This edition, we really pleased to bring you news about the Folkestone Festival events planned for July and August. It’s fair to say it was a real shame when this year’s airshow had to be cancelled (although weren’t the Red Arrows fantastic?!), but there are still so many events that are taking place in the area as part of the Folkestone Festival that we’ve focused on this for our “What’s On” details this edition. It would be great if as many people can go along to the events as possible. We’d like to thank Shane Record for allowing us to use his beautiful artwork for this Summer edition.

Annual Summer Ball Friday 5th July 2013 by Hannah O’Donnell
Summer – so we’re told – is here. The sun may have gone into hiding but I know a little place to find some sparkle and shine. The Folkestone Rugby Club’s Annual Summer Ball is a prime excuse to indulge yourself with fine dining, drinking and dance, and for £70 per ticket, you can get a piece of this pie. The summer ball is the highlight of my year, let alone my summer. Eight hours of music, great food and plenty to drink, this is a fantastic black tie event with good friendly people. Don’t feel you have to be a member to attend. This is an occasion to welcome you whether as a rugby fan or not. You’re greeted by a Drinks Reception between 7pm and
7:30pm, although really this is fantastic time to show off your gorgeous outfit, have a drink and meet the people you’ll be sitting with on your table. Tables of ten are available making it perfect for business entertaining, or invite some friends and family. Or treat your partner and come as a couple, joining another table as a lovely opportunity to meet new people. At 7:45pm, everyone is seated for the three course meal, which is so good that even as a literary student I struggle to find words to describe. The Folkestone Rugby Club (and me this year) worked with the head chef Matthew Fewins of Scott Anderson Ltd, who has previously worked at Michelin listed brasseries, to create a mouth-watering three course menu that is worth every penny.
A band will be playing throughout dining, and then a disco afterwards until the early hours. If dancing isn’t your thing, then there will be Dodgems which are free to ride for you to enjoy. If this still isn’t enough to entice you then maybe the theme of ‘Masquerade’ this year will. All the mystery and enchantment is available right on your doorstep, so don’t be the one to miss out. I’ll be there, enjoying the glitz and glamour I know Folkestone is capable of. For only £70, make your midsummer night special. I mean, how often do you get a chance to spoil yourself so completely? Seasonal Recipe Potted Dungeness Shrimps by Simon Oakley (Head Chef @ Rocksalt)
Ingredients: • 500g peeled brown shrimps • 250g unsalted butter diced
4-5 Fishmarket,
• 40g anchovy essence
Folkestone,
• Juice of 1 lemons

• 1g ground mace

Serves 6
• Salt and freshly ground white pepper
Method 1. Put the lemon juice, mace, cayenne pepper, bay leaf and anchovy essence into a pan and simmer on a low heat for 1 minute to infuse the spices. 2. Add the butter a little at a time whilst continuously whisking over a low heat, whisk until all the butter is incorporated. 3. Be careful not to over heat or the sauce will split. 4. Add the shrimps and stir well so they are all coated then season with salt and freshly ground white pepper. 5. Fill the desired mould (individual dishes are good) with the shrimp mixture and chill. Remove from the fridge 30 minutes before serving with hot toast. P8

Folkestone’s Fishing Industry
With the first Folkestone Fish Festival taking place this year, we hear from Alan Taylor with a very interesting history of the local fishing industry. A reference to Folkestone for the year 1565 states; there are 120 inhabited houses, that 70 of the men were fishermen, and that the fishing vessels and boats of all sizes were 25 in number. By 1767 there were 49 fishing boats and 800 men employed in the industry. Hasted 1790: there are now 8 or 10 luggerboats and cutters, employed chiefly in the herring and mackerel fisheries, besides about 30 small-boats employed in the same, and in the catching of plaice, soles, whiting’s, skate, and such kind of fish, in their proper seasons, which altogether do not employ more than between 200 and 300 men and boys, who are under no regulation as a company. The fish are conveyed to the London markets, either by boats, or by expeditious land carriage.

