An Actor’s Life - Hythe Resident Ken Colley Famed and acclaimed for his starring role as Star Wars’ Imperial Admiral Firmus Piett in The Empire Strikes Back and Return of the Jedi, Ken Colley knew from the age of six that he was already an actor. After completing his mandatory two years with the National Service during the 1950s, Ken became an Assistant Stage Manager with a weekly repertory company in Bromley. He was with them for three months after which he secured his first role in a television series called Ghost Squad. He then went on to join a group of players called “The Living Theatre
Company” where he stayed for the next eighteen months. Ken’s acting career has spanned five decades. Seasonal Recipe by Hythe Brasserie
Louisiana Salmon fillet with Mango and Chilli salsa 6-8 servings This is a light dish, low in fat and easy to prepare with the added bonus of being gluten free. The salsa is made in advance and will keep for 2 days in the fridge.
For the Salmon:
For the Salsa:
• 1 x 6 oz (150g) salmon fillet per person
• I mango skinned and diced (about 1cm dice) • I Red Pepper roasted with balsamic vinegar until soft, cooled, skinned and chopped • 2 Red Chillis de-seeded and finely chopped • Teaspoon of chopped coriander (optional) • Salt and Pepper to taste Method:
Method: 3. Pre-heat the oven to 200 degrees C. 4. Oil or butter a baking tray and place the salmon pieces on it 5. Sprinkle the salmon with salt, lemon juice and Cajun spices (as much as you like, depending how spicy you prefer it).
1. Combine all the ingredients in a mixing bowl with 1 teaspoon of sugar and a splash of balsamic vinegar.
6. Bake for 10-12 minutes or until flesh feels firm to the touch.
2. Refrigerate for 1 hour to allow flavours to infuse.
7. Place the salmon in the centre of each place and spread the salsa around the outside, serve with some roasted sweet potatoes and fresh green salad.
Tip: We use fresh peppers and roast them but for ease at home you can use ready roasted red peppers from a jar, available in any supermarket.

Meaningful Resolutions Why making a Will should be your New Year’s Resolution! News from The Quarter The impact of the High Speed Rail link to London is further strengthening Folkestone as another year begins. More businesses are being sustained by Folkestone’s increased prosperity. The Old High Street and Tontine Street have more open shops and Cafes than I have ever witnessed in the nine years that I have had a gallery here. This year is set to be an exciting one for the arts scene in the town, too, as the Folkestone Triennial is just around the corner. The last Triennial was from my point of view - and completely ignoring the Folkestone Herald’s dogged insistence that the visitor numbers were not what the Creative Foundation claimed them to be - an enormous success for the town, bringing thousands of extra visitors here. I know. I saw them wandering around with their Folkestone Triennial maps over its 12 week duration and spoke to many of them. Investment in the Creative Quarter - essentially Folkestone’s old town - has been ongoing for ten years, much of it due to the work of charitable trust the Creative Foundation. Investment like this is rare and the town has been lucky to have it. Do not be part of a hard-core of small-minded local people who insist the town will never improve and would revel in its failure so they can be proved right. If you haven’t visited recently, then do. Do find out what’s going on at Arts venue the Quarterhouse, as there’s plenty of comedy, theatre and film. Do visit contemporary visual arts festival the Triennial. Do visit the book festival. Do visit the independent shops, galleries, cafes and restaurants. There are some new additions which are real assets to the old town. Folkestone is changing - be part of it. Medical Herbalism Demystified My name is Lynda Jones and I am a qualified, experienced healthcare professional with a first class Honours degree in Herbal Medicine. If I wasn’t a Medical Herbalist I’d be really confused about the difference between a Medical Herbalist and someone who knows lots about herbs. Many people know about the healing properties of herbs and how to use them for simple, self limiting complaints. Some GPs, pharmacists, health food shop assistants, gardeners, amateur experts, avid readers and those who have undertaken short term study all might have a sound understanding of herbs and their individual actions in the body. Most people with a knowledge of herbs can tell you that Echinacea is good for helping the immune system deal with colds, that Elderflowers are anti-catarrhal and therefore help with hayfever and the sniffles, and that Garlic has a reputation for helping just about everything!
Why the need for a Medical Herbalist? Well. I’m all for people using ‘herbal first aid’ and trying infusions and single tinctures to see if that might help. In fact, if I think that’s all that’s necessary I’m likely to suggest you try it before booking an appointment. However, herbal medicine really comes into its own for more complex, long standing and difficult conditions.
What makes a qualified Medical Herbalist different then? We study for 4 years, and have a Batchelor of Science degree. It is compulsory to undertake 150 hours supervised clinical training and be
able to assess the patient medically as well as holistically. A medical herbalist is permitted by law to ‘diagnose’ in the same way as a GP (reflecting our level of training). It’s unlikely many of us do though, as our approach to treatment is very different, and the diagnosis is not always central to us, what’s more important is how the person came to develop the illness in the first place. Nonetheless, it’s vital to have the medical knowledge, as primary health care professionals we need to be able to spot any danger signs of serious undiagnosed conditions and refer on where necessary.
