Harry Connick, Jr. is an incredibly busy bundle of talent. The true definition of a triple-threat, Connick is a Grammy and Emmy Award winner, multi-platinum album singer and television, film and Broadway actor, and that’s just the beginning of his many achievements. Most recently he’s been seen on the silver screen as Dr. Clay Haskett in Dolphin Tale, alongside Morgan Freeman and Ashley Judd. The inspirational movie was inspired by the true story of Clearwater Aquarium’s bottlenosed resident, Winter. duPont REGISTRY Luxury Living Tampa Bay had the opportunity to talk family, passion and holidays with Connick as he returns to Florida’s Gulf Coast to film Dolphin Tale 2 .
dRTB: When you were shooting in Clearwater for Dolphin Tale, and as you prepare to return to film the sequel, are there any particular restaurants or spots you are especially excited to visit again? HCJ: Casa Tina! In Dunedin—best ceviche in the south! dRTB: Will we in Tampa Bay ever have the good luck of charming you and your family into leaving Connecticut and becoming residents here? HCJ: If the [New Orleans] Saints ever found out I moved to the town of our division rivals?!? They would excommunicate me! dRTB: Obviously, music came first. But when did acting become a path that you were interested in pursuing? HCJ: In high school—I fell in love with theater doing high school musicals. dRTB: Who have you been most excited about working with in your musical career? In your acting career? HCJ: Musically—my band. Every night I'm amazed by them... Acting—every project brings new challenges and inspiration... pretty cool to work with Morgan Freeman on Dolphin Tale, though... twice! dRTB: Are there any other film or television projects that you are going to be a part of in the upcoming years, or do you plan to focus more heavily on your musical love instead? HCJ: I'm working on a new TV sitcom—I'm also a new judge on American Idol... between that, touring and recording, I'm pretty busy! dRTB: What is the most vividly hilarious memory that you have of a holiday celebration with your family when you were younger? HCJ: Hmmm... I guess the time my parents did a fancy wrap job on a present for my sister—turned out to be a spatula...

Decorating the tree is a wonderful Christmas tradition that dates back hundreds of years to the time when evergreen boughs were adorned with fruit, nuts, toys and candles. As early as the 1600s, glass blowers in the village of Lauscha, Germany, were gaining a reputation for creating brightly painted glass globes for the tree. But it wasn’t until an illustration of Queen Victoria’s Christmas tree was published in the local press that the idea gained widespread popularity, both in England and in the U.S. Then President Franklin Pierce adopted the tradition and displayed the first Christmas tree in the White House in 1856. Now, 157 years later, a “well-dressed” tree can be found in nearly every American home. Today’s homeowners are only limited by their imagination when it comes to creating a signature look for the tree, whether whimsical or elegant, sentimental or dramatic. To give you a little inspiration this year, consider these fun facts. Since 2004, the iconic Rockefeller Center Christmas tree has been topped with an enormous Swarovski crystal star that measures nine-and-a-half feet across and weighs 550 pounds. To further peak your imagination, Guinness World Records lists the most expensive Christmas tree as one that was on display in 2010 at the Emirates Palace in the United Arab Emirates. The 43-foot-high tree was covered in 181 different items of jewelry and valued at $41,329, 531. This year’s holiday season is fast upon us. BARBADOS—AN ISLAND GEM By Susan B. Barnes
Flying into Barbados, sunlight effortlessly dances across the blue and turquoise and crystal clear waters, like showroom lights glistening off of flawless diamonds. With its secluded feel, impeccable accommodations, acclaimed golfing and delectable dining, it’s no wonder visitors quickly find Barbados to be an island gem.

