Seasonal Recipe by Hythe Brasserie

Smoked Salmon and Goat’s Cheese spaghetti This one is easy to prepare for a quick supper. The blend of textures works well and the goat’s cheese and smoked salmon are a great flavour combination. The sauce is fairly rich so a simple rocket salad is a good accompaniment.

Serves 4

Method: Heat the oven to 180 c

Ingredients: 1 standard packet dried spaghetti 250 g smoked salmon, roughly chopped, not too fine 320 g firm goat’s cheese log, sliced into 4 250 ml crème fraiche

Place sliced goat’s cheese onto a baking tray Cook the spaghetti as per instructions, al dente or soft, as you prefer Drain and set aside Place the goat’s cheese in the oven to warm

salt and pepper

In a large pan or wok, heat the lemon juice, white wine and smoked salmon pieces until the salmon is just changing colour from orange to pink

handful of freshly chopped chives

Add in the crème fraiche, salt and pepper to taste

Juice of ½ a lemon 1 tbsp white wine

Bring the the boil then toss in the cooked spaghetti and combine well Place the spaghetti mix into warm serving bowls Remove the goat’s cheese from the oven and place on top of the spaghetti to serve Finally sprinkle with the chopped chives Tips: Half fat crème fraiche works just as well as full for a healthy option and for a vegetarian version, use sun dried tomatoes instead of smoked salmon.

Events Boost Shepway Visitor Numbers SHEPWAY is on course to achieve record visitor numbers this year, according to tourism marketing organisation Discover Folkestone, Hythe & Romney Marsh (DFHRM). Festivals and events are attracting hundreds of thousands of extra visitors DFHRM manager Chris Kirkham says that while the district’s outstanding beaches, open spaces and visitor attractions are as popular as ever there is no doubt that unique top-line events are helping to make Shepway the smart place to be. “Earlier this year, we claimed that no other holiday and leisure destination in south east England would be able to match Shepway for fun, thrills and spectacle. So it has proved. The summer’s been packed with crowd-pullers - Battle of

Britain Memorial Day, Folkestone Airshow, Folkestone Festival, Hythe Festival, War and Peace Revival, Folkestone Mermaid Festival, Hawkinge Spectacular, Folkestone Trawler Race as well as numerous carnivals, pageants and country fairs.

Folkestone Triennial, Britain’s biggest free display of outdoor art - plus plenty for youngsters to do.

“There will be a change of mood on August 4 when thousands of people gather in Folkestone for solemn ceremonies to commemorate the centenary of the outbreak of the Great War”.

Pets Corner Guinea Pig Despite being technically a rodent, the guinea pig has gained widespread popularity in the Western world as a household pet. With their docile natures and seeming enjoyment of handling and care, this makes an ideal little pet for children who are happy to gently play and entertain these furry creatures. Domestic guinea pigs bond and recognize other guinea pigs and it is for this reason that they should be kept in same-sex pairs. In contrast to hamsters, guinea pigs have developed a different biological rhythm from those living in the wild and tend to have longer periods of play interspersed with shorter bouts of sleep. This makes them great pets for those who prefer not to be nocturnal! Guinea pigs are poor climbers, although they can navigate small obstacles. They also startle very easily so care should be taken not to scare them.

Goldfish - Don’t overlook the basics There is an assumption that the common coldwater goldfish is an easy and simple pet to keep. True to a certain extent but it’s easy to overlook some basics which may ultimately make your pet poorly or ultimately die. In these days of centrally heated homes, the coldwater aquarium is not truly cold so a heater/thermostat should be installed wherever practical to maintain a steady temperature of 21°c. Also, the thought that fishes will grow to fill the space available may render your fish unhealthy due to stunted growth if your aquarium is over-occupied, and some may die of stress if the space is too cramped. Goldfish also eat copious amounts and of course then excrete copious amounts so the filtration system should be entirely adequate to manage this. Overfeeding is the single most common cause of aquarium problems. Little and often is important - feeding the fish a couple of times a day should be sufficient. Good feeding is a way of avoiding swim bladder derangement which can be a common problem with goldfish.

Folkestone Triennial

30 Aug 2014 - 02 Nov 2014 Creative Foundation is pleased to announce the dates of Folkestone Triennial 2014, which will return for its third edition and be held over a nine week period from 30 August – 2 November 2014. Lewis Biggs will curate Folkestone Triennial 2014 under the title ‘Lookout’.

