TAKAT More than 24 years after the search began, it was found: a Colombian emerald of unprecedented size and quality. At 108.88 carats, it’s just a tad smaller than the palm of your hand. With the addition of its setting adorned with 72.27 carats of diamonds, it’s a rare and regal creation from India’s TAKAT Rare & Unique Jewels. Named for the family behind it, TAKAT began in 1955, when Haji Nisar Ahmed Takat opened a precious stone cutting business in Jaipur, Rajasthan, India. The emerald itself was found in Colombia, and then transported to New York, where it took its appropriate emerald-cut shape. It was set as the centerpiece of a stunning diamond necklace, with round, marquise and pear cut diamonds encasing it. 25.25 carats sit directly next to the emerald, while the diamond Foliat spacer chain with round and marquise cut diamonds totals 47.02 carats. The complete necklace embodies timeless elegance in every way possible, and is a standalone piece that turns its wearer into royalty. The total look include earrings and cocktail ring. CHRISTMAS MORNING COFFEE Delicious and Decadent Nothing beats the aroma of freshly ground coffee beans and the first sip of a perfectly brewed cup of coffee. Grasshopper Peppermint Latte ¼ cup whole milk 1 ounce crème de menthe liqueur 1 tablespoon chocolate syrup 5 ounces coffee chocolate syrup for garnish In a small saucepan over medium heat, warm the milk until it just begins to steam. Add the crème de menthe and the chocolate syrup to the warm milk and stir to combine. Pour the warm milk into a large 12-ounce mug. Brew a 5-ounce cup of


coffee and add to the mug of warm milk. Stir and garnish with a swirl of chocolate syrup. Makes 1 serving. Buttered Praline Coffee 5 ounces coffee, brewed hot 1 tablespoon heavy cream 1 ½ teaspoons dark brown sugar 1 tablespoon butter 1 ½ tablespoons praline syrup Brew a 5-ounce cup of coffee. Combine the coffee, cream, brown sugar and the butter in a small saucepan over low heat. Simmer until the sugar is dissolved, stirring often. Add the praline syrup, stir to blend, and serve warm. Makes 1 serving.

Three-dimensional computer imaging can help patients get an idea of how they might look after treatment. But for someone who may only want to start with something small and noninvasive, “we can inject a small amount of saline to give them an idea of how filler might help,” said Dr. G. Dr. G. also enjoys “secondary” or revision cosmetic surgery to correct a previous treatment by another physician. “It’s challenging but rewarding to help someone who is unhappy,” said Dr. G. He performs revision surgery for facelifts, rhinoplasty (nose surgery) and breast augmentations and lifts.

GIVING BACK Dr. Randy Feldman is an orthodontist who has donated his time and talent to the Tampa Bay community for nearly 30 years. He holds two clinical professorships at the USF School of Medicine, volunteers his skills at All Children’s Hospital, and for 25 years offered college bound students a chance to win $1,000 scholarships for writing an essay answering the question, “What a Smile Means to Me.” He has received both a Lifetime Achievement Award and recently won the Tampa Bay Lightning Community Hero award.

Why did you become an orthodontist? In school, I was intrigued with making/carving things out of wax. I was very good in dental school...made beautiful crowns, inlays and jewelry. Then I realized after obtaining my DDS I wanted to specialize. I have a lot of artistic talent (leathercraft, model building, etc.) and was good with my hands so after an Oral Medicine residency at University of North Carolina/Chapel Hill, I gravitated to orthodontics, which I absolutely love! I will practice until I cannot physically do so. What drives your philanthropic passion? He who much is given, much is expected. Therefore, by the Grace of God go I.

