When it comes to visiting these epic destinations, the number one tip from our family to yours is be flexible on travel dates and the destination itself and be willing to travel last minute. We literally booked our trip to Glacier National Park (pictured) the day before we hopped aboard a Frontier flight for $69/pp! There are ample ways to save while traveling as you will see outlined in the feature with simple tips tailored to our very own airport (pg.20). Another way our family of four has traveled for next to nothing is by using credit card points earned through card sign up bonuses and by earning 2x-5x points per dollar spent. Those same cards also have Global Entry and TSA Pre-check reimbursement, making it even easier to get through ABIA’s growing security lines and on to a final destination. Besides minimally impacting our wallets, road trips have a way of carrying memories unlike any other travel experience. I remember a time when we’d all pile into the back of a Suburban at 4 a.m. with no seatbelts, just lying on sleeping bags, as Dad would drive for hours to get to our destination. Gone are the days of lunches at rest stops with pre-made PB&J’s and frozen milk out of an Igloo cooler because now there are gas stations attached to fast food joints at every exit. Gone are the days of driving into a town as the sun sets on the horizon to check vacancies for the night because of search engines like google flights and kayak.com. Travel has changed so much over the past 30 years. It's much faster and economical than ever before. You can plan out a week-long trip in a day and have everything needed at your fingertips, literally! Yet, the end goal has remained the same: to get out outside, explore this breathtaking country, experience the beauty of the land, and spend time making unforgettable memories with friends and family. In this issue we don’t want to neglect what an amazing destination East Austin is (for those recently joining us or for those who’ve been here for a while). Read through some of the best things to do in Austin (pg.12) and about some of the best Texas parks (pg.34). This summer is all about getting away from routine after being cooped up for too long. It’s about getting back to the experiences we missed and healing our passion for travel, people, and the great outdoors, while regaining our spirit of adventure, whether that is here in Austin or across state borders. Besides being the Live Music Capital of the World, Austin's food scene is also a huge draw for many travelers. Tacos of all varieties (breakfast tacos being most coveted), barbecue, and food trucks offering up creative takes on cuisine from around the world are the driving forces of the burgeoning foodie culture in Austin. For afterhours sips and a little taste of nightlife, bar hopping on East Cesar Chavez, Manor Road, or East 6th and East 11th streets offers a slightly tamer alternative to “Dirty 6th” and Rainey Street. Ranch Water, Mezcal-based cocktails, and craft beers sourced from the plethora of local breweries such as Austin Beerworks, Zilker Brewing, and Pinthouse are just a few names to keep in mind for local favorites. Visit the Vegan Nom Food Park, or the trailers at a Kenny Dorham’s Backyard for a snack at Nissi’s and some live Monday night blues, and Community Arbor Food Park for Cuantos Tacos to fuel more taco cravings.
Fun in the Sun
Rent a bike and take it for a spin on the iconic Town Lake Bike Trail. Or, head to EpicSUP and rent a standup paddle board to cruise Lady Bird Lake. Visit Mount Bonnel and take the half mile walking trail for a bird’s-eye view of the city. For a more relaxing outdoor activity, grab a hammock (from Austin-based company Kammok) and head to one of the many beautiful greenspaces the city offers. Lockhart has that ‘je ne sais quoi’ quality that forces the most skeptical of visitors to take note of the energy, the people, and the esthetics of this quiet, fiercely supportive, and creative town.

rt seems to flourish in certain locations but it’s not so much the physical aspects of a place that turn unsuspecting regions into beacons for painters, poets, and makers of all kinds. One ingredient to a thriving creative community is the backing of the surrounding support system, something the citizens of Lockhart have in droves. 14 EASTside | June/July 2022
“People who move are intentional about being in the community. Business owners who have moved here are involved and know their neighbors and advocate for things going on in the community,” explains Allie Launius of Stampworthy Goods, a custom furniture restoration shop formerly housed in East Austin. Walking around the block, it’s evident that people know their neighbors well. The air is full of friendly chatter.