How Sweet It Is Like many tropical islands, sugar once reigned as the predominant industry in Barbados. And with sugar comes rum. The Mount Gay Rum Barbados distillery is still in operation after more than 300 years—sip the world’s finest rum overlooking the dappled water of the Caribbean Sea. Black Barrel is supposed to be quite good. When out and about touring the island, stop into a rum shop (they don’t call it a bar on island) to quench your thirst. Mostly popular with locals, you’ll find some of the best rum punch on the island in these tiny shops. Cheers! An Historic Perspective As you might imagine with the sugar industry, plantations were plentiful on the island. St. Nicholas Abbey, built in 1660 and one of only three genuine Jacobean mansions in the Western Hemisphere, is open to the public and showcases antiques and artifacts from the home’s history. Complimentary guided tours are offered, as well as visits to the surrounding gardens, orchards and gullies. At more than 300 years old, the Sunbury Plantation House is steeped in history and showcases mahogany antiques, artwork and a distinctive collection of horse-drawn carriages; all rooms within the house are open for viewing. Incredibly enough, George Washington lived in Barbados for two months in 1751 when he was just 19 years old, when he accompanied his sick half-brother to the island to recover from health complications. The George Washington House, also known as Bush Hill House, and its outlying buildings are being restored by the Barbados National Trust that will result in a heritage site.

Natural Beauty If Barbados’ stunning beaches and landscapes become the norm, venture out to see some of the island’s other natural beauties. The nearly-mile-long Welchman Hall Gully was formed by collapsed roofs of caves (and is still connected to Harrison’s Cave), and has become home to a variety of tropical plants and trees, including nutmeg, bamboo, clove and palms. More native tropical flowers can be found at Andromeda Gardens, the Flower Forest and Orchid World.

Speaking of Harrison’s Cave, its Crystal Room Cave with an incredible array of stalactites, stalagmites, streams, lakes and waterfalls makes it among the finest showcases in the world, according to scientists. Back above the surface, stop by Cherry Tree Hill for breathtaking views of the island’s East Coast—though it’s still from your vantage point, the ocean crashes against the rocks below, making for dramatic sights and sounds. Even higher up, get an aerial perspective of the island with Bajan Helicopters. A 30-minute island tour or private charter gives a unique perspective of the diversity of the islands’ coastal and inland spaces, from the rugged East Coast to the tranquil West Coast beaches.
Living the Bajan Life For a truly local taste of Barbados, try and take part in a few Bajan (Barbadian) experiences. Oistins Fish Market is the place to be on Friday and Saturday nights. Locals dance to the Calypso beats as they dine on traditional Bajan fare, such as fish cakes and Jug-Jug (guinea corn and green peas), and wash it all down with rum punch or locally-brewed Banks Beer. If visiting the island between January and April, join the Barbados National Trust’s Open House program, which is offered every Wednesday afternoon. The program gives visitors the chance to visit private Bajan homes, from historic treasures to the outlandish to lap-of-luxury mansions. Who knows, you may be in-
spired to redecorate your own home, Bajan-style. If you’re ready “fore” a round, schedule a tee time at any one of the island’s top five international courses: Barbados Golf Club, re-designed by architect Ron Kirby; Royal Westmoreland Golf & Country Club, designed by Robert Trent Jones II; Rockley Golf Club at Club Rockley Resort; or The Green Monkey or The Country Club, both at Sandy Lane Resort and both designed by Tom Fazio. During season (February through April), the ponies run in polo matches on fields found throughout the island. In addition to local tournaments, international matches are also played. HOW DOES YOUR GARDEN GROW? SKIP THE DIRT By Janan Talafer Just think how great it would be to step out the back door and have a steady supply of basil, oregano and arugula from the small garden tucked behind the pool. But digging in the dirt can be backbreaking labor, made worse by the Florida heat. Hydroponic gardening changes everything. Hydroponic gardens allow plants to flourish without dirt, says Cathy Hume, of Urban Oasis Hydroponic Farm. The plants are placed in a soilless growing medium and fed automatically through an efficient recirculating system that bathes the roots with a rich mixture of nutrients and water. “You’re also using only a fraction of the water because everything is delivered directly to the plant’s roots – there’s no overwatering or waste like there is with typical gardens in the ground,” says Hume. And rather than taking up the entire backyard, the plants grow in vertical towers. “A five-tower system can hold up to 100 plants, giving you a big yield in a small space,” says Hume. Chester Bullock, of Bradenton-based HydroStacker, adds another benefit: the upright stacking system eliminates the need to bend over or kneel on the ground, saving you from a nagging backache after a day spent planting and weeding. Urban Oasis served as the consultants for the new rooftop hydroponic garden at the Pelagia Trattoria restaurant in the Renaissance Tampa International Plaza Hotel. There, situated on top of the hotel’s grand ballroom, Brett Austin Gardiner and his culinary team watch over their new garden that has so far provided a bounty of squash blossoms, cilantro, thyme, parsley, arugula, lavender, sage, butter lettuce and peppers. 66 www.duPontREGISTRY.com/TampaBay

