Reflecting after 3 years

e’re rounding out our 3rd year of EASTside Magazine and what a ride it has been! We have shared many interesting stories and met some great people. We are just so blessed to be part of this community and the stories that East Austin holds.

Looking back on this year, we have grown leaps and bounds. Our website traffic has gone up 300%, and our page count increased from 52 to 76 pages. By the end of this year, we will have grown from 180 distribution locations to 280. We are so proud of all the people we have working and growing with us. We are so grateful for our readers and all of our supporting partners. The only way we can tell community stories is from our advertisers who allow our publication to be free to anyone. We hope that all our readers, as you are looking for a place to shop, eat or spend your time, remember all the great local companies whose stories are being told in the pages of EASTside Magazine. This issue has been an interesting issue to put together in our effort to come up with what is truly healthy. We had to dig down and ask, what makes a person healthy? It seems those who are seeking happiness have a healthy perspective on the ups and downs of life and, in turn, live longer. What makes you happy? As you think on that, you can read the stories of some of the happiest people we have run into this year. They have given us a glimpse into how they find happiness, what it means to them, and how that happiness has cultivated healthiness. Native Knowledge • Harlem’s auditorium was divided in three sections of red velvet seats separated by two aisles. Every other row had a double seat on the end for couples. There was a stage in front of the movie screen where many talent auditions and live performances would take place.

A

vacant gray and white industrial building rests at the corner of East 12th and Salina streets with the words “Design–Fab–Build” sitting atop a light blue strip of paint above the garage. The development leaves new residents with no trace of what once existed on the plot of land. However, East Austin natives vividly remember the beloved black movie theater that thrived there 45 years prior. Founded amidst the segregation in 1935, Harlem Theater served black moviegoers in a way other Austin movie theaters would not. Longtime resident Ada Harden, 82, remembers when black people were forced to enter the white-owned Ritz Theater through a fire escape and watch movies from the balcony. Back then, she was only a child. “Even at that time, I realized that it was just unfair,” Harden says. Resident Brenda Mims Malik, 67, had a similar experience at a different whiteowned theater. “When we went downtown to the Paramount and were told we had to go upstairs, I thought that was so stupid, but I must say I enjoyed throwing things over the balcony,” 8 EASTside | Dec2018/Jan2019

Malik recalls. “I knew it was wrong and that it was based on race, and so that was my only retaliation.” Harlem owners George and Sadie Jones created a vibrant, comfortable, and family-oriented environment which allowed black people to watch movies in the same way their white counterparts could. It was a movie theater created for black people, by black people and was extraordinary for being one of seven theaters owned and operated by blacks in the United States during its time. Although big star movies took a year or more to reach the Harlem, patrons were able to enjoy movies such as Killer Diller, She’s Too Mean for Me, Up Jumps the Devil and Imitation of Life. Prestigious movies often never made it to Harlem; as a result, patrons had the option to see the same movie multiple times. Harlem Theater was the city’s most visible and stable black business, offering the community much more than a place to just watch movies. For Malik, Harlem was her babysitter. Her father was a school counselor, and her mother was a teacher. The theater kept her occupied while her parents attended work meetings. “When I was

going to the Harlem, it was a total street experience for me,” Malik grins. “It had a unifying effect for the community as well. It brought everybody together.” There is no doubt Harlem fostered a sense of community. Live entertainment and magic shows often took place outside of regular film programming. Local performers would compete in talent shows for prizes donated by other local black businesses. The confectionery offerings were popular, especially their 15 cent chili burgers. It was so popular that customers would stop by the theater to grab a chili burger as takeout. Sadie Jones sold the theater to its first white owner Sam Lucchese after her husband died in 1951. Lucchese maintained the theater under the same policies as the Jones’s until his tragic death in December 1960. Thereafter, Harlem Theater saw many owners before it burned down December 30, 1973. Although there are many speculations as to what caused the fire at Harlem that day, the actual cause remains unknown. Nevertheless, Harlem Theater will always be remembered as a jewel of East Austin’s past.