The historic main square is the axis of Lockhart’s magic. The 20th century buildings lining the streets are teeming with reimagined life. Every coffee shop, café, and vintage shop are lovingly refurbished, maintaining the integrity of their respective pasts but looking towards the future with enthusiasm.
The forces of Lockhart are constantly drawing in new people. In addition to Allie of Stampworthy Goods’ move, Travis Tober, co-owner of Austin’s Nickel City, opened Old Pal, a charming bar and fried chicken joint that echoes the humility of its Austin counterpart. It’s easy to assume that this renaissance town is just a microcosm of its larger cousin to the north, but that assumptions fails to commend the labor of love its residents have put into building their community. Leading with earnestness and no trace of pretension, this vibrant little town shines.
Two of the main hubs for viewing fine art are Commerce Gallery and Spellerberg Projects. Though each of these galleries focuses on regional artists, national and international artists are shown in Lockhart as well, consistently bringing an influx of new inspiration. “We're mostly Texas-based artists. That's really important to us. And we always try to have as much [local art], from Lockhart or surrounding communities, as possible in each show because we really find more at eastsideatx.com
One artists leaving his mark on Lockhart is Christopher St. Leger. He is a prolific watercolorist whose work is beginning to define the legacy of Caldwell County. Christopher’s work can be seen at Commerce Gallery, where he serves as the Artist-in-Residence.

Local outdoor company Kammok creates products designed to elevate time outside in order to establish better mental, emotional, and spiritual wellness for their customers.

ammok’s founder and CEO Greg McEvilly’s love for camping spurred the creation of the successful outdoor lifestyle brand. It all started years ago when Greg and his brother planned a whitewater rafting trip on which they brought hammocks for sleeping along the banks of the Rio Grande in Mexico. While on that trip, he fell in love with ham-

mock camping and found himself thinking about how he could use hammocks more in his daily life. He reflects on how he felt at that stage in his life, thinking, “How can I increase my own flourishing and bring this feeling into my everyday life?” Greg’s desire to recreate his experience while camping for himself and others is the driving factor behind his business. When the hammock he took to the Rio Grande broke on the last night of his trip, Greg realized that there was a gap in the market. He envisioned “a business focused on the triple bottom line that could rival big brands someday like Patagonia and North Face but also really focuses on humans flourishing by elevating time outside in the everyday—not just in the epic backcountry experiences.” The Roo Double was their first hammock, and they have since expanded the brand, selling a number of other outdoor products. Greg says, “We are an outdoor lifestyle brand on a mission to elevate time outside.” While Kammok has a committed customer base all over the world, lovingly dubbed their
“tribe of outsiders,” they are based on the Eastside where the Kammok team enjoys connecting in-person with customers at their headquarters and flagship store on East 7th. With new routes, new airline carriers, the addition of the South Terminal, and future expansion plans, the options are only becoming more and more attractive (and affordable!) for jet-setters to escape this beloved city and embark on an unfor-

Within 20 minutes or less, we’re a skip, hop, and a jump from a security line that puts us on a short flight to some of the most beautiful parts of the country. Knowing the options are endless and the bucket lists are long, we’ve outlined four epic road trips that are a cost-effective flight from Austin and have some of the most desirable destinations to explore.
Half off Plane Tickets? Really.
If you’re flying what’s known as an Ultra Low Cost Carrier (ULCC), you can purchase a ticket at the airline’s check-in counter for a fraction of the cost because there are certain fees they are obligated to remove. Spirit Airlines, in particular, will remove up to $46 for a round trip flight. Use this trick with Frontier and Allegiant as well. Next stop is Sonoma Coast State Park. Take the short hike to Sunset Boulders and peek at the vastness of the deep blue ocean. About three miles away is Goat Rock Beach where the Russian River meets the ocean and where seals snack
on fresh water fish conveniently landing in their playground. Take the short narrow trail past the bluffs to Blind Beach where Arch Rock and beachcombers rest. There is nothing like the sound of the waves in the mornings while breathing in the chilled Pacific Ocean breeze. At Salt Point State Park, grassy terraces quickly turn to sandstone cliffs. In fact, Salt Point boasts six miles of rocky bluff hiking where tide pool beds are teeming with marine life. This place is best explored in low tide for up close views of protected sea life and in high-tide for dramatic waves spraying the air as
they collide with rocks as they make their grand entrance. Continuing on Highway 1, Fort Bragg is sure to put a sparkle on your list with their famous glass beaches, MacKerricher State Park, and an adorably quaint historic downtown. A glass beach may not sound very relaxing; however, this is no ordinary glass. It appears on shore like tiny sparkling pebbles of varying shapes beaming with vibrant whites, emeralds, and ambers. After soaking in the sun, head downtown for the evening to get a taste of Overtime Brewing for a much needed meal and a refreshing cold brew.

