The Dream Shop

Vivid imagery, a medley of textures, and a dash of whimsical all contribute to the meticulous mise-en-place of artist Marcela Homrich’s storefront. The varied array of colorful tapestries, multi-media collage, embroidery, jewelry, and paper goods are artfully arranged in her cozy gift shop located in the heart of East Austin, fully entertaining but not overwhelming the senses.

he woman behind the work is Marcela Homrich, a Brazilian graphic designer who moved to Austin in 2014. She came by her art practice early in life, the natural result of being raised in a creative environment. “My mom was an art teacher and a sculptor… I remember one day when she asked me to paint an entire wall of my bedroom. She was very free-spirited in that sense. And I think she taught me from a very early age that I didn't have to conform. So, I was more like a rebel kid,” Marcela smiles. Her free-spirited nature and background in graphic design are evident in the varied mediums and bold graphics throughout the space, which acts as part gallery, part gift shop.

Marcela fearlessly jumps into new forms of expression and isn’t afraid to try her hand at an unfamiliar art form. Opening her storefront three years ago was her biggest leap to date. “[The shop] was a dream. It was always a dream,” she shares and adds that "the people who come in the store are all very supportive." Marcela especially enjoys chatting and getting to know her neighbors, even when they are just coming to take a peek at her wares. In addition to the displays in her own shop, her work has been featured at The Cathedral, a local gallery and event space that is home to a collective of women artists. In the past, she has also participated in the Austin Studio Tour.

For Marcela, the storefront, like many of the pieces in her portfolio, is never really finished. “I can experiment a lot, and I think [the shop] is never ready. Every time a person comes inside, I feel a little bit exposed... I am constantly changing things around me in the display.” The constant evolution of the space and her work has artists, art collectors, and window shoppers alike frequenting to see what Marcela has dreamed up on any given week.

or 15 years, ColdTowne Theater, one of Austin’s several top-notch improv comedy clubs, operated out of a beloved black box theater on Airport Boulevard. With the onset of the pandemic, they were forced to pause performances and, unfortunately, lost their lease; however, that didn’t put a stop to the fun. After two and a half itinerant years of teaching classes to groups ranging from first-time improvisers, seasoned vets, and corporate groups, while also performing

in various venues around town, ColdTowne Theater’s latest iteration opened its doors once again to Austinites last fall. The welcoming theater sits comfortably in the crook of East Second and Chalmers, snugly fitting into the warm embrace of the Eastside’s friendly cultural hub. At the helm today are co-owners Dave Buckman, Rachel Madorsky, and Tauri Laws-Phillips. This trio brings passion for the art form and a love of community to the forefront of all operations.

“All of my heroes were comedians when I was a kid. And when I did more research, all of them came from this place called Second City. So when I finished college, I knew…I was going to go there. And so I moved to Chicago and took classes,” Dave shares. The distinct Chicago style remains a heavy influence on the club and their course offerings to this day. For Rachel, her relationship with improv was not love at first sight. “I went to undergrad to be an actor, and I saw some improv and said, ‘I will never do that.’ It was so frightening to me, the idea of going on stage without a script. I thought they were nuts,” she admits. Rachel later became a psychotherapist, running her own practice, but soon found she needed a little levity in her life. She came across some informal improv classes hosted by UT and decided to give it a go, finding that the once nerve-wracking art was exactly what she needed. Similarly, Tauri came to improv at a time when she felt disconnected from her community. “I moved to Dallas post-college, and it was a very rash decision, like, ‘Oh, I'm a grown up, I'm going to move.’ And then I got there and was deeply depressed, wondering ‘What did I
do? I’ve got to go home, or I’ve got to go somewhere else.’” When she attended an improv show with her co-worker, she realized that her ‘somewhere else’ could be on stage, working hand-in-hand with other artists.

At ColdTowne Theater, improv shows occur Thursday through Sunday nights. Special performances pop up from time-to-time, including family-friendly shows. The intimate space blurs the lines separating the audience from the performers, the room crackling with energy. Many of the troupes have been working together for a while, and it is evident in their easy rapport, a highly specialized skill that, when executed well, seems so simple. It’s a joy to watch.

