While Santa was a bit busy for an interview just before the holidays, Richard Camp, the manager of the North Pole Alaska Post office, talks about North Pole living, letters to Santa and so much more. duPont: What do people usually think of North Pole, Alaska before they visit? Camp: People normally associate North Pole, Alaska with THE North Pole. North Pole, Alaska is a small community about 15 miles from Fairbanks, Alaska, and about 140 miles south of the Arctic Circle. We are both equally as frigid in the winter months, with temperatures dipping as low as -63 degrees and colder in low-lying areas. duPont: Tell us about the holidays there. Camp: There is no place on earth like North Pole during the holidays. With only three hours of daylight, the town is glowing for months with Christmas lights! Preheat oven to 350 degrees Mix all of the dry Ingredients together for about 2 minutes, slowly add in the wet ingredients and mix for 3 minutes. Add the almonds and cherry/pineapple mixture and continue to mix for 3 minutes. Dust the counter with flour and spread out the desired amount of dough on the table and work it into a log form. The mixture will be sticky so if you need more flour please use it. Place the newly formed log onto a tray and place in the oven for 25 minutes or until it is stiff to the touch. Take out of the oven and slice it into slices. Place back in the oven for 10 minutes to toast.

Lavender Creme Brûlée Spoons

½ tsp of vanilla ½ cup of sugar
Preheat oven to 275 degrees Servings: 25 Whisk the cream, egg yolks, sugar, lavender syrup and vanilla together in a bowl. Mix it all up until it gets nice and creamy. Line your spoons up on a baking sheet, ladle the mixture carefully into the spoons. Put the sheet pan into the oven and pour water into the bottom of the pan; be sure not to get the water in the spoons. Bake for 10 minutes or until set, continue baking and checking every 2 minutes until it doesn’t giggle. Remove from oven and let stand at room temperature for 15 minutes to cool. Sprinkle with a thin layer of sugar, make sure it covers the entire surface of the custard. Torch , or if you don’t have a torch place under the broiler for a minute or so until golden and firm to the touch.

Preheat oven to 350 degrees Cake: Prepare two nine-inch cake pans, or one rectangular cake pan with butter and waxed paper liner. Cream the butter and sugar until light and fluffy, then add the eggs slowly. Sift the flour, baking soda, salt, and cocoa powder together, then slowly add to the butter-sugar-egg mixture. Combine the vanilla extract, buttermilk, vinegar, and red food coloring, then add to the cake batter. Mix slowly. Divide the cake batter between the two pans, and bake for 20-25 minutes. Cool the cakes before icing with cream cheese icing. Cream Cheese Icing: Mix the butter until creamy. Add the cream cheese and mix until smooth. Last add the powdered sugar and mix briefly. Ganache: Heat the heavy cream to a boil. Pour over chopped chocolate and stir until smooth.

Strawberries: 2 qts strawberries, quartered cup granulated sugar 1 tsp vanilla extract
Pound Cake: 1 cup butter 6 eggs 3 cups granulated sugar
3 cups all-purpose flour 1 pint heavy whipping cream 1 tbsp vanilla extract
Grease and flour one 9- or 10-inch tube pan. With an electric mixer, cream butter and sugar until fluffy. Add eggs one at a time and mix well. Introduce flour, one cup at a time while adding cream a little at a time until all flour and cream are well mixed. Add vanilla and blend well. Pour batter into prepared pan. Bake for 1-1/2 hours or until center springs back from small amount of pressure. Immediately turn out on cake rack to cool. When cooled to room temperature or lower, cut into ¾-inch slices. Strawberries: Mix with sugar and vanilla in mixing bowl and place in refrigerator for at least 2 hours. Whip cream at this time as well if not already prepared. Assembly: 6 ¾-inch slices of pound cake; 3 tbsps butter, room temperature; Granulated sugar for dusting; 3 cups strawberries from above; 2 cups sweetened, whipped cream. Serving: Heat large skillet on low flame. Butter both sides of each slice of pound cake and coat with granulated sugar. Place pound cake slices in hot skillet and cook until golden and crispy on both sides. Place on serving plate(s), top with strawberries and whipped cream. Duck Breast: Combine ingredients 2-10 in a small bowl. Sprinkle over the duck breast and allow to cure 24-hours, covered in refrigerator. Breasts can be hot smoked on charcoal grill at low temperature by adding soaked tangerine wood to an internal temperature of 140 degrees. Duck breast can be chilled and refrigerated for up to one week. Florida Citrus Vinaigrette: In mixing bowl add first five ingredients, mix, slowly add oil and season to taste. Dress baby greens with Florida citrus vinaigrette and arrange decoratively on four chilled plates. Arrange 3 ounces of sliced smoked duck over greens. Salad: Garnish each salad with cranberries, pistachios, and Maytag blue cheese.

