ustin has changed so much over the last decade—moments, hours, and days race by at a faster pace than ever before. It seems that the age old tradition of sitting on the front porch, refreshing drink in hand, watching the fireflies twinkle in the moonlight is, at best, a distance memory or is something your grandparents used to do. According to Alan Jackson, the only thing that stays the same is, everything changes. This summer, take the time to find ways to interrupt the routine: kick back, relax, let go, and escape the rush of the day-to-day. Kids are out of school, and it’s time to find some respite—even if it's only for a long weekend. So we’ve found some relaxing places to do just that. Whether you’re thinking of escaping with the whole fam or just you and a loved one or if you’re attempting to get some real alone time, these five destinations offer a place to relax and recharge no matter your posse size. Each locale is not too far away but far enough to make you feel as if you are light-years from the busyness you left behind.

Sometimes leaving town to recharge is not an option. For that, we recommend making a mint julep, sitting on the porch and sharing your refreshing recipe with a neighbor (or the fireflies if you prefer). Another option is to pull up a stool at one of the lively local places featured here and Sip Back & Relax. Deep down in the heart of Texas lies a little town by the name of Palacios. Down there, shrimp and red fish are a plenty, and families grow up nourished on the bounty of the sea. 8 EASTside | June/July2018

aving had a childhood filled with crustaceans and oysters fried until “they were black all the way through,” Steven Curtis was born with a taste for seafood. Even after moving to Central Texas, memories of salt, brine and ocean breezes baited him until he opened Austin Seafood Products on South Lamar in 1988. Eight successful years later, in 1995, Curtis moved his business to the back quarter of a refrigerated warehouse on Airport Boulevard, and for the last 23 years, he has quietly built his company into a name brand among Austin restaurateurs. Everyone from the elegant eateries like Jeffry’s, El Chipiron, and Mongers buy his fish all the way down to the “you buy, we fry” joints like Terry’s Seafood and Pacific Star. He’ll even sell to his neighbors. “We’re not set up for retail, but if you want to play by our rules, we’re happy to serve you,” he chuckles. The storefront from which Curtis operates is unadorned. house desks from where all the daily operations take place, and the rest of the operation is behind two heavy steel doors that, when wrenched open, lead to a refrigerated room where fish are being descaled, deboned, filleted, and portioned out for delivery. Piles of Gulf oysters, Chilean sea bass, striped trout, and red fish are organized in a colorful pageant of aquatic life. Although there are fish of every stripe, Curtis admits that due to his roots, he does try to focus on Gulf seafood. “No one can beat our Gulf shrimp,” he says good-naturedly. In between the lines of this statement are a unconcealed pride for local fishermen and the familiar tastes of his childhood home on the Gulf. It is a passion that he shares with all of Austin through the dishes that are created with his fish.

Although not a director herself, since she’s been a director’s right-hand man for over a decade, it’s no surprise that she’s discovered a few things about the film industry that an outsider would never otherwise be privy to. Mainly, she explains that even for notable personalities like Linklater, financing can still be a struggle. “It’s really the success of Boyhood that has made money easier for him.” Even so, she explains that with state incentives drying up, which necessitates more traveling to film, creating a movie is almost an insurmountably expensive endeavor.

“I

’m honestly not a cinephile,” admits McMurray, the Chief Operations Maven for Detour Inc., Richard Linklater’s production company that is based at Austin Studios. Perhaps today she is admittedly qualified to make that judgment, but when she first stepped foot into Linklater’s studio over a decade ago, she had no basis from which to decide if she was destined for a career in the film industry. She just happened to be a student looking for an internship. “It was fortuitous,” she 12 EASTside | June/July2018

remembers. “I didn’t have aspirations to work in film, but I loved it.” For 14 years, McMurray has stood side by side with Linklater as his only full-time employee and managed everything from investment property finances, to serving as an extra set of eyes during the film editing process, to even lending a hand on set during production. With so many roles demanded of her, she laughs when she concedes that over the years, she’s become a bit of a ‘Jill’ of all trades. eastsideatx.com