There are also considerable quantities of Skate, Soles and other flat fish taken here, and some few shell fish. The London Markets derive a considerable portion of their supply particularly of land carriage. A custom formerly prevailed here amongst fishermen of selecting eight of the largest and best Whiting’s out ‘of each boat on its return from fishing; and selling them apart from the rest, in order to raise a fund for the celebration of a feast on Christmas Eve, which they called a “Rumbald.” This practice is now disused, although many of the inhabitants continue to assemble for the celebration of what is conjectured to have originated in the offerings formerly made to the Saint of the name as one of the patrons of fishermen, and their guardian from the “perils of the sea. bay hereabouts, and in Romney Bay. The London markets derive a considerable portion of their supply, particularly of Herring and Whiting’s, from this port; they being rapidly conveyed thither on railway carriages. It has been estimated that to fit for sea, including the nets and materials for fishing, as many vessels as were in that employ from this town in 1765, would, at the present prices, employ a capital of £60,000 to £70,000. Simpson’s Guide, 1872: The mackerel season is a most exciting time at Folkestone, as all can testify who have been there in May and June. The beach behind the Station is crowded with fishermen and their belongings, and three or four boats are out watching. Thousands upon thousands of fish pass by every day, the practised eye of the fishermen easily detects them in the distance. As soon as the word is given, a boat starts out from the shore, dropping a seine net astern as it goes, rows round the fish, enclosing them with the net, then throwing a rope ashore both ends are seized, everybody helps, and in a few minutes there lies on the beach at their feet, a mass of hundreds, perhaps thousands, of struggling mackerel, the imagined by those who only see them as they are brought to their doors. During the season mackerel can be bought for a mere nothing in the town, three and four a penny being often sung in the street.

Folkestone’s Fishing Industry (cont…)
Royal Institute of Public Health Congress, 1904: The fisheries constitute Folkestone’s most important industry, apart from catering for visitors. Long before railways were introduced, huge waggons used to convey immense quantities of bloaters to London, where they had as high repute as the Folkestone soles and whiting’s have to-day. There were “herring hangs” in every part of the old town, but now all have disappeared. It is estimated that the amount of money earned by the fishermen is not less than £50,000 annually. There are about sixty luggers, and they make a pretty scene when returning the trawling grounds in Dungeness Bay. Smaller boats with large sails are used for cod fishing with hook and line, and also for sprat catching. The return of the fishing fleet is a great attraction for visitors, and there is often an animated scene in the Fish Market in the centre of the old town; but the odour, “the ancient fish-like smell,” is not agreeable to all. Dr. William Harvey, the 16th century son of Folkestone whose work on the circulation of the blood won him a place in medical history, together with

