Editors Letter Hello Readers, Welcome to the latest edition of The Folkestone Handbook. With 2014 marking the 100 year anniversary of the outbreak of World War I, we would like to thank Easthope Stained Glass Studios for allowing us to use their beautiful commemorative poppy light catchers for our front cover image. Live at Home was established in 1989 by MHA, a charity providing care homes, housing and support services for older people throughout Britain.
Over 50 Live at Home schemes operate across the UK, enabling older people to maintain their independence and live more fulfilled lives. These services aim to relieve social isolation and encourage older people to take an active part in the communities in which they live. Seasonal Recipe by Hythe Brasserie
Smoked Salmon and Goat’s Cheese spaghetti This one is easy to prepare for a quick supper. The blend of textures works well and the goat’s cheese and smoked salmon are a great flavour combination. The sauce is fairly rich so a simple rocket salad is a good accompaniment.
Serves 4
Method: Heat the oven to 180 c
Ingredients: 1 standard packet dried spaghetti 250 g smoked salmon, roughly chopped, not too fine 320 g firm goat’s cheese log, sliced into 4 250 ml crème fraiche
Place sliced goat’s cheese onto a baking tray Cook the spaghetti as per instructions, al dente or soft, as you prefer Drain and set aside Place the goat’s cheese in the oven to warm
salt and pepper
In a large pan or wok, heat the lemon juice, white wine and smoked salmon pieces until the salmon is just changing colour from orange to pink
handful of freshly chopped chives
Add in the crème fraiche, salt and pepper to taste
Juice of ½ a lemon 1 tbsp white wine
Bring the the boil then toss in the cooked spaghetti and combine well Place the spaghetti mix into warm serving bowls Remove the goat’s cheese from the oven and place on top of the spaghetti to serve Finally sprinkle with the chopped chives Tips: Half fat crème fraiche works just as well as full for a healthy option and for a vegetarian version, use sun dried tomatoes instead of smoked salmon.

A lot of the pure breed dogs tend to have breed specific associated health problems. Some breeds have more problems than others, and it is true that statistically the expected lifespan of the giant breeds of dog is much shorter than that for the small breeds of dog. Crossbreed dogs do tend to be the healthiest although any individual could have a number of problems. All dogs should be assessed individually regarding their temperament, health issues and their suitability for a family home. Good luck choosing a pet- we hope you enjoy it!

would like to cut her claws at home. How can we do this? This is an excellent idea, and it is good to get your new kitten used to having her claws cut as early as possible. We recommend that it is a two person job- one for holding and one for cutting. You can buy all sorts of pet nail clippers but we just use human nail clippers on our own cats! When you look at your kitten’s claws the tip will be clear and the part nearer the toe will be pink. You should only cut the very clear tip and avoid the pink area which may bleed if cut. If you are worried you should take your kitten to your vet so they can show you.
Q: I have heard of several dogs with ‘Kennel Cough’ recently. What is it? Is it only caught in kennels? Kennel Cough is the name given to a group of bacteria and viruses that cause a respiratory infection in dogs, and hence coughing! P14

An old fashioned pilgrimage for Pilgrims Hospices The Mayflower 3, Linda Baker (Folkestone), Mo Foreman (Hythe) and Maria White (Hythe) successfully completed their 100 mile pilgrimage from Southwark Cathedral to Canterbury Cathedral in aid of Pilgrims Hospice having raised £1000. They were greeted by families, friends and Sharon Burberry, Pilgrims Hospice fundraising assistant at the gateway to Canterbury Cathedral. Their 6 day journey took in Charlton, Dartford Gillingham, Maidstone, Lenham and finally Canterbury itself. During that time the three achieved their objective of walking over 100 miles, visiting 100 churches, 100 taverns and meeting 100 men named John. With 235,290 steps along the journey they arrived tired but elated, to be greeted at the gateway
to Canterbury Cathedral by families and friends. Maria blogged during the walk and described some of their experiences: “After a tiring first day, we were delighted to start the day well on Tuesday with a complimentary breakfast from a building company.” Linda added: “The comments we got along the way were many and varied, with numerous people expressing surprise at our costumes. For many it was the first time they had ever seen such an old fashioned costume.“ Mo talked of the visits to taverns: “We met some very friendly people and had a few merry evenings as we talked of our escapades.” Sharon Burberry said “It was a great sight to see them finish their journey. The blogs they sent showed it was a wonderful experience. It is great that
people take up such varied challenges in aid of Pilgrims and the support shown by the community is so essential to the work of the hospice.” To culminate their pilgrimage evening of entertainment was held the following weekend at the Hope Inn, Hythe with entertainment provided by Jamie from The Treblemakers. Buying prints is a great way for art enthusiasts to become art collectors. Prints come in a variety of types, and are most commonly produced in editions, also known as limited editions. Limited editions can be of any number. All limited editioned prints should have the number written on them on the front or the back as well as the artist’s signature. It is worth knowing that the price of editioned prints is likely to rise as fewer works remain available. So if you have your eye on a print, it’s worth getting in there early!
Some galleries specialize in prints but I prefer to show both original art and prints by the artists that I work with as I find this gives the buyer a fuller understanding of the artist’s work. Prints offer an affordable way of starting an art collection. If an edition is small, say 6, it is quite likely the starting price will be higher than something that has an edition size of say, 100. Many artists create prints to expand their customer base giving more people an opportunity to own an artwork where an original piece might be out of their price range.