“It’s a labor of love,” sys Gardiner, who points out that the garden is the perfect example of the “farm to fork” trend that is sweeping the country, the idea of picking only what’s needed for that day’s menu, making it fresh, healthy and nutritious. The culinary team at the Marriott Waterside in Tampa’s Channelside district is equally enthusiastic about hydroponic gardening, but their garden is indoors. Energy-efficient LCD lighting takes the place of the sun. Culinary supervisor Aaron Berger transformed a former pool deck kitchen into an efficient, organic indoor hydroponic garden that supplies the hotel’s
restaurants with a weekly harvest of from 300 to 500 heads of lettuce in unusual varieties like red gem, red cash and lola rosa romaine, upland cress and mizuna. “Lettuce is a big demand, high cost product,” says Berger. “The garden not only provides us with a huge savings, but we’re able to offer guests a nice variety of lettuces we are not be able to buy. Plus we’re harvesting the heads in 18-20 days, compared to the more typical 35-40 days.” Whether indoor or outside, hydroponic gardening makes growing veggies and herbs worry-free and easy, perfect for today’s busy lifestyles. dR

Beer drinking and artistry might seem like two words at odds with each other, but take a visit to a local microbrewery and you might just change your mind. These brew masters are making handcrafted signature beer creations, pushing the Tampa Bay market to test their palates and indulge in new original flavors. Find out what we learned about the ever-growing microbrew trend.
7VENTH SUN BREWING Devon Kreps and Justin Stange, owners of 7venth Sun Brewing, know their stuff. Kreps graduated from Oregon State University with a degree in Fermentation Science, brewed at Anheuser-Busch and later became a Production Manager at Atlanta’s Sweetwater Brewing. Stange brewed at Sweetwater as well as Tampa’s Cigar City. So it’s no wonder that when these two opened 7venth Sun’s doors in 2012, the brews were going to be out of this world. In their 1,200-square-foot brewery, Kreps, Stange and two additional brewers are creating a variety of flavorful masterpieces like Belgian-style beer, IPAs, spirit barrel-aged beer and oak-aged sour beer. taining one of 7venth Sun’s beers, locals can’t get enough. “Last year we brewed 100 different beers,” Stange explains. “And it’s because the reception in Dunedin right off the batch was huge and everyone was really excited.” Looking for a signature beer to try? CIGAR CITY BREWING Cigar City Brewing was founded with two goals in mind: to make the world's best beer and to share with people near and far the fascinating culture and heritage of the Cigar City of Tampa. “Our hearts are in the right place,” the founder and CEO says. “We brew the type of beer that we want to drink, beer that we get excited about ourselves.” This 15-barrel brewhouse occupies an impressive 6,600 square feet of warehouse space, including an additional 30-barrel four-vessel brewhouse and canning/bottling facility, producing more than 1.8 million gallons of beer by November. Plus, all the staff members within the tasting room are cicerone-certified, so they can give you recommendations based on your past beer loves. “The tasting room is great because it allows us to tell the Cigar City story right to our customers but it also allows us to get direct feedback,” he explains. “It’s a great avenue for exploration.” A few beers you might want to explore for yourself include the Tocobago Red Ale, the Good Gourd Imperial Pumpkin Ale, Poblano Wit White Ale and the Marshal

