Happy Holidays he Holidays I’m sure you would agree that the holidays can’t come soon enough this year. The world has been faced with enormous challenges and it’s time for all of us to have some lighthearted cheer jump off these pages. While breaking down the word HOLIDAYS, I wrote down the first words that came to my mind. I thought I could sprinkle in some health and wellness tips along the way for all of us to consider through the season! I hope you enjoy and consider while fa la la la laING through the holidays!

H - HAPPY Being happy comes to mind when I think of the holiday season. It’s a time to share our joy and good-natured spirit with friends, family and sometimes even complete strangers. It is not uncommon to walk by someone you don’t know during the season and wish him or her “HAPPY HOLIDAYS!” Smiling while opening all of your gifts, seeing relatives and friends from distant places and relishing in the joy in the eyes and smiles of children makes us happy. In the health and wellness industry we put a lot of focus on avenues to get happy! If we take care of our insides first, our outside will certainly follow the map leading to the road of happiness. TIP TO CONSIDER: do something kind for someone else. It’s the most inexpensive way to get happy!

O - OPTIMISTIC Being optimistic through the holidays isn’t always easy! Sometimes, it’s a sad reminder of loved ones who have passed, romantic breakups or memories of a difficult year. dR Travel am stirring cream into my steaming coffee, lulled into a contented post-lunch linger as much by the delicious meal as by the train’s steady chuga-chuga-chuga-chuga when I hear an urgent command, “Bear, to the right.” With a fifty-percent chance of picking the correct “right,” I swivel my head and look out the picture window across the aisle in time to see the black bear, motionless between the treeline and the tracks, its head up as though it is equally curious about us. Cheers and applause erupt. The excitement of our shared top-tier wildlife sighting changes the “me” dynamic on this slow-travel adventure to an “us.” Soon after, our on-board hosts Lauren and Queenie, lead a game upstairs of Name That Tune. The playlist is from the 50s, 60s and 70s, an indication of the general age of most guests, and the participation level is high. Everyone has a touch of the Sillies, brought on by a combo of cabin fever and an open bar of BC wines and top-shelf liqueurs and spirits. I am on a two-day train trip from Vancouver, British Columbia to Lake Louise, Alberta. Yes, that Lake Louise, the one from the postcards with the castle-like hotel on the shores of a glacier-fed lake in Banff National Park. It was along the Canadian Pacific tracks we’re traversing where the last spike was planted in 1885, completing the railway and bringing British Columbia into the fold of the nation. It also brought tourists, in whose footsteps we follow, into these mountains. This is not the kind of rail travel you choose to reach a destination. You take a Rocky Mountaineer trip for the luxurious front-row seat it affords to some of the most breath-taking, awe-inspiring scenery in the world; to cross trestle bridges over steep canyons, to watch waterfalls ribbon down sheer rock-faces, to ride alongside rivers both placid and white-capped in hues ranging from mud to gemstone. The ultimate prize, though, is to be surrounded by the magnificent Rocky Mountains, her jagged snow-capped peaks a dramatic backdrop in every direction. The Rocky Mountaineer is a bucket-list trip for many who also wish to take an Alaska cruise or cross the Atlantic Ocean on the Queen Mary. Cameras, smartphones and tablets are always present, snapping photos, that is. There is no Wi-Fi on board. The intention is to look out, not down. Our journey began the day before, when coach buses delivered us from the Four Seasons Vancouver to the Rocky Mountaineer station at oh-dark-early. A pianist woke us up as he played through a travelthemed repertoire (think Route 66 and Chattanooga Choo-Choo) on a baby grand while servers roved the flower-filled hall with morning beverages on trays. Flocks descended on the souvenir racks, women wrapping themselves in sweaters in anticipation of a cooler couple of days ahead. Overhead, the hands on an enormous backlit clock-face ticked closer to departure until the stationmaster, with the help of a bagpiper, gathered everyone around for the ceremonial whistle and “all aboard” call. The kilted piper played on until the last passenger had climbed the red-carpeted steps to their assigned car. Uniformed Rocky Mountaineer employees lined the platform, waving good-bye as the train pulled away from the station.