The lookout has always been an important part of Folkestone’s history as a port. The people of Folkestone have looked out to sea, from its humble beginnings as a Roman fishing village, to a wealthy trade port in the thirteenth century and the main embarkation point for soldiers fighting in the First World War. The lookout is the person who sees what is coming over the horizon. It is also the structure from which one keeps watch. The act of looking out demands that one takes up a physical position in order to get a perspective on the future. Internationally recognised contemporary artists have been invited to engage with Folkestone’s rich cultural

history and the town’s built environment. They will exhibit newly commissioned work in public spaces around the town. Some of these will become permanent additions to the landscape, alongside works from the previous two editions of the Triennial in 2008 and 2011. By inviting people to consider the art in its context, Folkestone Triennial will offer a new perspective on the town and on global futures, as well as establishing a lasting legacy that aims to continue the regeneration of Folkestone as a cultural destination and a place to live, work, visit and study. Buying prints is a great way for art enthusiasts to become art collectors. Prints come in a variety of types, and are most commonly produced in editions, also known as limited editions. Limited editions can be of any number. All limited editioned prints should have the number written on them on the front or the back as well as the artist’s signature. It is worth knowing that the price of editioned prints is likely to rise as fewer works remain available. So if you have your eye on a print, it’s worth getting in there early!

Some galleries specialize in prints but I prefer to show both original art and prints by the artists that I work with as I find this gives the buyer a fuller understanding of the artist’s work. Prints offer an affordable way of starting an art collection. If an edition is small, say 6, it is quite likely the starting price will be higher than something that has an edition size of say, 100. Many artists create prints to expand their customer base giving more people an opportunity to own an artwork where an original piece might be out of their price range.

Alfa Romeo MiTo 875cc TwinAir By Tim Barnes-Clay, Motoring Writer 105hp – which translates in a 0-62mph time that’s 1.1 seconds quicker than the previous 85hp version. Despite the additional performance, the Alfa Romeo MiTo TwinAir remains impressively efficient, with a combined fuel economy figure of 67.3 mpg and CO2 emissions of just 99g/km.

Someone once said, “What good is an eye-catching new suit if the person inside of it is rotten?” Now that’s a pretty brave statement — but an assertion, nevertheless, that speaks to the question of style versus substance. The style over substance debate has been around for a long time, and today the harsh reality is that we, the mainstream, are far more influenced by the “image” - style or outer shell of things rather than what’s on the inside. So when it comes to cars, what about the 2014 Alfa Romeo MiTO? Where does that fit in the style-versus-substance topic? Well, in my opinion, the arch-rival to the MINI and Audi A1 is a gorgeous little motor, and it lives up to its revised looks. Externally the latest incarnation of the MiTo benefits from a fresh, chromed front grille; titanium grey headlamp and tail lamp

surrounds; tinted rear windows and a sports rear bumper, as well as an altered colour palette that now includes a laid-back “Matte Magnesio Grey” finish. The interior is thoroughly different to the initial MiTo, first launched in mid 2008. The car now has a changed dashboard, upgraded plastics and an up-to-the-minute fiveinch, touch-screen infotainment system with voice recognition, Bluetooth, steering wheel remote controls, USB/Aux ports and optional satellite navigation. With just 875cc under the bonnet of the Alfa I tested, you’d think you’d have all the power of an average domestic vacuum cleaner on tap. You’d be wrong. Yes, there’s no denying the TwinAir Sprint model sounds like an industrial sewing machine on tick over, but the little Italian car draws deep from its well of two-cylinder potency when it needs to. The tiny petrol-powered turbo engine benefits from a 20hp boost in performance – now

A wide-ranging array of traction, braking and stability control systems is standard on the mini MiTo too. All this can be adjusted via Alfa Romeo’s trademark Alfa D.N.A. selectable driving mode system. It allows you to choose between three different driving settings: Dynamic, Normal, and All-Weather. The clever gadgetry controls the character of the car, from the behaviour of the engine, brakes and steering, to the suspension and gearbox. And it works – to an extent. Dynamic is sporty, making the steering weightier and the throttle more responsive, but that in reality makes the MiTo more of a struggle to drive. If you stay with the Normal setting, the steering is gentle and the car is effortless to weave in and out of city traffic. The super-mini is also now equipped with fuel-saving Start& Stop; air conditioning; a leather-trimmed steering wheel and gear knob; electric windows and mirrors; seven airbags; front fog lamps; a rear spoiler and alloy wheels. So, even though prices for the MiTo aren’t going for a song, the miniature motor is well equipped and offers fistfuls of charm. And, no, in my opinion, looks still aren’t more important than content – but they’ve certainly not done Alfa Romeo any harm.