• In addition to the famous chili burger, Harlem Theater’s confectionery sold hot dogs, popcorn, candy, ice cream, pickles, and drinks. A popular combo was a chili burger and a soda, which only cost patrons 25 cents. The theater’s profits did not come from admissions but from concessions. • Harlem movie prices were 15 cents for adults and 5 cents for children age 11 and under. • All positions at Harlem were filled with black employees with the exception of the projectionist. This is attributed to the fact that the local motion picture machine operator agency was not integrated until the 1960s.

in the company into something greater: becoming someone for his students to look up to, pal around with, and respect as their mentor. Méndez selflessly coaches his students in personal challenges such as eating healthy, gang violence, and other issues children face during adolescence. “The big thing is discipline, self-respect, self-confidence, self-esteem,” Méndez boasts, adding, “I try to show them all kinds of issues when they come up. Right now, it’s about voting.” The children Méndez coaches in the program are devoted, with some students attending his folklórico classes from early elementary school through their freshman year in college. Méndez, however, is concerned with attendance levels in recent years. “The area is changing a lot,” he says of the evolving East Austin climate. “A lot of [students] have gone on to Kyle, Buda, Bastrop, Del Valle, so it’s hard to recruit the kids, even though it’s a free group.”

Dance

Méndez says the folklórico program’s fate is in the hands of funding and city grants. Arts programs across Texas have been suffering from similar funding issues, but for a small, non-profit dance program such as Ballet East Dance Company, every dollar they receive is crucial to their ability to keep the doors open. Each year, funding for the dance program is cut from the city’s budget, leaving the dance company to rely on local patron donations and the generosity of the Austin community.

The twirls of vibrant skirts, the taps of folklórico shoes, and the claps of a dance instructor permeate the halls of the Metz Recreation Center every Saturday morning.

A

t any given moment, joyful smiles and concentrated grimaces can equally be found on the folklórico students’ faces. The passionate, thumping stomps of thick dance boots and heels reverberate throughout the room, allowing the students to become one with the instructor’s yells and commands, all while meeting each other in a harmonic choreographed routine. Ballet East Dance Company provides an empowering space for children of all ages to gather, join hands, and learn traditional Mexican dances together, despite the threat of looming funding issues that increasingly endanger the program’s future. Ballet East Dance Company was founded by Rodolfo Méndez with the belief that social empowerment and the discipline of folklórico dance can positively 12 EASTside | Dec2018/Jan2019

impact children. Originally from Austin, Méndez attended a dance school in New York City as a teenager then joined the Peace Corps, where he brought his trademark spirited dance performances to underserved communities in Chile and Costa Rica. After experiencing many cultures, Méndez returned to Texas and founded Ballet East Dance Company in his native neighborhood of East Austin. This year, the dance company is celebrating 40 years of serving the community. The thrill of introducing new cultures to global communities has stuck with Méndez since his days of traveling the world, and he’s committed to instilling his passion and spirit in Eastsiders through folklórico dance. During the 40 years Ballet East Dance Company has been alive, Méndez transformed his directorial role eastsideatx.com

A majority of Ballet East Dance Company’s students will graduate high school and go on to college, join the military, or leave town to pursue new experiences. Méndez credits the dance program for the students’ ability to spread their wings after high school, but long after his students leave, they remember Mendez’s kindness, warmth, and familial presence. His former students often reach out to him whenever they visit home to update him on their successes. Méndez adds with a wistful smile, “They’re like my kids.” Still, Méndez believes the folklórico program will continue to struggle if the local community doesn’t step up to the plate. “There’s a definite issue in our city with the arts,” Méndez says with passion. “We have to fight this year for our funding.”

Walking into Neena Buxani's studio is like walking into the dream of a woman who exudes confidence and courage. The walls are lined with paintings of goddesses, bright flowers, and stunning jewels highlighted by bold, rich colors and textures. And then there is Frida Kahlo, displayed as a stunning portrait that perfectly captures the dream of the artist who painted her. 14 EASTside | Dec2018/Jan2019

Growing up in Brownsville, a city located near the border of Texas and Mexico, Buxani was heavily influenced by Mexican American culture as well as her Indian descent. As early as she can remember, Buxani was always attracted to art and would often draw during class. Kahlo, who grew up in Coyocoan, Mexico City, Mexico, was a constant inspiration. "She reminds me to be true to myself no matter what, whether or not that's going to piss everybody off.