By: Megan Padilla Though 760 passengers are traveling today, only 70 are on my Goldleaf car and we, along with four hosts and three culinary staff, are a self-contained unit. Goldleaf cars are glass-domed doubledeckers with spacious, adjustable leather seats on top and a dining room below where guests choose their chef-prepared meal from a menu and are served at four-top linen-clad tables that are pressed against picture windows. A Julia Child quote graces the back of the menu, “People who love to eat are always the best people.” From an outdoor platform, you can smell the pine, hear the train and watch the landscape unfold at a gentle pace: An old barn on a river bank, a hawk riding an updraft. This is where the photographers with real cameras hang out, and those who just want to feel an extra bit of happy. The second morning after boarding in Kamloops, I watch the way the light and shadows shift on the landscape as the sun rises, mist is trapped across a stretch of mountains and families of ducks cut their path across still waters. A woman named Dolores wearing a yellow shirt waves to the train from the porch of her yellow house as we pass through Canoe. She greets every passing Rocky Mountaineer train this way. The mountains become more imposing with each passing hour as we near Banff National Park. Westbound trains haul their cargo in open-topped cars. Heaps of glistening black coal and day-glow yellow sulfur pass directly beside my window as their locomotive pulls them westward. I sip chardonnay from a vineyard in Osoyoos, the southern part of BC’s Okanagan Valley. Lauren picks up the mic to explain that we’re behind a 10,000foot long freight train that can’t pull over for us to pass. No one knows how long we’ll be delayed. The culinary team springs into action, preparing an unexpected dinner of curried chicken with coconut rice to be served at our seats. Simon & Garfunkle’s “Homeward Bound” is playing over the speakers and headlights glow from the Trans Canada Highway across the river, reminding me of a longago road-trip with my parents through these same Canadian Rockies. I recall the silhouette of mountains against a darkening sky, my dad’s excitement at seeing a bighorn sheep on steep rocky incline and giving up my count of elk, moose and deer and goats once I’d reached 100. Again, I am a passenger, in charge of nothing, grateful to connect with that long-ago memory. It is pleasurable to ride, to just take it in. To be immersed in these mountains. G

dR Quick Getaway ou can’t escape the history and romance that fills the legendary streets of the nation’s oldest continuously occupied city. Established in 1565 by Spanish explorer Pedro Menéndez de Avilés, St. Augustine is a city as rich in history as it is with charm. Filled with historical landmarks, ghostly legends and local favorites, St. Augustine is a favored destination for all ages. At the heart of the downtown district overlooking Matanzas Bay stands the fortress-like architecture of the city’s only AAA Four-Diamond resort. Even the landmark Casa Monica Resort & Spa, with its 138 guestrooms and suites adorned with custom-designed features like plush red velvet and gold accents, has a storied history. Originally known as the Casa Monica Hotel, owner Franklin W. Smith opened its doors in the mid-1800s with three guests. After a few years, business tycoon Henry Flagler bought the building and ran Smith out of business, but legend says that you can still see Smith’s ghost, a crying man, perched on the balcony of the hotel. At the invitation of The Kessler Collection, I stayed a few days at Casa Monica and explored the family-friendly city, offering adventures perfect for exploring solo, as a couple, or with children. The historic district is spread over a few city blocks, but even at the height of tourism season, St. Augustine never feels crowded. This city is perfect to explore by both land and water. From the moment, you step inside Casa Monica’s lobby from the valet tunnel, you are immersed in a luxury experience. There is attention to detail everywhere you look – from the exquisite artwork adorning every wall to an inspiring collection of jazz playing in the guest rooms. Dining is a symphony of global fusion flavors with an array of seafood, poultry and meat dishes created by Chef Fred Mero for breakfast, lunch, and dinner. Employees are known as “Grand Performers” whose singular focus is to create a memorable guest experience, and they enthusiastically share their perspectives on St. Augustine. Hotel General Manager Kimberly Wilson is one of the most visible staff, greeting guests with a dose of personal hospitality, a genuine extension of her customer service background working at several Ritz Carlton and Marriott resorts for almost 30 years. The hotel’s art gallery is filled with pieces that hotelier Chairman and CEO Richard Kessler has chosen from his family’s collection. He is known for hand selecting and arranging the artwork in each hotel, and all of the pieces are available for sale. The hotel’s Poseidon Spa is a sanctuary of relaxation for weary travelers, offering an array of skin and body treatments. The hotel’s Spanish style romanticism surrounds the terrace pool and nearby Sultan’s Pavilion, the perfect locale for hosting an outdoor celebration under the stars.

Guests can enjoy food and beverage service, a private beach, family pool and adults only pool area. The resort sits high atop the dunes overlooking the historic coquina filled beach. Locals tell you that exploring the ancient city by water is a must do. Charter boats and catamarans offer a water view of St. Augustine, often described as a small Sausalito, California from years ago. Pack a picnic lunch for an afternoon of boating and drink in the history from a different perspective. Sailors weave tales from the sea sharing the history on how the water played a role in protecting it from invaders. Nearby Anastasia Island, an area rich in coquina shells (Spanish for “small shells”), helped fortify the 315-year-old Castillo de San Marcos, the impenetrable Spanish-built fort that protected the city from attacks. Managed by the National Park Service, visitors can tour the fort for an up-close history lesson. The daily cannon firing reenactment by the soldiers is not to be missed. For an eagle eye view of the city, the St. Augustine Lighthouse and Maritime Museum rewards visitors with a spectacular panoramic view over the city to the Atlantic Ocean. But that view comes with a hefty hike - 219 steps each way – to get to the top of the lighthouse. The city’s Old-World charm is found along its cobblestoned streets with local favorite boutiques and eateries tucked down side streets and alleyways, like the Floridian restaurant, The Hyppo gourmet ice pops, and Cousteau’s Waffle and Milkshake Bar. The St. Augustine Distillery is a hometown favorite, creating handcrafted spirits using locally farm grown ingredients and aged in oak wood barrels piled to the ceiling. A guided tour with owner Phil McDaniel offers nostalgia on the building and the history on the communityinvested distillery – and, of course, free tastings. The city comes alive at night with revelry from live entertainment and plentiful ghost tales. In search of spirits, our group booked a dead walking tour, a 90-minute history lesson and ghost hunt. Our tour guide Ashley, a very animated and enthusiastic Flagler College student, shared her knowledge about the named ghosts that haunted buildings and along dark streets. On occasion our hand-held ghost detectors would light up, indicating the presence of a floating spirit. It was exhilarating and spooky! No matter your adventure, St. Augustine offers something for everyone to explore the past and intersect with the present at every turn. G