What has been your most personally rewarding charity? I have been involved in a lot of charity work. Just a few include: eight years on Make a Wish Foundation board and three years as president; 44 www.duPontREGISTRYtampabay.com

Vice President of Voices for Children of Tampa Bay; Guardian Ad Litem 13th Judicial District; and currently eight years as Board Chair for More Health, Inc., where I’ve served 15 years. And they are all wonderful. I love being involved, as I am a true “child advocate.” However, the most personally rewarding experience is helping kids with birth defects through a team at All Children’s Hospital called Children’s Medical Services. “It is truly professionally satisfying to make such an amazing difference.” We are involved with patients who require Orthognathic or Craniofacial surgery. Our team has been seeing kids “gratis” since 1982 for craniofacial birth defects including cleft lip and palate. I see the kids every third Friday at USF Community Hospital and All Children’s Hospital and have for the last 29 years. It is becoming a lost art as the treatment times extend at least 18 to 20 years. However, the rewards are tremendous!

A RIVER RUNS THROUGH IT Paris is essentially a city of neighborhoods, and the arrondissements by which it is defined spiral outward from its center like a snail’s shell, divided by the River Seine. These neighborhoods each hold their own character and personality, and are best discovered on foot, easily traversing from one to the next, crossing this bridge and that. One such neighborhood is Montmartre, with the risqué Moulin Rouge at its base and domed Sacré Cœur Basilica towering above. Climbing upwards, lanes lined with cafes, boutiques, patisseries and boulangeries meander their way towards the basilica at the top. HOTEL-STYLE BEDS AT HOME It’s a perfect ending to a beautiful day—a full night’s sleep under a lovely thick duvet on crisp cool sheets next to perfectly arranged pillows in a beautiful hotel room. The sheer indulgence of it all is enough to make you want to buy the bed en masse. Which makes us wonder. Just what does it take to re-create the hotel bed experience? THE FIRST LAYER The Europeans invented sumptuously comfortable beds and the world’s finest hotels imitated them—layering mattresses with a fitted down mattress pad or feather bed, then finishing with a deliciously thin fitted sheet. The feather bed envelops one in luxurious warmth, says Maruchi Azorin, owner and founder of Villa Rosa Distinctive Linens in Tampa.

THE SECOND LAYER—It’s all about the sheets. Egyptian cotton grown in Pakistan and woven in Italy on Swiss-made equipment creates the world’s softest, most long lasting sheets. European linen companies in Italy, Portugal and France have created the world’s best sheets for a century or more. This year, French brand Yves Delorme celebrates 170 years. Much ado is made of thread count, yet “a thousand thread count from India can’t come close to a 300-count Egyptian cotton from Italy,” Azorin says. Egyptian cotton’s exceptionally long thread length allows for more supple threads during weaving, creating a stronger foundation that improves and softens with use. From there, buyers need to discover their favorite weave. Percale offers a crispy cool firm experience while sateen provides a smooth satiny feel.

Start with a comforter amply filled with goose down sourced from Siberia. Make sure it is boxed stitched to ensure the down stays in place and pick a loft level to suit your budget and taste. The higher the loft—or percentage of goose down—the thicker, plusher the look and the warmer its feel. Encase it in fitted duvet cover. Look for duvets with attached ties or consider Yves Delorme, which sizes its duvet covers to fit their comforters perfectly.

THE FINAL LAYER A coverlet is critical to creating a luxury sleep experience, explains Bridget Pina, manager at Ethan Allen—Brandon. This simple light piece lies above the flat sheet but below the duvet. Traditionally, the warmer duvet is folded once lengthwise along the bed’s bottom. The coverlet creates a visual transition, is often a little more decorative and allows sleepers an option to the duvet. The pillows—this is where it gets personal. Soft, medium, firm, it’s all up to you. Excellent customer service can make this step a lot easier. A customer once asked Pina to recreate a bed from the Biltmore. The customer sought help from the Ethan Allen design team and matched the bed by testing mattresses and pillows, inspecting linens, and creating a custom fitted topper with accessories.

Hotel bedding traditionally runs plush and generous but contemporary furniture lends itself to a sleeker, tighter look. At Doma Home Furnishings, owner and founder Dave King found the latest linens trade bulk for fitted bedspreads designed to expose the bed’s clean lines and signature woods. Linens themselves are layered in a mix of textures giving visual depth to the tone on tone palate so popular this season. To add a designer look to the room have custom pillows crafted in a velvet, linen, even channel or silk fabric that draws on colors reflected throughout the room, suggests Jen Kravchuk, interior designer with Decker Ross Interiors.

