Seasonal Recipe by Hythe Brasserie
Lemon and Green Peppercorn Chicken A nice simple dish with rustic flavours which can be pre prepared and cooked with very little attention. Great for entertaining or even Valentine’s day dinner, just make sure there are some strawberries and Champagne as well!
Serves 4 Marinade: 4 tablespoons of runny honey 2 tablespoons of Dijon mustard 3 cloves crushed garlic 3 teaspoons green peppercorns, lightly crushed with the back of a spoon Juice and zest of 2 lemons For the chicken: 4 chicken breasts, preferably with the bone in as they stay moist. 4 sprigs fresh rosemary 1 sliced lemon Small bag of baby potatoes Salt and pepper Method: Combine the marinade ingredients and pour over the chicken in a bowl and leave in the fridge for 2 hours Heat the oven to 200C (Gas 6) Bring the potatoes to the boil (whole and skin on), drain
Place the sliced lemon, rosemary sprigs and potatoes at the bottom of a roasting tin Place the chicken and marinade on top, adding salt and pepper to taste Roast for 30-40 minutes or until chicken and potatoes are cooked Remove from the oven and rest for 10 minutes, covered in foil Serve with some steamed greens or some fresh salad leaves Tips: The marinaded chicken works really well on the Barbeque for a summer dish and you can use cracked black pepper instead of crushing the green ones if you prefer.

An insight into our local area London which is only 55 mins on the fast train, teach half-day yoga workshops in London, and run two yoga holidays (Spain and Portugal) a year, but ultimately, my dream, as a yoga teacher of 15 years, is to build up my classes, workshops and holidays and maybe even run a little ‘Yoga B&B by the sea’, from the seaside in Hythe, Kent. Hythe has a pebble beach, which may be why it is relatively so undeveloped. No ‘Kiss me Quick’ hats here. It ‘s one of the original five Cinque port towns, (being Dover, Hastings, Hythe, Romney and Sandwich). The group was originally formed for military and trade purposes and were part of the country’s defence from the 11th to at least the 15th century. The Royal Military Canal runs from Hythe to Hastings approx 28 miles following the old cliff line bordering Romney Marsh, which was constructed as a defence against possible invasion during the Napoleonic Wars.
We loved this insight into our local area by a new resident, reminding us just how lovely it is where we live... I was born in Kent, 30 miles or so north of Hythe, but have spent most of my 30-odd adult years in London. They say ‘When a Man is tired of London, he’s tired of Life’. I’m definitely not tired of London, I love London, however, I was desperate to live in a house and not a tiny flat. Keen to have a dog and a beautiful area to walk with the dog and to be more connected to nature. Also, I had to be in easy reach of London. So I purchased a very old terraced house ‘be careful what you wish for’ I hear echoing in my ears when I said I wanted a ‘project’… Even with more pine than a pine forest, and with all the things that just don’t work, I love this little house. The dog is next… I have the Royal Military Canal in my front garden (so had better not get a Waterdog!) and the sea’s just a few minutes’ away. I moved on the hottest day of the year, swore I wouldn’t swim in the English Channel, but that very day (and the first time since 1976), I went swimming. It was heaven and had nothing to do with the fact I had no hot water for two weeks! Turner is famous for painting in the Margate area because of the light and the views. The sky here, and in particular the view from my bedroom, is blissful. I never tire of it and frequently watch the sun come up, just before my morning yoga practice, it’s so beautiful, even when it’s dreary and overcast, the sky is constantly changing. I still do bits of work in P12
One of my favourite walks with the sea pretty much always by your side, is the five mile, flat stroll from Hythe to Folkestone harbour. You pass Princes Parade, an unspoilt, un(yet)built on expanse of land leading to tiny Seabrook (one local shop and one pub) with kayaks for hire on the canal, beautiful little Sandgate squeezed with vintage, curiosity shops, a couple of excellent restaurants and pubs. If you don’t want to venture too far, just before the Murco garage at the Seabrook end of Princes Parade you’ll find Noiy’s Noodle van. Noiy serves the best Thai noodles I have tasted outside of Thailand. She’s there all year round and in the summer we frequently eat our noodles on the bench or on the beach watching the sun set into the sea. In the summer people are on the beach long after the sun sets with picnics and disposable bbq’s and all year you will see mini-firework displays and people celebrating with the sending off of paper Chinese Lanterns, coupled with the inky backdrop of a clear, starry night, it’s truly magical to watch… Four months in and I’m loving my new life, I have a couple of new yoga classes starting in January, the new kitchen arrives next week and I hope to volunteer for a local charity, if I ever stop painting! Once I become a little more established and don’t have to rely on going to London to work, then I will rescue my dog and he/she will come and live in my little house, by the canal, not far from the sea. Montgomery Vet Clinic Q & A Q: My cat seems to have trouble chewing her food and eats mostly on one side of her mouth. What causes this? It sounds as if your cat may have a problem with her teeth or another part of her mouth such as her tongue. First of all you should see if her mouth has a bad odour and then have a look in her mouth to see if you can see anything obvious such as a broken tooth, a wound or something stuck in her mouth. You should then take your cat to a vet as it sounds as if she will need some treatment. The most likely thing is that she has some form of dental disease- this is very common in cats. There are several preventative measures to stop further dental problems in the future that you can speak to your vet or vet nurse about such as special diets, toothbrushes and poultry flavoured toothpastes and products to stop plaque building up on your cat’s teeth. We hope your cat is feeling better soon!