he holidays are here and with the season comes the delight of decorating your home. While the outdoor menagerie of lights and lawn ornaments often reveals the more whimsical, playful side of our tastes, your interior decor speaks a more personal tone. Traditional or trendy, your holiday heart is revealed inside the home. For many, the holidays are an emotional time of year, reflecting on childhood memories of days gone past and favorite moments with family and friends. It can be an occasion to deck the halls with traditional favorites or create a fresh, modern tone, but while it is tempting to show off every trinket, too much sparkle isn't a good thing. “Decor should feel seamless and should communicate with an emotional component,” explains Darin Bahl, owner and lead designer with Tailored Twig in Tampa. Ian Prosser, owner and event/floral designer at Botanica International Design & Décor Studio in Tampa, likes to incorporate suggestions of the holidays around the home. “Don’t move things out of the way to decorate or clear off pieces that already make your home interesting.” The challenge is to create a theme that reflects you, not a showroom. “You should show the happiness in your life, like items you collected from travels, the flea market or family heirlooms,” says Krayl Funch, a home and event stylist in Tampa. That sentimental feeling should be cohesive in every room, with particular attention where you spend the most time, such as the family or living room. “In my own home, I have one tree set up in the formal living room. I also set up another tree where I decorate with ornaments from my travels and then display a more casually decorated tree in another room,” Prosser says. “Every room tells a different story.” You can set up mini trees in the kids’ room that are decorated with school-made ornaments so they can create a winter wonderland and show off their personalities. Small details make a big difference. Funch changes pillow covers to add a pop of color and uses different holiday glassware for entertaining. Change out bedding in the bedroom and add a few accent pieces at the foot of the bed or around the mirror. Displaying mini trees in the kitchen, bathroom and home office is also trendy. If you prefer using the same trinkets and ornaments every year, you can still make them appear different by designing a new display. Add a new tablecloth or centerpiece or use varying heights to create interest. “If you have a two-story home, don’t limit the décor to the downstairs. Make it special with twinkle lights or garland so you can experience the holidays in every corner,” says Funch. “Mantels are one of the most beautiful places to decorate. I use flameless candles as a high-end way to tie together floral arrangements,” says Funch. Cheryl Pacheco, owner of CarlsonWildwood Florist in Largo, recommends weaving aromatic greenery on mantles and staircases to add a warm touch, accenting with pine cones or acorns and dazzling with twinkle lights. Designers say the spectrum of colors this year favor silver and gold,

with hints of burgundy and some brighter shades of green, but traditional red and hunter green will also remain popular. A shift to warmer, softer tones with rose gold is also gaining popularity. Whatever color you choose, be consistent. If you opt for white lights, find arrangements that complement the theme, such as white poinsettias. If you prefer the colored “jellybean” lights, mix with foliage such as red poinsettias or a blooming cactus. Blending the outdoors is an essential feature in the home, especially when choosing artificial or fresh arrangements. Fresh is best, says florists and designers, whether it’s the towering Christmas tree or the centerpiece on the dining room table for holiday meals. The smells of the season begin the minute you walk into the house, by adding a fragrant wreath to the front door. “Fresh arrangements give life and communicate that feeling to guests who come into your home,” says Bahl. He takes a cue from his Midwest upbringing and brings in the outdoors whenever possible. “In Florida, we have so many native pieces to use, like Brazilian peppercorn, known as ‘Florida holly’ with its festive bright pink and red tones.” At The Potting Shed in Tampa, owner Sharon Smith and her team have been creating artful, organic arrangements for more than 40 years. One of the shop’s signature traditions is to design a vibrant display in containers that customers bring in, with fresh holly, pine cones and other foliage in shades of hunter green and red wrapped in soft ribbons with wire. “We’re very organic in our arrangements and love bringing the outdoors inside,” she says. “We help our customers create beautiful holiday elegance in everything we do.” Whether lavish or simple, use these tips to find your holiday style to create a home dressed for the season. t’s that special time of year when family and out-of-town guests converge upon your home to share good times, joyous memories and tasty treats. Gatherings will focus on the kitchen as typically that is the heart of any home. Unfortunately, the season may bring the realization that your kitchen is in dire need of a makeover. No matter its size, the kitchen is a big part of today’s household. As you contemplate visions of renovation, here are a few ideas to make your kitchen more inviting and functional, whether you’re hosting a holiday feast or a casual Sunday brunch. Cabinetry Trending high on today’s kitchen remodeling designs is a butler’s pantry. Functioning as a bridge between the kitchen and dining room, the butler’s pantry helps with staging large parties with a serving counter and cabinetry on one or both sides. Often used to display fine china and crystal, the area may also incorporate a sink to facilitate ease of entertaining. Gone are the days of wall-to-wall cabinets, according to Nancy Braamse with Olde World Cabinetry. “Homeowners are opting for an array of open shelves that enable quick access to dinnerware and glassware. ” says Nancy. Storage is now contained under the counter with the use of large drawers and base cabinets. “I see a lot of clients wanting two islands now one with a prep sink and work area plus another outer island for guest seating.” Color selections in cabinetry today are primarily white, gray or blue punctuated with brushed brass and gold hardware. Thanks to the popularity of Mediterranean and Spanish influences, Nancy projects the color of the year for 2018 will be caliente, a shade similar to that of a chili pepper. Counters are topped with quartz, a material held in high demand because of its durability and style. “Everybody loves the look of marble but it’s not as user friendly as quartz,” says Nancy. Quartz resembles marble, is super durable, easier to clean and resists stains and scratches. Available in a wide range of colors, quartz is similar in cost to granite. Appliances Spend less time cooking and cleaning and more time socializing with ovens, ranges and cooktops that incorporate connected technology. “The built-in presets and monitoring features on connected appliances take the guesswork and constant monitoring out of the cooking process, allowing more time to interact with family and friends,” says Jennifer Hettich, showroom manager at Ferguson Bath, Kitchen & Lighting Gallery in Tampa. Large commercial-sized ranges are ideal for preparing large quantities of food more efficiently. “Today’s offerings are more elegant and understated, but still provide high-powered performance and hard-working functionality,” Jennifer says. Add a warming drawer which maintains food temperature and freshness for up to six hours. Cut cooking time and enjoy foolproof recipes with a convection steam oven. Cooking with steam keeps food tender inside and maintains its nutritional value, while the circulating convection heat speeds up the oven time without overcooking. “A convection steam