Otitis Media (Glue Ear) - Try Osteopathy Before Grommets Otitis Media with Effusion (the fluid or ‘glue’), commonly known as glue ear is a build up of secretions in the middle ear, behind the eardrum. The increasing pressure causes great discomfort and distress to the child, and parents. If left to persist the ear may become infected, increasing the risk of deafness. This is an acute and painful disorder, which doctors usually treat with courses of antibiotics. Unfortunately, this often offers only a short-lived reprieve, if any, and the child may sometimes have to undergo surgery to have grommets inserted if the problem keeps recurring. Grommets are tiny tubes that are inserted through the eardrum to provide a drainage hole. This however does involve perforating the eardrum, which inevitably leads to scarring and the possibility of a degree of deafness. A variety of other approaches may be tried, such as antihistamines, removal of the adenoids, etc, but none with any great success as, from an osteopathic point of view, these approaches only try to deal with the symptoms and do not actually addresses the underlying cause.

Making money from your unwanted clutter If you needed to leave your home quickly, most of us could grab a bag and fill it with the things we needed most. So the reality is that we don’t actually need a great deal of what we surround ourselves with. In previous articles we’ve covered the issues of evaluating what you buy BEFORE you part with the cash, but what about all those goodies you’re sitting on that could raise you money by selling them? There are lots of options to get rid of that clutter. EBay is an obvious one and depending on what you’re selling a small fee will apply. It’s a good system if you’re happy to go online and upload photographs and a description of what you’re selling and you can choose whether to post goods or have them collected from you. This isn’t great if the item is bulky as you’re targeting potentially the whole of the UK. Gumtree is another option which has local sites so that you can push your items out to just your local area. It’s also a free service so you get to save a few pennies there too.

Car boot sales are hugely popular and are available in lots of places and it gives you a chance to take lots of items in one go to sell, as well as enjoying some fresh air and a cup of tea at the same time. 3 Essential Foundations That Gardens Lack Does the thought of your garden fill you with guilt as the weeds grow bigger and bigger? Chances are your garden is not based on the 3 Essential Foundations or one or more are out of balance. Or do you want to change something in the garden but don’t know where to start? Then the 3 Essential Foundations will be vital in helping you create the most relevant and best possible starting point for your new garden. Having designed and planted small to medium sized gardens for the past 17 years, I have found that the ones that are the most beautiful and pleasurable to be in are those that are based on an equal combination of what I call the 3 Essential Foundations and it’s never too late to look at them again. The first one is to ‘Know what you want’. Work out exactly what you’d like to do in the garden and what you must have to make it work on a practical front. The way to do this is to sit down and take a few minutes to really think about what you like doing outside. For example, many people like to eat outside, to entertain or just to relax at the end of the day with a glass of wine – and I expect that you will too. Make a list and consult the others who use the garden too. P44

The second is to ‘Know your garden’. Work out what the physical growing conditions in your garden and work with nature rather than against it. Essential characteristics to look for are the soil type, the soil pH (acidic, neutral or alkaline), where the sunny and shady spots are, is it sheltered or exposed and how much annual rain fall your garden gets. All these things will dictate the types of plants you can grow successfully and which part of the garden they will do best in. It is much easier to look after the right plant in the right place. The third is to ‘Know how much time you’re REALISTICALLY prepared to give to looking after the garden’. Once you know this, design the garden to fit in with your lifestyle. Err on the side of caution rather than enthusiasm because it is much better for the soul to look at one or two areas that look beautiful and feel right rather than the whole garden being a burden. The answers to these 3 questions will guide and direct the design that emerges and will dictate how much maintenance you will have to do in the future. When you feel on top of the maintenance, then you will be able to relax and enjoy the garden. There is no right or wrong time to assess the 3 Essential Foundations and there is a lot to be said for doing so at the beginning of the growing season and again at the end of it. You might be surprised at what you ‘unearth’. Happy Gardening!