The top of the South Island begins in the Marlborough region that produces world-famous Sauvignon Blanc wines, but these sweeping vineyards quickly give way to some of the most ethereal landscapes that the world has ever put on the map. Imposing ice formations like Fox Glacier that are situated down the road from volcanic plateaus. Rugged mountains lead down to a coastline that finishes as a scenic fjord and skirts miles of coastline where the color of the sands undulate between gold, black, and pink. Renting a car is perhaps the most assured way to allow yourself the indulgence of a hike along the mirrored surface of Lake Wanaka or a stop to observe the flocks of albatross, colonies of sea lions and broods of yellow-eyed penguins that inhabit the area around the showstopping Victorian architecture of Dunedin. Whatever you do, make sure you have enough time to see it all.
Although a country in its own right, New Zealand is technically an island — two in fact. The North Island is home to the capital city of Auckland as well as the city that may be far more important to some, Hobbiton. While the bucolic landscape and temperate climes of the North Island make it more populous and filled with farm-fresh products that can be picked up along nearly any roadside, the geography pales in comparison to this island’s southern counterpart.

First stop upon arriving in the Keys is John Pennekamp Coral Reef State Park. Glass bottom boats are a theme here; however, adventurists are encouraged to swim the coral reef for an unforgettable sight: swimming over the Christ of the Abyss Statue that rests 25 feet below the surface.

There is truly so much to see at this little slice of heaven (or slice of pie—key lime to be exact). The southern tip of the Sunshine State has even more to explore within an hour or two of the Keys themselves, a good excuse to extend the trip and bask in the sun, eyes closed, listening to the waves as they steadily crash ashore.
Start the day with a trip to Dry Tortugas National Park, an island 70 miles off the coast of Key West, making it the least visited national park in the U.S. Half of the excursion is getting there, soaring over a calm, yet vibrant, sea while keeping an eye out for dolphin pods, shipwrecks, and sea turtles. On the island, explore massive Ft. Jefferson and its historic architecture now covered in bright green grass. The trip there (whether by boat or seaplane) will include snorkel gear. So get ready for close encounters with sea life in the still, warm waters at Garden Key.
In Key West, visit the historical Hemingway House and be inspired by the salty breeze and towering palms that emerge from the well-manicured grounds. After taking your picture with the ‘Southern Most Point’ marker (only 90-miles to Cuba!), make your way to Stock Island for a unforgettable kayaking tour through the Mangroves. Then head back into Key West to explore its Old Town or hop on Conch Tour Train for a narration of the eclectic city. Last, but not least, be sure to stop in for a taste of the namesake dessert at Kermit's Key West Key Lime Shoppe.