Admittedly, compared to his creative life prior to his notoriety and access to funders with deep pockets, things are significantly easier. McMurray recalls an episode (or two) when Linklater bought food for his crew on his Texaco card. Despite the budgetary struggles, she insists that some of his best work came out of his under-funded period. Linklater apparently agrees. McMurray says that he always reminds himself and his crew, “Just make a movie. Don’t worry about budget.” However, she reveals that there is a little bit more to the process than mere wishful thinking. “I don’t want to say there’s so much luck with it because it’s not. Luck comes with hard work,” she pauses to restructure the sentiment in a softer tone, but concludes that there is no other truth to success in the industry. “I know that’s probably not the answer that anyone wants to hear,” she says. The reward of creating something out of nothing is what makes the release of each production so incredibly gratifying and keeps her rolling.

Star B Child Teaching Healthy Meditation Habits WORDS BY GRACE SCHROBILGEN

Mercy Barber is a yoga instructor, mother, and grandmother who firmly believes in the power of meditation to aid in centering one’s mind and body. 14 EASTside | June/July2018

arber discovered yoga 23 years ago when she was recovering from a trauma. In addition to bringing her healing, this practice allowed her to achieve a greater self-awareness. Barber views yoga and meditation as a means of self-discovery because they allow the body to connect with the mind in a very direct and purposeful way, making life “easier to navigate.” This is recipe for a effective method of relaxation, and according to Barber, “meditation is a time to self-witness: set intentions, ask questions, and listen for answers. It is a tool for self-empowerment.” Upon discovering the healing effects yoga can have on the minds and bodies of adults, Barber decided to extend this stress-reducing practice into the everyday lives of children. With help from graphic designer Hollie Meador and Mercy’s daughter Zoe, Barber created Star Child. This story, full of colorful, calming language and told through loosely-structured rhyme, teaches children to meditate by a medium they are already familiar: a picture book. The book contains imagery of space and the stars and teaches children that they were made uniquely. They are encouraged to stand out, show emotions, and connect with their inner vibrations. The imagery and style incorporate both design illustrations and real-life photos of children meditating and playing, which allows eastsideatx.com

young readers to connect with the story and recognize the relevance it has to their own lives. The colors, patterns, and illustrations bring about the desired calming effect. Barber believes that meditation is an important practice for children because, unlike adults who can cultivate the ability to focus on one task at a time, children are constantly surrounded by a multitude of situations and stimuli, which can be very distracting and overwhelming. She emphasizes that everyone experiences stress, even children, and that people of all ages can use meditation to tap into themselves and find harmony. Learning to push away the distractions enables us to focus more clearly on one act at a time, leading to more meaningful decision-making. Barber asserts that meditation allows children to feel complex emotions for themselves, resulting in less codependency on others. “Star Child was written from a desire to remind little ones that they are the creators of their own experience,” which grants them more autonomy and greater control over their own well-being.

La Perla Tucked away on East 5th Street is an East Austin mainstay: La Perla. This bar is about as no-frills as you can get. But the drinks are spot on. Try their Arm-Modelo, which is an ice cold Modelo with a few shakes of beer salt, a squirt of lime juice, and a couple drops of Tabasco. It is the best $3 one can spend all week. 1512 E 6th St.

