Dear Reader, There is a song from Jimmy Buffet’s Floridays album where he describes the process of seasonal visitors returning back to the Northern regions and leaving the locals with all the quiet that remains. He describes it as a time when he is able “to talk to himself again.� The title of the song is a perfect sentiment for our area. Setting the tone for the time we are now entering here in Tampa Bay, When The Coast is Clear. Don’t get me wrong, I love seeing our annual visitors pile in each year to their second homes or one of our beautiful beach resorts. They bring with them an appreciation for our area that just in case one of us forgets, reminds us of how lucky we are to live here. They bring their capital which invigorates our economy and are in no doubt a critical part of our cultural and fiscal eco-system. But for now it’s all ours. Over the next seven or so months, we get to enjoy our beaches, golf courses, great restaurants, and the performing arts. And, for the most part it’s just us locals. We’ll be glad to see our Northern friends return again, and will continue to do so year after year, until like the song says, they depart and “The Coast is Clear.�

Latin-Asian Fusion Bin27 Bistro takes Latin-Asian Fusion and kicks it up a notch with interesting pairings of ingredients and cultures like the Guava braised osso bucco cut beef rib with roasted garlic boniato mashed, stewed vegetables, sweet plantain, and citrus gremolata. Orange miso-glazed sea scallops includes candied bacon quinoa, edamame, pickled red onions, and ginger jus. nce, the idea of a visit to a spa conjured up thoughts and images of deep relaxation, exquisite pampering and serene surroundings. Though those ideas and visions still hold true, today’s spa goers are looking for green spas, and Florida delivers in spades. “The spa industry has been on a green kick for a long time,” says Linda Dennis, spa director, Sandpearl Spa. “It’s just now that the rest of the world is catching on.” Here we take a look at four spas throughout the state of Florida who are green not only in treatments, but in practices as well. Our tour begins at Verde Spa in the Bellasera Hotel in Naples. The cozy spa has three well-appointed treatment rooms, all of which are warm and inviting—and green. Verde Spa offers solely vegan nail polish for manicures and pedicures; soy wax is used in place of paraffin; body treatments feature fruitand vegetable-based scrubs; and the towels, linens, robes, and even cotton balls are all made of organic cotton. To reaffirm its commitment to the environment, Verde Spa donates a percentage of all services to the Conservancy Center of Southwest Florida. “People are more mindful of what they’re putting on their skin and into their bodies,” says Lynn Domenici, spa director, Verde Spa. “We teach clients about green practices that they can take home with them to use in their everyday lives.” Verde Spa’s signature treatment is the Mojito Massage; Mojito facials and manicures and pedicures are also on the menu. These signature treatments all feature a combination of organic cucumber, mint, and sugar blended together to

invigorate the skin—and the sense of smell. The massage also includes a mask of locally grown citrus fruit and extra virgin coconut oil—both organic—and hot and cold stones. Another unique offering at Verde Spa is Bamboosage, during which a massage therapist uses a combination of heated bamboo and rattan with traditional Swedish or deep tissue techniques for absolute relaxation. The Bellasera Hotel is part of the Florida Green Lodging Program, an initiative of the Florida Department of Environmental Protection, showing the property’s overall dedication to being green. Next stop—the Sandpearl Spa at the Sandpearl Resort on Clearwater Beach. The Sandpearl Spa prides itself on being a health and wellness spa, not just someplace to get a massage, though they offer more than a hand-

ful of different—and not often heard of—varieties. Since the spa opened in October 2007, Spa Director Linda Dennis says she has found that a number of guests are looking for hotels, resorts, and spas that are green-friendly, and notes that a number of the spa’s guests visit because it is green. The spa and resort, recently awarded the AAA Four-Diamond Award for 2009 and also part of the Florida Green Lodging Program, are adamant about taking care of the environment, both locally and on a broader scope. Everything used within the spa and resort is recycled.