ust 30 minutes from the glitzy lights and ringing slots of Vegas sits a landscape that feels uncharted, lying peacefully underneath baby blue skies filled with beaming rays of sun, waiting to be explored. Stumbling upon Lake Mead National Recreational Area lends itself to undulating terrain while driving the winding roads alongside sparkling blue waters juxtaposed against rust-colored hills. It’s a treat to explore what feels like the world’s largest playground, dipping in and out of sandstone caves and red rock formations under the bursting Nevada sun. THE HANA HIGHWAY Arguably one of the most epic adventures in the Hawaiian Islands, and definitely the best drive in Maui, Highway to Hana is about the journey, not the destination. As one of the seven wonders of the world, a stop at the Grand Canyon needs no further explanation. Walk the South Rim or explore its depths with a hike or mule ride all the way down to the Colorado River. Toward Vegas, make a pit stop at Hoover Dam. The stop is delightfully more serene and breathtaking than the 1997 film “Vegas Vacation” makes it
out to be. Next is a photo op at the increasingly popular art installation: Seven Magic Mountains. Constructed by Swiss artist Ugo Rondinone, these carefully crafted boulder-(not rock)stacks, rising out of the desert landscape, are larger than life and are painted in bursting rainbow colors. It’s no wonder there are so many Native American settlements and parklands within such a short drive of each other. The landscapes here are painted with colorful, yet delicate, brush strokes and dotted with alien formations carved by Mother Nature herself.

By the end of day, and the end of highway that concludes at Haleakala State Park and Seven Sacred Pools, the sun should be setting! However, Hana Highway is not as majestic at night as it is in daylight. Drive or train to the top of Pike’s Peak for gorgeous panoramic views from “America’s Mountain.” As the trip goes deeper into the Rockies heading toward Independence Pass, the highest paved road in the country, this stretch of highway along the Continental Divide serves up expansive views of the surrounding alpine tundra. Keep trekking west all the way to Glenwood Springs, home of the world’s largest mineral hot springs pool. Soak in the restorative waters, then head toward Hanging
Lake Trail. This hike leads to the edge of Glenwood Canyon and a charming turquoise lake where the air feels fresh and breathing is easy. For more heart-pumping fun, let loose at Glenwood Caverns Adventure Park, with a cavern tour or feel the rush of mountain air at 7,000 feet on their alpine coaster. The next notable stop is more of a passage. Trail Ridge Road is considered one of the most beautiful drives in North America for good reason. Traversing the Continental Divide, this stretch of highway reaches heights of over 12,000 feet
with views of glaciers, bighorn sheep, and brilliant wildflowers. Magnificent vistas from one of the many pull-offs provide the opportunity to soak in the spirit of the Rockies. Trail Ridge Road ends at Estes Park, the gateway to Rocky Mountain National Park. Accommodations in Estes Park range from The Stanley Hotel (famous setting for “The Shining”) to the YMCA of the Rockies. Start the morning with a warm cuppa at Kind Coffee before heading out for a hike. Once inside the park, take Emerald Lake Trail to Dream Lake. This crisp alpine lake provides opportunity to spot herds of elk grazing or a rainbow trout swimming in the clear waters. Turning south toward the city of Boulder is a hiker’s dream. Hike like a local by trekking along Royal Arch Trail, beginning at Chautauqua Park. At the end of the trail, pass under the arch, pause, and wonder at how a sandstone arch could be formed 20 feet in the air. As the day ends, stop at Wild Provisions Beer to sample local craft brews and grab a bite at the food trucks onsite. Colorado is an unending playground for outdoor enthusiasts with its breathtaking trails, stone mountain vistas, crystalline alpine lakes, and rushing rivers. A flourishing art scene and creative craft brews are also pervasive throughout the state. This road trip will leave you pining for the next trip to colorful Colorado.