AVOID MISTAKES Before buying sheets and duvets, consider your mattress’s height and compare it to the drop length of the sheeting, Pina says. Beware of mattresses that need 20-inch drops, most of these beds require custom-made sheeting. Wash Egyptian cotton sheets carefully—don’t plunge them in hot water and then bake in a hot dryer. The heat breaks down the cotton fibers; shrinks the sheets and causes pilling. Don’t be afraid of the price tag—a top tier set of sheets can become a heirloom. “I’ve had customers come in with their grandmother’s sheeting from Italy and it was still beautiful,” Alzorin says. If mixing and matching is too daunting, consider working with an independent design firm that represents manufacturers such as Eastern Accents. This Chicago-based business sells only to the design industry and provides high-end, complete bedroom ensembles in multiple styles and colors, explains Kravchuk.

“Hotels change the sheets often and iron them,” explains Azorin. The ironing lends the fabric a most fabulous feeling. However hotels must follow strict cleaning guidelines, laundering their linens in 170-degree water, a temperature that would destroy high-end sheeting. To compensate, they contract with linen companies to produce cotton polyester blends crafted in India that can withstand high heat and heavy use. Not so romantic anymore, is it?

hat is it about Christmas that makes us want to decorate our homes with bits of greenery and sparkle? There is nothing more magical than walking into someone’s home during the holidays and oohing and aahing over the beautiful décor. “What we want to create is a Christmas wonderland,” says Priscilla Castellano of Andrea Lauren Elegant Interiors. She suggests starting with a theme and colors. Greenery, in the form of garland and wreaths is a must. Lots of ribbon and memorabilia are also fun. Vintage décor is the latest trend, along with materials like burlap and raffia, but add interest with a pop of color, especially red, which is always a “winner,” says Castellano. Dee Marksberry with Gage-Martin Interiors loves a classic, traditional Christmas with lots of red and green, including garland, live trees and magnolia leaves for a festive touch. For extra glamor, she suggests placing red roses or red ilex berries in crystal or silver bowls on tables or the fireplace mantle. Add tiny white lights and sprinkle silver glitter on everything for a sparkling finish. Wreaths on the front door, swags on the mantle and the banister, and the tree itself are most obvious areas that call for a little Christmas magic. A beautiful table centerpiece with greenery, candles and ornaments is also a nice focal point. But for something unexpected, how about attaching a beautiful red bow to a wreath and hanging it from a bookcase or cabinet, or in place of art on the wall? Tuck a tiny piece of greenery into a napkin ring or on Christmas packages. Place small tabletop trees in bedrooms and the balcony overlooking the pool. You can even wrap a little greenery around pendant lights in the kitchen. Whether you hire a professional decorator or take pleasure in doing it yourself, a little planning can go a long way to create a lovely polished look for the holidays.

CHOCOLATE SABLEE TART WITH LIMONCELLO CURD (pastry chef Samantha Miller) Limoncello Curd Ingredients Zest of 2 lemons 1½ cups granulated sugar 2 ozs butter 4 whole eggs ¼ cup fresh lemon juice ¼ cup limoncello liqueur ½ tsp salt In a pot, combine lemon zest, sugar, salt and butter. Heat on the stove until butter is melted. Whisk in eggs, lemon juice and limoncello. Cook over low heat, stirring constantly with a spatula until thickened. Remove from heat. Strain curd through a strainer. Cover the curd with plastic wrap directly on the surface to prevent a skin from forming. Chill and serve. Yields 2 cups of curd. Chocolate Sablee Tart 1½ cups all-purpose flour ¼ cup Dutch process cocoa powder ½ cup granulated sugar