The husband and wife team own Barley Mow Brewing Company, a nano brewery and tavern in Largo where they work side-by-side brewing up beers right on the property six days a week. The two-barrel brewhouse keeps 14 beers on tap, rotating their handcrafted beer in with other Florida craft brews and
ciders. The brewery’s 1,200-square-foot beer garden is the perfect place to sip a signature selection, like “Unkindness” a jet-black, very bitter creation known as Barley Mow’s flagship brew; and “Quackalope” a frequently requested pale ale. Wednesday’s Randall Night allows you to see the creativity in action. A Randall is similar to a water filter but adds flavors to beer. Every Wednesday night, Colleen packs it full of fresh fruit, hops or candy and runs one of their own beers through it. A recent combination included a milk stout with crushed-up Oreos. ANGRY CHAIR BREWING The Seminole Heights area will soon get to enjoy a craft brewery of its own with the arrival of Angry Chair Brewing, set to open in late December or early January off Florida Avenue. The facility will feature a 1,000square-foot tasting room, and co-owner Ryan Dowdle says the timing is perfect. “Today’s population is more aware of craft beers but it’s not a trend; it’s the future,” Dowdle explains. “It’s American brewing — palates are adapting and people are looking for more styles and flavors.” And Angry Chair’s creations, like the German Chocolate Cake stouts and Banana Cream Pie ales, are creating believers. Cook risotto. Add cream, herbs, spices and salt. Mix well. Add egg and cheeses. Mix well. Firmly fill scoop for uniform balls (ping pong ball size). Do not over-portion. Wet hands. Using palms quickly roll and shape rice into balls. Work quickly and rinse your hands often. Moist hands keep the rice from sticking. Dredge shaped balls a couple at a time through the flour, then the egg wash. Bread each one individually in the panko. Roll around your palm in the panko several times to build up a good crust. Place breaded balls in single layer on a pan. Fry the balls in 360-degree grease for two-and-a-half minutes. Serve immediately or hold in a low heat oven. Serve with Marinara sauce or Parmesan cream sauce.

You can acquire wasabi tobiko at your local fresh fish or Oriental market. Assembling: Place ½teaspoon of Ponzu on each oyster, top with about a half-teaspoon shitake mushrooms and half-teaspoon Wasabi tobiko.
Cranberry Fig and Apple Stuffing 4 celery stalks, diced 1 onion, diced 1 loaf Sourdough bread 1 tsp thyme, dry 1 tsp onion powder 1 tsp garlic power 1 tsp salt 1 tsp pepper ½ tsp cayenne 1 tsp nutmeg
1 tsp cinnamon 1 tsp vanilla extract 3 tbsp butter 2 apples, cut in ½-inch cubes 1 cup cranberries, dry ½ cup almonds, slivered or sliced ½ cup mission figs, dry, roughly chopped 32 ozs water, chicken stock or vegetable stock
Cut Sourdough bread into cubes and bake at 350 degrees for about 10 minutes until brown. In a sauce pan, over medium heat, sweat down onions and celery in butter until soft—do not brown. In a large bowl, combine toasted bread crumbs, all dry spices, vanilla, apple figs, cranberries and almonds. Next, add 32-ounces hot water and mix everything well. Place in a greased casserole dish and place in oven at 350 degrees for about 30 to 45 minutes