The Turmeric Hillside Farmacy

Hillside Farmacy captures the sunset in a glass with its Turmeric drink. Inspired by the mother of Jade Place-Matthews, one of the owners, turmeric seemed like a natural addition to the already inventive drink menu. “My mum has been using turmeric in her juices for years and had told me about the amazing health benefits,” Jade explains. Every component of the beverage works with the others to maximize the health benefits that this sparkling drink delivers. For instance, the dash of black pepper that speckles the drink is not merely for show. According to her, the pepper helps activate the turmeric. The ginger relays its own myriad of health benefits. Although this drink can easily qualify as a healthy beverage and is listed on the virgin section of the menu, a shot of vodka is always an encouraged addition to make things a little “naughty.” Not overpowering in flavor, a splash of vodka balances lightly against the bright and spicy flavors of the Turmeric. What’s in a name that tastes so sweet? At The Wheel, it is the love of each of the staffs’ daughters after whom the cocktails are named. With only eight cocktails on the menu, it’s easy to believe Chief of Staff Ayron Vandergriff when he says that each one is carefully concocted with patience and thought. In fact, just over a year ago, there were only six on the menu. Then two new babies were born, and two new cocktails were required to commemorate their emerging personalities. When his daughter Charlotte was born, Ayron gave himself the task of dreaming up a drink in honor of his newborn. He explained that coming up with the warm rum base and mezcal-tinted drink was a process of elimination. Every sip that is already on their board is a unique twist on a classic cocktail. The Charlotte was no different. He recalls, “We wanted something that could be served up in a coupe glass.” In the end, Charlotte tastes like the result of someone holding a plum over the embers of a fire: smoky and fruity, each sip surprisingly refreshing. Especially watching it being assembled, one will have no doubt that this is the epitome of an experimental craft cocktail bar. At Revelry, if you look a bartender in the eye and tell them, “Come hither,” it might be the only time where you get what you asked for, and it will arrive in a coupe glass. The name, according to Alana Zanello, beverage director and libation inventor, is just incidental. “I just like to have fun with it and give silly names,” she laughs. The Come Hither at Revelry is a mezcal daiquiri that is heavy on the citrus. In fact, there is even a dehydrated lime floating atop. The acidity is beautifully balanced by the addition of a house-made ginger honey simple syrup. In short, it’s a perfect cocktail for a warm evening on the porch. According to Alana, the secret to its wide appeal is the use of a very approachable mezcal that allows the zestyness of the lime to be the focal point of each mouthful. She also admits that the drink is no fluke. For several years, Alana has been putting mezcal daiquiris on the menu and altering them to fit the season. The Come Hither is simply her latest rendition. Nevertheless, as they say, “If it ain’t broke, don’t fix it.” In fact, the drink is such a crowd pleaser that they plan to bring it to the new location of Revelry that will be opening on North Lamar later this summer. 1410 E 6th St. | revelryatx.com

The Beet-o-Rita happened by accident. Years ago, Hoover Alexander found himself on a hot summer day with some leftover beets at his soul food truck on East 12th. One employee asked if he could use the leftover beets to replicate his mother’s beet agua fresca drink. After pureeing the leftover root vegetables into a slurry and adding some sugar, Hoover felt that something was missing. “For my own gratification, I took the slurry and stirred it into our margaritas,” he remembers. The result was the very first Beet-o-Rita. For years, the drink was only made on request for those who were in the know. Now there is an entire machine dedicated to the Beet-o-Ritas, thanks to the cult following that has gathered over time. The margarita’s bright pink color is an earthy canvas against which the tartness of lime and the zip of gold tequila glisten. According to Hoover, what comes out of the machine is only the beginning of his customers’ relationship with the Beeto-Rita. He recommends ordering a shot of Paula’s Texas Orange as a floater – the beets in the margarita are marinated in orange peel so this accents these flavors. A

few images, maybe memories, come to mind when thinking of a tropical paradise: sunny skies, deep, blue water, friends paddle boarding, a family barbecuing, maybe a cold beverage. It’s a picture that seems distant, especially in the heart of Central Texas. Yet, hidden away just south of Austin is Son’s Island. Driving onto the island, guests will notice the lush greenery and a lake lined with large cypress trees and lakeside cabanas. The landscape is drastically different from its neighboring towns, which according to Geoffry King, Marketing Manager of the island’s operating agency, is one of the destination’s greatest appeals. While on the island, guests can take advantage of the many activities offered: paddle boarding, beach volleyball, or kayaking around the island’s parameter. On Friday and Saturday evenings, guests can enjoy live music from local talent. For those wishing to visit the island, there are a few things to consider. The lakeside cabanas house eight individuals but can accommodate up to 15 for an additional cost. A cabana rental also includes a self-operated barbecue and a hammock for lounging. Overnight guests can sleep under the stars in one of the island’s luxurious tents. With two queen-sized beds, two fans, and two lanterns, these tents are perfect for those wishing to fully experience the outdoors. With a day full of outdoor activities and fun in the sun, it seems the only difference between this island and one in the Caribbean is the address.