It's a good reminder." Buxani grins and goes on to explain, "[Kahlo] worked through a lot of hardships, but she always created. It didn't matter; she just felt like that was who she was." While she was always drawn to art, Buxani didn't make her passion her way of life until a few years ago. After graduating from the University of Texas, she explored several different career paths— finance, jewelry, hospitality, social work, and advertising—before embracing her true passion. While working in hospitality, Buxani started to re-enter the art

world by taking classes and responding to calls for art around the Austin community. A new mom at the time, Buxani worked in hospitality by day and painted every night, essentially working two jobs at once. “I saw a refuge in my art. That is what made me happy and focused. I knew that [art] was going to be my goal, to eventually do this full time,” she affirms. Making the transition in June 2017, Buxani has since opened her own studio at Canopy, a community of artists on Springdale Road. Her art has been on display at the Austin-Bergstrom International Airport, Bass Concert Hall, and sever-

al Austin studio tours. Buxani hopes to open her own gallery one day. Ultimately, she desires to bring people joy through her art. Her use of bold, bright colors is part of that goal for others as well as an affirmation to herself as she embraces her dream. Buxani admits candidly, “There are parts of me in particular that shy back, but I feel like in my art, I can be fully out there.”

Whether it’s because of a job transition, weight change, or simply a new chapter in life, Seligman’s advice is to get rid of pieces that no longer fit your body or lifestyle as they “can cause some interesting mental and emotional reactions.” Transitioning one’s wardrobe may feel like a daunting task, but Seligman suggests there’s a lot of emotion tied to the pieces hanging in our closets. Moving on from certain items, be it an old pair of jeans or business attire that’s no longer needed, can change your entire self-perception and be the boost needed to move forward. “Making that shift in your closet can make you feel confident,” says Seligman, “because you’re starting to dress for the person you want to be.” Clearing out your closet is just one step in the process of becoming more body positive, according to Seligman. Whether it’s through shopping, getting dressed, or maintaining your appearance, body positivity is just that: showing your body love, acceptance and positivity. Practicing body positivity starts by eliminating negative self-talk because “it’s so easy for that to spiral,” notes Seligman. owever, it seems that happiness is something more than just by chance. It is a conscious effort that one cultivates. It is something that can be learned from body awareness to asking for advice to even putting oneself in the hands of a higher deity. For those who have found happiness, they’ve discovered it through discarding their view of their world as isolated individuals and connecting by asking for guidance through their relationships with others. Although there is no qualification to become an expert on happiness, a generally accepted list of personal qualifications include a smile, and Eric Morales, Archie Kelly, and Eli Halpin are always found with the corners of their mouths turned upward. Beyond that,

30 EASTside | Dec2018/Jan2019

each of these three Eastsiders have a different story. One is an artist, one is a martial arts instructor, and one is a crossing guard, but each possesses the emotional capacity to overcome life’s challenges and find the beauty in the everyday. Despite sounding mundane, according to each of them, discovering this beauty and sharing it with others is the key to unlocking the secret to happiness. Archie Kelly, a 69 year old crossing guard at Maplewood Elementary, knows that life can be a trial, but he shares that he found happiness by consistently asking for God’s guidance on how to connect with others. Each day, Archie asks for direction to “enable [me] to encourage each and every person that comes across [my] path with the exact words that they need to make them better.” Connection has helped him find love, which for him is the key component to leading

a happy life. Archie explains, “Love is the key ingredient to letting people know who you really are.” For Eli Halpin, a local artist, love is also paramount. But for her, love is not so much about oneself as it is an action taken on the behalf of others to demonstrate affection. Treating love as a verb, she observes, has led her to become more conscious of her actions, including those that lead toward happiness. Eli shares that this perspective was necessary as she treaded the path of becoming an artist. From auditing art classes and working as a waitress as she sold her work that was hanging in Portland coffee shops, to now owning a wildly successful gallery at Springdale General, Eli explains that her success, and the happiness that came with its stability, stemmed from her willingness to give. For years, Eli explains that she

strove to be a ray of sunshine for those who crossed her path by sharing her love of color, the smell of painting studios, and her enthrallment with animals. However, living by the golden rule had its own pitfalls. To compensate for the uncertain ups and downs of an artist’s life, Eli explains that she felt obliged to be unfailingly happy for everyone all the time. Over time, she admits that this impulse tempered itself as her business began to fluctuate less sharply, and her idea of happiness also became more peaceful and balanced. “I think I’m just starting to become happy really,” she admits. And for her, contentment starts with acknowledging the simple pleasures like a “reliable meal ticket” and the ability to relax


