breakers” where waves crashed, guests began calling the resort “The Breakers” the nickname stuck. After fires destroyed the hotel in 1903 and 1925, The Breakers was rebuilt in just over 11 months’ time at a cost of $7 million and reopened in 1926 in all of its lavish grandeur. Today, $30 million is reinvested annually into the 538-room resort, which is still owned and operated by decedents of Flagler. Throughout The Breakers’ 140 oceanfront acres, during your stay you’ll find four pools with bungalows; a new, 20,000 square foot spa; and two 18-hole golf courses, including The Ocean Course, created in 1896 by Alexander H. Findley, making it Florida’s first and oldest golf course. For a truly exclusive experience at The Breakers, make reservations in The Flagler Club, a 25-room boutique hotel within the hotel, which occupies the top two floors. Private entry into The Flagler Club provides access to the Club Lounge and panoramic terrace with views. A stay in The Flagler Club also affords you use of the chauffeured Tesla house car service. The house car is a terrific way to explore Palm Beach, and do a bit of shopping. One of the best places to do just that is Worth Avenue, often referred to as the Rodeo Drive of the East, yet established long before Beverly Hills’ Rodeo Drive. As South Florida’s popularity grew in the early 20th century, architect Addison Mizner and his business associate Paris Singer saw an opportunity as visitors began spending more time in Palm Beach: they developed Worth Avenue, starting with the 300 block, closest to the exclusive Everglades Club, one of Mizner’s projects. Shopping along Worth Avenue took off immediately, and in the 1920s the area was known along the eastern seaboard for its highquality, exclusive merchandise. To that point, Saks Fifth Avenue opened its first store outside of New York on Worth Avenue in 1926. Today, well-known designers and fashion houses are found along Worth Avenue, including Cartier, Chanel, Gucci, Hermes and Louis Vuitton, to name just a handful. That’s not to say, however, that shopping along Worth Avenue is all about designer brands. The avenue and its enchanting vista, or lush courtyards tucked into small alleyways, are filled with local businesses and even more places to shop. In fact, more than 60 per cent of all businesses found along Worth Avenue are local, and several are mainstays on the avenue,

such as Kassatly’s, the first store to open on Worth Avenue in 1923 and whose doors remain open today. Palm Beach has been a popular destination for more than 100 years. Why not plan a quick getaway from the Tampa Bay area to experience “America’s First Resort Destination” for yourself ? G

Trend #2: In-Water Sitting With that fancy new pool, you need a few new pieces to take in your stunning view. O’Connell recommends taking it all in while sitting in Ledge Lounger chaise loungers. For some industry insider perspectives on ways to achieve this, I turned to an array of field experts who offered this sage advice on how to foster those coveted indoor-outdoor connections. About the transition itself, Enrique Crespo, Principal at the Crespo Design Group, says the best way to achieve an interior that flows freely into the exterior is by continuing your color scheme from one to the other. Suzan Decker Ross, ASID, owner of Decker Ross Interiors concurs, noting, “using the same color palette is important and does not ‘stop the eye’ like an abrupt color change would do.” Of course, a key aspect of indoor/outdoor flow is the ability to readily see into the adjacent space. To help optimize this effect, Decker Ross Lead Interior Designer Jen Kravchuk suggests employing a bi-fold panel “Nana Wall” system that, she says, “allows for a wall of windows that completely opens for uninterrupted access to the outdoor space.” Crespo points out that using doors that stack will proffer a barrier free opening. He also notes that large window elements can help lessen the feeling of separation from the outdoors. Both designers from Decker Ross consider flooring to be a critical element, and recommend utilizing non-permanent textiles like area