A FAMILY AFFAIR THE VINTAGE ROUND TOP

F

or Paige Hull, the difference between those who talk about doing something and those who actually follow through with their idea is living with intention. So that’s what she and her husband, Smoot, did. The Hulls wanted to create a place where individuals could come together to reprieve, to imagine, or to find new beginnings. Located in Round Top, Texas, about an hour east of Austin, The Vintage Round Top is surrounded by 100-year-old homes filled with shiplap. Unlike the properties around it, though, this destination offers something unique, displaying a combination of both vintage and antique pieces that have history, tell a story, and evoke a feeling. Much of the design elements used display the brand’s duality, combining modern with vintage, masculine and feminine. Since opening its doors with its first cottage—No. 1450—the destination has grown from a vacation home to a multi-functional space. With the additions of the 2000 sq. ft. Boho cottage, including a 900 sq. ft. great room, the property now offers events like creative workshops, rehearsal dinners, formal cocktail events, and team building retreats. When the property is complete, comprised of No. 1450, Boho, and an additional two cottages, the duo hopes it can be used to welcome a large, yet intimate gathering—like a family reunion.

Round Top is home to one of the largest antique shows in the country. Twice a year, anywhere between 50,000-75,000 people descend upon the tiny town to shop and visit the shows, which according to Hull played a substantial role in the initial growth of The Vintage Round Top. During the show, she says many designers and shopkeepers were drawn to the property’s clean, inspiring environment.

hen Blake Smith set out to create Walden Retreats, he gathered inspiration from the book, Walden, written by Henry David Thoreau. With excerpts depicting a simple life in nature, Smith designed an experience that combines all the adventures of camping with all the luxuries of a five-star hotel. The idea, he says, is to simply leave people alone. That’s why guests won’t find restaurants on the property or a schedule listing of the day’s activities. Instead, visitors are encouraged to simply unwind and explore the 96 acres of land on their own time. Laughing, Smith admits the most popular activities he’s noticed thus far is sleeping and relaxing. Each private room, or tent, is equipped with a kitchen, a wood-burning stove, king sized bed, a private bathroom that features a tub for long baths, plush robes, and air-conditioning. Complete with everything guests could need—or want—each room is designed so they can spend the entire day lounging, without feeling claustrophobic. For those wishing to venture outdoors, there’s plenty to do, like fishing, canoeing, or following one of the property’s hiking and biking trails. Walden Retreats opened its doors in April of this year. And while the property has just two rooms currently, Smith hopes to have a total of 16 rooms once the project is complete. Looking ahead, he envisions multiple properties around the country, offering big-city dwellers the opportunity to escape the hustle and bustle within an hour’s drive.

RUGGED ROCKS REIMERS

A RANCH

s the largest parkland acquisition in Travis County’s history, Reimers Ranch has become one of the more popular destinations for outdoor activities. The park includes almost three miles of land along the Pedernales River, with numerous hiking trails and water activities, like swimming and fishing. Perhaps what the park is most known for, however, is the more than 18 miles of biking trails and its natural rock formations. Almost 300 climbing routes can be found throughout the park, ranging between 5.4 and 5.14 in difficulty. The majority of routes also have bolts, anchors, and fixed cable draws already in place, which make it easy for climbers to experience popular routes with the necessary safety precautions. While most routes follow courses along the limestone cliffs in the area surrounding the Pedernales River, every route’s terrain is different, making the park accessible to both experienced climbers and beginners. Though overnight camping isn’t allowed, those looking for an evening activity can visit Reimers Observatory. The observatory, which opened its doors in 2015 and offers astronomy programs for visitors of all ages, features two large telescopes, the first measuring 25-inches in diameter, the second, 15-inches in diameter. During the two-hour program, visitors may see constellations, planets, and possibly satellites and learn about astronomy from observatory staff. Taking just under an hour to drive from East Austin, Reimers Ranch is a top contender for day-trips amongst Austinites.