A classic celebratory French preparation Preheat oven to 500 degrees Pate Choux 20 ozs water 1 cup unsalted butter 1 ½ cups all-purpose flour
7 whole eggs salt ½ cup heavy cream Pate De Fruit
16 ozs fruit puree 1 cup sugar 1 oz apple pectin 6 ozs sugar
3 ozs water 1 3⁄ citric acid 103 ozs warm water
Pate Choux: Bring water, salt and butter to a full boil. Add flour, turn down your heat to medium and stir wooden spoon until dough begins to pull from the sides. Put dough in a 5-quart mixer with paddle attachment. Mix at speed 2 and allow to cool slightly. Add 1 egg at a time until fully incorporated. Cool until warm but able to put in a piping bag with a medium round tip. Pipe quarter sized, 1-inch tall balls on greased parchment paper, evenly spaced apart to allow for size expansion in oven. Once all piped out, dip your finger tips in the cream and smooth out pate choux balls, any valleys or folds will create uneven pastries. Cover with herbs or cheese. Turn oven down to 450 degrees and bake 10 minutes. Turn cookie sheet, turn down oven to 350 degrees, bake for another 20 minutes till golden brown. Set aside to cool. split pastries and fill with ice cream or whipped cream. Sprinkle with powdered sugar and serve. Pate De Fruit: Line a shallow container with plastic wrap. Sprinkle even thin layer of granulated sugar and set aside. Mix the pectin and 6 ounces sugar and set aside. Mix citric acid and water and set aside. Cook fruit puree and 1 cup sugar in a pot to a light simmer, stirring all the time. Add water and pectin/sugar mix and continue to cook over medium heat and stir. Cook till 107c / 225 f. When temperature is reached take the pot off the heat and add the citric acid/water mixture. Stir for 1 minute getting all the sides and bottom. Pour into the plastic lined shallow container. Give 1 to 2 taps so that it evens out. Immediately sprinkle an even layer of sugar over the top and set aside for several hours to allow sugar to crystallize. Cut to shape and toss gummies in sugar. Will hold for up to 1 week at room tempature. 74

Innisbrook Bread Pudding with Creme Anglaise Sauce from the kitchen of Chef Andre Halston Preheat oven to 325 degrees Bread Pudding: 6–8 large croissants 4–5 each muffins, your favorite 2 cups chocolate chips or 1 cup chunks
3 cups peach pieces 3 cups heavy cream 3 eggs ¼ cup honey
2 tbsps vanilla extract 8 ozs Mascarpone cheese Creme Anglaise Sauce: 3 vanilla beans
1 quart whole milk 6 ozs granulated white sugar 12 egg yolks
Bread Pudding: On a cutting board, rough chop the croissants and muffins into ½-inch pieces. In a bowl add the cream, eggs, honey, vanilla and Mascarpone. Whisk for 2 minutes. Add the croissant, muffin, chocolate and peach pieces. Mix until the liquid is completely absorbed. Apply a light coating of butter spray into each baking dish. Place equal amounts of the croissant mix into each baking dish level with the top of the dish. Place the dishes onto a baking tray and into the oven. Bake for 40–45 minutes—until golden to nutty brown crust forms on the edges of the croissants or muffins and the liquid is bubbling in the center. Remove and serve immediately with the Creme Anglaise sauce. Creme Anglaise Sauce: Cut the vanilla beans in half lengthwise and add them to the milk. Bring milk to a simmer. In a bowl, add sugar and egg yolks. Whisk until all of the sugar is dissolved and the yolks become a pale yellow. As the milk approaches a simmer, remove the vanilla beans and scrape the inside of the beans to remove the tiny beans and place the tiny beans and whole stems into the warm milk. When the milk has come to a simmer (slight roll), pour half of it into the yolk mix and gently whisk. Add the whisked egg yolk, milk and sugar mix into the pot with the remaining milk. Over medium heat stir and be sure to scrape all the edges of the pot. Do not let the cream boil. Check the consistency of the sauce by holding the spatula sideways and making a streak along the face of the spatula with your finger. When the streak remains without the sauce running down and obscuring it, the sauce is ready. Immediately remove the sauce from the heat and continue to stir for 2 minutes. Serve as needed.