into the moment: “in my PJs, with my cat and my husband, doing absolutely nothing.” Indeed, happiness is a state that is learned from experience and observation: both of your own reactions and those of others. “Everyone you run into is teaching you something,” explains Eric Morales, a Kuk Sool Won instructor and photographer. Whether it’s someone driving down I-35 raging at the car in front of them or the meditated voice of a martial arts instructor, Eric clarifies that everyone’s reactions are worth observation because chances are they’re not unique. By observing others, it is an opportunity to evaluate self-reactions because, according to him, “there is no division between the outside world and my inside.” Everything is merely a different perspective of the present moment. Living in the present, Archie explains that it helps focus his perspective on the good moments

“I’m a human being first and foremost, and if I can remember that no matter what I’m doing then I can be more present in whatever I’m doing and I can bring more peace, love, and all that good stuff to that.” -Eric Morales in life which are where he finds the connection to others that gives life meaning. To underscore the power of perspective, he recounts his time as a facilities manager at Camp Mabry when he had to be at work at 4 o’clock in the morning but was struggling with recovery from triple bypass heart surgery and colon cancer. Still, he says that he never missed a day of work unless the doctor required it. “I just love doing what I do,” he explains. By arriving every day at work, he finds fulfillment not just through completing his laundry list of activities but also by being able to touch individual souls through conversation that he hopes generates a spark of inspiration. Eric similarly cultivates inspiration for himself and others through living presently. He shares that the ideal way to be present is to follow the path of least resistance because that

is how one stumbles upon daily experiences that are joyful and fulfilling. By seeking out moments that bring joy, both Eric and Archie share stories of strangers gravitating toward them. “It’s because people observe you and watch you; they see the type of person you are,” adds Archie. Such a magnetic person, according to Eli, is not cultivated over the course of a day, a week, or even a year. She explains that satisfaction and contentment are a lifelong process that involve grappling with the balance between the best and the worst parts of life. “Generally the process is always happening because it’s my whole life,” she says. “It’s so important to be conscious of when you’re happy so you can hold on to it, grow it, practice it, and build that muscle. But also if you’re being negative, it is so helpful just to notice so

you can harness [negativity] too and have control over it,” she explains. It seems happiness is something more that an emotion that just happens. It’s derived through connection and learned through asking for guidance, whether it’s from the local crossing guard, a revered deity, or a trusted friend. Continuing to grow and learn is when the body will rest in a healthy equilibrium that we call happiness. “If any of us can remain in a state of learning, then that’s when life is really beautiful,” Eric emphasizes. “That’s what I’m learning, that’s what I’m discovering, and that’s part of what helps me to enjoy it all: the good, the bad, and the ugly.”

In Windsor Park in an unassuming storage attaché is a brightly colored shop filled with tops, dresses, pillows, linens, and all manner of intricately embroidered household items. Stepping into the space is a bit like taking a trip into a mercadillo where conversation flows, and color and texture line every surface. That’s

because all the merchandise is directly sourced from Mexican artisans by the shop’s three owners. Mary Katherine and Kelly Jo – who are sisters – and their mother Jo Ella run the business which was a serendipitous endeavor built after friends and family continually requested that the trio bring back handmade clothing and artwork from their frequent trips to Mexico. Today, they inhabit a small shop on Cameron Road where they spend their time acquainting Austinites with the different regions of Mexico through their wares. In addition to beautiful objects, by offering an education along with their handmade goods, this enterprising family hopes to support Mexican artisans. one of the many other nonprofits that Eva and her team collaborate with—like Austin Interfaith, which she explains “first advocated for the public dollars to create this program.” In 2017, 18 to 24-year-olds and 25 to 34-year-olds were the two largest demographics served. The average student was in his or her late 20s (down from age 30 in prior years). After being accepted into the program, Henry completed a two-year degree in Advanced Electronics, with a specialization in Renewable Energy. Before he even graduated, one of Henry’s professors at ACC recommended him to a local natural gas company, who called Henry and made him what he calls a “generous” offer to work in their energy efficiency division. He did that for a few years before joining a private investigator outfit, a job that Henry says, “I enjoy very much because I get to help people recover from identity theft.” While Henry appreciates his present financial stability, the most valuable part of “those two very meaningful years” at ACC was a newfound sense of self-discovery. “Once I realized that I could make those grades, it drove me to continually improve myself and my station—which was a byproduct, because I was only doing this to take care of my family.” Henry’s wife has since entered Capital IDEA’s nursing program; together, the couple hopes to “set a good example” for their 12-year-old daughter. That is, in the end, what Capital IDEA is all about. “To see the students [at their pinning ceremony],” says Eva, “and the faces of their kids, their significant others, their moms and dads, makes every minute of it, every headache, worth it.” For Eva, herself a first-generation college graduate, it’s heartwarming to know that “Their future is different; the story changes for their kids.” She adds, “Now, the conversation is not ‘Are you going to college?’ It’s ‘What college are you going to?’”