DOWN HOME DIXIE DUDE

lay Conoly is a seventh generation Texan and the fourth generation of his family to manage Dixie Dude Ranch. The original owners purchased the 1,440 acres of raw ranch located in Bandera County in 1901, but it wasn’t until 1937 that the ranch transformed into a unique lodging experience for visitors. Today, the 752-acre ranch not only welcomes visitors but also raises horses, longhorn cattle, and Spanish/Boer goats. After more than 100 years in business, Dixie Dude Ranch continues to be a cherished destination for visitors. “God has blessed us with both repeat and new customers,” says Conoly. “But one thing we see is that we’re getting people from all over the world [coming] to see what Texan culture and a working ranch is all about.” During the day, guests can follow trail maps to venture out on the ranch, experience catch and release fishing, go swimming in the pool, or travel the ranch on horseback. While the latter is a big draw for visitors, Conoly says most people come back for the food, which is like eating from grandma’s kitchen. Sticking to traditional Texas influences, the ranch serves three meals a day. On Wednesdays and Saturdays, guests can expect barbecue, with two different meats offered; on Sundays, chicken fried steak is served. Perhaps the subtler treat, however, is breakfast. On weather-permitting mornings, a traditional cowboy breakfast is served on top of the hill.

Explore Austin, an adventure-based non-profit, is on a mission to positively impact underserved youth through mentorship, leadership and outdoor adventures. The six-year program takes students on a journey of discovery and exploration that ultimately leads to a strengthened sense of grit, newfound confidence and the ability to go out into the world as strong leaders and communicators. 48 EASTside | June/July2018

ach spring, an enthusiastic group of students prepare to join Explore Austin’s leadership program. Thirty 6th-graders (15 boys and 15 girls) are recruited and paired with five mentors of the same gender who will stick with them throughout the duration of the program. The students, or Explorers, embark on an adventure-based challenge one Saturday each month as well as participate in a week-long wilderness trip each summer. Through these outdoor challenges, students are able to work on their leadership, team building, and communication skills by taking on a structured curriculum that focuses on adventure. The program takes place during the student’s most formative years, 6th-12th grade, and places an emphasis on strong relationships and a sense of community by pairing them with the same team of mentors and peers throughout the six-year program. “Those years are awkward and challenging,” says Explore Austin CEO, Ann Jerome. “That’s when you need a good village around you to make sure you make it through with confidence, development skills, relationship building skills, and the ability to advocate for yourself.” Whether they’re canoeing, biking, climbing, or backpacking, the skills and lessons being taught throughout each outdoor activity

The summer wilderness trips they take to states

like Wyoming, New Mexico, Colorado and more are a first for these students. Many of them haven’t traveled further than the Austin area, and almost none of them have ever left Texas. No matter where the adventures take them, the impact on the student’s adolescence is clear, now more than ever. This upcoming school year, one of their first

Zen Garden

The Asian American Resource Center seeks to promote cultural understanding of Asian-American Pacific Islander culture. Their Zen Garden is a permanent exhibit that boasts features one would expect of a typical Zen garden: sand, stones, a rake, a wooden bridge and a single tree. The current exhibit in the Zen Garden is called Prayer Phone, a disconnected phone to call deceased loved ones: a common custom of many Asian cultures, commemorating loved ones and honoring their spirit world.

