Wards Hotel Facelift for Wards Hotel brings Fusion Fine Dining to Folkestone One of Folkestone’s oldest hotels has been given a fresh lease of life by new owner/manager Connan Gupta, who has brought an exciting fusion menu to the restaurant. But that’s not all: step under Ward’s familiar green awning and you’ll be met by the first signs of a stunning refurbishment. We went along to sample the incredible menu in Wards smart new restaurant and relax afterwards in the cosy bar area (we also got an exclusive look at some of the refurbished bedrooms... but we’ll leave you to discover their decor and design for yourselves!) Over coffee and chocolates in the bar, we learned more about the man behind the vision. Connan Gupta comes from a family of hoteliers who have run hotels and B&Bs in London. After falling in love with Folkestone, Connan decided he wanted to be part of the exciting future of the redeveloped town. On 12th December 2012 he took over ownership of Wards and, since then, has been working tirelessly to refurbish the building, rooms, restaurant, bar and menu. “Wards is an incredible hotel with so much potential,” he

told us. “It’s in an amazing position in Folkestone and is well placed to play a part in the future of this town. But I want to appeal to more than visitors, tourists and students. I’m really keen to reach out to local people in Folkestone, Hythe, Seabrook, Sandgate and surrounding areas. I’d love to introduce them to my new fusion menu, the freshly cooked lunches we serve here in the bar, and the weekend carvery.” Connan has taken influences from his family background and ideas from his travels in the hotel industry to create a really exciting dinner menu

which features clever fusions of asian dishes. It gives the Folkestone restaurant scene a whole new set of flavours. He’s kept that firm family favourite - the Sunday carvery - and has worked hard to keep the price refreshingly competitive despite the refurbishment. Connan has employed the help of a professional interior designer who has used a subtle approach to create a real boutique-hotel feel. We have a feeling we’ll be back soon to take a closer look at the rooms. For now, Wards is becoming a new favourite place for lunch, Sunday carvery, and dinner.

Seasonal Recipe by Hythe Brasserie

Pea & Shallot Tart 6-8 servings This one is a great vegetarian option made with shortcrust pastry and delicious for everyone. For the pastry: • 8 oz (200 g) plain flour • 4 oz (100g) butter at room temperature • Pinch salt

Method:

• Approx 1 tbsp cold water

Pre heat the oven to 200 C.

Method:

Roll out the pastry and line a 9” loose bottomed flan tin.

Combine the flour and salt in a mixing bowl and rub in the flour until the mixture looks like breadcrumbs.

Bake blind for 12 minutes, and allow to cool slightly.

Add the water gradually and mix rapidly until a dough forms.

Line the bottom of the tart with the fried shallots.

Rest at room temperature for 20 minutes.

Tip the peas in.

Tip: If you don’t feel like making your own pastry there are some great frozen and chilled shortcrusts ready made from the supermarket.

Whisk together the eggs, crème fraiche, salt and pepper and pour the mixture over the peas.

For the filling: • 3 shallots, finely chopped and lightly fried in a little butter

To serve:

• 2 mugs of frozen peas (fresh if you like) • 4 whole eggs • 1 x 300 ml tub of crème fraiche • Salt and Pepper

Bake for 25 minutes or until the centre is firm to the touch.

Serve hot for dinner with some hollandaise sauce and baby potatoes or cold with a salad for a light lunch. Tip: Half fat crème fraiche works well if you are observing a lower fat diet.

John Eveleigh Exhibition John Eveleigh exhibition - A Master in our Midst, 12 April – 3 May. In 1964 distinguished Folkestone artist Prof. John Eveleigh became the first Director of the New Metropole Arts Centre where, over a period of 25 years, he presented a huge variety of artistic events. works there by distinguished artists such as Henry Moore and Sidney Nolan, as well as Turner’s watercolours from The British Museum. The Red Arrows Are Coming THE famous RAF Red Arrows aerobatic team will be the star performer on the first day of Folkestone Airshow, Saturday, June 7, it has been announced by organiser Open Air Promotions Ltd. To round off an exciting day, the Folkestone-based event management company is also to stage a spectacular live concert on Folkestone seafront. Said project manager Yvonne Holder: “It’s wonderful news that Folkestone has been included in this year’s displays by the Red Arrows. The team is in great demand by air show organisers all over the country. Its appearances, of course, are subject to operational requirements. “A fantastic line-up of military and other aircraft has been assembled to thrill residents and visitors during the Airshow weekend. As well as ‘The Reds’, it includes a Lancaster and two Spitfires of the Battle of Britain Memorial Flight, Tucano and Grob Tutor aerobatic planes and the Breitling Wingwalkers, the only formation wingwalking team in the world. “And that’s not all. Starting at 7pm, we are presenting ABBA Björn Again plus multi-instrumentalist star Chris Andre plus a grand firework finale. It’ll be an evening to remember. Ticket information is posted on www.folkestoneairshow.com”. The timetable of events in the air and programme of displays, exhibitions, entertainment and activities to be held on the Leas and in the harbour area on June 7 and 8 will be announced shortly. Shepway District Council leader Cllr David Monk said: “I am pleased that the Red Arrows are coming back to thrill us with their breathtaking aerobatic display. The district council and Folkestone Town Council have again made funds available to pay for the Red Arrows display”. P12