Peal pumpkin, remove seeds and cut into one-inch cubes. Stir-fry the pumpkin using a splash of olive oil. Add salt and pepper. Peel and chop the onions and garlic. When the pumpkin has softened, add onions and garlic to pan and continue to cook a few minutes. Turn off heat when the onions begin to brown. In a saucepan, combine a splash of olive oil, tomatoes and the torn basil leaves. Cook for 10 minutes. Transfer the pumpkin mixture to a bowl and process with hand–blender. Return mixture to pan. Heat mixture. Begin adding flour little by little, stirring constantly. When mixture is considerably thicker, but still creamy, stop adding flour, turn off the heat and allow to cool a little. Pour the tomato sauce into a large shallow ovenproof dish. Using two spoons, make walnut-sized balls of pumpkin mixture and place in sauce. Sprinkle with parmesan and top with Burrata. ½ pound garlic, whole (crushed with flat part of knife) 4 cups pork or chicken stock ¼ cup olive oil 3 sprigs of fresh thyme Polenta 2 cups chicken broth, reduced rich
Pork Belly 2 cups pork belly ½ lemon 2 lbs onions, roughly cut 2 cups fresh peach puree 1 lb carrots, roughly cut Sea salt & pepper to taste.
1 cup coarse corn meal 1 cup 2-year-old Asiago cheese, grated 1 cup Pancetta, diced Peach jus 2 cups braising liquid from pork belly 2 cups Peach puree salt & pepper to taste
Scallops 8 scallops, large dry sea (10 to a pound) Salad 1 ½ cups young salad greens ½ lemon, juiced Fruity olive oil
Pork Belly: Trim skin, and silver skin (sinou) off of belly. Cut bellies into 6- x 4-inch pieces and sear slowly with a little olive oil till crisp and golden brown. (Need to render down the fat so take your time and try for 15 minutes on each side.) When nice and crispy and fat is rendered down, add onion, carrots, lemon, thyme and garlic. Place in small roasting pan. Add chicken stock cover and slow cook in a 300 degree oven for 3 hours. Let bellies cool in the braising liquid overnight. Reserve liquid. (I do the bellies 1 or 2 days ahead of serving.) Polenta: In a sauce pot render the pancetta. When crispy add chicken stock and bring to a boil. Whisk in the corn meal. Reduce heat to gentle simmer and stir till polenta pulls away from the sides of the pot. When creamy, smooth and thick, add salt and pepper. Add the asiago cheese and fold in. Peach jus: Reduce braising liquid until rich. Add peach puree then salt and pepper. Scallops: I like to spec dry scallops so nothing is added. Clean them and pull off the row. Remember that scallops are all muscle so they should never be cooked past rare to medium or they will be tough. Salad: Combine lemon juice and fruity olive oil. Toss with young salad greens like chervil, parsley, chives, red ribbon sorrel, arugula and mizuna. Plating: On plate start with polenta. Top with pork belly then scallops. Drizzle with peach jus and top with salad.
Roasted Stuffed Pork Tenderloin Roulade Serves 4–6 1 package pork tenderloin, approximately 2 tenders, 1 pound each 6-8 ozs (½ package) cranberries ⅓ cup Turbinado sugar 1 Carambola, large, ripe (star fruit) diced into ½-inch cubes

Compote: Slow simmer cranberries, orange zest and ¼ of the diced Carambola in Turbinado sugar in just enough water to cover. Cook until soft and liquid starts to reduce. Add remainder of diced fresh Carambola after the mixture is cooked and cooled in order to maintain the color contrast with the cranberries. Pork Tenderloin: Butterfly tenderloins and layer with fresh spinach, feta cheese and black mission figs. Season with Allspice and roll into a roulade. Bake, covered with foil, at 450 degrees for about 25 minutes. Uncover. Bake for another 5 minutes. Plating: Arrange a layer of spinach leaves on plate. Instructions: Crumble 1 ounce of Ricotta evenly over each crostini. Heat the mushrooms for 10 seconds to take the chill off then spread 1 ounce evenly over the cheese. Place 1 teaspoon of pesto evenly over the mushrooms on each crostini. Drain the sun-dried tomatoes. Sprinkle the plate with the sun dried tomatoes and micro greens.
Lemon Ricotta Cheese Serves 6 2-½ cups milk ½ cup heavy cream 1 tsp lemon zests
1 tbsp white vinegar ½ tsp kosher salt
Instructions for Lemon Ricotta Cheese: Heat milk and cream in a pot to 190 degrees; make sure not to boil over the liquid. Remove from heat and add grated lemon zest to the vinegar and salt. Stir with a rubber spatula constantly while curd begins to form (30 seconds). Cover the pot and let stand for about 30 minutes. Scoop out the curd using a skimmer basket into the strainer placed over a container. Pour all remaining curd through the skimmer basket then place into the strainer. Let drain about 3 hours in the refrigerator. Reserve.
Pepita Pesto
Cedar Roasted Mushrooms
Serves 6
Yields 9 ounces
6 basil leaves, fresh roughly chopped ½ tsp minced garlic ½ oz parmesan cheese, grated Pinch white pepper 1-½ tsp lemon juice 4 tbsp olive oil 1 oz Pepitas (small roasted pumpkin seed)
4 cedar planks, 9 inches x 6 inches water, as needed 2 tbsps basil, minced 1 tbsp rosemary, minced
Instructions for Pepita Pesto: Add basil, garlic, parmesan cheese, pepper, lemon juice, oil and Pepitas in the food processor. Pulse for 30 seconds. Scrape the sides of the bowl with a rubber spatula then pulse 30 seconds intervals. Place into a container.