For many of us who spent our childhood summers away at camp, vivid memories of bunk beds, s’mores, and that sweet combination of exhaustion and exhilaration that comes from a day well spent playing in the sun is the place our minds return to when we think of simplicity. 32 EASTside | June/July 2022
I
n those golden days, there was little to worry about besides what might be served for dinner. The camaraderie and friendships forged during these formative years are often long lasting, and a natural longing to return to such days often nags when life gets busy, and we feel disconnected. Paul Biles once had that feeling, and unlike most daydreamers, he followed that instinct. After a few years spent working in St. Louis, Paul and his wife decided to return to summer camp. They packed up their belongings and moved to Giddings, Texas, where Paul eventually assumed the role of Executive Director at Tejas Camp & Retreat in 2013. Tejas first opened its doors in 1981 and has been serving residents of Central Texas and beyond as a devoted space to slow down, indulge in recreation, and focus on reconnecting with oneself and the people who matter most. With the facilities and ethos of a prototypical sleepaway camp, adults and kids alike will delight in the joyous revival of summer fun. Tejas retreats are customizable and work well for small groups, families, and even businesses in search of team building experiences. Retreats offer an opportunity to break free of routine and the constant distractions that keep many from truly connecting with people. And the effects of a retreat don’t end once attendees return to daily life. Paul insists, “The impact [of a retreat] is that life doesn't have to be busy. We can take time, get to know each other, reconnect and then reenter the world [refocused].” It is important that attendees be intentional with their time at Tejas. Paul emphasizes that retreat is more a state of mind than a particular place. “Whether it's Tejas or another camp, a retreat, a hotel, a campground, it really doesn't matter what it is. Local designer Patrice Rios has paired Austin’s traditional with contemporary esthetics to create breathtaking and eclectic spaces that prioritize luxury while still creating a welcoming atmosphere for both visitors and locals.

olton House Hotel is a boutique hotel with a sought-after location, kissing the edge of Travis Heights. The hotel was designed by Patrice Rios, an Austin-based interior designer whose design philosophy is to pull from her clients’ wants and needs to create something comfortable and one-of-a-kind. She always starts by asking, “How do you want the guest to instantly feel when they walk in?” Patrice’s dedication to upholding the es-

sence of Austin is palpable throughout the space. She explains, “Austin is really funky and has this high energy but is super quiet at the same time.” The artwork seamlessly weaves through the story of both Texas and Austin with a number of art pieces featuring native Texas animals paired with music artwork that pays homage to Austin’s music scene. The team labored over every detail to make each space in the hotel just right, down to “selecting every single color for each tuft

For example, a vibrant red rug welcomes guests as they enter the hotel, immediately catching the eye and evoking a sense of elegance. The different spaces throughout employ a mixture of fabrics and textures that create variation and interest. For instance, Patrice notes that the Chesterfield sofa exudes a “serene, cowboy style,” but it is paired with velvets and jewel tones which are more contemporary and elegant. The hotel combines nods to tradition with modern textures and patterns throughout the space. The club room, for example, gives off an old western feel, as “guests are taken back to the 30s and 40s where Texas began,” describes Patrice. Patrice says she loves designing boutique hotels because each space can be an experience to feel like a home away from home. She proudly states that the fouryear long project resulted in “the ultimate space.”

Europe Experiencing the Gifts of Greece

East Austin residents Blake and Adam Sparks of Sofia Travel are the fun-loving tour guides who literally welcome guests into their extended family.
T
he duo proudly takes travelers on the trip of a lifetime to Adam’s ancestral country, Greece, as well as a number of other destinations, while their hope is that, in turn, guests bring the spirit of Greece back with them to their Austin community.
Sofia Travel was founded by Grecian immigrant Elizabeth, and her husband David Sparks, in 1984 as a way to travel back to Greece to visit her family. The company started solely on the idea that if they could bring a “small group of people to Greece to see some of the sites, it would cover their plane tickets,” according to Elizabeth and David’s son, Adam, who currently owns Sofia Travel. That first tour, planned by his parents in order to travel back to their homeland, has spurred decades of joy and success for the Sparks family. Soon, they were running the tour company fulltime, and David had become a professor of Hellenic Studies. After

graduating from college, Adam decided to take on the family business with his wife, Blake. he bright neon-colored sign atop Llama Kid is made up of tiny replicas of classic chicha artist concert posters, like El Chacalón and Grupo Alegria, paying homage to owner and chef Diego Ysrael Sanchez’s favorite artists growing up. Born and raised in Huancayo, Peru, Diego moved to the states in 1999. Since then, Diego’s life has revolved around the kitchen. He began his career as a server, and that’s when he knew he would become a chef. When renowned Peruvian chef and entrepreneur Gastón Acurio launched La Mar Cebichería in New York, Diego landed the job as sous chef. The idea of preparing Peruvian cuisine in a high-caliber setting was new to Diego, but he remained inspired working with an esteemed chef.

