Editors Letter Dear Neighbours,

Welcome to the Summer edition of the Hythe Handbook; we do hope the sun is shining as you read this! This edition, we’re really pleased to bring you news about the Folkestone Festival events planned for July and August. Although this is slightly out of the normal coverage area, we really wanted to show our support for the huge number of people who’ve been working so hard to make these events happen. It’s fair to say it was a real shame when this year’s airshow had to be cancelled (although weren’t the Red Arrows fantastic?!), but there are still so many events that are taking place in the area as part of the Folkestone Festival that we’ve focused on this for our “What’s On” details this edition. It would be great if as many people can go along to the events as possible.

We’d like to thank Shane Record for allowing us to use his beautiful artwork for this Summer edition. Shane is a hugely talented local artist, with some incredible artwork of local areas. Do please have a look at his website www. shanerecord.com and the next time you’re in Folkestone, pop into his gallery towards the top of the Old High Street, where you can see him at work and view his paintings. Annual Summer Ball Friday 5th July 2013 by Hannah O’Donnell

Summer – so we’re told – is here. The sun may have gone into hiding but I know a little place to find some sparkle and shine. The Folkestone Rugby Club’s Annual Summer Ball is a prime excuse to indulge yourself with fine dining, drinking and dance, and for £70 per ticket, you can get a piece of this pie. The summer ball is the highlight of my year, let alone my summer. Eight hours of music, great food and plenty to drink, this is a fantastic black tie event with good friendly people. Don’t feel you have to be a member to attend. This is an occasion to welcome you whether as a rugby fan or not. You’re greeted by a Drinks Reception between 7pm and

7:30pm, although really this is fantastic time to show off your gorgeous outfit, have a drink and meet the people you’ll be sitting with on your table. Tables of ten are available making it perfect for business entertaining, or invite some friends and family. Or treat your partner and come as a couple, joining another table as a lovely opportunity to meet new people. At 7:45pm, everyone is seated for the three course meal, which is so good that even as a literary student I struggle to find words to describe. The Folkestone Rugby Club (and me this year) worked with the head chef Matthew Fewins of Scott Anderson Ltd, who has previously worked at Michelin listed brasseries, to create a mouth-watering three course menu that is worth every penny.

A band will be playing throughout dining, and then a disco afterwards until the early hours. If dancing isn’t your thing, then there will be Dodgems which are free to ride for you to enjoy. If this still isn’t enough to entice you then maybe the theme of ‘Masquerade’ this year will. All the mystery and enchantment is available right on your doorstep, so don’t be the one to miss out. I’ll be there, enjoying the glitz and glamour I know Folkestone is capable of. For only £70, make your midsummer night special. I mean, how often do you get a chance to spoil yourself so completely? Seasonal Recipe Potted Dungeness Shrimps by Simon Oakley (Head Chef @ Rocksalt)

Ingredients: • 500g peeled brown shrimps • 250g unsalted butter diced

4-5 Fishmarket,

• 40g anchovy essence

Folkestone,

• Juice of 1 lemons

Kent CT19 6AA

• 1g ground mace

• A good pinches of cayenne pepper

• 1 small bay leaf

Serves 6

• Salt and freshly ground white pepper

Method 1. Put the lemon juice, mace, cayenne pepper, bay leaf and anchovy essence into a pan and simmer on a low heat for 1 minute to infuse the spices. 2. Add the butter a little at a time whilst continuously whisking over a low heat, whisk until all the butter is incorporated. 3. Be careful not to over heat or the sauce will split. 4. Add the shrimps and stir well so they are all coated then season with salt and freshly ground white pepper. 5. Fill the desired mould (individual dishes are good) with the shrimp mixture and chill. Remove from the fridge 30 minutes before serving with hot toast. P8

Hythe Bay Children’s Centre Holiday Playscheme

Hythe Bay Children’s Centre is situated on the grounds of Hythe Bay Primary School. The Centre provides a Holiday Playscheme throughout all of the school holidays for children of Reception age to 11 years old. Children are welcome to attend from other schools.

We provide a variety of activities within the Centre, making a family atmosphere where children can feel at home, feel relaxed and enjoy their time with us. We like to go outside as much as possible, taking the children to the costal park and other local facilities. We also on occasions provide educational visits to

Pets Corner We love cats! We are huge cat fans and love everything about cats and in particular our own cat Carlo, who we lovingly call Mister Carlo. We love how independent cats are, which makes them a good pet to own, especially if you cannot be at home all day, as they are not as demanding as a dog and can be left for longer periods. Although they need lots of care and love, they sleep for around sixteen hours a day and love to hunt. Cats love to be outside, but they also love nothing more than a warm lap and some fuss, the exception of Carlo who just loves attention all day except when he’s sleeping. Calico Cat Craft Faits; real, handmade, local crafts! Say the word ‘craft fair’ and these days you are as likely to think of the mass-produced imports available for sale at some ‘craft’ events as you are to think of real, hand made local crafts. All that looks set to change with the arrival of Calico Cat Craft Fairs. Born out of a passion for traditionally made items, this new craft event organiser is attempting to turn the tide and showcase the cream of beautiful things being made right here in Kent.