oven gives you the best of both worlds and is especially popular because of the emphasis on healthy eating,” says Jason Horst, director of marketing, Famous Tate Appliance & Bedding Center. Because of their smaller size, convection steam ovens preheat faster and are designed to bring out the best flavors from casseroles to standing rib roasts and even leftovers. Clean-up is next on the list. Dishwashers today operate more efficiently utilizing less water and electricity and with much less noise. Thankfully, pre-washing dishes prior to loading is no longer necessary. Some models also feature a quick wash cycle which enables you to provide clean glasses throughout the duration of your party. Toast the holidays in style with a wine chiller. A wine chiller frees up valuable refrigerator space and can be placed under the counter. Smaller attractively priced versions are also available which sit easily on countertops and have only a 10 inch footprint. These models can accommodate up to 18 bottles and feature dual zone temperatures for red and white wine storage. When choosing an appliance package as part of your remodeling efforts be sure to consider finishes. “The current trend is fingerprint resistant finishes for a maintenance free, updated look,” says Jason. Black stainless is especially popular as are dark gray and slate tones, which complement today’s favorite cabinet and flooring materials. Cabinetry and appliances that reflect form as well as function are key elements to an inviting kitchen. Besides creating a more welcoming space, kitchen remodeling makes financial sense. According to Remodeling Magazine, a major kitchen renovation can result in a return on investment of between 61 and 70 percent of the cost. Clearly, that’s a recipe for success. G

Emily DePury, owner of the new 1,250-square-foot South Tampa interior design retail store, returned home to Tampa after 17 years to share the inspirations and influences that impacted her personal style while living in Nashville, Italy, North Carolina and, most recently, New York City. “After a decade of working in financial services, I decided it was time to come home and do something that gets me excited to go to work every day. I have always had a passion for design, antiquing and helping others add a little pizzazz to their homes, so I just decided to bid adieu to corporate America and follow my dream,” she said. On the flip side, an all vintage room can feel like a museum, or even worse, granny’s house. Blending styles can be difficult. I get it. But striking the right balance can be oh so rewarding.” Her passion for antiquing dates back to her childhood. ith Clearwater Beach as its backdrop, the Sandpearl Resort’s signature restaurant, Caretta on the Gulf, would be a standout dining destination for its views of sand, surf and stunning sunsets alone. The interior is equally striking due to dark wood columns and beams, large dramatic light fixtures and high ceilings accommodating expansive window framed views of the spacious wind-swept beachfront. But this is a restaurant that is so much more than just another pretty place. Even the most avid admirers of the beach ranked among the best in the U.S. will marvel at the seasonally inspired menu that offers a tempting array of appetizers to entrees plus the option of a fourcourse prix fixe dinner featuring chef selections. The dinner menu includes tantalizing starters like Diver Scallops and Braised Short Ribs, soups and salads and main courses such as

domestic rack of lamb and butter-poached Maine lobster flown fresh daily to the AAA Four Diamond-rated restaurant. Caretta’s shares that coveted ranking with only two other Pinellas County dining spots. Fortunately our excellent server Russell was able to help guide and advise us as we wavered between ordering Chilean Sea Bass or Salmon and Black Grouper or Duroc Pork Chops. Lahma LaFon is Caretta’s talented chef de cuisine who oversees the dining room, sushi and raw bar and lounge area located within this luxury resort. Originally from Tampa, he is a graduate of Le Cordon Bleu in Orlando who worked in California, returned to Florida and then joined the culinary team at Caretta’s seven years ago as a line cook before rising within its ranks. LaFon describes his cooking style as one that is based on simplicity. He uses quality ingredients, seasonal flavors and regionally sourced and organic foods, when available, to create dishes that allow ingredients to shine through rather than be overwhelmed.