An Indoor Oasis Troo Designs reimagines the home of the founder of Lofty Dog

A

fter shedding the hustle and bustle of life that comes alongside running a business, Veronique Michalik began searching for an everyday oasis of tranquility and calm. It turned out she didn’t have to look far from home to find it. With a backyard pool shimmering outside of her kitchen window, it occurred to her that her oasis already had water, all she needed was a home designed to complement it. To add some sparkle to her space, Veronique and her husband Ed reached out to Patrice Rios and Manuel Hernandez of Troo Designs to dream up a concept that would merge the indoors with the outdoors. As a mid-century home, the original living room contained an expansive fireplace that obstructed the natural flow from the interior to exterior living. Although a part of the original home’s aesthetic, as soon as Patrice began considering design, she suggested exchanging the heavy, craggy fireplace for a 12-foot sliding glass door. Overnight the space seemed to take a breath of fresh air.

Veronique glows at the memory of the process explaining, “Patrice is so intuitive with her designs, she gets to know your home, your personality and can easily figure out a great space and your personal style,”

However, the beauty of the process doesn’t just lie in the end result. According to Veronique, “We love working with Manuel because he works closely with our contractor to assure details were are not missed. They are the perfect mediators between us (the client) and the contractor. They have a good grasp of both sides of the story in remodeling and are great problem solvers when issues arise.” In fact, Veronique was so impressed with the overall process that she couldn’t wait to finish the rest of the home. In the next few months, Troo Designs will begin the design of the master bath and guest bath to help finish creating Veronique’s oasis from the inside out.

Pleased with the substantial improvement that a glass door could make on their home, Veronique decided to truly reinvent her kitchen. Keeping in mind that the Michaliks were known to entertain dozens of guests at a time, the Troo team opted to open up the floor plan by adding a 12-foot island with space for six bar stools which delineated the kitchen from the dining and living areas. Manuel and Patrice also upgraded the kitchen with Schrock Semi Custom Cabnetry and equipped the kitchen with a 4-foot Galley sink work station. The results were stupendous. Light now floated into the home carrying hints of blue reflections from the pool that perfectly complimented the new kitchen backsplash, which Veronique says is her favorite detail from the remodel. Pendent lights dangle over the island subtly indicating the natural flow for guests to carry their plates as they mingle throughout the open floor plan.

Growing Pains

A Family’s 1950s Home Renovation Turns a 2/1 into a 3/2

“That’s why it’s so drafty in here!” homeowner Tiffany Puett remembers exclaiming upon making an unexpected discovery in the middle of her family’s 2015 renovation. 56 EASTside | June/July2018

T

iffany, her husband Jeff Winesett, and their two young kids were in the process of replacing the siding on their 1950s-era Cherrywood home when Tiffany realized there wasn’t a lick of insulation in any of the exterior walls. “We found a thin piece of what looked like felt, laid directly against the drywall,” she describes. “You could the see the nails from the photos on the walls coming through it—and that was it.” Tiffany and Jeff are just the second family to own the house in almost 70 years. After the original homeowners built the place, they passed it on to their grandson—who sold it to Tiffany in 2010. At that point, only the bathroom and the kitchen had undergone some “minor” renovations, perhaps ten years before. It still had window A/C units and a big wall furnace, and its just two bedroom, one bathroom, made for cramped quarters for this growing family of four. Thus, when the Puett-Winesetts set about updating the home’s exterior (finally adding insulation and a Tyvek moisture barrier!) they also added on a new master bedroom in the footprint of the old one-car garage, complete with mudroom, home office, and a second bathroom. “We were looking for a fixer-upper,” says Tiffany. “We wanted this neighborhood, and 3-2s were hard to find, so we went with