1 air dried 4 to 5 pound Long Island duckling 6 ozs soy sauce 6 ozs Lingonberry preserves
2 shallots, minced 1 cup ruby port wine 1 tsp duck fat 4 ozs duck jus
Duck: To air dry duckling, unwrap, rinse and pat dry one fresh duckling. Place in refrigerator two to three days unwrapped so skin dries completely. This ensures a crispy duck. To roast duck, dip in soy sauce and bake at 325˚degrees for three and a half to four hours, until skin is golden brown and crispy. After roasting duck, reserve cooking liqueur (pan drippings). Duck fat will separate from duck jus when poured into tall, narrow, clear container. Cool duck to room temperature. Slice duck in half and remove all bones except leg bones. Reserve duck for service. Cranberry Port Wine Strat: In sauté pan, sauté minced shallots in about a teaspoon of duck fat. Discard remaining duck fat. Add four ounces duck jus and port wine and reduce by half. Add wild cranberry preserves and hold for service. For service, reheat ducklings at 450 degrees for 15-20 minutes until totally crisp and piping hot. Simmer strat in saucepan and napé (coat) the plate with sauce. Single slice duck breast. Stand leg and thigh on starch of choice for garnish. Sauté duck breast, skin side down until most of fast is rendered. Turn and cook to medium rare. Remove duck breast from heat. In the same pan, sauté 2 ounces of sliced andouille sausage, add sun-dried tomato pesto and heavy cream and reduce, stirring occasionally until slightly thickened. Add cooked linguini, stir to combine. Remove from heat. Place linguini in serving bowl, thinly slice duck and fan out over pasta and place sausage nicely on top.

2 Cornish game hens, halved 2 lemons 1 bunch of thyme ¼ cup olive oil Kosher salt to taste Cracked black pepper to taste

¼ cup red wine 1 bunch of Thyme 2 cloves garlic 1 cup Craisins
Preheat oven to 400 degrees Yields: 4 Hens: Zest lemons with a micro plane. Pick the leaves off the thyme and put in a bowl. Add olive oil, juice from the lemons and salt and pepper. Rub mixture onto the Cornish hens. Bake for 20 minutes or until internal temp is165 degrees. Remove from oven and let rest for 10 minutes. Potatoes: Boil potatoes in salted water until cooked through. Put in a bowl and add cream, butter, salt and pepper. With a fork, crush potatoes and stir until liquid is incorporated. They should be lumpy. Carrots and Onions: Blanch carrots in simmering water for 2 minutes. Place on grill for 2 more minute’s. Season with salt and pepper. Peel onions and toss in olive oil salt and pepper. Wrap in tinfoil and bake for 20 minutes. Chicken Craisin Jus: In a medium size pot add chicken stock, wine, garlic and thyme. Reduce by half. Remove garlic and thyme and add the craisins. Reduce by half again or until the reduction coats the back of a spoon.

1 whole rabbit, about 2 ½ lbs ½ cup Pancetta, diced 1 cup onion ¾ cup celery ¾ cup carrot 2 pts red grape tomatoes
1 pt yellow grape Tomatoes 2 sprigs each of fresh basil, oregano, sage, thyme ½ cup dry red wine 1 tbsp garlic 3 tbsp tomato paste
32 ozs chicken stock Olive oil Salt and pepper Shaved parmesan, for garnish 2 lbs fresh pappardelle
Preheat oven to 350 degrees Quarter the rabbit and season with olive oil, salt and pepper. Render pancetta in 2 tablespoons olive oil over medium-high heat until brown. Remove and reserve. On high heat, sear rabbit until golden brown and place in a baking dish. Sauté carrots, celery, onion, and garlic with a pinch of salt and pepper until tender. Deglaze pan with red wine. Add tomato paste and chicken stock. Tie herbs together with butchers twine to make a bouquet garni. Add to the pan. Bring to a boil and reduce for 3 minutes. Pour over rabbit. Cover with foil and braise for one hour. Dry roast the grape tomatoes for about 20 minutes or until slightly brown and outer skin begins to split. Remove rabbit from the liquid and allow to cool. Discard bouquet garni. Add roasted tomatoes and braising liquid to a sauce pan and boil. Puree sauce until combined and return to low heat. Pick the rabbit off of the bone and add to sauce. Cook fresh pappardelle 3-4 minutes or until al dente. Remove from water. Toss with ragu and garnish with shaved parmesan, fresh sage, and basil leaves. dR www.duPontREGISTRY.com/TampaBay 77

