Seasonal Recipe by Hythe Brasserie
Wholemeal Soda Bread This is a traditional Irish bread recipe, also known as “wheaten” bread. No need for rising as this one is yeast free. We serve it in the Brasserie and many of our customers ask how we make it! So here’s the secret.
Method: Combine the dry ingredients in a bowl, make a well and stir in the buttermilk until you have a rough dough, with the dry ingredients well mixed in. Do not knead as this makes the bread tough. Divide the mix into 2 parts and place on buttered

12 oz (300g) coarse wholemeal flour 8 oz (200g) plain white flour 2 heaped teaspoons bicarbonate of soda 2 heaped teaspoons sugar (any type) 1 heaped teaspoon of salt 1 pint (500ml) buttermilk
place the mix into buttered 1lb loaf tins. Bake for 30-35 minutes at 190 degrees C or Gas mark 4. Tip: Add some pumpkin and sunflower seeds for texture and fibre.

Folkestone Rainbow Centre Established 1985
In the space of one generation the benefits to a community of longevity has given way to a contemporary mind-set suspicious about whether or not organisations effectively adapt to the changing circumstances within which they operate. In the business sector many companies fail to adapt and pay a very heavy price indeed, just walk down any high street today. As the Folkestone Rainbow Centre prepares to reflect on thirty years of serving people in crisis, this seems an appropriate time to celebrate the benefits to the community resulting from the efforts of many people who care deeply about supporting people through a crisis. Adapting effectively within a changing context is sheer hard work and of course is not without much pain and heartache, as any organisation that has been going for thirty years knows only too well. There are many difficult self-referential questions to be asked by the leadership, staff and volunteers of a charitable organisation such as ours. With the support of the Trustees our Chief Executive Jon Wilson continues to reshape the Folkestone Rainbow Centre with its various services investing in young lives and supporting people through a crisis. The Homeless Crisis Drop-in service has also benefitted from a great deal of planning, fundraising and effort to refashion the service to help meet the needs of a growing number of

people who find themselves sleeping rough, sofa-surfing or at risk of eviction, and renewing and reshaping any such service is never complete. But we are not the only people in Shepway who share these concerns and want to see practical action for those who are in desperate need, so we regard our service as being in partnership with others who share the necessary commitment to continue establishing dependable services upon which individuals and families can rely in times of crisis in the various storms of life. ‘I am no longer a tearful homeless mess’ explained one person who found himself rough-sleeping in Folkestone some months ago. He came back to thank the volunteers for helping to restore his confidence and self-respect that had suffered greatly following a dreadful series of toxic events in his life. Firstly, he needed someone to listen carefully and non-judgementally to what had happened. Attention to his practical needs followed, such as a shower, clean clothes and food. A new bank account was opened up and an appointment with a local GP surgery. As someone used to employment, a benefit claim was reluctantly started and accommodation followed. After a while the stability that living ordinary life well requires returned and dignity was restored. None of this would be possible without the dedicated team of volunteers, who often remark that it is as a great privilege. Serving people familiar with stress and despair can be challenging, but when someone returns having reflected on what was freely given, a sense of knowing you are serving in a team ready to support people amid the gloom and abject misery of homelessness, or the threat of it, can be very rewarding. With nearly 600 people benefitting from our crisis service last year I am humbled by the hard work and foresight of those who sought to establish something three decades ago that remains truly worthwhile for people in desperate need in our community. Montgomery Vet Clinic Q & A Q: All of my pets have been microchipped. But what shall I do if I move and our address and details change?
Q: Can you tell me how long my tortoise is likely to hibernate for? Does it depend on the size of the tortoise?
Each microchip is associated with a unique number that is kept on one of several databases in the UK. These databases contain all the details you have provided. If your details change then you need to contact the appropriate database by phone or email to update your information. The main UK database is Petlog. If you do not know which database your pet is registered on then you can contact any of the databases and they will tell you who you should contact. You will need to know your animals’ chip numbers – you can always contact your vet for this. It is essential to keep your contact details up to date- whenever we have a stray animal brought in we always check for a microchip straight away and it is very disappointing for us and the animal when the information registered with the microchip turns out to be incorrect.
The length of a tortoise’s hibernation depends on the temperature of its environment. Most common pet tortoises (Mediterraneans) will stay asleep if they are kept under 9°C. It is important that you control how long your tortoise hibernates for by controlling the temperature. A tortoise should never be hibernated for more than 3 months in total. When we hibernate our tortoise we have a thermometer probe in the box with him and check it every day to make sure it is between 2 and 9°C. If it is too cold your tortoise can get frost damage and if the temperature is too warm your tortoise can wake up and become ill. Hibernation is very complicated- it is always a good idea to talk to a vet who treats plenty of tortoises about it. The Folkestone and Hythe Branch of Cats’ Protection is part of a national charity caring for neglected and abandoned cats. Costs are considerable, as the escalating number of cats coming into our care are given full health checks: blood tests, vaccinations, micro-chipping are just a few of the procedures with other, more costly treatments, sometimes being necessary. We also provide a heavily subsided neutering scheme for people on benefit and low incomes. Our group of fosterers provide an invaluable service, by caring for the many cats taken in before rehoming. Folkestone Art Society Folkestone Art Society will be holding another exciting exhibition in May in Folkestone – at a conservative guess probably somewhere around its 300th as the society is now in its 87th year and has over 200 members. This makes it one of the oldest and largest art societies in the South East. The May exhibition will be open daily in the Harbour Gallery at the bottom of the Old High Street from 10 a.m. to 5 p.m.from Saturday May 2nd to Sunday May 31st. The Grand will host an autumn exhibition in November. As part of the vibrant art scene that Folkestone as the centre of the Triennial arts festival