rugs to add color and texture to applicable areas. The experts at Decker Ross mentioned the creative use of plants, living walls, lanterns and Edison light bulb strands to add ambiance and comfort to any outdoor living space. They urge that creating good conversation areas are a must in designing outdoor spaces, which is why they select fire pits, or some other outdoor fire or water feature, to create a focal point for seating areas. Lighting and sound are key considerations, especially when seeking to unify multiple outdoor spaces and zones. As homeowners spend more time at home entertaining family and friends, customized outdoor living spaces have become increasingly popular, says Steve Freund, Area Showroom Manager – Southwest Florida for Ferguson Bath, Kitchen & Lighting Gallery. “Florida’s temperate climate allows a homeowner to expand upon an open floor plan with retractable glass walls, creating a seamless transition into an outdoor living space,” says Freund. “Many of today’s outdoor kitchens also reflect indoor amenities, with everything from built-in grills, sinks and pizza ovens to refrigerators, dishwashers and outdoor chandeliers.” Why not have all the luxury that you appreciate inside your home at your fingertips outside, too? Enjoy a resort-type atmosphere every day of the year. Brigette Pina, Tampa manager for Ethan Allen, agrees that outdoor spaces are no longer just patios, but an extension of the home. That requires thinking about outdoor spaces in an entirely new way, she says, including how to best place furniture for good conversation and traffic flow, especially if you like to entertain.

Good Design Principles at Work “Outdoor spaces done well reflect the same good taste as a beautiful home interior, which means they are designed with a nice blend of textures, colors and fabrics, and there is attention paid to the smallest details to make them comfortable and inviting,” says Pina. That means selecting the right rugs and lighting, adding accents of color with pillows and thinking of how best to use the space. “A welldesigned outdoor space uses every corner to create the perfect outdoor environment for family and guests,” says Pina. Consider placing a cozy chair in the corner of the yard or by the pool just like you would have a cozy chair inside by the fireplace. Position a sofa or loveseat and chairs to create an intimate conversation area, similar to how you might place furniture in a living room. And be sure to add a large, freestanding umbrella or two to protect family and friends from the blazing Florida sun. In addition to all of the extra amenities that make outdoor spaces special, there is the issue of functionality. No one wants to be hassled by having to run back and forth from the outdoor kitchen to the house, especially when the steaks are almost done. The solution is to plan the outdoor kitchen with all of the practical features that you expect in your primary kitchen, says Freund. For example, he suggests adding amenities like a side burner and warming drawer, which provide more space to cook, keep prepared food warm and minimize extra trips in and out of the house. A builtin trash chute will help minimize insects, while a weather-rated sink and pullout bar faucet allows for quick rinsing of meats, fruits and veggies on the spot. Lighting is also an important consideration, especially for entertaining at night, says Freund. Task lighting above cooking stations is the key to food preparation, while a decorative chandelier, ambient wall sconces and freestanding lanterns can create ambience for seating and dining areas. Extend lighting out to the yard by placing accent lighting to illuminate trees, and light pathways and trails. Continued on the next page.

Of course, the perfect outdoor kitchen has to start with the perfect grill. Whether built-in or freestanding, the grill is the focal point of every outdoor kitchen, says Freund. The next consideration is which type of grill – gas or charcoal? It ultimately comes down to taste versus convenience, says Freund. But why not select a high-end grill that does both? Freund suggests the Coyote Asado Smoker, which allows you to cook over an open flame, sear on electric grates and smoke-in natural flavors. Mixing It Up From Boho-Chic to Industrial Design hen it comes to decorating your home, it’s all about your personal sense of style. Though there are certainly rules when it comes to design, like many rules, they are made to be broken. Two design aesthetics that bend the rules to create their own senses of style are boho-chic and industrial. We talked with two local interior designers about these styles and how you may want to incorporate them into your home. Boho-chic is an eclectic sense of style, one in which you may mix things that don’t necessarily mix by traditional design standards. “It’s my job to make them mix the best they can, or perhaps even guide my clients to a better mix,” said Kari Wilbanks of Kari Wilbanks Interior Design. A bohemian mentality comes into play in boho-chic design, “that you’re free-spirited and of this world,” explained Kari. “If you travel and collect things along the way, they’re not going to match. Rather, they bring back memories and represent different times and events in your life.” She added that stylish homes have a collected, almost curated feel to them, and that gives them the depth that may be more of a bohemian mentality. “A collected, eclectic, layered boho-chic design reflects personality,” Kari said. “It says, ‘This is me as a whole - I’m not just this or that. And I’m going to show different sides of my personality through my furnishings.’ “ A layered, boho-chic aesthetic is also very welcoming. “You’re not going to be afraid to sit on the sofa, even though it’s white,” noted Kari. Integrating various inspirations and design elements is also a part of the industrial design aesthetic. “I don’t go by specific definitions (when it comes to design),” said Lisa Gilmore-Sarnowski, principal designer with Lisa Gilmore Design in St. Pete, when asked how she defines industrial design. “Instead, we pull from aspects of different inspirations.” When creating an industrial design, oftentimes Lisa and her clients blend clean lines with raw woods, natural fibers, metals that will wear and patina over time when exposed to use and the elements, and even brightly colored artwork. As a designer, she believes all of these elements combine to create a casual and very livable space, with an industrial vibe. “For an industrial look, I encourage my clients to mix certain mechanical elements with other things,” Lisa advised. “It’s easy to get caught up in a trend, and just because you want to do industrial doesn’t mean you have to go all in. It doesn't have to be all or nothing. Pick something and play off of it to create your new look.” Traditional, contemporary, boho-chic or industrial - how you decorate your home is a reflection of who you are. Don’t be afraid to take inspiration from different parts of your lifestyle and personality and mix it up! G