By: Mary Lou Janson In the case of the Jumbo Lump Crab Cake we sampled, this was especially true because the crab meat was moist, rich and lacked the fillers that are commonly added. Served with an avocado puree, fried tomatillo and radish cilantro slaw, it was a well balanced dish in terms of textures and tastes. Our server raved about the crab cakes and we were glad he did. The meal continued to exceed expectations and succeeded in delighting us with polished presentations, attentive service and accomplished cooking. Even the bread, which I typically tend to skip, was exceptional. Breads are made on-site and our selections featured a sourdough loaf seasoned with black pepper and pretzel bread. These were accompanied by butter, olive oil with salt, sage and brown mustard, which made for pretzel bread perfection. But the true test of any chef typically comes down to the evening’s main attraction, the entrees. And, for me, the Chilean Sea Bass was cooked so well that the fish was flaky enough to cut with a fork and moist enough to make each bite succulent. The dish is described as follows: Chilean Sea Bass, 7 Spiced Wehani Stir Fry, Sugar Snap

Peas, Thumbelina Carrots, Spring Onions and Coconut Curry Broth. I enjoyed each element individually as well as collectively and could easily have lapped up a lot more of the delicious broth. The Black Grouper won raves as well but the Sea Bass definitely got my vote for best seafood dish that evening. With reluctance, we took a look at the dessert menu. Our hesitation was only due to having eaten well and having little appetite for anything else. What a delightful surprise to discover the Pumpkin & Brie Cheesecake that features house made graham cracker crust, spiced apple butter and cinnamon pearls. It was not too dense, not too rich and not too sweet but light, flavorful and just right! The perfect way to end the evening’s meal, thanks to the pastry chef, Anastasia Weber. Open daily for breakfast, lunch and dinner, and serving brunch on Sunday, Caretta on the Gulf offers that not-all-that-common combination of a talented chef, well trained staff and a tastefully designed dining room and bar area that create an experience well worth repeating and definitely worth recommending. Here are some secrets from the experts to help you host a party that surpasses everyone’s expectations and keeps them talking long after it’s over. While some of us may fret over the many details that go into throwing a lavish holiday affair, Lisa Parsons, catering manager for Roux Tampa, feels just the opposite. “I love planning parties,” she says. Pulling together a special menu and creating a signature cocktail, whether for restaurant guests or friends and family is also second nature for Ben Pumo, chef/owner of Benedetto’s and Dan Coover, owner at Middle Grounds Grill.

As an alternative to the traditional open house, how about hosting a dessert party with easy, small bites for people to sample? says Parsons. Or, stage a tree trimming party and ask your guests to help you decorate the tree. For the final finishing touch, she suggests giving each guest a small holiday party favor. “Place them in a basket by the front door for guests to take home when they leave,” says Parsons. It will be the perfect end to a memorable evening.

You’re Invited For a special holiday touch, Parsons recommends surprising guests by mailing them a formal party invitation. In these days of social media, when a Facebook event invite is common and texting often replaces conversation, a printed invite can be quite a novelty. “People don’t get invitations anymore and they can be so much fun to send and receive,” says Parsons. Standard holiday party invites are available everywhere, but Parsons suggests doing something a little different, like using the design motif of the Fleur-de-lis, the classic stylized lily. “Repeat the design on little cocktail napkins,” says Parsons. “It’s the little details that pull everything together and make such a difference.” Party Theme Scented candles, fresh flowers and holiday decor might be enough to make the house look festive. But how about going one step further and building the menu, cocktails and decorations around a special theme. For a Spanish theme, Parsons suggest pairing red and white Sangria with tapas, the Spanish-inspired small plates. New Orleans calls for Cajun or Creole food and Zydeco dance music. Champagne cocktails, specialty cheeses and even a cheese fondue are a must for a French Bistro theme, perhaps with music from Edith Piaf, the French chanteuse from the ‘20s, playing in the background. Background music is a must for parties, says Pumo. He also recommends creating a themed drink. A Benedetto’s classic holiday favorite? A Candy Cane made with grenadine, white crème de menthe and peppermint schnapps. Layer the liqueurs in a decorative glass for a fun look. Open House or Sit-Down Dinner? The holidays are a perfect time for an intimate formal dinner party with friends. For a nice added touch, Parsons suggests making nametags and placing them at each guest’s place setting. If you want to invite a big crowd, an open house is the best solution. Guests can drop-in when they can and the host has more time to strike up a conversation and mingle with everyone. Keep the menu simple with food that doesn’t need to be kept too chilled or too warm. Finger food is a must, says Pumo. He also reminds hosts to be considerate of guests who might be vegetarians or vegans. Be sure to provide a menu that permits them to graze, too.