Mulling Mueller Tarmacs and Town Homes
I
Decades after going all-in on new urbanism, East Austin’s largest planned neighborhood has finally landed.
n May 1961, Vice President Lyndon B. Johnson was in town to visit Austin Mayor Lester Palmer to officially unveil a soaring new terminal and control tower at Robert Mueller Municipal Airport, which had originally opened in 1930 and provided the town’s first commercial runways. The city enlisted renowned architects Fehr & Granger, who delivered a sleek, streamlined modernist aesthetic that welcomed travelers with open, airy spaces. The spacious and elegant structures were not just much-needed upgrades for a booming population, but they were also a visual representation of Austin's determination to stay on the cutting edge of air travel. It remained Austin’s primary commercial hub only until 1999, when advancements in aviation and a buzzing economy would render it obsolete. As Austin-Bergstrom International Airport came online, Mueller’s 700 acres of centrally located dirt afforded the city a generational opportunity. Today, nearly 70 years since its ambitious expansion, Mueller is still a potent symbol of a city signaling its growth-minded priorities. This time though, it’s a national case study for new urbanist principles. Arranged neatly along tree-lined streets stand about 7,000 residences: a diverse array of single-family homes, apartments, condos, and affordable housing peppered with pocket parks, ponds, and trails. It’s decidedly walkable, with zoned, mixed-use retail and dining options supported by critical community anchors like H-E-B, Texas Farmers’ Market, Dell Children’s Medical Center, and a children’s museum: Thinkery.
Notably, Mueller is very dense. Designed to inject affordable, central housing stock into a starving market, the masterplan’s goal of filling land with desirable places to live has been an unequivocal success. It’s also entirely self-contained. Its infrastructure promotes walkability, and since the neighborhood integrates hospitals, parks, schools, offices, and entertainment venues, a major draw of living in Mueller is rarely having to leave. It’s an interesting juxtaposition, considering the site’s symbolism as a portal to move through Austin for six million annual travelers just 25 years ago. While Mueller’s success as an urban development is undeniable, its new status as a bustling micro community has had uneven effects on East Austin’s own sense of identity. Its rapid, largescale emergence was a bold gesture, one that displaced few and empowered many. And yet its sudden, orchestrated arrival makes it feel like a bubble when passing through from anywhere else in town, a reminder that places are built, but identity is accrued. Mueller’s next chapters will no longer be written by planners and architects but by those who live and work there. Issues of long-term affordability, equitability, and socioeconomic diversity will hopefully continue to be forces that mold the neighborhood, as it shapes the city as a whole. Mueller’s aspirational legacy endures in its current gleaming, forward-thinking configuration. The story that comes next will shape Austin for generations to come.

“W
e were all preservation nerds who have passed this building for years, peeking through the cracks to look inside, just like everybody else,” muses Aaron Franklin. “But once we got the space, we let the building talk to us. We popped over with some beer and lawn chairs and sat on the dirt floor. It was all damp and mildewy, with a little light shining in through the boarded-up windows. And it was like, ‘you know, I know what to do.’” Fast forward to March 2023, and Aaron and a team of partners (including Mohawk co-owner James Moody, Michael Hsu Office of Architecture, Tenaya Hills of Bunkhouse Group, and attorney Jason Jones) celebrated the opening of Uptown Sports Club, namesake of Arnold and Ron Hernandez’s long running establishment that operated from the same building from 1969-2000. Years in the making, it was a milestone that marked a new era for the once-defunct space, which had remained vacant for 23 years, ultimately becoming a curiosity as the handsome building decayed while somehow eluding bulldozers. The late 19th century structure is actually among the oldest in East Austin. It was originally a bakery, then a butcher shop, and then a series of grocers, until the Hernandez family converted it to a sports bar and café. Today, Aaron and his