Q: Why do some dogs have claws growing on the side of their leg above their paws. Are they like dogs’ thumbs? These claws are called dew claws and they are the first digit on your dog’s feet. Our thumbs are our first digit so in this way they are similar. However, although some dogs do use their dew claws for holding things such as toys and treats dew claws are not very moveable and much less useful than our thumbs! Dew claws are commonly found on the front legs and occasionally also on the back legs. They usually cause no trouble. Occasionally the dew claws grow at an odd angle that means they get caught all the time and in these cases they may need to be surgically removed. The Folkestone and Hythe Branch of Cats’ Protection is part of a national charity caring for neglected and abandoned cats. Costs are considerable, as the escalating number of cats coming into our care are given full health checks: blood tests, vaccinations, micro-chipping are just a few of the procedures with other, more costly treatments, sometimes being necessary. We also provide a heavily subsided neutering scheme for people on benefit and low incomes. Our group of fosterers provide an invaluable service, by caring for the many cats taken in before rehoming. Help a child discover the joy of reading
Reading is essential in today’s world. Unfortunately many children struggle to learn to read for all sorts of reasons – one in seven children in England left primary school last year behind in their reading and one in six adults in the UK has a reading level below that expected of an eleven-year-old. Beanstalk is a national charity that gives one-to-one literacy support to children in primary schools in Kent who have fallen behind with their reading. Each Beanstalk reading helper works with three children for a year, spending half an hour individually, twice each week. The sessions are relaxed

and fun – chatting, playing games to build confidence and reading together. By becoming a reading helper, you’ll give a child the one-to-one attention they need to build their confidence and help them catch up with their reading. You’ll give them a chance to learn at their own pace and adapt your sessions to suit them. Volunteering as a Beanstalk reading helper is extremely rewarding, makes a lasting difference to children’s lives and is a great way to give something back to your local community. Why not make this your resolution this year? No previous experience is required as full training and
support will be provided throughout your time with us. Volunteers are needed in this area as well as right across Kent. Hooray for our Handymen! anyone’s Saturday morning. Thank goodness for our local Handymen, who can spring to our rescue and seem quite happy to wobble around on ladders in the wind and the rain, retrieving clumps of soggy leaves for us. Remember In summer when you planned to get an Electrician to install a couple of useful outside sockets in the garden? Well now is the time that you wish you had got around to it, as all the garden jobs seem to require an electric machine to resolve. And having the patio door open for the cable to be plugged in with all your warm and cosy heating disappearing outside, suddenly reminds us of the need for those outdoor plug sockets.