½ tsp salt 4 ozs cold butter (cubed) 2 egg yolks 2 tbsps heavy cream ½ tsp vanilla extract Combine all dry ingredients in a bowl. Work in the butter by hand until it is the size of small peas. Form a well in center of the mixture and add eggs, cream and vanilla extract. Mix until just combined. Turn dough out onto a floured surface and knead until dough is formed. Chill dough for 30 minutes. Roll dough ¼-inch thick and place into desired tart pan. Bake for 12-15 min at 350 degrees. Bubble Sugar Topping 6 ozs isomalt crystals (divided into 3 small bowls) Yellow gel food color Orange gel food color 2 half pan size silicone baking mat 2 half sheet pans In one bowl of isomalt, mix a very small amount of yellow food color, toss to combine. Repeat with a second bowl for the orange gel color. Keep the third bowl plain. Line one pan with a baking mat. Sprinkle all of the isomalt crystals evenly over the top of the mat avoiding the sides. Top with second baking mat and second half pan. Bake at 400 degrees for 15 minutes. Remove top pan, but do not remove the top baking mat. Turn oven down to 300 degrees and bake for an additional 5 minutes. Allow to cool completely and store in a dry plastic container. Break into smaller pieces as needed. Yields one half sheet of bubble sugar. Assemby: Place Chocolate tart on plate and fill with Limoncello Curd. Place fruit of choice on top and insert brown sugar topper. Yield: One tart

Crab Cakes: Mix ingredients gently by hand. Be careful not to break up the lump crab meat. Form into 4 1 ½ oz cakes. Sear in a hot pan until desired brownness. Hollandaise Sauce: Whisk egg yolks, water, vinegar and lemon juice in a bowl over simmering water. Whisk to a peak. When cooked slowly add butter. Season with Tabasco, cayenne and salt. Sautéed Spinach: In a hot pan melt butter. Add garlic. Cook until garlic is translucent. Add spinach. Cook for 2 minutes. Pour in ¼ cup white wine. Season with salt. Cream butter and brown sugar until light and creamy. Add vanilla, red food coloring and oil, mix well. Add in eggs one at a time, mixing well after each addition. Sift together all purpose flour, cocoa powder, baking powder, baking soda and salt. Add to mixture alternating with buttermilk. Cream until smooth. Bake at 350 degrees, in any desirable pan, for 20-35 minutes. Cream Cheese Icing: Cream all ingredients. Ice cooled cake and sprinkle velvet cake crumbs on top.

Preheat waffle iron to #5 heat setting. When heated spray with nonstick pan spray. Pour batter onto preheated waffle iron. Cook. Once waffle is done transfer to a cutting board. Cut waffle into four equal sections. Transfer to a warm 12-inch oval platter and shingle slightly on each other from left to right down center of platter. Drizzle the icing over the waffles. Dust with powdered sugar. Place strawberry quarters over each of the waffles. Then dust the edge of the platter with cocoa. Criss cross bacon slices on center of waffles as seen in photo. In a medium size bowl, add half the water and the bread. Soak until soft. Add remaining water, cauliflower, garlic, and almonds. In separate batches blend on high until smooth. Add vinegar and season to taste. In bottom of bowl, combine some of the tomatoes, almonds, argula and shimp. Pour gazpacho into bowl.

Eggnog French Toast With Cranberry Ginger Chutney Preheat electric skillet to 300 degrees

Chutney 2 12 oz bags of cranberries 1.5 cups sugar 1 cup orange juice 1 cup water

Chutney: Combine the first six ingredients in a medium sauce pan. Bring to a boil stirring until sugar dissolves. Boil until cranberries pop, about five minutes. Let cool and add ginger. Reserve for french toast. French Toast: Cut brioche into 12 thick slices. Set aside. Mix eggs, eggnog and spices in large mixing bowl. Preheat slightly greased electric skillet to 300 degrees. Dip one slice of bread at a time into eggnog mixture; being sure to coat each side of the bread thoroughly. Place prepared bread slices in skillet and cook. Turn once until golden brown. To Serve: Lay French toast on a serving platter and top with chutney, pecans and maple syrup.