hen you hear the name “SideBern’s” you probably think of a small restaurant affiliated with Bern’s Steak House that serves similar fare as Tampa’s classic restaurant. Baked Ricotta Cheese Charred pork belly, vadouvan vinaigrette Baked Ricotta 1 lb ricotta cheese 4 egg yolks 1 tbsp salt 1.5 ozs heavy cream ½ tsp espelette chile pinch fennel pollen zest of 2 lemons and 2 oranges 1 tsp each minced thyme and oregano Mix all ingredients and allow it to rest for 1 hour at room temperature. Bake in a water bath at 350 degrees for 30 minutes or until center is barely set. Allow to cool at room temperature for 30 minutes before serving.
Pork Belly 1 lb boneless pork belly, skin removed 1 gallon water 1 cup salt ¼ cup maple syrup ¼ cup sugar Combine water, salt, sugar, and syrup to dissolve. Submerge pork belly in brine solution and refrigerate overnight. After brining overnight, remove belly from the liquid and rinse under cold water, discard the brine. Roast pork belly in a 300 degree oven for 2 hours or until tender. Cool pork belly under refrigeration and allow to rest overnight. Place belly fat side down on a preheated charcoal grill. Cook over a low flame until fat begins to render and gets a dark brown char. Finish cooking belly in a 400degree oven until thoroughly heated. Allow belly to rest for 10 minutes before carving.
Vadouvan Vinaigrette 2 tsps vadouvan ½ tsp shallot, finely minced 1 tsp whole grain mustard 1 oz red wine vinegar ½ oz cider vinegar ½ oz honey 2 tsp mint, chopped 2ozs extra virgin olive oil ½ oz hazelnut oil, toasted Combine all ingredients except the two oils, mix until thoroughly incorporated. Emulsify both oils into the spice mixture, season with salt and pepper Assembly: Place the room temperature ricotta in the center of a plate. Top the cheese with the thinly sliced pork belly. Spoon vadouvan vinaigrette over the top and allow to pool around the cheese. Garnish with a salad of raw seasonal vegetables. Serves 6 dR

all weather has arrived, and we can finally throw open the windows and enjoy the crisp mornings and evenings, not to mention the cool, sundrenched days. This is what we’ve waited for since summer, right? The weather can be deceptive, though, and oftentimes makes it hard to get in the holiday spirit. Fortunately, there are plenty of holiday events near and a bit further away to put a little jingle in your step. Lace ‘em up! “Winter” arrives when outdoor ice skating returns to downtown Tampa beginning November 11 with Tampa’s Downtown on Ice. The coveredyet-outdoor ice rink is open daily through
January 1, 2012 in Curtis Hixon Waterfront Park. Tampa’s Tree Lighting Ceremony kicks off the holiday spirit on December 2 from 7 to 8 p.m., also at Curtis Hixon Waterfront Park. Singer Belinda Womack will perform, and the tree lighting is followed by a screening of Elf in the park. Santa Fest and the Downtown Holiday Parade continue the festivities on December 3, again at Curtis Hixon Waterfront Park. The parade begins at 11 a.m., and you can spend the rest of the day visiting Santa, making holiday crafts and playing hands-on games and activities. Reindeer take flight and find their way
to the 12th Annual Wild Wonderland at Tampa’s Lowry Park Zoo. In addition to real-life reindeer, Santa stops by to find out if your kids have been naughty or nice while you tempt your tastebuds with treats from the “Sweet Shoppe.” Mr. and Mrs. Claus visit Lowry Park Zoo.