Have you ever noticed that winter brings lots of jobs to do outside the house? As soon as we go from the season of mellow fruitfulness in autumn into the depths of winter, all the little problems start to appear outside your property: The lovely russet coloured leaves of autumn turn into leathery clumps that stick together in the rain and decide to form an impervious barrier in your gutters to any rain being able to access the down pipes, and you get annoying P18
waterfalls from the gutters, usually right where you stand to open the front door. Or one pesky roof tile decides to slide sideways in the wind, letting rain into your loft. I don’t know about you, but hiring a ladder and clambering up to roof level is not an appealing way to spend
The heating system usually lets you down on the coldest days, and with such dark evenings, it reminds us that we also didn’t get around to fitting a burglar alarm in summer either. So HOORAY! For our local Handymen, they are our true superheroes and often go unthanked for their dangerous and vital work for us. Kate Baker mosaic muse Creating mosaics is my passion since 1997. The processes involved include gathering inspirational photos on a woodland walk or viewing work of favoured artists, Living by both the sea and countryside I often take photographs which lead to an idea for a mosaic. I then develop it and enjoy the cognitive process of designing and placing each tesserae and bringing to fruition the idea; creating a beautiful, bespoke and original mosaic. Nature inspires me; the beauty and colour it creates. From scented roses, perennial climbers, insects, woodland landscapes, seascapes and the love I feel for my surroundings. After completing an advanced mosaic and glass fusion course
I purchased a glass fusing kiln and make glass hangings and inclusions to combine with my mosaics thereby creating depth and texture in my work. I have a building portfolio of commissions. Up-cycling unused, unloved ceramic crockery to make 3d ‘chunky ceramic’ mosaic hearts is another facet of my work. Tired of unnecessary waste I am utilising hand cut ceramic / tile and breathing new life into the heart form and other disregarded objects. I’ve exhibited in The Beaney Museum, Canterbury, Deal Library and local art exhibitions as well as working on a mosaic venture with a team of mosaic artists for the charity Centre point, in London. I have regular stalls at Vintage, Artisan and craft fairs in Deal and other
seaside towns along the coastline, including showcasing items to sell in shops. I’m an affiliated member of British Association for Modern Mosaic (BAMM) and South East Artists, (SEAS) This year I am inspiring new crafts-people to join my beginner mosaic and/or glass fusion workshops. Being a former teacher I have good appreciation of organisation and motivation of students.

What Is Homeopathy?
In the simplest terms it is another form of medicine. However unlike conventional treatment it targets the characteristics of the whole person. There are no lists of damaging side effects attributed to each medicine. On Your Plot - Getting the upper hand Spring should really be on it’s way by the end of this month and there’ll be plenty of jobs to keep you busy on your plot. There’s nothing quite like sowing seeds and the thrill of watching those first tiny seedlings appearing just a week or two later. Weather permitting the soil should be warm enough to be sowing outdoors in March. Your new seedlings will need all the help that you can give them if they are to flourish so don’t forget the weeding and pest control too! There’s no doubt that the weather during the first part of the year lived up to our expectations of a month of extremes - with mild temperatures and homes and gardens hammered by incredible rainfall. Hopefully March should see the weather settling down and Spring truly starting to emerge. Most seed packets give you some guidelines as to which month/or months are best to sow in but personally I think that it’d be a lot more helpful if they gave a little information about the temperature required, not to mention just how long germination is likely to take. Soil temperatures of at least 6º are needed for most seeds - if you don’t want to guess at this you can get a soil thermometer to check. Don’t forget that by using products such as fleece, or cloches, over your beds you can raise the temperature. Some seeds, such as parsnips, are notoriously slow to germinate taking up to 3 weeks for seedlings to appear - a good idea with slow starters like these is to sow quick growing crops such as radishes on either side of the row. This will help mark the rows out until your parsnips appear and the radishes will quickly be grown and ready to harvest. Take note also of the depth that the different seeds should be sown at - too shallow and they’ll either blow away or be eaten by the birds, too deep and you may bury them alive! Try to space seeds evenly, though if you sow too many you can thin out the weaker seedlings after they appear. Do remember that with many crops it is better to sow just a few and then sow again in a few weeks time to avoid having too many ready to harvest all at once. Salad crops such as lettuce will bolt if left too long, and other vegetables which may have a short harvesting period can be enjoyed for much longer if you save the seed and sow a few in succession every few weeks. As the soil warms up for your new crops so it also warms up nicely for the weeds about now! For many people part of the attraction of growing your own is eating chemical free produce and P44
organic methods of pest control will therefore be preferred. Little and often is best - take a quick walk around the veg patch each morning and hand pick any emerging weeds. Hoeing also works well and if you are careful not to let weeds set seed you’ll avoid a long-term problem. Of course the situation isn’t helped by the fact that your patch is likely to have large amounts of bare soil on it between widely spaced rows at this time of year. Some crops, such as potatoes will obligingly grow to ultimately block out the light and deter weeks, but if you’re really having problems then think about putting down a thick, organic, mulch to cover the bare soil. Slugs will also emerge to attack your young seedlings - there’s no end of organic ways to do battle from hand picking at night and beer traps to watering in nematodes. Strike early and gain the upper hand!