hink of it as the first - and last - impression made on those who come calling. Consider it a reflection of who you are, how you live and what you like. View it as an expression - and extension - of your particular style, just as the interior of your home showcases your personal tastes. Homes are designed and decorated with owner’s desires’ in mind. Why would a yard be any different? Why shouldn’t a yard be as distinctive as you? What a homeowner does, or doesn’t do, to landscape the lot where their single-family residence is located, can vary greatly. The effort invested can be cosmetic, a matter of keeping the grass trimmed, the lawn watered and the leaves raked. Or the impact can be dramatic, even theatrical. Imagine living walls covered with lush greenery or arcs of water cascading across a pond. Consider the different moods invoked while playing music outdoors or the visual impact created by strategically placing colorful lights shining upwards on tall palm trees or discreetly placed to subtly highlight a home. How about an artistically designed walkway featuring pavers arranged in patterns? Whether it’s through the use of technology, materials like stone, tile or brick or dramatic fountains, there are multiple ways to turn an ordinary area into an extraordinary retreat. The idea is to put a personal stamp on your yard in a way that sets it apart, makes the area more inviting and elevates the appearance, as well as the value, of the property. It all starts with a vision and, ideally, the expertise of professionals. “The process begins with the conceptual phase. Once it is presented and reviewed, we create a master plan. The idea is to create a cohesive plan that is based on the experiences, influences and lifestyle of the client,” said Joe Argentine, principal of Argentine Landscaping Company. Argentine’s residential landscaping projects typically include homes that are under construction or undergoing extensive renovations. In such situations, the landscaping alone can represent costs ranging from the tens of thousands to the hundreds of thousands of dollars. Landscaping is becoming an increasingly popular focal point and residential feature for homeowners throughout the U.S., according to the National Association of Landscape Professionals. “It is clear that Americans think a well-maintained yard is important and they value the contributions of landscape professionals,” according to the association. A poll conducted in 2015 for the association found that “three quarters of Americans feel it is important to spend time outside in their yards.” Apparently, spending time also means spending money. A survey by Harris Poll shows expenditures on landscape contracting is expected to remain steady, with the most significant increase being in the design build sector.