What am I doing in my consultation? Firstly I’m taking your basic details, date of birth, address etc and then I ask you to talk to me about what you would like my help with. I go on to ask lots of questions about your condition and past medical history, current medication, diet, lifestyle and I review the workings of your body. I’m looking for signs that tell me how well the different organs and systems are working to see what has gone wrong, where and why so I know which areas to support to reduce the risk of the problem recurring after treatment. What Is Homeopathy? In the simplest terms it is another form of medicine. However unlike conventional treatment it targets the characteristics of the whole person. Facepaint and Feathers by Hannah O'Donnell I spent a long time thinking about how I was going to start this article because it needed to serve more than one purpose. One of the purposes was to tell you about my new ebook ‘Facepaint and Feathers’, being released on Amazon and other such sites as of the 20th December; but more importantly the other purpose is to explain why I’m selfpublishing and who helped me. ‘Bad dreams have always plagued Francesca, long before ‘the incident’. Worst of all – they always come true. But it’s illegal to be a witch in Dasia, so she must fight to keep her secret hidden. So when a man comes to take her away and offers her freedom and somewhere she’ll be accepted, she knows she has no choice but to go with him. But on her journey to this new world, she gets a lot more than she bargained for.’ ‘Facepaint and Feathers’ is a young adult fantasy novel, and my first. It’s easy to assume young people are going to university to enjoy three years away from working life, partying, drinking etc. But this assumption is wrong. Many people going to university choose their course very carefully knowing it’s a gateway into their dream career. But university isn’t the P42
instant solution; the world is filled with ‘no’s and it is up to you to battle through them. I did this by writing a personal blog for the last two years; I write about personal experiences, relationships and humorous anecdotes and it drums up about 8000 hits per post. This then led to me writing for East Kent Handbooks, interviewing my
favourite band Bullet for my Valentine and many other wonderful opportunities. I also write for my university newspaper, have a radio show and keep a journal. I’m 21 and a writing addict. I write for me. I carry pads of paper and a pencil case with me at all times, because to me writing is like an instrument I must practice every day if I

want to be good at it and for people to enjoy my writing. It’s hard to maintain creativity and enthusiasm sometimes, especially when rejections in the writing industry are the standard. I’ve sent my book to hundreds of literary agents, having done the research, written the opening letters, appealed to them with comparisons of previous books they’ve published and I’m still being told ‘it’s not what we’re after’. But I refuse to give up, and thankfully I’m not alone. My model, Katie, is currently training to work in the claims section of MPW Insurance Brokers. Not a model by trade, but a family friend, she offered to do the shoot for me as a favour and I’m so glad she did. ‘As expected I was thrilled to be asked and was crazy excited! I enjoyed the shoot thoroughly; it was like one big pamper session!’ My brother is a good friend of Katie’s and was the one to suggest I ask her to be my model and even though modelling isn’t the career she wants to pursue, I couldn’t have asked for anyone better. ‘By no means did I grow up with the dream to work in insurance. Originally, I wanted to join the police but unfortunately that was easier said than done. My dad started in insurance when he was my age so I decided to follow in his footsteps. It has a bad reputation for being mind-numbing, but I find it really interesting.’
My photographer, Eugene, is a self-confessed ‘struggling film maker’. He’s currently producing a mini-series called ‘Duel Shock’ – check that out on Facebook – with a Kickstarter campaign launching this Christmas. It’s completely Kent based production which means anyone who likes his page has a chance of being a walk-on part or a corpse (a fictional one, he promises!). Eugene is a good friend of mine and I trusted him completely with the photography. ‘It was a superb shoot, really relaxed and cosy, just make-up, model and Hannah and I. Hannah and I had talked through what she wanted and looked at some concept art and we started with this really direct Terry Richardsonesque rock’n’roll style. It had such a powerful aesthetic and I knew they were knock-out images.’ Much like Katie, Eugene fell into what he does, having always been a film buff but never having considered working in the industry; and now by the sounds of it, he can’t get enough. ‘Film-making is visual storytelling and still images are no different,’ he says, and I couldn’t agree more. My makeup artist is a friend of mine from primary school, who works in the beauty department at World Duty Free as a consultant. She specialises in make up as a qualified postgrad in Theatrical Make up and Costume from
Worcester. Just like with Eugene, I trusted her implicitly with the makeup and gave her the vaguest brief so that she could tailor the make up to the image she wanted to sell. ‘It was hard as I didn’t know what the model looked like! However it was exciting on the day meeting everyone and getting stuck in with the makeup. I love doing photographic extravagant makeup such as this!’ The final image was then put together by Juchinar, a fellow student of St Mary’s University who aspires to make her money doing anything artistic or literature related. She also created the front cover for Canterbury Festival’s Poetry Anthology this year. We’re all driven by different things, with different future aspirations. Katie and Eugene both want to run marathons and go with the flow, Casey is hoping to expand her own freelance business and I’m going to be working on something new. But the moral of this story is, no matter your age, your passion – go for it! Because ‘no’ is just a word and shouldn’t ever stop you from going for what you want. Harbour Rail Link There’s always plenty of regeneration activity to report on from the Harbour area of Folkestone. The latest plans to make the news are those surrounding the harbour railway link, preserving the heritage line and reinstating railway links with the port and harbour. The Remembrance Line Association (RLA) - formed in 2008 - has the active support of over 600 members. Are you behind the plans to reinstate the harbour rail link? Many local people feel that the harbour and seafront are fast becoming the most characterful and lively areas of town. Once an eyesore, it’s now the home of award-winning buildings, desirable restaurants and quirky retail outlets. The new Seafront Development proposes 1,000 new homes and extra retail outlets in the harbour area. Transportation is one of the final pieces of the puzzle. The harbour rail project aims to preserve the heritage of the area and reconnect it with its bright future, giving visitors and locals a unique and practical link between the harbour and the town with an integrated system of trains or trams, a ferry service, a park and ride system, the Leas lifts, buses and the mainline rail service. The plans would mean easier and better access around the town for residents and visitors alike, adding to Folkestone’s character with a thoughtful and attractive feature which is as practical as it is fun to experience. But a closure notice issued by Network Rail, who control the mainline service, would slam the brakes on plans for the new transport system.
