Welcome to the latest edition of the Hythe Handbook; we’d like to wish you all a very happy Christmas, and a peaceful New Year. In the run up to Christmas, we bring you a new feature, titled “Hythe’s Alive,” which focuses on our lovely high street, and the idea that if we all shop and enjoy what we have locally, we’ll be helping local people have a happier Christmas, rather than adding to the profits of huge chains such as supermarkets. There’s some great things going on in Hythe high street, and although there’s no denying it’s a difficult time, we have a brilliant range of shops, old and new. We’ve also teamed up with the Hythe Brasserie to bring you a delicious recipe, and with The Flower Shop to give a bouquet of flowers to a deserving local resident

Hythe’s Alive It’s fair to say that the current climate, and the daily news, isn’t a very jolly place to be at the moment. So we feel it is particularly important to take notice of the fantastic place we are lucky enough to live in, and in relation to this, do all we can to help the local businesses. We recently read an article which summarised with the point that if we can all shop locally this Christmas, we will be helping local people to have a better Christmas, rather than simply adding to the huge profits of supermarket chains and so on. This is an idea that greatly appealed to us. So, we thought it would be useful to include a feature in this edition of The Hythe Handbook, and each edition in the future, entitled “Hythe’s Alive”. Within it, we’re very happy to include any positive news we can about things taking place in Hythe, particularly focusing on the high street area. If you’d like to contribute, or know of something great we should be including, please do contact us. As a local, family run business living and working in Hythe, we’d love to hear from you!
New additions this winter include The Sewing Space, details of which are on P13 and The Dolls House. We featured The Dolls House in the Autumn Edition of The Hythe Handbook (prior to it’s opening) and have thoroughly enjoyed visitng since it opened it’s door in November. On the ground floor, you can enjoy a lovely cup of coffee, or delicious treat in the relaxed, friendly café. With plenty of space to relax over a magazine or the local paper, it’s a great place. Also on the ground floor is a brilliant toy shop, selling Retro and Collectable toys, both young and old boys will be fascinated! There’s also a fantastic African stall, with the most beautiful materials and artefacts; real one off finds. Along with the books store on the first floor, and the vintage clothing stall, jewellery, photography and other beautiful items, it’s the kind of place you could complete your Christmas shopping list easily! When eating out, we have a lovely selection to choose from, from The Hythe Brasserie to The Gurkha Palace and many more. Although the loss of Sotirios was a huge shock, please do continue to support the remaining local venues and restaurants in the festive season and beyond.

Seasonal Recipe
Hythe’s Alive Roman Roasted Lamb Shank by Hythe Brasserie This recipe is simple to prepare and great for dinner parties because once the marinating is done, just leave the shanks in the oven and serve when you’re ready. Ingredients: • 4 Lamb shanks
For the marinade: • 2 cloves Garlic • Handful of fresh Rosemary • 2 tablespoons Olive Oil • 1 Tablespoon Red Wine Vinegar • 4 anchovy fillets (the salty ones from a jar or tin)
Serves 4 Method 1. Put all the marinade ingredients in a small blender or pestle and mortar and mix to a rough paste. 2. Place the shanks in a deep roasting tin, smother in the paste, cover and leave for 2 hours. 3. Pre heat the oven to 180 celsius or gas mark 7. 4. Keep the shanks covered and roast for 1 ½ hours. 5. Uncover shanks and roast for a further ½ hour. 6. Remove from the oven and allow to rest for 10 minutes and to serve simply. 7. Place the shanks in bowls and add some of the rich roasting juice.
Delicious with buttery mashed potatoes and some dark greens. Chef’s tip: No need to add any salt to the marinade as the anchovies provide the salt content.

Choose a theme Choosing a theme brings unity to the overall look. It should suit your house and the way your family celebrates the festive season, whether laid-back and relaxed, sophisticated or formal. For others, a kitsch fake tree with fluorescent ornaments; or perhaps a minimal, modern style with pure silver and glass.
Dress the tree Start by winding it with lights, making sure they’re evenly distributed. Next, drape your garlands, again aiming for evenness and an impression of generosity without overloading the tree. For some, the making of a family wreath using foraged leaves, flowers, seeds, nuts and fruit is a significant part of the holiday season. It pays to establish a system as soon as the cards start arriving. Clear a shelf or two, and arrange them close together, large at the back and small at the front, in neat rows. Looking after your tree Buy a tree that’s as fresh as possible. As soon as possible, cut half an inch off the bottom of the trunk, to help it absorb water. Trim away low-down or interior branches that you don’t need. Put the tree in a stand that can hold plenty of water, and never let it run out. Avoid standing the tree in a sunny window or near a radiator.

Winter Warmers by Pippa Greenwood garden centre for adding winter colour and interest to pots and planters. Some of my favourites are the universal or other winter flowering pansies or even hardier smaller flowered violas. For some seriously sturdy winter colour, try the winter flowering heathers as these make a good base for the display and you can then add trailing plants such as variegated ivies to help provide extra colour, texture and interesting leaf shapes. All these plants will last for years, not just the winter months.
Even if you’re sure you’re not going to venture into your garden much this winter, make sure you have every possible encouragement by creating a winter planter or two. They will not only look gorgeous from the warm comfort of your house, but will also help to coax you outside from time to time. Choose a larger container as it’s more likely to protect the roots on the plants due to the greater volume of compost. I’d avoid any container less than 30cm (12in) diameter if possible. Any container will insulate the roots a little, but one made from thick wood (such as a wooden trough or window box, or a half-barrel) will be very effective. Good quality,
fairy chunky plastic also works quite well. Try to avoid metal as this tends to conduct cold. Warm undergarments are all the rage for winter planters. A lining of bubble-wrap polythene or even a few layers of old fabric or carpet, sandwiched between the sides of the container and the compost will help to keep both compost and roots warm. If you live in a particularly cold area, or simply want to decrease the risk of winter damage further, try to position winter planters out of the windiest areas. If possible place them fairly close to a house wall on the south or west side as this will help to provide a little extra warmth. You’ll be amazed at the range of plants available at your local
At this time of year, garden centres may offer very tiny versions of shrubs such as skimmias, Pieris or hollies and many of the dwarf conifers. They will provide good colour and interest in a container for a year or two and can then be planted in your garden to reach their full size. In warmer areas, you can add bright patches of colour to your display using the ‘winter cherry’ or solanum which has bright yellow and orange fruits.