Unable to picture himself succeeding in college, Henry Vines entered the workforce right after high school. He got a job at a call center, where he answered customers’ inquiries about their bills all day—work that he found tedious, but which (mostly) supported he and his wife.

Architects are a dime a dozen in Austin, so a young architect launching his first private practice needs to make a major splash.

F

or Shane Pavonetti, that meant designing a oneof-a-kind calling card that would simultaneously showcase his years of experience spent working in New York City and Europe, plus his minimalist, approachable, highly-functional aesthetic made for the laid-back

kind of living we do here in Austin. Shane’s first project, now known as The Garden Street Residence, was a budget-friendly, three-bed, one-bath house for his family. As soon as he got approved for the $175,000 loan, he quit his job with another firm in town and went to


work designing. As Shane says, he and wife Holly “put everything on the line to build this house, knowing that it would be the starting point for my office.” To save money, he did the general contracting, often learning on the fly how to place glass window panes for example, or weld its signature steel staircase. He also reused as many materials as possible, repurposing the siding from the property’s original structure into stair steps and floating shelves. “I definitely have a ‘fake it ’til you make it’ kind of attitude,” says Shane, “especially when it comes to my own stuff.” His “experiment” (what they sacrificed in budget, the couple made up for in design) paid off big time. The result—an open, sun-filled, eye-catching space that has attracted the attention of design gurus like Chip and Joanna Gaines—“is still,” claims Shane, “our most popular project, and I’ve built 10 or 15 houses since.” Holly, who works for The Nature Conservancy and travels extensively, decorated the couple’s home. Committed to sustainability, she opted for a funky collection of vintage and secondhand furnishings, all of which tell their own stories. A table in the kitchen accompanied her grandfather from the Philippines. It’s surrounded on four sides by intentionally

mismatched chairs. Holly bought the headdress that adorns a side bureau from her tour guide in Vietnam. “I’m very much about local support,” she says, wherever “local” happens to be that day. It was Holly’s eye for accents that convinced Shane to buy the lot on Garden Street. A Michigan native, Holly admits, “I was insistent on this area. I’m used to really, really big trees, and when Shane brought me down to the east side of Lady Bird Lake, it just felt so ‘neighbor-hoody.’” Between the number of families with kids in the area and easy access to the trail, the Pavonettis cite the many ‘wow’ factors that got them to buy, and the strong community that gets them to stay. This year, the Pavonetti family grew by a factor of one. Dad, Mom, their 3-year-old, and a brand new baby are currently hard at work on a new home-to-be, which Shane is building in The Garden Street Residence’s backyard. True to form, “The Shack in the Back” features a bright orange salvaged spiral staircase from an old apartment complex, and more statement-making windows—like the large skylight directly above the kids’ beds. Maybe they’ll wish on Austin’s stars at night and dream about one day taking over their father’s business.

Architect Shane Pavonetti and his wife Holly were living in New York City when they visited Austin in 2011. Shane’s family is from Austin, and Holly had studied Environmental Sciences at UT, so they already had a fondness for the city. What they’d forgotten, however, is just how far a dollar can stretch here; while Austin may be the 11th largest city in the nation, the cost of living remains well below that of comparable environments. At the Scoot Inn that weekend, Shane ordered two drinks. His bill totaled $5.50. “I was like, ‘No, no—a beer AND a vodka tonic,’” Shane recalls. When the bartender confirmed, “Yeah, it’s $5.50.” Shane said, “That’s it, we’re moving back here!”