By: Janan Talafer Perfect Holiday Party Appetizers Mozzarella Caprese with Roasted Eggplant Pesto, Benedetto's Ingredients for Pesto 3 cups packed fresh basil leaves 4 cloves of garlic ½ cup extra virgin olive oil ¼ cup pine nuts or toasted almonds ¾ cup of grated Romano Combine all ingredients except olive oil into food processor. Turn on high. Slowly pour the olive oil in until all chunks of garlic have been chopped fine. Set aside.

Artichoke Smoked Gouda Fondue, Middle Grounds Grill 1lb. of artichokes ½ lb. shredded Parmesan ½ lb. shredded Gouda ½ cup mayonnaise 1 ⁄8 bunch chopped parsley Pinch of black ground pepper and mix all ingrediants together. Portion into 2 large baking dishes. Bake at 400 degrees for approximately five minutes until brown on top and bubbling. Serve with warm grilled flatbread.

Ingredients for Roasted Eggplant 1 eggplant, ¼ inch diced and salted 1 tablespoon extra virgin olive oil 2 pinches salt and 1 pinch pepper In a bowl, toss the diced eggplant with salt and pepper. Let sit for 10 minutes (this will take the bitterness out of the eggplant). Add olive oil and toss again. Place mixture on a baking sheet and cook for 30 minutes at 375 degrees. Remove from oven and cool. Ingredients for Balsamic glaze 2 cups balsamic vinegar ½ cup brown sugar Mix vinegar with brown sugar in a sauce pan over medium heat stirring constantly until sugar has dissolved. Bring to a boil then reduce glaze back to simmer until glaze is reduced by half. Glaze should be the consistency of syrup. Plating/Presentation Wash 4-6 chilled beef steak tomatoes and core each one. Cut off ends and slice ½ inch thick. Place on serving tray. Take 2 lbs. of fresh mozzarella rounds and slice each one ¼ inch thick. Place one round on each sliced tomato. Mix eggplant with pesto and spoon a generous amount on top of mozzarella rounds. Drizzle with Balsamic glaze. Add a fresh sprig of basil and shaved parmesan.

Hot Crab Dip, Roux 1 ⁄2 lb. jumbo lump crabmeat, free of shells 1 (8 ounce) package cream cheese ½ cup mayonnaise ¼ cup grated Parmesan 3-4 green onions (finely chop white and save green parts for garnish) 2 large garlic cloves, minced 2 teaspoons Worcestershire sauce 2 tablespoons fresh lemon juice 1½ teaspoons Tabasco ½ teaspoon Old Bay seasoning Salt and pepper to taste ½ cup panko breadcrumbs Combine all of the ingredients in a bowl. Gently stir until thoroughly mixed. Transfer to casserole dish or cast iron skillet and top with breadcrumbs. Bake at 325 degrees for 35 to 40 minutes until lightly golden on top. Take out of oven and garnish with the finely chopped green onion tops. Serve with crostini and/or crackers along with a bottle of Tabasco hot sauce for those that like extra heat. G

Wine Pairing at The Holiday Table t seems as though every holiday season people ask the same question: "What wine goes best with a holiday turkey?" I gave this some thought last year, while smoking our annual 22pound bird over a perfect oak fire, and came to the conclusion that the challenge isn’t the turkey at all. Most people know that the turkey is the least flavorful item on the holiday menu. Take away the gravy and stuffing and you could pair just about anything from a Pinot Grigio to Zinfandel with it and it would work out just fine. Where the real pairing challenge is encountered is with all of those side dishes. What you’re really looking for is a wine that goes equally well with brussel sprouts, sausage stuffing, cranberry sauce, green bean casserole, creamed onions, corn bread and 15 or 20 other holiday table regulars. And what this means is not only a wine that manages to have wonderful flavor but also achieves a perfect balance. One that is neither too tannic nor too acidic, equally important is that it is neither too alcoholic nor too light. It needs the crispness to cut through creamy dishes, the delicacy to enhance the flavor of subtle seasonings and the boldness to hold its own against a plethora of other, not always so complementary flavors. The wines that follow share these qualities. And, you can be sure, all of them will match wonderfully with your holiday turkey.

White Wines: 1. Kim Crawford, Sauvignon Blanc, 2014 An exuberant wine brimming with flavors of pineapple, passionfruit, stonefruit and a hint of herbaceousness. The finish is fresh, zesty and lingering.

2. Ferrari-Carano, Fume Blanc, Sonoma County, 2015 A delicious wine with aromas and flavors of pink grapefruit, pineapple, lemon grass, lychee, kiwi, honey dew, orange blossom, guava, white peach and lemon-lime with a touch of minerality. This wine has bright acidity and crisp freshness.