Fast forward to 2020 when Diego brought his talents to Austin. It quickly became clear to Diego that Austin would be the place to bring his vision for Llama Kid to life. “Llama Kid is just the food of my childhood—it’s memories of Peru,” he explains. “It’s also the techniques that I have acquired through my work and my travels around the world.” The first version of Llama Kid took place in a ghost kitchen, and because of the pandemic, food was only available for takeout. Not long after opening and experiencing overwhelming success, one of Diego’s Peruvian customers introduced him to Rosa Santis. Diego pitched the concept of Llama Kid to Rosa, and from there, everything moved rather quickly. She loved the food, and something

The Mixto plate is a seafood enthusiast’s dream. The dish comes with a savory mix of fried calamari, fluke, shrimp, octopus, sweet potato, Peruvian corn and cancha corn, or toasted corn, all covered in the ají amarillo leche de tigre juice, otherwise known as the fresh, acidic liquid concentrate left on the plate. “It’s our culture we’re trying to introduce to Austin,” Diego remarks with pride. Despite the primarily Peruvian perspective, for several of the dishes, Diego takes cultural inspiration from other cuisines as well. He
prepares Seco De Costilla, or short ribs, like the French do, whom he regards as the best at braising meats. For the anticuchos, or skewers, Diego emulates the grilling techniques often found in Mediterranean cuisine. Some of my fondest childhood memories come from days in my grandmother’s kitchen, making concoctions of flour, water, and eggs. Hours were spent exacting the precise ratio of wet and dry ingredients to get the perfect sticky (but not too sticky) consistency. I took even greater care choosing the flavorings, my nose discriminating between the full, dusty bottle of marjoram and the sweet, woody smell of cinnamon toast. 46 EASTside | June/July 2022

haking salt out of the mushroom-shaped shaker into my favorite Pyrex bowl with olive green flowers, I imagined myself in Nonna’s kitchen, a wood-burning fireplace for an oven and a broom handle for a rolling pin. The ceiling of her Italian villa was hidden behind drying peppers and copper pots, her walls reverberated her musings on panna cotta and pan sauces. She revealed to me the secrets of navigating life while rolling out the perfect pasta.
back to my room or anywhere other than her kitchen.
Nan always seemed to come home as I was rolling out my own dough, sometimes with a commemorative action figure or a sweaty palm. She’d saunter in after a long day selling eyeglasses, shed her handbag and pumps, then come to an abrupt halt when her eyes set upon the all-purpose floured patina of her once harvest-gold countertops. Picking up a dripping egg shell from the floor, she would scold me
One seemingly ordinary evening, with my teen belligerence at an alltime high, I drifted back to Nonna’s kitchen, smelling of freshly baked bread and fennel. I imagined her skillfully peeling the skins from blanched tomatoes for her signature puttanesca. Carelessly wrapping the dish of frozen peas with aluminum foil instead of plastic wrap, I dreamt of culinary magic as it should be done, Nonna’s way, and pressed the start button. A
As most children of single, working moms, my adolescence was a blur of strawberry toaster strudels and hot pocket wrappers, except for the occasional home cooked meal. Mom determinedly bustled around the 7x4-foot galley kitchen, ladling gravy onto fried pork chops and skewering boiled potatoes to check for doneness. My recurring assignment was to nuke the veggies.

few moments later, amidst yelping and cursing and failed attempts at extinguishing the flames, I was unceremoniously ushered out of the kitchen by my own mother, presumably to start amassing my meager savings toward a new microwave. ‘Nonna would never have microwaved her precious heirloom eggplants,' I angrily thought. Now, stirring to the hum of the stainless steel vent hood, my two girls and I make our own memories in the kitchen. We make oddly-shaped pancakes, cookies with scorched edges, and over-mixed blueberry muffins. There is no earthen fireplace oven. There is no Tuscan hillside dotted with tomato plants. There is no all-knowing Nonna. There are the occasional disasters; but sometimes, there is magic. On this day, there is perfect pasta. And always, there is the tradition of us, together, in the kitchen.