earing a hot pink flowered shirt into the Queensland Australia butterfly garden was accidental genius. In two seconds, dozens of exotic butterflies nestled on my Lilly Pulitzer and launched my horticultural obsession to nurture a butterfly garden which I did last summer. Lucky for me, Florida is a haven for butterfly gardeners. Whether you grow your own or visit one of the horticultural attractions, let your imagination take wing in designing your butterfly oasis. Grow An Oasis Whether you have a backyard or a patio, anyone can nurture a vibrant butterfly garden. Know Your Local Butterfly: First, identify the species that are resident, transient and breed in your area and in the habitat you are providing. The next step is to identify the host (larval) Plants that your targeted butterflies rely on for laying their eggs and feeding of the emerged larvae. I planted milkweed, which attracts the Monarch caterpillar. Providing these host plants will ensure happy, thriving larvae and a sustainable butterfly population. What To Plant Step three is to identify the nectar plants for the butterflies you hope to attract. Planting both host and nectar plants means they won’t have to go far to eat and reproduce. Butterflies will lay their eggs and feed on host plants such as aster, cassia, coral bean, gaillardia, milkweed, necklace pod, oleander, passion vine, pipe vine and verbena. Experts recommend choosing native varieties of host plants when possible, such as passiflora incarnata, lutea, multiflora and suberosa varieties of passion flower and asclepias curassavica, humistrata, incarnata, longiflora and tuberosa native varieties of milkweed. Consider native plants that provide nectar for butterflies, such as the geiger tree, buttonwood, firebush, native lantana, wild coffee, necklace pod, beach sunflower and blue porterweed. Look for plants that have flat, cluster or spike flower shapes to support the butterfly's footing while feeding in colorful hues (yellow, orange, white, blue, red, pink, purple). Nectar plants that attract and feed adult butterflies include perennial favorites such as penta, lantana, butterfly bush, hibiscus, plumbago, railroad vine, black-eyed Susan, shrimp plant and daylily. Colorful annuals, among them sunflower, salvia and zinnia, are good choices, too. Even common herbs attract butterflies, including basil, bee balm, chives, dill, fennel, mint, oregano, parsley, pineapple sage, rosemary and thyme. Add Butterfly Decor Not ready for a butterfly garden? Enjoy butterfly-themed décor for your garden including butterfly watering sticks, solar lights, stakes,

wind chimes, optic LED party lights and other garden ornaments. You can find them in local garden stores and nurseries, as well as on Amazon, Obsession with Butterflies (bird feeder, garden thermometer) and Gardener’s Supply Company (woven bamboo butterfly house). Sighting a Monarch on a purple coneflower, watching pollinating bees and moths on tropical salvia, and observing the visiting hummingbirds, inspires an awe of nature that brings calm and joy! A path of mosaic tiles wanders through the garden. Identification signs and butterfly photos depict the butterfly lifecycle. Both children and adults enjoy the whimsical sculptures and musical instruments. This butterfly garden is both an educational and stress relieving adventure. MOSI BioWorks Butterfly Garden: You can view or step inside this unique outdoor butterfly enclosure designed for West Central Florida species as they feed on native and Florida-Friendly nectar plants. Open year-round, but check the MOSI daily schedule for weather-dependent exhibit times. Marie Selby Botanical Gardens: This 8.5 acre tropical oasis located on the shores of Sarasota Bay features a Butterfly Garden as well as succulents, orchids, bromeliads and currently, a Chagallinspired “Flowers & The French Riviera” garden exhibit. Butterfly Rainforest at The McGuire Center for Lepidoptera Florida Museum of Natural History: Get close and personal with exotic, vibrant butterflies fluttering atop a lush tropical canvas of foliage and flowers. Explore the screened vivarium houses subtropical and tropical plants and trees to support 55 to 65 different species and hundreds of free-flying butterflies. Guests can stroll through the Butterfly Rainforest on a winding path and relax to the sounds of cascading waterfalls year-round. Inside, the McGuire Center public exhibits gallery showcases the "Wall of Wings," which captures the eye with thousands of preserved and photographed butterfly and moth specimens. Butterfly World: As the first butterfly house, it is the largest in the world. Despite his mother’s best efforts to steer him to what, she hoped, would be a less-demanding profession, he persevered and proved to her that, late nights and long hours notwithstanding, he was happiest creating delicious food in a commercial kitchen. “She lined up an interview for me for a job building electric cable boxes but I knew that was not for me,” he recalled. “I would be so lost without my kitchen.” As the current executive chef at Innisbrook Resort, McKinney-Stehr has come a long way from that familyowned cafe. Today he oversees four restaurants serving resort members, overnight guests and the general public, plus catering for the 900-acre, full service resort’s weddings, banquets and corporate events held in three conference centers. Drawing from his experience working in Europe, the Southeastern U.S. and the Lied Lodge & Conference Center in Nebraska, McKinney-Stehr describes his current culinary style as “East meets West featuring the freshest ingredients.” “I came to America with a background in nouvelle cuisine and traditional German cooking. Here you also have Latin and Cuban influences. It’s about finding new ideas and introducing changes that work.” After turning 15, the budding chef spent a three-year apprenticeship with a German master chef and briefly ran a restaurant with his father but declined to stay on after a change in ownership. The 20-year-old’s next venture was a small wine restaurant he basically ran by himself with some dishwashing help on weekends. While later working at a fine dining Italian restaurant in Germany, the young chef often accompanied the owner on summer vacations to Italy that allowed him to hone his craft in Italian kitchens.