Next stop, the Little Green Spa in Orlando. Owner Lisa Behrens recently moved her spa from a 500-square-foot location in Orlando’s Thornton Park just down the road into a larger space in Winter Park. The spa incorporates green practices throughout, and is decorated with recycled and restored furniture and tiles for an eclectic, cozy feel. Though the space may be small, there’s nothing slight about the treatments! “I opened Little Green Spa as an allorganic spa, and we gradually evolved into an all-green spa,” said Behrens. “Through the spa, we are raising awareness for our guests of the organic and green options that are out there and putting our green stamp on it.” Behrens and her staff take a holistic approach to each of the treatments offered, and ask guests what they would like to get out of the treatments. The Signature Body Iridescence is one of Sandpearl Spa’s signature treatments. Throughout the course of the 90-minute treatment, the therapist incorporates Swedish and deep tissue massage with a lemongrass and sweet basil oil, followed by Thai stretches to further loosen and relax the body. Finally, the warm Sabai herbal balls are applied to pressure points, much like acupuncture, but without the needles. The aromatic herbs used in the balls are derived from a traditional Thai recipe, creating a unique aromatherapy experience. Going green is not anything new to the spa industry, as you can see by the spas highlighted here. As Dennis noted, “It’s part of the (Sandpearl) spa’s culture to educate our guests, and it’s part of our culture to be green.” It looks like the rest of the world is finally catching on! dR

Cirque du Soleil’s Saltimbanco

O

nce upon a time, a small band of performers wandered the streets of a town near Quebec City. Actors and jugglers, musicians and fire-breathers, the Baie-Saint-Paul Stiltwalkers became the High Heels Club and, finally, Cirque du Soleil. A quartercentury later, the troupe has grown into a premier international arts organization, stretched across the globe under big tops and in arenas, delighting audiences with thousands of performances every year. As Cirque returns to the Tampa Bay area in June with its signature touring production, Saltimbanco, duPont REGISTRY™ chatted with Carmen Ruest, who began her Cirque du Soleil career as a stiltwalker and now serves as the company’s Director of Creation.

Q: And your audiences? A: The tent was very small. Not more than maybe 400 seats. The first tent we were using, we use now for merchandising. We re-use everything—this year we made bags out of the old big top we had.

Q: Do you still have your stilts? A: My first stilts are in the archives, but I have a new pair they built for me for the twentieth anniversary performance. The first performance was Firebreather, and we did it again in 2004 for the anniversary—it was so beautiful.

Q: Do you remember your very first performance? A: Well, the first year, I wasn’t performing. I was pregnant—my daughter is as old as the Cirque. I worked the first ten

Q: How has Saltimbanco evolved since its 1992 premiere? A: The main concept remains the same, but the show has grown to find its own artistic personality. It has grown in a way, as well, that is bigger than the sum of all of its parts. We left some pieces here and there, touring, to respond to the concept. But at some point it is perfect. It’s like a book: A writer reads his book a couple of times, but at some point he stops.

Q: What was it like in the early days? A: Back then, we were living in the same house and sharing everything, and the only thing important in life was creating. We believed we were dream merchants. And 25 years later, the dream continues, and it works. We risked everything we had, but the passion was bigger than anything else—the freedom and the feeling of creating together was so strong.

Q: And you've reached that point? A: The concept works. It's really rich and visual. The location is an imaginary city, in a park, and characters come from different villages alone or two by two. They don't really know each other at the beginning. But they start to connect with one another, and they begin to discover new people and they make friends. In the second act, the characters add their own unique personalities and they're really having fun. That's why it's timeless. It's about what's within you that brings you to evolve within yourself—and this can be done with fun and joy! The show has such a strong, vibrant personality. It's a timeless concept, and it'll go on. It rocks! There are five musicians live onstage. We have 47 artists from 19 or 20 countries.

Q: You performed five years ago? A: It's like going on a bicycle or ice skating—you don't forget.


Q: How do you translate the intimacy of the traditional Cirque big top into an arena like the St. Pete Times Forum? A: The way we set the stage, we recapture the arena to give the feeling of the big top. We don’t go more than 4,500 spectators in the arena. We close the end with curtains, and it feels like a bigger big top. You’re still going to see interaction—that's really important and strong under the big top, and we don’t let that go. Our reference point is the Royal Albert Hall. We do not want the last row of spectators to be farther away than they are in the Royal Albert Hall. That’s the scale.

Q: It's interesting to consider that your performers were athletes first. A: Yes, we need high-level acrobatic skills, so we take them right after they've finished their competitive careers. But it takes work to go from trampoline competition to the Russian flyer. You have to be in character, and singing, and all the rest—it's not the same.