team have elevated the casual atmosphere, while preserving its architecture and legacy as an “anytime” social destination for good food and good friends. The menu is concisely curated; the gumbo and savory sandwiches are complemented by a rotating raw bar boasting East Coast oysters and juicy shrimp cocktails. Carnivores can’t miss the Uptown Burger, available all day. “It’s meant to be a big, rich, gluttonous, sloppy cheeseburger,” Aaron divulges. “It’s double patties, double cheese (one slice American and one year-aged white cheddar), pickles, Dijon, and mayo. It’s just an ooey-gooey brisket burger that’s our own proprietary blend of high-quality beef and ribeye cap.” A round-the-clock café and bar offer staples like coffee, beer, and wine, yet also feature a series of signature “Uptown” cocktails that play well alongside the classics, which are always available. The venue’s renaissance is a welcome respite for a side of Austin that has seen countless historic properties razed and replaced ad nauseum. In the early 1900s, the six-block stretch between 4th and 5th streets, just east of I-35, became an industrial shipping hub that ignited Austin’s economic growth. Today, the last-standing remnants of the city’s first rail yard have been transformed into a new gathering space that reflects that growth and respects its history.

he two former warehouses at 1300 & 1304 East 4th Street were chosen as the home for Cosmic Saltillo, sister cafe to South Austin’s beloved Cosmic Coffee and Beer Garden. Paul Oveisi, partner in Cosmic Hospitality Group, says the site was an instant fit. “The Cosmic concept isn't ideal for a typical strip mall or run-ofthe-mill storefront,” explains Paul. “We like the weird and funky spots that we can restore, beautify, and create natural environments.” The buildings earned their “weird and funky” reputation over the course of a centuryplus. Built sometime before 1912, they were first used for fuel storage by Texas Oil Company (now Texaco), and later Firestone and Shell. Around 1976, artist Lorlei Brown reimagined the industrial buildings as a cultural hub, using the main building as her own art studio and leasing out other spaces to musicians and artists. “The spot was a frequent site of some cool, underground shows in the ‘90s and early 2000s,” remembers Paul—including a few South by Southwest showcases. But in its more recent years, the colorfully graffitied, and somewhat disheveled, buildings sat largely vacant— until Cosmic lovingly restored the place and officially opened its doors in September 2023. “We really wanted to preserve the history and architecture of the two buildings,” says Paul of the revitalization project, “which was challenging, expensive, and time-consuming—but an imperative for us.”
Cosmic partnered with architect Clayton Korte to preserve the original structures, including the original brick holding walls that housed oil barrels coming off trains in the 1900s. They repurposed damaged concrete into pavers and preserved the original wood floorboards and ceiling joists. The buildings’ corrugated steel siding, still donned in decades of street art, is now interrupted by posterior glass panels that project a buzzy glow into the central courtyard. The team worked closely with Ten Eyck Landscape Architects and the crew at Spencer Landscaping to preserve much of the site’s native plant species. They also created new gardens and wildlife habitats, plus a water feature—all of which are central to the Cosmic concept. At the back of the property looms a revamped 30-foot tower that conveys guests to a deck above the main coffeeshop and bar. This rooftop hang offers views of the new Cosmic “kingdom,” as well as Austin’s ever-shifting skyline. Paul, an Austin native, hopes the project stands as a tribute to his city. “I do feel some sense of responsibility to preserve that old Austin feel, and we try to do that organically, not forced,” he says of the space. But inclusivity is also central to their vision. “I have incredibly fond memories of old Austin,” he reminisces, “but I also embrace all the incredible new energy.”
What Vintage Wine & Books used to be... Vintage Wine and Books is housed in the historic Haehnel Building, built in 1875, which has assumed a number of identities over the centuries: a saloon, a grocery store, a residence, a wine shop, and before Vintage, a law firm. Perhaps most famously, it was Shorty’s Bar run by Eugene “Shorty” Bonner from the 1960s to the 1980s. With Shorty’s efforts, the building received its historical designation in 1985, but he ended up losing the building to the city in 1991. In 2001, the Austin Revitalization Authority swept in with a hefty budget to restore the building to its full glory. Less officially, word on the street says that, at one point, it was a brothel, and it’s also haunted to this day by friendly ghosts.
DO YOU KNOW THE STORY BEHIND VICTORY GRILL? Before legends like B.B. King, Bobby Blue Bland, and Gatemouth Brown graced these stages, Victory Grill was a simple gathering place for Black soldiers returning from World War II (hence the name). Owner Johnny Holmes built the performance area in 1949, just in time for the grill to become a hot spot on the burgeoning blues circuit.