his brother Sir Eliab Harvey, set up a trust which not only helped to establish a grammar school, but also helped some of the fishermen by buying them boats. The trust abandoned the latter policy in 1858. They had earlier endowed the ‘tan lade’ or tan house. Nets were dipped in ‘Cutch’ to preserve them and on coming out and being dried, they were a tan colour. Fishermen paid 8d to use the tanlade, which dated from the 17th century Types of fishing vessels operating out of Folkestone: The first harbour walls the East & South Piers were built in 1809 from Kentish Rag stone laid diagonally without any mortar. Up until this period and up until the Stade was built in 1860 the fishing luggers were hauled up the beach by a hand capstan. These craft were “clinker-, or clench-, built, a method of constructing wooden boats. The building in which the lower edge of each side plank overlaps the upper edge of the one below it forming what is called a land. The planks usually sand-elm are fastened together with copper rivets consisting of a square nail and a dish shaped washer called a rove. The land is pierced, the nail knocked through from the outside, the rove punched on while the head of the nail is held up by a dolly. The nail cut off just proud of the rove and the cut end clenched over the rove. After the shell planking is assembled, transverse battens of oak, elm or ash, called timbers are steam-bent to fit the internal, concave side. As the timbers are bent in, they are copper riveted to the shell, through the lands of the planking. The keel, stem-post and stern post are usually made of oak. A method called elm on Oak. These craft were called dipping luggers and propelled by lugsails. Many of these boats were built in Folkestone by, W.
R. Golder, Church Street, F. Graves, Lower Sandgate Road, Marsh Thomas Farley, Lower, Sandgate Road, Graves and Mercer, Bellevue Fields, John Boorn, Radnor Street and Mark Redman, The, Stade. After the Stade was built and the luggers could be moored in the harbour and afloat for about 5 hours the fishermen started to change to carvel-built vessels. Carvel built or carvel planking is a method of constructing wooden boats by fixing planks to sawn oak frames so that the planks butt up against each other, edge to edge, gaining support from the frame and forming a smooth hull. Such planking requires caulking between the joints. These vessels were also called dipping luggers and propelled by lugsails. Local builders included: A. Basham, 19 Beach Street, A. Phillips, The Stade, F. Gray, The Stade, L. Sands, The Stade and Thomas Saunders. The fishing industry at Folkestone has declined over the years and today only supports about twenty-four men operating eight boats. This is due to a number of reasons including EU fish regulations and fish quotas and stock licences. Present day

fishermen come to their work from various parts of the town by car. A far cry from years ago when fishing was the town’s main industry supporting about three hundred men operating up to sixty boats. In those days it was a very close community and most of the fishermen lived within walking distance to the harbour. Most of the fishermen ether lived on the Stade, in East Street, Radnor Street, North Street or Dover Street and many of them very rarely went outside the railway arches. One old fisherman Robert Fagg nicknamed “Jacko” who died on the 5th January 1961 said, “I didn’t know there was a town up here”, he was referring to Hawkinge while being taken for a country drive by Mr Rogers. Jacko told me
that he had seen the sea up to the bottom of the Road of Remembrance when there was a server gale blowing and spring tides. The old fishermen were very superstitious; the colour green was classed as unlucky so they never painted their boats green. They called rabbits Bexhill donkeys and they were also unlucky. When putting to sea they always went out the harbour bow first, it was unlucky to go out stern first. While at sea if a bucket or box accidently got turned upside-down they would throw it over the side because you can’t put fish in an upsidedown box or bucket. They would never go to sea on Friday 13th or take females with them. If fishermen saw a parson he called him a man with his collar back to front, he would turn his head and spit on the ground. Fishermen’s sayings: When putting to sea for a day’s fishing if the crew thought the sea was a bit rough and mentioned it to the skipper, he might reply “the rent man calls today”, the crew would know that meant there was no turning back. Never shed a clout until May’s out. In other words don’t take any jumpers off until the 1st of June. Years gone by there wasn’t weather forecasts, the fishermen would look at the clouds and read the barometer. If there was a mock sun they said it was a sign of southwest wind and rain.
A mock sun is when the sun is shining out two sides of a cloud. An old fisherman by the name of Dick Brice once told me never go to sea in a rotten tanned smock. He said “I remember when I was at sea under sail one of the crew fell overboard, we got the boat hook in his smock, but it tore it because it was rotten and by the time we turned the boat round he had drowned. Methods of fishing: Years gone by when the fishing boats were propelled by sail the most common methods of fishing were long-lining and drift-net fishing. Lone-line fishing required more men in the crew plus bait making it a more costly method of fishing that is the main reason this method is not used today. Trawl nets are the most common method of fishing today, but they were not used so much when the boats were under sail because the trawl needs dragging along the sea bed and they didn’t have the power to do that.