Instructions for Cedar Roasted Mushrooms: Submerge wood planks in cold water with a weight on top for 1 hour. Remove stems on basil and rosemary then mince. Place into a mixing bowl. Place the olive oil in a mixing bowl with roughly chopped garlic, black pepper and salt. Mix well and reserve. Slice button mushrooms ½-inch thick. Place into the mixing bowl with seasoning. Remove the stems on the Portobello mushrooms. Scrape out the gills on the bottom side and discard. Add cut mushrooms ½-inch thick in julienne pieces. Remove stems on the Shiitake mushrooms and cut into ½inch wide slices, add to the mixing bowl. Toss all ingredients well. Drain cedar planks. Set 2 on a half sheet pan. Spread the mushroom mixture evenly on the wood. Cover with the 2 remaining pieces of wood then bake in a 400-degree oven 12-15 minutes or until mushrooms are tender. Cool then place in a container.

Marinade 1 oz lemon juice, fresh squeezed 4 ozs mustard, stone ground 2 ozs apple cider vinegar 4 garlic clove, crushed 2 sprigs oregano, fresh 1 tsp black pepper 2 shallots. sliced 1 green apple, cored & sliced 2 ozs brandy
¼ cup extra virgin olive oil Celery root puree 3 lbs celery root, peeled (3 bulbs) 1-½ lbs parsnips, peeled ends off 2 anise, whole) 4 cups heavy whipping cream 4 cups chicken stock 4 tbsps butter salt to taste
Marinade: in a large mixing bowl mix all marinade ingredients together. Pheasant: Submerge pheasant in marinade to generously coat them. Wrap bowl tightly and allow to sit in the marinade for at least 24 hours in the refrigerator. Remove the birds from the marinade and remove any chunks of apple or herbs that have stuck to them. Season both sides with salt and black pepper. In two oven safe skillets (1 pan for each bird) add 1 ounce oil in each. Over medium high heat sear the pheasant skin side down just until golden brown. Remove from heat and flip the birds so the skin side is facing up. Add a small handful of sliced shallots to each pan and about ¾ cups of your mushrooms (whole or cut down depending on the variety). Immediately pour ½ cup of chicken stock in each pan and move directly to preheated oven. Roast until minimum internal temperature of the pheasant breast reaches 145-degrees fahrenheit (about 15-20 minutes). Celery root puree: Peel and half your celery root and parsnips. In stock pot, add your parsnips, celery root, cold cream, chicken stock and whole anise. Cook over medium heat until a fork can easily penetrate the celery root (about 30-45 minutes). When cooked through, remove them from the heat and take out anise floating on the surface. Allow pot to sit for 10 minutes to cool down. Strain out the solids from the pot (make sure to save the liquid, for the puree). Using an electric mixer with a whisk attachment, whip celery root and parsnips at medium speed. Slowly add butter and cooking liquid until desired consistency (loose mash potatoes). Season with salt to taste and keep warm until your pheasant is ready. Plating: Place a scoop of whipped celery root in the center of the plate. Gently (bird with be extremely delicate) place one of the pheasant halves on celery root. The aromatic, somewhat thick liquid in the bottom of pans with the mushrooms and shallots is delicious Jus. Spoon the mushrooms and all the goodness in the pan over the top of pheasant. Enjoy!

Combine flour, walnuts, baking powder, cinnamon, salt, nutmeg, cloves and ginger in a bowl, stir with a whisk. Combine ¼ cup brown sugar and next 4 ingredients, add sugar mixture to flour mixture. Stir until just moist. Fold in 2 cups carrots. Heat a large, nonstick skillet over medium heat. Coat pan with cooking spray. Spoon 4 (¼cup) batter mounds onto pan, spreading with a spatula. Cook 2 minutes or until tops bubble and edges look cooked. Carefully turn pancakes over; cook 1 minute or until bottoms are lightly browned. Repeat procedure twice with remaining batter. Combine butter and honey in a small bowl, serve with pancakes.