This “new mom and pop” combines tradition and elevated comfort with a holistic approach.

f you’ve ever wandered down cobblestone Italian streets following the warm glow of café lights into one of those family-run, not-in-the-guidebooks local gems, you may feel a kind of déjà vu on your first visit to Intero Restaurant. Chocolatier Krystal Craig and her husband, Chef Ian Thurwachter, opened Intero with their “professional third wheel,” McVay Bennett, in early 2018. The team not only chose East Austin for nostalgic reasons (Krystal grew up with the Meza family of nearby Juan in a Million), but also for the area’s focus on art and community. The vision is to become “a new mom and pop” in the neighborhood, says Ian. “We want you [guests] to be able to come in and see the owners, see familiar faces behind the bar and feel really ingratiated by the whole experience.”

So Sweet

The Intero chocolate counter is Krystal Craig’s first retail venue, but she has crafted chocolates in Austin since 2005. Her truffles are an annual favorite at the Armadillo Christmas Bazaar, and her flavor combinations are equal parts innovation and nostalgia. The staple, PB & Honey, is handcrafted with the highest quality organic ingredients. “I have a more rustic approach in my style and flavors,” says Krystal. “I like to stay natural and familiar but combine things that are a little more elevated or interesting.”

Of course, the first friendly face you’ll revisit regularly may be the Crave Artisan Chocolates counter, which displays Krystal’s delectable concoctions. Inspired by visits to Italy, Krystal Craig noticed how locals congregate around the chocolate or gelato counters of their nearest café. Friendly and inviting, her chocolates are the first nod to that comfortable Italian café feeling Intero seeks to replicate.

Small, interior details add to that ambiance. Dried fish and fresh herbs hang from the kitchen’s pass-through window, where you might spy Chef Ian busily at work. Per the restaurant’s Italian name (“intero” means “entire” or “complete”), Ian sources whole animals and produce from local farms for his hyper-seasonal menu. As an added incentive to share plates, the offerings rotate weekly, even daily—not just to imitate authentic Italian family-style dining but to maximize your sampling of elevated twists on classic Italian comfort food. Try, for example, the spaghettini: a regular staple with surprising seasonal variations. “It’s always the same formula: very simple in presentation,” Ian adds. “That’s where we can really incorporate our food waste.” For a mushroom and Taleggio cheese version, he ferments mushroom scraps and combines the fermented liquid with Taleggio for added depth and tartness. Leftover solids are then dehydrated into a powder and dusted on top of the dish for an intense, almost chocolaty flavor. Much like Krystal’s delicate creations behind the chocolate counter, it’s all in the details.

Distracted by loved ones passing around appetizers and sampling wine or Amaro from McVay’s carefully curated list, you may miss some painstaking details designed to elevate the overall experience. “And that’s the goal,” says McVay, who in 2011 helped the McGuire Moorman team relaunch Jeffrey’s as captain and sommelier. “Above all, we want guests to leave with a memory,” he explains. “We want you to remember a meal at Intero in a broad sense – not just ‘wow, that food was great’, but ‘our anniversary was fantastic.’” Whether sharing cocktails with friends during the daily happy hour (or making new ones at the bar), whether gathering with family or pairing an Amaro flight with Krystal’s truffles to round out date night, memories are made to last at Intero—memories that will keep guests coming back.

Hollandaise directions: Add about an inch of water to a sauce pan and heat on low until simmering. Place a ceramic bowl over simmering water. Whisk yolks, salt, and cayenne together in the ceramic bowl and cook over low heat for one minute. Slowly add melted butter, whisking continuously, until a smooth sauce is formed. Add lemon juice and cook another 1-2 minutes, whisking occasionally. Add water if sauce is too thick. English Muffins Ingredients: 2 1/3 c. bread flour 1 T. sugar 1 T. instant yeast 3/4 salt 1 1/2 T. butter, room temperature 1 egg, lightly beaten 3/4 c. milk, at room temperature corn meal or semolina, for dusting