Red Wines: 6. Campo Viejo Tempranillo, 2010 Deep cherry color that suggests a vibrant wine. Rich and intense ripe red fruit with oak nuances and subtle tones of vanilla & sweet spices. On the palate it is true to the nose, perfumed, soft and fresh with a long length on the palate that leaves memories of red fruit, vanilla and cocoa.

7. Kenwood, Jack London Zinfandel, 2012 Aromatic notes of plum and ripe raspberries combine with subtle aromas of vanilla and nutmeg. Rich well-structured tannins provide an elegant mouthfeel and a long finish. Excellent fruit and well rounded tannins.

8. Rocca Sveva Ripasso Valpolicella Corvina, Rondinella and Molinara. The wine is ‘repassed’ for 11 to 14 days over the freshly fermented lees of the grapes that made the Amarone. Lush black cherry and raspberry notes with increased structure and a greater complexity. A unique wine that is noted for its intense flavors.

3. Livio Felluga, Pinot Grigio, 2015 This Pinot Grigio is straw yellow with light golden hues in color. The nose is extremely elegant, penetrating, crisp and complex, with evident notes of jasmine, and magnolia; hints of white peach, apricot, orange peel, pear, golden apple, cantaloupe, wild rose and mint; mineral and spice components well integrated.

9. Ramon Bilbao, Reserva Rioja, 2009 Intense garnet red with maroon tones on the rim. On the nose it has intense and aromatic memories of fresh black fruit (blackcurrant) with a pleasant toast tone of rich noble woods. The spicy touch plays with the mineral such as coal or ink, bitter chocolate of licorice. It is flavorful and has an elegant mouthfeel of a wrapping sensation with nuances of red currants, firewood embers, pepper, tobacco leaves and infusions.

4. Gabbiano, Promessa Pinto Grigio This Pinot Grigio is a sunny straw-yellow color. Floral notes hit the nose, with nuances of pear and honeydew melon. Citrus flavors are evident on the palate delivering complex flavors of green apple, orange and lemon. The mouthfeel is lively and full in structure

More than a Meal … It’s an Experience

hen restaurateur Richard Gonzmart sets out to open a new restaurant, he does it like no other. President of the Columbia Restaurant Group — his family opened the original Columbia in Ybor in 1905. Richard also brought back Tampa’s legendary Goody Goody among a host of other culinary achievements. What do all Richard’s restaurants have in common? Every single concept has a story, and that story is purposefully accounted for in each and every detail. One could argue that Richard might be one of Tampa’s greatest storytellers, but instead of opening a book to begin the first chapter, he opens the doors to his restaurants. And Ulele certainly follows in that tradition, but it took the right vision to bring it to life. An old steam-powered pump house sitting on the banks of the Hillsborough River next to the Ulele Spring in Tampa Heights was as forgotten as the neighborhood itself, but Richard saw a chance to bring renewed pride to the area. After all, it was just four blocks away from where his grandparents, mother

and brother lived and just 300 yards away from where he was born. The rest, as they say, is history. Ulele’s VP of New Development Keith Sedita became part of the project early on as the project manager and operating partner, saying, “I remember Richard driving me over to the building. It was so ambitious, but Richard had this great vision for the property and I was really excited to join him to help make that vision a reality.” Two years later, Ulele opened with much anticipation. This gem celebrates the vibrant fusion of ingredients from Florida waters and land once home to many Native Americans, including Princess Ulele, the young daughter of local Tocobaga chief Hirrihigua. In 1528, Princess Ulele pleaded for mercy and threw herself over 17year-old Juan Ortiz. He was about to be roasted alive in revenge for the tribe's previous hostile encounters with European explorers. Ortiz, a member of the Spanish Narvaez expedition, was spared, and now this rich part of Tampa’s history is being told once more through the restaurant.


By: Melinda Tam Orlando Featured Art “I can tell you everything outside and inside the restaurant is intentional,” Keith explains. “Richard understands the link between art, the dining experience and the history, and the art is part of the fabric of Ulele.” From the moment you step onto the property, the restaurant’s ambiance is there to greet you. Sitting between the restaurant and the Ulele Spring, the nearly seven-foot tall, 500-pound bronze by Cave Creek, AZ artist Vala Ola celebrates the independent spirit of Ulele. The statue is surrounded by water, which represents life, with a “ring of fire” to represent her spirit. Tampa Height’s Dominique Martinez of Rustic Steel Creations designed several pieces, including the iconic gear front doors, giving a nod to the industrial past of the building. Inside, you’ll see his touches in the restaurant table bases, the cradles for the bottles in the wine room and the hood for the barbacoa grill. One of the most talked about pieces is “The Laughing Horse” by Victor Delfin in Peru. Born in 1927, Victor Delfin is one of the leading sculptors and painters in Peru. Richard and his wife Melanie visited his home and ultimately bought the 1962 “Laughing Horse” sculpture at an online auction. Andrew Watson of Built Furniture and Fixtures, located in Tampa Heights when Ulele first opened now in West Tampa, handcrafted all the table tops except for two tables made from a 100-year-old barn in North Florida, ensuring the restaurant’s construction positively reflected the surrounding neighborhood as well. Keith explains, “We wanted to impact Tampa Heights immediately. We wanted to keep money in the neighborhood every way that we could.”