Joining the fairies are sparkling seven-foot butterflies, dragonflies and a tree frog. Santa makes an appearance here, too, along with his elves in his workshop and toyland. Everybody Loves a Parade With all the waterways that surround the Bay area, it’s no surprise that there are a number of holiday boat parades. The way the lights twinkle off the water is magical. Not surprisingly, there are a number of parades to choose from in Pinellas County. The Holiday Boat Parade in Dunedin starts the festivities December 3 at 6 p.m., followed quickly on December 9 with the St. Pete Beach and South Pasadena Holiday Lighted Boat Parade, beginning at 6 p.m. in Pass-a-Grille and heading north up Boca Ciega Bay. The 25th Annual Illuminated Boat Parade begins at Spa Beach Park in downtown St. Pete at 6:30 p.m. on December10 (best viewing is at Spa Beach Park, and along Bayshore Drive NE and Fifth Avenue North). Treasure Island’s Holiday Boat Parade sets sail December 12 at 6:20 p.m., making its way to John’s Pass at 8:15 p.m. Five days later, the Holiday Boat Parade takes center stage in Indian Rocks Beach on December 17 at 7 p.m. There are plenty of lighted boat parades in Hillsborough County, too! On December 4 and 23, lit sails take to the waterways around Davis Islands, Harbour Island and through Garrison Channel during Twinkle in Tampa Bay: A Holiday Lighted Boat Parade. DOLPHIN TALE RED CARPET SCREENING Clearwater got a taste of Hollywood at the Dolphin Tale Red Carpet Screening September 21st. Supporting cast, producers and directors showed up for the exclusive screening at Ruth Eckerd Hall which also served as a major fundraiser for Clearwater Marine Aquarium and the Challenged Athletes Foundation. The movie was inspired by the true story of Winter the Dolphin, a resident at the Aquarium. Much of the movie was filmed at Clearwater Marine Aquarium, and Winter played herself. More than 2,000 guests enjoyed the first opportunity to see the movie and an exclusive After Party. Dolphin Tale opened in theaters September 23rd, and is receiving wonderful reviews in its global release.

“You’ll know when you feel that 4.4-liter V-8 and eight-speed automatic transmission!” exclaimed Gary Gordon, general manager of Fields BMW of Lakeland. The new 4.4-liter V-8 and eight-speed automatic transmission on this car join forces to offer effortless acceleration, accompanied with a slightly muted burble designed to inspire but not intrude. The new smaller engine is a part of the most expansive redesign of the BMW 6-Series since it was first introduced for 2004. The 4.4-liter V-8 is fed by a pair of turbochargers and produces 40 more horsepower while decreasing fuel consumption by nearly nine percent. Longer, lower, and wider, the new car is larger in every dimension than its predecessor except height, where it now sits nearly half an inch closer to the ground. Passenger comfort is improved, specifically rear-seat space. There are approximately 300 additional pounds, although it is still faster compared to last year’s model. The new metal is taunt, fooling some to believe the new
650i is smaller than the outgoing car. The 650i Convertible offers a unique convertible mechanism. It provides a small rear window that can be raised or lowered independent of the cloth top. This allows the rear window to be down when the top is up to push more air through the cabin or up when the top is down to act as a wind deflector and aid in a quieter cabin. And a quiet cabin it does have. Even at speeds reaching 90 mph with the top down, we could still hold a conversation when all the windows were up. Gordon talks a great deal and with childlike enthusiasm about how all BMWs are engineered to be superior driving cars, handling the curves and straight-line dashes as well as any sports car.
He explains that it’s the brand’s headway with the latest technologies and well-appointed interiors that make it standout in the luxury class. This was apparent the first time we jumped in the comfortable chairs and stared up at the hard-to-miss 10.2-inch display at the top of the center console. A knob just right of the gear selector controls most of the various driver technologies. Some features currently offered include surround view via five well-placed cameras, night vision with pedestrian recognition, parking assist, and warning systems for unintentional lane changes. Dances With Fish By Janan Talafer
Getting eye to eye with enormous fish is all in a day’s work for Tony “H2O” Ludovico, an extraordinary photographer who specializes in the art of free diving in open ocean. Forsaking scuba gear and tanks, Tony simply grabs a mask and snorkel, camouflage wetsuit and fins. With no fear, he slips into the middle of the action, 20 feet below, ready to shoot an image of a lifetime. Over the years, Tony has trained himself to hold his breath for several minutes at a time, which allows him to blend seamlessly into the natural marine environment. Using ambient light, he captures the dazzling blue, silver, green and yellow colors of the fish, either swimming alone or in big migrating schools. His photos showcase everything from manatees and sea lions to large pelagic fish like tuna, marlin, mahi mahi and sailfish. A portion of proceeds from his art, a new clothing line and other marine-inspired products help support various nonprofit marine organizations, such as the Pelagic Ocean Conservancy Project, which promotes sustainable recreational fisheries management.