Q: There’s a moody, mysterious, almost dark feeling in some of your shows. La Nouba, for instance, the permanent show in Orlando, is strikingly different from the whimsical, lively tone of Saltimbanco. A: You know, death is part of life, and we cannot hide it. In La Nouba, the cleaning lady is scared to death but discovers a beautiful universe. In her imagination she embarks on a trip—she doesn’t believe it exists, but once she accepts it, well, wow! The world is opening! Q: You create the space for the imagination to take over? A: We find a new universe to create. We're not knocking on the door—we’re pushing the door open. Q: Do you have a favorite show? A: Well, of course, there’s a lot of myself in all the shows I’ve worked on. Over the years what I prefer the most is the chance to give creative artists a place to express their talent and give joy to the world, you know? As long as there will be crazy creators and artists to do that, I love my job. It’s true, that you can make your dream come true. We did. We want everyone to believe that. dR

Q: Do you have many performers who have been with the company since the beginning? A: It’s possible to have so many different careers in our company. I’ve had many different roles. Often you will see an exartist becoming a coach or casting scout, or a dance coach or artistic director. For example, we have acrobats who want to do something else, and we help them focus on what they want to do and where they want to go. Many artists start their career with us, and transform their sports ability into learning how to become an artistic performer. We give them dance classes, we help them learn how to do character work. We transform them into beautiful performers, and they go beyond where they expected they would go. We support them in whatever they want to do when they are finished acrobatic performing.

Q: In the creative process, developing a Cirque show, are you influenced by the spirit of the times? A: Yes, exactly. When Saltimbanco began, we started seeing young families and young adults leaving the villages, their small cities, to go to big cities. We were living in Montreal, and the creators were saying, “If you want to go out of where you are and experience something else in your life, it can be positive.” Experiencing that in yourself, that evolution, can be fun. You can have a blast. It can be good for the world as well. That’s what we see visually in Saltimbanco.

Glazed Expressions “Ceramic tile has an amazing lifespan,” reminds Patti Fasan, CTC consultant for Tile of Spain. “It is chemically inert, which means it will not fade or deteriorate. Tile inhibits the growth of mold or mildew, which is perfect for Florida.” It is also fire-resistant, which allows tile to be used creatively in outdoor living areas, such as an outdoor shower, fountains, around or even in a pool or spa. Look for slip-resistant tiles for wet-area applications. Fasan points out the new innovative raised-tile-floor system from Natucer, which is ideal to level uneven surfaces or surfaces with an incline. he west coast of Florida is well known for its subtropical climate, endless sunshine, miles of sandy white beaches, and ruby hued sunsets that set the Gulf of Mexico aflame each evening. But there are hidden gems, too. Tucked into busy neighborhoods and in places you’d least expect them, you’ll find public gardens that truly are the jewels of west Florida. They’re among some of the most beautiful in the state and internationally known for highly prized collections. There are many types of gardens to explore, from the tropical and palm gardens you’d expect in Florida, to themed gardens featuring roses, fruit trees, herbs, butterfly plants, cactus and succulents, orchids, native plants, and much more.

Whether you’re an avid gardener or just looking for an adventure, visiting one of the local public gardens offers a new take on the great outdoors— Florida style! The oldest garden in the area is St. Petersburg’s Sunken Gardens, which is owned and operated by the city. Aptly named, it’s located below street level in what was once a lake bed. In 1903, the six-acre property was drained and planting began in the rich muck soil. By the 1920s, the unusual tropical garden was drawing visitors at a nickel each. Today the historic garden is home to some of the oldest tropical plants in the region. Visitors enjoy strolling along paths surrounded by more than 50,000 tropical plants and flowers, waterfalls, demonstration gardens, a butterfly house/ garden, pink flamingos, and caged tropi-

Organic Sulfite Panic

owadays, it seems that everyone is interested in organic wines. It’s just too bad that so many of them are interested for the wrong reason. Mainly, people feel that organic wine is the path by which to avoid sulfites, which might be considered a health concern to a not-sooverwhelming 1% of the population who are allergic or sensitive to them. First, we need to understand what organic wines and sulfites are and how this whole sulfite issue became linked with organic wines. As you might imagine, organic wines are produced from organically farmed grapes: meaning that no chemical fertilizers, pesticides, fungicides, or ionic radiation can be used in the vineyard. There are several degrees of domestic organic wine:

Sustainable Agriculture: These are wineries that make a conscious effort in vineyard conservation, but somehow fall short of the other organic designations.