Serving up Local Spirit Honoring a Neighborhood Legacy
Many years ago, a quaint building at the corner of East 11th Street and Rosewood Avenue caught the eye of local restaurateurs Jade Pace-Matthews and Greg Matthews. To their chagrin, the space was already being courted as a sports bar. But when providence intervened and the liquor application disappeared from the window, the couple quickly dialed up the owners.
PRESERVING HISTORY: The Hillside team has won several Preservation Austin Awards for their efforts in restoring the former pharmacy and now landmark. They were awarded a historical designation in 2019, which protects the site from future development.
BUT WHAT REALLY HAPPENED? The house most recently known as Rosewood (on Rosewood Ave. and East 11th) was Thomas DeLashwah's home, yet he mistakenly gets credited for selling Doc Young the Hillside Farmacy building. But what really happened? Doc Young took over Delashwah's pharmacy on East 6th, years before he built and opened Hillside Drug Store on East 11th (according to city records). In 1949, Doc and his wife built a commercial building on their East 11th property: Hillside Drug Store, known today as East Austin’s beloved restaurant, Hillside Farmacy, and still paying homage to its pharmaceutical roots with creative menu items such as Country Doc and Penicillin. 22 EASTside | Dec/Jan2023/24

“I
t was super old school,” Greg recalls. “We met the family and shook hands, then sat in their living room and wrote down the lease.” The Turners live in East Austin, and the building has been in their family for generations. It originally belonged to Mrs. Turner’s father, Ulysses “Doc” Young: one of the first Black pharmacists in Austin who opened it as “Hillside Drug Store” in the 1950s. Prior to that fateful day, the duo, being collectors of old things, already had a collection of paraphernalia from a pharmacy that had been shuttered in the ‘70s. This Elgin Pharmacy was “a perfect time capsule,” says Greg. They were already stocked with a collection of beautiful apothecary cabinets and display cases that would return the space to its former glory and become a defining feature of the restaurant today. From there, it was kismet. “When Mrs. Turner and her husband told us the history, it was this ‘oh shit!’ moment,” explains Greg. “This is really about the family—we can contribute to telling their story.” And so, Hillside Farmacy was born. The restaurant that the Matthews duo envisioned would be a contribution to the neighborhood, not something thrust upon it. “When we opened, it wasn’t like we were coming in from the outside; we were part of the neighborhood,” Greg recalls.

Olivet Baptist Church (1953) Dive into the legacy of Austin's Black Cultural Heritage District, where the visionary John S. Chase, Texas's first Black registered architect, bestowed the community with his distinctive touch. Look for vaulted rooflines and expressive brick! 1179 San Bernard St. Our Lady of Guadalupe Catholic Church (1954) Inside, you'll discover the state's oldest statue of Our Lady Guadalupe, and outside, you can appreciate vibrant baroque influences, featuring a copper bell tower and statues. 1296 E 9th St.
St. Julia Catholic Church (1957) Its well-proportioned courtyard is a soft, meditative place, lovely for quiet contemplation. Simple and modest, the building is resonant with the spirit of mission chapel architecture found across the state. 3010 Lyons Rd. Ebenezer (Third) Baptist Church (1957) Known as one of the most important architectural symbols of Black Austin’s heritage, its neon entrance sign is one of the town’s most iconic. One of few Gothic-inspired buildings in town, it launched a trend of similar designs for Black congregations across East Austin. 1010 E 10th St.
Hillside Farmacy has since become a beloved East Austin staple. It’s an intimate gathering space that feels high-touch, yet welcoming. Their local affiliation extends to the menu; they source almost exclusively from local farms and even turned the restaurant into a Farmer’s Market to stay afloat during COVID. Post-COVID era, Greg says that he is focused on getting back to their roots—creating experiences that feel individual and unique. They’ve hired a new chef, Brandon Martin, and they’re renovating their outdoor patio and outfitting it for live music. “We’re all just really invigorated,” declares Greg. “We want people to have that super personable experience of really good food in this very unique place.” Contact: 1209 E 11th St. hillsidefarmacy.com @hillside_farmacy
CENTRAL MACHINE WORKS This lively local venue and brewery at the east end of Cesar Chavez didn’t just pick a trendy moniker to exude industrial-chic. Central Machine Works, (originally Capitol Machine Works), was an actual machining plant, dating back to the 1940s when it was used to produce airplane parts for World War II and later all kinds of parts for local businesses. It was built by local machinist Dan Bartosh, whom his sons describe as a jack-of-all trades. The brothers—Patrick and Kenny—were there for Central Machine Works' grand opening in 2019 and were pleased to see so much of the building's history still intact including the repurposed airplane hanger that looms over the massive shop floor, now housing fermentation equipment, a mini art gallery, and tons of gathering space. {the authentic side of austin}