something under budget that we could renovate.” A few unmissable details still hearken back to the home’s heritage: lots of built-in cabinets and shelves, the original hardwood floors, and a fabulous blue vintage stove. Mid-century modern furniture still seasons the front sitting room, too, though it’s brought firmly into the 21st century by a wide array of contemporary art pieces and bold interior paint colors. Pointing to framed paintings of fruit and flowers adorning many of the rooms, Tiffany explains: “My grandmother painted these. They mostly have sentimental value.” A family friend produced some of the prints; others came from Austin’s ubiquitous art fairs; the rest—like a floor-length Chinese silk scroll—the couple collected during their frequent moves and travels. The art is expertly set off by bright accent walls (some rooms have as many as three paint colors), geometrically-patterned curtains, and funky porcelain tiles sourced from Architerra. Tiffany’s favorite design detail, however, has nothing to do with the house itself. It's the view of a magnolia tree in full bloom outside the living room window that grounds Tiffany and Jeff (who hail from Oklahoma) and makes them feel like Austin is home. They love Cherrywood’s central location, proximity to Patterson Park, Maplewood Elementary, Mueller amenities, and the “neighborliness” of the community. When they’re not out walking their Australian cattle dog, the Puett-Winesetts can usually be found relaxing in the recently hardscaped backyard, as the kids run around the wooden boardwalk and swing on the NinjaLine. {the refreshing side of austin}

Friday En route from Denver International Airport to Colorado Springs is the United States Air Force Academy. The Visitor Center serves as the gateway to the campus where patrons can learn about the history of the Academy and the rigorous cadet way of life. Follow the .3 mile paved nature trail east of the facility to the Cadet Chapel. The aluminum, glass and steel structure features 17 spires that shoot 150 feet into the sky. Completed in 1962, it is considered among the most beautiful examples of modern American academic architecture and features contemporary

Spend the afternoon exploring the cute shops along the main street there and be sure to visit the Manitou Cliff Dwellings. Relocated in 1907, the ancient Anasazi dwellings were formerly located in southwest Colorado but were moved for preservation reasons. The 40-room site has been carefully restored to allow visitors to walk through the buildings.

Gourmand is a French word that toes the fine line between a pure love of culinary creations and the darker, lurid side of over-indulgence. It is the in-between where the psyche loves to play and the mindset where food tastes its finest. It is also the name of the most unaffected neighborhood sandwich joint in East Austin.

ut how can a simple sandwich insight the sensation of gourmandise? Well, according to Tiffany Russell who is part owner of Gourmands Neighborhood Pub, as a sandwich shop in a dive bar, it’s all about atmosphere. Owned by herself, her husband, her brother and her sister-in-law, this family business began as a way to recreate fond memories of a sandwich shop in Arizona they all loved. While they were toying with the idea, they

decided that the food needed to be served in a bar because “We wanted a bar that was kind of chill and not super fancy, where people could just hang out and have a good time,” says Russell. However, none of them except for Russell’s husband Mike had any experience in the restaurant industry. Nevertheless, she recalls when they saw a little red “for sale” sign on their current property, they threw caution to the wind, collected their nest eggs, and “We just said, let’s try it…” Their goal was simple, “a neighborhood joint where people know they’re eastsideatx.com

always comfortable, and they can always get a seat.” Russell recounts the days not so long ago where, “We were by ourselves for a long time. We didn’t even have a street sign when we opened. We had to beg the city to give us a street sign so that people could find us.” Over six years later, their leap of faith is now a blossoming neighborhood hangout, where sandwich lovers congregate to relish classic deli delights like hot and cold hoagies, bread bowl soups, and fresh salads. “Our Godfather is a pretty popular sandwich,” Russell shares, and is best ordered hot. With ham, Genoa sa-


lami, spicy capicola, provolone, pepperoncini, and relish on a hoagie, one could almost consider it a balanced meal in a bun. The only thing missing is a refreshing margarita. Thankfully, for only $4, guests can enjoy a housemade margarita where the lime takes center stage and is uncommonly refreshing even while sitting on the sprawling patio in the summer sun. Although sandwiches and pickled veggies are the star of the show, those who want to forego a fresh baked bun can order a hearty soup or salad, made from scratch. The broccoli and cheese soup is infused with Shiner Bock and is such a favorite that Rus-

Make the most of your summer harvest with this light and healthy pasta recipe that features the best of the turf and the tides. The key to this dish is the freshness of the ingredients. The sweet, mild meat of speckled trout needs little improvement, so we season it simply with sea salt and freshly cracked pepper.