Ingredients: Prepared pasta dough Filling: 1 portobello mushroom, chopped 1/4 c. ricotta cheese 1/8 c. mascarpone cheese make fractions same 1/2 c. shredded parmigiana reggiano 2 t. packed, fresh mint 1/2 t. salt 1/4 t. black pepper Sauce: 1/2 c. heavy cream 2 T. butter spacing 1/4 c. parmigiana reggiano 1/4 c. mascarpone cheese Garnish with 1/4 c. fresh mint
Ingredients: Prepared pasta dough 2 T. olive oil 1/2 medium onion, diced 2 carrots, peeled and diced 3 cloves garlic, minced 1/2 t. salt 1/4 t. red pepper flakes Splash of dry, red wine 26 oz. crushed canned tomatoes 1/2 c. fresh basil, chopped
Ingredients: 1 pint cherry tomatoes Squid ink pasta dough 2 T. butter 2 T. olive oil 2 lbs. sea scallops 1/2 c. dry white wine Juice of 1 lemon 1/2 t. salt 8 large leaves fresh basil, chiffonade
Ingredients: 1 c. semola flour* 2 c. 00 flour* 1 t. kosher salt 3 whole eggs, plus 3 egg yolks 2 T. olive oil 1/3 - 1/2 c. water *All-purpose flour is a perfectly acceptable substitute for Italian flours. Directions: In the bowl of a standing mixer, whisk together flour and salt. Fit standing mixer with the dough hook and stir in eggs (reserve egg whites to use for the ravioli, or another use), olive oil, and 1/3 cup water on medium-low speed (if dough remains dry and crumbly, add one tablespoon of water at a time, until a soft dough forms). Mix for 3 minutes until the dough is smooth. Let dough rest at room temperature for at least 20 minutes. Using a pasta machine or rolling pin, roll pasta out into 1/16” thick sheets. Lay pasta on floured parchment paper and cut as desired. Once cut, hang to dry or use immediately. Cooking time will vary depending on the freshness of the pasta. If using a pasta machine, roll out dough on the thickest setting at least 6 times, adding flour to the surface of the dough and your hands if it starts to stick. Cut the dough into manageable lengths using a sharp knife or pizza cutter once it starts to stretch. Note: this job is easier with a second pair of hands. Continue to pass the dough through the pasta machine, folding it in half lengthwise, each time adjusting the side knob to a thinner setting until you reach desired thickness. (All the pasta in these recipes call for the thinnest pasta machine setting.) If rolling with a pin, flour a large work surface well. Cut dough into four pieces and roll each out until desired thickness (1/16” for these recipes). Once the dough is thin enough, you’ll likely need to roll it out once more. For Squid Ink Pasta: Substitute 1 tablespoon olive oil for 1 tablespoon cuttlefish ink. Whisk eggs, ink, and olive oil together before adding to dry ingredients.
Directions: In a food processor, combine filling ingredients. Pulse mixture, scraping down the sides, until a smooth paste is formed. Put 4 quarts of salted water over high heat in a large pot. Roll out pasta dough using a pasta machine or rolling pin to 1/16” thickness. On one sheet of pasta, spoon 1 tablespoon filling, leaving a 1/2” - 3/4” border on all sides. Once the sheet is filled, brush a thin layer of egg white on the exposed dough surrounding each tablespoon of filling. Cover filling with a second sheet of pasta, pressing gently to adhere the pasta around the filling, taking care to remove any air bubbles. Using a knife or pasta cutter, cut out ravioli to desired size. Boil ravioli for 1-2 minutes, until al dente. In a sauce pan, combine ingredients for sauce over low heat. Cook for 5 minutes, stirring frequently, until sauce begins to thicken. Add pasta to sauce and garnish with mint.
Directions: Put 4 quarts of salted water over high heat in a large pot. Roll out pasta dough using a pasta machine or rolling pin to 1/16” thickness. Cut dough into 1” x 2” rectangles using a pizza or pasta cutter. Pinch the dough in the center to create bow ties, or starting at a long corner, roll the pasta in on itself, making a tubular shape. Have fun experimenting with shapes, and boil your favorites for 2-3 minutes. In a large, deep-sided pan, heat olive oil over medium heat. Once hot, add carrots and onion, cooking for 5 minutes, stirring frequently. Add garlic, salt, pepper, and red wine. Cook an additional 2 minutes, stirring occasionally, until wine mostly cooks out. Add tomatoes and cook to boiling, then reduce heat and simmer for 10 minutes more, stirring occasionally. Remove from heat and allow sauce to cool slightly. Add sauce and basil to a food processor or blender and blend until large chunks have been broken down. Spoon sauce over prepared pasta and serve with parmesan shavings.