A dog barks from stage right. The sounds of a party bubble off stage left. Suddenly, the cast appears, and the room fills with a cacophony of voices. And the show begins.

t City Theatre, actors wield wit, dialogue, and dynamic range to transport audiences into the intimate and imaginative world to explore the philosophical musings of Jean-Paul Sartre, rollick with laughter at the modern-day commentary of Terrence McNally, and hum in harmony to the melodies of a musical. City Theatre is local theater, according to the artistic director and manager Andy Berkovsky. And indeed, the productions in this setting are local in every sense, beginning when Andy arrived in Aus44 EASTside | Dec/Jan2023/24
tin with only a dream and the freshly dried ink on his musical theater degree. It was 2006 when Andy found a small space off Airport Boulevard, a perfect fit. The rest is history. While the pandemic presented a hiccup in City Theatre’s residency, the project has since reopened at Genesis Creative Collective, formerly the worship hall of Genesis Presbyterian Church, nestled in Cherrywood neighborhood’s Patterson Park. formed the symmetry of mid-century, ecclesiastical design into a 60-seat theater, complete with backstage dressing rooms and an astounding array of props. Pulling back the curtain at City Theatre reveals the many moving parts it takes to put on a production. “It's a small business,” Andy reminds. While he clarifies that being a small business means having a can-do attitude, it also hints that Andy is involved in every inch of daily operations, from building a set and helping direct productions to working with electricians to ensure optimal lighting. But

his most laudable achievement at the theater is continuing to bring shows that transport audiences and elicit emotion from even the most stoic viewer. Theater is the apotheosis of the arts. It is on a stage that storytelling, poetry, design, and acting converge to become a production. Just ask Andy. “Poetry, music, the spoken word—they culminate into the performing arts or into theater,” he explains. "The live theater experience—being touched by it and being challenged—you can't match it." Creating a space that allows audiences to access the depths of their emotion is a labor of love. From costuming to accent perfection, each detail is an effort that Andy views as a reciprocation of the effort that theater goers expend to come and see a play. “Our goal is to try to create that live experience as best we can,” Andy says. “So when they do come, [there are] all those emotions, and something is reinforced about some sort of experience… love, families, or something they cherish.”

“W
e knew it was going to be complicated, but we knew we had to do it,” beams Dylan Robertson, remembering the first moment he and his wife, Annie Cobb, saw their home addition visualized. “The renderings just spoke to us.” The vision, striking yet surprisingly tender, was authored by architect Nicole Blair, who quickly formed a collaborative bond with the couple in the early conceptual meetings. To address the challenge of needing more space without losing their backyard, the only place to go was up. Four steel beams support a taut, irregular volume which is connected to the ground by a playful and porous steel staircase landing at the existing bungalow’s porch. Its sculpted, corrugated metal facade is ruddy and monolithic, punctuated by generous windows that lend it a
lantern-like resemblance in the evenings. Cleverly, its volume takes angular cues from the bungalow’s roofline, affording elegant moments of composition when viewed from different vantage points on the ground. Once upstairs, floor to ceiling windows reveal a vaulted, whitewashed pine interior complemented by pale pink cabinetry with copper and leather accents. Bathed in daylight, the room is warm, with a tidy kitchen spilling into a cozy reading nook. Despite the room’s tight footprint, the airy and intimate proportions cradle the space in a way that feels serene, comfortable, and protected. A half stairway leads to a separate corridor flanked by a studio and cantilevered bedroom, each offering stunning neighborhood views. Off the corridor, a small study nook, perfectly perched above the entry, and an airy skylit bathroom complete the structure’s 600 square foot program.
Distilled to its essence, the home is successful due to its core treatment of space, light, and order, timeless considerations championed by French modernist architect CharlesÉdouard Jeanneret, known commonly as Le Corbusier. His late work, “Open Hand Monument,” a soaring, 50-foot-tall abstracted concrete hand symbolizing unity in the balance of giving and taking, made a surprise appearance in an early design meeting. As a quick photo was captured, Dylan’s gesturing hand, fingers outstretched in uncanny likeness, hovered above the paper model of the home. It’s a poetic coincidence that Nicole savors when reflecting upon the close relationship with Annie and Dylan that yielded the finished product. “I thought it was such a great analogy,” she says with a smile. “They have given so much of themselves to this process, and our work for them, the home, was theirs to receive.”