There would be no record of how many prints were produced of that image. 2014 marked the 100th anniversary of the start of World War I, which many of us hold dear to our hearts. Many tributes have been paid towards those whom had fallen in the ‘great war’ and stained glass is no exception. Stained glass saw a resurgence in commemorative panels being designed and made, which marked its own special tributes in remembrance. The poppy light catchers are a miniature of that exact sentiment. Each one has been personalized with a centenary date, fallen family member or regimental cap badge. Trading since 1957… Easthope Stained Glass is a family firm of stained glass specialists, based at the top of The Old High Street, in the Creative Quarter, Folkestone. We hear from Nick Easthope, who learnt the craft from his father, and now works with his own son Edward in the studio: “We work closely with private domestic clients and home owners, architects, school bursars and church wardens, facilities managers and buildings managers, building companies, contractors and quantity surveyors. We are fully independent, and are on the recognised list of contractors of a large number of industry businesses and bodies. P24
Working with stained glass is much more than a job to me, it’s an ancient craft.” Nick Easthope has lectured on the topic of stained glass, and regularly runs practical workshops and day courses at Easthope Stained Glass Studios. “My work is about more than running a business; it’s about giving something back” As one of very few stained glass craftspeople in the country, Nick has the pleasure of working on a range of restoration, conservation and private commissions.
“To me, working on stained glass is about inheritance and legacy, preserving something precious for the future. I firmly believe that stained glass needs to be preserved, conserved and restored properly.” Nick’s favourite job is always the one he’s currently working on. His portfolio includes churches, abbey, cathedrals, local schools, stately homes and private houses. “I love passing a building and knowing that I worked on it, helping make it more beautiful for future generations of visitors.”

Alfa Romeo MiTo 875cc TwinAir By Tim Barnes-Clay, Motoring Writer 105hp – which translates in a 0-62mph time that’s 1.1 seconds quicker than the previous 85hp version. Despite the additional performance, the Alfa Romeo MiTo TwinAir remains impressively efficient, with a combined fuel economy figure of 67.3 mpg and CO2 emissions of just 99g/km.
Someone once said, “What good is an eye-catching new suit if the person inside of it is rotten?” Now that’s a pretty brave statement — but an assertion, nevertheless, that speaks to the question of style versus substance. The style over substance debate has been around for a long time, and today the harsh reality is that we, the mainstream, are far more influenced by the “image” - style or outer shell of things rather than what’s on the inside. So when it comes to cars, what about the 2014 Alfa Romeo MiTO? Where does that fit in the style-versus-substance topic? Well, in my opinion, the arch-rival to the MINI and Audi A1 is a gorgeous little motor, and it lives up to its revised looks. Externally the latest incarnation of the MiTo benefits from a fresh, chromed front grille; titanium grey headlamp and tail lamp

surrounds; tinted rear windows and a sports rear bumper, as well as an altered colour palette that now includes a laid-back “Matte Magnesio Grey” finish. The interior is thoroughly different to the initial MiTo, first launched in mid 2008. The car now has a changed dashboard, upgraded plastics and an up-to-the-minute fiveinch, touch-screen infotainment system with voice recognition, Bluetooth, steering wheel remote controls, USB/Aux ports and optional satellite navigation. With just 875cc under the bonnet of the Alfa I tested, you’d think you’d have all the power of an average domestic vacuum cleaner on tap. You’d be wrong. Yes, there’s no denying the TwinAir Sprint model sounds like an industrial sewing machine on tick over, but the little Italian car draws deep from its well of two-cylinder potency when it needs to. The tiny petrol-powered turbo engine benefits from a 20hp boost in performance – now