Gingersnap Pumpkin Ice Cream Cookie Sandwich Serves 6 cookie sandwiches
Preheat Oven 350 degrees
Gingersnap Cookie 3 cups all-purpose flour 1 tsp baking soda ¼ tsp cinnamon
1 tbsp ground ginger ½ tsp allspice ½ tsp ground cloves
½ tsp salt ¼ tsp black pepper 6 ozs butter
½ cup + 2 tbsps brown sugar ½ cup + 1 tbsp molasses 1 egg
Line two cookie sheets with parchment paper. Measure all of dry ingredients into a medium-sized bowl and set aside. With a mixer with a paddle attachment, cream the butter, brown sugar and molasses. Add the egg and mix until light and fluffy. Slowly add the dry ingredients into the wet mixture scraping the bowl once or twice in between additions. Once everything is evenly mixed scrape the bowl and place the dough on a clean cutting board that is lined with plastic wrap. Roll the dough into a log that is three inches in diameter. Chill the log for thirty minutes. Once chilled cut the cookies an eighth-of-an-inch thick. Place the cookies on cookie sheet about an inch apart. Bake on the middle rack for six minutes. Rotate the cookie sheet and bake for an additional six minutes. Take the cookies out of the oven and allow them to cool. Once cool wrap them tightly and set aside.

Pumpkin Ice Cream 1-½ cups whole milk 1 cup heavy cream ⅓ cup + 2 tbsps cane sugar
1 tps ginger, freshly grated ½ tps cinnamon 1 cinnamon stick
½ tps nutmeg ¼ tsp salt 5 egg yolks
¼ cup brown sugar 2 tsps brandy or rum ¾ cup pumpkin puree
Combine milk, cream, sugar, ginger, cinnamon, cinnamon stick, nutmeg and salt in a medium-sized, heavy-bottomed saucepot. Heat mixture until the sugar has dissolved completely, stirring frequently (without boiling). Once the sugar has dissolved turn the heat to low. In a separate bowl combine the egg yolks with the brown sugar. Add a small amount of the warm milk mixture (about ½ cup) to the yolk mixture and stir it a few times. Next add the yolk mixture into the sauce pot and cook on low temperature stirring constantly until the mixture begins to thicken. Once it has thickened remove the pot from the heat and add the remaining ingredients. Cool the mixture down completely. Take the cinnamon stick out and discard. Add the mixture to your ice cream maker and spin it. Line a loaf pan with wax paper (making sure that there is about 2 inches of excess wax paper above the rim of the pan on both of the long sides). Pour the ice cream mixture into the pan leaving about ¼-inch space from the top of the pan. Be sure to smooth the top with a spatula and level it out. Fold the excess wax paper down the outside of the pan and cover the pan tightly with plastic wrap. Freeze all the way through. Assembling Sandwiches: Take ice cream out of the freezer and carefully pull the square block of ice cream out of the pan using excess wax paper. Cut 1 ½-inch blocks of ice cream. Place each block of ice cream between two of the gingersnap cookies. If there is excess ice cream poking out of the sandwich, carefully cut off the edges or leave them like that. Smooth the ice cream with a spatula around the exterior of the cookie. If you are not going to eat them right away…. wrap each sandwich individually and place in an airtight container in the freezer until you are ready to indulge.

Pine Nut Crust: Place Graham crackers in a food processor and pulse until finely ground. Add pine nuts and sugar and continue to process until nuts are finely chopped. Pour in melted butter and mix until crumbs are thoroughly moistened. Press crumbs into the bottom of a 9-inch spring form pan. Bake in a 400 degree oven for 8-10 minutes or until golden brown. Goat Cheese Cheesecake: Place cream cheese, goat cheese, lemon zest, lemon juice and vanilla in a mixing bowl. Mix with electric beaters until smooth. Gradually add sugar and mix until smooth and creamy. Add eggs, one at a time, and mix thoroughly. Pour batter into prepared pine nut crust. Bake at 350 degrees for 50-60 minutes. Edges of cheesecake should be set with the center slightly soft to the touch. Cool completely and refrigerate for at least 6 hours. Fig & Apricot Jam: Stir water, sugar and salt in a saucepan over medium heat until sugar is dissolved. Add apricots, figs and cinnamon stick and bring to a boil. Reduce heat and simmer for 30 minutes until thickened. Cool to room temperature and serve. Plating: Place cheesecake in the center of the plate. Top with Fig and Apricot jam. Drizzle plate with syrup from jam and sprinkle with toasted pine nuts.