HOT TOPIC: The home has already earned local and national acclaim and was recently featured on the AIA Homes Tour. EXTRA CARE: Fabricated steel elements were craned into place to minimize disturbance to the existing landscape and home. Only one room in the old bungalow was altered during construction. To encapsulate the steel columns into its existing walls, the construction crew entered the house through the side window.

The Hana Highway There's no better time than the present to visit Maui. WORDS ASHLEY BOWLING
Arguably one of the most epic adventures, and definitely the best drive in the Hawaiian islands, Highway to Hana is about the journey, not the destination. First things first, rent a convertible, and then hit the road in a bikini top and flip-flops. From bamboo and eucalyptus forests to gushing waterfalls to multi-colored beaches and dramatic cliffs, this drive is full of surprises.
THE BEST TIME TO VISIT!
It’s important to start this route at sunrise with a full tank of gas. With switchbacks, one-lane roads, and unpredictable showers, driving the Hana Highway is best enjoyed with the sun. First stop is Twin Falls, an easy hike through towering bamboo and wild growing ferns while chasing the sound of the falls. Next, the adventure continues with a drive through a grove of rainbow eucalyptus trees; imagine peeling bark that starts as bright green and changes to hues of lilac, blues, and oranges as if 50 EASTside | Dec/Jan2023/24
it were kissed by a leprechaun. Take plenty of time enjoying the flora and fauna of Maui at the Ke’anae Arboretum. This six-acre botanical garden makes for a great place to grab a bite and stretch your legs. Next stop is at mile marker 23. A small hole in a rocky wall will lead you to a lava tube shoot. Bring a flashlight, though it won’t be long before the tunnel opens up to a forest with a small waterfall below it. The next two stops are Hanawi Falls and Makapipi Falls.

Hanawi Falls is best viewed from the narrow bridge, and for Makapipi Falls, follow the path that goes along the stream until the falls come into view along with a chilled swimming hole. A trip to Wai’anapanapa State Park (reservations now required in advance) will leave you in awe of the power of the ocean while walking its rocky black cliffs and sea arches with mysterious coves. This black sand beach has hiking trails, lava shoots, and blow holes that spew salty foam as the deep blue ocean crashes against

The Road to Hana was only indirectly impacted by the fires, and keeping (or making) travel plans to Maui directly impacts locals. It enables them to keep their jobs and aids in supporting their biggest industry: tourism. While there, consider volunteering time and skills for cleanup and recovery efforts. Purchasing goods and services from local businesses, even those indirectly impacted, contributes to economic recovery. While some may think this is not a good time to visit Maui, we say, on the contrary, there’s never been a better time to visit this gorgeous island!
its shores. If you arrive at the right time, you just might see the tide pools that turn bright red as shrimp congregate below the surface. Up next is Hana town. This is a good place to find some local food at the sprawling grounds of Hana Ranch. Down the road from Hana Ranch Restaurant or the food trucks is Kaihalulu Beach, known for its red sands. Just off the beaten path, its dramatic rust-colored cove is worth the trek. Koki Beach also trades well-manicured gardens for rustic coast. The sand is soft and golden, but the rough waves are reserved for locals. Further along Hana Highway, you’ll
find Hamoa Beach, a beach on a secluded little crescent bordered by lush vegetation and coconut palms. Yet, the break can be strong here, too, so only dipping your toes in the water is the best way to experience its beauty. Often hailed as the most photographed waterfall in Maui, Wailua Falls is at mile marker 45. Hop out and bask in her glory. Ten miles past Hana is Seven Sacred Pools at Haleakala National Park. From here, adventurists can embark on some hikes that land the summit of Haleakala. If time is running out, opt for the short hike that sweeps across the green valley to the coast and gaze upon the famous
Seven Sacred Pools. A walk further inland from the pools lends itself to an incredible bamboo forest and native Banyan trees. By now, the sun should be setting in all its glorious hues. It’s tempting to remain in the sublime presence of the crashing foam spraying against the rugged black rock or watch the cascades turn into pools that turn into streams as they make their way to the open ocean. However, Hana Highway is not as majestic at night. So it’s time to get some good footage of the hairpin turns in the sunset as you make your way back down the highway, reveling in a day well-spent.