Made from Organically Grown Grapes: The grapes are grown organically in the vineyard, but the addition of sulfites is permitted. Organic Wine: To be labeled “Organic Wine,” it must be produced entirely from organically grown grapes and can contain no added sulfites. Biodynamic: Producers take organic practices a step further by adding biodiversity (good bugs eat bad bugs, etc.) to the vineyards and incorporating lunar 78 www.duPontREGISTRY.com/TampaBay

cycles, homeopathy, and astronomy. For the purposes of organic certification, the United States Department of Agriculture (USDA) determined that sulfites are an unnecessary additive. Sulfite (a.k.a. SO2 or sulfur dioxide) occurs naturally as a byproduct of fermentation in tiny amounts. Besides this, winemakers will often add sulfites to kill wild yeast strains for a more controllable fermentation. Also, the sulfites act as a preservative. The USDA also requires all wines with more than 10 parts per million in sulfites to indicate “Contains Sulfites.” Now, let’s have a quick run-down of some common misconceptions about sulfites:

Sulfites are inherently bad for you: Sulfite is a naturally occurring 1.

substance that even the human body produces. “Contains Sulfites” on a wine label is intended for the protection of allergy sufferers just the same as “Contains Peanuts.” 2. Organic Wines don’t have sulfites: Since sulfites are a naturally occurring by-product of fermentation, most wines will have minute amounts of sulfite. However, wines labeled as “Organic Wine” made in the U.S. have no additional sulfites. If it does have additional sulfites it can still be labeled “Made with Organic Grapes” if the vineyard is certified organic. European and


international standards differ from the U.S. and it is not uncommon on European bottles to see “Certified Organic” along with the ever-popular “Contains Sulfites.” 3. “Red wines give me a

Organic and Biodynamic wines have come a long way since the advent of organic winemaking. Organic wines still suffer from an unwarranted belief that quality is somehow sacrificed for the price of the organic practices. There are a great many producers who have always been organic but don’t indicate it on the label or don’t care to be bothered with the certification process. Collectors might be surprised to find that some of the greatest cult wines produced in the U.S. like Araujo and Spottswoode are organically farmed. Many great European wine estates like Zind Humbrecht and Nicolas Joly can also make this claim. One of the major difficulties in selling organic wines is that most of the producers fail to put anything on their labels regarding their organic or sustainable processes. The fact is that producers who strive to make the best product often include organic practices, not for the sake of organic practices, but for the sake of the wines themselves. Organic and biodynamic wines represent the finest and purest product of the vineyard and that is why we should be interested in them. dR

Badia a Coltibuono Chianti Classico Riserva 2005 $35.00 (Italy Certified Organic): One of the most iconic Chianti estates, Coltibuono has long produced some of the best wines in the region. Deep brick red color with aromas of black cherry and bramble, rhubarb and spice. Blackberry and dried cherry flavors are evident on the palate. This vintage brings great ripeness and structure. A quintessential Chianti.

Benziger “Signaterra” Sauvignon Blanc Shone Farm Vineyard, Russian River 2007 $29.00 (Biodynamic): Benziger is one of the pioneers of organic winemaking in America. The nose reveals layers of ripe kiwi and honeydew melon. There are flavors of red grapefruit and papaya, finishing crisp and dry on the palate. Elegant and expressive.

Chevy made us wait seven years for a new Camaro. But the wait was worth every minute.

W

e’ve waited seven long years for this. An all-new Chevy Camaro, flame red with a fire-breathing 6.2-litre Corvette V-8 up front packing 426 stampeding stallions. So what are you going to do when you finally slide behind the wheel? You’re going to burn some rubber. Right? Juvenile, I know. But there’s nothing like slotting that stubby shifter into first, dialing-up 6,000 rpm on the tach, and simply stepping off the clutch. Yeee-hah. Talk about fricasse’d Firestones. With 420 lb-ft of torque being channeled to those monster 20-inch rears, the smoke just billows like a Malibu brush fire. Heck, you could read War and Peace, or learn Swahili, before the rear tires finally hook up and the Camaro charges off on its merry way. Here is the new pony car king; a true American muscle car that mangles the new Mustang and kicks the butt of Dodge’s new Challenger. See it in the metal, and the Camaro’s cascading, curvy lines are enough to

Timothy Raines is a prominent local lifestyle artist with a passion for the best life has to offer.