Featured Menu Items “We say the menu is Native-inspired, which means native to the land,” Keith says. “The story of Ulele helped us understand where we wanted to go with our ingredients. Celebrating Tampa’s history through the restaurant is really important to us, and we are telling that through our food, our beer and our cocktails as well.” Oysters have been a local staple since the Tocobaga harvested them from the local waters, and the menu includes both raw and charbroiled. The charbroiled version includes garlic butter, grated Parmesan and Romano cheeses, a unique item that Ulele is very proud of. Fortune Taylor’s Guava Pie, featuring a shortbread cookie crust, whipped cream and a guava reduction, is named after an African America slave. When she was freed, she amassed more than 30 acres near downtown Tampa after the Civil War, and ran a successful business selling baked goods. The Magbee’s Manhattan is named after Magbee Spring, which is named after James Magbee, one of the first attorneys in Tampa with some colorful stories. Magbee’s great great grandsons come in from time to time to enjoy the Manhattan and the Magbee’s Honey Lager, also made on the property. Other Fun Facts The 2,100-square-foot Ulele Spring Brewery in front of the outdoor beer garden creates fresh-brewed lagers and ales using only the finest malted grains, hops, yeast, fresh fruit and locally sourced honey. Ulele also built an outdoor bar less than a year ago for those cool Florida nights. Brewery tours are available on request. With indoor seating for 240 inside and space outside to accommodate 600 guests, Ulele has private and semi-private event space available. Don’t want to drive to the restaurant? No problem. dR Party The 11th annual JDRF Night of Hope Gala Over 300 guests, dressed in their best Roaring 20’s attire, enjoyed a cocktail reception, a multi-course dinner, silent and live auctions, and lively entertainment from the Z Street Band. The Wanek Family was honored for their generous donations to help fund Type 1 Diabetes research. Concluding the evening was the JDRF’s signature Fund A Cure program, where the Watson and Sullivan Families courageously shared their struggles with this terrible disease. Gifts Worth Giving

S

o far, our tradition of the dR BACK PAGE has struck a positive nerve with the Tampa Bay Community. When we started the “feature on philanthropy” we thought it appropriate to honor those whose philanthropic leadership has been a shining light in our community and provided inspiration to our community in hopes that others would reach out and help those in need. We have reached our goal for this year! Starting with Tami and Ron Broadrick and their Broadrick Family Foundation, we focused on how a charming couple could involve their friends in an effort to help many different organizations. The Broadrick’s started our year off just right with a fabulous “Cheers for Charity” event at their beautiful home. In our March/April issue, we did our best to focus on the efforts of several philanthropic leaders who support the “heart” of Tampa Bay by leading separate hospitals in their goal of increasing their already strong cardiovascular care sectors. The Weisser Family Foundation at Tampa General Hospital, The Pepin Family Foundation at Florida Hospital and The Morgan Heart Hospital at Morton Plant Hospital. Charity begins at home and home is where the heart is. And, all of us can rest comfortably knowing that heart healthcare is in good hands, thanks to these three leaders. Not everyone in the Bay area can connect all the dots when it comes to higher education and how having many options to learn is not only important for our citizens but for our community as well. This past May/June issue, we featured the leadership of Kate Tiedemann and Ellen Cotton. The Kate Tiedemann College of Business at USF/St. Petersburg was the result of Kate’s and Ellen’s vision that established the second of two business schools in the country honoring the success and ingenuity of an accomplished female entrepreneur. Kate’s advice: “figure out what you want to do, learn about it and go for it.” This goes for her and Ellen’s generosity as well.

Frank Morsani often refers to himself as just a plain old auto mechanic. Well, thank goodness he was a good one, because his successes have led to his and his wife Carole’s generosity that has reached many beneficiaries. Along sharing their support of Oklahoma State University (Frank’s alma mater), this couple has touched the David A. Straz Jr. Center for the Performing Arts, the Tampa Museum of Art, the Moffitt Cancer Center, the USF Health Center for the Advanced Healthcare, and of course the USF athletics program. Be sure to read Frank’s memoir; “To Be Frank; Building the American Dream in Business and Life.” You will learn about success and generosity. Several years ago, Jo Brower started, “REMEMBER HONOR - SUPPORT” as a non-profit dedicated to helping military, first responders and their families. She chose September 11th every year as the day to join together at the Patriot Day Memorial Event, a breakfast held early in the morning in downtown St. Petersburg. This year, Hurricane Irma picked that day, too, and Jo had to cancel. Not to be deterred, Jo rescheduled the breakfast for October 20th to remember 9/11 and its impact on our nation, and use that life-altering event to incentivize all of us to reach out. Jo is no stranger to tragedy, but has not let her personal losses deter her desire to help others. The Patriot’s Day Memorial Breakfast is Jo’s gift to our community. REMEMBER - HONOR SUPPORT. These fine examples of hard work, generosity and community leadership are an inspiration to us all, especially at this time of year. Join your fellow citizens to reach out -- find your passion and share it.