It was 1997 when he literally took his marriage vows one day and landed in America the next. Chef McKinney-Stehr wasted no time finding work in the kitchens of some of this area’s leading restaurants. His Central Florida/West Coast culinary odyssey took him to Donatello Italian Restaurant, Cafe Italia Ristorante, Armani’s, Oystercatchers, Jackson’s Bistro Bar and Sushi Restaurant, the Westin Harbour Island Hotel and the Four Diamond-rated Resort at Longboat Key Club before continuing his career in Charleston and, most recently, Nebraska. Last year marked a homecoming of sorts when chef and his family returned to the Tampa Bay area after he was hired by Innisbrook. Nine months into his new job his team is already garnering guest praise for elevating the way the food is prepared and how well it is plated. Among his recent menu additions are the seared salmon served with cranberry quinoa, carrot mousseline, parsnip chips and candied ginger yogurt and the red curry-stained Gulf grouper accompanied by coconut jasmine rice, crisp root vegetables, chilled, creamy cucumber sauce (courtesy of his grandmother’s recipe) and ancho oil. “It’s a combination of service, presentation and amazing flavors. I really appreciate my team,” he added. “When I hire new chefs I look for heart. This is something I have loved since I was 11. It’s not just about what’s on paper. When you have to prepare food for 300 people, you have to have exceptional cooks in the kitchen.” Seared Grouper Ingredients Arborio rice White onion, small dice Warm chicken stock Salt and pepper

Beets, cooked and pureed Fumet White wine Chicken stock Heavy cream Julienne vegetables, sautéed Spinach, sautéed Jumbo lump crab meat, strain Fine diced red onion, celery, mayo

Risotto 1. Sautée sweet onions till translucent. Add Arborio rice. 2. Then add beet puree. Make sure beet puree is evenly distributed. Slowly add chicken stock, few ounces at a time. 3. Make sure chicken stock is absorbed before adding more. 4. Make sure risotto is UNDERCOOKED! Season with salt and pepper. Chablis Cream Sauce 1. Combine fumet, white wine and heavy cream. Bring mixture to a simmer. Add half of the base and flour slurry then strain. Crab Topping 1. In mixing bowl, combine jumbo lump crab, red onion, celery and mayo. Do not over mix. Plate Presentation Heat beet risotto, add garlic butter. Sear grouper, finish cooking in oven and top with crab topping. Sautée spinach and julienne vegetables. Place beet risotto in center of bowl. Place spinach and vegetables to the right side, 3 o' clock. Place grouper on top of the beet risotto, ladle Chablis cream sauce on top of grouper and let run around the bottom of the bowl. Garnish with micro greens on top of grouper. G

he French have a saying, “Mangez bien, riez souvent, aimez beaucoup,” which means, “Eat well, laugh often, love abundantly.” The first time I stepped into Safety Harbor’s Parts of Paris, I saw every part of that popular saying being lived out in real time: delicious aromas filling the restaurant’s air as patrons licked their plates clean, giggling in between bites and soaking in time with their loved ones. This hidden gem contradicts what many Americans typically think of when it comes to a French restaurant: formal fine-dining with a stuffy demeanor. And that makes co-owner Chris Orrung very happy ( Jonas Ahlgren, who lives in Stockholm, is the other co-owner). “People think French food means fancy fine-dining but we are trying to change that,” Orrung explains. “You can come here in shorts and flip flops, or a suit, whatever you like. We are very casual here so come as you are, relax and enjoy yourself. We take the French fare very seriously, but otherwise, we are very casual.” Orrung, who was born and raised in Stockholm, Sweden, also spent