Lobster: If using a whole lobster simply take an eight-quart pot with about 2 inches of boiling water in bottom. Add lobster. When bright red or tentacles pull off, the lobster is done. Immediately add to an ice bath to stop the cooking. When cooled, crack claws and tail and remove the meat and set a aside. Filet: Cut filet into four, two-ounce medallions (size of mini silver dollar pancakes). Lightly salt and pepper each side of medallions. On high heat sear each side of your two-ounce medallions about 45 seconds to one minute on each side. Set on top of a toasted English muffin. Poaching Eggs: Fill small four-quart sauce pan with water. Add one teaspoon white vinger (helps to keep egg whites together). Bring to a light boil. Gently crack egg and let fall lightly into water. After three to four minutes, use slotted spoon to remove your poached egg. Set atop the steak on your English muffin. Tip: While your eggs are poaching cook your steak. Cheating tip: Butter a muffin pan and use to cook eggs. Some people get touchy about poaching eggs. Reheat Lobster: Saute lobster in butter. Once warm, set on top of poached egg. Hollandaise: In a double boiler, whisk together egg yolks, lemon juice, cold water, salt and pepper. Gradually whisk yolk mixture into butter for six to eight minutes till sauce thickens. Yields: 30 1-2 tsps Cajun or Creole seasoning 2 tsps prepared horseradish 1 tsp lemon juice 1 tsp Louisiana Red hot sauce 1 large clove garlic, pressed 1 tbsp fresh parsley, chopped

Crab filling: Mix all ingredients except crab until smooth. Gently fold in crab meat. Keep mix chilled. Use one-ounce scoop to portion small balls onto a sheet pan. Batter: Mix all dry ingredients in a large bowl. Pour in beer and mix. Add hot sauce to taste. Cooking: Heat vegetable oil to 350 degrees. Drop crab balls into batter one at a time and lift out with a teaspoon. Gently place into oil and fry 4-5 minutes or until golden brown and hot all the way through. You can fry several at a time but do not crowd in the oil. Keep warm in 200-degree oven. Remoulade Sauce: Mix all ingredients in a bowl and serve with crab beignets. Clean squid. Remove skin, all internal parts, cartilage, eye and tooth, and hard part below. Cut the two wings removing tentacles. Tentacles and wings will be used in topping. This makes a “bag” for the filling. Stuffing: Heat pan over medium heat. Fry garlic clove in olive oil. When golden, add chopped wings and tentacles, capers and olives. After 5 minutes, remove from heat. Take out garlic and move to bowl. Add soft bread crumbs, bread crumbs, chopped parsley, Parmesan cheese, 2 eggs, salt, pepper and mix. Cool. Fill squid without reaching up edge. To Pan Cook: Heat pan with olive oil and garlic clove. Lay stuffed squid in pan. Pour in a glass of dry white wine. Pumpkin Spiced Bread Pudding Benedict Preheat oven to 300 degrees

Serves: 10 1.5 loaves marble rye bread, cut into large cubes 6 cups cream 2 cups milk 2 tbsps sugar 3 tbsps herb salt 1.5 tbsps black pepper 15 eggs 3 tbsps pumpkin spice Pumpkin Spice

CHEF JASON CLINE ½ cup ground cinnamon 2 tbsps ground allspice 1 tbsp ground nutmeg ½ tbsp ground cloves ½ tbsp ground ginger Maple Peppercorn Glaze 1 cup maple syrup 1 tsp each salt and pepper 1 tsp white wine vinegar 1 lb bacon, in 3-inch pieces

Brown Butter Butternut Squash Hollandaise 1 cup cooked butternut squash puree 1 qt clarified butter, browned and kept warm 6 egg yolks 2 tbsps lemon juice 2 tbsps warm water 1 tbsp Korean red pepper