A wide-ranging array of traction, braking and stability control systems is standard on the mini MiTo too. All this can be adjusted via Alfa Romeo’s trademark Alfa D.N.A. selectable driving mode system. It allows you to choose between three different driving settings: Dynamic, Normal, and All-Weather. The clever gadgetry controls the character of the car, from the behaviour of the engine, brakes and steering, to the suspension and gearbox. And it works – to an extent. Dynamic is sporty, making the steering weightier and the throttle more responsive, but that in reality makes the MiTo more of a struggle to drive. If you stay with the Normal setting, the steering is gentle and the car is effortless to weave in and out of city traffic. The super-mini is also now equipped with fuel-saving Start& Stop; air conditioning; a leather-trimmed steering wheel and gear knob; electric windows and mirrors; seven airbags; front fog lamps; a rear spoiler and alloy wheels. So, even though prices for the MiTo aren’t going for a song, the miniature motor is well equipped and offers fistfuls of charm. And, no, in my opinion, looks still aren’t more important than content – but they’ve certainly not done Alfa Romeo any harm.

Reflexology Sleep is something we all need, although an incredible 50 per cent of us have trouble sleeping at some time or other. There are a number of factors such as general busy lives, to life stresses, work patterns and of course having young children. Reflexology can be beneficial to someone with sleeping issues. Melatonin is a hormone like substance secreted from the pineal gland that helps regulate the body’s internal body clock through lowering the heart rate and reducing alertness, along with the endocrine system. Balancing the brain area means that any over activity is calmed down and under activity is stimulated. Regular treatment can alleviate the stresses and strains of long term disturbances to the nervous system. General self help to improve sleep pattern. • Avoid consuming anything with caffeine after about 7pm and reduce your daily intake. Caffeine is a stimulant, but only for a short time and then you may feel a reverse reaction such as being tired or ratty.

Making money from your unwanted clutter If you needed to leave your home quickly, most of us could grab a bag and fill it with the things we needed most. So the reality is that we don’t actually need a great deal of what we surround ourselves with. In previous articles we’ve covered the issues of evaluating what you buy BEFORE you part with the cash, but what about all those goodies you’re sitting on that could raise you money by selling them? There are lots of options to get rid of that clutter. EBay is an obvious one and depending on what you’re selling a small fee will apply. It’s a good system if you’re happy to go online and upload photographs and a description of what you’re selling and you can choose whether to post goods or have them collected from you. This isn’t great if the item is bulky as you’re targeting potentially the whole of the UK. Gumtree is another option which has local sites so that you can push your items out to just your local area. It’s also a free service so you get to save a few pennies there too.

What to Pay for Garden Design This is a tricky one. Especially as you can’t go onto the Internet and do a comparative search to find out. Garden design is an unregulated industry so anyone can call themselves a designer at any time without the need to prove that they can do what they say they can and they can charge anything they can persuade you, the customer, to pay without regulation or constraint. So what do you do? The answer lies in trust. Do you trust that person because they are giving you reassurances that you feel demonstrates trustworthiness? For example, if the person you are talking to about designing your garden is someone you’ve found on the internet without a personal recommendation, ask them about their back ground, how much horticultural training they’ve had and do they know their plants. Ask them to identify a couple of plants in your garden and just generally observe how much passion they display about the subject. It would also be sensible to ask to talk to a previous client and the questions to ask them are ‘Would you recommend them to your best friend?’ or ‘Would you use them again?’ Above all, make an active decision as to whether you are on the same wavelength ie can you understand what they are saying and do they understand what you are saying? If you do feel that you can communicate with them and could form a good working relationship with them, then you have made P44

Some designers will do it based on how many hours it will take to do the work and then times that figure by their hourly rate. Others, including me, will charge on a ‘value given’ basis and that means the price given will be higher than those pricing on a ‘time taken’ basis. This is not necessarily a bad thing and in fact there are many customers who regard this as the only acceptable approach to the product or service they are about to buy. A business coach once told me that she only ever bought items or used services which were ‘reassuringly expensive’ and that she was suspicious of people offering to do something for very little money. To many customers, a low price indicates either a low quality service/product or that the person offering it has such
little faith in either themselves, the product or the service on offer, that they didn’t rate even themselves, so why should you?. To illustrate this point further, ask yourself if you are wearing the cheapest clothes you could find today or did you eat the least expensive food there was for lunch today? The answer to that is No, of course not. Most of us do not buy on price alone but what we DO buy on is trust. So the answer to the question of what you should pay for garden design is entirely based on what that designer is going to deliver, the problems that they will be providing solutions to and whether you trust them. If they are going to do something for you that you cannot, you know there is good two-way communication between you and your gut instinct is to trust them, then they are worth every penny they ask for.