Being immersed in the French Belgium culture as a child left a lasting impression on Orrung. “When I decided I wanted to open my own restaurant, I stumbled upon this charming building in Safety Harbor,” he says. “It had never been a restaurant before, but I saw what could be.” The 1936 Florida bungalow-turned-restaurant opened its doors in April 2012, helping pave the way to today’s Safety Harbor culinary boom. Since then, Parts of Paris has been named on Tampa Bay Times 50 best list and featured in the Boston Globe. “We’ve been mentioned here and there over the years,” Orrung humbly explains. “In the last five years, there has been an explosion. People probably didn’t know what to think of us at first.” Well, we sure do now. Orrung and Chef Ryan Steffensmeier’s straightforward French bistro fare focuses on quality dishes at the core. Everything is made from scratch — sauces and stocks are slowcooked to the utmost perfection. Yes, it takes longer to make it that way, but it means that everything tastes fantastic. The menu features a steady assortment of French classics like Foie Gras, Boeuf Bourguignon, Bouillabaisse, Crème Brûlée and more with new salads, sides and entrees rotating in seasonally. Orrung encourages locals to come in for a visit. You don’t have to sit down for a three-course meal — remember, they are casual here — swing by for a cocktail or try our Sunday brunch or Monday halfprice appetizers. “You’re going to love it!” Orrung boasts, and I couldn’t agree more.

Bouillabaisse Ingredients 3 small shallots Confit garlic (1 head of garlic and olive oil) 1 heirloom tomato 1 ⁄2 fennel bulb 1 1⁄2 cup white wine 1 red bell pepper ½ Tbsp. olive oil 4 oz. anchovy butter (4 oz.

anchovies, 4 oz. butter, confit garlic and roasted shallot puree) 4 oz. salmon 4 oz. swordfish 6 little neck clams 1 soft shell crab 8 mussels 5 shrimp, with tails Tarragon leaves for garnish Salt and pepper to taste

Directions Set oven to 375 degrees. Roast 3 small shallots in oven using greased pan for 1 hour. Purée in a blender. While shallots roast, confit 1 head of peeled garlic by covering in olive oil and simmering on low heat for 15 minutes. Strain oil and purée garlic in blender. Set aside. Dice the tomato, and slice fennel and red pepper. Sauté vegetables on low heat with 1⁄4 cup of white wine and 1 Tbsp. olive oil. For the anchovy butter, mince 4 oz. anchovies, 1⁄2 Tbsp. of the confit garlic and 1⁄2 Tbsp. of the roasted shallot puree. Mix with 4 oz. softened butter. Refrigerate butter for at least 30 minutes. To make the bouillabaisse, get a large sauté pan and add 1 1⁄4 cup white wine, vegetables, shallot puree, confit garlic, salmon, swordfish, clams, soft shell crab. Bring to simmer. Cover with lid and cook for 3 minutes. Then, add mussels and shrimp and cook until mussels open, about 2 minutes. Add anchovy butter and season with salt and pepper. Add a few leaves of tarragon for garnish. Serves 1. G

s the saying by Sir Thomas Browne goes, “charity begins at home.” Here in Tampa Bay, we have benefited from several prominent philanthropists whose desires to help others run deep. Due to their generous gifts, Tampa is now home to some of the leading heart hospitals in the country, giving a new lease on life to patients who need it most.

and the two families often travel together. Weisser gives all the credit to Dr. Hoffman for saving his life, but points out hospital staff also made a significant difference in his recovery as well as helping care for his wife while she stayed at his bedside. That compassionate spirit resonated with the Weissers, so when they decided to contribute to TGH’s Foundation, they requested that the funds remain listed in Hoffman’s name in the cardiac unit. “You could say that’s where my heart lies,” Ron laughs. Ron, a current board member of the Tampa General Foundation Board of Trustees, and Debra have donated thousands of dollars to support TGH’s educational scholarships for cardiac care nurses each year. They also donate funds to support in other ways, such as buying 50 tickets to the Ringling Bros. and Barnum & Bailey Circus so that single working parents could enjoy a day with their families. “That caring spirit is instilled in all of TGH’s staff so patients know they have a whole community looking after them and their family.”