Pumpkin Spiced Bread Pudding: Spray and line half-sheet tray with metal riser. Combine bread and herbs in bowl. Whisk eggs, milk, cream, salt, pepper and sugar thoroughly. Pour mixture over bread. Mix for 3 minutes. Pour bread and egg mixture halfway into riser lined sheet tray. Bake at 300 covered for 45 minutes. Remove foil and bake 15 minutes or until golden brown and firm to touch. Pumpkin Spice: Mix ingredients together. Maple Peppercorn Glaze for Bacon: Mix ingredients except bacon and simmer for half hour. Bake bacon pieces at 350 until crisp. Add to glaze until coated. Brown Butter Butternut Squash Hollandaise: In a double boiler add the egg yolks, lemon juice and water. Whisk until mixture thickens. Do not scramble eggs. Remove the bowl from the heat if it gets hot too quick. Once the eggs thicken, remove from heat. Slowly whisk the brown butter into the egg mixture. Once all the butter is incorporated, whisk in the butternut squash puree and the Korean red pepper. To Plate: Cut two 3-by-3inch squares of the bread pudding. Sear both sides of the bread pudding in a saute pan until lightly caramelized and warmed through. Place the bread pudding side- by-side on a round plate. Place two pieces of bacon on top of each of piece. Poach two eggs and place on top of the bacon strips. Ladle one ounce of the hollandaise on top of each egg. Slice chives and toast. Serves: 4 1 pound cranberries, dried 1 cup red onion, chopped 1 cup red wine vinegar 2 cups water 1 cup sugar 1 orange, zest of 1 orange, juiced 2 tsps gelatin or corn

starch slurry (¼ ± cup water and cornstarch mixed together) 1 tsp salt

If using gelatin, add all ingredients in medium sauce pot. Bring to boil. Turn down heat and simmer for 5 minutes. Let cool. If your using a corn starch slurry, add all ingredients except the slurry. Bring to boil. Cut back heat. Slowly add slurry till the rellish just starts to thicken—you may not need all the slurry. It will thicken more as it cools. Simmer for 5 minutes. Let cool. WARM UP THIS WINTER WITH A HOT TODDY Though our temperatures can sometimes dip down into the 30s and maybe even the 20s, we still have it fairly easy when it comes to winter here in the Tampa Bay area. That doesn’t mean, however, that we don’t enjoy all the finer things of winter—sweaters, fireplaces (albeit outdoors) and warming drinks. Here are a few twists on the hot toddy from some of our local bartenders.

“The rum lends spice to the cocktail without adding too much sweetness, and the Amaro adds a nice bittersweet component,” said Courtney. “The lavender adds to the aromatics of the cocktail and pulls together nicely with the nutmeg which rounds out the flavor from the spices in the rum. Finally, the orange brings out the subtle orange blossom in the honey syrup.”

red Fisher recalls that in the 1930s, when silk stockings were first introduced, his grandmother bought a gross, handing them out to women

who couldn’t possibly afford them.

Today, more than 70 years later, Fred continues that family tradition of philanthropy. Since his retirement as a founder and CFO of U.S.

Home Corp. in 1981 when he was 49 years old, he’s spent nearly every waking moment committed to community and charitable pursuits. His motto is: “If you have some talent and ability, then you have a moral obligation to put it to work.” In the mid-1980s, when he was chairman of capital campaigns for both the University of Florida and Clearwater’s Long Center he jokes that his wife Aleta would have agreed that there were times when he probably should have taken a paid job in order to take a week off. The UF capital campaign raised $393 million and included his gift to name the Fisher School of Accounting –the largest private gift to a public university in Florida at the time. Over the years, many landmark Clearwater organizations, including the Long Center, Ruth Eckerd Hall, St. Paul’s School and Clearwater for Youth sports program have benefitted greatly from his generosity, commitment to community service and leadership skills. But it is the Long Center that has held special meaning for him. A family tragedy was the initial inspiration behind Fred’s vision for this center, which opened its doors in 1990 and has since evolved into a spectacular community recreation and education center for children and adults on 16 acres in Clearwater. “The Long Center was a dream come true,” said Fred, now chairman emeritus of the Long Center Foundation. “It required a significant investment of time and people over many years. I feel extremely proud as I reflect on what has been accomplished.” The Long Center Foundation provides ongoing support to help with operational expenses related to the center’s outstanding features, which include a beautiful indoor Olympic size swimming pool, a smaller instructional-therapeutic pool, fitness programs, youth sports fields, three court gym and two playgrounds, one designed for children with physical disabilities. The ARC of Tampa Bay, an organization for intellectually and developmentally disabled individuals, and Clearwater For Youth are also housed there.