Pets Corner We love cats! We are huge cat fans and love everything about cats and in particular our own cat Carlo, who we lovingly call Mister Carlo. We love how independent cats are, which makes them a good pet to own, especially if you cannot be at home all day, as they are not as demanding as a dog and can be left for longer periods. Although they need lots of care and love, they sleep for around sixteen hours a day and love to hunt. Cats love to be outside, but they also love nothing more than a warm lap and some fuss, the exception of Carlo who just loves attention all day except when he’s sleeping. A Beginners Guide
Dead Heading and Seed Collecting You will nearly always get more flowers for longer if you can spend some time regularly ‘dead-heading’. That means removing faded flowers to stimulate the development of more flowers, and of new shoots on shrubs and roses.
If the dying flowers are left until they form seed pods, the plant thinks its job is done for the year and it won’t bother to produce any more flowers. However, with many of your plants, which have probably cost a packet from the local garden centre, you may want to leave some of the flowers until seed heads are produced so that you can collect the seeds and grow your own plants next season, saving plenty of money. Try it with plants with quite large seeds to start with, like Marigolds or try Aquilega (Grandmother’s Bonnets) or Foxgloves. When the seed capsules turn brown and start to split, cut them off and spread on paper lined trays until they’re fully dry. Take out the seeds and store in small labelled envelopes until ready for sowing. They may not grow exactly the same in character and quality as the original plants but it’s great fun to watch the results of your efforts spring into life.

On Your Plot - Expand Your Horizons Summer, sunshine and strawberries, June is a truly wonderful month! In this time of plentiful growth we take a look at making the most of your waste clippings by turning them into lovely rich compost to use next year, and also how to make the most of every inch of your space. Jobs for June:Take off the side shoots from tomato plants to avoid them becoming too bushy and overburdened with fruit. Water regularly. Garlic that was planted in the autumn should be maturing now. Lift when the leaves start to shrivel and leave to dry in a warm spot. Keep planting - the moist soil, higher temperatures and long days are ideal growing conditions. French beans, courgettes and salad crops can all be sown now. Watch out for pests! Think about protecting brassicas before caterpillars start to become a problem. Every year it amazes me how the plants respond so dramatically to the arrival of the warm weather. Anything sown or planted out in May seems to positively leap out of the ground and shoot skywards, in many cases quickly catching up with earlier sowings! Of course the lawn is no exception and if you don’t P28
already have a composting system in place then why not set one up now and make use of some of those endless grass clippings? Ideally you want to have two (or even three) compost bins so that when one is ready to use for the garden you have another filling up and rotting down. You can buy all sorts of nifty looking, readymade, compost bins - some even have clever devices that make it easy to turn the whole bin to help the waste break down - but you don’t need anything fancy. You can just start a compost heap in an out of the way corner, enclosing it with old pallets, or wire mesh wrapped around four stakes if you want to keep it looking a little neater. So what should you compost? Well any dead organic matter will decompose naturally but you should aim for a good mix of ‘green’ and ‘brown’ ingredients. Lawn trimmings, veg leaves and peelings provide the green element and you should add a reasonable balance of brown items such as shredded paper, straw, eggshells and even the contents of your vacuum cleaner bag. Turning the heap occasionally will accelerate the breakdown and covering with an old carpet when it is full will also help. Leave for several months and you should have some great compost! There are some special offers on www.nwleics.gov.uk, under recycling, for composters. June is also the time of year when it is easy to start to run out of space on your plot. Everything puts on amazing
growth spurts and you are suddenly left wondering where you are going to plant out those tomatoes that you’ve been nurturing in the greenhouse, or finding you’ve no room for the cabbages that you’d like to be eating later in the year. Time to expand your horizons and make full use of containers and of your borders. Look at the different varieties of lettuce and salad crops - many of these, along with cabbages, can add a splash of decorative, coloured foliage to your borders (and be eaten too!!!). Grow bags are wonderful for crops such as tomatoes, cucumbers and peppers. They’ll be happy in a sunny spot on your patio but do remember to water and feed regularly. Larger pots can house courgettes and pumpkins, with the exotic looking flowers adding a bright splash of colour. Even hanging baskets can get in on the ‘grow your own act!’ Look for suitable strawberries or tomatoes and you could be treated to a bumper crop of luscious fruit tumbling down from above.