Directions: Cut tomatoes in half and place evenly spaced out on a baking sheet. Cook at 200°F for 60 minutes. While tomatoes cook, put 4 quarts of salted water over high heat in a large pot. Roll out pasta dough using a pasta machine or rolling pin to 1/16” thickness. Using a pasta roller or pasta machine, cut dough into fettuccine. Hang fettuccine on a clean plastic hanger or pasta rack to prevent it from sticking to one another. Once water is boiling, cook pasta for 2 minutes, or until desired doneness is reached. Strain and set aside. In a large sauté pan, melt butter in olive oil over medium-high heat. Once fat is hot, sear scallops for about 90 seconds on each side. Transfer scallops to a clean plate. Reduce heat to medium low and immediately add white wine. Cook for 2 minutes, add lemon juice and salt. Cook for an additional 3 minutes and add in prepared pasta. Serve pasta topped with scallops, dehydrated tomatoes, and basil chiffonade.

Beyond the roars of a rapidly changing neighborhood, a beachy food truck sits inside a courtyard oasis serving up tropical flavors.
A
colorful bouquet of succulent watermelon, cucumber, and pineapple slices rests like a crown above the fruity drink. El Mango Feliz's co-owner, Kimberly, smiles and explains as she shows off the radiant orange hues of their Acapulco drink, "That's one of the secrets. The fruit has to be fresh because if it's soggy, the colors are not bright." Fresh feels like an understatement with each slice appearing as if it were hand-selected by Mother Nature herself. El Mango Feliz’s owners, Kimberly Nieto and Brian Cordova, give meticulous attention to detail that touches every aspect of the experience at their humble food truck. They infuse their coastal backgrounds into everything from the truck’s playful exterior to the names of each menu item. Their specialty tropical drinks, Acapulco and Cancun (think agua fresca and Mangonada meets salty ocean air), pay homage to their beginnings, with Kimberly from Mexico’s west coast and Brian from the east. Their tropical narrative comes through effortlessly with the Acapulco. It tastes like a sunset distilled into a tropical pool of mango and pineapple with cooling waves of refreshing cucumber. Countering the natural sweetness of the fresh fruit, the straw is coated in tamarind flavored chili, blending hints of spice into the beachy elixir. Every sip offers the essence of each fruit without one overpowering the other. The mouth-watering garnish of towering fresh Tajin-spiced watermelon, cucumber, and pineapple, each dripping with accents of the drink, makes the Acapulco big enough to be a meal in its own right. Brian takes special care to make sure that the fruit stands out as the defining feature of this taqueria. Beyond the drinks, fresh fruit finds its place all across the menu. The El Mango Feliz taco takes joy in flaunting the well-seasoned mango resting on a bed of black beans, topped with avocado salsa. Packing in the vibrant flavors of these tropical getaways into delicious drinks and savory bites, El Mango Feliz is a destination in its own right.