Picking produce from the garden at the peak of ripeness is also key. We grow a wide variety of rare heirloom vegetables from seeds sourced from around the world. Each bite is a celebration of tradition and culture packaged in red, orange, yellow, or striped green skin. Grilling vegetables adds a layer of smokiness to the dish. We also use the grill to cook this beautiful trout fillet in a grill basket, which allows the fillet to remain intact without falling apart or splitting into pieces while turning it. Many layers of subtle flavors enhance this dish. The roughly chopped squash and eggplant give it a nice texture, while the capers and Kalamata olives add a sharp and salty contrast. The speckled trout brings a mild flavor of the sea without overpowering the dish. Spaghetti alla chitarra is a substantial pasta—a good base to hold up this dish. Spaghetti alla Chitarra with Grilled Speckled Trout & Heirloom Vegetables Serves: 6 Prep time: 15 minutes Cook time: 30 minutes

Directions: Preheat grill on high heat. Fill large pot with water, salt, and bay leaves and place on high heat.

Ingredients: 2 dozen whole oysters 2 eggplant, cut into 1/2" slices 3 summer squash, cut lengthwise into 1/2" slices 1-2 lbs. speckled trout fillet, cleaned and scaled 1 pkg. spaghetti alla chitarra (about 17 oz.) 2 bay leaves 1/4 c. olive oil 3 cloves garlic, minced 3-4 vine-ripened tomatoes, chopped 1/3 c. Kalamata olives, pitted and halved 1 T. capers 1/4 c. fresh basil, chopped Freshly squeezed lemon juice Salt, to taste Red pepper, to taste

Season fish, eggplant, and squash with salt and pepper and drizzle with half of the olive oil. Place seasoned fish in a grill basket.Â

Place eggplant and squash lengthwise on grill. Grill for two minutes over direct heat, and then move to indirect heat for 12 minutes until fork tender. Grill fish over indirect heat for six minutes on each side. Remove from grill and allow vegetables to cool to room temperature before cutting into bite-sized pieces. Add spaghetti to boiling water. In a large sautĂŠ pan, heat remaining olive oil over medium heat. Add garlic, tomatoes, olives, capers, and two cups pasta water and cook, stirring frequently for two minutes. Add grilled vegetables, basil, salt and red pepper to mixture. Cook for two more minutes, until vegetables are heated throughout. Strain pasta once it is al dente. eastsideatx.com

hen the sun beats down across the city, what better way to recuperate than with an ice cold drink? Frozen drink season is upon us, and luckily there are plenty of options to choose from in Austin, including El Chilito’s Frozen Sangria. The “little brother” of El Chile, El Chilito, is meant to resemble the taco stands frequently seen around every corner in San Antonio. “That’s really what I missed when I came to Austin,” says owner and founder of El Chile Group, Carlos Rivero, “[that’s] what I was trying to create.” El Chilito offers a similar menu to El Chile’s but focuses on more casual, accessible features like a la carte to-go menu items. But if there’s one thing that’s the same

across the board, the happy hour deals are “can’t miss.” Every day of the week, from 3-7pm, Austinites can enjoy El Chilito’s happy hour serving their ever popular Frozen Sangria. After witnessing how much of a hit their drinks were at El Chile, Rivero wanted to offer frozen concoctions on El Chilito’s menu but couldn’t serve liquor at the fast-casual restaurant. Instead of going with a wine-based margarita, he went with a sangria to “give it the textural feel of a frozen margarita but with all the sangria flavors,” he smiles. The fruity sangria flavors stand out within the slush texture and perfectly hit the spot for an after work weekday treat to lighten the week or to cool off when the weekend’s outdoor activities are sweltering. happy hour be without every Austinite’s favorite food group: queso? Their queso is filled with a hearty serving of mushrooms, peppers, and onions. The menu also includes guacamole and ceviche that perfectly balances out the frozen drink.