The organisers of Calico Cat have a long association with Hythe, and are delighted to see the town undergoing a bit of a revival through craft. ‘There are a whole host of talented and dedicated artisans in this area’, say partners Sophie and John, ‘We need to support them and shop locally for the sake of our communities. If we all just made one change and bought one locally, ethically, environmentally produced thing we would put money back into our local community, take a stand against exploitative production in developing countries, and help to keep crafts alive for future generations’.

On Your Plot - Expand Your Horizons Summer, sunshine and strawberries, June is a truly wonderful month! In this time of plentiful growth we take a look at making the most of your waste clippings by turning them into lovely rich compost to use next year, and also how to make the most of every inch of your space. Jobs for June:Take off the side shoots from tomato plants to avoid them becoming too bushy and overburdened with fruit. Water regularly. Garlic that was planted in the autumn should be maturing now. Lift when the leaves start to shrivel and leave to dry in a warm spot. Keep planting - the moist soil, higher temperatures and long days are ideal growing conditions. French beans, courgettes and salad crops can all be sown now. Watch out for pests! Think about protecting brassicas before caterpillars start to become a problem. Every year it amazes me how the plants respond so dramatically to the arrival of the warm weather. Anything sown or planted out in May seems to positively leap out of the ground and shoot skywards, in many cases quickly catching up with earlier sowings! Of course the lawn is no exception and if you don’t P38

already have a composting system in place then why not set one up now and make use of some of those endless grass clippings? Ideally you want to have two (or even three) compost bins so that when one is ready to use for the garden you have another filling up and rotting down. You can buy all sorts of nifty looking, readymade, compost bins - some even have clever devices that make it easy to turn the whole bin to help the waste break down - but you don’t need anything fancy. You can just start a compost heap in an out of the way corner, enclosing it with old pallets, or wire mesh wrapped around four stakes if you want to keep it looking a little neater. So what should you compost? Well any dead organic matter will decompose naturally but you should aim for a good mix of ‘green’ and ‘brown’ ingredients. Lawn trimmings, veg leaves and peelings provide the green element and you should add a reasonable balance of brown items such as shredded paper, straw, eggshells and even the contents of your vacuum cleaner bag. Turning the heap occasionally will accelerate the breakdown and covering with an old carpet when it is full will also help. Leave for several months and you should have some great compost! There are some special offers on www.nwleics.gov.uk, under recycling, for composters. June is also the time of year when it is easy to start to run out of space on your plot. Everything puts on amazing

growth spurts and you are suddenly left wondering where you are going to plant out those tomatoes that you’ve been nurturing in the greenhouse, or finding you’ve no room for the cabbages that you’d like to be eating later in the year. Time to expand your horizons and make full use of containers and of your borders. Look at the different varieties of lettuce and salad crops - many of these, along with cabbages, can add a splash of decorative, coloured foliage to your borders (and be eaten too!!!). Grow bags are wonderful for crops such as tomatoes, cucumbers and peppers. They’ll be happy in a sunny spot on your patio but do remember to water and feed regularly. Larger pots can house courgettes and pumpkins, with the exotic looking flowers adding a bright splash of colour. Even hanging baskets can get in on the ‘grow your own act!’ Look for suitable strawberries or tomatoes and you could be treated to a bumper crop of luscious fruit tumbling down from above.

A Beginners Guide

Dead Heading and Seed Collecting You will nearly always get more flowers for longer if you can spend some time regularly ‘dead-heading’. That means removing faded flowers to stimulate the development of more flowers, and of new shoots on shrubs and roses.

If the dying flowers are left until they form seed pods, the plant thinks its job is done for the year and it won’t bother to produce any more flowers. However, with many of your plants, which have probably cost a packet from the local garden centre, you may want to leave some of the flowers until seed heads are produced so that you can collect the seeds and grow your own plants next season, saving plenty of money. Try it with plants with quite large seeds to start with, like Marigolds or try Aquilega (Grandmother’s Bonnets) or Foxgloves. When the seed capsules turn brown and start to split, cut them off and spread on paper lined trays until they’re fully dry. Take out the seeds and store in small labelled envelopes until ready for sowing. They may not grow exactly the same in character and quality as the original plants but it’s great fun to watch the results of your efforts spring into life.