represents, FAS is currently involved in considering further ways of promoting the creative arts and extending its activities within the local community, particularly working with young people. Remarkable Relationships: Learning to let go

Letting go allows life to flow better, to be able to see what is before us and move through it rather than holding on to things from the past that no longer serve us. For so many years I went through my life totally attached to the outcome. It was almost like I had the whole of my life mapped out in my mind and all I had to do was get to the end. I woke up the day an old friend asked me if I liked my life and did I want to be living it when I was sixty? The answer was no. I realised that I could endure life and get to the end or I could live it, moment to moment. I think many people endure life and miss out on the magic. I often work with people who have for many years just stuck at what they hate so that they can get to retirement and then enjoy life. However they realise that that means they will miss out on most of their life and then commit to change. And that’s great, if you see it and decide you want the magic. Trouble is if you do not make that change and continue to ‘stick at it’ you do not fully live for over two thirds of your life. And by the time you get to that last third (if you’re lucky!) you are so exhausted from the slog of life with no magic that it all feels too late. For me since leaving behind the life I did not like my life has been very much like a roller coaster. And that is the magic. I am alive to both the ecstatic joys and the black times of sadness. And to enjoy the magic you need both. Sure you can go through life on a flat-line – no highs no lows but that is rather like a living death. Life is supposed to have both highs and lows, without a low you would not even know the highs when they came along. P34
Personally, for me the roller coaster is an odd analogy because I actually hate them. Many years ago we were at an amusement park in Spain and a friend went on the corkscrew rollercoaster. She came off with the biggest smile on her face saying “You have to ride it – it is wonderful!”. For some reason in that moment I forgot (caught up by her enthusiasm) that I actually hated roller coasters and gaily got strapped into the ride. It was awful! But - and this is the big but, it taught me a huge lesson. Because after I got off and complained loudly how awful it was she asked: “Did you let go?” “Let go, let go?” I replied, ‘Are you crazy?” “Nope” she said. “The magic of the roller coaster is to let go and allow yourself to go with the ride. If you hold on you are bumped around all over the place, when you let go – that’s when the fun starts”. That’s when the ah-ha happened. I suddenly saw that I had been trying to ensure a ‘safe passage’. But when we do this either on the roller coaster or in life we stop the magic. Because if we only have one way of getting to the end, getting to the result, we do not even see what else life has to offer us. We get tunnel visioned and the best of the fun and opportunity – the magic - might be just beside us and we walk straight by. We need to be open to what comes, to allow it to give us even more than we have set our intention for. We can have a ‘this or something better’ attitude. In the Passion Test we say there are three steps to living a passionate life: Intention – being clear on what you are passionate about and setting an intention to go for it Attention – putting your attention on your intention, both by taking action – action engages attention – and energetically focusing on it too. But the magic is the third key: No Tension – simply knowing that once you have done all you can, putting your full attention on your passion, that you can now let go. Let it go with the feeling of it is done – this or something better. Now that’s magic! What is Cognitive Behavioural Therapy? Cognitive Behavioural Therapy (CBT) is a talking therapy. It has been proved to help treat a wide range of emotional and physical health conditions in adults, young people and children. CBT looks at how we think about a situation and how this affects the way we act. In turn our actions can affect how we think and feel. The therapist and client work together in changing the client’s behaviors, or their thinking patterns, or both of these. Cognitive Behavioural Therapy works There is a great deal of research evidence to show that CBT works effectively in treating depression. This research has been carefully reviewed by the National Institute for Health and Clinical Excellence (NICE). NICE provides independent, evidence-based guidance for the NHS on the most effective ways