Pulled Pork: Sauté shallots in oil over medium heat. Add pork when shallots begin to turn golden. Stir. Squeeze grated ginger through fine strainer and add ginger juice. Remove from heat when pork is hot, add chives and salt and pepper. Place 2 ounces of pork mixture in center of soup bowl. Roasted Squash: Cut squash in half lengthwise, remove seeds and place in buttered pan, cut side down. Bake at 350 for about 45 minutes or until soft to touch. Allow to cool and scrape meat from skin. Butternut Squash Soup: Sauté onions in butter over medium heat until translucent. Add flour, stirring to incorporate flour into butter. Slowly add chicken stock, stirring constantly to ensure no lumps form. Add half and half, bring to a simmer. Chunk the butternut squash and add to soup. Simmer 5 to10 more minutes. Puree soup in blender, or with immersion blender, until completely smooth. Return to heat, add honey, Madeira and apple juice. Simmer 5 to10 more minutes. Taste, adjust seasoning, if necessary. If soup is too thick, add half and half until desired consistency is achieved. Place ginger pork mixture in center of serving bowl, and pour soup around pork. Serve immediately.

Roast in 375degree oven approximately 1-½ hours until flackery and white. In a separate pan combine root vegetables. In a bowl, toss with olive oil, salt and pepper. 1 orange, juiced 2 tsps gelatin or corn starch slurry (¼ ± cup water and cornstarch mixed) 1 tsp salt
If using gelatin, add all ingredients in medium sauce pot. Bring to boil. Turn down heat and simmer for 5 minutes. Let cool. If your using a corn starch slurry, add all ingredients except the slurry. Bring to boil. Cut back heat. Slowly add slurry till the rellish just starts to thicken—you may not need all the slurry. It will thicken more as it cools. Simmer for 5 minutes. Let cool. Rellish can be made days before. Note: I like to pull it out of the fridge and let it come to room temperature before serving.

Julienne zucchini and summer squash. Toss with light olive oil, salt and pepper. Grill, set aside. In a hot saute pan, add par boiled potatoes with the ancho chili powder. Add the parsnips with the brown sugar on top of parsnips with an ounce of butter. Cook potatoes and parsnips in a 400-degree oven for 4 minutes. Batter the haddock portioned out to 8 ounce filets and fry in a pan or a 350- degree fryer until golden brown. Let sit to drain excess oils. While haddock is draining take pan of vegetables out of oven, and over medium heat add the zuccini, squash, tomatoes, lemon juice, butter, Paul P’s blackening rub. Cook until butter is melted and vegetables are heated through. Plate accordingly with haddock cut in half layered on top of each other. Potatoes around bottom edge of haddock. Zucchini and summer squash leaning on haddock with the parsnips on top. Take the blackened ancho chili butter and spoon over the top. Enjoy! dR

carrying on the family tradition By Janan Talafer It takes metal artist Nicholas Toth well over 300 hours to create his beautiful copper and brass Greek sponge diving helmets. But every minute he spends machining the metal on the lathe, soldering the pieces together and hand polishing everything to a flawless finish is a labor of love, a tribute to his grandfather, a master machinist and engineer who emigrated from Greece to Tarpon Springs in 1913. Ever since he can remember, Toth was at his grandfather’s side, carrying his toolbox and watching him work on the ships at the sponge docks. Back at the shop they would also make the iconic helmets that kept the sponge divers safe—watertight, with four portholes, like something out of a Jules Verne tale. Today, Toth carries on the family tradition, but the old-world style helmets, although still functional, are works of art—handsome collector’s pieces.