Ron and Debra Weisser Weisser Family Foundation/Tampa General Hospital Second-generation real estate developer Ron Weisser is an open book about the day that changed his life in 2007. “I had a heart attack at 11 a.m. Sunday on Thanksgiving weekend. You would think that no one was at the hospital!” When Weisser arrived at Tampa General Hospital’s emergency room, it turned out that Dr. Debbie Rinde-Hoffman [medical director of TGH’s Heart Transplant program] was on call that day. After running several tests, doctors performed a catheterization and implanted a stent, and while that quick care may have saved his life having one of the top doctors on staff treating him is what Weisser describes as “divine intervention.” “I was in the ‘Golden Hour’ for survival from a heart attack, and I had the best damn doctor in the whole place take care of me,” he says. That life-saving moment created an unbreakable bond, one that still remains today. Weisser maintains checkups with Dr. Hoffman 94

Tom and Lauren Pepin Pepin Family Foundation/Florida Hospital Pepin Heart Institute The Pepin family has been a fixture in Tampa’s philanthropic community for more than two generations. “Ever since I can remember, the Pepin family has been known for giving back to the community,” says Tom Pepin. “It’s in our family DNA.”


By: Katherine Ferrara When Pepin, President and CEO of Pepin Distributing Co., took over the family business from his father, Art “Pep,” he also embraced the family’s commitment of giving back. Philanthropy begins at home for the Pepins, which includes Tom, Lauren, the couple’s four adult daughters and twin toddlers. After Art received a successful heart transplant while away from home, he returned to Tampa with a vision to create a place that offered the most advanced heart health care here. Together with a matching $500,000 pledge from Tom, the Pepins contributed one million to open the Pepin Heart & Vascular Institute (now known as the Florida Hospital Pepin Heart Institute). The institute has emerged as one of the most advanced specialty digital hospitals in the Southeast and is well known for its gold standard of patient-centered cardiac care. “We are the Moffitt of cardiac care,” says Tom. “We specialize in heart disease – that’s all we do. We are a specialty hospital where everything is onsite for patients and families with the latest testing equipment and a research institute.” Lauren adds, “When you walk inside, there is a sense of hope. We treat patients individually, and our passion for providing inspired care comes from the staff.” Anonymity is not really possible for this family, but Tom admits there have been times when he has gone “undercover.” “I’ve spent many afternoons greeting patients and families. Before I introduce myself, I ask them about their treatment, how they were treated and did they feel a part of the care process,” he says. Tom, along with his siblings Jill, James Paul and Pam, have pledged an additional two million dollars to expand the level of cardiovascular care at Pepin. “We believe in karma. The more you give, the more it gives back.”

When the hospital needed to build a new cardiac center, Morgan and his wife, Ernestine, generously donated five million toward the construction of the Morgan Heart Hospital in Clearwater. “I knew my money would be well spent and put to good use,” explains Morgan. “It always falls back to your health when people are at their lowest points in life and have the greatest need.” Choking back tears, Morgan shares how he met a woman who thanked him for saving her mother’s life. “Her mother was deathly ill when she came to the hospital. The family had no money and didn’t know if she would live. The staff helped care for her mother and treated her like royalty. That story still resonates with me and what we do every day for people.” Morgan, past board chair of Morton Plant Mease Health Care and Baycare, remains committed to the institution’s philanthropic needs. For the 10-year anniversary, the Morgans, along with Kate Tiedemann and Ellen Cotton, each contributed one million toward the Morgan Heart five million Community Challenge to bring improved technology and facilities for patient care. Larry Morgan Morgan Heart Hospital/Morton Plant Hospital What was supposed to be a routine health exam turned into a lifesaving experience for Larry Morgan. “I needed a life insurance policy to satisfy my loan coverage for my new business [Tires Plus],” explains Morgan. “When the insurance company received my medical exam, the cardiologist said he found a serious heart condition.” A friend recommended Dr. Paul Phillips, who gave Morgan a second EKG. A few agonizing days later, Morgan got the call. “He called me at 8 p.m. Saturday night to say the EKG test was erroneous and that I was fine. For a doctor to call a patient on the weekend, it was a terrific gesture. I was sweating it out, worried about this test.” As one of the most successful entrepreneurs in the automotive and tire industries for 40 years, Morgan built a small seven-store dealership with The Firestone Tire & Rubber Company into a 137store chain. When he left Firestone, he founded retail tire company, Tires Plus, growing it into a one billion dollar corporation before selling it in 2000 and retiring. That’s when a friend asked him to get involved with the community hospital systems. The astute businessman dug in and tried to find solutions, but quickly learned that “business and healthcare are two different worlds. Joining the board committees proved to be beneficial in other ways for Morgan. He “became smitten” watching the healthcare providers working and spending time with them to learn hospital