The Importance Of Wills For Parents With Young Children Many people think that making a Will is something best done in our later years, when we have assets to leave and are mindful of our own mortality. The fact is that, according to a survey by Foresters Building Society, up to 77% of parents with children under the age of 5 have not made a Will and of those that have, 46% have not reviewed it for over 5 years risking that it no longer reflects the needs of a growing or changing family. Contractors have moved on site to begin transforming part of Folkestone Town Centre into a new park, designed to be used by all sections of the community. The area known as Payers Park will be extensively landscaped and redesigned so as to offer an oasis of green space between the Creative Quarter, Grace Hill and Rendezvous Street. Preparatory work began in February to enable completion of the project in time for this year’s Folkestone Triennial exhibition, “Lookout”, which begins on 30 August. The new park will occupy a prime position, and will incorporate views through existing mature trees across the sloping site. Amenities will include a graded boardwalk and other walkways, seating, planted and grassed areas, and a central plateau, all designed to provide a focal point and destination for residents, visitors and shoppers, as well as improving access between areas of the town centre that are currently disconnected. The current car parking spaces will be retained, but realigned so as to present the entire area more attractively. The site has been dilapidated, unused and without any designated purpose for many decades, and is now being made available for public use through a partnership between The Roger De Haan Charitable Trust, Kent County Council and Shepway District Council, who will manage the park under an arrangement that also allows them to manage the car park spaces.

Calling All Menopausal Ladies It helps to understand what is going on during menopause (which is said to occur when a woman’s periods stop). In the months or years leading up to this the body is adapting. The ovaries are slowing up and reducing the level of oestrogen they are producing and at the same time the adrenal glands are getting used to having to supply a greater degree of a different type of oestrogen they manufacture after menopause. The body will be more susceptible to the effects of adrenaline and stress during this time and the liver will be working extra hard to mop up the resulting by products. Slimmer ladies may also begin to lay down a little extra fat as the adrenal oestrogen is converted and stored in fat cells too.

The following tips might be helpful to some: • Avoid synthetic hormones - eat/drink organic. • Make sure you get enough good oils, wheat germ oil, avocado, anything high in Vitamin E, oily fish.

Ray Johnson Runs London Marathon 2014 Once again I shall be running the London Marathon on 13th April 2014 in aid of the Kent Association for the Blind (KAB). This will be my 14th official London Marathon in a row and to date I have raised over £51,821 for KAB and also over £6,000 for Cancer Research. Just the other day I completed a training run of 22 miles from Folkestone to Bonnington and back. Already I am on my way having raised over £1,675 so far for this year’s race.” Thanks for your help.

26 - 27 APRIL 2014 1940’s Wartime Weekend at Dover Transport Museum

In the late summer of 1914 many Belgian civilians began to flee from the fighting, soon to be followed by wounded men of the Belgian Army. This event tells the story of this time and the subsequent years of the War through activities designed to help visitors engage with and learn about this important moment in history and its associated material heritage.

The ‘1940s Wartime Weekend’ at Dover Transport Museum will commemorate the vital role that Dover played as both a Port and vital hub of national defence during WW2, in addition to highlighting the contribution of those on the Home Front, and our Allies, throughout those war years. The event will be visited and inspected by ‘HM Queen Elizabeth’ along with ‘Princess Elizabeth’, her ladies in waiting and her detective’. This is a locally based lady historian who accurately portrays the then Queen (the late Queen Mother) as she was often seen during those war years, visiting the bombed towns and factories of Great Britain.