Using the tasty lens of his heritage and summers spent sampling smoked meats in delis across Queens, Geoff Ellis is blazing a new path for barbecue in East Austin. 54 EASTside | Dec/Jan2023/24
nitially, Geoff, owner of Mum Foods, was set on being a fine dining chef. However, as a student at Texas State, he found success in smoking meats and baking breads for farmers' markets around town. “I couldn't believe that in the barbecue capital of the world, nobody sells meat by the pound at farmers’ markets,” Geoff explains. After favorable outcomes at the markets, the entrepreneurial young chef set his sights on creating a hybrid concept of Jewish and Texan
barbecue. He set off slow cooking brisket in a means that blended both of these traditional methods. His gamble won “Best Pastrami in Texas” from Texas Monthly and cemented his concept as more than a college experiment. Sam Hellman-Mass, a owner of Suerte, was blown away by Geoff ’s pastrami and offered up his space on Manor Road, a mini house on the East Side Cafe grounds. Whisler’s has been delivering unique cocktail creations since tire shops dotted the corners of East Austin. The entire team at Whisler’s is consistently referred to as trendsetters, not followers, offering a unique beverage experience for every visitor time and time again.
C
ollaborative creativity leads the day at this Eastside staple. The focus is wholly on cocktails, where the team creates a seasonal menu four times a year and where no drinks are repeated or kept on due to popular demand. “From the beginning,” founder and owner Scranton Twohey says, “I wanted to rip all pretentiousness out of craft cocktails and curate an experience for customers.” The development of the drink menu is, and always has been, a collaboration across the entire team during a month-long process. Bartenders bring forward recipe ideas based on a theme; as a group, the recipes are refined and enhanced. This season’s drink menu is a nod to the classics, as interpreted by each recipe contributor. Bed Head is a mustard seed mezcal cocktail with a wasabi shrub, honey lime, and soda. Its intense flavor profile that goes down smoothly leaves taste buds vibrating. How is the Bed Head a classic? It’s based on a 19th century painting by Toulouse-Lautrec called Le Lit (The Bed). The Fall of the Shape cocktail, a nod to the original Halloween movie, brings a surprising combination of mezcal and scotch together, adorned with a swoosh of edible coconut-flavored paint on the tall glass. Unique mezcal combinations can be found throughout the seasonal menu, taking drinkers far beyond the typical citrus-pairing that comes with agave-based spirits.

Tucked upstairs in Scranton’s former office space is a cozy room stocked with hundreds of mezcals that guests can select from a lineup. Laying claim as the first mezcal bar in Austin, maybe even the first in the State, Mezcalería Tobalá is a treasure of hundreds of mezcals, including items not available for retail, and even a few special bottles distilled just for Whisler’s. “This guy is a genius at mezcal,” Scranton touts Sean, who among many roles, manages the mezcalería. “Our bar is populous; it is our duty behind the bar to give you the experience you want,” proclaims Will Schweigert, beverage director. “Our menu has items for ‘cocktail heads’ with things you can’t get anywhere else, and we can also make a tequila and soda, which every bartender will make without leaving anyone [feeling] embarrassed.” “There’s a thing that makes a bar feel like a world class bar,” says Matt Wenger, GM. “It’s the vibe that transports visitors out of their day-to-day life. Everything we do is sincere. We want to play you the coolest music with the coolest drinks with incredible ingredients, and we just want you to enjoy your visit. This is our profession and our passion.”
