Rocksalt at the Fish Fest 2013
At Rocksalt our aim is to cook the best ingredients as simply as possible in order to let the quality of the produce shine through. Our menus are the heart of our operation. We take time and effort to source our ingredients as locally as possible, even growing some of them ourselves. Seasonality and provenance are of the utmost importance. With stunning views over the harbour and out into the English Channel, Rocksalt serves the freshest fish possible caught from the bobbing day boats moored beneath our terrace as well as the best quality meat, bred in the surrounding countryside and marshlands. We want to become an integral part of our environment, and this is why we do our very best to source everything as locally as we can. We are a proud Kentish restaurant and we are surrounded with an abundance of amazing produce, from food and drink to rapeseed oil and butter. Quality, locality, sustainability and provenance are words which really mean something to us at Rocksalt and we do our very best to uphold these values. Our aim is to build an outstanding reputation, become a great
local restaurant for local people and carve out a place within Folkestone’s heritage. Fish Fest 2013 is something that we are really pleased to be involved with and is such an exciting thing for Folkestone in general. Our aim is to take what we do within the restaurant out to the festival to showcase the great flavours and ingredients we use on a daily basis. We hope people are going to love our Rocksalt Fish Burger made with locally caught coley, which we smoke on
site, gherkins, crisp lettuce, tartar sauce and a lightly toasted bun! You will find us cooking up a fish burger frenzy all around Kent at various festivals through the summer months! Our new Head Chef Simon Oakley will be joining the chef demo area over the weekend, showcasing some of our delicious dishes from the Rocksalt menu, so make sure you keep a look out for that. We look forward to seeing you all at the festival!

The Marquis at Alkham
Just 3 miles from Folkestone - in the Area of outstanding natural beauty that is the Alkham Valley is a strikingly contemporary restaurant with rooms, The Marquis at Alkham. The product of a major renovation in 2008, what was once the village’s pub, The Marquis of Granby. It has since been awarded many and varied awards including 3 AA rosettes for the dining experience and 5 stars for our accommodation from the AA guide.
produced a sparkling wine of great quality which perfectly matches the cuisine from the same terroir. And guess what? This local delight is available exclusively to buy at the Marquis. So come over and enjoy a glass to start a meal - perhaps take a bottle home with you.
Space, light, fine furnishings and beautiful fabrics - the opportunity to fine tune every detail hasn’t been missed. Our latest venture is the addition of a vineyard a short stroll from the restaurant. Our sparkling wine - bottled by Chapel Down vineyards - is taking everyone by surprise. Folkestone Artworks
Folkestone Artworks is the collection of works originally commissioned by the Creative Foundation for the Folkestone Triennial that are now on permanent display in public spaces around the town. The collection now boasts 16 high calibre artworks by an impressive array of young, emerging talent as well as more established artists. Folkestone Artworks includes work by artists as celebrated as Turner Prize nominee Tracey Emin, whose seven-part sculpture Baby Things is a tender, subtle yet poignant response to her perception of the prevalence of teenage pregnancies in the town. 2007 Turner Prize winner Mark Wallinger’s ‘Folk Stones’ with its 19,240 numbered stones, the exact number of soldiers killed on the first day of the Battle of the Somme in 1916, can be found close to the Leas Cliff Hall. The collection even includes a dog’s
play park, Pae White’s Barking Rocks, situated just off The Leas in Pleydell Gardens. Finally, internationally acclaimed Kent-based artist Hamish Fulton has created a metal sign at the Harbour area, mapping the 31 water-related walks he has made from coast to coast, river to river, coast to river, across the British Isles and Western Europe over his 40-year career. For more information on Folkestone Artworks go to www.folkestoneartworks.org.uk or pick up a map from selected points around town and enjoy one of the best collections of contemporary art in open spaces in Britain!