o matter who brings your game to the table, serve them a breakfast worthy of the hunt. This “Eggs Venedict” celebrates the venison while honoring the work of the hunter. The key to this recipe is the layering of complementary flavors. The base of the dish is a homemade English muffin that gives a hearty, tasty platform to stack flavors upon flavor. Next comes the fresh bacon from a local farm: bacon that is not cured in any way, no nitrates, no additives. Fry the bacon with a generous amount of sea salt and crushed red pepper, then finish it with a touch of maple syrup. Next comes venison tenderloin that’s cooked in the bacon drippings. The robust flavor of the lean venison pairs perfectly with the saltysweet bacon, and the peppery drippings add even more flavor. Poaching an egg is an old world art, not easily mastered on the first try. Heat the water to simmering and add a splash of vinegar to help the eggs achieve a nice round shape. If poaching in water sounds like a feat, use an egg poacher for quick and uniform poached eggs—don’t worry, we won’t tell! The trick to a good hollandaise is to heat the sauce to the lowest temperature that will cook the egg yolks. If the hollandaise sauce “breaks,” it becomes a chunky mess of semi-scrambled eggs rather than a golden, silky-smooth cream. To prevent breaking, heat the eggs and add the butter very slowly. Make sure to cook the egg yolks in a ceramic bowl, which conducts heat very slowly, over a pot of simmering water. Then slowly whisk in the cooled melted butter for a creamy hollandaise. The fresh tanginess of the arugula brings all the flavors together. Find freshly–picked arugula this time of year at most of your farms or farmers’ markets.

Eggs Benedict Serves: 6 Prep time: 30 minutes Inactive prep time: 2 hours, plus 8 hours Cook time: 45 minutes Ingredients: 6 English muffins, recipe follows 6 poached eggs, recipe follows hollandaise sauce, recipe follows 1 lb. uncured, thick-cut pastured bacon, cut in half 1 T. maple syrup sea salt and freshly cracked black pepper, to taste 3 c. milk venison tenderloin, cut into 1/2” medallions 3 c. arugula 1 bunch chives Poached Eggs Ingredients: 6 pastured eggs white vinegar 1/2 t. salt Poached Eggs Directions: Place 4 custard cups, or an egg poacher in a deep sauté pan. Add water so that it covers the cups by 1/4”, followed by a splash of vinegar and salt. Heat the water until it just begins to boil. Crack eggs, one by one, into a small bowl, and add them to the custard cups one at a time. Cook for about 3-4 minutes, until the white of the egg is mostly set, but the yolk remains runny. Remove finished eggs with a slotted spoon and repeat with additional eggs. Hollandaise Ingredients: 4 egg yolks of pastured eggs 1/4 t. salt 1/8 t. cayenne 1/2 c. butter, melted and cooled to room temperature 1 T. lemon juice 1 T. water (optional) {the happy side of austin}

English Muffins Directions: Combine dry ingredients in a large bowl. Add butter, egg, and milk, and mix well until a soft dough is formed. Knead for 5-10 minutes, until the dough is smooth and shiny. Place the dough in an oiled bowl and cover with a tea towel. Let dough rise until doubled in size, 1-2 hours. Gently punch dough down and divide into 6 rounds. Flatten your rounds until they are disks about 3” in diameter. Let your muffins rest for 20 minutes on your cast-iron griddle or frying pan that has been sprinkled with corn meal or semolina flour. Cook muffins over low heat until their exterior is golden and their interior is cooked through (registers about 200°F on an instant read thermometer). Eggs Benedict Directions: Submerge venison in milk and refrigerate overnight. In a large sauté pan, add bacon strips that have been seasoned liberally with salt and pepper. Cook until crisp, about 5-7 minutes per side. Drizzle bacon with maple syrup while bacon is still hot. Reserve on a plate lined with paper towels. Remove venison from milk, rinse with cool water, and pat dry with paper towels. Heat bacon drippings over medium heat. Pound venison with a meat tenderizer until 1/4” thick. Season venison medallions liberally with salt and pepper. Add venison to pan and cook to medium rare, about 5 minutes on each side. Cut English muffins in half and apply butter to inside of each half. Broil on low for 2-3 minutes, until golden. To assemble eggs Benedict: Place 1/2 cup arugula on an English muffin half. Add venison filet, two slices of bacon, poached egg, and top with two tablespoons hollandaise sauce. Finish with cayenne and chopped chives. Repeat with remaining ingredients and serve immediately.

This unassuming food trailer, run by holistic healer and chef Rachel Musquiz, is known for its 100% plant-based dishes and superfood drinks that are delectably nourishing. ic coffees, vegan eats, and gluten-free treats, the most popular pick on the menu has always been their signature Golden Mylk, an all-natural beverage made with the key ingredient turmeric (for which the trailer was named after). As the first eatery to offer Golden Mylk in Austin, Rachel has a uniquely modern twist on the tradition. She

uses her menu to encourage a return to the ancient tradition of using food as medicine.
